Olivia Jane Cockburn was born on March 10, 1984, in New York City, to Leslie and Andrew Cockburn. Her father is a famous British journalist and her mother Leslie, also a journalist, was a producer on the American TV show, 60 Minutes . She has an elder sister named Chloe Frances Cockburn and a younger brother, Charlie Philip Cockburn. Growing up in Washington DC, Olivia has previously spoken of her upbringing and the famous faces including Mick Jagger and Steven Spielberg who frequented. In high school, Wilde changed her name. In honour of family members who wrote under pen names and for her love of Oscar Wilde, she became Olivia Wilde.

“Hot 100” list. In 2012 she acted alongside Chris Pine in the drama film People Like Us. After leaving House , Olivia turned her efforts towards producing. In 2013, she starred in and produced the biographical drama, Rush alongside Chris Hemsworth, as well as other documentary short films, including Body Team 12 in 2015. It won Best Documentary Short at the Tribeca Film Festival and was subsequently nominated for an Academy Award.

Later that year Olivia was linked to Jason Sudeikis. The pair got engaged in January 2013 and became parents to son Otis in 2014 and daughter Daisy in 2016. In late 2020, news emerged that the couple had ended their engagement but continue to co-parent their two children. In 2017, Wilde made her Broadway debut as Julie in 1984. This followed with her directorial debut nearly two decades after she first emerged in the entertainment industry. Her indie film ‘Booksmart’ was met with critical acclaim and was even nominated for a Golden Globe. More recently, Wilde has stepped up, starring in and thisanotherdirectingfeature,month’snew release, Don’t Worry Darling , alongside Harry Styles, Florence Pugh and Chris Pine. During the filming Olivia began dating co-star Harry Styles, with the pair going public in January 2021 at Harry’s manager’s wedding. The couple currently live a quiet life between Los Angeles and Harry’s home in London and keep their relationship out of the spotlight as much as possible. In 2011, Olivia divorced Tao Ruspoli, talking of the split she shared, “I had grown up with Tao; we had just drifted. I felt I had something to prove. If you fall off a horse, you get back up. I am not a quitter. I hung on for as lo ng as possible, until it was more hurtful to stay.”

Olivia hoped to become an actress from an early age. After graduating from high school in 2002, she planned to attend Bard College, but instead opted to move to Los Angeles to follow her passion for acting. In 2003, she landed her first lead role playing Jewel Goldman in the TV series Skin and at just 19 years old married Italian aristocrat and filmmaker, Tao Ruspoli. A year later Olivia secured another role in the hit series The O.C. and was featured in the romantic comedy The Girl Next Door. In 2006 Olivia starred in Alpha Dog followed by the highly acclaimed medical drama, House. In 2009, Olivia was recognized for her stunning appearance and was featured in the top spot of Maxim’s

The album artwork is all about the brain being a garden; you reap what you sow, you need to keep the weeds at bay, and there is an almost supernatural beauty to when things blossom.”

Britney Spears is teaming up with none other than Elton John for what is tipped to be ‘the song of the summer,’ a new rendition of Sir Elton’s classic 1971 hit Tiny Dancer, now entitled Hold Me Closer. The Samsung TikTok account has 1.8 million followers, and the video promoting the S22 Ultra phone was able to show off the camera and video function with a piece of film shot at night. This is an example of a brand utilising a certain style of social media; they ran a ‘show us your city at night’ campaign, thus promoting the nighttime camera mode. They have also brought back a version of fold and flip phones, with the Galaxy Fold and the Z Flip, making TikTok the perfect foil to introduce the concept to Millennials (the 25 to 40-year-olds) and Gen Z, making the brand more accessible to its target audience. Through a hashtag challenge, users were encouraged to dance (in folding moves) to music and jingles to show the world their identity. Samsung collaborated with TikTok’s top creators who joined the challenge and demonstrated their choreographed moves. Collaborations with influencers and hashtag challengers are two sure-fire ways to get noticed on the socials. TikTok has been around since 2016, and the platform has grown into a social media goliath, in 2019 it reached its first billion downloads. The short-form video format is ideal for the quick consumer market. It has catapulted music, dances and challenges along with different trends into the public consciousness. As well as likes and shares, users can track the post with the number of impressions (how many times it appears in someone’s feed) and reach (how many people have viewed it). With the help of algorithms, you only get to see the type of content that you want to see. The entertainment value and dopamine buzz resulted in TikTok becoming a hit with Gen Z (the 9 to 24-year-olds), but now all ages are consuming its content and performing on there too. Businesses are now tapping into the phenomenon, realising its marketing potential. Not only does the algorithm work in your favour, but it also helps that TikTok isn’t over-saturated with brands yet, unlike Facebook and Instagram. As it is becoming increasingly popular among companies to create videos promoting brand awareness, here are some of the most successful TikTok campaigns and accounts of 2022.

An innovative strategy from a centre of education, Glasgow’s University of Strathclyde used a different approach to catch the attention of prospective students. The videos focused on different aspects of university life while showing campus buildings, landmarks and students, all put to a soundtrack. The campaign had 1.47 million impressions. The use of trends and memes is another proven way of drawing the audience in; one of the videos on the university’s account shows students miming the ‘Ew, David’ clip from the Netflix comedy series, Schitt’s Creek, known for its iconic one-liners. This is contrasted with more sentimental videos of graduation ceremonies with emotive songs as a soundtrack. The result is a multipronged attack on the senses, mixing the personal with the fun element of student life, together with the fact that they chose such a relatively new and trendy platform to cast their net on will see them reap the rewards of all those new students signing up for the autumn term.

Crocs! Love them or loath them, they are as divisive as Marmite, but they are using every trick in the marketing book on TikTok and appealing to new consumers after leveraging the platform to amplify brand awareness. The bright colours and basic design leave the shoe itself open to all kinds of creativity. Hashtags are uber important on social media and Crocs has taken full advantage of that fact, 1.3 million videos were created using the hashtag #StrapBack to bring Croc customers together to show what was possible with the back strap of the shoe. Crocs encourage and enable wearers to create their own content, empowering the customer and making a Crocs community within the wider TikTok community. Limited edition products are dropped in ‘Croctober’, a month-long celebration for fans of the brand. Catchy songs and beats are put to videos customising Crocs with couples getting on board with matching designs. They are even breaking into the pet market with mini versions for cats and dogs. After all, the internet has seen animal videos going viral since social media began, that’s what it was invented for!

Food characters are a staple of Marks and Spencers, think Colin the Caterpillar and Percy Pig, so when they launched their fruit Omballs accompanied by Omballs’ choccy chums it was no surprise that they were a hit too. What was a surprise, however, was the popularity of their TikTok videos. The M&S ad for Valentine’s Day last year received 18.5 million impressions, and the Omballs ad stands to continue with that success, garnering 12.7k likes in the first week. The M&S Food TikTok account is awash with content featuring Percy and Colin in topical skits, appealing to a younger audience. According to M&S bosses, their profits from the previous year can be directly linked to their TikTok performances, proving that the platform can yield significant financial success.

‘Room 4D’, is an IOSCAPE STUDIO and MARBELLA INTERNATIONAL PICTURES collaboration, written and directed by Tony Bianchi and produced by Franky Lankester – who plays a significant role in the film. Sarah Spendlove is cast as the lead, playing Dr Charlotte Goettling. Her half-sister Debbie is played by Nicole Moerland, director of Marbella Film School. In addition to Sarah as the lead actress, most of the students from the school were cast to fill various roles in the production. There are also cameo appearances made by established actor Damian Chapa (Blood In, Blood Out).

‘Room 4D’ has been selected for the Marbella International Film Festival and will be screened between the 5th and the 9th of October 2022 in Puerto Banus, Marbella where everybody is more than welcome to watch what we’ve created.

A few years ago a girl went missing after a night out in a club in Marbella. Sadly, she was taken by predators and has not been found Havingsince.twodaughters myself, it’s the worst thing you can imagine to happen to your children. Hence, Tony Bianchi - the writer and director - and I were inspired to create a relevant and captivating story that takes place in Marbella. Our goal was to develop a feature film working exclusively with a local cast and crew.

l How was your experience working with Marbella Film School? I’ve known Nicole for an extensive time and we aimed to get all the students involved in the project. We were thrilled to see all the new talents emerge; they all provided a fantastic performance.

l Can you tell us about your favourite moments during filming? Every project has plenty of memorable moments. The production is usually taking you to locations you wouldn’t normally go, anywhere from the most beautiful to the most peculiar places. There is often a sense of adventure and excitement. In addition, you have the chance to meet a lot of new people who share the same interests.

Social bonding and outdoor recreation replaced with a sweaty Joe Wicks and binge-watching Bridgerton As freedoms have been curtailed, doors shuttered and events cancelled, the absence of new experiences and what experts call memory milestones have resulted in disorientating mass perceptions of time. For every homeschooling parent experiencing the seconds, minutes, hours... crawling glacially past, there’s another one of us feeling two years just vanished in the blink of a bloodshot eye, stolen, or perhaps suppressed in our psyches due to the sheer lack of quality content (outside of Netflix).

Physicists working in the realm of quantum computers (a topic I’ve shied away from writing about several times since it makes rocket science seem straightforward) have demonstrated a more stable way of storing quantum information by creating an incredible, never-before-witnessed phase of Youmatter.might be surprised to realise you already know several “phases of matter”. Easy to identify phases of matter are gas, solid and liquid.... This isn’t one of those. Despite there still being just one flow of time present in their experiment, this new phase has the benefits of two time dimensions, the physicists report (If you’re already lost, console yourself with the fact you’ve probably had more sex than anyone creating extra time dimensions). And how do you think they achieved this remarkable / baffling feat? 10 points if you guessed lasers. Actually, no points if you guessed lasers cos in science it’s always fucking lasers isn’t it?! I was taking drugs and drinking almost every day. In the beginning I was having fun, socialising, enjoying the alcohol and so-called party drugs, such as LSD, ecstasy, MDMA and cocaine, but eventually I was using them all to escape from reality. I would use anything to change the way I felt – alcohol, drugs, prescription medication, relationships, sex, gambling, eating, work, exercise, crime, and pornography. Friends and family were concerned about my well-being, they would tell me I was drinking excessively, they tried to make me see the damage I was doing to myself. In the end my disease would take me to some very dark places; smoking crack; taking heroin; living on the streets; prison; and completely cut off from all of those that loved and cared about me. I first tried to get help 15 years ago, after my father died. The pain of his death increased my already excessive drug and alcohol abuse to the point where Joe is a 40 years old, single man. A sales executive from London. At his worst he was homeless, alone, abusing alcohol and drugs. Today he says life is incredible, full, and he is present for himself and for others. Here is his story:

To anyone struggling with alcohol I would say if I can do it, then so can you!! After 25 years of heavy drinking and drug abuse, I finally accepted that I could not stop and stay stopped on my own, I needed others. I thought I was a hopeless case, however the fight to stay clean and sober is nowhere near as hard as the fight I endured to get my fix. I never thought I could live a happy life without using something to change the way I feel. Today I can. I follow a few simple suggestions and the rewards are far greater than anything I could have ever imagined.”

Being honest about what is going on for me is paramount to my peace of mind. I do my best to stay open minded and remain teachable. Of course, I have my ups and downs, but I have many great supportive friends who are there beside me on this magical journey. I feel as though I can now live life on life’s terms. I am almost six months clean and sober. My life today is incredible, it is full. I am present for myself, and others, and I am a productive member of society.

uring my childhood both my parents drank, but not alcoholically. I took my first drink at about 8 years old, and despite being sick I loved the effect the alcohol produced. It gave me a feeling of ease and comfort, and life suddenly became Bymanageable.theageof15

NOW MY LIFE ANDIINCREDIBLE…ISWASHOMELESSHOPELESS, even I realised if I carried on, I would surely die. My drinking was out of control, and my life was in tatters - I reached out for help and ended up in what would be the first of several rehabilitation centres and mental health clinics. I had first heard of Alcoholics Anonymous (AA) through a mental health clinic in February 2007. I did not know what to expect but it turned out to be a good experience. I don’t remember much of what was being said at my first meeting; however, I did feel for the first time I was not alone, that I was understood, and that people really knew what it was like to be me. The seed had been planted. Despite receiving help and getting clean I just couldn’t stick with it. My rock bottom finally came last year, and it was horrendous. A place I would today call “Hell”. My family and friends had turned their backs on me. I was homeless. I had lost nearly all my possessions. I was seriously underweight; I couldn’t eat properly. I was enduring sleep deprivation. I had a warrant out for my arrest and pending court appearances. I was experiencing severe depression, paranoia, and suicidal thoughts. I would describe my life at this point as non-existent and very, very, dark. I went back to AA, and they welcomed me with open arms. I finally surrendered to the fact that I am an alcoholic and an addict. I attend four (or more) meetings a week, where I do service and help others. I work the 12-step program, have a sponsor who guides me, and a connection to a power greater than myself.

There are meetings of Alcoholics Anonymous, with friendly people who will understand, held daily throughout the Costa del Sol. Meetings are free to attend, and anyone who thinks they may have a problem with alcohol is welcome.

So what makes a welllocated Marbella home such an attractive investment, apart from being a beautiful residence in the right place?

Another reason is climate, and that means more than the sunny Spain we all know about. Marbella has a micro-climate, protected from the excess heat from the north by the Sierra Blanca mountain range, resulting in a warm and pleasant temperature with just enough rain to keep the grass green and the reservoirs filled, most of the time.

While ranking number 46 in population size in Spain, marginally smaller than the cities of Salamanca and Huelva, for example, it covers a large area that has not been overbuilt, compared to most of the other tourism towns along the rest of the Costa del Sol. But more importantly, development has been controlled to prevent the building of numerous high-density low-cost holiday home developments. Many foreign tourists might be surprised to know that most of the luxury homes along the beach fronts on both sides of Marbella are not owned by wealthy foreigners, but wealthy Spaniards. They value their exclusivity, and they want to keep it that way.

KEEP IT REAL

There is no single answer, because there is no single reason why more and more people are lining up to purchase luxury properties in the Marbella area. To some extent, it has to do with the development history of the area. Marbella was never a mass tourism destination.

Although it may appear to fly in the face of logic, the value of high-end properties in the Marbella area has increased since the pandemic, and according to many experts in the field, it will continue to rise in the foreseeable future.

While the shock to the world economy could be expected to adversely affect property prices worldwide, this is not the case with regard to the highest end of the property market in Southern Spain. This is partly due to a historic trend seen over decades, and partly due to the demand, at this time, for luxury living in relatively isolated splendour. Or to use shorter words: getting away from it all, but not too far away. A wise long-term investment is one that looks far into the past and far into the Accordingfuture.toPanorama – Marbella’s longest established real estate agency – in their 2022 Marbella Property Market Report: “Marbella and its adjacent municipalities reached historic sales peaks in the high-end market in 2021 and this trend has continued unabated into 2022, increasing by the month.” They expect this historic strong demand to continue in the immediate future and to gently decelerate in 2023.

The report goes on to say that not even the war in Ukraine has deterred people from investing in Marbella.

And then we have the nitty gritty: the economy at this delicate time in our lives.

fabric is KENTE, the most traditional of African fabrics. Its origin dates back to the twelfth century and due to its high cost, particularly the silk one, it was used only by African royalty. “The whole design of the seating area overlooking the pool was created to ensure that each part is comfortable and cosy, and yet everybody is in visual communication with everybody else using these spaces.”

“The original concept here was to create the ultimate holiday villa,” says Jason.“That’s how it started. Like most things, you begin with one idea and it just morphs into something totally different. In any case, our idea was to have a villa where, once the windows have been opened into the walls, there is absolutely no difference between the inside and the outside, so you are literally living the concept of the outdoor/indoor lifestyle, with all the comforts of the interior. It is the kind of place where you can imagine arriving with family or friends on the Côte d’Azur or Marbella, and when you open the front door and walk inside, your excitement level just Asrockets.”itwould, although given the exterior view from the front, most of us ordinary people would be quite excited already as we drive onto the property. The basic architectural design is a minor masterpiece of simple form and function: perfect symmetry in wood and stone that seems to float lightly over the structure, binding the tall upright elements into a single unit and, as it turned out, giving the building a slightly Oriental feel to it. You just know that the interior will not disappoint.

We talked to Jason Harris about Villa Azura and while not actually jumping up and down with excitement, his tone would suggest deep satisfaction with his latest project. “I’m really happy with it,” he says, and coming from the CEO of the international awardwinning UDesign company, that speaks volumes. Hardly surprising, because we’re talking here about a villa that is truly unique, if the grammarians will forgive the superfluous adjective. It’s not a huge villa, relative to most UDesign projects, but actual floor space, in this case, is no more than a concept. Add the pool and terrace areas to a building designed specifically for summer living, where the gap between inside and outside living has been almost blurred to oblivion, and it is indeed conceptually large.

The pool is the centre of everything, as it should be in the ultimate holiday villa. It’s exactly as we imagined it would be finished. We see a holiday home as something different from a normal home, although we also designed the villa for year-round living.”

“This is why we focussed our design on the holiday concept. When on holidays, you’re in a totally different environment, where the family does not have to be separated. So it made no sense to have a villa with lots of different rooms that would keep people apart. We thus created this beautiful space with the pool as the family focus. “You’re met with a composition garden of Bonsai trees with rocks and cacti. This is your centrepiece. This is what greets you. As with all our designs, we use nature wherever we can, and we’re always trying to find that balance between the manmade and the natural, between plants, trees, even rocks, because when you illuminate a rock, there’s something magical about how light reacts to it, and even in the daytime it still looks beautiful, especially against those colourful flowers. Going beyond this point, you see the lovely spacious lounge with doubleheight ceiling, the living and television area on the right and a stunning openplan kitchen on the left.” Open plan means something special in UDesign. It does not mean that a kitchen has been hacked out of a lounge area to save space, but that life in a warm climate, especially on holidays, demands a different approach to interior design and layout. It calls for a large central area that will be used by all the family, even those who cannot avoid having to work in an office occasionally while on holidays.

“We all tend to live a life where the parents go one direction and the kids another, each doing his own thing instead of being together,” says Jason.

“We wanted to create something perfectly proportioned: any bigger would be too big and any smaller too small. It’s all about comfort and intimacy, which would be lost in a bigger space.”

“The textures and patterns of nature against the worked stone and wood, with the extraordinary garden composition in the centre: it all makes for a beautiful open space. The hallway, you’ll notice, is not really a hallway, but an essential part of the open ground floor.”

Ah yes, but who wants to live in a holiday home all the year round? Well, we must remember where it’s located, in an area whose winter has a different meaning from the northern European concept of the word. And also, don’t forget the ever-thinning line between the daily routine of having to work in a particular place at a particular time and working from home: every cloud, even one as dark as the latest virus, has a silver lining. This is a line that UDesign have identified and reacted to by ensuring the office be located close to the living area.

Traditionally a one-evening affair held on the rolling greens of the Magna Marbella Golf Course, this annual car enthusiasts’ fest held on the last Thursday of every July had slowly grown in stature and participant numbers from around 110 cars in 2017 to 150 by 2021. Then, barely two months before the 2022 edition, the organisers and their sponsors dared to dream up an even bigger and better event.

Concours d’Elegance, which will stand it in good stead as it attracts greater international participation over the coming years. Due to the not insignificant value of the cars taking part, exclusivity has always been part and parcel of any top level concours d’elegance event. The famous 1930s quote from Brooklands, the UK’s first purpose-built motor racing circuit, “The right crowd and no crowding” certainly applies here.

The debut Costa del Sol Concours d’Elegance opened on the evening of Wednesday 26th July with the judging of the Hypercar Class on the lawns of the stunning Anatara Villa Padierna Hotel, where invited members of the international automotive media elite were Dividedresident.intotwo categoriesHypercars and Hypercars Barchetta - this first part of the event attracted 27 Hypercars from 10 exclusive marques. After much deliberation the judges gave the respective Class wins to the Pagani Huayra and Aston Martin V12 Speedster.

Costing over one million euros each, Hypercars are mostly hidden away in private collections, and are thus a huge draw. Already judged at Villa Padierna the day before, the Hypercars present at the Magna Marbella Golf Course on the second day were on static display only.

Embracing Supercars and Classics, the second day of the Concours d’Elegance contest featured an eclectic collection of over 120 cars ranging from WW1-era veterans to ‘50s American cars, and cutting edge supercars from the likes of Ferrari, Lamborghini, McLaren and Porsche. With Hispano Suiza as the ‘featured marque’ the audience was treated to the unprecedented sight of the 1919 Hispano Suiza that once belonged to King Alphonso XIII of Spain standing

95 cheek-by-jowel with the Hispano Suiza Carmen all-electric Hypercar presented at the 2019 Geneva Auto WithSalon.1st, 2nd and 3rd places to be awarded across six Classes the judges had their work cut out, but in the end the Pre-1950 Class was resoundingly won by the 1919 Hispano Suiza. A newly restored 1954 Porsche 550 Spyder took the 1950-60 Class, while another Porsche, an original 1964 904 GTS with a significant racing history, pipped the rare one-of-17 ASA 1000 GT Spider to the 1960-70 Class win. Top award for the 1970-1992 Class went to the 1985 Ferrari 288 GTO, while another mid-engine, twin-turbo V8powered supercar, the 2022 McLaren 765 LT snatched top spot in the 19922022 Class. Coches Relevante (Significant Cars) is a new Class introduced this year for cars of historical significance. Its first ever winner was one of the two Aston Martin DBS Prototypes built in 2006 and revealed in the James Bond movie Casino Royale that same year.

Fittingly, the third and final evening of the Costa del Sol Concours d’Elegance was held in Puerto Banus where some of the Hypercars and Classics were displayed in a roped off area against the fitting backdrop of superyachts, the sun-drenched Mediterranean and La Concha.

As the setting sun slowly dropped below the horizon and a cloak of darkness descended, the Best of Show Awards were presented to the owners of the 1919 Hispano Suiza and Aston Martin V12 Speedster for the Classic and Hypercar Classes respectively. On cue with the well-deserved applause for the winners, a spectacular fireworks display punctuated the night sky across the harbour, marking the colourful end to an event the organisers promise will be even better in 2023. The Hypercars and Classics were displayed in a roped off area against the fitting backdrop of superyachts, the sun-drenched Mediterranean and La Concha.

Since it’s a sealed, indoor space, pests are not an issue, so pesticides are not needed and crops are free from outside contamination such as E.

Once again, science may be coming to our rescue (or at least prolonging our existential death rattle).

Controlled Environment Agriculture (CEA), also known as Vertical Farming involves creating fully managed indoor environments for the growing of plants, where everything, including water, temperature, humidity levels, ventilation, light and CO2 can be artificially provided and managed to maximise yield. CEA facilities represent sheltered, highly efficient ecosystems where plants grow under special LED lights combined with hydroponic, aeroponic or aquaponic systems providing water and nutrients. Heaters, coolers, dehumidifiers, humidifiers, ventilators and CO2 enrichment all regulate the environment. Vertical farms can grow crops year round, 24 hours per day and are unaffected by adverse weather conditions which cause crop instability in traditional farming. If it snows, the plants won’t mind... unless the workers can’t get the car out the drive to come in and press the buttons. On that note, reliance on manual labour will likely decrease with CEA as automation removes a lot of the grunt work inherent to agriculture.

Crucially, this reduction in water consumption comes with a huge increase in yield. As crops are stacked vertically in growing towers, the diminished physical footprint of CEA, combined with highly controlled growth can see a one acre vertical farm yield equivalent to 30 acres of a traditional farm, depending on the crops being grown. Research into the metrics of lettuce growth for example revealed a 20-fold per acre increase in production when comparing vertical to traditional outdoor farming. This was achieved using just 5% of the water per ton of lettuce.

With produce grown in the vicinity where it’s actually needed, the cost both literal and environmental of transport and storage could also plummet, whilst the need for environmentally Vertical Farming involves creating fully managed indoor environments for the growing of plants, where everything (...) can be artificially provided and managed to maximise yield.

Since a vertical farm can exist almost anywhere, provided the logistics of its construction and maintenance can be satisfied, even urban centres can sustain high crop yields and consequently, habitat destruction decreases.

Tamari

COSTA CUISINE

Tamari is the liquid that is created as a byproduct of making miso, a paste made from fermented soybeans only. While still relatively salty in taste, it typically contains less sodium than soy sauce. Tamari is usually smoother and richer in flavour than soy sauce, with the benefit of being made without any additives or preservatives.

MAKE TIME FOR 100

The difference between tamari and soy sauce is that soy sauce is the liquid that is formed from the process of brewing soy beans, wheat and salt together which is left to ferment. This mixture is then pressed and the liquid that is released is soy sauce.

1/2 cup gluten-free flour mix (or any type of flour will work)

Dating back to the 7th century AD when it was brought from China to Japan, it is most recognised as the gluten free version of soy sauce so for anyone with wheat allergies or gluten intolerances, tamari is a fantastic alternative.

One of my dearest friends, Soljee, is from South Korea, and I have spent quite a lot of time there. One of my favourite and quickest dishes to make is the Korean pancake.

INGREDIENTS

• 3 1/2 ounces asparagus spears (1/2 bunch), sliced lengthways

• 1 carrot, chopped into thin sticks

• 2 spring onions (scallions), chopped

• 1/4 cup tamari soy sauce

DIRECTIONS

Start off by mixing all the ingredients for the dressing in a small jar, pop the lid on, give it a shake and set aside. In a bowl, mix the flour, water and baking soda and set aside. Heat some oil in a frying pan (skillet) over medium heat. Add all the veggies and fry for 5 minutes until brown. Spread the veggies out evenly in the pan and pour over the batter until you have a big pancake. Cook for 5 minutes on each side until crispy and golden brown. Serve immediately, cut into slices, topped off with the spring onions, sesame seeds, coriander and the amazing dressing alongside.

• 1 tablespoon sesame oil

Korean Pancake with sliced roots and chilli sweet and sour tamari

• 1 teaspoon maple syrup

• black or white sesame seeds

Tamari is becoming more popular and sometimes can be found in the Asian sections of large supermarkets. If you can’t find it there, you should be able to buy it from your local health food store or Asian specialty store.

• juice of 1/2 lime

This month’s ingredient is tamari, one of my pantry staples and a great addition of flavour to so many dishes!

• olive oil, for frying

• 1/2 garlic clove, peeled and grated

A quick dish that is guaranteed to be your new favorite: this plant based recipe is crispy on the outside and filled with veggie goodness on the inside, it is wonderful dipped in the best tamari dressing ever!

• 1/2 leek, sliced lengthways

For the dressing:

I love to use tamari in dipping sauces, dressings, in noodle and stir fry dishes, it can be added to soups and stews to enhance the flavours and I especially like to use it when making my non-meatballz and plant based burgers. It gives a rich umami taste which many people say they often miss when giving up meat.

• 2/3 cup water

• coriander (cilantro), optional

Remove from heat and add to the aubergines.

I’m loving aubergines at the moment, and this simple aubergine stir fry has only the addition of lovely salad onions, noodles and a delicious and easy to make sauce. I encourage you to make sure that your aubergines are cooked through for long enough so that they are soft (not chewy!) as this makes all the difference to this dish. You can, of course, add any other vegetables you like to this dish if you have ingredients that need to be used up in your fridge. It’s a very versatile dish.

Add the salad onions to the pan with some more olive oil and a pinch of salt, and fry for about 1 minute on a very high heat.

For the Toppings: ½ small cucumber, sliced 1 lime, 1handfulhalvedfreshcoriandertspwhitesesameseeds

Cover the base of a large frying pan with olive oil and heat over mediumhigh heat. Add the aubergine slices in 1 layer and fry until browned on each side. Then add a dash of water to cover the base of the frying pan which will steam cook them, they are ready when they are nice and soft and the water has evaporated (this should take around 4-5 minutes). You may need to do this in 2 batches, or use 2 frying pans! Once done, remove the aubergine from the pan and set aside.

Meanwhile, add the noodles to a small pot of boiling water for aprox 2 minutes, so that they separate well, then drain.

Mix the sauce ingredients together in a bowl, then add this, along with the aubergine, salad onions & noodles to a frying pan and place over a high heat for a few minutes to warm through.

COSTA CUISINE

Divide between 2 serving bowls, then sprinkle with sesame seeds, and top with ½ lime, cucumber slices and coriander.
