THE TASTE OF SUMMER While a long gin and tonic or an icy cold beer might hit the spot as the mercury climbs, why not mix it up a bit with a cocktail or two? Here are some options certain to get you in a holiday mood. Recipes and instructions abound online.

Piña Colada

Nothing says poolside at a holiday resort like this combination of rum, coconut cream and pineapple juice. It’s almost obligatory to add a cocktail umbrella along with the garnish of a pineapple chunk and a maraschino cherry. The generally accepted story of the Piña Colada is that it was invented by the barman at the Caribe Hilton in San Juan in 1954. It is now the official drink of Puerto Rico.

Mai Tai

Although it’s often associated with Hawaii, the Mai Tai was invented in San Francisco by Victor J. Bergeron — better known as Trader Vic. The classic recipe uses aged rum, lime, sugar syrup, orange curaçao and a syrup called orgeat, made from almonds. The signature drink at the Royal Hawaiian Hotel is a sweeter version including orange juice, with a mint and pineapple garnish. It’s sneered at by purists, but why not try both?

Banana Daiquiri

While we have this rum thing going, we need to talk about the Daiquiri. Hailing from Cuba, it adds sugar syrup and/or triple sec and lime juice to the rum, which can be white, aged or gold. For a Frozen Daiquiri, toss all the ingredients into a blender with crushed ice. For a Banana Daiquiri, toss in a banana as well. You’ll either love it or hate it.

Cucumber Margarita

A classic Margarita is pretty much like a Daiquiri, but made with tequila. First you need to prepare your glass, by running a wedge of lime round the rim and dipping it into coarse salt. Mix equal quantities of blanco tequila, triple sec and lime juice, shake with ice, strain into the glass and you’re done. For something different, try a Cucumber Margarita. Add a dash of cucumber juice, blended and strained through a fine-mesh strainer.

White Sangria

Wait. Isn’t Sangria made with red wine? Well usually, yes. But there’s no official recipe for this Spanish wine punch. And maybe a lighter, white version is a nice alternative for summer. Start with a bottle of dry, crisp white wine. It doesn’t have to be Spanish — Sauvignon Blanc works well. Add a sliced lemon, a sliced lime and sugar to taste and muddle it all in a jug. Add a good slosh of brandy, more sliced fruit like apple, peach and strawberries, and ice cubes. Top up glasses with soda water if you want a longer drink.

Bellini

Summer is peach season, which means it’s also Bellini season. Invented at Harry’s Bar in Venice, the classic Bellini is made with peach puree and champagne. Yes, you have to peel, blend and chill the peaches, but it’s worth it. Add about ¼ cup of the puree to each champagne flute. Top up with your favourite sparkling or, for a lighter drink, with Prosecco.

Southside

Gin was the favourite spirit of the British in steamy India during the years of the Raj, so it’s a natural goto drink on hot summer evenings. But look beyond the gin and tonic. The Southside, a favourite of Chicago mobsters during Prohibition, mixes gin, sugar syrup and lime with muddled fresh mint. Or, for a long drink, try one of the oldest cocktails on record. The Gin Fizz, just gin, lemon juice and sugar, topped up with sparkling water, goes back to at least 1887 and was wildly popular in America from the 1900s to the 1940s.

Limoncello Spritz

A spritz is essentially a blend of sparkling wine (usually Prosecco), a bitter liqueur and soda water. It hails from northern Italy, where around 300,000 spritzes are consumed each day in the Veneto region alone. The luridly orange Aperol Spritz is probably the most popular version, but you can make a great spritz with Campari or, for something completely different, with Limoncello. Use the 3-2-1 formula – three parts Prosecco, two parts liqueur and one part soda, plus ice. As they say in Italy, cin cin.

INGREDIENTS (SERVES 6) FOR THE BARBECUE VINAIGRETTE

• ½ cup tomato sauce • 2 tbsp's mayonnaise • 2 tbsp's water • 1 tbsp granulated sugar • 2½ tsp's ground chilli powder • 1½ tsp's ground cumin • ½ tsp Kosher salt • ½ tsp garlic powder • ¼ tsp onion powder • ¼ tsp black pepper • ½ cup canola oil

FOR THE SALAD

• 5 cups shredded Cos lettuce • 2½ cups store-bought shredded cabbage • 3 cups leftover pulled pork • 4 Kosher dill pickles sliced thin • ½ cup French fried onions • 1 cup shredded Monterey Jack cheese (optional)

PICKLED RED ONION (OPTIONAL) • 1 cup red wine vinegar • 1 tbsp + 1 tsp sugar • ½ of a red onion sliced

METHOD STEP 1 For the sauce, in a small mixing bowl, whisk together tomato sauce, mayonnaise, water, sugar, chili powder, cumin, salt, garlic powder, onion powder and black pepper. Slowly, drizzle in the canola oil, while whisking. Refrigerate until ready to use. STEP 2 If you are using pickled red onions, in a small bowl, whisk together the red wine vinegar and sugar.

Add the sliced onions, and refrigerate for at least 2 hours. Alternatively, use plain, thinly sliced red onions. STEP 3 For the salad, combine lettuce and shredded cabbage and toss. Top with pulled pork, pickle slices, French fried onions, onion slices and shredded cheese (if using). Drizzle with desired amount of sauce, serve and enjoy.

ALAMOS MALBEC

CAMPO VIEJO TEMPRANILLO

Alamos Argentina Malbec captures the spirit and terroir of Argentina’s signature variety. Grown at high-level altitudes, our Malbec offers layers of dark cherry and blackberry with a velvety mouthfeel. This complex red wine pairs beautifully with a wide range of cuisine and is recognized for its pronounced fresh style.

Fermentation in stainless steel vats at a controlled temperature of around 25ºC. Maceration with skins for approximately 12 days. The wine spends 4 months in American oak casks before rounding off its ageing in the bottle.

It’s fruit forward and medium bodied with soft tannins and a smooth finish. The wine blends flavours of plum, dark cherry and blackberry with hints of brown spice and vanilla. It is a highly versatile red wine that can be enjoyed with a variety of foods.

Nose is rich in aromas and pronounced in intensity. We are struck by the ripe red fruit, later we get the wood nuances with gently sweet notes of vanilla to finish with other sweet spices. On the palate it is perfumed, soft and fresh with a long finish that leaves memories of red fruit, vanilla and cocoa.

ROBERT OATLEY SIGNATURE SERIES GRENACHE McLaren Vale is Australia’s foremost region for Grenache, where it was historically largely used for fortified wines and as a workhorse blending variety, frequently with Shiraz and Mourvedre/ Mataro. Full-bodied examples rival Australia’s greatest Shiraz wines and this particular style, which highlights the variety’s inherent deep red fruit characters, is fast gaining in popularity. THE COAST WITH THE MOST Surf, sand, sunshine, scenery. Plus, Semillon, Shiraz and Sauvignon Blanc. The south coast of New South Wales has it all, so set aside a day or two of your summer holiday to cruise the Shoalhaven wineries.

HIT THE TRAIL A drive of just over two hours from Sydney or Canberra gets you to the start of the Shoalhaven Coast wine trail. The trail stretches from Kangaroo Valley in the north to Bawley Point in the south. The modern wine industry in the area began in the 1970s, really coming into its own in the 1980s. But you’ll discover historic villages along the way, including the south coast’s very first white settlement, now part of the Coolangatta Estate winery.

THE OTHER COOLANGATTA Although Coolangatta on the Gold Coast is better known it took its name from that settlement founded in 1822 on the Shoalhaven River by one Alexander Berry. Berry owned a schooner named after his property. For years it carried cargo up and down the east coast, finally becoming wrecked on a sandbar off the Queensland coast. The abandoned wreck gave its name to a local creek and later to the nearby town.

WINES TO TRY While Coolangatta Estate is best known for its award-winning Semillons, the area’s signature variety is probably Chambourcin, a French red grape that is resistant to mildew and can handle the area’s unpredictable but sometimes high summer rainfall. It’s a red that’s best enjoyed young for its vibrant colour and fresh plum fruit aroma and flavour You’ll also find celebrated Shiraz blends and Chardonnays, along with ‘newer’ varieties including Arneis, Viognier, Tempranillo, Sangiovese and Tannat.

WINE AND DINE Most of the wineries along the trail can feed you too, either with a gourmet cheese platter or from a full restaurant menu. Some also offer accommodation on site, often in heritage cottages. Or you can explore the many dining options in towns along the trail, sampling the local oysters and fresh seafood.

TRIUMPHING OVER TOUGH TIMES The past year has been challenging for the south coast wineries. The Christmas bushfires resulted in smoke damage, making 80 per cent of some wineries’ harvest unusable. Then, in February, floodwaters brought another round of devastation, uprooting some vines and ‘drowning’ others. Some vintners are relying on stocks of the previous vintages to tide them over as they wait for a better season in 2021. By supporting them, you’ll be helping the area recover from a year that, like many of us, they would rather forget.

We’re all in favour of laws that discourage irresponsible service or consumption of alcohol. But liquor laws vary widely around the world. If you’re caught drunk while propelling a cow in Scotland, watch out. Five-year old drinkers

No voting under the influence

Define vehicle

Yes, the legal drinking age in Britain is five. Which doesn’t mean five-year-olds can front up to the bar. The legal age to buy liquor is 18, but in private homes it’s illegal to let kids under the age of five consume alcohol. In fact, many countries have no minimum age for drinking, as distinct from buying alcohol. Around the world, the legal age to buy liquor varies, mostly between 16 (for example, Germany) and 21 (for example, much of the USA).

In Turkey, the sale of alcohol is banned on election day, possibly to prevent passions between rival parties from running too high. But the Turks aren’t the only ones with such a ban. Certain American states also have statutes on the books making drinking on election day illegal.

You don’t have to be behind the wheel of a car to be charged with driving under the influence. In Germany, cycling with a blood alcohol level of 1.6 or more can result in the confiscation of your bike as well as your driving licence. What’s more, you have to front up for a medical and psychological evaluation. In the US you can be arrested for driving your ride-on lawnmower while drinking. Here in Australia, even a wheelchair can get you into trouble. In 2008, a man found asleep in a motorised wheelchair on a highway exit ramp near Cairns was charged with drunk driving. It turned out he was six times over the legal limit.

A licence to drink Drinking in India is complicated. In four of the 29 states, consumption of alcohol is banned. Others have drinking ages ranging from 18 to 25. But in the state of Maharashtra, which includes Mumbai, you need a licence, obtained from a local Government Civil Hospital. Even then, you need to be 21 to drink beer or 25 to drink spirits. There’s no age restriction on wine. Many Muslimmajority countries restrict drinking to non-Muslims, require a personal liquor licence or ban alcohol altogether.

Married women singled out We don’t know how often it’s enforced, but a law in Le Paz, Bolivia, dictates that bars can only serve married women with one glass of wine per visit. Single women, it seems, are not similarly restricted. Clearly the patriarchal lawmakers did not want their wives distracted from their family responsibilities and household chores. Or their husbands.

Freeze on liquor sales It’s common to restrict the sale of liquor to certain hours. In Alaska, those restrictions are, you might say, token. It’s illegal to sell liquor between 5am and 8am. Individual US states have other unique laws too. In Massachusetts, happy hours and discounted drinks are not allowed. In Idaho, movie theatres can sell alcohol, but not if the film they’re showing has sex scenes.

"In 2015, an Idaho cinema was prosecuted for selling drinks when screening 50 Shades of Grey." Take a seat In Texas, there’s still a law on the books making it illegal to drink standing up. It is apparently permitted to take three sips before you sit down, but that’s it. Researchers, however, have been unable to find any recent cases of non-seated drinkers being prosecuted.

And as for animals… In Scotland, according to the Licensing Act 1872, it is an offence to be drunk in charge of a carriage, horse, cow or steam engine, or whilst in possession of a loaded firearm. In the American state of Colorado, it is illegal to ride a horse while intoxicated.

UK pubs are public places This means, in the UK, it’s illegal to get drunk in a pub. The law states that: “Every person found drunk in any highway or other public place, whether a building or not, or on any licensed premises, shall be liable to a penalty.” If you ever get to travel to Britain again, consider yourself warned.

YOUR SERVE WIMBLEDON’S FAVOURITE DRINK IS A NATURAL CHOICE FOR WATCHING THE AUSTRALIAN OPEN. BUT EVEN IF YOU’RE NOT INTO TENNIS, PIMM’S GOES DOWN A TREAT ON A SUMMER AFTERNOON. Posh and pretty

It’s the taste of an English summer and the fruit-adorned drink of choice at events like Wimbledon, the Chelsea Flower Show, the Henley Royal Regatta and (of course) at the polo. At Wimbledon alone they serve around 320,000 glasses of the stuff over the course of the tournament. But the society credentials of the drink go back much further – it even made an appearance at Queen Victoria’s state luncheons.

Fishy origins

Pimping your Pimm’s Pimm’s is low in alcohol compared to spirits like whisky or gin, and then it’s diluted with quite a lot of soft drink. So some people like to add a slosh of gin for an extra kick. Or you could try a Pimm’s Royale, by topping up the glass with sparkling wine instead of lemonade. Use a bit of both and it’s a Pimm’s Spritz. You can also swap out the lemonade for ginger ale or tonic.

And serve with…

Pimm’s No. 1 Cup was invented by the eponymous James Pimm, most likely in 1840. Pimm owned an oyster bar in London’s financial district and sold his tonic drink as a digestive aid. The blend of gin, herbs and fruity liqueurs became so popular that large-scale production began in 1851. There were other Pimm’s Cups with numbers 2 through 6, with different spirit bases, but most have long been discontinued.

For the full English experience, dainty white-bread cucumber sandwiches are the go. Back in the 1950s, the Pimm’s people recommended Prune Surprises (oven-baked prunes stuffed with cocktail sausages and cheese) and Celery Dreams (chunks of celery filled with mashed tuna and mayonnaise). Very retro. We’d go for smoked salmon or maybe, in a salute to the drink’s inventor, oysters. But then, if you have all that fruit, who needs food?

To make a Wimbledon-style Pimm’s, you mix three parts lemonade to one part of Pimm’s then add sliced oranges, lemons, strawberries and cucumber. Make it up in a jug half-filled with ice. Older recipes were less fruity. Pimm’s advertising from the 1950s recommends just lemon slices and a strip of cucumber peel.

No-one knows quite how it happened, but New Orleans is an unlikely outpost of Pimm’s culture. First served in The Napoleon House bar in the French Quarter in the late 1940s, it’s now so popular in the southern city that many locals think it was invented there. The New Orleans version holds off on the fruit though. It’s served with a squeeze of lime, a couple of cucumber slices and a sprig of mint. It just goes to show that, with Pimm’s, you can do it your way.

The national capital hosts the final match of the One Day International series on December 2, followed by the opening Twenty20 match on December 4. India has yet to win an ODI at Manuka, losing in a high-scoring thriller at their last appearance in 2016.

Rescheduled from May, this annual festival has been re-imagined as a series of smaller, more intimate events in light of COVID times. From the coast to the hinterland, events will showcase the region’s incredible restaurants, chefs, breweries, distilleries, producers, and roasteries.

With Canberra’s EPIC location unavailable, Australia's biggest horsepower party is moving to Sydney. The action includes drag racing monsters, burnout masters and championships, as well as the popular Show ‘n Shine. Summernats Slam will be enforcing strict social distancing guidelines under a COVID safe event plan.

Rugby Championship – Argentina v Australia 5 December Western Sydney Stadium, NSW After the withdrawal of reigning champions the Springboks, the series has become a Tri-Nations competition between Australia, New Zealand and Argentina. See the Wallabies take on the Pumas in the final match of the series.

Camel Racing 26 December Bulli Showgrounds, Bulli, NSW After two postponements owing to COVID, racing at Bulli is planned to go ahead on Boxing Day. There’ll be market stalls, food vendors and plenty of family activities including camel rides, pony rides and amusements.

Sydney's New Year's Test will start slightly later than usual, giving players additional rest days between the second and third matches of the series. The India tour is the first series the Aussies have played at home since March 2020 and India’s first series anywhere since March.

In 2018-19, India created history by becoming the first Asian team to win a test series in Australia. Can they do it again? The four-match test series will conclude at the Gabba, where Australia has enjoyed a 31-match winning streak. Australia has not lost at the ground since 1988.
