Fur the love of pets Looking back one year ago, I would have been fighting to keep two nosey cats off of my keyboard and out of my Zoom calls on a daily basis. Now that we’re back in the office, I tend to miss those pen-stealing, keyboard napping guys. One of the hardest parts of coming back to the office for our entire team was leaving our fur babies at home, so when it came time for our annual Cutest Pet Contest, our team was ready to gush over the cuteness. While we aren’t allowed to vote in the contest as staffers, we certainly have had our internal (somewhat loud) conversations about who we each think is the cutest. Though we keep our staff favorites secret, you can check out who the readers voted the cutest on page 27.

No-scream ice cream:

Harrisburg entrepreneur’s Honey Bear Ice Cream goes vegan

Natalie Wallace felt “imprisoned” in an old notion. She had studied filmmaking, so that was her forever calling. Then a friend said something life-changing.

“You’ve done this for 10 to 15 years already, but you have so much more of your life left,” he said. “What if this next thing you want to do is the thing you were supposed to do and the thing that you’re best at? You have so much more time to be great at something else.”

Today, that “next thing” is Honey Bear Ice Cream, the vegan, dairy- and gluten-free ice cream that democratizes dessert and honors a sweet rescue dog named Mabel.

“I feel very inspired by this concept that human beings don’t need to live along a straight line,” says Natalie. “People don’t give themselves the freedom to change over time. We should have the freedom to be in charge of our life and transform it into whatever we feel fits for us.”

The Lebanon, PA, native graduated in 2009 from Elon University in North Carolina. The era’s lurching economy inspired her to start two businesses that she still owns under the Wonderhouse Studios parent company— Birdhouse Wedding Films, and documentary studio Wonderscope Cinema.

“We like to say we’re focused on human stories, so we’re interested in capturing real people,” says Natalie. “We love showing the brighter sides of the human spirit.”

She does it all from a studio overlooking the Susquehanna River in Harrisburg, a town bursting with “a really interesting creative energy. I wanted to be part of a place that’s kind of being built up again. And of course, the river is beautiful, too.”

Now, for the ice cream. Natalie and her twin brother, Wonderhouse filmmaker George Fava, grew up in an Italian-Polish family, “always very into food, very into dessert, talking about your next meal while you’re eating a meal.”

Even when a rebellious gut forced her to give up gluten and dairy, ice cream remained her great love, so ingrained in her life that her husband, Mark Wallace, proposed with a ring concealed in an ice cream cone.

Amid the COVID-19 lockdown, her aunt gave her “the best gift ever”—an ice cream maker.

Natalie made ice cream for friends, joking that it would become a business.

Then the jokes turned serious. Unlike the video businesses, ice cream felt like a universal proposition, spreading joy to the world. Natalie’s thought process: “I have the energy. Let’s give it a go, and if it doesn’t work out, that’s okay. At least we tried.”

As she perfected ice cream made with coconut milk in a coconut cream base, Natalie conjured up the tastes of childhood. The ultra-chocolate Black Star is a fan favorite.

So is Pink Moon, the sole non-vegan entry, a concoction of strawberry-lemon puree and strawberry cake that channels her mom’s beloved Jell-o cake. Everyone says it reminds them of strawberry shortcake ice cream bars.

Natalie’s business experience didn’t prepare her for the rocky bureaucracy of food production. Roadblocks included outright skepticism from regulators who couldn’t comprehend ice cream in non-dairy form. Fortunately, she is free to dream up ice cream flavors while her husband’s best friend and Honey Bear’s COO, Scott Cooper, manages such duties as acquiring frozen dessert licenses and overseeing agriculture inspections.

Whenever the team thought their venture was doomed, Natalie remembered a lesson learned over the years. “If you have a bit of friction, that means you’re on to something,” she says. “That can be fuel to the fire.”

You’ll find Honey Bear Ice Cream at pop-up markets around central Pennsylvania and the Philly suburbs. It’s also available for pickup at designated sites and times. Instagram followers find the appearances and make the treks (@eathoneybear).

Then there’s the Honey Bear name. In 2010, Natalie and Mark rescued a sort of golden retrieverGerman Shepherd puppy from a Tennessee kill shelter. Natalie’s husband named her Mabel.

Natalie nicknamed her Honey Bear.

“She’s super loveable, loves people, and also has a sweet tooth,” Natalie says. “She gives this form of unconditional love. I could be the worst person in the world, and she loves me back.”

This reflects Honey Bear Ice Cream’s motto of “Ice cream that loves you back.”

“Creating something you can eat freely and not get sick from and enjoy and feel so blissful in the moment, that’s how I feel with Mabel,” says Natalie.

“I wanted to name my ice cream after my dog and give it this cute, sweet, loving persona.”

Currently, Honey Bear Ice Cream is produced in a Harrisburg-area church’s commercial kitchen, where usage fees support a nearby community garden. As things go well, Natalie dreams of expanding.

“Every time I’m at the kitchen and bouncing back to the office, I feel very fulfilled and very happy and very at peace,” she says.“I’m a big believer in envisioning your future and imagining possibilities for yourself and figuring out how to get there. It’s exciting to tackle these challenges and say, ‘I’m one step closer to this thing that I really know we can do.’”

RAISING THE BARRE Barre (pronounced “bar”) classes provide a low-impact, musically-driven, danceinspired workout incorporating elements of ballet, yoga, and Pilates.

“Building strength is at the top of the list” of barre benefits, according to Laura Deitch, owner of Pure Barre Mechanicsburg and Pure Barre Lancaster. “Much of that strength building focuses on the core, strengthening the abdominal muscles.”

Increased flexibility and muscle toning are additional barre benefits.

“Many people dismiss barre as being a dance class or a workout exclusive for dancers.

“The positive psychological benefits have been just as important to me,” says Tolosa, who began CrossFit at 38, without previous athletic experience. “I've never felt more empowered or confident in my life.”

HIIT IT BIG High Intensity Interval Training consists of alternate bursts of hard work with active recovery. Think 40 seconds of mountain climbers followed by 20 second of rest or a plank.

“Yoga is about more than exercise,” says Karen East, manager of House of Yoga, York’s donation-based studio. “Vinyasa Yoga is a style that coordinates the flow of the breath with the flow of the movements.”

The biggest misconception about yoga?

“That you have to be flexible or fit,” East says.

“Anyone and every body can do yoga.” And while yoga can tone muscles, “what it does on a deeper level—building the mind, body, spirit connection—is really the more beautiful and important aspect of it,” East says.

Whisk Cafe Makes Breakfast New Again in E-Town This Elizabethtown staple has quality coffee, creative plates, and hometown vibes.

The best experiences are born of spontaneity.

At least, that's how Amy Kreamer, owner of Whisk Cafe in Elizabethtown, has lived her life.

She thought up the idea to buy her first restaurant, a place called Lucky Ducks which she co-owns with her friend, while eating lunch there.

When Kreamer's idea for a breakfast place called Whisk Cafe came along, she connected with a realtor in town and whipped up a 13-page business plan in a matter of days.

For the new drive-through Whisk Express, she happened to drive by the building and see a place for rent. "It took me 24 hours to make a move on that one," says Kreamer.

But if you thought her business endeavors were anything but calculated, just take a peek inside the original Whisk Cafe. This airy, vibrant breakfast and lunch spot in Masonic Village hits every note—and right on cue.

With menu staples ranging from lemon blueberry goat cheese pancakes to loxloaded eggs benedict, Kreamer successfully built a vision she couldn't shake. She knew she wanted the food to be fresh, local, and creative, but there was something she had to do first.

"The first step, I should say, was coffee," Kreamer notes.

Whisk serves coffee from award-winning roastery Red Rooster. This Virginian roastery has traveled north numerous times to teach Kreamer's staff the best way to prepare and serve their coffee. The cafe even has a house

roast called Blonde Bird, made just for Whisk customers.

This attention to detail spans throughout Whisk, and the customers take notice. For one, there's the seasonal, dynamic menu comprised of fresh-as-can-get ingredients.

Kreamer brought 30 pounds of Georgia peaches home from vacation earlier this summer, all for cafe specials. She stocks up on local apples in the fall, crafting apple cobbler pancakes and other autumnal delicacies. In fact, she gets many of her ingredients local, like eggs from Sauder's, meats from Groff's Meats, and produce from the neighboring Masonic Village Farm Market. Every corner of the menu is thoughtfully curated.

Kreamer always has vegetarian, vegan, and gluten-free options in the rotation.

Plus, she stocks a small gift shop on site, where people can relish in local makers and women-owned businesses.

As if it couldn't get any more nuanced, dogs who dine on the patio even get their own special menu, with features like handmade dog treats from a local bark-friendly bakery.

With all these niceties, Kreamer's knack for the restaurant world feels innate. She was trained as a fine dining waitress in the past, and practically grew up in her uncle's restaurant as a teen. With all this in mind, her second nature makes sense. Talent aside, Kreamer's greatest strength may be her awareness of just how pivotal the community around her is—and how unique it is to be expanding on the place where she grew up.

"I actually felt like I had really big shoes to fill with my parents," Kreamer says. Her dad was a second-generation pharmacist who took over from his father, the first pharmacist in Elizabethtown. Kreamer's dad has had such an impact on her that she named a breakfast scramble, the RBK, after him.

Her mom, whose unexpected death in 2007 prompted Kreamer to move back to her hometown, left a lasting impact on the community where she taught school kids for years. "It just really fills my heart with joy when I hear people talk about my mom," she says.
