Finally, we couldn’t finish without mentioning the tragic loss of TV presenter, Caroline Flack who took her own life last month. The former Love Island presenter had talent, looks, success and love. Or so it appeared. The shadow of her upcoming trial for assault on her boyfriend, Lewis Burton loomed and she felt that the whole world and future was swept from under her feet. Her death has resonated with men and women across the world and brought the subject of mental health issues and so-called online trolls to light. While we can all get swept up by the swirl of our busy lives, we often forget how important it is to just be kind. So, in the words of Caroline, if you can be anything, be kind.

orn on July 2nd 1990 Margot Elise Robbie was raised by her single mother, alongside her three siblings in Gold Coast hinterland. To make ends meet Margot worked three part time jobs alongside her schooling before moving to Melbourne at the age of 17 to begin acting professionally, a move that would end up being the start of an epic career.

Before making her name in Hollywood, Margot played Donna Freedman in the Australian TV soap opera, Neighbours; a fan favourite, she was nominated for multiple awards before her departure in 2010 to star in Pan Am alongside Christina Ricci. Sadly, the show only lasted one series and was cancelled despite positive reviews. Next Robbie joined the cast of Richard Curtis’ romantic comedy, About Time, alongside Domhnall Gleeson, Rachel McAdams and Bill Nighy. But it was her role as Naomi, Leonardo DiCaprio’s wife in Martin Scorsese’s fact based epic financial tale, The Wolf of Wall Street that caught the world’s attention and put Margot on the map. The Big Short, Focus with Will Smith and sci-fi drama Z for Zachariah followed, the latter received exceptional praise with Robbie being described as ‘one of the very best actresses in her age range today.’ At the end of the year Margot re-teamed with Smith for Suicide Squad where she played fan favourite Harley Quinn, the psycho psychiatrist who is a muse to Jared Leto’s Joker, a role she reprised this year in Birds of Prey and The Suicide Squad. In 2014 Margot met her husband British assistant director Tom Ackerley on set, two years later their married in a private

The Boston Globe described Robbie as, ‘taller, bigger than the tiny, fierce Harding, but she gets the athlete’s forward drive, and the anger that seemed to fuel the dynamo, and when life hands Tonya lemons, Robbie sets her jaw and bears down.” For her portrayal of the Olympian Margot was nominated for the Golden Globe and the Academy Award for Best Actress. Subsequently Time magazine named her as one of the 100 most influential people in the world and Forbes featured her on its 30 Under 30 list. Mary Queen of Scots alongside Saoirse Ronan, thriller Terminal and live-action film Peter Rabbit, an adaptation of the Beatrix Potter book series followed. In 2019 Forbes ranked Margot as the eighth highest-paid actress in the world, one of just three Australian superstars to make the list, with an annual income of 23.5 million dollars and The Hollywood Reporter listed her among the 100 most powerful people in entertainment. Margot began the decade producing the drama thriller film, Promising Young Woman starring Carey Mulligan before the release of Birds of Prey in 2020, a project Robbie had been working on since 2015 when she developed the idea of a Harley Quinn film. Later this year Robbie will reprise her role in The Suicide Squad and as Flopsy Rabbit in Peter Rabbit 2: The Runaway. She has committed to star in an adaptation of Matt Ruff’s thriller novel Bad Monkeys to portray Maid Marian in the upcoming biopic as well as thriller Ruin, a live action Barbie film co-written and directed by Greta Gerwig and David O. Russel’s unnamed drama alongside Christian Bale. Much more than a pretty face we are sure this glamorous starlet will continue to impress audiences everywhere with her big-screen performances for years to come.

ayden Panettiere’s boyfriend, Brian Hickerson, allegedly struck her with a closed fist on the right side of her face during an argument on Valentine’s Day. Brian was booked for domestic battery and interfering with a police officer during the arrest in Wyoming. This isn’t the first time this has happened as Brian was arrested for domestic violence following a drunken argument with the actress in 2019. The TV star, who has a daughter Kaya, who lives in the Ukraine with her ex fiancé Wladimir Klitschko, is a cause for concern for her friends and family who feel Brian is isolating her. A close source shared that they fear she is ‘in danger with Brian, add impairment issues from drinking too much and it will have a tragic outcome if she continues the relationship.’

alentine’s Day was not as expected for pop star Harry Styles after he was threatened at knifepoint for cash. The former One Direction singer was on a night out in Hampstead in London when he was confronted by a man who threatened him. The robber pulled out a knife and demanded cash. Harry acted quickly handing over the cash and luckily escaped unharmed. A source shared, “He actually played it pretty cool, quickly giving the assailant cash, keeping himself and the guy calm and getting the situation over with. Understandably thought it left him very shaken up afterwards.” Stay safe Harry!

ophie Turner and Joe Jonas, who married last year are now expecting a baby. Pregnancy rumours have been floating around the couple for a few months, but it is now official! This will be the couple’s first child together, so congrats are definitely in order for the newlyweds. “The couple is keeping things very hush hush but their friends and family are super excited for them,” revealed a source close to the couple.

ast month the news broke that TV presenter, Caroline Flack, was found dead in her London home. It has since been revealed the cause of death was suicide by hanging. She was 40 years old. Her family released a statement to the UK’s Press Association stating, “We can confirm that our Caroline passed away today on the 15th of February. We would ask that the press respect the privacy of the family at this difficult time.”

It is believed Flack took her own life shortly after her friend Lou Teasdale, who had stayed with her on the Friday night, left to go to the shops, after Caroline persuaded her she was ok. Her body was discovered by her father, Ian, who Lou called when she couldn’t gain access to the flat.

FOLLOWING HER DEATH CAROLINE’S FAMILY PUBLISHED A STATEMENT FROM THE LOVE ISLAND STAR, WHICH SHE HAD BEEN ADVISED NOT TO POST DUE TO BEING ON TRIAL FOR ASSAULTING HER BOYFRIEND, LEWIS BURTON. Flack wrote, ‘For a lot of people, being arrested for common assault is an extreme way to have some sort of spiritual awakening but for me it’s become the normal. ‘I’ve been pressing the snooze button on many stresses in my life – for my whole life. I’ve accepted shame and toxic opinions on my life for over 10 years and yet told myself it’s all part of my job. No complaining. ‘The problem with brushing things under the carpet is …. they are still there and one day someone is going to lift that carpet up and all you are going to feel is shame and embarrassment. ‘On December the 12th 2019 I was arrested for common assault on my boyfriend … Within 24 hours my whole world and

future was swept from under my feet and all the walls that I had taken so long to build around me, collapsed. I am suddenly on a different kind of stage and everyone is watching it happen. ‘I have always taken responsibility for what happened that night. Even on the night. But the truth is …. It was an accident. ‘I’ve been having some sort of emotional breakdown for a very long time. But I am NOT a domestic abuser. We had an argument and an accident happened. An accident. The blood that someone SOLD to a newspaper was MY blood and that was something very sad and very personal. ‘The reason I am talking today is because my family can’t take anymore. I’ve lost my job. My home. My ability to speak. And the truth has been taken out of my hands and used as entertainment. ‘I can’t spend every day hidden away being told not to say or speak to anyone. I’m so sorry to my family for what I have brought upon them

and for what my friends have had to go through. ‘I’m not thinking about ‘how I’m going to get my career back. I’m thinking about how I’m going to get mine and my family’s life back. I can’t say anymore than that.’ Rest in peace Caroline and remember, in a world where you can be anything,

He has pushed the boundaries yet again – both musically and lyrically. And once again proving that as a songwriter and singer, he is in his own category. Alicia Keys upcoming album, ALICIA arrives March 20 via RCA. The album features the previously released single, Underdog. The heartfelt anthem sees Alicia tell stories of humility and humanity with writing contributions from Ed Sheeran in the liner notes. The visual was directed by Wendy Morgan and follows Keys recent “Time Machine” video featuring a Tierra Whack appearance and her “Show Me Love” Remix with Miguel and 21 Savage. The album announcement was made alongside dates for Keys’ 2020 tour.

Actress and singer, Mandy Moore is releasing her first collection in a decade. The title track is a song that has become, ‘emblematic of the journey she’s been through in the past decade, what it took to get to the point of re-embracing this part of her life, and the expectations therein.’ The 10-track album was recorded live-totape with a full band in the same studio in L.A and produced by long term collaborator Mike Viola with husband Taylor Goldsmith prominently featured alongside former Riley Kiley member Jason Boesel.

e live in a consumer society where people have come to expect fast and efficient service and gadgets with lots of features that work for a time before being replaced by the next best thing. This throwaway mentality means the junk pile created by old electronics is only growing, bolstered by cheaply made products designed with built-in obsolescence to keep the factories going. As many people have also come to realise, this is a very wasteful system that is certainly not good for the planet. However, things were not always this way, and before the heyday of the transistor in the 1960s audio amplifiers used vacuum tubes or valves as they are also known, as their motive force.

This is bespoke audio at its finest and ownership of a TMS valve amplifier thus comes with a great back-story that will be a talking point when friends visit.

Unlike modern solid-state circuit boards, which are useless once the components are ‘fried’ the valves in a traditional amplifier can simply be changed when they wear out or fail. Other parts can also be replaced ad infinitum, which means you are investing in an amplifier for life, or until you upgrade to a better or more powerful one. As we noted above, transistors began to take over in the 1960s. They are certainly cheaper to make, but the early ones sounded pretty awful. While valve amplifiers are characterised by their smooth and musical sounds, early

transistor units sounded bright and clinical by comparison, and were tiring to listen to over time. The irony of course is that transistor units always measure better on test instruments, and their proponents used this presumed superior accuracy as a marketing tool. While valve amplifiers measure comparatively worse in terms of total harmonic distortion and some other parameters they create a more realistic musical image with a greater sense of three dimensional air and space along with sweeter treble. What you have to remember though is that our aim is to listen to music, not watch square waves being reproduced perfectly on an oscilloscope!

However, over the years improvements in the design of valve amplifiers have mitigated this to a large extent and current valve amplifiers matched to the right speakers can deliver fast, dynamic and breathtakingly realistic insights into recorded music that will have you captivated for hours. While transistor or solid-state electronics took over the industry, the valve amplifier never went away. Rather, its more euphonically pleasing music reproduction qualities saw it become the doyen of enthusiasts, whose passion drove the continuous development of separate high-end pre- and power amplifiers as well as the integrated units that went before.

ou’ve probably heard the word algorithm mentioned and you may have a vague sense that an algorithm’s something “that, errr… does something” on your computer or smartphone. You’d also be forgiven if you’d never heard of one or had no idea what it did. Despite the fact they basically facilitate operation of the modern world for us, algorithms are the relatively unsung mathematical heroes whose often genius-level design and implementation allow the average person not to give a second thought to how extraordinary it is we can click on a picture of food, clothing or furniture on a screen and have that exact item delivered to our door (or shoved in a bush if we’re out) within 24 hours. Big companies don’t want us thinking about the complexities that go into the provision of our goods and services - it makes it all too overwhelming and unsexy. They know we just want stuff we like, we want it to work right and we want it NOW, and without the help of algorithms, that simply wouldn’t be possible. An algorithm is a process or set of rules designed to be followed in calculations or other problem-solving operations. Algorithms convert input data to output data. They need not be super complex, though they frequently are. Technically, even a dinner recipe or instructions for laundering clothes through a washing machine are examples of algorithms; properly defined step by step procedures which process inputs - food ingredients or dirty clothes and detergent - into outputs - a tasty lasagna, or clean but annoyingly creased up t-shirts and inexplicably missing socks….

ALGORITHMS CONVERT INPUT DATA TO OUTPUT DATA. THEY NEED NOT BE SUPER COMPLEX, THOUGH THEY FREQUENTLY ARE. One of the oldest algorithms in use is that of the ancient Greek mathematician Euclid who was rocking the whole one-name vibe some 300 years before Jesus made it cool. Euclid’s algorithm

was an efficient procedural method for calculating the greatest common divisor of two numbers, that is the largest number which divides exactly into both without leaving a remainder. To this day, computations using Euclid’s Algorithm constitute part of the cryptographic protocols which secure internet connections… so you can thank him next time you stay in a hotel and can’t get porn to work over the WIFI.

THEY KNOW WE JUST WANT STUFF WE LIKE, WE WANT IT TO WORK RIGHT AND WE WANT IT NOW, AND WITHOUT THE HELP OF ALGORITHMS, THAT SIMPLY WOULDN’T BE POSSIBLE. Modern computing permits a level of data crunching we couldn’t dream of achieving manually. Via myriad algorithms embedded in code, we outsource to super fast processors the calculations which govern so many aspects of our lives. The best algorithms are those which tap into the underlying mathematical structures hiding within a problem and subsequently offer efficient solutions in the quickest manner. Computers are effectively machines performing repetitive tasks at audacious speeds but through the complex implementation and augmentation of algorithms, they can produce results which practically suggest intelligence, despite remaining different combinations of 1’s and 0’s. When you point your smartphone camera at a friend, the little coloured box which follows their head about is the instantly-realised result of algorithms which rapidly scan clusters of pixels for blocks of contrast we perceive as the familiar features of a face. The result is your friend’s mug is in focus as opposed to the tree behind them….. all ready for the next algorithm to spring into action as Facebook kindly offers to tag them for you. One of the most influential algorithms of modern times is PageRank (PR). Created at Stanford University in 1996 by Larry page and Sergey Brin, the first, defining algorithm used by Google remains at the heart of their $280 billion dollar company (If you don’t know who Google are, ask Jeeves…. then kill yourself).

PageRank, a link-analysis algorithm, assigns “importance” to web pages by counting the number and quality of links to other pages. The underlying assumption is that more important websites will receive more links from other important websites, consequently appearing higher on Google search results. Whilst some might argue this creates a self-perpetuating popularity clique and subsequent consumer herd mentality, the algorithm is incredibly reactive, constantly shifting with the (perceived) fortunes of every single online page. As such, it’s proven wildly successful in giving us the type of highly relevant results we at least think we’re after when we venture online. The proof is in the highly successful pudding, with some 3.5 billion Google searches committed every day. Dating apps apply matching formulas to link you with compatible partners. Research suggests data and algorithms do a better job of creating stable matches then Sambuca and a chat up line. In 2012, economists Lloyd Shapley and Alvin Roth won the Nobel Prize for their “theory of stable allocations and the practice of market design”, creating matching algorithms now implemented highly effectively to stably match donor organs with patients, college applicants with schools, and in the example which convinced the Nobel board, even husbands with wives. Giants like Netflix use algorithms to analyse your viewing habits and refine the content they suggest for you. Spotify, the world’s most popular music streaming app implements powerful algorithms and machine learning to tailor users’ interfaces and curate playlists – Users spend approx half their time on the app listening to suggested content. Spotify don’t just proffer songs listened to by other users with similar tastes, their tech scours online text to find artists and content mentioned alongside the artists you follow. They even use algorithms to analyse the composition of the music you love so they know what makes you tick... next up, music written by Spotify just for you... Algorithms are the very framework underpinning our modern existence. So often, we only notice them when they seem to go awry – that ad your mum keeps seeing for erectile dysfunction or the plastic toilet-brush going for a

ARE WE STILL IN CONTROL OR BLINDLY TRUSTING THESE ALGORITHMICALLYEMBOLDENED MACHINES... ? Computers long ago left us in the dust when performing the specific calculations we assign them, but now machine-learned algorithms can write their own code, even their creators admit they’re struggling to keep up with the results. Are we still in control or blindly trusting these algorithmically-emboldened machines not to go all Skynet on us to balance the books - for anyone too young to remember Terminator 2, just replace the word Skynet with Thanos and you’ll get the gist. Of course, like anything, the onus is on us humans to apply our sciences responsibly lest they evolve to bite us in the arse....

To School or Not To School is that even a question?

Since writing my last piece on the concept of ‘unschooling’, and the possibility it might be an interesting alternative to traditional schooling, I have been bombarded with questions about how it works. How can children educate themselves? How will they fit into the system later in life? How do they socialise? Victoria Wood is a freelance writer and mother of three based in the south of Spain. Life for her is primarily based around a healthy diet, lifestyle and educating herself and those around her how to live well. Victoria has been a writer for the past twenty years and her work includes an environmental column, journalistic editorials and social media management. She is also a proofreader and editor, and is currently working on her first novel.

I have researched further into the topic and listened to many a podcast from the viewpoint of people who were “unschooled”, or who put this into practice as parents, and their experience of it. The parents’ stance came from one that begins when a child is in infancy and naturally begins their learning journey. They learn to speak, to eat, to walk, to interact, and then begin to show interest in particular things they come into contact with. If a child shows that they have an interest in trains for example, what as parents would we automatically do? We naturally embrace that interest and further it by perhaps taking them on a real train, taking them to see trains, looking at books about trains, perhaps buying a toy train, or looking online at information on them. We allow them to nurture their personal learning patterns by way of their own interests and, as parents, help to feed their enthusiasm.

Then all of a sudden they reach “school age”, whereby they immediately must sit still, obey orders, listen and do as they are told, and learn about the same things as everyone else in the class. Discipline is important I hear you say…well is it possible that a child who disciplines themselves is far more learned on that subject than one who is forced to do as they don’t please?

Some children thrive in a schooling environment, but, as it stands, the percentage of those who do not is far higher. So there is undoubtedly a flaw in the system. Those who stop being interested in learning or who become despondent or lackadaisical are labelled, and sometimes as far as diagnosed, with a learning difficulty or disability. Did they suffer this same detriment when they were toddlers learning about birds or airplanes in the sky? Did they switch off and look utterly bored when a lion or

tiger came on TV? Or doing a puzzle? Or answering questions about their favourite toys? It is lost to schooling that children are individual and are fully capable of learning by themselves, the opposite is so heavily ingrained in our society and culture that even the most alternative of us worry that it couldn’t possibly be right to not put a child in school. My personal experience of school was a good one, I loved it, I loved homework wanted more of it, I thrived at exam time, I loved learning and found it the most natural and easy thing in the world. But, I was one of the very few. None of my friends felt the same way, so much so that I disguised my love for school for fear of being the odd one out. There is such a small ratio of people that function effectively within the current system, and the fact that I was one of them has made it very difficult for me to look outside of the proverbial box and accept that the system may not be right for my own children. I have one, like me who would thrive in it, and two that absolutely would not. I’m not trying to change people’s minds about how to educate their kids, I am just pointing out that there are alternatives, and those options may well be the ones that suit your children.

The other day I went outside to find my ten-year old son using a magnifying glass to carefully burn faces on to almonds! My other son in the meantime had looked up a parkour move called the ‘butterfly twist’ and was outside trying to master it himself. It just shows that they are uniquely inquisitive and having time and space to discover the world as they see it is a valuable lesson in itself. Unschooling in its essence is that in a nutshell (hopefully not one burnt by my son); the idea that children will continuously investigate the world through their own eyes and find

their own path through life. How will they ever get a job? I think if someone has spent the better part of their life studying botany and has grown their own vegetables, plants, knows about plant rotation, can tell you the structure of plants and all their functions - he or she would be more than qualified to attain a job within this field (excuse the pun). If a child develops a passion for the creative arts, this is a job in itself. They can decide what they wish to do in their own way and time, and then study to achieve a qualification if necessary. Their choices are not limited to which A levels or IB subjects they can take, they can create their own subjects and persistently find out more about that which they are passionate. Nothing beats passion when it comes to drive, inspiration, and motivation.

As I mentioned last month, my children are online schooling, which is still following a government-run curriculum but they manage their own timetable, upload their own homework, and are accountable for their own attendance. Accountability is something that isn’t, and can’t be, taught in schools. I am also intent on educating them about nutrition, natural health, environmental issues and actively having a positive impact on the planet, learning a musical instrument, learning languages, travelling, sports (those that aren’t necessarily included within schools, such as surfing, martial arts, swimming, etc.), and more however I am not going to force any of the above on them, they need to try things out and let me know what they want to do, more importantly what they enjoy doing. The very big positive part of online schooling is that they have time to be able to fit in so many more extracurricular activities. The only real part of school that they lack is the social aspect - the part where you interact with everyone else each day. Though I’m pretty content that while they are still young we get to choose who they

PRE BOOK YOUR AIRPORT TRANSFERS Before we begin let’s get the boring bits out of the way. When you have just 48 hours to experience Marbella, prearranged airport transfers are essential! Shared transfers can sometimes take hours, especially in peak season when the transfer is likely to have a number of different groups to drop off along the coast! With Marbella being one of the last stops save yourself the anxiety of the ‘that better not be our hotel or i’ll cry’ game and get dropped directly to your door.

While the daytime events are ridiculously popular in Marbella the nightlife is also amazing which is why we recommend not going in too hard on day one and saving yourself for the night!

We recommend taking advantage of that welldeserved holiday chill time and topping up your vitamin sea on one of our private yachts! Looking for something a little livelier? Add on drinks packages, Bellini bars, unlimited beers, cheeky butlers, bikini waitresses and more! DAY 1: EVENING

Drink Happy Thoughts Priority number one – food and always food. Marbella has so many great restaurants it can be overwhelming making that all important decision on where to eat. We personally LOVE La Sala, and after a chilled (or not so chilled) afternoon it’s the perfect pick for food and pre drinks. After La Sala head to Pangea for breath-taking views of the marina and a great open air atmosphere and if you’re still standing make your way to Mirage until the sun comes up!

EAT LATE Aim to eat for around 8.30 – 9pm as the pre bars tend to start getting busy from 10.30pm onwards and the clubs don’t close until 7am on weekends!

DAY 2: MORNING & AFTERNOON

So here we hit the ultimate Marbella dilemma. Kisstory at SISU Vs Candypants at Plaza Beach We’re afraid this one is on you guys as we are OBSESSED with both. The only way to slightly differentiate between the 2 is that SISU has a pool and Plaza Beach doesn’t and Plaza is a bigger venue – SISU is more crammed in. Either way you’re going to have the best day of your life.

RENT A SUNBED Get a bed or you will literally be stood up aaaaall day which is not ideal. Pre booking these venues is essential & many weekends sell out months in advance.

DAY 2: EVENING

If you have a super early flight be sure to pre book transfers and make sure the most organised / least intoxicated member of the group has their alarm set to round up the troops!

So, congrats if you’ve made it home before 7pm with both shoes. You now have 2 options – eat in or out. (Yes, you still have a million more bars to visit!)

I never would have guessed there would come a day when I could cook up a veggie burger and it would “bleed” like beef. I also never would have predicted that you could roll through the drive through at KFC and order a bucket of vegan fried “chicken” or have a vegan Whopper at Burger King so authentic that it would fool the most carnivorous omnivores. But, alas, here we are! The vegan “meat” market has absolutely exploded. No matter where you live, chances are that you can probably find some sort of veggie-based mock meat product in a supermarket or restaurant near where you live. And if you live in a more populated area, you can find everything from vegan bacon and smoked vegan cheese wheels to vegan goats cheese and vegan tuna fish. On a global scale, you can travel to pretty much any city across the world and find some form of plant-based alternative meat. Arguably, the two most popular vegan meat brands are currently Beyond Meat and Impossible Foods. They have completely taken the meat industry by storm by offering their plant products in restaurants and supermarkets nationwide. Aldi, El Corte Ingles and even local restaurant group La Sala offer Beyond Meat products now. In many cases, the food chains’ sales have spiked as a result of incorporating vegan options into their menus.

But, the issue with the rise in popularity of faux meat products is that there is now a race to develop as many as possible in order to capitalize on the global diet shift. This can lead to a lack of much thought and even what can seem to be an intentional disregard of the quality of ingredients going into these products. While the plant version of whatever product you are eating is likely healthier than the animal meat version, it is crucial to remember that “healthier” is not the same thing as “healthy.” Many veggie burgers and meat alternative products on the market are highly processed, packed with sodium and contain natural flavours (which can pretty much mean anything), saturated fats and refined oils. If we get down to the nitty gritty of the most commonly used plant-based meat ingredients, here are the ones that raise concern.

Soy Protein

Pea Protein

This is the base for most of the products produced by brands like Impossible Foods, Gardein and Boca.

This is the foundation of burgers developed by popular brands like Beyond Meat and Dr. Praeger’s.

THE GOOD: The upside of soy-based products is that they are typically high in iron. For example, the Impossible Burger offers 25% of the Recommended Daily Amount (or RDA) of iron, which is more than the average beef burger. Boca and Gardein burgers rank lower in iron than the Impossible Burger, but they still contain a significant amount of the critical nutrient, coming in at 10% of the RDA for iron.

THE GOOD: The positive aspect about pea protein is that the majority of burgers that include it as their base are nonGMO. While pea protein does not provide the full set of benefits that peas in their natural state offer, it is still a great source of iron, contains all 9 essential amino acids, and it is one of the most easily digestible forms of protein available. This is the main reasons why I suggest the Beyond Meat burger over the Impossible Burger.

THE BAD: Unless noted otherwise, most companies use GMO soy, which is not good for our bodies or brains. The Impossible Burger uses GMO soy and it recently tested 11 times higher than Beyond Meat for glyphosate (the primary active ingredient in Round Up Weed Killer – yikes!). Be sure to always look for the Certified NonGMO label whenever you purchase soy products. Many soy-based products are loaded with other unnecessary additives as well.

Seitan

THE BAD: Some pea protein-based burgers contain refined oils. For example, the Beyond Burger contains refined coconut oil and canola oil. Many vegan meat products that contain pea protein also contain “natural flavors,” which you already know I am not a fan of.

Grain

(AKA Vital Wheat Gluten) Vital Wheat Gluten is the main ingredient in some of the burgers developed by brands like Sweet Earth and Field Roast. THE GOOD: Some products that include seitan as the base, such as Sweet Earth’s burger, contain almost entirely organic ingredients. THE BAD: As you have probably already guessed, these products contain gluten. Even beyond those who have Celiac or gluten sensitivity, I am not a fan of the ingredient. In general, my clients feel better, suffer from fewer digestive issues, and see their energy improve through gluten elimination. Most of these seitan burgers also contain refined oils, so they are a pass for me.

In closing, are plantbased meat products actually better for us?

The simple answer is

YES, in general

However, I still strongly encourage all of my clients to read the ingredient lists of all of the products that they are considering purchasing and avoiding foods that contain GMOs, refined oils, large amounts of sodium or saturated fat, and other unnecessary additives like “natural flavors.” Always keep in mind that even though a product may not contain animal-derived ingredients, it does not automatically make it a healthy choice. When in doubt, opt for whole food, plant-based, close-to-theearth options.

Brands such as Amy’s and Hillary’s use a grain like rice or a combination of multiple grains as the base for their burgers. THE GOOD:Burgers developed by both of the brands mentioned above contain ingredients that are almost all organic. THE BAD: There have been reports popping up for the last couple of years that indicate high levels of the heavy metal arsenic in rice produced from different parts of the world. On top of that, I have found that a large number of grain-based burgers contain unnecessary fillers similar to the ones found in the various other vegan burgers that I mentioned along with substances like vegetable and guar gum and soy lecithin.


So good, no one knows!

BRIGHT’S MOTTO IS ‘TO IMPROVE THE QUALITY OF LIFE T H R O U G H D E S I G N .’ In Europe there are only 25,000 certified PassiveHaus homes built under their strict standards of sustainability and energy efficiency, 101 of them are in Spain, of which Villa Alcuzcuz is the only one in the Marbella area. PassiveHaus was developed in the 1980’s in Germany in order to build houses with minimum energy consumption, and if at all possible, null consumption. ‘Passive Housing’ does not use contaminating energy methods, such as burning fuel, to produce and create a comfortable room temperature. Thus, this type of construction discards the usual cooling or heating mechanisms and yet manages to maintain an internal temperature of around 20ºC or 21ºC throughout the year. Over the course of a year, a Passive House consumes at most the equivalent of 1.5 litres of diesel or 1.5 m3 of natural gas (15kWh) to heat or cool each square meter of living space. This figure represents a reduction of more than 75 percent in energy consumption for air conditioning spaces, compared to the consumption in a typical building, while a new conventional building requires 6 to 10 (or even more) litres of diesel fuel per year and square meter of living space, depending on the quality and location of the building.

Villa Alcuzcuz is the first large, luxury home that respects the environment and is built in accordance with the Passive House Regulations and Standards and, in addition, stands out for having exquisite design that is arranged around a large central glass living space (with windows 6.5m high, something unprecedented in this type of construction) with privileged views of the Mediterranean Sea and the Strait of Gibraltar. Along with the Passive House building standards, Villa Alcuzcuz uses an aerothermal ventilation system and solar panels for water supply, underfloor heating and the LED lighting system. The design is also adapted to the plot, orienting the house to the south to take

advantage of southern Spain’s mild climate. Thus, the terraces are designed as large awnings that protect the house, giving shade inside and allowing heat to enter during the winter. Bright and UDesign took on the challenge of designing a residential villa where they could show that luxury and acclimatisation of large spaces (1,323 m2) are not at odds with sustainability and they achieved just that, and more.

The combination of transverse engine and front-wheeldrive under the Golf’s angular skin was not a new concept, having been pioneered by Alec Issigonis for the redoubtable BMC Mini of 1959. But this spacesaving drivetrain philosophy in a much larger hatchback with folding rear seats created a small family car with unprecedented versatility. While the compact hatchback segment went on to become the most popular car genre ever after the SUV, the design of the original Golf has stood the test of time well. Four and a half decades and 35 million sales later, its classic proportions, lines and detailing still look right from every angle. Unlike Toyota’s Corolla, which frequently re-invents its appearance and remains a Corolla in name only, VW has scrupulously maintained the Golf family resemblance across the generations, even though the car has grown in size over the years. This slow burn built around strong and consistent family values has enabled VW to not just build a loyal and enthusiastic customer base but also nurture an almost cult following for their staple model line. No surprise then that the brand new Mk 8 that arrives in European showrooms in March is instantly identifiable as a Golf. The rain was falling from a grey sky and the weather forecast threatened even more precipitation for the following day. It felt more like England than Portugal in late November for sure, and our mood was not improved when we learned that these were the only two days of rain to afflict the Porto region that week.

Bright colours look radiant in sunshine and they also work well in gloomy light. Picking the yellow Golf 2.0TDI for our first drive under leaden skies was thus a no brainer. An equally good reason was the popularity of the diesel powered Golf with European buyers.

If the exterior is familiar the revolutionary cabin is the biggest sea change ever seen between the interior design of one Golf generation and the next. The driving position is familiar Golf, which means upright but comfortable, with good all round visibility and a fine range of seat and steering wheel adjustability. But beyond that all the cabin hardware and software is brand spanking new. For starters the dashboard is deeper than usual to accommodate the optional Head-Up Display, the first time this driver aid has ever been offered on a Golf. A full-length air outlet strip like that on the Audi A4 separates the top and bottom halves of the dashboard. Using these three thinner visual elements in place of two thicker ones is the key to an interior that appears wider and more spacious even if the tape measure shows increases of mere millimetres. This sense of greater width is further enhanced by the line of the dashboard top continuing into the top rolls of the front doors. At night the variable colour mood lighting across the dashboard and door trims further underpins this linearity. Another major departure from past practice is the removal of the traditional vertical centre console element, which again allows the dashboard elements to emphasise unbroken horizontality. The centre console now starts under the dashboard with a storage compartment containing an induction phone charging panel and a pair of USB 3 ports. Aft of this you will find either the gear lever for the manual six-speed, or the much shrunken selector lever for the sevenspeed DSG twin-clutch auto that is part of the new shift-by-wire system. A pair of cup holders sits between the gearshift and the central armrest. The small DSG lever is reminiscent of how Porsche has shrunken its controller on the new 992 Carrera, the rationale being that you use the lever to select D, N, R and P functions, with manual ratio selection carried out via the steering wheel mounted paddles.

Within the now even more upmarket aura of the new Golf the instrument pack and infotainment functions are a clean break with the past, this being the first time that Golf instruments are totally digital. In this case the instrument pack display is 10.25 inches, while the standard infotainment system has an 8.25-inch screen. The optional upgrade system provides the 10.25-inch ‘Digital Cockpit’ with one of the two possible 10.0inch screens to make up the ‘Innovision Cockpit’. Ironically one of the downsides of these big touchscreens is the fact that you have to ‘touch’ them. The fingerprints that are clearly visible when the screen is deactivated are annoying to most people, even those without OCD tendencies. Thus, one of the new features that we like is the small buttons with slide and swipe functions placed on the ledge under the infotainment screen. These allow you to control the touchscreen function using minimal interaction with the screen itself. Touch operation is the theme running throughout the cabin, with the optional sunroof operated by a touch button in the roof console.

In the past it has sometimes been the case that an owner laments not ordering a particular feature, and certainly this can be the case when buying a used car. That situation has been overcome with the ‘retrospectively customisable’ feature of the new Golf that allows electronic based systems to not just be updated but also upgraded. Thus features like ACC Adaptive Cruise Control, Light Assist main beam control, navigation system, AppConnect, Wi-Fi hotspot and online-based voice control are some of the features that can be retrospectively activated by your local dealer. Operating the new touch screens is a fairly logical affair, but there were a couple of times when finding a particular function was not as easy as we would have liked. Activating the seat heating was straight-forward but when it came to demisting the windows the relevant had button greyed out on the screen and we had to pull over and dig deeper into the menu.

Interestingly the glitch that led up us to resort to the screen menu was the failure of the voice-activated system to understand to our request to demist the windows. In this respect the voice recognition software is not yet as convincing as the AI driven algorithms used by the Mercedes MBUX system.

The 1,968cc TDI motor delivers 150hp from 3,500-4,000rpm, underpinned by a healthy 400Nm of torque between 1,7503,000rpm. Paired with the 7-speed DSG twin-clutch transmission the diesel records a rapid 8.8 sec for the 0-100km/h sprint and tops out at 223 km/h. Once the engine is warmed through any diesel clatter fades into the background and the strong mid-range torque makes normal driving stress-free. You don’t need to use many revs to keep up a decent pace across country and this is reflected in the miserly fuel consumption. However, it was the petrol 1.5 TSI we drove on the second day that really engaged us as a total package. Its smooth and free-revving 1,498cc turbocharged petrol

engine delivers 150hp at 5,000-6,000rpm, with 250Nm of torque peaking from 1,500-3,500rpm. Despite its greater size and weight the 7-speed DSG equipped 1.5 TSI easily matches the 1985 Mk 2 Golf GTI 16v’s 8.5 sec sprint to 100km/h, and decisively beats it for top speed with a 224km/h Vmax. The aerodynamic drag coefficient has been neatly trimmed from the Mk. 7’s 0.3 to 0.275 with a lot of work also done to make the car quieter at cruise. That proved to be the case on the stretches of motorway where the new Golf just hums along at 120km/h on a light throttle in seventh gear. In fact cruising at 140km/h or even 160km/h on the autobahn feels quite natural thanks to the tall gearing and improved high speed stability in cross winds. As before all Golf models use McPherson strut front suspension, and the base 130hp Golf 1.5 TSI manual six-speed pairs this with a torsion beam rear axle whose roots are in the design used by the early generation Golfs. Crossing the 150hp threshold qualifies you for the more sophisticated multi-link independent rear suspension, so both the 2.0 TDI and 1.5 TSI we tested feature the superior rear axle arrangement. Suspension settings and electronic helpers apart the fundamental weight distribution of a car still makes a difference to the way it handles and steers. So as good as the 2.0 TDI is when you move the responsive steering off centre the smaller, lighter all-alloy 1.5 TSI petrol engine benefits from having 25-30kg less over its front wheels.

The difference comes across loud and clear both through the steering and your seat of the pants the moment you start to attack a twisty road. This light bulb moment tells you the chassis engineers have done an outstanding job on both the electric power steering and the frontto-rear axle calibration. I set up an interview with the chassis engineer and found myself face-to-face with Karsten Schebsdat, whom I last met on the launch of the Porsche 997 GT3 RS nearly a decade ago. Engineers often move between car companies, some within the same group, some not. Enthusiasts will know Karsten Schebsdat as the man responsible for the fine chassis of the original Ford Focus of 1998, the car that some say, “democratised good ride and handling in compact hatchbacks.” Karsten then went on to work at Porsche’s GT division at Weissach where we first met. A few years ago he moved north again to Wolfsburg where his enthusiasm for fine handling cars was most recently put to good use fettling the chassis of the Golf Mk.8. VW produced a short video of their Pikes Peak winning driver, Romain Dumas comparing equivalent Golf Mk.7 and Mk. 8 models on a short slalom. The footage shows the new car with the ghost of the old one superimposed on it for comparison.

While the basic suspension hardware is very similar we changed a few components and performed a lot of fine tuning on the suspension elastokinematics and steering,” Karsten explained. “The basic steering system’s ratio has been quickened slightly and is now 14.6:1 compared to 15.0:1 for the Mk.7. The variable system starts with 14.1 just off centre and goes down to 9.0:1 on lock. We also fine-tuned the power steering control software to reduce the response time between steering input and the reaction at the wheels.”

The Mk. 8 is already ahead after the first cone and by the end of the slalom it has pulled out a near two car lead. Exhibiting clear improvements in agility, neutrality, linearity and precision, the new model recorded 9.24 sec, a yawning 0.91 sec, or about 10% faster than its predecessor. More than the objective stopwatch superiority is the fact that the video shows how much neater the new car is in each direction change. Romain visibly and consistently shaves each cone closer in the Mk. 8, the Mk.7 tending to run a bit wider at the front and visibly less tidy at the rear.

Turning into bends enthusiastically but with reassuring stability even on wet roads, this is a car whose handling is both entertaining and trustworthy.

“The front suspension control arm bushes are now stiffer laterally and softer longitudinally for more precise handling with better bump absorption,” he continued. “The locating points to which the control arms are fixed on the body-in-white are the same but they have been strengthened as have the anti-roll bar mounting points.” Cars with the optional Dynamic Chassis Control (DCC) package have cast aluminium arms, which are stiffer and 31 grams lighter than the normal steel ones. DCC cars also have the alloy front sub-frame from the Mk 7 GTI Clubsport, which is a completely different shape from the steel component even though it shares the same mounting points. The latest version of the multi-link rear axle has modified control arm bushes aimed at increasing the rear axle understeer slightly to balance out the faster turn-in response of the revised front axle. In terms of numbers, where the Mk.7 needs 61° of steering lock to navigate the steady state cornering circle at 1.0 g the Mk. 8 requires just 55°. This equates to a 10% lower steering angle at the maximum grip level with tyre pressures of 2.5 bar all round. Work to improve the ride and handling characteristics of the dampers centres around the valves, which now open more smoothly and more precisely.This improves the cars low speed secondary ride over small, high frequency bumps. The collective result of all this work is a car whose suspension performance envelope has been extended at both ends to make it ride better in Comfort mode and more responsive in Sport mode at the other end of the scale. Turn-in is faster and more accurate, and because the rear now follows the front within a narrower time response window the car feels more allof-a-piece. “The trick is to achieve this without making the car subjectively nervous,” said Karsten. “It was also our goal to ensure that its characteristic velocity, i.e. the linearity of its handling once you exceed the limits of mechanical grip remain fairly linear so there are no nasty surprises if you overdo it.” Of course should you actually manage to defy the laws of physics the electronic safety systems are there to help you.

As we pointed the Golf Mk.8’s sleek nose towards Porto Airport, the clouds began to part with patches of blue sky appearing ever more frequently. On the slowly drying mountain roads the tarmac was bone dry in places, retaining a slight sheen of the overnight rain in others. Front-wheel-drive cars will usually let go at the front end first in damp conditions as their nose-heavy weight distribution encourage the tyre slip angle to march right up to the limits of mechanical grip and into understeer city. The accomplished chassis of the new Golf treated the mixed and constantly changing coefficient of grip on this challenging road as grist for the mill. ast month the discovery of an entirely new species of Tyrannosaur was announced following two years of research into fossilised bones discovered in Canada. A close relative of dino poster child T-Rex, Thanatotheristes degrootorum measured approx 8m (26ft) from its tail to its bitey end and stalked the North American wilds some 80 million years ago, give or take 500 millennia (admittedly a large margin of error if you’re waiting on a bus but slightly less in paleontological terms). The second part of its name bearing witness to John de Groot, the hiker and palaeontology enthusiast who unearthed its jawbone in 2018, Thanatotheristes translates from Greek as “reaper of death”.... I mean, they were never going to call it the snuggle-bunny but REAPER OF DEATH is still a pretty incendiary moniker. It’s always possible their reputation unfairly belies a sensitive, introspective nature, but since no needlepoint or poetry survive from the period, scientists have chosen to assume Tyrannosaur were mainly concerned with running round tearing other animals to shreds. It remains to this day the quintessential apex predator. The Google listing for the word Tyrannosaurus contains the line: Eaten by: Tyrannosaurus

...probably tells you what you need to know. Of course it’s their ferocity, size and strangeness which make the many species of dinosaur such a captivating proposition to homo sapiens who never actually shared the planet with them... more’s the pity. Yesterday morning my son and I spent a solid two hours playing in the sand on Estepona beach with a crudely moulded plastic something-saurus we found in a charity shop toy basket back home in Brighton. He doesn’t care its poorly proportioned body and weird face looks like Godzilla boffed a koala

(Satan probably had a hand in that one...), it’s a goddamn DINOSAUR, it completely destroyed Batman’s sand-cave then went down the slide backwards and it’s the coolest thing ever!! His mum, who frequently hums the theme tune to Jurassic Park in her sleep can’t wait until he’s old enough for her to show him her most favouritest film of all time over and over. I hope his generation won’t be too jaded by increasingly elaborate video games and CGI overload to marvel at just how stupendous it is when that brachiosaur first looms onto screen (“They‘re moving in herds. They do move in herds”.) There’s so much wonder around us; so many bizarre and beautiful animals inhabiting the deepest oceans, densest jungles and tallest peaks and it’s a travesty that countless species go extinct each day with not a jot of recognition from the world at large – disappearing forever with nary a Twitter #RIP or sad face on Facebook. In 2019, amongst several other species, we officially lost forever Achatinella apexfulva, a type of Hawaiian tree snail, Boulenger’s speckled skink, a tiny lizard and the Cunning Silverside freshwater fish of Mexico. Though sad, especially if their demise was “manmade” as opposed to the result of a more natural form of selection, none of these critters would ever have been able to flatten Batman’s sand-cave or take Samuel L. Jackson’s arm off at the shoulder. It took more than deforestation and a few too many high-rises to remove dinosaurs from the map. 66 million years ago, the meteor which struck the earth in that not-so-cunning Silverside’s country of origin was the size of a mountain and travelling 40,000 mph. It hit with an estimated explosive yield of 100 trillion (enough then...) tons of TNT, creating a fireball travelling hundreds of miles in all directions faster than sound, followed by a tsunami some 1000 feet high, colossal earthquakes, planet-engulfing ashclouds, nuclear winter, oat-milk shortages etc etc. Beyond the immediate, near incomprehensible devastation, the

knock on ecological disruption saw off 80% of all life on Earth, the majority of dinosaurs included. Even by meteor standards, it was a real prick. At least it provided a fittingly epic curtain call for the greatest beasts to ever stalk the earth – the word dinosaur translates from the Greek as “terrible lizard” - they weren’t terrible, they were fucking AWESOME. Cockroaches are terrible. They survived.... course they did. Beyond all the toys, the countless books, the TV shows and even the priceless museum relics, to this day it has to be Spielberg’s classic film which best conveys the majesty, power and total flipping coolness of these beasts. As cinema-goers lost their minds that summer, we asked ourselves whether the science so simply yet compellingly presented was sound – could you just grab a mosquito from some sap, suck a bit of liquid dino out of it, inject it up a frog’s arse and grow yourself a triceratops?.... NO, was the resounding answer in 1993, but then in 1993, Canadian beret-wearer Snow rapped in Jamaican patois on one-hit wonder Informer and we all seemed to think that was ok, so what the hell did we know back then?! Surely now, with our advanced understanding of bio-technology, genomic science and the inappropriateness of kids singing “a licky boom boom down”, the wonders of Jurassic Park are achievable?.... ...Unfortunately, still no. For too many scientifically grounded reasons to detail before I run out of page, the least of which is the oldest DNA we’ve recovered is some 65 million years short of dino times, it’s simply not going to happen. The world will likely never again host so many beasts of such grandeur, at least not under environmental conditions which would allow us to stick around to witness. Though a bitter pill for the child in us all, we have to accept that dinosaurs, like Snow, had their time and now they’re gone.... ...except they’re not. The countless birds so many of us take for granted / keep as pets / spot / feed /....eat are direct descendants of dinosaurs – the only direct descendants still around. They might not be as big or scary or impressive but they’re still technically dinosaurs so next time a seagull nicks your chips while you shoo away its mate, don’t think “stupid gull”, think “clever girl”.

DIGITALTRAVELING Have we lost the art of travel, or mastered the art of not getting lost?

DO WE GET TO EXPERIENCE THE TRUE NATURE OF TRAVEL IF WE ALREADY HAVE ALL THE INFORMATION IN ADVANCE?

While my family and I were recently traveling through South East Asia, one thing that really hit home was that travel is so incredibly different to when we were gap year students strapping on a backpack and cluelessly wafting off around the globe. Back then you had to plan your trip in advance, you had to have tickets printed out, you needed to know where to be and when and things were somewhat

structured. If you lost your flight information it meant finding an internet cafe, or, if you’re slightly older, going to the actual airport or finding a phone box, to recover your itinerary. Flights were not so two-a-penny back then, missing one felt like an enormous and gut-wrenching mistake, not just from a financial point of view, but also because, well you just couldn’t do that. It was huge. Now it feels as though flights are like buses; there’ll be another one along in a minute. The obvious difference is the digital age, back then we didn’t have mobiles and laptops and iPads or anything else that falls under the ‘devices’ umbrella. We set off with a Lonely Planet guide and some big, wide-eyed ideas. You’d want to know where you were going to be staying if you were landing in Mumbai in the middle of the night,


DO WE GET TO EXPERIENCE THE TRUE NATURE OF TRAVEL IF WE ALREADY HAVE ALL THE INFORMATION IN ADVANCE? not hoping you’ll figure out how to negotiate chaos in another language resembling nothing you’ve ever seen or experienced before. No, you booked in advance and hoped you’d find a nice taxi driver to get you there, and not go via his favourite uncle twice removed’s place just in case you’d rather tend to his cockroaches than at the hostel you are hoping isn’t awful. Now, we look online at photographs, detailed information, square metre-age, personal reviews, and star ratings of every type under the sun before we decide on where to lay our heads, and we can cancel, upgrade, switch swap and change everything at the last minute should we change our minds. We don’t even have to go as far as booking too far in advance because we have access to everything that is available in a tenthousand kilometre radius and can decide nearer the time if we want to - on the taxi ride there if we like! We can decide to take a train and by the time we arrive at the station we have tickets booked and paid for, the hotel at the other end organised and a car to take us there. We can even purchase clothes, equipment and any other “necessities” online to be

waiting for us at the hotel. Yes, travel has changed. We noticed this vast difference so much when travelling through Asia (where the internet coverage is impeccable I must say) that we were able to monitor, track and visualise everything we were about to experience before we even got there. We could get in a taxi and track where we were going from the back seat to make sure we didn’t get ‘NewYork-Cabbed’ and driven round in circles (or blocks) to keep the metre clicking. There’s a lot less advantagetaking of tourists in this respect, but some of the mystery of travel can be lost. There are flip sides to all this digital versus blindfolded way of travelling - we get to be more spontaneous with access to all options at all times, but do we get to experience the true nature of travel if we already have all the information in advance? Trip Advisor and the like are encouraging restaurants and hotels to keep standards high, but do I really want to know whether Hans from Frankfurt enjoyed his Pad Thai enough to sway my decision as to whether I’ll go somewhere to eat tonight? Don’t you want to be able to stumble across an interesting little place that isn’t on the digital map, where mama is cooking up her traditional fare and only the locals go to eat? Don’t you want to walk into a homestay because you met someone while you were walking an off the beaten path trail and ran into the niece of a local family who love to show foreign folk around their farm and feed them? I do! The art of experience seems to be a little lost when you look at travel through a phone, however safety and spontaneity are such big pulls that it is difficult to avoid the temptation to quickly check something out online beforehand.

The way they get around it is to show the price of the most expensive room in that hotel, put a big red slash through that one and show you the cost of the room you’ve chosen next to it. Personally I’d rather get driven around in circles and taken to Great-Uncle Shwarmi’s place and give a little extra to those who need it than be swindled by a multimillion dollar company. Maybe that’s just me.

DON’T YOU WANT TO BE ABLE TO STUMBLE ACROSS AN INTERESTING LITTLE PLACE THAT ISN’T ON THE DIGITAL MAP, WHERE MAMA IS COOKING UP HER TRADITIONAL FARE AND ONLY THE LOCALS GO TO EAT?

It’s a tough call wether to claim to prefer to go out into the big wide world with the naivety of a backpacker or to set off with full knowledge of everything that you may come across and be prepared for it, no surprises. I guess somewhere in between is the best solution. Have an idea of where you’re going and when, be at liberty to be able to change this spontaneously, and at the same time be open to experience once you arrive, get around safely but also see the place for what it really is through your, own and the local people’s, eyes - not your phone.

And the ‘being taken advantage of as a tourist’ concept, well, it’ll never be completely lost - these days we are sucked in by the apps, the hotel discount offers, book now and save thousands on your deal, etc. etc. I quickly realised I was being subtly scammed when using a certain hotel booking app, it shouts out in big bold numbers that you are saving

As a chef, author and Instagrammer, the only interaction I really get with my followers and the people who cook my recipes is through my phone. I love retreat time because it means I get to meet the attendees and make an authentic connection we wouldn’t otherwise have through the phone screen, and they can get to know me, too. Hosting my retreats has been one of the most rewarding, fun parts of my job to date as I’m combining my cooking skills and my love of food and health that got me started in the first place and sharing that directly with other foodies like me! A lot of planning, preparation and execution goes into running retreats so when it all comes together in that final week and I can immerse myself in the experience with my guests, it really is special. 5:30 am. Unlike in London, when I am in Bali, I have no problems waking up early and I am often woken by the smell of incense from the ladies who come before sunrise to bless the house. I get dressed, and pop down to the kitchen to make sure there are teas and smoothies for everyone before they go to their morning sound healing session. 8:00 am Breakfast. Made by me while everyone is in their morning class, our first meal of the day always includes a delicious choice of organic, local fare. This morning we tuck into colourful fruits and a traditional black rice coconut bowl topped with caramelised banana, coconut flakes and fresh coconut cream. 9:00 - 10:00 am Free time for guests. While they treat themselves to

Day 1 massages and spa treatments or just enjoy some nourishing time to themselves chilling by the pools, I spend this time catching up with everyone and answering any questions they have. 11:00 Workshop time! Today’s theme is Gut Health and I am teaching everybody how we can improve the health of our guts with plant-based foods. We learn to cook tasty recipes that are easy to replicate at home following the take-home recipe cards. I know that being back at home and in an everyday routine is a very different vibe from being on a retreat and can be a hurdle on people’s wellness journeys, so it’s important to me to make it as easy as possible for my guests to maintain their new healthy habits and motivation once the retreat week is over.

12:30 Lunch prep. Each day, a guest joins me in the kitchen to help out with meal preparations. This is one of my favourite traditions because it means I can share my tips and tricks to healthy eating in a practical and personal way, and have some fun! My guest helper and I prep, cook and serve lunch together whilst having a lovely chat, lots of giggles, and sneaking in some cheeky taste testing! 15:00 After lunch I spend some time with my guests to find out how they’re getting on. I also check that the tea station is filled with goodies and that the kitchen is well stocked. I then welcome Dewa to the Retreat. Dewa is a Balian taksu, or Holy man, and a dear friend I have known since I first came to Bali. Like most aspects of daily life here, the island’s ancient healing arts are intrinsically linked to Balinese Hinduism and are all about maintaining balance for optimal health, which strongly influences my own message, recipes, and approach to wellness. I had huge success with Dewa’s methods myself, so I love having him here and getting to see him help my guests on their journeys, too.

15:00 - 18:00 pm While everyone has their sessions with Dewa I prepare for the week’s excursions. Tomorrow we will visit the organic farm to pick our own vegetables to cook for the week’s meals. This week we’ll also be visiting a local ceramic factory, a traditional water temple, and will go for dinner at an amazing plant-based restaurant. I then return to the kitchens with another volunteer who will help with this evening’s meal. 19:00 pm. We all sit down and enjoy dinner together. Balinese people are big on their flowers so every night the tables are set with fresh flower displays and candles. Each evening has a different theme, feel and colour scheme and tonight’s theme is based around the colour red.

20:30pm. I pop to the kitchen to make this evening’s ‘sleepy drink’, golden milk infused with Balinese coconut syrup, cinnamon, and turmeric. Every night we have a hot drink together to aid digestion and reduce anxiety for a truly deep and nourishing sleep. I also hand out “magic seeds”, a mix I have been using for years, to aid gut health and digestion overnight. I stay up a little while to relax, bask in the ambiance and chat with everyone before eventually heading to bed, ready for a good night’s sleep to carry me onto tomorrow’s adventure.

chicken poppers, crispy prawns, smoked wings that simply fell off the bone, pulled pork sliders (enough said!) and ranch dressing and jalapeño jam for the obligatory dipping. For the veggies, don’t worry, you won’t miss out as the Garden Combo Platter is designed for you. Tempura corn, smoked cheese quesadillas and crispy avocado sliders are just some of the treats on offer. To follow, we dived into the Smokehouse BBQ Ribs and the Chargrilled Lamb Rack; the latter served with a divine buttered mash, green beans and fragrant maple and mint gravy. The classic ribs were even more tender than expected, falling off the bone with every bite and coated in that delicious BBQ sauce. As we rolled our sleeves up and tucked in, a sizzling platter passed our table and made us sit up in our seats! What was that smell? We had to have it! The waiter informed us it was sizzling fajitas, and in the spirit of pigging out, we ordered one to join the party! Food envy at its finest! Other standout dishes include the 40-day dry-aged Galician Tomahawk steak, the Seared Tuna Burger with grilled halloumi, Jacks Bean Me Up homemade five bean burger and the house minced and pressed prime beef burgers. We recommend The Royal Smokehouse; pure Wagyu (shorthorn Japanese breed beef), sriracha butter, Swiss cheese, truffle chilli parmesan fries with a side of black truffle mayo. With all dishes you can swap skinny fries for sweet potato fries for 0.75€ and speaking of

sweet potato fries, I must also take a moment to mention the side orders on offer, (not that we needed any more food on our table). No boring side accompaniments here, charred corn on the cob, crispy onion rings, mac & cheese and roasted creole vegetables are a few of the highlights to round out your main if you’re feeling exceptionally peckish! Dessert to me is the most important course of the meal (perhaps the most important meal of the day), so despite needing to loosen a belt buckle there was simply no way I was missing out, especially with delights including

Malteser Tiramisu, American Waffles and Key Lime Pie making an appearance. I opted for the Tiramisu as anything with Malteser in the title has my vote! My partner went for Warm Chocolate Brownie, another sound choice, particularly the smoked chilli chocolate sauce, I would return just for that! We set out to EAT with a capital E and that was most certainly what we did. Jacks Smokehouse in Benalmadena is a brilliant addition to the brand with a menu that suits just about everyone’s tastes, exceptional décor and a bustling ambiance… what’s not to like?!

The wedding planning begun almost immediately after we had returned back to the UK. I had always dreamt of an outdoors wedding, with beautiful scenery and romance. I already knew that this would be the theme throughout. We decided to marry in Spain as we both travelled there often. Spain has always been a destination close to home and close to my heart... the ambience, the people, the laidback attitude, the weather and climate.... we had to get married in Spain!

All were outdoors, the weather was amazing and all this infused with the surroundings and the ‘buzz’ our guests came with made it truly the best wedding, I myself, had ever been to, and I still can’t believe that it was my own. I knew I wanted a traditional Hindu wedding with a twist of vintage and regal attire. Dianna from Party People and the team at Beau Rivaaaj ensured that the setting was just that and the planning was impeccable. The mandap was decorated with beautiful fabrics and hanging ornaments. It looked exquisite with traditional but subtle colours. The large pillars surrounding the amphitheatre were draped with beautiful images of Lord Ganesh. For the blessing ceremony, Dianna had stripped away the colours and left a beautiful plain white chuppah that was complemented by the surroundings of the Roman Stone amphitheatre. The ivory and soft pink flowers paired with our outfits made a perfect combination against the sunlight and the greenery.
