Healthy Kids Here is the unifying force of all the sectors IDEA that directly enhance holistic student health and wellness, from our Health & Wellness team, to our P.E. Coaches, Cafeteria Managers, the Nutrition Team, and campus CNP Farmers. This cookbook represents our collective goal to enrich the lives of not only IDEA students, but IDEA families and communities as a whole.

Use these recipes as an opportunity to bond over learning new skills, trying new foods, and perhaps even growing some of the ingredients in a garden large or small. We hope that these dishes will bring you joy and good health!

PREP TIME: 10 MINUTES

Ingredients • 1 lb. Whole Grain Muffin Mix • 1 cup Old Fashioned Oats • 1 cup Orange Juice • 2 carrots, shredded • ½ cup cranberries • ½ tsp vanilla • Oil spray

Instructions Preheat oven to 350 F and spray a cookie sheet oil with spray In a large mixing bowl, add the muffin mix, oats, cranberries, carrots, juice, and vanilla.

Using a spatula, mix together until liquid has been completely absorbed Portion ¼ cup scoops of the batter onto your oiled sheet tray leaving 2 inches between portions.

Bake for 15-18 minutes, rotating pan halfway through cooking time

Instruciones Precaliente el horno a 350 F y rocíe una charola con aerosol de aceite En un tazón grande, agregue la mezcla de panecillos, avena, arándanos, zanahorias, jugo y vainilla.

Ingredients

COOK TIME: 2 MINUTES

Instructions

• 1 avocado peeled

Toast 2 slices of bread until golden and crispy.

• Juice of ½ lime

In a bowl, mash and mix the avocado, lime, cilantro (optional), and salt + pepper to taste.

• 2 slices of whole grain bread (or bread of choice) • Salt and pepper to taste Optional: • Red pepper flakes • Chopped cilantro

Spread one half of the avocado mixture on each of the toasted breads.

Top with everything bagel seasoning, eggs, or red pepper flakes.

Serve warm and enjoy!

Ingredients • Cooking spray or oil of choice • 2 large eggs • 1 tbsp 2% Milk or milk of choice • 1 tbsp Shredded Cheddar Cheese • 1 tbsp Red Bell Pepper, Finely Chopped • 1 tsp green onion • Salt and pepper to taste

COOK TIME: 4 MINUTES

Instructions Spray the inside of a large mug lightly with cooking spray.

Crack 2 eggs into the mug along with 1 Tbsp of milk. Beat with a fork.

Add cheese, red bell pepper, green onions and salt and pepper to taste. Stir with a fork until well combined.

Place mug in the microwave and cook on high for 30 seconds. Remove from microwave, stir, and repeat as needed until fully cooked.

Banana Pancakes SERVINGS: 8 SMALL PANCAKES

Ingredients • Cooking spray or oil of choice • 1 ripe banana • 2 large eggs, lightly beaten • Real maple syrup, for serving • Additional topping as desired: fresh fruit, chopped nuts, granola

COOK TIME: 3 MINUTES

Instructions

Nutrition Facts:

Peel the banana and break it up into several pieces, place in medium bowl.

Use a fork to mash the banana until there are no large lumps and it feels like pudding.

Mashed banana should be about ½ cup.

Add in already beaten eggs and any desired toppings. Stir completely to combine. Mixture will be thinner than regular pancake batter.

Heat a cooking spray/oil over medium heat in a pan.

Flip the pancakes, gently. Cook for another minute until golden brown. Cook the rest of mixture until all pancakes are cooked.

Pelar el plátano y cortarlo en varios trozos, colocar en un tazón mediano.

Informacion Nutricional:

Use un tenedor para triturar el plátano hasta que no haya grumos grandes y se sienta como un pudín.

El puré de plátano debe ser de aproximadamente 1/2 taza.

• 1 whole grain Naan bread

Preheat your oven to 350 °F.

• 2 tbsp of Pesto sauce (from a jar or make your own using the No Nut Pesto)

Drizzle light extra virgin olive oil on your naan.

• ¼ cup of goat cheese crumbles (whole milk mozzarella cheese can be substituted)

Spread the pesto sauce on your naan.

• ¼ cup of halved cherry tomatoes

Add cherry tomatoes.

• Sprinkle of sea salt to taste

Add goat cheese crumbles.

Sprinkle with Sea Salt.

Optional: • Add different vegetables such as mushrooms, spinach, or bell peppers.

Bake for 10 minutes, 15 if you like a crispier flatbread.

• 1 pan Integral Naan

Precaliente el horno a 350 °F.

• 2 cucharadas de salsa Pesto (de un frasco o haga el suyo utilizando el Pesto Sin Nueces)

Rocíe aceite de oliva virgen extra ligero en su pan Naan.

• 1/4 taza de queso de cabra desmoronada (se puede sustituir el queso mozzarella de leche entera)

Unte la salsa de pesto en su pan Naan.

• 1/4 taza de tomates Cherry cortados a la mitad

Añadir los tomates Cherry.

• Espolvorear sal de mar al gusto

Añadir las migas de queso de cabra.

Opcional:

Equipment • Food Processor or blender Ingredients • 1 clove of garlic chopped • 1 cup packed basil leaves • 1/3 cup olive oil (or more if needed) • Salt and pepper to taste • 3 tbsp finely grated parmesan

Did you know?

COOK TIME: 0 MINUTES

Instructions Place garlic and basil in food processor or blender and pulse until it is all roughly chopped. Add oil and pepper and process.

Add more oil if the mixture is too thick.

Add cheese and pulse until completely blended in. Add salt + pepper to taste.

Enjoy pesto in pasta, on pizza and flatbread!

Chicken Salad SERVINGS: 4

PREP TIME: 60 MINUTES

Ingredients

COOK TIME: 30 MINUTES

Instructions

• 1 lb. chicken breast

Preheat oven to 425 °F.

• 1 tbsp olive oil

Place chicken on a baking sheet and drizzle 1 Tbsp olive oil on top. Bake for 25 minutes or until cooked through.

• 1/3 cup Greek yogurt • 1 medium gala apple, or any sweet apple of your choice, diced • 2 stalks celery, finely chopped • ¼ red onion, finely chopped • Juice of 1 lemon • 1 tbsp fresh dill • ½ tsp garlic powder • Salt and pepper, to taste

While chicken is cooking, prepare the apple, celery, and red onion. Place in a large bowl and set aside.

Once cooked through, remove from oven and place in the fridge to cool for 30 minutes before shredding.

Add shredded chicken, Greek yogurt, lemon juice, dill, garlic powder and salt and pepper to the large bowl with the apple, celery, and red onion. Toss to combine.

Buffalo Chicken Stuffed Sweet Potatoes SERVINGS: 4

Ingredients • 4 large, sweet potatoes • 2 medium chicken breasts • 1 tsp salt • ½ tsp pepper

COOK TIME: 60 MINUTES

• 2 green onions, thinly sliced • ¼ cup plain Greek yogurt • ½ cup Frank’s RedHot sauce • 1 tsp garlic powder

Instructions Preheat oven to 400 °F. Wash sweet potatoes and poke holes all over them with a fork. Place in the oven directly on the rack. Make sure there is room in the oven for the chicken as well.

Season chicken breasts with ½ tsp of salt and pepper. Place in baking dish and bake until cooked through (about 25 minutes).

While the sweet potatoes and chicken are baking, combine the Greek yogurt, RedHot sauce, garlic powder, and remaining salt in a small bowl. Stir together until completely blended. Taste the mixture; feel free to add more RedHot sauce if you want it to be spicier.

Once chicken is finished baking, carefully remove from the oven, and allow it to cool. The sweet potatoes will need another 25 minutes or so until they’re soft and ready.

Instrucciones Agregue ingredientes a su licuadora o procesador de alimentos en el orden indicado en la lista de ingredientes.

Mezcle a velocidad media, aumentando lentamente a alta velocidad hasta que la textura sea suave.
