GOURMET PHUKET
gour·met /ˌɡôrˈmā,ˌɡoorˈmā/ | noun: a connoisseur of good food; a person with a discerning palate
travelling for
‘Local experiences’ and ‘authentic travel’ are the biggest buzzwords to hit the travel and tourism sector in quite a long time. Everywhere you look, people are seeking out original and unique experiences in various cities around the world. Food tourism and the idea that one will travel for food, although not new concepts, certainly have become heightened interests for many travellers
Eat LikE a LocaL
As a designated UNESCO City of Gastronomy, Phuket prides itself on its diverse cuisine. It was the first city in Asia to receive this honour, and since then food tours, as well as general interest in local Phuketian food, has grown in popularity across the island. When The Michelin Guide expanded into Phuket, it gave foodies even more reason to taste their away around the island, and with good reason. The Michelin Guide awarded 12 restaurants in Phuket the Bib Gourmand, many of which are well-established local street food restaurants. For those looking to eat like a local while in Phuket, be sure to try a few of the various restaurants recognised by The Michelin Guide; they offer a good taste range into Phuket’s unique foods.
One Chun Cafe n’ Restaurant
Chuan Chim Read online
chuan chim
One of the oldest food shops on the island of Phuket, Chuan Chim is now run by the second generation of the family that originally started it. The restaurant is about as local as one can get with its plastic tables, chairs and no-fuss decor. Open for both lunch and dinner, Chuan Chim is a popular spot that is always busy. The food here is authentically Thai. Signature dishes include the crispy stirfried basil with minced pork or chicken as well as a variety of fresh seafood plates. When dining at Chuan Chim, be sure to order their famous crispy fish topped with gravy. It’s divine!
Mee
ton Poe
Established in 1946, Mee Ton Poe is located near the Surin traffic circle in Phuket Town. It is truly a Phuket noodle institution. The shop is a popular place to eat for Phuketians and is also a hit with Chinese tourists. Mee Ton Poe is famous for its signature dish which is stir-fried Hokkien Mee, or Hokkien noodles. The noodles are thick, yellow and fried with seafood, pork and various vegetable toppings. A half-cooked egg on top completes the dish. Make sure to order this noodle dish as it is a really hearty treat. The best accompaniment to Hokkien Mee is a side of chicken satay with thick, creamy peanut sauce.
one chun
One Chun Cafe n’ Restaurant is a trendy dining establishment in Phuket Town. Set in a historical building, One Chun features vintage decor and a menu that boasts extremely authentic Thai cuisine. The focus is on southern Thai dishes at One Chun, and the recipes used to create the menu have been passed down from grandma to auntie over the course of three generations. Looking for a tasty dish to order? Give their Moo Hong a try. It’s a lush southern Thai pork stew with Chinese roots that is as savoury as it is sweet. Moo Hong is made by braising chunks of pork belly with a variety of herbs, garlic, coconut sugar, dark soy, oyster sauce and star anise. The flavour is as unique as it is delicious, and the Moo Hong at One Chun is some of the best that you will find in Phuket.

Dine with the Locals
When it comes to seeking out local dining experiences around the world, there is a large variety of innovative food tours to choose from. Additionally, when travelling, seek out the places that the locals eat at. Depending upon the city you find yourself in, it should be relatively simple to find a street cart and sample some of the unique local scene. Alternatively, travellers can search for creative programmes that bring them into a local’s home.
A social enterprise that facilitates authentic local food and experiences is the Cambodia-based ‘Dine with the Locals’ programme. Offering local food experiences in Phnom Penh, Siem Reap, Battambang and Banteay Meanchey, the programme allows tourists to explore cooking with locals and learn the differences between Cambodian street food and homemade Khmer food. Travellers can choose from a variety of hosts, and the programme ensures that three delicious Khmer dishes will be cooked and shared. You can choose to get your hands dirty and help your host cook or be a bit more hands-off and just watch. However, the programme allows you to have lunch or dinner with a Khmer family afterwards. Some of the hosts also teach skills such as organic farming, silk weaving and modern Khmer art.
‘Dine With the Locals’ aims to provide additional income to Khmer families while facilitating relationships and allowing hosts, despite language barriers, to connect with travellers and the tourism industry. It is truly a wonderful initiative, and the response of interested tourists has been overwhelming.
On a recent getaway to Siem Reap, I participated in the ‘Dine With the Locals’ programme. It was a tremendous experience. I had such an enjoyable time meeting a local Khmer family, cooking with them, being shown around their home and just enjoying a simple yet delicious meal of fresh fish, vegetables and fruit together. In the words of the late Anthony Bourdain, “You learn a lot about someone when you share a meal to-gether.”
While sampling Michelin Guide street food around the world is certainly appealing for many, experiences like the one provided from the ‘Dine With the Locals’ programme are more enriching and allow travellers to gain insight into a truly local way of life. With the surge of Airbnb bookings across a variety of countries and the introduction of ‘Airbnb Experiences’, it begs the question when such intimate local experiences might come to Phuket. There is no doubt that the island is definitely ready for it. After all, you can learn much more from deep interactions with locals than you can from just slurping down a bowl of noodles.
The Boathouse Restaurant’s all-time favourites
an institution among locals and visitors for over 30 years, the Boathouse serves authentically prepared thai and western favourites, matched only by its collection of over 600 mostly old World grape-based beverages. Here are some all-time favourites of the Boathouse restaurant…
Gaeng phed kati poo
Another favourite dish is the gaeng phed kati poo. A perfect blend of crab meat in spicy yellow curry, coconut cream and fresh betel leaves. A true local Phuket favourite.
Half shell scallop pomelo citrus hollandaise
Cold water Chilean scallops topped with refreshing hollandaise sauce. Always a winner in Executive Chef Jonathan Bruel’s menu. It was his first ever signature dish back in Sydney, Australia.
Lamb shank massaman
The restaurant’s bestselling dish on the menu, often described by guests as “world’s best Massaman”. The recipe and preparation is very authentic, its uniquely southern Thai flavours come from a blend of indigenous spices, to which Thai Executive Sous Chef Jimmy Nithan adds a personal twist.
Smoked haddock and salmon fish cake in mustard sauce
Made with fresh Scottish smoked haddock and Tasmanian salmon. An original dish taught to chef Jonathan by his mother, prepared with passion and inspiration, bringing back many childhood memories.

n ikita’s
Live Seafood / Pizzas / Thai / International Daily 9am until late
Created by its Thai owner 25 years ago, n ikita’s enjoys a sensational location oceanside at Rawai Beach. Customers dine in a lush garden setting right at the water’s edge, with white sand underfoot, and enjoy spectacular ocean and island panoramas during the day and a romantic atmosphere at night.
The latest addition to n ikita’s offering is a full range of live seafood, delivered daily to their live seafood tanks. Feast on Tiger prawns, Phuket lobster, black crab, oysters and more.
nikita’s boasts no fewer than 35 cocktails and there are more than 40 labels in their new wine cellar, including several available by the glass. a competitively priced santa alicia cabernet sauvignon from Chile –full bodied with supple tannins – provides a perfect complement to our meal.
seeking something distinctive for the main course, my friend orders a firm-fleshed and succulent Mahi-mahi (dorado). served with a creamy white sauce laced with Thai herbs and mashed potato, it is pronounced superb.
My choice is a whole, deep-fried white snapper in fish sauce (sweet and sour sauce is also available) with a Thai inspired salad of crisp slivers of green mango and peanuts. Delectable. i t is worth noting that many of the vegetables served here are sourced from n ikita’s own farm.
Though n ikita’s emphasis today is on live seafood, there is an impressive range of authentic Thai and international dishes. and, of course, n ikita’s is famous for its thin-crust pizzas – all cooked in a wood-fired oven and celebrated for their lavish toppings.
We finish our meal in style with a slab of hot, dark chocolate mousse and a scoop of fragrant ice-cream. a sensational and contrasting mix of flavours, textures and temperatures. a visit to n ikita’s certainly leaves a pleasant taste in the mouth…
A beach-side dining experience. On the water´s edge, serving a full range of live seafood, Thai and international dishes and oven-fresh, wood-fired pizzas.

Perhaps one of the most beautiful stretches of landscape in all of Phuket, sirinat national Park, covers 90 square kilometres of coastal land and sea. Located in the northwest corner of the island, in the Thalang District, the national park makes a gorgeous nature-filled escape from the hustle and bustle of daily life.
Featuring towering casuarina and pine trees, long stretches of well-preserved beaches and ample amounts of diverse flora and fauna, sirinat national Park is a stunning, unspoilt park not far from Phuket i nternational airport. The surrounding neighbourhoods, although home to some of the island’s biggest resort names and patches of development, have managed to retain a local feel. Life seems to move at a slower pace here, and lazy days can be spent exchanging smiles with friendly locals and exploring the variety of tiny side streets and alleys that lead in and out of the national park area.
n ai Thon Beach is a welcoming stretch of sand that is home to lovely shades of blue water.
sirinat national Park is composed of four beautiful beaches – nai Thon, Mai Khao, nai Yang and sai Kaew. Each beach is just as attractive as the other, and sure to provide the quintessential tropical beach day that so many expats crave and tourists travel to Phuket for.
nai Thon Beach is a welcoming stretch of sand that is home to lovely shades of blue water. There are various rock pools here as well as a small reef, making both snorkeling and scuba diving an excellent choice of activities. The winding road that leads to nai Thon Beach showcases some of Phuket’s last remaining virgin jungle and crosses through a tiny, charming village.
Expect long stretches of sand and nearly deserted beaches at Sirinat National Park
The winding roads leading to Sirinat National Park are filled with a variety of tree species, flora and fauna
Mai Khao is the island’s longest beach, and has recently gained notoriety as the perfect place to take plane spotting selfies. The beach itself remains largely undeveloped, and throughout the year remains practically deserted. nai Yang Beach has no development. i nstead, the beach is fringed by towering casuarina trees and is a wonderful place to search for driftwood and seashells.
Both Mai Khao and nai Yang beaches are sea turtle nesting areas. Between november and February every year, turtles come to lay their eggs on these beaches. sai Kaew Beach is located at the very north of Phuket, just before sarasin Bridge. The beach seems endless and stretches on for miles. i t is often deserted, even in the high season, which makes it appealing to those looking for a bit of solitude during their holiday.
The most popular with locals as well as highly recommended to tourists who are looking to escape from the crowds.
While all of the beaches located inside of sirinat national Park are beautiful and well worth exploring, it is nai Yang Beach that seems to be the most popular with locals as well as highly recommended to tourists who are looking to escape from the crowds and spend a day relaxing amongst nature. as mentioned, nai Yang Beach is backed by towering casuarina trees. The trees provide ample natural shade and a nice space to set up a picnic or chill out for the day.
i n addition to its natural beauty, a huge part of the charm of nai Yang Beach is observing the locals who tend to come in large groups of friends or with extended members of family to enjoy beach life. The beach gets especially busy during the weekend as people tend to take advantage of their time off of work and head to the beach to relax and rejuvenate.
a day spent at nai Yang Beach presents the perfect opportunity to acclimatise yourself into local life; grab a mat, set up under one of the large casuarina trees and head on over to the roadside to perhaps buy a souvenir or indulge in some terrific local eats. There is a large variety of food vendors to choose from at nai Yang Beach. Expect to find classic dishes such as pad Thai as well as loads of local fresh fruit. Barbecue chicken and sticky rice are also plenty, as are Thai sweets and various drinks. is there anything better than going for a swim, grabbing some delicious local food for a picnic and then relaxing a bit under a towering tree on a gorgeous beach? We think not!
sirinat national Park is truly one of Phuket’s last tropical gems. The nature here is virtually untouched and there are so many interesting species of trees and birds. The coral reefs located just offshore include species of soft coral and sea fans, and there are many colourful fish to observe while snorkelling or diving. For those wanting to go for a swim, the water is refreshing and enticing. During the monsoon season, it can get rough, so if you are visiting Phuket from mid-May through the end of October, do exercise caution when swimming at any of the beaches in sirinat national Park.
a day at sirinat national Park is a day well spent. Enjoy Phuket like the locals do and take advantage of these long stretches of beach and a much simpler, quieter side of the island.
Plenty of local vendors line the roads of Sirinat National Park. Make sure to enjoy some local Thai food while hanging out at the beach!

A meal with Scot Toon Managing Director, Asia for The Pavilions
The Pavilions group of exotic and highly individualistic hotels and resorts may appear at first blush to be a mish-mash of unconnected properties without much of a uniting theme or vision. Yet, when you delve a little deeper into these sensational properties, you find that in fact an almost mystically bold vision unites them… that of finding “paradise” here on earth.
Gordon Oldham is the entrepreneur, adventurer and philanthropist who created The Pavilions as a celebration of all the elements that reflect his love of design, life, nature, history, conservation, adventure and culture.
He and his wife Danielle explain their mission this way: “Our travels as a couple left us yearning for something more. On every continent, we stayed at five-star grand dames and under-the-radar boutique properties, yet we constantly set out in search of paradise, then left feeling that something was missing.
“When we began to think we were chasing the impossible, we decided to do something about it. Inspired by the famous novel The Far Pavilions, an epic tale of two lovers who traverse the world to unite in an exquisite place where they can find true peace, we built a haven away from home, where we would be treated like VIPs, yet always feel utterly comfortable”.
Since its opening in 2008, The Pavilions Phuket, set in a verdant amphitheatre of tropical vegetation high above the stunning west coast overlooking Bang Tao Beach, has established a reputation for the ultimate in service and excellence which does indeed seem to manifest a local version of Gordon and Danielle Oldham’s vision of paradise.
I was recently sitting on the glorious elevated platform of The Plantation Club, one of the resort’s signature restaurants, with Scot Toon, Managing Director – Asia for The Pavilions group, and I asked him whether the undoubted beauty and exclusivity of The Pavilions wasn’t just an oasis far away from the reality of Phuket itself.
“The Pavilions is serious about investing back into the local economic, social and environmental reality of Phuket. As an example, the sensation degustation menu we are experiencing is proudly 100% locally sourced. We believe in supporting our local farmers, sourcing fresh and ethically grown produce to serve rich and natural flavours so that we do our part in supporting the community along with delivering a superior culinary experience with a modern European presentation.
“We also continually strive to replace wasteful processes with sustainable alternatives. Our newly appointed garden and farm, with organically grown herbs, mushroom house, chickens and quail, supply our restaurants with fresh produce under the watchful eye of our gardener and farmer team.
“We also have strong ethical policies with our greatest asset – our team – plus strong community engagement with local suppliers and companies with which we do business. In these ways I believe we do our utmost to move Phuket in the direction of paradise.”
Scot studied Hotel Management at Waiariki Institute of Technology in Rotorua, New Zealand. His extensive career has taken him to such potential paradises as the Maldives, Sri Lanka and the Great Barrier Reef’s Hayman Island, plus he has plenty of hands-on experience as a flight attendant and then manager with Qantas and Ansett Australia airlines. He also garnered abundant Phuket-based experience opening Paresa Resort and Kata Rocks prior to joining The Pavilions in 2018.
I asked whether there was a tendency among the resort’s highend, sophisticated customers to adopt a ‘fortress’ mentality and avoid leaving the highly seductive pleasures of The Pavilions’ extensive grounds.
“We do everything we can to stimulate engagement with the local community by offering a broad array of experiences to tempt our guests to play and explore. From island-hopping and elephant sanctuary visits, to night shows, to visits with farmers, fisher-folk, markets and even rubber tappers, we believe in maximising our guests’ exposure to these hand-on and sometimes secret adventures”.
So, can Phuket become a version of the paradise that Mary Kaye, the author of The Far Pavilions, had posited at the close of her novel?
“Clearly, that would require a continued shift in the intentions and actions of the government and tourist agencies which control the levers of power and funding of Phuket’s development, combined with private enterprise working with organisations like Phuket Hotels Association in support. But we believe that we should do all we can as private businesses lucky enough to operate here to make the island as close to a paradise as possible”.
A noble sentiment indeed.

Botanica Luxury Villas
Winner of Best Luxury Villa Development Phuket at The Dot Property Thailand Awards 2017, the Botanica Luxury Villas property development boasts 21 custom-built elite residences of large open plans, bespoke design and sophistication. As exterior design characteristics in the villas don’t change, buyers are free to fulfill a wish list, with the architects and developers assisting to personalise the future owner’s dream home.
Located in a desirable spot in the Bangtao/Laguna area, there is a an eight-kilometre stretch of white sandy beach close by, along with boutique shops and restaurants and an abundance of activities for the family to enjoy. Laguna Phuket Golf course and the shopping centre, Canal Village, are just minutes away.
Botanica Luxury Villas is the brain child of Khun Attasit Incharooti of AAP Architecture Properties & Development, who paired his artistic vision with functionality of indoor and outdoor living space in a tropical climate to produce a unique design.
One ingenious solution to create more covered space outside was to create a covered terrace that can be used as a lounge or dining area with wooden columns. This signature feature interconnects all spaces in an agreeable and appealing manner. In addition, the tiling in the front room and the terrace match, thus making for a seamless connection between the indoor and outdoor.
A natural stone-tiled, infinity-edge swimming pool forms the centre of each villa. Villas feature free-flowing floor plans with folding doors, transom windows above the doors and vaulted ceilings; all residences enjoy these exterior characteristics. A buyer can choose from three standard designs and the home is then custom built, ensuring future owners get a villa that suits their style. The architectural team is available to modify and enhance designs over the course of the year that it takes to build the residence.
Villas are of three to five bedrooms with usable areas from 265 to 700 square metres of space. These elite homes will see natural wood blended with natural stone, imported kitchen cabinetry and high specification smart home technology.
The project has a staffed reception and lobby service, along with 24-hour security. Residents may also wish to take advantage of the boutique coffee and café.
The villas are an ideal investment for people wishing to use them as short term rental accommodation for part of the year and use the remaining duration for personal use or family vacations. Houses of 700 square metres can host four couples plus visitors, while smaller houses of three bedrooms can accommodate three couples or more, making a comfortable and homey place for holidaymakers. While responsibility for all aspects of holiday rental management will be achieved by an established tour operator based at the reception office.
People interested in purchasing a residence at Botanica Luxury Villas are encouraged by the developer to take a visual tour, see the show villa and discuss their aspirations and dream list. Villas are available under a freehold or leashold title. Launched in January 2018, the 21 units will be completed by January 2020.

Each and every year condominium juristic person managers send out a “Notice of Annual Meeting of the Joint Owners” to all owners of condominium units in any particular registered condominium in Thailand. Inside that notice, should be included an agenda if the manager is following the law, which specifies the items under which all of the joint owners who attend the meeting in person or by proxy will vote on the appointed day of the meeting.
Usually, one item to be voted on is the appointment of specified owners (or their spouses or statutory heirs) to represent all co-owners on the condominium juristic person joint owners committee. Every year condominium unit put forth their names to stand for the condominium committee, and every year new committee members are elected to the myriad registered condominiums across Thailand, without actually knowing what it means to be a committee member, legally, or what duties of care a committee member might have to the condominium juristic or the other joint owners.
Having worked with dozens of registered condominium juristics in Thailand, acting at times for individual or groups of joint owners, and at other times for the condominium juristic or the manager itself, we are well aware that there are owners who put forth their names to stand as a committee member with specific agendas, usually that agenda is to seek change of policy for the common good, but other times can appear to be for more suspect reasons such as personal gain or benefit.
We don’t make any attempt to act as the arbiter of appointments in the condominium juristics in which we are actively involved, or otherwise pass judgement on whether the reason someone is standing is for a common good or for self-benefit. We do however advise committee members and juristics their obligations and duties under law, irrespective of the reasons people stand for the position.
It is no secret at condos that all joint owners can lawfully stand for membership on the committee whilst they remain a joint owner, unless barred from membership due to some rule or legal violation (such as failure to pay the common area management fees).
Owners elected to a committee typically are appointed for two-year terms according to the Condominium Act of Thailand (“Condo Act”), and can only be removed, once appointed by resolution, by certain means – including conviction of crime, serious debt to the condominium juristic, becoming incapacitated or by means of a removal vote by subsequent meeting convened by the joint owners with an agenda item to remove a committee member.
However, knowing that one has the right to stand for the committee, or even that one can be removed by a vote, does not mean that one knows the obligations and duties of a condominium juristic committee member.
Under the Condo Act, and generally included in all Rules and Regulations of a registered condominium juristic, committee members have the obligation, as a group of elected members, to attend to the following basic matters:
Monitoring control over the condominium corporate 1. management;
Appointing a member to assume the duties of manager 2. of the condominium juristic in the case where there is no manager or the manager is unable to perform normal duties in excess of 7 days;
Arranging the board meetings to be convened at least 3. once every six months; and
Other duties prescribed by law. 4.
Upon consideration of the enumerated list above, the duties could reasonably be interpreted broadly enough to encompass typical board legal duties, in a similar manner to the duties of care a board member of a company might have.
But does this expansive ‘corporate management’ duty requirement mean that condominium committee members can be held personally liable for actions they take in their position as a committee member that might cause damage to the common area or another owner’s interests, or even the manager?
This is a very tricky and undeveloped area of the statutory law, and unfortunately the Condo Act does not give specific guidelines as to the extent of a committee member’s liability.
It is therefore reasonable to presume that committee members could be held responsible for reckless actions that cause damage to the condominium or the joint owners and that they have a duty of care to act in the best interest of the joint owners under general principles of law.
Indeed, Thai law generally provides compensation to an injured party for any negligent or reckless actions that causes damage to property, life or the well-being of that person. No doubt this could include negligent, reckless or intentional actions that cause a condominium juristic person to cause damage to third parties or joint owners, including putting the condominium in breach of any of its obligations to joint owners. Accordingly, until the legislature more clearly defines the extent of potential liability of a committee member, such members are encouraged to consider the existing contracts and rights and obligations of the condominium juristic person once they are appointed as a committee member.
In addition to other protective measures, we generally recommend terms of reference are drafted and approved by joint owners to be provided to all owners and then presented for signature by any new member appointed to the committee of a condominium juristic person.

Catch & release fishing!!! For or AgAinst?
millions of people worldwide enjoy the sport of fishing. i always say that one of the beauties of fishing is that it can be enjoyed by so many people on so many different levels. Some people enjoy the sport and practice ‘catch and release fishing’ while others catch to eat some or all of what they catch.
pain, suffering or harm without good reason“. German authorities say that it is OK to catch them and eat them as long as they are above a minimum size limit. The downside of this, which some are now starting to question, is that if you kill all the larger fish which are your breeding stock then where will future stocks come from?
In most western countries, including my home country of Canada, most people keep a few smaller sized table fish over the course of the year but generally practice catch and release. Canada and the USA both have certain laws regarding size limits for keeping or releasing fish. In some cases, the intention is to protect the larger fish which reproduce but in others certain larger fish must be released due to the build-up of toxins which are harmful to humans if ingested.
In some countries there are laws regarding certain species which must be killed irrelevant of size. This is the case in Australia, where all carp must be killed and disposed of away from the water’s edge. This law is based on the threat of invasive species to the natural environment and most Aussie anglers I have discussed this with agree with its importance.
Whatever your thoughts regarding catch and release, please respect all local laws and remember to take a kid fishing whenever possible. Different cultures have different philosophies regarding what they consider an enjoyable or successful day’s fishing.
In Thailand it seems it’s all about eating ones catch with emphasis on the tastiest way to cook one’s quarry. This practice is the same for most Asian cultures. When faced with the option to participate in catch and release fishing, many Asian people simply don’t understand the concept.
Western cultures usually have a mixture of anglers who catch and keep and those who catch and release. I meet anglers from all over the world and was quite surprised over the last few years to learn that some western countries don’t allow catch and release fishing at all. Their beliefs are that animals feel pain so catch and release is actually cruelty to animals.
Germany and Switzerland are prime examples with both countries banning catch and release fishing. The German Animal Welfare act states that “No one may cause an animal

small waves? Big trouble!
Enjoying our waters, and when not to go out
...This type of wave is created by faraway storms and the winds they spin up over the distant ocean. The waves created by these winds arrive at Phuket’s beaches 14 or more seconds apart.
’The waves don’t look that big.’ ’I will only go out up to my knees.’ ’I’m a strong swimmer. I’ll be fine.’ As a veteran ocean lifeguard, I have heard the above statements time and time again from beach-goers wanting to swim in dangerous conditions.
Now that Phuket’s waves have temporarily become smaller, it is tempting to take a jump into the warm waters of the Andaman Sea. Is it safe to do so?
That depends on your swimming ability and experience with the ocean. Read on to learn more.
Long or short period – what’s the difference?
Over the last two weeks, two-to-three metre waves have pounded Phuket’s west coast beaches. As big as that sounds, the real danger lies not only in the size of the waves, but their frequency, or how often they break.
‘Long period’ swells hit Phuket’s west coast shores only occasionally. This type of wave is created by far-away storms and the winds they spin up over the distant ocean. The waves created by these winds arrive at Phuket’s beaches 14 or more seconds apart. As they approach the shore and ‘feel’ the shallower water, the top of the wave eventually overtakes the bottom, and the wave breaks. For surfers, these are dream waves. For swimmers, these waves can be powerful, and should be approached with caution.
However, the longer period in-between waves provides time to take a few breaths, and get ready to dive under the next wave. These waves also come in groups, with long, calm lulls in between. While these lulls can provide tired swimmers time to recover before the next group of waves arrive, they can also be deceptive.
Inexperienced ocean swimmers may only watch the ocean for a minute or so, before deciding the waves look very small, and then enter the water. In reality, they have observed the ocean during a lull when no long-period waves are arriving. Then, once they are out in the water, another group of large ‘set’ waves arrives, which can overwhelm them.
Wind swell
Unfortunately, Phuket’s prevailing and dominant source of waves are ‘short period’ wind swell. These waves are whipped up by the local winds of the SW monsoon. They blow towards the northeast right across Phuket’s beaches. The result? These waves are spaced only six to eight seconds apart. When local wind waves reach over two metres, they are extremely dangerous, because swimmers in distress have very little time to surface and breathe before the next wave hits them.
Plus, short period wind waves have few lulls in-between sets of larger waves. Once tired, inexperienced ocean swimmers, and even strong pool swimmers can become quickly overwhelmed by the frequency of the turbulent whitewater waves. Plus, there is almost always a background long period swell ‘hiding’ in the near constant short-period wave train. When these hidden long period waves combine with the already strong wind swell, the power of the surf becomes very intense, and wave heights increase suddenly and unpredictably.
Flash rip currents
This combination of waves also creates Phuket’s infamous flash rip currents. These pulsing, outward-going currents can reach incredible strength and speed. They can form suddenly
in one area of the beach, where anyone in the water above their knees could suddenly be in danger. As soon as these waves begin to break, the water can suddenly rise. Those who were previously wading suddenly find the water over their waist and pulling strongly outward. Then, these currents suddenly dissipate, only to reappear in a few minutes in another area of the beach. Even the fastest and strongest swimmers can not make forward progress swimming against these currents. Unaccompanied children are especially vulnerable to this type of sudden, outgoing current.
Anyone entering the sea on Phuket’s west coast beaches, where consistent, breaking waves are present, should only do so in swimming areas marked by red-and-yellow flags. If these flags are not present, or if red flags are flying, swimmers should stay out of the water completely.
Always respect the power of Mother Ocean. If in doubt, don’t go out.

The Nai Harn – truly iconic!
Location, L ocation, L ocation…
Arriving at The Nai Harn, I am reminded that this landmark holds a cherished place in the hearts of most Phuketians. As the first luxury hotel built on the island, designed by a renowned local architect, brand changing seamlessly over the years, it remains a destination of memories of special moments.
Originally a hangout for the Hollywood glitterati, in its present form with General Manager Frank Grassmann at the helm, it is now a member of the Leading Hotels of the World.
I am here at Frank’s invitation to experience whether its iconic reputation is still exceeding expectations. Escorted to the reception lounge, I am warmly welcomed by both Frank and
All rooms have a panoramic 180-degree sea view
his Executive Chef, Mark Jones and whilst sipping a refreshing concoction of roselle and honey, with a signature, am efficiently registered.
I am accompanied to my room by a charming staff member and en-route, we pass a petite herb garden, now de rigueur for most serious culinary venues. I am delighted to see and smell multiple varieties of basil; sweet and lemon bordering an intriguing yuzu. There is nothing quite like freshly picked herbs to add a touch of finesse to dishes.
Throughout our ascent to the upper floors of the hotel, and on to my ocean view room, I am acutely aware that without exception, all rooms have a panoramic 180-degree sea view.
Upon entering my room, I am breathless; not because of the energy expended on my short trip, but because the space is truly spectacular, modern luxe: light wood, deep pile carpets and Egyptian cotton bedding amid calming pastel shades. I maintain an air of cool nonchalance whilst my hostess describes the room’s features and facilities. An incredible super-king bed, a spacious bathroom with a clever sliding door for privacy, a temptingly expansive sofa and an up to the minute smart HD TV. A stylish glass table is topped with a banquet-sized selection of delectable munchies, all of course, home-made. I also note an innovative DIy drink kit with premium local ingredients for me to ‘muddle’. She departs and gently reminds me of my ‘date’ with Mark at Rock Salt.
I briefly explore the outdoor terrace with space for a generous number of friends and a putting green! I recall earlier spotting a putter and roll up green in my wardrobe. Seriously!
I spy a tempting day bed draped in pea-green and positioned to maximise the views – and discreetly located on one of the day bed’s pillars, a button labeled “Press for bubbles”. They do think of everything! Before departing, I thumb through a small booklet outlining 20 activities to partake in during your stay; one catches my eye: a barbeque on one’s terrace – what a fabulous idea! My baggage having arrived, I make my way beachside to join Chef. Awaiting the elevator, I see sand-filled ashtrays containing the hand stamped monogram of the Nai Harn; the legendary Plaza in New york began this a number of years ago and it is a demanding task to maintain, but this attention to detail is certainly Frank’s hallmark!
Rock Salt is one of several restaurants showcasing Mark and his team’s talents. An idyllic open-air beachside setting, it offers Mediterranean and Thai dishes. We begin with light salads, including a stunning Buratta salad, and a truly surprising hot smoked Lopburi chicken with creamy green goddess dressing speckled with fresh garden herbs. We follow with a mouthwatering piri piri chicken, the most popular dish on the menu and yes, ‘finger-licking good.’ Mark’s approach, whilst recognising the classics, serves them up with a modern twist. Drinks-wise, The Nai Harn is fortunate to have secured the services of internationally renowned James Suckling, who helps source some outstanding global offerings, many served by the glass.
Staff are extraordinarily attentive and, as I will discover, are across the whole hotel. All outlets helpfully present menu prices net so there are no surprises on payment of the bill; what you see is what you pay!
Despite a number of inviting desserts, I do have dinner this evening in their flagship restaurant, Prime, so head back to my oasis to freshen up.
Following a short recharge, I wander to Reflections, a rooftop terrace lounge for a sundowner. Extremely comfortable sunken furniture, another panoramic vista and chill out music in the background sets the scene perfectly. With glass in hand, I watch the sun go down. As I depart, I notice that set within the heart of Reflections is Hansha, the hotel’s Japanese sashimi bar. I have a chat with the chef, Khun Arnu, who informs me that opening only from Fridays to Tuesdays is because of their insistence on air-flown fish from Tsukiji market in Tokyo. Unfortunately, time pressing, I assure Chef Arnu that on a future visit, I will certainly dine with him. Deliberating my best route, I ponder, is there anywhere in this hotel that doesn’t have a breathtaking view?
Prime, located atop Rock Salt, “the home of smoke and fire”, with an open kitchen and majestic custom made chargrill, provides engaging theatre. Seating only 12, this is an exclusive and hopefully flawless gem in The Nai Harn’s crown. The menu showcases top-end local and imported products.
I begin with Mark’s signature bread, a time demanding, crusty, exquisite creation, exhibiting both his technical capability and love; a meticulous focus on detail. A refreshing amuse bouche of oyster with wasabi arrives followed by a sublime Cornish mackerel, torched Mediterranean style with a ceviche of heirloom tomatoes, red onion and drizzled with virgin olive oil. I also try a stylish variation on Tartare of Angus beef fillet with Italian summer truffles, powdered porcini mushrooms and smoked olive oil. This is decadent dining! Mains do not disappoint; an extremely difficult to source, local coral trout marinated in a delicate masala and accompanied with a swirl of curried mayonnaise.
Prime for a perfect 400-day grain fed Wagyu flank steak
Rooftop Reflections – chill out music at sunset
Prime does, however, have a reputation for serving up the finest beef and in choosing a 400-day grain fed Wagyu flank steak, not an easy cut to cook, I challenge Mark to deliver! It arrives perfectly tender, accompanied by indulgent duck fat potatoes; the secret remains between Chef and myself! My evening is completed with an ethereal coconut and vanilla panna cotta which I devour whilst debating the pros and cons of Tahitian versus Madagascan. I return to my room, replete.
Following a deep sleep on what has to be the most comfortable mattress/sheet/pillow combination ever, I pop to the well-equipped gym, again with super sea views perched above a shaped swimming pool, and briefly visit both in a vain attempt to burn calories I have already consumed and those I am about to add!
Cosmo is the hotel’s all-day dining restaurant and venue for breakfast. Whilst breakfast in many establishments is an afterthought, here, it is a big deal. Chef Mark has implemented many initiatives including bread baked three times a day to ensure optimum freshness, cold pressed sugar cane juice delivered daily from a staff member’s farm, home-made charcuterie, home-made soft cheese, patisserie made exclusively with French butter and a wide range of home-made jams including a subtle, local Thep Prasit honeycomb. This alongside the usual juices, cereals, eggs and an award-winning signature chicken sausage which will truly make you rethink the whole chicken sausage equation. Served in a relaxing open-air setting, again with views, it is a perfect start to the day.
Returning to my room for the last time, I make a short detour to the Spa where a staff member gives me a show round this tranquil hideaway, highlighting their signature treatments of ‘Easy breezy’ and ‘Pearly shells.’ A must try on my next visit.
Having said a mental farewell to my room and with baggage awaiting me at reception, I have a speedy ‘guinea pig’ lunch at Cosmo with Mark to try out his new menu. This latest launch includes heritage Thai recipes from Khun Ann, who also leads cooking classes, (number four on the ‘next time’ list) a range of vegan dishes, an Italian section and some updated classics. I enjoy a prosciutto and melon salad reinvented with crumbled goat cheese, sea bass with zucchini spaghetti and signature Thai dishes of crab curry and stewed pork. Unsurprisingly, I have no capacity left for dessert.
I mull over my experience and without doubt, The Nai Harn is an extremely special place, jam-packed with world class facilities for global vacationers seeking a luxury experience. This is complemented with stellar culinary offerings and throughout, charming, helpful staff always nearby. However, having only completed four from the 20 activities suggested, I gently ask Frank if I may return to complete them all? And he smiles, today’s goal achieved, yet another guest leaves, pledging to return…
