Por Tor (Hungry Ghost) Festival 2019. The ‘Hungry Ghost’ festival is an important merit-making event for ethnic Chinese. Food, flowers and candles are offered to ancestors’ altars to ‘feed the ghosts’ that are said to have been released from hell for the month. Relatives pay their respects with gifts of food, with turtle cakes being the most popular offerings.
Phuket Hotels for Islands Sustaining Tourism Forum (PHIST) an event rallying the hotel industry and its stakeholders to discuss environmental sustainability and community benefit. Lung Dum Located in Samkong near Bangkok Hospital Phuket, Lung Dum is a traditional Thai ice cream shop that’s sure to satisfy any sweet tooth. The shop features an array of ice cream flavours including Vanilla, Strawberry, Lemon and even a chocolatey Milo variety. However, without a doubt, the most popular flavour on the menu is Fresh
Coconut Milk. Choose three scoops of ice cream for an affordable 49 baht, and then add in all the extra bits. A popular ice cream boutique in the heart of Phuket Old Town, Torry’s Ice Cream is famous for creating lush homemade ice cream flavours from the finest ingredients. The boutique has an interesting menu collection, and features signatures such as Roasted Banana, Popcorn and Corn Milk. Durian flavoured ice cream is also a seasonal option. Torry’s offers vegan Avocado and Pumpkin ice cream as well. Try their ‘Taste of Phuket’ menu which blends local sweets and ice cream. The ‘Phuket Treasure’ is a must try. It is also the most discussed form of alcohol after wine, with just as many opinions – and pretensions. Once the preserve of the medical community as a cure for colic and smallpox, whisky (or whiskey) is made from a fermented grain mash, usually barley or wheat, but it can also be maize or rye, which is then aged.

Customers dine in a lush garden setting right at the water’s edge, with white sand underfoot, and enjoy spectacular ocean and island panoramas during the day and a romantic atmosphere at night. The latest addition to Nikita’s offering is a full range of live seafood, delivered daily to their live seafood tanks. Feast on Tiger prawns, Phuket lobster, black crab, oysters and more. Nikita’s boasts no fewer than 35 cocktails and there are more than 40 labels in their new wine cellar, including several available by the glass. A competitively priced Santa Alicia cabernet sauvignon from Chile – full bodied with supple tannins – provides a perfect complement to our meal. Seeking something distinctive for the main course, my friend orders a firm-fleshed and succulent Mahi-mahi (dorado). Served with a creamy white sauce laced with Thai herbs and mashed potato, it is pronounced superb. My choice is a whole, deep-fried white snapper in fish sauce (sweet and sour sauce is also available) with a Thai inspired salad of crisp slivers of green mango and peanuts. Delectable. It is worth noting that many of the vegetables served here are sourced from Nikita’s own farm. Though Nikita’s emphasis today is on live seafood, there is an impressive range of authentic Thai and international dishes. And, of course, Nikita’s is famous for its thin-crust pizzas – all cooked in a wood-fired oven and celebrated for their lavish toppings. We finish our meal in style with a slab of hot, dark chocolate mousse and a scoop of fragrant ice-cream. A sensational and contrasting mix of flavours, textures and temperatures. Gaeng Phed Ped Yang by kaNTOk At burasari RED CURRY WITH ROASTED DUCK Ingredients 200g roasted duck meat | 250ml coconut milk | 1 tbsp soya oil | 25g large red chili | 1 tbsp red curry paste | 5g sweet basil | 80g peas eggplant | 10g fish sauce | 60g pineapple pieces | 15g palm sugar | 30g cherry tomatoes | 5ml cooking oil | 40g black grapes | 5g kaffir lime leaves Method Pour the cooking oil into the pan, turn the heat to medium. When the oil gets hot, add the curry paste. Stir fry until it starts to smell good, then change to low heat. Add the coconut milk little by little and stir until it boils. Add the duck meat and stir well. Add the kaffir lime leaves and season with salt and palm sugar. Taste it. If the curry is too dry, add chicken stock or even more coconut milk if you want a thicker curry. Simmer the mixture at a medium heat until it boils. Then remove it from the heat source and finalise it with sweet basil leaves and a slice of chili.
About the chef Chef Thomas Chef Thomas was born in the middle of Vienna’s culinary scene. Has worked over the past 30 years in leading hotels and Michelin star kitchens in Austria, Germany and Thailand. With his experience in international, Mediterranean, French and Thai cuisine, he has received several awards in dining guides such as Gault-Millau, A la Carte and Guide Michelin. He has spent the last five years working in Thailand, firstly as executive chef at Koh Samui’s Blue Lagoon with its Thai restaurant Kantara and fine dining gourmet restaurant Top Ten. Thomas describes his style of cooking as “classic”, but using modern cooking techniques and methods of preparation. he only award-winning Indian restaurant on the island, serving authentic Indian cuisine using original ingredients imported from India and specialising in tandoori and curries. If you love Indian food like I do, you’ll know that one of the most disappointing experiences of life in Phuket is trying out the new Indian restaurant that just opened around the corner from home – only to discover that the food is truly dreadful. Yes, there’s a lot to be said for sticking to what you know – and Baluchi falls firmly into that category. One of the first restaurants to book space in the launch issue of Where to Eat in Phuket about 20 years ago, Baluchi has been serving quality Indian food in tranquil surroundings to happy guests for as long as most of us can remember. Right in the heart of Patong in Soi Kepsap, and with its own private car park, Baluchi is special not only for its food; choose the garden dining option as we did, and you’ll find it hard to believe that you’re in a hotel restaurant in the middle of this crazy nightlife town. You really could hear a pin drop it’s that peaceful; of course, there’s an air-conditioned option too. But on to the food. As true devotees know, it’s all that matters when it comes to dining Indian-style. Rustle up a bunch of friends (4-6 people is ideal) and get the most out of your ‘Indian night’ as you mix and match a wider variety of tastes. Starting with a fresh Hara Bhara Salad on the table to nibble along with Poppadums with pickles, we went on to savour succulent Chicken Tikka and Paneer Tikka. Our main courses included a collection of old favourites: Butter Chicken, Mutton Roganjosh, Baluchi (black) Dahl, Mutton Biryani and Kadai Subzi (mixed vegetables), with Naan, (plain) Roti, Missi Roti and Mixed Raitha served alongside. Don’t make the mistake of thinking Indian food = blazing hot spices, as my Aussie dining companion originally thought. The real thing is a superb melange of subtle tastes and textures. I couldn’t fault a single dish, but there was one problem: we couldn’t manage to eat it all! As I write this, I can almost taste the food and lament the left-behind dishes. I’m sure if we’d asked, a ‘doggy bag’ would not have been a problem. Perhaps surprisingly, Baluchi has a comprehensive wine list. Our feast ‘demanded’ the full bodied Marques de Riscal Vina Collada Rioja 2010, but if you prefer to stick with the house wine, it won’t break the bank. Top marks to the Baluchi service team; the service was impeccable. Graceful, courteous, discreet and Read online with hard-to-find attention to detail. Are you looking to explore some of Phuket’s most iconic spots? Does catching a glimpse of the island’s local life appeal to you? If the answer to either of those questions is yes, gather your family or friends and head to the southern part of the island for the day. The Rawai neighbourhood is a favourite amongst expats and local Thais alike. The neighbourhood is oozing with local charm and gives off a very relaxed vibe. Time seems to move a bit slower on this part of the island, but there are plenty of things to see and do here which make it a worthwhile day trip or overnight stay while in Phuket. Rawai Landing Pier is a picturesque destination on the southernmost beachfront in Phuket. Popular for its long pier, sweeping sea views and splattering of traditional Thai long tail boats, this local community has managed to retain its fishing village charm. It’s a popular spot for tourists and families alike and a nice place to spend an enjoyable afternoon walking along the pier, dining at any of the local seafood restaurants (we recommend Nikita’s right on the beachfront) or meandering around and taking a few photographs.

A trip to the Rawai Sea Gypsy Village is always an interesting one. There’s a variety of market stalls selling freshly caught seafood.
Next to the Rawai Landing Pier there’s a small village of indigenous people known as Sea Gypsies. This particular group of people have been known throughout the years for their nomadic lifestyle, often living in wooden fishing boats and making their way across the sea fishing and diving. These days, the romantic nomadic notion has disappeared, and although the Sea Gypsies still make a living fishing, they can be found selling various souvenirs and brick-a-brack around the village. A trip to the Rawai Sea Gypsy Village is an fascinating. There’s a variety of market stalls selling freshly caught seafood, which can be purchased to prepare at home, or better yet, in one of the tiny restaurants within the village that face the sea. Plenty of delicious food can be enjoyed in these varied restaurants for very affordable prices.

Not far from the Rawai neighborhood lies Phuket’s iconic viewpoint Promthep Cape, Laem Promthep in Thai. This is, without a doubt, Phuket’s most stunning viewpoint and well worth a visit any day. Promthep Cape offers up outstanding views of the Andaman Sea and the islands just off the coast of Phuket, as well breathtaking sunsets. In recent months, the area around the cape has had a bit of a facelift, and there are some delightful shops and stalls to peruse before it’s time to catch the sunset. This market-type environment is great for picking up inexpensive colourful sarongs and batiks, beach towels and a few local Phuket souvenir items, such as seashells and strings of pearls.

Perhaps catering to the ever changing tourism dynamic on the island, there’s now a very nice Chinese restaurant at Promthep Cape as well as a cosy coffee shop. Street vendors also plant their carts here in the late afternoon, so if you’re looking for freshly fried chicken with sticky rice or Phad Thai with shrimp, this area really is the place to be. For those feeling a bit adventurous, it’s possible to walk down the entirety of the cape. While the trek down is not particularly difficult, the winding path can often be slippery. It’s best to wear sturdy shoes and take a bottle of water, as the trek will indeed make you sweaty and thirsty. Once you reach the bottom of the cape, you’ll be treated to slight sea breezes, the crash of waves and serene views.

Another popular viewpoint in the area is one that overlooks the long stretch of Nai Harn Beach, the small bay of Ya Nui Beach and Promthep Cape. Casually referred to as the Windmill Viewpoint, the area of land is actually home to the Promthep Alternative Energy Station. Views here are impressive and it’s a tranquil spot any time of day. There’s a sala here to escape the beating rays of Phuket’s sun and a small vending cart that offers a variety of cool drinks, fresh coconuts and snacks. Windmill Viewpoint is a favourite amongst those who enjoy flying model airplanes and hang gliding. Although popular, it’s less crowded than some of Phuket’s more well‑known touristic spots, which makes it a lovely place to explore when you find yourself in the southern part of the island. Southern Phuket has a lot to offer in terms of tourist and sightseeing spots, affordable eateries and iconic viewpoints. Do make sure to visit Phuket’s famous tourist destinations down south: Rawai Landing Pier, the Sea Gypsy Village, Promthep Cape and the Windmill Viewpoint when on holiday in Phuket. For those who are not new to the island, a visit to the Rawai neighbourhood offers a welcome chance to immerse yourself in a slower pace of life than other parts of the island.

n this issue of WINDOW on Phuket, we bring you a selection of boutique hotels, resorts and villas from around Thailand. Trawling through booking sites to find just the (boutique) place you’re looking for can stretch your patience, so we were delighted when we discovered boutiquehotel-thailand.com Founded in 2013 by internet gurus Ted Valentin and Jonotan Heyman, their objective was to “...create a collection of the best boutique hotels in Thailand. Hotels that are so unique and beautiful that you do not want to leave your room.”
I’d say they’ve mostly succeeded. It’s a valuable resource that picks out the key points of each property, backed up by lots and lots of photos. That “mostly” is because there are some in their listings that are stretching the ‘boutique’ moniker just a bit. But, hey, nobody’s perfect. Although there’s a booking ‘button’ on each listing, it clicks through to one of the big booking sites where you can take care of business; or you could, just as easily, shop around having identified a shortlist of perfect places.

Polluting the air of the transaction with irrelevant vague legal references and abrasiveness In the same way that some people start a sentence “with all due respect”, before asserting something disrespectful, and others send rude, short messages via communication apps but add emojis to ‘soften’ the unacceptability, lawyers are also often guilty of trading professional insults and indulging in egotistical one-upmanship, at the expense of their clients, the transaction and wider economic stakeholders.

hose who work, or have worked, will be familiar with the creatures of inefficiency in their most basic form – the slacker colleague or employee, the overly bureaucratic administrator in a bank or government department or the taxi driver that refuses a fare when legally obligated to accept it. However, aside from the annoyance that such inefficiency can cause, there is a wider economic effect and impact that many members of the population are unaware impacts on their economic and general wellbeing. This also applies to legal interactions between private-private and public-private parties. In legal negotiations, for the purchase of a new property, the re-sale of an existing property, the arrangement between a hotel operator and hotel owner or in a commercial contract or corporate buy-out scenario, the quality of the actors involved can seriously impact not only the principals instructing the lawyers, but also the third party stakeholders in the transaction, as well as the wider economy. I have found in practice that many of the actors involved in a process can adopt ‘Guerilla Tactics’ which may hypocritically contravene or contradict their purported support of ‘Collectivism’ over ‘Individualism’ in social-political ideology and, in the case of nationalists, may actually damage ‘their’ countries’ economies and those with interests in it – well beyond the boundaries of the small transaction in which the tactics are adopted. Here is a short snapshot sample of the wide ranging worst economic efficiency burning tactics and behaviour that I see regularly, and some methods for combatting and mitigating their impact: 1. Deliberately over-elaborating and prevaricating nonbinding contractual negotiations If two parties have struck a deal, then unless the deal is unviable, or there is fundamental misunderstanding in the key commercial terms, the encapsulation of that deal into a memorandum of understanding or letter of intent should be straightforward. However, some actors in the transactional process, including lawyers, will have complete disregard for the wishes of the parties, and instead adopt the ‘smartest person in the room’ validation technique to attempt to ‘win’ points that do not need to be won in the context of a non-binding agreement. Mitigation strategies: Ask the parties to draft the commercial terms for lawyers to frame into a contract. Avoid ‘termination’ clauses for non-binding arrangements. Make any key terms that will definitely be required in a full contract, clearly referenced in the non-binding arrangement. windowonphuket.com

Similarly, laziness and inward closed mindedness can lead lawyers to indulge in almost meaningless exchanges on their interpretation of law, when in fact the transaction they are negotiating is not in the courtroom, isn’t the subject of a dispute and if it were to be, a different opinion on the law would highly like be of primary significance. Examples of ‘giveaway’ sentences begin with “In accordance with law”, “you are not a lawyer”, “I am a very experienced lawyer”, “I am in court almost every day”. If these sentences have become necessary, then something isn’t right and may indicate the party indulging in this behaviour feels defensive for lack of competence or credibility. Mitigation strategies: Avoid overly academic or overly pragmatic/shoot-from-the-hip style counsel. Discuss, without directing, the counterparties’ choice of legal counsel and how that might fit into the proposed transaction. If you see either your counsel or other counsel indulging in abrasiveness or rudeness, call them out and direct them to stop. Lawyers need the support of their clients, especially when other parties’ counsel is being unreasonable or obstructive. 3. Bad Communicators Many professionals and workers, not just lawyers, are now subject to new challenges and distractions including, of course, their smartphones, too many emails and messages, and a hunger in the business community for instant replies, even at the sacrifice of quality and innovation. Those that are unable to cope with the new business environment are normally, in my experience, the same persons who attend an all-expenses-paid conference, but sit with their laptop in a swamp of inefficiency, ignoring the very speakers and debates their company has paid for them to attend, to develop their skills and networks. The same bad communicators can be seen in meeting rooms, tapping away at their emails, when the subject of the meeting includes them and is something they ought to focus on. This creates a reactive business personality and the overused descriptions of “I am so busy these days” and “I receive ‘too many’ emails” etc. Mitigation strategies: Analyse the communication tendencies of your potential counsel. Adopt a coherent protocol for dealing with a transaction – use WhatsApp for setting up a meeting, email for actually discussing a serious issue and the phone (yes, the old fashioned voice-to-voice protocol!) for clearing up misunderstandings and aligning processes. There is no onesize-fits-all for human interaction, but there are clear efficient preferences. I also recommend that courtesy, which can be achieved in nanoseconds with such as ‘thank you’, ‘please kindly’ and ‘best regards’, is not dispensed with in the false pretense of efficiency or as an excuse to be rude and abrupt. Better results are achieved with courtesy and diplomacy, as evidenced in international relations.

Playing Games with Your Life Interests Economically, game theory is a fascinating subject with whole bodies of law, such as insolvency and restructuring, seemingly resting on the mathematical possibilities of the behaviour of parties, such as the ‘Prisoner’s Dilemna’ and the ‘Nash Equilibrium’. Although understanding these concepts can assist lawyers advise their clients when they face difficult negotiations and guerilla tactics, I sincerely believe in the ‘humanist’ element of a transaction, in addition to its economic relevance. This, unfortunately for some, is not a widely-shared or practiced approach. Wealth maximisation ‘at any cost’ is a sickness in its purest form without checks and balances.
Overall, the less tolerant of inefficient and abusive practices we are collectively, the better the economy, the trade of goods and services and the wellbeing of the large Read online majority of the world participating in that system will be. It is well worth remembering these high-minded principles, even when conducting fairly small transactions as part of the daily grind of business and life.

Bad actors will use underhand tactics to ‘win’ in negotiations and transaction management. The most common provocation of this is when a party knows they will not do business with the other party again so it’s ‘hit and run’. Lawyers often adopt this approach too. Disregard for the human element of transactions can be seen when: parties deliberately delay a property transaction, causing another party to incur rental costs and family disruption; an incoming party deals with the matter of labour rights of employees callously on a ‘numbers’ basis only; lawyers play games with other lawyers such as the ‘18.00 Friday email’; “I only just read the contract” and “reserve my client’s right to comment” inserted as a pretext for reneging on terms at will. Mitigation: Where appropriate and if possible, try to deal within a framework where the parties actually care about the effects and outcome of a transaction on others. This isn’t always possible in business, but it can help eliminate negativity and inefficiencies as a benefit of the policy of doing ‘good business, nicely’.

Fishing Tourism in Phuket

ommercial fishing has taken its toll on our global fish populations and you don’t have to go far to see the negative effects which are evident on our own doorstep here in Phuket and the surrounding fishing grounds.
When it comes to saltwater fishing, unchecked commercial fishing has depleted many fish stocks around Phuket effecting the baitfish populations and in turn the larger fish species such as the sailfish and other large predators. 25 years ago, Pelagic species were plentiful and multiple sailfish catches of 5 or more fish per day were more the norm than the rarity they are these days. This doesn’t mean to say that there aren’t fish to be caught in Phuket waters, but it is a lot more challenging than in the past with some experienced captains doing well at certain times of year. It is mindboggling that in a tourist paradise like Phuket that more isn’t being done to help to rekindle the sportfishing industry. Thailand would do well to learn from steps taken in Malaysia where they have stopped commercial fishing in certain areas where the sportfishing industry is important to the local economy. The Rompin area is a prime example as a sailfish hotspot and a growing attraction for sport fishermen from around the world looking to catch Sailfish in good numbers. Freshwater stingray
With difficult conditions for sport fishing here in Phuket sadly anglers are looking elsewhere for a saltwater fish of a lifetime. I have personally traveled several times to India for amazing Marlin and Popper fishing as the waters there are protected and prize catches are in abundance. Some local Phuket captains are now offering trips to Myanmar to fish the Burma Banks and are having excellent success there although some are concerned about the future with plentiful commercial fishing there also. As far as freshwater fishing is concerned the future has never looked brighter. Fishing Tourism has been growing at a rapid pace in the last 15 years. British expat Stuart Gillham took the Carp fishing world by storm when he built his stunning fishery in Krabi. Gillhams Fishing resorts has really put Thailand on the map with fishing shows Monster Fish, River Monsters and more recently Monster Carp being viewed by millions of anglers. The addition of Exotic Fishing Thailand just north of Phuket 6 years ago has further recognized southern Thailand as a freshwater fishing holiday destination. For People not wishing to travel far from their Phuket hotels there are several popular fun lakes to enjoy with the expanding Chalong Fish Park and recently relocated Phuket Fish Park leading the way. All the fisheries mentioned are sustainable operations and promote catch and release and safe handling of their precious fish. This enables stocks to grow to huge sizes and makes sure our children will be able to enjoy quality freshwater fishing in Phuket for years to come.

he best way to experience Issan is by road. The region is the least developed in Thailand and although cities like Ubon Ratchathani, Khon Kaen and Udon Thani are rapidly developing, the vast majority of Issan comprises swathes of arable land and misty mountain ranges intercepted by roads of varying standards that connect the many small villages. Public transport is surprisingly effective, extensive and affordable, but to really get up close and personal with these roads less travelled, rent a vehicle and go explore on your own.

Walking home from the fields
A good place to start is in Ubon Ratchathani. The city, in the easternmost part of Thailand close to the border with Laos, is anything but a backwater – except perhaps in conventional tourism terms – and visitors will perhaps be surprised to see hip cafés and stylish boutiques next to traditional wet markets and modest street kitchens. Talat Ha in Ubon Ratchathani is a great place to visit to become familiar with some of the regional dishes of Issan
Ever since a group of Lao princes fled Vientiane and was given royal protection by King Taksin in Ubon, the city has been a place of convergence for various peoples and nationalities, most notably Laotians, but also Chinese and Vietnamese. The diversity is first and foremost felt in the local dishes, which are a mix of pungent salads, spicy soups and fresh spring rolls. A good place to sample the food on offer is Talat Ha (market five).

From Mukdahan head west and let Route 12 take you through swathes of more or less arable land, through the province of Kalasin until you reach Khon Kaen, one of the largest cities in Issan and a technological and educational hub. Apart from Khon Kaen University and the city’s silk production, Khon Kaen is known for its grilled chicken, one of the cornerstones in what Thai people consider a typical Issan meal. In fact the people of Khon Kaen province have perfected the art of grilling chicken and in the district of Khao Suan Kwang the dish is considered to be a bit of an art form. Farming conditions can be difficult in the Northeast, especially during drought

Chillva Market Phuket Although relatively small, Chillva Market packs a powerful punch. The market features a wide array of container stalls selling items such as t-shirts, homemade beauty products, sunglasses and handbags. There’s a stage showcasing local entertainment, but most of the music is in Thai. Chillva also features a wide selection of local street food, cute coffee shops and pubs.
