There is a variety of spin and HIIT classes with added weights, kettlebells and bands that focus on form, intensity, strength and movement to deliver a full-body workout.

Tell us about your journey to opening A Little Bit of Local!
My parents owned an antique shop when I was younger and I spent a lot of time there with them. As I got older, the prospect of having a store of my own one day was always in the back of my mind and I liked the idea of a gift shop. I was invited to be a pop-up vendor at the Downtown Allentown Market’s holiday market with my business, Stitched Simply Sweet, and I loved it. I had explored the idea of opening a storefront afterward, but the timing just wasn’t right. After about another year, I revisited the idea and A Little Bit of Local was born and opened its doors.

Explain the desire to launch a one-stop shop for local businesses.
I personally enjoy gifting unique finds, as well as supporting the local community and small businesses whenever I can. In looking at what it takes to run a store, I knew that there was no way I could run the store and fill it with just my own items. The idea came that I could bring in other items that are also locally made to offer a variety of items while supporting several small businesses in one place, but still maintaining a connected flow giving more of a boutique gift shop feel.
Tell us about some of the artisans, crafters and vendors whose products are carried at the shop. We have an eclectic mix of artisans, crafters and vendors whose items are carried in-store. From locally made candles (soy, beeswax, pillar, whimsically decorative and more), jewelry, soap and bath and body products to local honey, coffee, tea leaves and dip mixes, the variety surely offers something for everyone. We even carry “Allentown” themed merchandise such as doormats, coasters, glasses, cutting boards, shirts and hand-painted postcards. We have a social media
campaign currently running that spotlights the various vendors in the store so the community can learn even more about them.
What would you say are some of your most popular offerings? This is a difficult question to answer. When we first opened, I would definitely say our body scrubs and lotions, soaps and dip mixes were the things I was restocking most often. Now, we definitely sell a mix of everything in the store. One thing that is still popular are the pocket watches from one of the jewelry makers. As we approach the holiday season, we plan to post different gift guides on our social media featuring some of our favorite, most popular and unique items in the store.
What do you love about being in Downtown Allentown—and on the Arts Walk specifically?
What I love about being in Downtown Allentown is the collaboration among the various business owners and

the support that they give each other. I also enjoy having the opportunity to have regular customers who work and live downtown, but also those who are traveling or in town for various events. I feel that the Arts Walk is the perfect home for A Little Bit of Local, especially the façade of the building, since we are a store of a variety of “art.” While we are tucked away on the Arts Walk, I feel it is an opportunity to help spread the word about the Arts Walk itself as I continue to market the store.
Tell us about your workshops and events! Do you have anything planned for the fall?
We offer a variety of different workshops including painting, personalized doormats, soap making and more. Our workshops can also be booked for special events like birthday parties, a girls’ night out, team building, etc. I worked on filling in our fall calendar and I plan to have at least one workshop per week, if not more. If interested, you can register on our website or in the store. Most workshops do require registration ahead of time so that our small-business vendors can order and prepare materials accordingly
Is there anything else you’d like to note?
We offer gift wrapping for your gifts—just ask! As the holiday season approaches, we are always evaluating our hours and may be open later if it is busy for later shopping. We also offer online shopping, including a buy online, pickup-in-store option. I truly appreciate the support of the community and being able to support the community myself. “I can course out a meal with guests over,” Greene says. “I can infuse anything that has butter or oil.” It could be a girls’ night charcuterie, a brunch with chicken and waffles, even popcorn. It could be a highend evening or a casual hang.
Greene can set up at clients’ homes or a venue and stick around to mingle and make sure guests know what to expect.
Along with the therapeutic effects, cannabis can help with feelings of emotional well-being and stabilize mood. “With CBD there aren’t any psychedelic effects going to your head or feeling loopy,” Greene says. “Whenever I get to a certain point and ask people how they’re feeling, the feedback is: mellow, relaxed and happy. ‘I feel good!’”

“After having my son and having some crazy postpartum depression and anxiety,” Greene says, “my doctor said, ‘if you don’t want to go on antidepressants and sleeping aids, try medical cannabis.’” Learning through this process about the effects of various strains and how to microdose on her own terms, Greene brought that experience and her cannabis cooking skills to bear as an expert on how to perfect her products and sidestep negative side effects. “I have machines to tell me how many milligrams I’m infusing,” she says.
Everyone has a different tolerance and various cannabis strains can have various effects, but Greene works with uplifting varieties that are relaxing without sluggishness.

“Cannabis actually helps with focus and motivation during exercise,” Greene says. “It won’t make you want to sit still.” Exercise like walks and bike rides, meditative breathwork and mindfulness practices all can feel enhanced.
“A woman with lupus recently reached out to me to say that Herb & Board honey has helped so much with her nerve pain that she’s able to start the day without taking a bunch of pills,” Greene says.

CANNABIS KEY
CBD (cannabidiol) and THC (delta-9-tetrahydrocannabinol) are two of the most well-known cannabinoids found in the cannabis plant. They have different effects on the body:
CBD is a non-psychoactive compound, meaning it doesn’t cause a “high.” Often used for its potential therapeutic benefits, CBD products are widely available and legal in many places.
THC is the main psychoactive compound in cannabis, responsible for the “high” people experience when using marijuana. It can also have therapeutic effects, such as pain relief and appetite stimulation. However, its psychoactive nature can lead to impaired cognitive function and altered perception.
Delta-8-THC (delta-8-tetrahydrocannabinol) is a variation of THC that is structurally similar to delta-9-THC but with a few differences in its molecular arrangement. It’s also psychoactive but generally considered to be less potent than delta-9-THC. Some users report experiencing a milder high and fewer feelings of anxiety or paranoia with delta-8-THC.
The legal status of these compounds can vary by location. While CBD is often legal and widely available, the legality of THC (both delta-9 and delta-8) depends on local laws and regulations. Always check the laws in your area before using or purchasing these compounds.

How would you describe your personal philosophy when it comes to overall wellness?
Wellness, in my opinion, is how I feel dayto-day, and how truly present I can be in any given situation without allowing physiological or psychological discomfort to lead me away from the moment.

The ability to have moments, even if they are brief, of clarity, contentment and calm. An awareness of nature and the gift that is everyday life. Acknowledgement of physical limitations that we might have and a hope that we can truly experience spontaneous happiness, even when we are aware that our body might not do what we hoped that it would.
What are some of the modalities you personally practice?
Meditation in all forms, including walking meditation. I’ve been a certified yoga instructor since 1999 and continue to practice the lifestyle. I believe in the power of massage therapy, energy work, Reiki, Ayurvedics—everything at Twin Ponds. I see how the practitioners here pour themselves into their work with the intention of helping and healing others, and it’s a privilege to witness the positive outcomes.

Describe your morning routine. Is there anything you simply can’t start your day without?
I fast until noon most days, so mornings revolve around water with lemon and strong coffee. Everything about coffee is soothing to my system and I’ll never give it up.
How about your nighttime routine?
I’m not great at sleeping, so my evening self-care welcomes movement. I walk my dog, or my daughter and I spend time caring for and bonding with the horses at Manito Life Center, where we volunteer. Moving feels right, and connecting with animals in the beautiful outdoors is a gift. I also love salt and essential oil baths, which are always a treat.
What are a few healthy habits you try to practice throughout the day?
I drink a lot of water. I practice abundance mindset by reminding myself of the simple and good things in my life like health, family and nature. I stop whenever I need to in order to take deep breaths and ground myself. This is such a simple act but it is an instant reset that allows me to prepare my system to approach any stressful situation without reactivity.
What’s your favorite healthy meal to make at home?
I’m a fan of Tieghan Gerard’s Half-Baked Harvest cookbooks and blog. One of my favorite recipes of hers is a salad of arugula, roasted chickpeas, roasted cauliflower, topped with fried feta cheese and homemade green goddess dressing. Amazing!
What are your favorite eateries and restaurants to visit in the Lehigh Valley for a good meal?
Truth be told, I do a lot of at-home cooking because I have three children. I feel that I’m missing a lot of amazing places simply because I’m not out much. My husband and I love Cumin N Eat. My daughter and I enjoy a vegetarian poke bowl at Poke Kai, and the tofu appetizer at Grille 3501 is amazing.

Ari Quinones is the Clinical Coordinator at Pennsylvania Integrative Clinical Services (PICS). With an attention to detail and strong organizational skills, she strives towards increasing the standard of practice when it relates to the community receiving outpatient therapeutic services. Ari received her bachelor’s degree in psychology from Albright College and has offered her time in giving back to individuals who are dually diagnosed with intellectual disabilities and mental health concerns. With 15 years of experience working with individuals who are dually diagnosed, Ari has carried over her knowledge and skill set into her role as the new Clinical Coordinator at PICS.
Since 2020, PICS established the standard of a holistic approach to therapeutic services. PICS provides outpatient therapeutic services to individuals with intellectual disabilities and mental health diagnoses. These supports include medication management, psychotherapy, psychiatric evaluations, individual talk therapy, art therapy, music therapy and occupational therapy. Additionally, these services are also offered to the larger Lehigh Valley community.
When Ari is not hard at work at PICS, she can be found spending time with her family and studying to earn her master’s degree in social work degree from Pennsylvania Western. This degree is a stepping stone to the goal of becoming a licensed therapist. The collaborative approach that Ari models with her staff and PICS offers to its clients can be defined as a community partnership dedicated to improving the lives of children, adolescents, adults and families affected by mental illness through recovery-focused support treating the total person and not just one specific diagnosis.

The numbers are startling: according to the National Domestic Violence Hotline, about one in three people have experienced sexual assault, physical violence and/or stalking by an intimate partner in their lifetime. Almost half of all men and women in the U.S. have experienced psychological aggression from a significant other. Overall, intimate partner violence affects about 12 million Americans every year. These are just a few of the statistics that keep Lori Sywensky up at night. Sywensky is the executive director of Turning Point of Lehigh Valley, a nonprofit social services agency that provides various resources to survivors of domestic and intimate partner abuse. “I have an underlying sense of stress that constantly runs through me just because I feel the weight of the world of what we do,” Sywensky says.

Savor the senior moments
Turning Point got its start in 1976 as the “May Day Anonymous” hotline for local women ensnared in domestic violence situations. It was officially granted nonprofit status two years later and rebranded as Turning Point. The agency’s first emergency shelter opened in Bethlehem in 1980, followed by a second, larger shelter in Allentown the following year. Although Turning Point has remained a constant (and ever-growing) presence in the Lehigh Valley since those early days, it’s not unusual to come across longtime residents who’ve never heard of it. Sywensky herself was among them while she was growing up in Northampton. She didn’t know it at the time, but their paths would converge years later, when a new chapter in her life brought her back to her old stomping grounds.
Following her graduation from Northampton Area High School, Sywensky knew she wanted to study psychology, but she wasn’t sure how that would manifest as a career. She enrolled at Lock Haven University, where she found a mentor in social psychology courses and was introduced to the concept of programs like Turning Point. “I never even knew they had existed,” Sywensky says. Later, a position as a counselor for survivors of domestic violence and sexual assault opened up at the Wise Options program at the YWCA in Williamsport. Recalls Sywensky: “I thought, OK, I’ll give it a try. And it ended up, that was life changing. That sort of started my trajectory.” She was still in her twenties when she became head of the program. “I like to say I was a really terrible director,” says Sywensky. “Certainly in looking back there were a lot of rookie mistakes that I made, and a lot of it was putting too much pressure on myself.”
In 2000 Sywensky moved on to a position with the Pennsylvania Commission on Crime and Delinquency, where she managed victims’ services programs in the state. But soon her family was growing (sons Collin and Tyler are now 20 and 17, respectively; stepdaughter Taylor is 28; Sywensky is married to Joe Hoffman, Jr.) and she realized she wanted to come home to her support system in the Lehigh Valley. In 2006 she accepted a position with Northampton County’s Department of Community and Economic Development.

“It was the department where everything happened,” Sywensky says. “It was affordable housing, environmental issues and dealing with everything from stray animals to helping people expand their businesses.” She also served on the boards and committees of various organizations, including the Lehigh Valley Planning Commission, Community Action Committee of the Lehigh Valley, and the Lehigh Valley Community Land Trust. Both the job and the community involvement were fulfilling. And yet, she found herself reflecting on her previous work with survivors. “I was missing that opportunity to have that direct impact,” Sywensky says, “to be so in touch with the passion that comes with watching people thrive and do the day-to-day work.”
She told herself she’d consider rejoining the nonprofit sector if the opportunity should arise. Fast-forward to 2015, when she reached out to then Turning Point head Diane Zanetti to talk about grant funding. Recalls Sywensky: “When we connected [Zanetti] said, ‘are you calling because I’m leaving?’ I was not aware she was leaving. I said, ‘no, but let’s talk.’” The two chatted over coffee and Sywensky decided to throw her hat into the ring for the job. She says she figured she had nothing to lose: “If they want me, they want me. If not, I stay with the county and I’m very happy.”
They did want her. Sywensky officially took the reins in January of 2016. She was stepping into the top spot at an organization that had spent nearly four decades building up a whole host of services: safe houses, a help hotline, counseling services, legal advocacy and education programs. And yet, there was room for a little retooling. “In nonprofits in general we really try hard to do everything all at once,” Sywensky says. “And it was clear to me that there were some people wearing way too many hats. If we really want to provide a quality service, we have to stop and take a pause.” She wanted to focus less on numbers (how many people

attended a community training session, for example) and more on general impact while always supporting Turning Point’s mission to eliminate domestic and intimate partner abuse in the Lehigh Valley through survivor empowerment and community education and engagement.
Sywensky says a major priority during her tenure has been investing in direct client assistance. That can mean everything from providing financial counseling to helping survivors pay for rent or classes— even getting them a pair of shoes to start a new job. It’s all about making it as easy as possible to navigate a new way forward after an incredibly dark and trying period. Researchers say it takes an average of seven attempts for a survivor to leave an abuser for good. “If you want to leave, that’s one step, but if you want to stay out, there’s a whole range of other things,” Sywensky says.

On the list of future wants: bolstering community education. Sywensky says they’d like to create a training institute that teaches the signs of domestic and intimate partner abuse, which aren’t always evident to the naked eye, as well as how to respond to it. Shelter space is a concern as well; Turning Point’s safe house is consistently at capacity. “Our goal is to never turn someone away on the day that they call us,” Sywensky says. A capital campaign that Sywensky expects to go public next year will aim to address Turning Point’s growing pains by raising funding for a new safe house and administration building that will centralize many of their services.
Beyond those big-picture goals, which are no doubt vital, there are little moments that Sywensky relishes. Although she’s typically no longer involved in the counseling of survivors, she’s often provided glimpses of the good work Turning Point is doing. Community members often take it upon themselves to raise money or buy supplies for Turning

Point; she loves being on hand to collect those donations when they’re brought to the administration building. “You couldn’t trade that for anything, being able to see how generous the Lehigh Valley is and how much they’re thinking of survivors,” she says. Sywensky is also afforded the opportunity to see how those same donations are brightening the lives of those who receive them. She recalls a visit from a woman with two little girls in need of new coats in tow. As they rummaged through the items, the girls had a ball staging an impromptu fashion show and sorting through the selection of toys and books. Sywensky says she knows the girls have a rough home life, but it’s her hope that those brief, joyful interludes like what they experienced that day are what will stand out for them down the road. “I know that will have an impact. When they look back, they won’t remember Turning Point and they won’t remember me, but they’ll remember that moment and hopefully feel compelled to share that.”

Pizza fans squealed with delight when the 100-percent vegan Paranormal Pizza began serving up its made-from-scratch pies (featuring cashew cheese made in-house) at its Bethlehem storefront in March of 2022. Less than a year later, the shop was forced to close because of a fire. Although pizza-making is on hold for now, Pizza is still a presence in the area, offering its sandwiches, wings and sides at pop-ups. Living Electric is an all-vegan café and juice bar in Allentown. The closing of Jenny’s Kuali on Southside Bethlehem was a big blow for fans of the unique Malaysian cuisine. Luckily, Jenny doesn’t mind spilling her secrets. Owners Jenny and Roy Lim continue to be a presence in the Lehigh Valley with cooking classes that dish on their recipes for signature items like vegan dumplings, spring rolls and curry puffs. They’ve also made some appearances at pop-ups, and offer catering services, too. In addition, Jenny’s Kuali signature sauces and cookbook are available for purchase.

But Is It Good for Me?
Some people adopt a vegetarian diet for health reasons. Experts say going meatless can lower your blood pressure, lower your risk for heart disease, reduce your risk of developing type 2 diabetes and help you maintain a healthy weight. But there are drawbacks, too. The Mayo Clinic says some vegetarian diets may rely too heavily on processed foods that contain an abundance of sugar, fat and salt. After all, a can of soda, a slice of cheese pizza and a candy bar could be considered a vegetarian meal, right?
Experts say it’s important to focus on fruits, vegetables, whole grains and nutrient-rich foods. Protein that would normally come from meat can be obtained from a variety of plant sources, such as legumes, soy products, grains, nuts and seeds. A few easy options to keep handy in the pantry or fridge to grab and go: avocados, pumpkin seeds, cashews, steel-cut oats, tofu and peanut butter.

Wegmans and Whole Foods have a reputation for carrying a wider selection of plant-based products than other grocery stores; those are perhaps two of the more obvious choices.
Grocery Outlet is not a name that automatically comes to mind, but it’s been singled out by some online shopping sleuths for its low prices on certain vegan staples.

You can also find vegetarian and vegan options at Nature’s Way Market in Easton.
Beyond the obvious considerations for animals, deleting meat from your dinner plate is also a way to be kinder to the environment. The Vegetarian Society says, after taking into account everything that goes into feeding, raising and harvesting animals for food, a veggie-based diet translates into two-and-a-half-times fewer carbon emissions than a meat diet. Furthermore, the society says, eating vegetarian food for a year eliminates the same emissions as a family taking a small car off the road for six months.

One of their most popular events, the Lehigh Valley Vegan s’Mac Down , returns to SteelStacks in Bethlehem on November 12. Local restaurants will be showcasing their best dairy-free, vegan versions of that comfort food classic, macaroni and cheese. Prior to the pandemic pushing it to the back burner, the event drew hundreds of eager taste-testers in previous years. Hummus House is the reigning champ.

Animal Defenders Greater Lehigh Valley

What happened when an Italian woman and a Polish man met in a bar? They started Oley Ravioli, of course! Well, there were actually a few more steps between that fateful meeting and starting the homemade, small-batch ravioli, pasta and pierogi company. Kevin Chrusciel had been in the beverage industry for 25 years when he found himself with an opportunity to start something new. When his partner, Kristine Marino, shared her mother’s potato filling recipe for pierogi, Oley Ravioli was born.

and always in the kitchen with their families as well as frequenting local markets. Nowadays, they are constantly dreaming of their next idea for a filling. “We are always talking about the filling of our pastas,” says Chrusciel. “They are made of local, fresh ingredients with tons of flavor. Our flavors are inspired by what is in season as well as ideas from our customers.”
Their dough is eggless and made from semolina flour and olive oil. “Our kitchen here at the Renninger’s Farmers Market is customdesigned specifically for our pasta making,” he explains.
“From the incredible machine we have creating thin dough for the ravioli and pierogi to the hood above the stove, we had everything specifically made just for us.”
Here, they are sharing a sauce recipe to accompany their pumpkin ravioli, which locals can purchase at Oley’s home base in Renninger’s Farmers Market in Kutztown. You can also find them at six other indoor markets in the area as well as outdoors at the Emmaus Farmers’ Market, the Trexlertown Farmers’ Market and at the West Reading Farmers Market. Pastas can also be found on menus at
the K’Town Pub and the Liberty Tap Room.
Oley’s recipe for this easy cranberry rum sauce accompanying the ravioli dish is actually printed on the packaging of their pumpkin ravioli. It comes together quickly for a rich, sweet and spicy sauce. “It makes a great side to any holiday table,” Marino shares. “It is such a quick and delicious meal that comes together with only a few steps. We have so many different flavors and fillings—there is something for everyone.”

Ravioli
Using Oley Ravioli’s refrigerated
Pumpkin Ricotta Ravioli
Bring water to a gentle boil, add pasta, cook 4–5 minutes or until al dente.
Cranberry Rum Sauce
1 stick of butter
1 12-oz. can of whole berry
jellied cranberry sauce
2 oz. of spiced rum
Cinnamon, nutmeg and allspice to taste
IN CRANBERRY RUM SAUCE
Melt butter in sauté pan over medium-low heat. Add can of cranberry sauce and whisk together. Add spiced rum and a pinch of spices to taste.
Pour sauce over ravioli and serve. No need to drown your dish; Kevin tends to go light sauce on everything.
Note: Kevin says you can swap spiced rum for whiskey or bourbon for a less-sweet sauce. And you can use this sauce on anything— he even puts it on ice cream!

RACLETTE QUESO AT CASA
This past June, Queso at Casa opened inside of Casa 401, inviting cheese lovers and intrigued foodies alike. “Queso at Casa and Casa 401 were born as an invitation to a different eat-and-shop experience in Downtown Easton,” shares owner Andrea Rincon. “My husband and I are aiming to provide sustainable and one-of-a-kind shopping and eating experiences inside our two-in-one shop. Queso at Casa is a tiny but welcoming eating stop inside our concept store Casa 401.”
What are they serving up?
Raclette, a traditional Swiss
dish that originated in the Alpine regions. “It is named after the French word ‘racler,’ which means ‘to scrape,’” Rincon explains. “The dish involves melting a specific type of cheese called raclette cheese and then scraping the melted cheese over various accompaniments.” Once the cheese reaches the desired consistency, it is scraped off the wheel onto individual plates or directly onto accompaniments, which may include boiled or steamed potatoes, gherkins, pickled onions, cured meats and crusty bread. Rincon,
however, is putting her own spin on the dish.
“Our creative twist aligns with our Latin culinary influences and background,” she says. “We are using Gouda cheese and incorporating other signature accompaniments such as chorizo, chimichurri sauce, artichokes, roasted red peppers or garlic aioli over a nicely toasted French baguette bread.” Customers can also opt for fingerling potatoes, which are air-fried in small batches, instead of the French baguette.

Starting this month, Queso at Casa will also be offering three limited-time toasts: apple and bacon, pear and walnut, and prosciutto and fig jam. “We’re also excited to offer raclette cheese at PA Bacon Fest and Easton Garlic Fest.”
