The Holiday Season is upon us, what a wonderful time to reconnect with our families and friends, whether they are near, far, or even in our same house. This is a season to find balance, to take time to enjoy the moments of the season, and be grateful and recognize the many blessings in our lives. It is also a time to give to others, to find ways to serve those around us. It is the small tokens of kindness that are shown by many in the community that makes Cedar City the great place it is to live. Let’s all do our part to make it even better this holiday season.

Please take the chance to say “no” this holiday season. No, to some of the things that may seem important, but might take us away from the most important thing in our lives, our true friends and families. Make the time to enjoy those things that are the closest to you.

We are introducing a new section on Food and Nutrition with this issue and are excited to welcome Mark Meisner, Minhee Parker, and Chef Bud Kinder of the Depot Grill to the magazine. We envision great things from them as we work together to develop that portion of the magazine. It will include recipes from Chef Bud, articles and tips on nutrition, food preparation, kids in the kitchen, and other articles on how we can get back to the days when families had and spent quality time in the kitchen.

You can start the season off right by celebrating “National Cookie Cutter Week,” and make some sugar cookies and decorate them as a family.

You could also pick another of your favorite food holidays, maybe it is National Chocolate-Covered Anything Day on December 16th, (see full list inside) and plan your own celebration.

I’m sure you will all be interested in the article by our own Terrin Parker about her Grandpa Bulloch and his fight on behalf of local ranchers with the U.S. Government over the nuclear testing that was held in the Nevada desert in the early 1950’s, and the damage it caused to man and animals alike. This may give you a chance to understand why sometimes we may appear to have a cautious attitude toward the federal government and what they tell us. Many of us have lost and continue to lose friends and family to cancers and other diseases that have been linked to that testing.

We will be expanding our Health and Wellness section in the next issue, and look forward to helping each of us find new and better ways to be healthy, stay active, and enjoy our lives a little better.

With the start of the New Year, it is also a time for looking to the future, setting goals and resolutions, and making commitments to better ourselves. Take the time both alone and with your loved ones, to make plans to make 2015 your best year ever.

By Terrin Parker The fifties gave rise to some of the most iconic historical heirlooms of any era to date. Poodle skirts and bobby socks. Elvis and blue suede shoes. Hotrods and hairspray. Jukeboxes and the jitterbug. The fifties also gave rise to many conflicts, challenges, and heartbreak. People endured great hardships, and fought for what they believed in. Not everyone won.

In the wake of war, the U.S. Government wanted to advance our defenses, which involved experimentation and testing of nuclear weaponry. One of the test sites was the Nevada Test Site, (NTS) established in 1951 and covering approximately 1,360 square miles of desert and mountain terrain 65 miles northwest of Las Vegas. The distant mushroom clouds could be seen for miles, and the seismic activity was felt by those nearby. For years, Southern Utah received the brunt of the nuclear fallout from this site. Winds routinely carried the fallout of these tests directly through St. George and the surrounding area.

Beginning March 17, 1953, there averaged one blast per week for almost three months. Hundreds of tons of vaporized soil and steel permeated the air. A series of tests code-named “Operation Upshot-Knothole” would later go down as the most hazardous detonations ever conducted in the U.S. Three of them were twice the force of the bomb that obliterated Hiroshima. One test, nicknamed “Dirty Harry,” left a radioactive cloud over St. George for more than two hours.

During this time, my grandfather, McRae Bulloch, and his brother Kern had their sheep herd grazing about forty miles northeast of the test site. They were trailing their sheep east from their winter range to their lambing yards in Cedar City. In my grandfather’s words: ‘’We’d be sitting there in the sheep wagon before dawn, and the whole sky would light up. We’d say, ‘They’ve set off another bomb.’ It would come up in smoke and dust and mushroomed out, all kinds of colors, and drifted whichever way the winds would carry it. You couldn’t feel the radioactive dust, but the air looked cloudy, hazy.’’

They were running 2,400 head of sheep at that time, all of which were exposed to large quantities of nuclear fallout. The sheep’s wool absorbed the radiation in the air, and they grazed on radioactive elements that landed on the browse. “The ewes had scabs on their noses, ears, and mouths where they had eaten,” my grandfather recalled. “The lambs were small, deformed; some were even born with no wool. We took a truckload of sheep into the mountains-the ones that couldn’t go on their own. By the time we got to the mountains, every one was dead.”

They ended up losing almost half of their herd that year. Wool

Rural Life sloughed off in clumps, revealing blisters on adult sheep. Lambs were either stillborn or born with grotesque deformities. My uncle, Kern, recalled the scene: “Some of the lambs would be born with their hearts outside of their bodies, no wool, and skin like parchment so you could see right through to their organs. They died, so many of them that they were piled up right to the roof line every day.” Others lost their herds as well, and nearly 5000 lambs and ewes in the area died within a few days. Each of these families lost about $65,000 that year.

When word got to Washington that these sheepmen were rightly blaming the fallout for their losses, the Atomic Energy Commission (AEC) sent a team of radiation experts to Cedar City to investigate.

The team included two veterinarians who examined their dead and dying sheep, and were convinced that the die-off was caused by the radiation. They wrote up a report stating such, and documenting the high levels of radiation found in the dead sheep that were tested.

Not wanting to establish a liability precedent for damages--animal or human--the government officials reportedly had the field report re-written to exclude the definitive findings, and thereby quash any chances of these families receiving compensation for their losses. A few months later, the AEC announced that its experts had concluded that fallout had not been the cause of the sheep casualties, but rather a “natural result of unprecedented cold weather during the lambing and shearing of sheep, inadequate feeding, unfavorable winter range conditions, and infectious diseases of various types, the combined effects of which were improperly thought by some during the preliminary investigation to comprise irradiation syndromes.”

The AEC’s final report was accepted by the majority, but my grandpa and his brother knew they had been treated unfairly. They fought to obtain more support for their cause, and with the help of a tenacious lawyer, filed a case against the government in Bulloch vs.

U.S. in federal court. The federal lawyers won their case against the livestockmen when, based on the AEC report, the judge concluded that “the maximum amount of radioactive fallout in any area in which the sheep could have been, would have caused no damage.”

In 1979, an epidemiologist disclosed that an epidemic of leukemia was killing children in the downwind zones. The ranchers took this

opportunity to sling another stone at “Goliath”, and Bulloch vs. U.S. was once again resurrected. Witnesses testified to the fraud perpetrated by the government against the sheep case, with evidence to support the accusations. In light of a lawsuit brought by almost 1,200 people, accusing the government of negligence in nuclear weapons testing at the NTS, the men were granted a new trial. They thought for sure, this time, the truth of what happened would be revealed. To their dismay, the 10th Circuit Court of Appeals in Denver rejected the findings and canceled the new trial. The ranchers finally hung up their hats.

Over the next several years, cancer cases skyrocketed throughout the region, and more information came to light. In a report by the National Cancer Institute, released in 1997, it was determined that ninety atmospheric tests at the Nevada site deposited high levels of radioactive fallout across a large portion of the United States, especially in the years 1952, 1953, 1955, and 1957—doses large enough to produce up to 75,000 cases of thyroid cancer. The Radiation Exposure Compensation Act of 1990 allowed for people living downwind of the NTS for at least two years and suffering from certain cancers (or illnesses deemed to have been caused by fallout exposure) to receive compensation of $50,000. By May 2014 over 28,000 claims had been approved, and over $525 million in compensation had been dispensed to “downwinders” for a total compensation of $1.9 billion. Though my grandfather lived through the loss of his lambs and two types of cancers which cost him his kidney, he never saw a dime of government compensation for the loss of his sheep, or his health.

When asked his feelings on it now, at age ninety-five and more than sixty years later, all my grandfather said was, “At some point in life, you have to learn to let go.” He fought hard for what he knew was right, and sought justice. He didn’t win his battle, but he helped lay the foundation for others who did, and he didn’t let the loss define him.

Though he never fully recovered from the financial blow he sustained in 1953, he continued to ranch sheep for another sixty years, because he loved it. He died during the preparation of this article, in his bed, under a blanket of wool, surrounded by family. He lived, he learned, and he let go.

A Winter

Gem

Sometimes people complain about winter... how long it is… how cold… nothing to do. Well, here is an antidote--a relatively unknown “winter gem” that can make it something to look forward to. It’s available right here in Cedar City, it’s almost free, it’s good for your body, and it’s good for your soul, too.

What is it? It’s called many things: cross-country skiing, XC skiing, Nordic skiing, skinny skiing, backcountry touring, and a few other (sometimes confusing) terms. But whatever it’s called, there is a group of people here in Cedar City who have banded together to practice and promote its healthy properties: The Cedar Mountain Nordic Ski Club.

Started approximately nine years ago by a group of friends with a common interest in cross-country skiing, the club has grown every year and is now a registered Utah non-profit corporation. The stated purpose of the club is to encourage and advance the establishment and maintenance of cross-country ski trails in the Cedar City area, as well as promote the healthy outdoor activity of cross-country skiing.

The club holds approximately thirty ski events each season, usually one on the weekend and one mid-week. Most of these events are open to the public and you don’t have to be a member to participate. At the beginning of the season, the club offers some introductory events for beginners. Throughout the season, almost all of the events have an easier ski route for the beginner skier. The goal is to have fun, get out, and enjoy winter.

For the most part, the club skis at the Deer Valley Winter Recreation Area. This 1,379 acre area is located along the south side of UT 14, near mile marker 22, at the Iron and Kane county line.

It is administered and maintained by the Cedar Mountain Ranger District of the Dixie National Forest. Deer Valley is open to crosscountry skiing and snowshoeing, offering a quiet environment to enjoy non-motorized winter recreation. There are approximately ten miles 8 www.cedarcitymag.com

A group of spring-time cross-country skiers in Deer Valley. of marked XC ski trails that are usually groomed once a week. The trails are groomed with both double track, for classic skiing, and a wider corduroy area for skate skiing.

Deer Valley was officially designated a non-motorized winter recreation area in 2008. The Forest Service, with support from the ski club, is working to secure funding for improvements such as a parking lot and bathrooms. At the present time, skiers park at the snowplow turn-around at the Iron and Kane county line, which accommodates about ten cars.

In addition to the groomed trails at Deer Valley, there are many locations in Brian Head, Cedar Breaks, and Duck Creek that are suitable for cross-country skiing. These areas are not groomed and have no marked trails.

There is no greater skiing experience than getting out the day after a foot or two of new snow has fallen and making the first tracks. Close your eyes for a moment and imagine that you’re a kid again. You’re standing with your skis in that fluffy new snow, the wind is calm, the air is cold, but the sun warms your face. Your skis sink a foot into the soft snow which muffles any sound, but you can hear your own breathing. The trees are coated with a layer of snow and as you glide noiselessly along, little avalanches of snow fall from the branches.

What a great way to enjoy the winter season in Cedar City. It’s a healthy activity and gets you outdoors in winter, and to top it off, the equipment is relatively inexpensive and the skiing itself is free.

If there’s a common thread running through the long-entwined life of Cedar City and Southern Utah University, it’s that once one departs, there’s a desire to return.

Many have said that the two entities just get into their blood, that the many charms of the area and the people are tough to forget.

And so it has been with Wade Arave, who came to SUU from Snow College as a theatre arts major in 2006 and, following his 2009 graduation, stuck around town to teach at Cedar Middle School and Cedar High School for three years. Revisions in the school district prompted him to seek a career change as a recruiter for Utah State University’s eastern campus in Price, Utah.

That position was a challenging one, but Wade shined and flourished there. However, after two years at what once was the College of Eastern Utah, Wade and his wife Jocelyn and their two children were excited to return to Cedar City and SUU when Wade accepted a recruiting job here this past summer. His wife, who worked as a family advocate in SUU’s Head Start program while taking classes, was happy to resume her education as a Thunderbird as well. Also, 12 www.cedarcitymag.com

Wade’s family resides in Cedar City, which helped make the decision to return all the more sensible.

As an integral part of an eight-person team headed by Executive Director of Admissions Brandon Wright, formerly of Snow College, Wade brings a fresh outlook to the art and science of matching students and SUU. “Since Brandon and I arrived at the same time and with backgrounds at two-year schools, it was great that we had similar ideas on recruiting,” said Wade, who is quick to point out that those ideas mesh well with SUU’s unique atmosphere for learning and growth.

“Students who choose to attend SUU truly benefit from a different kind of collegiate experience, one that all will need to meet the challenges of the workplaces of today and the future,” he said. “It’s not just about getting a degree these days, it’s what a graduate can bring to the table. Employers are interested in a graduate’s experiences, ideas, and abilities to work well with others.

SUU is an exceptionally great place to develop those skills, and to begin developing

them right away, as a freshman, because all students can jump right in to campus life in its fullness.”

Wade said that SUU’s admissions counselors focus on individuals, just as do all at the University.

“We don’t offer cookie-cutter educations and when we look at potential students, we truly look at each as an individual and try to ensure that there’s a good fit from both sides, and that not only will the school be right for them, but that they’ll be right for the school, too,” he said.

Also, he pointed out, SUU endeavors to ensure that nothing will stand in the way of the student attending, and succeeding.

“The only thing that should prevent a student from enrolling is that the school just may not be the right choice for him or her,” he said, but one gets a distinct impression that such students, at least in Wade Arave’s view, are few and far between.

In its annual appraisal of colleges and universities across the nation, Institutional Research & Evaluation, Inc., selected SUU as one of only 14 schools in the western U.S. to be included in the list, proving SUU has undoubtedly made its mark as an exceptional institution offering both quality and value to students across the region. With a very affordable price tag, students and their parents get the most out of their educational investment at Southern Utah University.

SUU ranks second in overall cost when the Institutional Research & Evaluation, Inc., factored in tuition, fees, room, and board, but ultimately examining the quality of education a student receives for a small price tag.

The Historic Union Pacific Depot

On the corner of 200 North and Main, sits a building that was once decorated with travelers. Whether coming, going, or just passing through, Union Pacific Depot in Cedar City was the spot where people connected. Today, it is still thriving with energy, alive with visitors, locals, and those just passing through; a place to come and enjoy one another’s company over great food in a historic setting.

Built in 1923, the Cedar City Railroad Depot is historically significant for its direct association with the railroad and its impact on Cedar City. In addition to stimulating the local iron ore and livestock industries, the railroad connection to Cedar City greatly contributed to the expansion of the tourism industry in Southern Utah.

As roads to scenic areas were developed, Cedar City became a strategic center for travel to national parks and monuments, including Bryce Canyon, Zion National Park, Cedar Breaks, and Grand Canyon. The first official train arrived at the new depot on June 27, 1923, and carried numerous dignitaries, including President and Mrs. Warren G. Harding.

In addition to construction of the depot, the Union Pacific Railroad became fully involved in the tourist industry by purchasing hotels, buses, and building lodges. Tourist travel increased dramatically following completion of the railroad, and depot visitors to Zion Nation Park increased from 3,695 in 1920 to 55,297 in 1930.

Automobile traffic gradually superseded rail travel to the point that the railroad eventually closed its line to Cedar City in 1959.

The Cedar City Railroad Depot remains the only building that documents the important influence that tourism and the railroad had on the development of Cedar City in the first half of the twentieth century. Along with the Depot Grill, the historic building houses a candy store and a seasonal antiques store.

Though the trains no longer run, the historic aura continues to enrich the feel of the area. When guests dine at the Depot Grill, they not only enjoy the exquisite cuisine provided by Chef Bud, they also 14 www.cedarcitymag.com

get a taste of history as they dine in this building, with its original light fixtures and ticket booth entrance way. Though times have changed, the Depot Grill is still a place where family and friends can come to connect.

Bud Kinder Chef Bud was born in Los Angeles, California. He has worked in the food and beverage industry for 30 years. Bud started with managing restaurants, then turned into a prep cook and realized that he enjoyed the creative aspect of being a chef.

He has worked in Los Angeles, California, and moved to Salt Lake City, Utah, in 1989 as a restaurant manager.

In 1992, Bud moved to St. George, Utah, to work at the Bloomington Country Club as a cook. Nine months later, he became the Executive Chef of the country club and worked there for 13 years. After his time at the country club, Chef Bud was working in an upscale restaurant in St. George as the sous chef when he took an interview with owner Mark Meisner. He was offered a position as an Executive Chef at the Depot Grill in 2011.

Chef Bud enjoys creating simple, elegant food and does not believe in over doing it. His priority as a chef is to use the best, freshest ingredients using local products where he can. This is evident in the cuisine served at Depot Grill. Chef Bud serves Certified Angus Beef, fresh vegetables and provides a fresh catch nightly.

He is the type of chef that enjoys going out into the dining room and seeing guests. He owns his food. He gets joy out of making people happy with food. Once the guests are full and happy, he feels as though he has completed his job.

By Brigit Atkin Merry Christmas! Happy New Year! It’s that busy time of year -- travel plans, shopping, choir concerts, decorating, and traditions.

How do we manage all of the activity while maintaining a sense of peace? I’ve compiled a list of tips that can help bring peaceful enjoyment to a busy and sometimes stressful time of year: • Focus on what’s important. Think about what Thanksgiving and Christmas are really about, and disregard what is too much. Decide which traditions/activities are most valued by you and your family.

Say no to events that you really don’t care about or feel you have time for.

• Be kind. Do you ever notice how rude people can be in the stores this time of year? We are all stressed out! Be mindful that everyone around you is in a hurry, worried about spending too much money, etc. Do your part to help lift those who cross your path – smile, offer a sincere compliment, hold the door open – you would be surprised how these small acts of kindness can boost someone who is down, frustrated, or lonely.

“Peace. It does not mean to be in a place where there is no noise, trouble, or hard work. It means to be in the midst of those things and still be calm in your heart.” Unknown • Give to others. Nothing will cheer your heart and bring you peace like being generous to those in need. Keep some spare change in your pockets for the bell-ringing Santas, or leave a gift package at the door of someone struggling financially. If you are cash-strapped yourself, offer a service instead.

• Turn away from the materialism that bombards you. Simplify your gift buying, and stick to your budget. When choosing a gift ask yourself, “Is this really worth the money?” Sometimes the most appreciated gifts are the ones that are inexpensive and sentimental.

• Have gratitude for everything about the season. Stuck in traffic? Be thankful you have a warm car to be stuck in. Your flight is delayed? Be grateful you have the family to visit, and the means to visit them.

• Enjoy the season. Drive around town just to look at the lights.

In this age of technology, when you can find everything online with a few quick clicks, you may be wondering why you should use a travel agent. It seems that everything you need is right at your fingertips! It is all so easy... until it’s not. When you book online, who will have your back when things go wrong? The hotel loses your reservation. The car rental agency has run out of cars. Suddenly, the simple has become quite complex. Who do you call? Who is going to help you? The hotel? The car rental company? Often times, the only thing you get from them is a forced and apathetic apology--if you are lucky.

When you book through a travel agent, all you have to do is make one simple call and everything will be taken care of. Suddenly, the hotel or agency is dealing with someone who has the potential to send hundreds of guests, or no guests at all. From a purely business perspective, a travel agency can send thousands of dollars to their business, and we all know that money talks.

In planning your trip, a travel agent will also provide the best overall solution to your individual travel needs. By asking questions up front, an agent can provide a relevant needs assessment. This can include dates, quality or location of accommodation or stateroom, cancellation policies, recreational amenities, the ease of doing business, etc. No two customers are alike. What works for one may not work for another.

The agent can also help you get the biggest bang for your buck.

It’s not just about price, it’s about value. If the hotel was not the right location, if the cruise line was not the right cruise line, if the golf course was not the right golf course, it does not matter how much you saved. One can save a ton of money and be miserable, or spend a little more and be in paradise. A travel agent can recommend relevant offerings and also provide cost saving strategies. Moving a date, changing the location of a room/cabin, being open to flight options, etc., can all save you money. Nobody wants to pay more than necessary, so an agent will help you find the best value without the sacrifices.

If you have an agent that you trust, you won’t have to spend what little free time you have scouring the web, trying to piece everything together-- flights, cars, rooms, etc. In addition, your agent might be working with transfer and car rental companies that you simply don’t have access to, and in many cases, even hotels and airlines that you don’t have access to. An agent is someone who has taken the time and made the commitment to be the best, so that you don’t have to make planning your vacation a second job!

The Perfect Christmas Gift!

To further illustrate the point, we’d like to tell you Bill’s story.

Bill wanted an awesome vacation at a fantastically low price. Bill is pretty web savvy, and he had spent hours searching for the vacation he wanted. Our agent went to work and coordinated the entire trip: airfare, rental car, the resort, and all the excursions. When all was said and done, Bill was presented with an incredible value.

However, Bill was convinced that he could get a better price. So he went back out to the web in search of a better deal. And indeed he found it--airfare that was $20 per seat lower than what our agent had found for him. So he booked it.

On the way there...

• Bill’s flight arrived at the airport in the middle of the night after several delays and connections.

• By the time he landed, the car rental company was closed for the night.

• Bill’s bags didn’t make it to his destination.

On the way home...

• His flight left very early in the morning.

• D ue to the distance from the airport, he had to leave the resort at 3:00 am.

7 Holiday Safety Mistakes You Don’t Want to Make

It’s all fun and games until... Someone falls off a ladder. Or slices a finger while opening a gift. Or sets the Christmas tree on fire. According to the latest data from the Consumer Product Safety Commission (CPSC) via NBC news, in 2012 more than 15,000 people were treated for holidayrelated injuries in the ER. These holiday safety reminders and some common sense can help Careless candles According to the National Safety Council, the incidence of candle fires is highest in December; Christmas Day is the worst, followed by Christmas Eve and New Year’s Eve. More than half of the fires occur when something flammable—decorations, a mattress, a table cloth—is too close to the candle. Consider battery-operated or electric flameless candles. If you do light candles, however, make sure all are blown out before you go to bed. The U.S. Fire Administration, states that half of candle-fire deaths occur between midnight and 6 a.m.

A dry tree Fires that began with Christmas trees may not be common, but they are serious, says the National Fire Protection Association; fires started by Christmas trees are more deadly than those that arise from other sources.

If you have a fresh tree, keep it away from vents, radiators, fire places, and other heat sources. Monitor water levels daily, especially because air from home heating systems can dry them out, and keep the tree stand filled with water. Make sure any artificial tree you buy is labeled “fire resistant.”

Ladder accidents More than one-third of holiday injuries seen in the ER were caused by falls, and ladder slip-ups likely play a big role.

The four biggest problems, according to CultureofSafety.com: using the wrong ladder size (check the weight capacity and make sure it’s tall enough—if you have to stand on the top rung, it’s too short); using a worn or damaged ladder; leaning to reach something or not standing on the ladder properly (always maintain three points of contact—two feet and one hand, or two hands and one foot); and improperly placing the ladder, namely too far away from a wall or in front of a door that could be swung open while the ladder is being used.

Distracted cooking Thanksgiving and Christmas Day are the two largest days for reported kitchen fires, according to a recent survey from Liberty Mutual Insurance. 83 percent of those surveyed admitted to engaging in notso-safe behaviors like disabling the smoke detector and leaving the stove unattended to do other things. To avoid a kitchen calamity, use a timer so you don’t accidentally leave a pot on or in the stove for too long.

Contaminated food Festive buffets and catered dinners— where a few people might be handling food served to many—offer more opportunities for contamination or spoiled food than most other meals, according to the Harvard Women’s Health Watch. But even at home, don’t eat buffet foods that have been sitting out more than two hours.

Frustrating packaging One of the biggest sources of minor accidents is what ConsumerAffairs.com calls “wrap rage”—when people cut themselves trying to open those hard plastic shells around toys and electronics. Take your time opening these gifts and don’t let eager. Toss all unwrapped plastic packaging as soon as it’s open so people don’t hurt themselves on a shell that’s lying around.

Seasonal scented air Research from a meeting of the American College of Allergy, Asthma and Immunology found that about 20 percent of people and more than one-third of those with asthma report health problems from air fresheners, like the kind you might use to make your home smell like gingerbread. These products often contain chemicals known as volatile organic compounds (VOC) that irritate the respiratory tract, eyes, and can even cause headaches and dizziness, Time reported. Try baking cookies with cinnamon, peppermint, or other seasonal flavors instead, or open your windows to let fresh air waft through.

The Best Soft Sugar Cookies

By Kaylene Lovell Directions: Cream butter and sugar in large mixing bowl on medium speed until creamy. Add eggs one at a time, mixing on low speed after each addition. Add vanilla, almond and sour cream and mix on low speed until blended well.

In a separate bowl combine and whisk flour, salt, soda and baking powder. Add the dry mixture to the cream mixture 1 cup at a time and mix well after each time until blended.

If baking the cookies the same day, divide the dough in two or three balls. Line a cookie sheet with a piece of parchment paper and place one ball of dough in the center of the sheet and roll the dough out flat, about 1 inch thick. Use extra flour if needed while rolling the dough. Cover the dough with another sheet of parchment paper.

Repeat with the remaining dough on other cookie sheets. Put the cookie sheets in the fridge for a couple of hours.

Remove the cookie sheets from the fridge. Lift the layers of the parchment paper and cookie dough from the cookie sheet onto the counter. Roll out the dough to about 1/2 inch thick. Remove the top sheet of parchment paper, cut out cookies and place on parchment paper back on cookie sheet.

If baking tomorrow, put the dough in a bowl and cover with plastic wrap and put in the refrigerator. When ready to cut out the cookies, roll half the dough between two pieces of parchment or wax paper, or roll out on the counter until it’s about 1/2 inch thick. Remove the top sheet of paper and cut out cookies and place on parchment paper on cookie sheet.

Place cookies about 2 inches apart on parchment paper on the cookie sheets. Repeat the rolling and cutting process with the remaining dough. Leftover scraps can be re-rolled. Use a little flour if needed when rolling out dough.

Bake at 375 for 7-8 minutes. Be sure to not over-cook. The cookies will continue to cook just a little as they cool on the baking sheet. Cool slightly, and then transfer to a cooling rack until completely cooled.

Frost with either butter cream frosting or icing. Be creative in decorating the cookies (check Pinterest for decorating ideas). Food coloring can be added to either the frosting or icing recipe.

Butter Cream Frosting Mix all ingredients in mixing bowl on low speed adding powdered sugar a little at a time. Add food coloring if desired. You can add a little more powdered sugar or milk until you get the desired consistency. Then mix on medium speed until creamy and smooth.

Frost cookies, decorate cookies, and enjoy!

“Please”

Do you know the origin of the words or the act of saying “Please” and “Thank you?” Convinced that was the perfect bit of facts to begin this discussion, the research began and quickly came up – cloudy.

Admitting patience runs quick as water through a colander, the endless list of historic options led to day dreaming, mentally skipping through fields of fluff and within moments the origin did not matter, yet the personal installation does matter.

The act of saying “please” and “thank you” are golden, individual treasures and largely based on the examples shown during our formative years. “Please” and “thank you,” when presented genuinely and with content, are valuable and most importantly, memorable.

“I’ve learned that people will forget what you said, people will forget what you did, but people will never forget how you made them feel.” Maya Angelou spoke to the heartfelt habit of asking “please” and offering “thank you” with this quote. Making eye contact, gentle smiles, warm handshakes and the words “thank you” can make ones heart flutter. Quite dramatic in print, with pause and bold purpose, the same reaction can be stirred even in during the sprints of a workday.

Finding a

Healthy Balance

this Holiday Season

By Emily Fonnesbeck The holidays are upon us! So are pumpkin pies, Christmas cookies, and the traditional New Year’s smorgasbord. The next three months are bound to bring many opportunities for yummy treats. This isn’t necessarily a problem in my book, as long as you are able to keep a balance between indulgence and health. Here are a few tips to help you find that balance: Remember that foods high in fat, sugar and salt can be addicting.

Food manufacturers use this to their benefit. Our idea of what food should taste like is completely skewed. It is hard to appreciate the natural flavor of an apple or oatmeal when our meals have been full of addictive ingredients. An occasional treat will be fine for most, but consuming foods high in fat, sugar and salt on a regular basis will greatly impede our ability to eat and enjoy healthy foods. The holiday season brings too many opportunities for our taste buds to forget what food should taste like.

Keep in mind that there are actually only three holidays: Thanksgiving, Christmas (or Kwanzaa or Chanukah, which is eight days), and New Year’s.

Three days of indulging a little is not enough to do much damage. It is the vicious cycle of not enough exercise and eating unhealthy for the months during the holidays that causes tiredness, feeling unwell and weight gain during this time of year Don’t skip meals.

A surefire way to fall prey to treats at the office is to find yourself overly hungry. By eating well-balanced, consistent meals, you stay more levelheaded about food choices. For a balanced meal, make 1/2 of your plate vegetables, 1/4 complex carbohydrate (whole grains, 26 www.cedarcitymag.com

While some foods are more calorie-dense than others, no food will make you gain weight unless you eat too much of it. At parties and holiday dinners, people tend to eat (or keep eating) beyond their body’s physical hunger simply because food is there and eating is a “social thing.” To avoid recreational eating, consciously make one plate of the foods you really want. Eat it slowly and enjoy it. When you’re done, pop a mint or stick of gum in your mouth, get a tall glass of water and sip on it throughout the night. Position yourself away from the food as well.

Yes that’s right. But make sure those indulgences are worth it. If you love your Grandma’s pumpkin pie and she only makes it once a year on Thanksgiving, you better have a piece. But pass on the store bought chips, cookies, dips and crackers which you can get any time of year. And remember, telling yourself you can’t or shouldn’t could lead to preoccupation and binges with that particular food.

Ask yourself what you are really hungry for.

There are many types of hunger: emotional hunger, spiritual hunger and physical hunger. You only NEED to eat when physically hungry but often WANT to eat when you are emotionally or spiritually

Give Yourself Some “ENDORPHINS” This Holiday Season

By Tiffany Gust With the upcoming Holidays comes the stress of baking, shopping, entertaining, and gift giving. “Holiday Stress Statistics reported by the American Psychological Association show that up to 69% of people are stressed by the feeling of having a “lack of time,” 68% are stressed by perceiving a “lack of money,” and up to 51% feel stressed out over the “pressure to give or get gifts.”

Stress is a fact of life, but the Holidays seem to bring out a series of stresses that don’t come up any other time of year. Emotional stress can take its toll on your body and can weaken your immune system. During the Holidays, some choose to ditch their workouts because they are too busy when, actually, your workout is just what you need. Exercise can decrease a hormone released during stress called cortisol, and increase endorphins. Endorphins are your body’s feel good chemicals that can give your body a natural boost. During the Holidays, who couldn’t use that?

Here are some ways to include exercise in your busy Holiday schedule: 1. Instead of taking the time to go to the gym, put in a DVD or use an exercise program from “YouTube.” This will save you time that would have been spent driving to the gym.

2. Cut your 60-minute workout to 30 minutes. This way you can get in something, but still have time to get those gifts wrapped.

3. Find ways to get movement in your day by parking at the back of the parking lot, taking the stairs, or getting up from your desk and walking to the restroom that isn’t the closest one.

4. Use your gift shopping as your workout, keep moving and pick up the pace.

5. Do 20 minutes of body only exercises squats, lunges, push-ups, wall sits, and sit ups.

6. Split your workout into two 10-15 minute sessions. Do one in the morning, and one in the evening.

7. When spending time together as a family, use movement by playing “Charades,” “Hide and Seek,” or “Mother May I?” So this Holiday Season, don’t ditch your workout!!! Let it make you “feel good” by engaging in exercise and releasing some ENDORPHINS!!

New Year’s Resolution – Finding Our Unique Purpose

By Brigit Atkin Another new year…another fresh start. As we make our New Year’s Resolutions each year, we usually make a list of things we are going to change. Most of us want a lot of the same things: health, financial freedom, happy relationships, and fulfillment in life.

We all want a sense of purpose – a life purpose. Something that’s personal and empowering. So how do we go about finding our life’s purpose?

First, let’s gain some understanding about the origin of making New Year’s Resolutions, and how it can help us as we move into a new year. The tradition of New Year’s Resolutions goes all the way back to 153 B.C. Janus, a mythical king of early Rome was placed at the head of the calendar. With two faces, Janus could look back on past events and forward to the future. Janus became the ancient symbol for resolutions and many Romans looked for forgiveness from their enemies before the beginning of each year.

So our first step then is to look at the past year and learn all that we can from our experiences. What did we do right? What did we do wrong? What didn’t work, and what did? Experience is a powerful teacher, so let’s use it for our highest good.

Next, we move forward by making a Personal Mission Statement. Successful businesses make a Mission Statement, and so should we. This personal motto will serve as a guide and provide clarity as we make worthwhile goals for ourselves. Stephen Covey, in his book, 7 Habits of Highly Effective People says: “Writing or reviewing a mission statement changes you because it forces you to think through your priorities deeply, carefully, and to align your behaviour with your beliefs ” A Personal Mission Statement might look something like this: I live to serve my talents as communicator, artist, and independent businesswoman. I create balance in work, play, and community. I inspire those I interact with.

To create your own mission statement, list your answers to the following questions: * What do I want to do? * Who do I want to help? * What will be the result – what value will I create?

To help answer some of these broader questions, make a list of specific qualities that are unique to you. This should include the following: 1. W hat are your natural talents? What comes easy to you?

2. W hat were some challenges, difficulties, and hardships you’ve overcome? How did you do it?

3. W hat activities make you lose track of time?

4. W hat do people typically seek your advice about? Need your help with?

5. What are your deepest values?

6. You are now 90 years old, looking back happily on your successful life – what mattered to you most?

This exercise should take some time, but will pay off abundantly as you align your goals accordingly.

Once our Personal Mission Statement is created, goal-setting becomes easy, as we now understand our unique focus. As D.M. Dellinger said, “You are unrepeatable. There is a magic about you that is all your own.”

As this new year starts, let us first reflect on the experiences of the past; contemplate our interests, talents, and strengths - then move forward with the confidence of someone who knows their life purpose.

How to Be Smart About Your New Year’s Resolutions

By Dr. Coleen Andruss, Board Certified Bariatric Physician Another year has come to an end and if you are like millions of other Americans, you have made a New Year’s resolution regarding your health. Because our obesity numbers continue to increase, weight loss still haunts us as the number one New Year’s resolution. Studies show that 68% of Americans break their resolutions by springtime.

After one year, only 15% are successful with the resolutions that they have made. So, rather than a New Year’s resolution, make it a NEW ME resolution that you keep forever!

Q: EVERYONE ALWAYS SAYS “EAT LESS AND EXERCISE MORE.” WHY DOESN’T THAT ALWAYS WORK? A: The problem in America is that we don’t eat enough protein, we eat too many carbs, especially the bad carbs and starchy carbs, and we eat too much of the bad fat. This combination slows metabolism, even if you are exercising more and eating less volume of food.

Q: WHAT IS A SAFE AND HEALTHY WEIGHT LOSS? A: We must set realistic goals. We all would love to lose weight fast, especially after the holiday season is over. However, numerous studies demonstrate that rapid weight loss is not always safe and is typically not long lasting. Permanent weight loss must be accomplished slowly with an average of 1-1 1/2 pounds per week.

This allows our body time to adjust naturally.

Q: HOW IMPORTANT IS SLEEP IN HELPING WEIGHT LOSS? A: Two major neurochemicals in our body, ghrelin and leptin, are affected by sleep. When sleep is down, ghrelin rises and leptin decreases, both affecting appetite. The desire for high carb calorie dense foods increases because the body needs energy. Individuals who sleep less than 8 hours have higher values of body fat. Remember, you burn fat while you sleep.

Q: WHAT ARE THE EFFECTS OF STRESS ON MY HEALTH AND WEIGHT LOSS? A: Stress raises our body’s cortisol level. Cortisol is necessary in our body for restoration of energy, just like Insulin is necessary to control blood sugar. Stress can be due to physical stress such as over-exerting, lack of sleep, or emotional/mental stress. Cortisol encourages the body to refuel itself after responding to a stressor.

If there are significant elevations of cortisol, your appetite will be increased! Cortisol also tells the body to store fat in the abdominal region so that it can prepare for the next stressor. Fat uses less energy than muscle, so the body tries to hold onto fat and get rid of muscle mass because it requires too much energy. DESTRESS and BALANCE YOUR LIFE! Q: HOW CAN I MAKE A NEW YEAR’S RESOLUTION FINALLY WORK FOR ME? A: REMEMBER, this is a lifetime commitment. #1) Clean out the refrigerator and cupboards. Get rid of ALL extra stuff. THROW THEM AWAY! Stock up on fruits/ vegetables, get rid of all soda, and drink only water! #2) Keep a record of everything that goes into your mouth. No need to count calories; the first step is just recording what you are eating, when you are eating and how often you are eating #3) Walk. Keep a record of your activity level. Start slow and work your way up. #4) Be realistic. BUT, set goals! Write them down. Put it on your refrigerator with your food and exercise diary. Put it on your bathroom mirror.

Good Thing Too Much of a

“You can’t have too much of a good thing.” Especially after the holidays, this aphorism seems untrue, or at least in need of qualification. Each January it’s pretty common to feel burdened by all we’ve partaken of over the holidays, hence the New Year’s resolutions to eat better, spend less, and exercise more. Resolutions are good things, but in the same way Newton’s Third Law of Motion says there’s an equal and opposite reaction to every force a body receives, it seems that for each New Year’s resolution there’s often an equal and opposite failure in will power.

We get used to having leftover pie around the house, and when New Year’s Day rolls around and the leftovers are gone, we may feel a bit deprived, then dig into the chips and dip more than we might otherwise do. It’s as if by not eating the piece of pie we feel we’ve earned a “credit” toward overindulging in something else.

Research shows that our tendency to lose our resolve is heightened when we’re depriving ourselves of other things we want. I don’t think there is a magic trick for overcoming this – it’s human nature to set a goal, fall short, and try again. But there are ways to perceive change as a positive thing, rather than a deprivation.

If eating better is one of your New Year’s resolutions, my suggestion is to add things to your diet, rather than focusing on taking things away. Having a pantry stocked with treats would undermine anyone’s healthy eating goals, so removing temptation is part of the equation. But while you’re choosing not to replace the Christmas candy with more candy, you have an opportunity to add things that will satisfy you as well as help you meet your goals.

When trying to increase fruits and vegetables, whole grains, and lean protein in your meals and snacks, try thinking of how you are adding variety, rather than abstaining from “bad” foods. A simple, achievable goal is to add one vegetable or grain dish to your evening meal. You might try adding “5 vegetables I didn’t eat last week” to your shopping list, choosing vegetables that catch your eye at the grocery store, and then looking up simple ways to cook them later at home. Try the same thing with grains and beans. If you have kids who are picky eaters, allowing them to choose new foods and help prepare them often piques their interest in trying them at the table.

With snacks, portion control can be the most challenging part of eating right (this is a place where you have to be careful about adding). Try pairing each snack you eat with a full glass of water. You’ll feel fuller and give your body the cleansing hydration it needs. It also helps to put your snack on a plate – just as you would a meal – rather than eating out of the box. You’ll be surprised at how full the plate looks, and less inclined to grab another handful. Finally, try making your snacks more than just one thing, for example crackers and apple slices, rather than a double portion of crackers. When it comes to food, adding a variety of healthy items will short-circuit that pull toward indulgence we feel when we focus on cutting things out of our diets.

By Kristy Ann Pike Most older persons have at least one chronic condition and many have multiple conditions, according to the Department of Health and Human Services Administration on Aging (www.aoa.gov).

Those conditions include, among other things, arthritis, heart disease, cancer, diabetes, and hypertension.

While aging is a natural process, there are steps that help maintain good health, according to internist Dr. Todd Garrett of Intermountain Cedar City Clinic.

Dr. Garrett suggests: Don’t smoke. “Smoking is one of the most detrimental things you can do to the body. Not only does it cause cancer, it also contributes to chronic lung disease and heart disease.”

Exercise. “I recommend 40 or 50 minutes of exercise at least three times a week for my older patients. Maintaining an active lifestyle can become more difficult as we age, due in part to joint issues. If you can’t walk, try pool therapy. Do as much as you can do.”

Maintain a balanced diet. “I’m not a big fad diet guy. We need a variety of foods in the right ratios. Most of us don’t get enough fruits and vegetables, and we need to avoid simple sugars.”

Stay on top of screening tests. “Recommended screenings can vary for those who have a personal or family history of diseases, but in general, women should have mammograms annually starting at age 40, and pap smears every year-to-three years between age 18 and 65. Men should discuss prostate screening with their physicians. Men and women should have colonoscopies every ten

years starting at age 50. If you have a personal or family history of skin cancer, especially melanomas, you should see a dermatologist for regular screenings.”

Stay current on vaccinations. “It is especially important to avoid illness as we age since the immune system is not as strong. Everyone should have a flu shot every year.
