‘Trisara’ (pronounced tree-sa-raa) means “Garden in the Third Heaven” in Sanskrit. Opened 12 years ago, the title is no exaggeration; this really is an enchanting locale fit for the gods. After a drive past elegant pool villas discreetly shrouded in trees and exotic gardens, we arrive at the bar, one of several elegant pavilions on an immense expanse of natural wood decking. So close to the beach, you can both see and hear the crash of white-topped breakers. From an extensive list, my friend orders an American Deschutes craft beer. I choose a riesling from Western Australia as aperitif. Launched in July, Chef Kla’s aim at Seafood is to create authentic Thai ‘Mama’ dishes, drawing “inspiration from secret local recipes”. Some of the dishes are indeed a pleasant surprise – innovative and unfamiliar. Given their Thai name in the menu, a helpful description in English follows. The service is friendly yet unobtrusive. Our charming waiter, Woody, is constantly on hand to advise and inform. We begin with lon poo, a crunchy selection of raw vegetables wrapped in rice paper, accompanied by a Phuket crab dip of coconut cream and authentic bilimbi fruit juice. We then opt for a special Thai favourite – pla sai thad kamin – crispy sand fish fried with garlic and turmeric. The best example of this dish I have ever sampled. The main course, so rich and generous that we decide to share, is gam poo phad pong kari, stir-fried crab meat, in homemade yellow curry paste, eggs and celery. There is a scrupulous attention to detail: an unusual range of breads, and colourful dipping sauces, based on, seafood, ginger flowers and tamarind. Other signature dishes include deep fried stuffed sea bass with home-grown herbs, and a distinctively different lobster – served with cashew nuts. This culinary cornucopia comes with a bottle of Australian Saloman shiraz, rich in tannins and fruit. My partner stays with the Deschutes beer. The wine list is the most comprehensive I have encountered in Phuket: 18 different wines by the glass and literally hundreds of bottles to choose from. Amazing food and drink. Is it any wonder that Trisara has won so many culinary awards?

Only metres from Karon Beach, Mövenpick’s Karon Beach Square is the only complete ‘dining and chill’ destination of its type in the south of Phuket, with four very different dining options, a great range of local and imported beers, a fine selection of premium wines and spirits and a professional mixologist – who doubles as a juggler! Café Studio is a great place to relax and the perfect place to laze away an afternoon. Just watch the world go by or plug in your laptop in the library and take advantage of the free WiFi! Whether you’re there for just a few cool drinks or a refreshing feast, you won’t be disappointed. Marinated Seafood, Greek Salad and Pia-Diavolo Pizza are typical menu items. For dinner, wander over to El Gaucho Steakhouse for a Brazilian Currasco treat or some perfectly grilled pieces of meat. Choose à la carte or go for the all-you-can-eat Churrasco option, helping yourself to an abundant array of salads and choosing your meats from the sword. The succulent Australian Angus Grain Fed Beef Tenderloin is ‘pick of the bunch’, but must-try other meats include Rib Eye, T-Bone, Lamb Chops and the famous El Gaucho Spare Ribs. And a special treat: choose from more than 20 different homemade mustards and sauces to accompany your dinner. Next on the agenda, if you fancy oriental instead of Latin American, upstairs you’ll find Orient Asia. Here, the décor speaks of Asian influences with red wall panels, subtle back lighting and contrasting dark wood furniture. Decorative Chinese urns and bottles occupy the shelves along the walls. Here you’ll be pampered with Asian delights such as Thai Warm Shrimp Salad with lemongrass-mint leaf, Tom Kha Gai (spicy chicken and herbs cooked in coconut milk soup), Roast Duck Saigon or Steamed Whole Sea Bass with Lime garnished with chilli, garlic and coriander. For a change of pace and style, move on over to “upbeat and buzzing” Mint, with its lively ambience and not-too-loud music. While this is a very much a family orientated restaurant, there’s a lot going on, including frequent theme nights. Dinner is a choice of à la carte or help-yourself from the wellstocked carvery and buffet. 9

The Nai Harn has undergone many transformations over the years. Nowadays, Rock Salt, a pebble’s throw from the waves lapping Nai Harn Bay, is perfect for a pre-prandial cocktail. Relax to funky music, admire the roseate sunset, and peruse the list of ‘Tribute and Signature Cocktails’ created by Salim Khoury. Awarded the accolade of UK ‘Bartender of the Year’ in 1992, and famous for his stewardship of the London Savoy’s American Bar, he has long been associated with The Nai Harn. Little wonder the cocktails are so memorable. My partner has a Nai Harn Sunset, a deep pink confection made with Balls gin, fresh water melon, basil, lime and Prosecco. Mine, a Nai Harn Cooler, is a luscious offering: Kristall gin combined with zesty orange marmalade and the juice of lime, orange and pineapple. Also on the list are: Rumble, Blushing Monarch – featuring gin and Campari and, of course, Lady Nai Harn. For a main course, a must-try is the ‘piece de resistance’, the Andaman Platter, a comprehensive sea-food offering for two, which pays homage to the very essence of Phuket’s marine heritage. Sea shrimps, tiger prawns, Fine de Claire oysters, steamed Rawai clams in chili, ginger, coriander and coconut milk, served with all the trimmings. Less demanding on pocket and palate, sample Mediterranean inspired flavours: Souvlaki – barbequed pork kebabs with grilled peppers – or the Italian-inspired Blue Mushroom Pizza. Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist. To top it all, there’s a DJ playing every Friday from 4 pm -10 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm. Rock Salt, despite its alfresco, dramatic beach setting, is cosy and intimate. The funky music, alcoves and different levels add to its charm. Comfortable sofas, attentive but unfussy service and valet parking, make the whole experience a relaxed, and pleasurable one.

at the Nai Harn Cosmo offers a unique gastronomic experience in a paradisal setting. The flagship restaurant of the iconic Nai Harn, it occupies one of Phuket’s most coveted locations, a promontory flanking Nai Harn Bay. Featuring grey furnishings and geometric white décor, the dining area exudes space and airiness. Immediately below us, the sandy beach is framed by jagged rocks. Executive Chef Mark Jones carefully explains the new menu. Recently appointed and with an impressive CV in high-end catering, he is rightly enthusiastic about a cuisine which reflects his passion both for global travel and culinary innovation. We begin in Northern Japan. Mark’s choice of appetiser is pan-fried Hokkaido scallops with apple ginger, and crispy coppa ham. The juicy shellfish are lightly seared, their succulence complemented by a delicate echo of apple. The main course, again ocean inspired, accentuates the Andaman Sea: moist White snapper steak, and matching croquette. Other chef’s recommendations reveal a capacity for adventurous combinations. Marinated raw sea bass comes with pomelo, coriander, chili lemon, ginger and lotus root; Seared yellow fin tuna with greens, avocado, watermelon and ponzu citrus dressing. A Mixed grill of Andaman seafood includes the local catch of the day. Char-grilled cauliflower provides an inventive vegetarian option. For carnivores, Australian rib-eye steak with rissole potatoes and oyster mushrooms, rocket, asparagus, garlic and Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits, and crisp organic salads. The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by exquisitely chosen vegetables and herbs with matching sauces and dips. Ingredients are ultra-fresh. Most of the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The wide-ranging meats are created in the resort’s own charcuterie, even down to regional sausages. 11

Preparation Wash and drain the prawns. Lightly sprinkle-coat them in tempura flour and deep fry until the skins open. Finely chop the sweet peppers, garlic and scallions and pan fry until aromatic. Add the deep-fried prawns to the pan and stir fry with all the ingredients and add the oyster and soy sauce. Serve with Thai rice of your choice.
