NATURAL WINES “Natural wine is not new; it is what wine always was, and yet, somehow today it has become a rarity. It is a tiny drop in a big ocean, but, oh my, what a drop.” So, what is natural wine? According to the latest edition of The Oxford Companion to Wine, natural wines typically share the following characteristics: Grapes are typically grown by small-scale, independent producers. Grapes are hand-picked from sustainable, organic, or biodynamic vineyards. Wine is fermented without added yeast, using native yeasts instead. No additives are included during fermentation, such as yeast nutrients. Little or no sulphites are added. There is no official or regulated definition of natural wine. Below are a few well-known examples of wine styles commonly associated with natural winemaking. BIODYNAMIC WINES Biodynamic wines are produced using biodynamic methods both in the vineyard and during post-harvest processing. Biodynamic wine production incorporates organic farming practices, while also employing soil preparations based on Rudolf Steiner’s principles, following a planting calendar influenced by astrological configurations, and treating the earth as a living and receptive organism. ORGANIC WINES Organic wines are made from grapes grown according to the principles of organic farming, which excludes the use of artificial chemical fertilisers, pesticides, fungicides, and herbicides. ORANGE WINES Orange wine, also known as “amber wine” or “ramato” — meaning “auburn” in Italian — traditionally refers to skin-contact Pinot Grigio wines from Friuli-Venezia Giulia. First things first: orange wine is not made from a magical orange grape. Instead, orange wines are produced using white wine grapes but vinified in a manner similar to red wines. This results in a skin-contact white wine, as the grapes are fermented with their skins and, typically, native yeasts for anywhere from a few days to several months. This process allows the wine to develop tannins, polyphenols, aromatic compounds, and proteins, resulting in a wine that can differ significantly from both white and red wines in appearance, aroma, and texture. PÉTILLANT NATUREL (PÉT-NAT) Pétillant Naturel, or Pét-Nat for short, is a naturally sparkling wine that is bottled before the first fermentation is fully complete. This allows carbon dioxide to develop naturally from the sugars present in the grapes. This traditional method is often favoured by natural wine producers and differs from the méthode champenoise used in the production of Champagne and other traditionalmethod sparkling wines. 2

SAKE
known in Japan as Nihonshu (
日本酒), is a traditional Japanese alcoholic beverage produced through the fermentation of rice, water, yeast, and koji mold
(Aspergillus oryzae). While often referred to as "rice wine" in English its brewing process, is technically more similar to that of beer. Rice (Sakamai): Specialized, high-quality rice (shuzo kotekimai) is used, which has larger grains and less protein/fat than table rice. (Yamada Nishiki, Gohyakumangoku, Miyama Nishiki, Omachi). Water: Essential for the taste, with soft water often producing sweet sake and hard water producing dry, crisp styles. Koji-kin (Aspergillus oryzae): A mold that converts rice starch into fermentable sugars. Yeast: Responsible for converting sugars into alcohol. Process: Unlike beer, where starch conversion and fermentation happen separately, sake utilizes Multiple Parallel Fermentation, where starch conversion to sugar and sugar conversion to alcohol occur simultaneously in the same tank. Main Classifications of Sake Junmai ( ): Pure rice sake, meaning no distilled alcohol is added.

Junmai Daiginjo: Highest grade with 50% minimum or below polished and produced by slowly fermenting rice at low temperatures of 5 to 10 degrees Celsius

Umeshu ( ) Umeshu is a popular Japanese plum liqueur made by steeping fresh ume plums in sugar and alcohol, typically shochu. It has a sweet and sour flavor profile, usually around 10–15% ABV, and is often enjoyed chilled, on the rocks, or with soda.
