Honey Bee Friendly

A honey bee about the size of a pinky fingernail—the Apis melliflera—lands on a camp chair and shows off its assets. The bug eyes. The fuzzy thorax. Truthfully, it’s kind of cute.

“They’re pretty adorable, right?” agrees Greg Hildebrand.

He should know. A passion for bees diverted his career from music to first-generation beekeeper. He wasn’t born into farming, but six bucolic acres of family land in northern York County now serve as home base for Honey Bee Friendly. It’s a business where the byproducts of naturally fed, migratory hives go straight into pure honey and soothing salves and balms.

Here’s how it works. In the bee industry, you can raise bees to serve the insatiable need of farms for pollination. Or, you can skip the beekeeping and simply acquire the beeswax, honey, and pollen needed to create and market honey jars, candles, salves, and balms.

Or you can do both, creating trusted products from the harvest of your own hives.

“Tara and I chose to do both, and we are actively committed to both,” says Greg. “I manage my bees and produce products of the hive, and I do it in a way that is friendly to the bees and helps them thrive.”

Bees flourish where peak blossoms offer abundant pollination. As seasons evolve, Greg trailers bee colonies to conservation lands in South Carolina, fruit farms and cider works in Pennsylvania, and the mountains of Virginia where native sourwood trees flavor a particularly prized honey.

Greg and Tara were friends before they started dating. They married in 2018, just after their first son, Gideon, was born. This fall, their second son is on the way.

“It’s pretty exciting,” Greg says. “It’s such a positive change.”

Tara is a talented cook whose keen palate drives the product side of the business.

The journey begins in Dillsburg, where Greg grew up in a family of educators.

“Maybe I was encouraged to be curious and encouraged to follow my passions,” he says. Initially, those passions led him to playing guitar with touring rock bands. Then a devastating car crash put life in a different perspective.

“It made me happy to be doing something I had control over,” he says now. “It was more for the enjoyment of life than about not being happy and slaving away.”

He was still performing when he started reading about bees. One book led to another. Two years later, spring was approaching, and it was time for Greg to put his hands-on proclivities to work.

“I’d been interested enough,” he says. “I’d read enough. I had a basic understanding.”

He bought two bee colonies. He joined bee clubs, learning where to catch swarms that were— understandably—unwelcome by their owners. By year’s end, he had nine colonies, on the way to today’s 250.

In two more years, he was hooked. Honey Bee Friendly took flight in 2014.

“Honey bees are the embodiment of altruism,” Greg says. “I look at a colony as the animal, not the bee. The bees themselves are just pieces of the organism. The colony of bees is the living being.”

He taught himself how to start a business. He explored the various pathways toward a viable enterprise, because bee management “can look a lot of different ways.”

MAKERS “Tara has this touch that gives her the ability to create things that I never would,” Greg says. “Things I’m curious about and wanted to create or maybe dabbled with, she took to a whole other level.”

The fruits of those creative endeavors begin, of course, with raw honey, not heat-processed like the grocery brands that pasteurize out the honey’s beneficial enzymes. And because honey easily absorbs oils, there is raw honey flavored with orange ginger, chamomile calendula, or chili peppers. There is sweet orange lip balm and lemongrass herbal salve. There is bee pollen, honeycomb, and tattoo treatment blended with CBD. Greg says that beekeeping agrees with him.

“This is my freedom,” he says. “It is an independence. I’m proud of what we’ve been able to build. My goals and ambitions have me going much farther, but when I look back on where I came from, I’ve come a very long way.”

An Apple A Day Keeps More Than The Doctor Away

Apples have health benefits that go beyond first bite. As apple picking season makes way in the Susquehanna Valley, you'll want to know these nutritional perks.

1. WEIGHT MANAGEMENT— FOR YOUR NATURAL WEIGHT

Deborah Kauffmann, RD, LDN is a registered dietitian, nutritionist, and owner of Nutrition Counseling for Intuitive Eating in Glen Rock.

She emphasizes the importance of aiming for your natural weight, which may not necessarily equate to weight loss. "Just like all foods, apples don't have any magical properties in terms of weight loss," Kauffmann says, "but they do have fiber to help people stay fuller for a very short period of time." Soluble fiber can help promote hungerbased eating, which Kauffmann says is key to maintaining your natural weight—not dieting.

According to Kauffmann, there is a growing body of research relating apple juice to Alzheimer's. Studies show that consuming apple juice can help lower the production of plaque in the brain responsible for Alzheimer's. Drinking eight ounces of juice just three times a week can reduce risks associated with the disease by as much as 75%.

2. ANTIOXIDANTS TO FIGHT CELL DAMAGE

Every year, the Environmental Working Group produces a Dirty Dozen report that shows the 12 most likely types of produce to have pesticides. This year, apples are on the list. Both Jarrett and Kauffmann tout the necessity of washing your apples before eating them.

It's weird to think about free radicals roaming your body, damaging your cells at any given moment. Free radicals come from internal sources like mitochondria, but also from external factors like cigarette smoke, pollution and pesticides. Fortunately, apples are rich in vitamin C as well as polyphenols, plant compounds with high antioxidant properties that actively combat free radicals. Kauffmann adds that apple skin has more polyphenols than the flesh, so it's important to eat both.

DON’T FORGET TO WASH YOUR APPLES!

Using baking soda and water, vinegar and water or a store-bought vegetable wash can remove unsavory pesticides from the skin.

Buying local, organic apples is even better!

3. DECREASED RISK OF TYPE 2 DIABETES The polyphenols and soluble fiber in apples help to decrease the rate of sugar absorption. This helps decrease the risk of type 2 diabetes which accounts for upwards of 95% of all diabetes cases in the US.

4. FLOURISHING GUT BACTERIA FOR PHYSICAL AND MENTAL HEALTH Apples contain pectin, a soluble fiber and prebiotic (you may know about pectin if you've ever made homemade jam or jelly). Prebiotics are important because they feed the good bacteria in your gut, otherwise known as probiotics.

Kauffmann notes that healthy gut bacteria is increasingly being linked to a variety of health benefits, like enhanced gastrointestinal health and calcium absorption. Prebiotics are also good for mental health. According to Tanya Jarrett, MPH, a nutritional therapist at Live Fresh in York, "85-90% of your serotonin is manufactured in your gut." That means eating prebiotic-rich foods like apples can make you happier, not just healthier.

Caribbean Wave: A Five Star Vacation for the Taste Buds

Fresh Coconuts crack open and upbeat Reggae plays in the background as the strong but subtle scent of spices wafts through the air on the corner of Chestnut and North Franklin in Lancaster City.

Tasteful ocean blue walls and Caribbean inspired art enhance the good vibes, sending visitors on a mini-vacation away from Central Pennsylvania and transporting them to the island Nation of Jamaica. This experience is exactly what Damian Cavalo, owner of Caribbean Wave, was going for when he opened his Jamaican Jerk restaurant's doors three years ago.

Cavalo was born in Negril, Jamaica and found his way to Atlanta, Georgia on a work visa. Through the encouragement of family friends, he came to visit Lancaster and fell in love with the city, its people, and its potential for growth. Eventually, when he relocated to Central Pennsylvania, he would drive past the restaurant's current location while declaring he would someday own it.

This became a reality in 2017, and Caribbean Wave has been selling authentic, healthy Jamaican food ever since.

Learning to cook Jamaican food from a young age, Cavalo pulls inspiration for his recipes from his grandmother. “The type of cooking I learned from her was very traditional”, he says. “It was all done over a woodfire. I would go out to the bushes and collect the wood and watch her prepare our meals from scratch.” Channeling this deep connection to food while running a popular restaurant in the United States has remained an important part of the process to Cavalo. He goes on to describe the connection of Jamaican food to sea and land, from being a very seafood heavy cuisine to blending earthy spices such as turmeric, thyme, and ginger to create the right chemistry of flavors.

Oxtail, Jerk Shrimp, and Jerk Chicken have been the consistent crowd favorite menu items. “Jerking” refers to the process of coating seafood or meat in spices and slowcooking it over a fire or grill, allowing the spices to really immerse themselves into the food. Cavalo recommends ordering the Oxtail for any first time visitors, claiming “It’s a simple dish, but one that is hard to get just right.” Visit often enough though, and the palate expanding options are plentiful.

Caribbean Wave’s social media manager, Jade Grove, personally loves the Curry Shrimp over coconut milk rice with a side of greens while Cavalo’s favorite flavor profile is simmered into the Honey Brown Stew Fish.

The sides dishes are just as tantalizing as the rest of the menu, with peppered cabbage cooked in coconut oil, plantains, honey yams, and okra to name a few.

It is common to see roadside stalls in Jamaica selling fresh coconut and fruits while driving across the country. Cavalo wanted to bring this same concept to the restaurant by hosting events focused on similar healthy treats such as coconut water straight out of the coconut, smoothie filled pineapples, and one of their newest menu items, the Green Lifestyle Immune Booster. Blending kale, aloe, cucumber, ginger, fresh orange, and more, it’s sure to have you feeling healthier by the last sip.

The food is undeniably delicious and authentic, but the island aesthetic of the restaurant and Cavalo’s dedication to sharing more than just Jamaican cuisine is what makes Caribbean Wave a foodie paradise. S'mores are a family favorite, and for a good reason—they're delicious and easy to make. Switch up your s'mores game with some semi-homemade twists on this campfire classic.

DISH IT UP

Gimme Gimme S'more

S’mores Ice Cream Sandwiches 8 graham crackers, broken in half into squares 2 cups vanilla ice cream 18 regular-sized marshmallows 1/2 cup mini chocolate chips To Make Ice Cream: 1. Turn oven on to Broil.

2. Line a baking sheet with parchment paper.

3. P lace marshmallows on prepared baking sheet and broil for approximately 4 minutes until marshmallows are golden brown and toasted.

4. U se tongs to flip the marshmallows and broil for approximately 2 minutes more so that both sides are golden brown (I like to let mine get just the tiniest bit burnt to get a nice smokey flavor).

5. Add toasted marshmallows and ice cream into a high speed blender and blend until well combined.

6. Freeze overnight.

To Assemble Ice Cream Sandwiches: 1. Break graham crackers into half.

2. Pour mini chocolate chips into a shallow bowl.

3. P lace 1 scoop of marshmallow ice cream on each graham cracker half.

4. T op with remaining half of graham cracker and gently press down.

5. Roll the exposed ice cream into the bowl of chocolate chips or carefully press chocolate chips into exposed ice cream side.

6. Enjoy immediately or freeze.

Smore’s Dip Butter or ghee Chocolate chips Marshmallows Graham crackers for dipping 1. A dd butter or ghee to a cast iron pan on a hot grill, and swirl to completely coat the bottom of the pan. You'll want to create a nice coating on the pan. Start with 1-2 tablespoons depending on the size of your pan.

2. Add a layer of chocolate chips to your pan.

3. Top with a layer of marshmallows.

4. Cook covered on your grill over medium heat for approximately 15 minutes, until marshmallows are toasted and golden brown.

5. L et cool for about 10 minutes, being careful as the pan and dip will be very hot. (My 6-yearold assures you it is “definitely worth the wait.”)

6. Serve with graham crackers to dip.

HIKING Hiking is one thing that still feels “normal” these days. Trail usage across the US has increased 200 percent as people continue to seek respite in nature, according to the American Hiking Society.

Even if you’re new to hiking, you don’t have to be an expert to traverse the trails.

Boiling Springs, PA is situated right at the halfway point on the famous Appalachian Trail which spans 2,193 miles up and down the East Coast of the US from Georgia to Maine. The trail was created in 1937 and has approximately 242,000 volunteers that maintain it to this day. AT Hikers reach the iconic halfway point destination at Pine Grove Furnace State Park where the Appalachian Trail Museum is located. It’s also home to the “half gallon challenge” where many thru-hikers try to eat that amount of ice cream from the camp store across the street.

The AT is the longest hiking-only footpath in the world! New to hiking? Not to worry. Some of the smoothest terrain on the entire Appalachian Trail is found in the Cumberland Valley section of the trail, despite Pennsylvania’s nickname, “Rocksylvania,” for its rocky ridges north of the Susquehanna River.

Keep in mind parts of the AT pass through game lands managed for hunting, so avoid those areas during fall. And it’s always a safe bet to wear a fluorescent orange hat or material on chest and back. Tight socks that go up past your ankles as well as a head check after each hike are a good idea to protect against ticks that carry Lyme Disease.

FALL ADVENTURES AT ALLENBERRY RESORT

Hike the famous Appalachian Trail. While on the road, you can visit the Appalachian Trail Museum at Pine Grove Furnace State Park which also offers various trails along creeks, lakes, and biking paths. King’s Gap Environmental Education Center is a short drive away and offers a hike with amazing vista views, especially in autumn at peak foliage.

One of the most notable outdoor activities at Allenberry Resort is the unique opportunity to go fly-fishing in the Yellow Breeches Creek. Experienced anglers travel near and far to cast a line here. The main lodge offers a fly making station and expert advice as well as guided trips.

Bike through Boiling Springs, or take a short stroll around the scenic Children’s Lake. This historic tiny town founded in 1845 is full of charm.

Boiling Springs was also an Underground Railroad site before the Civil War. Today, small shops, art galleries, cafes, and restaurants create a small town feel offering something extra to do in the area.

Go sport shooting. The Orvis Hill Country Shooting Grounds, recently opened in 2019, provides guests with a comprehensive sport-shooting trip. The 500-acre property offers a range of premier sporting clays courses, upland hunting opportunities, and shooting instructions. Located a short shuttle ride away in Blue Ridge Summit, the historic property also houses an Orvis Pro Shop.

Theater buffs, add this one to the bucket list. The Playhouse at Allenberry has been a local hidden gem for more than 70 years. In fact, almost 50 years ago, John Travolta did a summer program there. Today, the theater operates in partnership with Keystone Theatrics, providing a wide range of shows for audiences of all ages from children’s musicals to classic plays. The current 2020 season is on pause due to current safety issues, but small outdoor cabarets may be an option to watch for. The Family Series productions of “The Rainbow Fish” and others will be rescheduled for spring 2021 or later. Other shows to watch for in 2021 include “Frost Nixon,” “The Producers,” “Joseph and the Amazing Technicolor Dreamcoat,” and “Pippin.”

The Barn’s fall menu features all the flavors of the season, including wild foraged foods. Regulars will be happy to know the fried Brussels sprouts are returning to the appetizer menu as well as the crab cake making a gluten-free debut, and the chef’s daily changing seafood special will return, according to what local fishmongers have available.

Built in the early 1800s, the signature colonial mansion on the property serves as a backdrop and lodging for wedding parties, family vacations, and corporate retreats. BREAST RECONSTRUCTION WHAT ARE MY OPTIONS?

After a mastectomy, women have a variety of surgical and nonsurgical options available to restore their breasts. These options include prosthesis, autologous reconstruction (using a patient's own tissues) and implant. In addition, women who have already undergone a reconstruction and are dissatisfied or uncomfortable also have the option to convert into a different type and improve their outcomes.

Autologous breast reconstruction recreates a natural-looking and natural-feeling breast using your own body's tissues. This type of surgery involves transferring or "auto-transplanting" tissue (skin and fat) - usually from the lower abdomen - to the breast, while keeping the tissue alive by using microsurgery to connect it to blood vessels in the chest. Alternative donor sites for autologous reconstruction include the inner thigh, flanks, and even buttocks. Although it began in the 1980s, microsurgical breast reconstruction continues to improve and evolve and remains at the cutting edge of reconstructive techniques.

Patients should discuss all options, goals, and potential complications with their plastic surgeon to determine which method is the safest and delivers the best outcome based on their body type and their medical history. Any patient interested in breast reconstruction

should consider both autologous and implant-based techniques. Most women are excellent candidates, and no one should rule themselves out before having a consultation with a specialist.

CONGRATULATIONS! Dr. Steven Falowski MD has been newly elected to the board of directors of the International Neuromodulation Society (INS).

Dr. Steven Falowski MD has been newly elected to the board of directors of the International Neuromodulation Society (INS). This is the largest society in the world for neuromodulation which includes spinal cord stimulation and deep brain stimulation.

Dr. Falowski has worked in creating education platforms through these societies for physicians for the proper implantation of these devices and care of patients.

He implemented and directed the largest courses in the world for these therapies, as well as contributed yearly to the guidelines that govern its practices by physicians across the globe. A board of director position only opens up once every three years on the INS, and is largely reserved for those outside the US. It is a great honor to be awarded this by his international peers. He will work in the capacity of continuing education for physicians, writing guidelines for proper implementation, and standing as a liaison between the United States Physicians of NANS and the international society.
