T

he iconic Boathouse Phuket, one of the island’s original quality restaurants – and one of the very few perched at the edge of a beach – celebrates 30 years serving discerning Phuket diners in February.

It’s a little over one year since The Boathouse reopened after major renovation and redesign. The result was worth waiting for, whether you plan to spend a few nights in one of their 37 sumptuous rooms, or drop by for an experience that defines the perfect tropical island dinner.

You must allow time to soak up that experience. Arrive early, claim a sea-facing sofa, order your aperitifs and idly watch the last of the day’s sun-worshippers, surfers and paddle boarders, while you wait for the glorious Kata Beach sunset.

The Boathouse is not terribly ‘formal’ dining, so smart casual is fine – even ‘good’ shorts are OK but, they ask, please no swimsuits, singlets or flip-flops in the restaurant!

If you’re really into gin, choose from 16 premium gins and 8 premium tonic waters – with a mind-numbing 30 varieties of freshly cut fruit, herbs & spices – not to mention 5 “perfect sprinkles”. We’re not, so I went for my favourite Ricard on ice, while my partner sipped on an Orient Blaze (rum, sherry, fresh orange juice and a splash of ginger ale).

Lost in the sundowner moment, we were surprised with, and enjoyed, a tasty ‘amuse-bouche’ before moving on for the main event. Our table, immediately overlooking the sands and the water’s edge, enjoyed the cool sea breeze – but for those who prefer to be more chilled, there’s ample air-conditioned seating, all with an ocean view or, facing the other way, looking into the wide-open kitchen, where Chef Jonathan and his talented team make it all look so easy.

My partner started with a Rock Lobster Cocktail (on avocado, served with tom yam mayonnaise). The flavour simply flowed off the generous, succulent chunks of rock lobster, the 6

avocado providing balance and the mayonnaise reminding us of the Thai influence throughout the Boathouse menu.

I went for Lamb Mulligatawny Soup, not on the menu but remembered and savoured from a previous occasion.

It’s worth noting that nothing is too much trouble for Chef Jonathan. If you fancy something different, just ask him; if he’s got the ingredients – and he usually has – he’ll be happy to create your dish just for you. How many places will do that for you?!

Main course was Tasmanian Salmon, with asparagus, tomato salsa and crushed potato and Crispy Duck Breast with Black Peppercorn Sauce (with colourful capsicum, garlic, peppercorn and oyster sauces), served with Jasmine rice.

The salmon was deliciously light – exactly what my partner wanted, the salsa mixture giving a little zing to the delicate flavour. My duck breast was all I anticipated. Influenced by Thai (or even Chinese) tastes, the peppercorn and oyster sauce combo gave the dish an unexpected edge, while the meat was managed perfectly – al dente, not over-crisped.

Full, but unable to resist a sweet something to finish, my partner indulged in a Belgian Chocolate Trio; for me a simple ice cream – but of course, I had to sample that trio… mmm...

The Boathouse’s wine cellar is an island legend. Even today, with the demands of a massively altered market, you’ll find an eclectic selection with something for every taste and pocket. Philip, the charming and knowledgeable sommelier, recommended I try a Chilean wine I would never have chosen myself – a Domaines Barons de Rothschild Los Vascos Grande Reserve. It was an excellent choice.

osmo offers a unique gastronomic experience in a paradisal setting. The flagship restaurant of the iconic Nai Harn, it occupies one of Phuket’s most coveted locations, a promontory flanking Nai Harn Bay. Featuring grey furnishings and geometric white dÊcor, the dining area exudes space and airiness. Immediately below us, the sandy beach is framed by jagged rocks.

Executive Chef Mark Jones carefully explains the new menu.

Recently appointed and with an impressive CV in high-end catering, he is rightly enthusiastic about a cuisine which

reflects his passion both for global travel and culinary innovation. We begin in Northern Japan. Mark’s choice of appetiser is pan-fried Hokkaido scallops with apple ginger, and crispy coppa ham. The juicy shellfish are lightly seared, their succulence complemented by a delicate echo of apple. The main course, again ocean inspired, accentuates the Andaman Sea: moist White snapper steak, and matching croquette.

Other chef’s recommendations reveal a capacity for adventurous combinations. Marinated raw sea bass comes with pomelo, coriander, chili lemon, ginger and lotus root; Seared yellow fin tuna with greens, avocado, watermelon and ponzu citrus dressing. A Mixed grill of Andaman seafood includes the local catch of the day. Char-grilled cauliflower provides an inventive vegetarian option. For carnivores, Australian rib-eye steak with rissole potatoes and oyster mushrooms, rocket, asparagus, garlic and Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits, and crisp organic salads.

The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by exquisitely chosen vegetables and herbs with matching sauces BOOK NOW and dips. Ingredients are ultra-fresh. Most of ONLINE the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The wide-ranging meats are created in the resort’s own charcuterie, even down to regional sausages.

he Nai Harn has undergone many transformations over the years. Nowadays, Rock Salt, a pebble’s throw from the waves lapping Nai Harn Bay, is perfect for a pre-prandial cocktail. Relax to funky music, admire the roseate sunset, and peruse the list of ‘Tribute and Signature Cocktails’ created by Salim Khoury. Awarded the accolade of UK ‘Bartender of the Year’ in 1992, and famous for his stewardship of the London Savoy’s American Bar, he has long been associated with The Nai Harn.

Little wonder the cocktails are so memorable. My partner has a Nai Harn Sunset, a deep pink confection made with Balls gin, fresh water melon, basil, lime and Prosecco. Mine, a Nai Harn Cooler, is a luscious offering: Kristall gin combined with zesty orange marmalade and the juice of lime, orange and pineapple. Also on the list are: Rumble, Blushing Monarch – featuring gin and Campari and, of course, Lady Nai Harn.

For a main course, a must-try is the ‘piece de resistance’, the Andaman Platter, a comprehensive sea-food offering for two, which pays homage to the very essence of Phuket’s marine heritage. Sea shrimps, tiger prawns, Fine de Claire oysters, steamed Rawai clams in chili, ginger, coriander and coconut milk, served with all the trimmings. Less demanding on pocket and palate, sample Mediterranean inspired flavours: Souvlaki – barbequed pork kebabs with grilled peppers – or the Italian-inspired Blue Mushroom Pizza.

Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist.

To top it all, there’s a DJ playing every Wednesday – Sunday from 5-8 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm.

Rock Salt, despite its alfresco, dramatic beach setting, is cosy and intimate. The funky music, alcoves and different levels add to its charm.

Comfortable sofas, attentive but unfussy service and valet parking, make the whole experience a relaxed, and pleasurable one.

We descend from the road above to set foot in what feels like an enchanting film-set: wooden decking walkways lit by traditional lanterns, that lead past lily ponds and airy, rustic pavilions ready to welcome diners. Beyond, ancient trees, a verdant screen of sea-lettuce, and the lights of Kamala winking across the deep sweep of Patong Bay. We dine, literally, at the ocean’s edge.

The menu features traditional south Thai cuisine – both chefs, Uncle Nun and Aunt Yai, honed their considerable culinary skills for thirty years. Unsurprisingly, their menu – a roll-call of authentic Thai classics – features an extraordinary range of dishes, all prepared from superfine ingredients.

Home-grown herbs complement “catch of the day” seafood harvested by local fishermen. Little wonder that the Thai name means “fishing net”.

Warned by our attentive waiter that the portions are uber-generous, we begin with a shared gaeng poo, Nun’s “favourite” yellow curry with a creamy, tangy sauce and huge chunks of succulent crab. Unbeatable. For our main course, we order from the “The Pond”: steamed grouper served with a delectable chili and lime dressing. The flesh is firm and redolent of the sea, a reminder that such authentic fish is becoming more difficult to source. We conclude with a classic mango and coconut milk rice, surmounted by mango ice cream.

Everything is perfect, but the menu is vast and we have only scratched the ‘à la carte’ surface. The attention to detail at Ta Khai is breathtaking: for example, “bite-sized dishes” range from miang kham with no fewer than six herbs, to buea tod with native water grass and prawns. “Wok-fried” fish offers a choice of seven different sauces. Lavish set menus are keenly priced.

Inventive cocktails feature local produce – galangal, basil, papaya – re-emphasising the Thai experience. So too the wine list. It seems only appropriate to sample a Thai wine, a Chateau de Loei Chenin Blanc, so crisp and aromatic, I opt for a second glass.

1903, that was once the Governor of Phuket´s home, a meal offers not only dishes created by a HAPA (Hospitality Asia Platinum Awards 2008-2010) for `One of the Most Creative Chefs in Asia´ winner, but an insight into the architecture and décor of the times.

The heart of a fine dining experience is elaborate dishes elegantly displayed and subtly, exquisitely spiced. The Royal Thai Banquet includes an array of starters, soups, main courses and desserts, which range in degrees of spiciness and represent an innovative approach to Thai cooking with a spectrum of recipes from the past and present with a look to the future.

Starters include Chor Muang, a steamed flower shaped dumpling, Doi Kham Salad, purple eggplant salad with grilled scallops, Labb Salmon, a salmon tartar and Black Chicken Crispy Spring Rolls. Enticing soups include a choice of Tom Kha Kai Black Chicken, a soup of coconut milk and galangal and Tom Klong Wild Red Sea Bass, a spicy and sour soup.

Main courses, a variety of seafood and meats, are tantalizing.

Nooror´s Massaman Lamb, a coconut milk curry with potatoes, peanuts and cashew nuts, is described in a 19th century poem by King Rama II. Then there´s Duck with Tamarind Sauce, Black Chicken Green Curry, Phad Sator Koong, prawns with parkia in shrimp paste and Bamboo Fish, Parrot fish cooked in a bamboo case.

Exceptional.

stablished 24 years ago, Banyan Tree was then the only resort on Bang Tao Beach. Now joined by many others, it remains an international symbol of luxury living. The refurbished The Watercourt is part of its ceaseless striving for excellence. Service, ambience and food are impeccable.

The menu is comprehensive, while the wine list (equally wide-ranging) boasts, for instance, more than 50 reds, including classics such as Chateau Latour. As an aperitif, I choose a white Thai wine, a Gran Monte sauvignon blanc, which is pale and citrusy with the food, a full-bodied Delicato cabernet sauvignon from California.

The open kitchen is next to a welcoming dining area with mirrored columns and picture windows. The whole culinary process can be observed on a huge television screen.

The emphasis is on widely sourced fish and seafood. An international cuisine, with some genuflections to Europe; Fruits of the Sea features oysters from France, California and Ireland. My friend chooses Salade Niçoise, a delicious confection with seared yellow fin tuna, potatoes, quails eggs, lettuce and cherry tomatoes. The dressing is a tangy red berry vinaigrette. Keeping to the Spanish theme, my selection from Starter Plates (six of them seafood specials, including Prawns Pil Pil and Seafood Croquettes with Aioli) is Mallorca Seafood Zarzuela, a thick stew served with prawns, snapper, mussels, squid and a hint of saffron. The zesty, reduced broth is poured from a jug.

For main course, my partner selects Linguine Vongole, pasta and clams with a splash of white wine and tomatoes. Rich and satisfying. I try the Seafood Market Selection, comprising seven different fish: cod, Dover sole, hake, John Dory, salmon, tuna and white snapper. Guests can choose both the cooking method and the side order. My hake, a huge chunk of fish, separates into flakes of succulent white flesh and is ideally complemented by buttery VISIT US mashed potato, asparagus and broccoli. To ONLINE finish, a perfect Crème Brûlée.

Oh, and by the way, The Watercourt offers one of the island’s best Sunday Seafood brunch experiences. Something worthy to try…
