A

warm and sunny welcome to Issue 18 of Kitchen. Spring has finally sprung, and with it comes signs of life returning to some sort of normality. One of the knock-on effects from the pandemic is the increase in the cost of living. Fuel, utility bills, even the humble postage stamp have all shot up in price. Rest assured, our purchasing team have been working hard to combat these price rises, whilst our nominated charities for the year are helping those struggling financially and psychologically - more details can be found on page 12.

A new season means new products and we have introduced some fantastic ranges, including the striking and colourful Eleanor Bowmer. Look out too, for the sleek and stylish kitchen appliances by Carrera.

Our celebrity chef for this issue is the lovely Lesley Waters, who has a cookery school based in Shaftesbury, just up the road from us. I’m certainly going to try her delicious marinated spatchcock chicken with mustard sauce which you’ll find on page 16.

If the temperature gets a bit too hot this summer (we can always dream), turn to page 30 and discover our range of fans and air purifiers.

HAPPENING AT HARTS Our latest news and views

A HAND FROM HARTS As an independent, family business we have always looked for opportunities to give back to the local community. Over the years we have donated thousands of draw prizes and supported and sponsored many events and organisations. Our Harts of Stur Charity Account allows us to make substantial contributions annually to numerous worthy causes. For 2022, we have selected the following charities to support: Mind is a national mental health charity that provides advice and support to empower anyone experiencing a mental health problem.

The Vale Pantry is a social supermarket run entirely by volunteers, that helps families or individuals struggling financially and who have had to cut back on food. Based in our hometown of Sturminster Newton, but open to anyone living in North Dorset, the Pantry was set up in 2020 following a need identified through a local GP surgery, The Blackmore Vale Partnership. Unlike a food bank, those who use the Pantry pay a small membership on each visit and then choose the food they would like for the week ahead.

The Rainy Day Trust is the only charity which exists solely to help people and their families in times of need who have worked in the UK’s home improvement and enhancement industry. This includes housewares, DIY, hardware and garden centre sectors.

Whether sudden redundancy or an accident is the issue, the Trust provides help in a number of ways, from financial assistance through to training and support.

A Vintage Year

The 2021 New Year’s Day Vintage and Classic Vehicle Run, which Harts of Stur are proud sponsors of, raised a fantastic total of £1,698 for the Dorset and Somerset Air Ambulance.

More than 120 pre-1991 cars, buses, lorries and tractors took part in the event at the start of the year, with 20-plus pre-1995 motorbikes. The vehicles gathered in Sturminster Newton before embarking on a 39-mile, single-hill run or a 48-mile, 4-hill sweep through the West Dorset countryside.

• Check watering systems - hose pipes, connections, water butts etc - in case of drought later in the summer

• Spring and early summer are good times to plant out new shrubs and perennials so they can establish before winter • Remember to put in place plant supports early on before perennials become too established • At the end of May/start of June, cut back all or part of perennials (such as anthemis, catmint, heleniums, sedums, penstemons) to encourage later flowering and bushier growth

HOMEMADE HEAVEN All the delicious cakes we sell in the Coffee Loft are homemade. This strawberry cake recipe from Ben, our Coffee Loft manager, is perfect to enjoy with an afternoon cup of tea.

SERVES 10 227g caster sugar 7g pack strawberry jelly powder 227g self-raising flour 5g baking powder 4 eggs 227g butter 200g cream cheese 100g icing sugar 5ml vanilla essence 200g strawberries (extra for decorating) 100g strawberry jam

1 Grease 2 x 21cm cake tins with butter and line with baking parchment.

2 Purée 200g of strawberries with the vanilla essence using a blender.

3 In the cake mixing bowl, add the self-raising flour, caster sugar, strawberry jelly powder, softened diced butter, eggs and baking powder.

4 Beat the ingredients until well combined. Be careful not to overbeat, then gradually add the strawberry purée. The mix may split slightly but don’t worry.

5 Make sure all mix is scraped from the sides and evenly mixed, then divide evenly between the lined cake tins.

6 Bake at 180 degrees for 25 mins until a knife comes out clean. Allow to cool on a rack.

7 Whisk together the cream cheese and sifted icing sugar with a dash of vanilla essence.

8 Spread 1 sponge with strawberry jam and sliced

STILL WATERS With a career in TV spanning more than three decades, Lesley Waters’ passion for food remains as strong as ever

H

er Dorset-based cookery school has been established since 2006, but the awardwinning chef fell in love with teaching many years before that.

London-born Lesley launched her food journey by studying French cuisine at Ealing College before joining Prue Leith’s restaurant, rapidly rising through the ranks to become senior chef.

She went on to join Leith’s School of Food and Wine as an instructor. Since then, Lesley has written in excess of 20 books, and been a regular on television shows since the late 80s, including This Morning, Ready Steady Cook and Great Food Live.

The mother-of-2, who refers to her family as “her rock”, places an emphasis on healthy eating and has somehow found the time to qualify as a fitness instructor.

She has regularly represented British food at international cookery exhibitions.

Her heart, however, is firmly in Dorset.

Having fallen in love with the area and its abundance of great local produce, she realised a dream by opening the Lesley Waters Cook School.

Originally in Abbots Hill, it has now moved to the heart of historic Shaftesbury, where Lesley’s favourite Abbey Gardens are also situated.

Her school offers demonstrations and handson classes with a focus on creating easy, modern dishes and a wide range of themed cookery days.

In addition, she is a regular guest chef at White Pepper Chef Academy and Cookery School in Lytchett Matravers, near Poole.

And when asked what advice she would give herself at the age of 18, she says simply: “To go for it, to travel, to be kind and to never stop learning.” Given all she has achieved, it seems she has taken her own advice.

Rich Cheese Soufflés SERVES 6

These double-baked soufflés can be cooked several hours in advance and then re-baked just before serving.

300ml milk 1 slice onion Pinch of nutmeg 1 bay leaf 45g butter 45g plain flour 1 tsp grainy mustard 55g mature cheddar cheese, grated 55g hard goat’s cheese, grated 3 large eggs, separated 200ml double cream Salt and freshly ground black pepper

1 Preheat the oven to 180C/Gas 4.

2 Place the milk, onion, nutmeg and bay leaf in a saucepan and gently heat.

Remove the pan from the heat and set one side to infuse for 30 mins then remove the onion and bay leaf.

3 In a second saucepan, melt the butter.

Stir in the flour and gently cook for 30 secs. Remove the pan from the heat and gradually whisk in the milk until smooth.

Return the pan to the heat and stir until the sauce boils and thickens.

4 Remove the pan from the heat and stir in the grainy mustard, three-quarters of the cheese and the egg yolks. Season well.

5 Generously butter 6 ramekins. In a large bowl, whisk the egg whites until stiff. Carefully fold the whisked whites into the cheese mixture and fill each ramekin until two-thirds full.

6 Place the ramekins in a roasting tin of boiling water and bake in the oven for 15-20 mins, or until the mixture is cooked. Remove the ramekins from the roasting tin and allow to cool.

Marinated Spatchcock Chicken with Mustard Sauce SERVES 4 1.8kg chicken 100ml white wine 3 tbsp olive oil 3 bay leaves Handful of mixed herbs (tarragon, parsley, thyme) FOR THE MUSTARD SAUCE 2 organic egg yolks 1 heaped tbsp grainy mustard 300ml grapeseed oil (or mix of extra virgin olive oil & grapeseed) 1 tbsp tarragon vinegar 2-3 tbsp natural set yoghurt Salt & freshly ground black pepper

1 Using a small sharp knife, release the oyster-shaped pieces alongside the backbone of the chicken. Using a pair of scissors or a pair of poultry shears, cut down either side of the chicken’s backbone. Open out the chicken and flatten on a board by pressing down with the heel of your hand. Gently loosen the skin away from the breast meat and using your hands, push the mixed herbs underneath the skin.

SEIZE THE MOMENT If you’re reading this while asparagus is still in season, make the most of it advises Lesley “I know it’s possible to buy asparagus all year round these days, but it’s not something I choose to do,” explains Lesley.

“I prefer to wait and enjoy the anticipation of my first pile of British asparagus. It is always best to cook as soon as possible as asparagus does not store well. My first dish is generally enjoyed very simply with melted butter, black pepper and a squeeze of lemon juice. Then, with my craving satisfied, I go on to plunge into as many recipes as I can think of before the season ends!

Steaming Asparagus

Pan-Frying Asparagus

Prepare your asparagus as for steaming, then transfer to a bowl and toss with a little virgin olive oil (about 1 tbsp per 450g asparagus). Preheat a heavybased frying or griddle pan until hot and add the oiled asparagus. Cook over a medium-high heat for 2 mins then cover with a lid and cook for a further 4-7 mins until tender. Alternatively, after 2-3 mins you can transfer the pan to a hot oven.

Place 1 medium egg per person in a pan of cold water. Bring to the boil and simmer for 2-3 mins. Remove the eggs, place each in an eggcup and slice the tops open. Season your steamed asparagus with a little melted butter, salt and pepper and serve at once with softboiled eggs, dipping the soft, green tips into the runny yellow yolks.

Pan-fry the asparagus as above, season and transfer to a warmed serving plate.

Add 225g of cherry tomatoes to the hot pan and cook for 1-2 mins until starting to soften. Spoon onto the asparagus and drizzle with a little balsamic vinegar and extra virgin olive oil. Crumble 110g of Woolsery Fiesta goat’s cheese over the top and serve.

Wild Blueberry Butter Pudding SERVES 4-6

1 Heat the oven to 180C/fan oven 160C/Gas 4.

2 Slice the croissant in half horizontally and spread with butter and wild blueberry conserve.

3 Quarter each one and scatter over the base of a buttered oven-proof dish.

4 day-old croissants 50g unsalted butter 100g wild blueberry conserve 4 large eggs 200ml whole milk 50ml cream Finely grated zest of 1 large orange Few drops of vanilla extract 100g mixed fresh raspberries and blueberries

4 Whisk together the eggs, milk, cream, zest and vanilla.

6 Scatter over the fresh fruit and return to the oven for a further 5-10 mins or until the custard is lightly set. Much will depend on the size and depth of your dish, so take the pudding from the oven when the custard is still a little wobbly.

7 Dust lightly with icing sugar before serving with chilled single cream or ice cream.

5 Pour about half the mixture over the croissant and leave to soak for 2-3 mins.

Add the remaining mixture and bake for 30 mins.

Wild Strawberry Profiteroles This recipe is vegetarian, and perfect for spring and summer.

MAKES 12 250g tub mascarpone cheese 175ml ready-made chilled crème anglaise or vanilla custard 4 generous tbsp strawberry conserve 200g mixed fresh summer fruits Icing sugar, to dust FOR THE CHOUX PASTRY 60g strong plain flour 50g unsalted butter, diced 2 large eggs

1 Heat the oven to 200C/fan oven 180C/Gas 6.

2 Line 1 or 2 baking sheets with baking parchment.

3 To make the pastry, sift the flour onto another sheet of parchment. Put the butter in a small saucepan with 150ml cold

water. Heat gently until the butter has melted, then bring to the boil. When the liquid is bubbling furiously remove the pan from the heat and pour in all the flour off the paper. Beat with a wooden spoon until the flour has been blended into the liquid.

4 Gradually beat in the eggs until the mixture is a thick, smooth and glossy paste.

5 Drop tbsps of the choux paste onto the baking sheets, leaving about 2.5cm between them.

Strawberry Ripple Ice Cream One of the simplest homemade ice cream recipes ever.

SERVES 4-6 300ml double cream 300ml full-fat Greek yoghurt 275g strawberry conserve 2 tbsp liqueur, such as crème de cassis 3-4 sugared rose petals 4-6 crushed waffle cones, to finish

1 Whip the cream in a large bowl until it just begins to hold its shape.

Fold in the yoghurt and 200g of the conserve.

2 Spoon half the mixture into a freezer-proof container that is about 5cm deep.

3 Stir the liqueur into the remaining conserve in a separate bowl and drizzle over the top of the cream mixture in the container.

4 Spoon over the remaining cream mixture and freeze for at least 3 hrs (depending on depth of container). Serve in cones or scoops with crushed, sugared rose petals sprinkled on top.

When Hannah Dale first started sketching animals, she had no idea that a decade later her company, Wrendale Designs, would be a multi-awardwinning, international success.

In 2012, having given up a job in London to move to Lincolnshire, Hannah began drawing and painting at her kitchen table in Melton Ross.

The former stockbroker, who has a degree in zoology from the University of Cambridge, took inspiration from local wildlife to create exquisite images of hares, full of character and mischief.

AN INSTANT HIT

Having transferred her watercolours on to cards, Hannah began providing these to local gift shops.

They were an instant hit. As demand grew, she expanded her repertoire to paint, amongst other creatures, badgers, owls, ducks, cows, foxes and pheasants.

“One of the reasons I started Wrendale was because I had struggled to find work that would fit around the demands of a young family - I didn’t quite realise at the time it would end up becoming such a full-time job!” says Hannah, now a mother of 3.

“I often end up painting early in the mornings before the children wake up and at weekends too, and I have definitely struggled over the years to get the balance right. I don’t think it would be possible without having Jack in the business – we make a really great team with his strengths complementing my weaknesses and vice versa. We share the load with childcare too.”

A FAMILY BUSINESS

Hannah’s husband Jack gave up his job as a farmer towards the end of 2012 to manage the business full time, ensuring Wrendale remains a 34

family-run enterprise which now employs more than 70 people.

“I feel really lucky to make a living from doing something that I love. It can definitely be stressful at times and the last 2 years have been challenging, but having a family business feels such a privilege and I wouldn’t want to do anything else.”

Today, inspired by her zoology degree, Hannah’s illustrations include elephants, giraffes, llamas and more, while in 2020, her watercolour of koalas raised £17,000 for the WWF Australia Appeal, providing emergency care for wildlife injured in the bushfires.

Maintaining consistently high standards, the business has established a firm reputation for quality. All the greeting cards are printed on sustainably-sourced board produced in the Lake District. These also have a tactile quality, reminiscent of the watercolour board the designs are first painted on. It’s this same thought that goes into every product.

Pairing with famous pottery maker Portmeirion in 2013 has resulted in cushions, fabrics, mugs, ceramics, tinware and kitchenware items. Another successful collaboration has been with UK-based candle and home fragrance company Wax Lyrical.

In recent years, many of her friendly characters have been turned into cuddly 3D creations as part of a new plush range. The latest launch was a collection of puzzles which hit the shelves just last summer.

Having scooped several Henries awards (the greeting card industry’s equivalent of the Oscars), Hannah and her team gained a Queen’s Award for Enterprise in 2019, and last year she won an Athena award at the NatWest Everywoman Awards which celebrate inspirational businesswomen.

Although Hannah says her aim from the very beginning was to create a household name, she admits she never anticipated where the company is today.

“My vision for Wrendale was to have a stockist in every town in the UK. I still have to pinch myself when I think how far we have come in the past decade.”

AN INTERNATIONAL SUCCESS Wrendale Designs are also a big hit internationally with the company currently distributing to a total of 47 countries and plans for further expansion.

Chipotle and Cheddar Cornbread This has smoky spice from the chipotle paste, tangy bite from mature cheddar cheese and a pop of sweetness from sweetcorn. It’s a meal in itself, although would be great served with tomato soup or a chilli.

SERVES 6–8 200g polenta (cornmeal) 150g (chickpea) flour 2 tbsp soft light brown sugar 1 tsp baking powder (gluten-free) 1 tsp flaked sea salt Half tsp bicarbonate of (baking) soda 175g mature cheddar cheese, grated 285g sweetcorn, drained if tinned 4 spring onions (scallions), finely sliced 300ml soured cream 2 eggs, beaten 125ml olive oil, plus extra for drizzling 1.5 tbsp chipotle paste

4 In a separate bowl, mix the sweetcorn, spring onions, soured cream, eggs, olive oil and chipotle paste until combined.

Pour this into the cheese mix and stir until everything is just mixed.

5 Spoon into the prepared tin, level the surface with the back of the spoon, and scatter over the remaining cheese.

6 Drizzle over a little oil and bake in the oven for 30–35 mins, until the top is golden, the centre firm and springy to touch and if a skewer is inserted in the middle, it comes out clean.

7 Once cooked, cool in the tin for about 20 mins before removing and serving warm or cold.

MAKE IT VEGAN

It is simple to make this into a vegan cornbread. Swap the cheese for a plant-based alternative and substitute plant-based natural yoghurt for soured cream.

Finally, as an alternative to the eggs, mix 2 tbsp ground flaxseed with 6 tbsp cold water.

Sit for 2 mins and add to the mixture as above.

Parmesan Grissini These are gluten free, easy to make and last for days.

MAKES 20 200g rice flour 100g ground almonds 10g cornflour (cornstarch) 7g fast-action dried yeast 1 tsp flaked sea salt 1 tsp xanthan gum 25g finely grated parmesan cheese 150ml milk 100g butter, softened 1-2 tbsp flavourings such as poppy seeds, sesame seeds, nigella (black onion) seeds, finely chopped rosemary or thyme (optional)

1 Heat the oven to 200C/ Gas 6.

2 Line a couple of baking trays with baking parchment.

3 Put all the ingredients, apart from the optional flavourings, into an electric mixer with a dough hook. Alternatively, if you don’t have a mixer, place in a bowl, and use your hands to form a ball of dough.

4 Knead the dough in the mixer, or by hand on the worktop for a few minutes until you have a smooth dough.

5 Take pieces of dough, the size of a walnut, and roll into lengths around 1cm thick and 20-25cm long.

6 Now you can add any of the flavourings, if you are using them, by scattering seeds or herbs over the work surface and rolling the grissini on top so they stick.

7 Lay the grissini on the prepared baking trays, leaving a small gap between each one, and bake for 12-15 mins or until golden brown.

8 Leave to cool for a few minutes before enjoying warm or eat over the next few days when they will be firmer and crunchier.

Walnut and Raisin Bread This rustic loaf is brimming with flavour from the rye flour, sweet raisins, treacle and plenty of walnuts. It’s particularly good served with strong cheeses, or even toasted for breakfast, topped with ricotta and fresh figs and drizzled with honey.

MAKES 1 LARGE LOAF 200g strong white bread flour, plus extra for dusting 200g strong wholemeal (wholewheat) bread flour 100g rye flour 2 tsp flaked sea salt 10g fast-action dried yeast 2 tbsp olive oil or walnut oil, plus extra for greasing 1 tbsp black treacle (molasses) 200g walnut pieces, roughly chopped 150g cup raisins

1 Mix the flours to combine. Put the salt in the bottom of the bowl of an electric mixer fitted with a dough hook. Tip the flours on top of the salt, then add the yeast, oil and treacle. Turn the mixer on to a slow speed and slowly add 325ml lukewarm water. Increase the speed to medium to knead the dough for 5 mins.

If doing this by hand, knead on a lightly floured worktop for 8-10 mins. If you feel the dough is too dry, add a little more water. You are after a soft texture but not too sticky.

2 Add the walnuts and raisins to the dough and mix in. Cover the bowl with a piece of lightly oiled cling film and leave to rise in a warm place for around 1 hour, or until it has at least doubled in size.

3 Line a baking tray with baking parchment. Transfer the risen dough onto a lightly floured surface and fold inwards on itself to knock out the air and make sure the dough is smooth. Shape into a loaf shape – round or oval, it’s up to you. Sit it on the baking tray. If you’ve a large clean plastic bag big enough, slide the tray inside, alternatively, use a large piece of oiled cling film to loosely cover the tray. Leave to rise for another hour or so until doubled in size.

4 Heat the oven to 200C/Gas 6.

5 When the dough has risen, use a sharp knife to slash a pattern on the top and dust lightly with flour. Bake for

35-40 mins until deep golden and sounds hollow when the base is tapped. Cool on a wire rack before slicing.

NUT-FREE VERSION

To make this into a nut-free fruit bread, omit the walnuts and use a 250g combination of mixed dried fruits, such as raisins, sultanas (golden raisins), cherries, cranberries, chopped apricots or chopped dates.

Double Chocolate Beetroot Cake The ingredients in this recipe work beautifully together to create a rich and indulgent sponge, with a luxurious butter and cream cheese filling.

2 tsp vanilla extract

FOR THE FROSTING

60ml olive oil

226g unsalted butter, room temperature

600g golden caster sugar

452g cream cheese, room temperature

408g plain flour

2 tsp vanilla extract

2 tsp baking soda

Half tsp salt

1 tsp salt

1-2 tsp beetroot powder (the more added, the pinker the frosting)

113g dark chocolate (at least 70% cocoa solids)

875g icing sugar

FOR DECORATION Fresh cherries (as many, or as few, as you wish)

SERVES 10-12 (or a hungry 6!)

FOR THE CAKE 288g beetroots, peeled, cubed 4g instant espresso coffee 18g beetroot powder 21g cocoa powder

1 Make the beet purée. Place prepared beets in a pan, adding enough water to cover them by 2.5cm. Bring to the boil then reduce to medium high heat and cook for 20 mins.

2 Use a slotted spoon to remove the cooked beets from the water and place into the jar of the Artisan K400 Blender. Add 60ml of the beet liquid from the pot into the blender jar (reserving the remaining liquid in the pot). Blend on Speed 2 until beets are a smooth purée. Remove purée from the blender and set aside.

3 Preheat the oven to 176C/Gas 4. Lightly grease 3 cake tins and dust with cocoa powder.

4 Bring the water and 250ml of the beet liquid to a boil. (Discard the remaining liquid.) Remove from heat. In a separate bowl whisk together the cocoa, espresso, and beet powders then pour on the boiling water, whisking to fully dissolve.

Then, add 250ml of the beet purée and the sour cream/yoghurt and whisk again until combined.

Set aside.

5 Put the eggs, vanilla extract and olive oil into the measuring jug. Do not mix. Set aside.

6 Attach the flex edge paddle attachment to the KitchenAid Stand Mixer and add the sugar, flour, baking soda, and salt to the mixing bowl.

Turn to Speed 2 and allow it to mix for 30 secs.

7 Use the Stir setting to reduce speed and slowly pour the wet beet mixture into the dry mixture.

Slowly add the egg/olive oil mixture, one egg at a time. Once all wet ingredients are added, increase to Speed 2 for 10 secs. Remove bowl from the mixer and set aside.

8 Melt the chocolate using a double-boiler method or microwave in 10-sec intervals. Hand whisk the melted chocolate into the batter.

9 Pour a third of the batter into each of the prepared cake pans and bake in the preheated oven for 30 mins or until a toothpick comes out clean. Remove cakes from the oven and allow to sit on a cooling rack for 10 mins before removing to completely cool.

10 To make the frosting, fit the flex-edge beater back onto the Stand Mixer and add butter, cream cheese, vanilla extract and salt to the mixing bowl. Cream the ingredients together on Speed 6 until completely combined and nicely whipped, about 3-4 mins. Reduce to Stir setting, add in the beet powder and a third of the powdered sugar then increase to Speed 4 to incorporate; repeat again to mix in all the powdered sugar, then allow to whip on Speed 4 for 60 secs.

11 When the cakes have completely cooled, place a layer of cake on a plate or cake stand and use the spatula to gently spread an even layer of frosting over the top, then another cake, frosting, and last layer of cake. Top the cake with a final layer of frosting, a light dusting of beet powder and cherries. Chill to set the frosting before serving.
