Cosmo offers a unique gastronomic experience in a paradisal setting. The flagship restaurant of the iconic Nai Harn, it occupies one of Phuket’s most coveted locations, a promontory flanking Nai Harn Bay. reflects his passion both for global travel and culinary innovation. We begin in Northern Japan. Mark’s choice of appetiser is pan-fried Hokkaido scallops with apple ginger,r and crispy coppa ham. The juicy shellfish are lightly seared, their succulence complemented by a delicate echo of apple. The main course, again ocean inspired, accentuates the Andaman k and matching croquette.

Sea: moist White snapper steak, Other chef’s recommendations reveal a capacity for adventurous combinations. Marinated raw sea bass comes with pomelo, coriander, chili lemon, ginger and lotus root; Seared yellow fin tuna with greens, avocado, watermelon and ponzu citrus dressing. A Mixed grill of Andaman seafood includes the local catch of the day. Char-grilled cauliflower provides an inventive vegetarian option. For carnivores, Australian rib-eye steak with rissole potatoes and oyster mushrooms, rocket, asparagus, garlic and Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits, and crisp organic salads.

The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by exquisitely chosen vegetables and herbs with matching sauces BOOK NOW and dips. Ingredients are ultra-fresh. Most of ONLINE the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The wide-ranging meats are created in the resort’s own charcuterie, even down to regional sausages.

The Nai Harn has undergone many transformations over the years. Nowadays, Rock Salt, a pebble’s throw from the waves lapping Nai Harn Bay, is perfect for a pre-prandial cocktail.

Relax to funky music, admire the roseate sunset, and peruse the list of ‘Tribute and Signature Cocktails’ created by Salim Khoury. Awarded the accolade of UK ‘Bartender of the Year’ in 1992, and famous for his stewardship of the London Savoy’s American Bar, he has long been associated with The Nai Harn.

Little wonder the cocktails are so memorable. My partner has a Nai Harn Sunset, a deep pink confection made with Balls gin, fresh water melon, basil, lime and Prosecco. Mine, a Nai Harn Cooler,r is a luscious offering: Kristall gin combined with zesty orange marmalade and the juice of lime, orange and pineapple. Also on the list are: Rumble, Blushing Monarch – featuring gin and Campari and, of course, Lady Nai Harn.

For a main course, a must-try is the ‘piece de resistance’, the Andaman Platter,r a comprehensive sea-food offering for two, which pays homage to the very essence of Phuket’s marine heritage. Sea shrimps, tiger prawns, Fine de Claire oysters, steamed Rawai clams in chili, ginger, coriander and coconut milk, served with all the trimmings. Less demanding on pocket and palate, sample Mediterranean inspired flavours: Souvlaki – barbequed pork kebabs with grilled peppers – or the Italian-inspired Blue Mushroom Pizza.

Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist.

To top it all, there’s a DJ playing every Friday from 4 pm -10 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm.

Rock Salt, despite its alfresco, dramatic beach setting, is cosy and intimate. The funky music, alcoves and different levels add to its charm.

Comfortable sofas, attentive but unfussy service and valet parking, make the whole experience a relaxed, and pleasurable one.

We begin with drinks – a classy Oz chardonnay available by the glass – then adjourn to the spacious restaurant where the cool sounds from a trio playing jazz standards, filter through. From a selection of 14 starters, all living up to their stated claim to be “fresh and delicate”, I opt for the King Prawn Salad, a crunchy, spicy amalgam of sliced baby eggplant, lemongrass, lime, mint and chili paste, the perfect green complement to massive grilled prawns. My partner’s seared marinated scallops, on a bed of asparagus and fresh leaves, are succulent and enhanced by an intense chili-garlic sauce.

The ‘new’ Boathouse is already celebrated for two iconic dishes: the slow-cooked Duck Confit in “tangy” tamarind sauce and the Lamb Shank Massaman. The restaurant’s most popular offering, this southern Thai curry featuring lamb on the bone is served in a delectable and aromatic sauce with sweet potatoes. Massaman like you have never experienced it. Sensational. The Gaeng Kathi Neua Poo, yellow crab meat curry in coconut milk with betel leaves, is densely flavoured and creamy. Also recommended are Grouper Fillet, Razor Clams with Cashews and Okra, and Smoked Roasted Pork Neck in Green Banana Curry.

We descend from the road above to set foot in what feels like an enchanting film-set: wooden decking walkways lit by traditional lanterns, that lead past lily ponds and airy, rustic pavilions ready to welcome diners. The menu features traditional south Thai cuisine – both chefs, Uncle Nun and Aunt Yai, honed their considerable culinary skills for thirty years. Unsurprisingly, their menu – a roll-call of authentic Thai classics – features an extraordinary range of dishes, all prepared from superfine ingredients.

Home-grown herbs complement “catch of the day” seafood harvested by local fishermen. Little wonder that the Thai name means “fishing net”.

Warned by our attentive waiter that the portions are uber-generous, we begin with a shared gaeng poo, Nun’s “favourite” yellow curry with a creamy, tangy sauce and huge chunks of succulent crab. Unbeatable. For our main course, we order from the “The Pond”: steamed grouper served with a delectable chili and lime dressing. The flesh is firm and redolent of the sea, a reminder that such authentic fish is becoming more difficult to source. We conclude with a classic mango and coconut milk rice, surmounted by mango ice cream.

Everything is perfect, but the menu is vast and we have only scratched the ‘à la carte’ surface. The attention to detail at Ta Khai is breathtaking: for example, “bite-sized dishes” range from miang kham with no fewer than six herbs, to buea tod with native water grass and prawns. “Wok-fried” fish offers a choice of seven different sauces. Lavish set menus are keenly priced.

Inventive cocktails feature local produce – galangal, basil, papaya – re-emphasising the Thai experience. So too the wine list. It seems only appropriate to sample a Thai wine, a Chateau de Loei Chenin Blanc, so crisp and aromatic, I opt for a second glass.

Ruen Thai dishes up classic favourites utilising recipes that have been passed down through the ages.

Following the winding garden path to the restaurant just before sunset, it became clear that this would be a magical dining experience. The sun began to splash shades of pink across the sky as we were seated and presented with the menus. Adorably designed, the menus feature the best offerings of Royal Thai Cuisine. We have many questions, and the service team, all smiles, is happy to answer them all – and recommend favourites.

We make our decisions quickly and service started almost immediately! As expected from Royal Thai Cuisine, the presentation of each dish is outstanding. Dainty serving bowls and fine ceramics are placed in the middle of the table.

The aromas are deliciously overwhelming and the quality of the food is evident as we begin to ready our plates.

Pra Loh Tam Kai, grilled marinated chicken filet in lemongrass stick, is delightful. The chicken is delicious and juicy and the lemongrass provides a tasty companion to the grilled chicken. Then there is the Mussamun Nuea Yang. Mussaman is a classic Muslim Thai curry, rich in flavour with foreign influences. Slow-cooked, the beef at Ruen Thai is tender and the curry rich and creamy.

We dive into Sanon Wang Naii next. A baked marinated chicken breast, wrapped in pandanus leaves, Sanon Wang Nai is a perfect standout dish. It’s fragrant and full of flavour, while the chicken is exceptionally tender and juicy. The last dish to arrive is the staff-recommended Goong Ruen Thaii – lush grilled tiger prawns with tamarind sauce. The prawns are enormous and as fresh as can be. The tamarind sauce adds a nicely balanced mix of sweet and tart to the dish.

Rich, sticky sweet desserts are up next. We order a variety from the menu, including Khanom Plai Sam Rab, a mixed selection of Thai desserts, Manorah Fon Leb, southern Thai style sweet banana in syrup and Tub Tim Krop Maprao Onn – jellied water chestnuts served in syrup and fresh coconut milk. Although delicious, the desserts are very sweet; we leave Ruen Thai with very full tummies.

Located in Dusit Thani Laguna Phuket, Ruen Thai restaurant is an exceptional dining experience. Prepare to be dazzled by the charming atmosphere of the restaurant, the knowledge of the service staff, the exquisite presentation of Royal Thai Cuisine and, most importantly, the simple yet outstanding flavours of the dishes. Kantok at Burasari has long enjoyed a reputation as a haven in the pulsating heart of Patong. The atmosphere is cosy and comfortable: one can enjoy an unhurried drink by the pool or dine in a tranquil green setting.

The introduction of a menu based entirely on traditional Phuket cuisine now provides an added incentive to visit Kantok; it’s a master-stroke. The accomplished chef, who has worked in Switzerland and Australia, is in fact Thai. He’s an enthusiast of Phuket-inspired food and Kantok is the only restaurant in Patong to have created a menu based entirely on regional Thai delicacies.

Incorporating a rich mix of cultural and culinary influences, this ‘classic fusion’ cuisine combines ‘Baba’ (Thai/Chinese) and Malaysian dishes with indigenous seafood (a legacy of Mon sea gypsies), local herbs, fruits and vegetables.

Though an à la carte version is available, we opt for the set menu. It proves to be a wise choice. All the dishes arrive together, artistically presented and pretty as a picture. It is, of course, an invitation to share, Thai style, rather than select a single dish. We begin with po paie sod kub satay, y steamed spring rolls filled with chicken marinated with lemon grass, kaffir lime and coriander. Enhanced by a tangy dipping sauce, they are crunchily delicious.

The main dishes include mu hong, a classic Hokkien (south Chinese) inspired dish of stewed pork belly in rich black soy sauce. The meat is so succulent and tender, it melts in the mouth. An absolute classic. Next up is a whole crisply fried white snapper, garnished with a fresh salad based on long green beans. Unlike so many so-called ‘snapper’ dishes, this is the real deal – meaty and with a real tang of the sea.

To add some piquancy to the feast, we sample mee prig goong seab, thin white rice noodles with a spicy and flavoursome crab curry. A blend of Chinese and local inspirations.

The dessert is an unfamiliar and exotic dish, o aew, w which combines clear banana jelly and red beans in an iced syrup of palm sugar. Cooling and cleansing.

This reasonably priced meal, accompanied by two glasses of excellent Chilean primitivo wine from a well-chosen list, shows that a carefully compiled set menu offers the perfect gastronomic balance – as well as celebrating the virtues of an impressive local cuisine.

Famous for serving high quality meats and delicious steakhouse-style food, El Gaucho Argentinian Steakhouse Thailand d offers a one-of-a-kind dining experience that is sure to please carnivores on the outskirts of Patong. The steaks and meat cuts served here are of the melt-in-yourmouth variety and each bite is exceptional. It’s interesting to note that all meat products are sourced from selected farms in Victoria, New South Wales and individual farmers and ranchers in the United States and without doubt you can taste the original flavour of the naturally raised cattle.

We visit El Gaucho on a balmy late Saturday afternoon and opt to sit outside on the large terrace in order to watch the sunset. I find the restaurant impressive straight away. It’s cosy and well designed, allowing for natural light to illuminate the dining area. Without missing a beat, the wait staff bring us icy cold water, bread with grilled garlic and garlic butter, served on a wooden board.

Our dinner begins with the arrival of two signature starters, a piping hot Beef Empanada and Salchicha, which is a homemade Argentinian spiced sausage. While the portions are quite big for starters, both dishes are super tasty. Mains follow quickly, and side dishes of sautéed mushrooms, cream spinach, fresh green salad and potato gratin accompany a USDA Prime Rib Eye Steakk and a large cut of Beef Tenderloin.

Served with a red wine sauce and a zesty chimichurri sauce, both meat cuts have been grilled to perfection. The Rib Eye is tender and literally melts in your mouth with each bite, while the Beef Tenderloin is richly colored and full of flavour.

It has been a very long time since I have had meat that tastes this good. Regarding the side dishes, it’s worth mentioning that the cheese used in the potato gratin is of extremely high quality, which really gives the dish a bold flavour. Our dinner is rounded out with a Dulce de Leche in Crepe served with vanilla ice cream. It’s a sweet, sticky ‘mess’ and the perfect end to such a wonderful meal.

In addition to the various steaks offered on the menu, there are also fish and chicken dishes as well as a large variety of exceptional salads. The wine list here is extensive and there is also a fine selection of cigars to choose from.

The El Gaucho Argentinian Steakhouse is running today ten successful locations in Vietnam and Thailand and without doubt, is a true enrichment to the restaurant VISIT US scene in Phuket.

Mangosteen Restaurant

Ample parking on the doorstep was a good start. Then it got better. Mangosteen´s restaurant stands on high ground with a commanding view of Chalong Bay, Rawai and nearby islands.

We arrived with no preconceived idea about what we wanted to eat, so were more than happy when our host suggested that we try the Thai menu. He explained that the chef had created a menu of authentic Thai dishes from the Rama IV and Rama V period, beginning over 100 years ago, that are prepared in the true Thai style and absolutely not modified for western palettes. We were curious; it sounded interesting, even though I´m not good with spicy food.

As a pre-menu taster, we were given an innovative Thai green curryy and Mussaman curryy in small ceramic cups with a crusty oven-baked roti on top. The combination worked well.

Our main course appeared shortly after, in the form of a fully loaded stainless steel three-tiered tower.

The top level was laden with Skewers of chicken, capsicum and onion; Skewers of slow-cooked beef with coriander seed and garlic; Skewers of prawn in satay sauce; Spicy ground duck salad and Deep-fried fish cake. All mouth-watering, tender and well inside my `spicy range´.

The middle tier had King prawns in the shells; Whole fried squid, sliced; Khai look kheii (deep fried egg in tamarind dressing); Pla rad prig (deep-fried seabass with sweet and spicy garlic sauce); Phad krapow gaii (ground stir-fried chicken with chillies, garlic and Thai basil).

The lower tier consisted of Hor mok poo (curried blue crab cooked in the shell); Tom kha gaii (chicken with galangal and coconut soup); Gaeng khew waan nheua (green curry with beef, kaffir lime leaves and Thai basil).

We also had the opportunity to try a Thai red wine, choosing a Syrah Reserve Red d from Chateau de Loei Winery, ideal to accompany moderately spicy Thai dishes.

We battled on with the food tower, tasting every dish, but were beaten by the quantity, even though all the portions were fairly small - much like a Thai version of Tapas. The opportunity to sample so many dishes - superbly prepared and, without exception, delicious - was unusual and a really great feature of Mangosteen´s Thai menu.

To round off our Thai evening, we had coffee grown in northern Thailand, locally roasted and ground, along with a tasty Thai-style Cooked banana in cream coconut and Thai herb sauce. A simple, but absolutely brilliant, traditional Thai dessert.

If, despite what we found, you don´t fancy Thai food, Mangosteen also offers a full international menu, as well as an extensive wine, beer and cocktail list.

This really is a place to go back to! Tremendous views, seating that feels quite private and an alfresco setup. There´s even the choice of booking a romantic private dinner for two in the wine cellar, only a few metres away, but some three metres underground - with climate control of course.

The Mangosteen team hasn´t reinvented the wheel when it comes to Thai food, but they have revived VISIT US the older style of cooking and can be proud ONLINE of offering one of the few fully authentic Thai menus in Phuket, all the way from starters through to desserts, and including both the coffee and wine. I was impressed.

Beetroot & Goats Cheese Salad For the beetroot 1 whole beetroot 2 leaves of Chinese Cabbage 60g daikon with skin on (round cut) 2 slices of ginger with skin on 2 litres of the water 3 sprigs of thyme 2 bay leaves 30ml red wine Boil 1 litre of water, add all ingredients except wine. Once the first litre has reduced by half, add another ½ litre of boiling water and simmer.

Repeat the process with the remaining water, then add red wine; simmer on low heat till beetroot is soft.

Peel the beetroot, cut round using a ring cutter, dice the rest into small cubes.

For the purĂŠe 1 whole yellow capsicum (only 35g) 1 whole red capsicum (only 35g) 50g cooked beetroot 20ml olive oil 80

PARESA DINING Char grill the capsicum until it gets dark around the surface, then remove flesh from both capsicum.

Blend together with cooked beetroot, add olive oil and season.

For the salad 10g goats cheese 10g walnuts 80g cooked beetroot 20g roasted capsicum 5ml apple cider vinegar 15ml olive oil 5g sliced celery Thinly slice baby radish and combine all ingredients, toss in the dressing and combine on a plate by filling up the beetroot ring you made earlier.

About Chef Franko Originally from South Korea, Chef Franko began his culinary career in the restaurants of Paris, France. Travelling there alone at the age of 17 to pursue his culinary passion, he studied for a 'Le Cordon Bleu' diploma in French patisserie.

Whilst there, he developed his skills in a number of restaurants culminating at the highly prestigious Hotel Plaza Athenée Royal Palace Hotel in the kitchen of three-star Michelin chef Allan Ducasse, and under the tutelage of world champion pastry chef, Christophe Michalak.

He will oversee the entire culinary team of Paresa Resort from its signature Thai restaurant, ‘Talung Thai’, which serves authentic Southern Thai cuisine using fresh local produce, to ‘Diavolo’, Paresa’s Mediterranean style restaurant, where a generous à la carte breakfast and tempting European delicacies are served throughout the day, in a spectacular setting over the Andaman Sea.
