‘Trisara’ (pronounced tree-sa-raa) means “Garden in the Third Heaven” in Sanskrit. Opened 12 years ago, the title is no exaggeration; this really is an enchanting locale fit for the gods. After a drive past elegant pool villas discreetly shrouded in trees and exotic gardens, we arrive at the bar, one of several elegant pavilions on an immense expanse of natural wood decking. So close to the beach, you can both see and hear the crash of white-topped breakers. From an extensive list, my friend orders an American Deschutes craft beer. I choose a riesling from Western Australia as aperitif. Launched in July, Chef Kla’s aim at Seafood is to create authentic Thai ‘Mama’ dishes, drawing “inspiration from secret local recipes”. Some of the dishes are indeed a pleasant surprise – innovative and unfamiliar. Given their Thai name in the menu, a helpful description in English follows. The service is friendly yet unobtrusive. Our charming waiter, Woody, is constantly on hand to advise and inform. We begin with lon poo, a crunchy selection of raw vegetables wrapped in rice paper, accompanied by a Phuket crab dip of coconut cream and authentic bilimbi fruit juice. We then opt for a special Thai favourite – pla sai thad kamin – crispy sand fish fried with garlic and turmeric. The best example of this dish I have ever sampled. The main course, so rich and generous that we decide to share, is gam poo phad pong kari, stir-fried crab meat, in homemade yellow curry paste, eggs and celery. There is a scrupulous attention to detail: an unusual range of breads, and colourful dipping sauces, based on, seafood, ginger flowers and tamarind. Other signature dishes include deep fried stuffed sea bass with home-grown herbs, and a distinctively different lobster – served with cashew nuts. This culinary cornucopia comes with a bottle of Australian Saloman shiraz, rich in tannins and fruit. My partner stays with the Deschutes beer. The wine list is the most comprehensive I have encountered in Phuket: 18 different wines by the glass and literally hundreds of bottles to choose from. Amazing food and drink. Is it any wonder that Trisara has won so many culinary awards?

Two Chefs’ secret of success is serving up some of the most delicious food on the island at affordable prices. Service staff are friendly and eager to give recommendations, while remaining professional and unobtrusive. In Phuket, there are three Two Chefs Bar & Grill restaurant outlets, in Karon Beach, Kata Beach, Kata Center. These restaurants have been driven forward by the same management team for 15 years, which goes some way to explaining the reputation for excellence the brand has achieved, as well as their loyal following among Phuket residents and regular overseas visitors alike. Two Chefs Patong was buzzing when we arrived at 8.30pm – a good sign, especially when others nearby were very quiet! If you arrive by taxi, get dropped at the door, but if you’re coming by car you’ll need to hunt for parking and may need a short walk back. Seating is all open air with fans. At the back of the restaurant there’s an acoustic guitarist strumming away with a selection of middle-of-the-road songs, adding to the open air ambience and complementing Patong’s passing people parade. We got stuck into a couple of great cocktails: a raspberry Margarita and a sizable mug/jug of Mojito, mixed exactly as I like it. Then our starters arrived really quickly – mine a wonderfully creamy Lobster bisque flavoured with saffron and served with garlic bread, my partner’s a tasty Toast Skagen (prawns in mayonnaise with dill and lemon on toast). For main course, we shared a combination plate of Ribs, chicken legs, crispy potato wedges, salad and dipping sauces and a Wooden platter with grilled salmon, sautéed spinach, mashed potato oven baked with red wine and lemon and thyme hollandaise sauce. Superb and perfect food to share! For dessert it was Apple pie à la Two Chefs with vanilla sauce and a Crème brûlée – both perfectly excellent. Easy listing live music, efficient service with attentive staff, a huge variety of menu choices – and a chance to try Scandinavian food at its best. Lucky for us they’ve opened in Patong. Not so lucky for the surrounding restaurants... 9

Only metres from Karon Beach, Mövenpick’s Karon Beach Square is the only complete ‘dining and chill’ destination of its type in the south of Phuket, with four very different dining options, a great range of local and imported beers, a fine selection of premium wines and spirits and a professional mixologist – who doubles as a juggler! Café Studio is a great place to relax and the perfect place to laze away an afternoon. Just watch the world go by or plug in your laptop in the library and take advantage of the free WiFi! Whether you’re there for just a few cool drinks or a refreshing feast, you won’t be disappointed. Marinated Seafood, Greek Salad and Pia-Diavolo Pizza are typical menu items. For dinner, wander over to El Gaucho Steakhouse for a Brazilian Currasco treat or some perfectly grilled pieces of meat. Choose à la carte or go for the all-you-can-eat Churrasco option, helping yourself to an abundant array of salads and choosing your meats from the sword. The succulent Australian Angus Grain Fed Beef Tenderloin is ‘pick of the bunch’, but must-try other meats include Rib Eye, T-Bone, Lamb Chops and the famous El Gaucho Spare Ribs. And a special treat: choose from more than 20 different homemade mustards and sauces to accompany your dinner. Next on the agenda, if you fancy oriental instead of Latin American, upstairs you’ll find Orient Asia. Here, the décor speaks of Asian influences with red wall panels, subtle back lighting and contrasting dark wood furniture. Decorative Chinese urns and bottles occupy the shelves along the walls. Here you’ll be pampered with Asian delights such as Thai Warm Shrimp Salad with lemongrass-mint leaf, Tom Kha Gai (spicy chicken and herbs cooked in coconut milk soup), Roast Duck Saigon or Steamed Whole Sea Bass with Lime garnished with chilli, garlic and coriander. For a change of pace and style, move on over to “upbeat and buzzing” Mint, with its lively ambience and not-tooloud music. While this is a very much a family orientated restaurant, there’s a lot going on, including frequent theme nights. Dinner is a choice of à la carte or help-yourself from the well-stocked carvery and buffet.

Set In a landmark elegant Sino-Portuguese mansion, built in 1903, that was once the Governor of Phuket’s home, a meal offers not only dishes created by a HAPA (Hospitality Asia Platinum Awards 20082010) for ‘One of the Most Creative Chefs in Asia’ winner, but an insight into the architecture and décor of the times. The heart of a fine dining experience is elaborate dishes elegantly displayed and subtly, exquisitely spiced. The Royal Thai Banquet includes an array of starters, soups, main courses and desserts, which range in degrees of spiciness and represent an innovative approach to Thai cooking with a spectrum of recipes from the past and present with a look to the future. Starters include Chor Muang, a steamed flower shaped dumpling, Doi Kham Salad, purple eggplant salad with grilled scallops, Labb Salmon, a salmon tartar and Black Chicken Crispy Spring Rolls. Enticing soups include a choice of Tom Kha Kai Black Chicken, a soup of coconut milk and galangal and Tom Klong Wild Red Sea Bass, a spicy and sour soup. Main courses, a variety of seafood and meats, are tantalizing. Nooror’s Massaman Lamb, a coconut milk curry with potatoes, peanuts and cashew nuts, is described in a 19th century poem by King Rama II. Then there’s Duck with Tamarind Sauce, Black Chicken Green Curry, Phad Sator Koong, prawns with parkia in shrimp paste and Bamboo Fish, Parrot fish cooked in a bamboo case. Exceptional. Professional. Outstanding hospitality. Topnotch service. These elements, brought together in historic surroundings, ensure the Blue Elephant is a not-to-bemissed dining experience on any discerning diner’s list. 11

It’s easy valet parking at The Nai Harn and just a short walk to what must be one of Phuket’s closest restaurants to the beach and rocks. Our table had waves slapping across the rocks nearby, with the beach just metres away. We arrived in time for an impressive sunset with an uninterrupted view of Nai Harn Beach, Cape Promthep and the Andaman Sea. Two Lady Nai Harn signature cocktails (Chalong Bay rum, limoncello, mango juice, lime juice, honey and mint) were a good start to the evening. Cocktails were accompanied by bread sticks with Baba Ganoush and olive oil dips. We started with a Rock Salt Platter (taramasalata, hummus, fava, tzatziki and lamb kofta on pita bread), and a Ceviche (white snapper, lemon, olive oil, fresh mint and coriander). We chose a Thai wine, Monsoon Valley White Shiraz Rosé. Light and fruity, it proved a perfect complement to our meals. After a comfortable interval, our main course arrived on two three-tier stainless platters. For me the Rawai Sea Gypsy Platter (mussels, calamari, tiger prawns, blue swimmer crabs in yellow curry with slices of lemon, lime and seafood sauce). For my partner an Andaman Platter (sea shrimps, tiger prawns, Fine de Claire oysters and steamed Rawai clams in chilli, ginger, garlic and coconut milk, served with garlic bread, red wine shallot vinegar, tabasco, fresh lemon and oil). The portions were generous to say the least! Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist. Rock Salt gives a sense of privacy with little alcoves, different levels and comfortable loungers, while the service team is discreet but attentive. It was also good to see a restaurant built around existing trees instead of cutting them down. This restaurant has it all: perfect location, cosy setting, diverse menu to suit every budget and great food and service. Rock Salt should be at the top of your ‘give-it-a-try’ list. DJ playing every Friday from 4 pm -10 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm.

at the Nai Harn My beer turned up in its own ice bucket – a nice touch – and my partner got stuck into a Lady Nai Harn cocktail (Chalong Bay Rum, Limoncello, mango juice, lime juice and mint), while we enjoyed the impressive panorama of the yachts in Nai Harn Bay and the near-perfect sunset. The chef came to our table and offered some advice for starters. We followed his direction and took the salad of Line-caught seared yellow fin tuna, garden greens, avocado, watermelon with ponzu citrus dressing and the Sautéed handdived Hokkaido scallops with Masago caviar, wasabi and sea vegetable salad. The starters came with a basket of bread and three dipping sauces. We then shared a platter of Black mussels with chili, coriander and coconut milk, followed by a tangy hand-made Nai Harn bakery sorbet. For our main course we shared a surf and turf combination of Australian Hereford prime pasture-raised beef tenderloin, Rawai sea gypsy Calamari and Tiger prawns accompanied by Savoy black pepper sauce, Béarnaise sauce, lobster butter and beach watercress. This was cooked at our table on a charcoal grill and served on large slate plates. Absolutely fantastic! We went for wine by the glass to ‘test’ the novel argon gas-injected system that ensures a wide variety of wines can be sold by the glass. We enjoyed a Fontanasanta Manzoni Bianco 2013, that was not unlike a top Burgundy white. It’s worth noting that all the wines at Cosmo are selected and rated by internationally-acclaimed wine critic James Suckling. We managed to make room for desserts, opting for Caramelised banana and yogurt cake with banana beignets, milk chocolate and banana soup and Tahitian vanilla baked cheesecake with raspberry sorbet and Muscovado crisp. Both delicate presentations. If you’re looking for a superior and entertaining culinary experience, Cosmos will stimulate all your senses and help you discover more. An impressive location in stylish surroundings with an unbeatable view, staff who made us feel like royalty and a chef ready to share his passion for food. Faultless from beginning to end! 13

Established 22 years ago, Banyan Tree was then the only resort on Bang Tao Beach. Now joined by many others, it remains an international symbol of luxury living. The refurbished The Watercourt is part of its ceaseless striving for excellence. Service, ambience and food are impeccable. The menu is comprehensive, while the wine list (equally wide-ranging) boasts, for instance, more than 50 reds, including classics such as Chateau Latour. As an aperitif, I choose a white Thai wine, a Gran Monte sauvignon blanc which is pale and citrusy; with the food, a full-bodied Delicato cabernet sauvignon from California. The open kitchen is next to a welcoming dining area with mirrored columns and picture windows. The whole culinary process can be observed on a huge television screen. But executive chef Alfonso de la Dehesa from Spain provides a personal touch by recommending house specialities. The emphasis is on widely sourced fish and seafood. An international cuisine, with some genuflections to Europe; Fruits of the Sea features oysters from France, California and Ireland. My friend chooses salade Niçoise, a delicious confection with seared yellow fin tuna, potatoes, quails eggs, lettuce and cherry tomatoes. The dressing is a tangy red berry vinaigrette. Keeping to the Spanish theme, my selection from Starter Plates (six of them seafood specials, including prawns pil pil and seafood croquettes with aioli) is Mallorca seafood zarzuela, “a thick stew served with prawns, snapper, mussels, squid and a hint of saffron”. The zesty, reduced broth is poured from a jug. For main course, my partner selects linguine vongole, “pasta and clams with a splash of white wine and tomatoes”. Rich and satisfying. At Chef Alfonso’s suggestion, I try the seafood market selection: seven different fish: cod, Dover sole, hake, John Dory, salmon, tuna and white snapper. Guests can choose both the cooking method and the side order. My hake, a huge chunk of fish, separates into flakes of succulent white flesh and is ideally complemented by buttery mashed potato, asparagus and broccoli. To finish, a perfect crème brûlée. Oh, and by the way, The Watercourt will offer Sunday Seafood brunch from November. Something to look forward to….
