From The Publisher As Kaylene and I sat down and began to make plans for the upcoming year, we became very excited. This past year has been fun and rewarding and we look forward to another great year.... we made it through our first year without too many bumps and bruises. This year we will be expanding our social media presence, we hope to increase our circulation to over 10,000, and expand the number of locations that you can pick up the magazine. We would like to welcome Maria Twitchell of the Cedar City Brian Head Tourism Bureau to the magazine. We are glad to have her, she will be adding an article each issue for us. This time she shows us how we can all enjoy a nice day in the snow (see cover), with her article on Cedar Breaks in the winter. We look forward to her insights and tips.

This issue we have a couple of spotlights that we hope will peak your interest. The article on the Top Spot and the 52 years that it has been here in Cedar City, will either bring back a lot of fond memories of food and friends and how they seem to always be connected, especially for those of us that are of the “getting older” generation. Or if you are new to the area, it will show you some of the character that comes from those people and places that have and continue to make Cedar City great.

The Southern Utah Woodturners Club article will showcase the talents of those that live among us, in more ways than one. Taking an ordinary piece of wood or old log and turning it into a piece of art on a lathe.

The club works very closely with the schools in the area. In fact, the ads for the Southern Utah Woodturners Club in the next three issues were designed in a design competition in Scott Andersen’s Cedar High graphic arts department. The club has also donated equipment to the schools for the students to use in wood shop, as well as money and products to the hospital. Check out the next couple of issues for more information, pictures and activities of the club.

As I was perusing the food holidays for this issue, I came across a couple that were listed and didn’t really seem to fit the mold. There seems to be a holiday for just about anything that you could ever want to celebrate, but these two dates stood out.

February 20 Don’t cry over spilt milk day.

March 26 Make up your own Holiday Day. I guess that if we survive February 20th (Don’t cry over spilt milk day) without getting too depressed, then we will have more than a month to plan our own holiday for March 26th (Make up your own Holiday Day). We would encourage you to get your family or friends together and enjoy the day celebrating a food that is a family favorite or venturing out in doing something that could become a new family tradition. After all, it is the memories that we make along the way that makes life rewarding and memorable.

Discover the Red Rock Winter Wonderland of

Cedar Breaks

By Maria Twitchell, Cedar City • Brian Head Tourism Bureau Cedar City has long been known as the “Gateway to the National Parks”. With Bryce Canyon and Zion National Park just 90 minutes away, and Cedar Breaks and Kolob Canyons just minutes from Cedar City, it’s easy to see why. National Parks are always busy in the summer; however, in the winter time a whole new world unfolds for these majestic red rock wonders, and with less crowds to deal with, a winter escape is easily in order.

Probably the most underrated park in south west Utah is Cedar Breaks National Monument. Smaller than its cousin Bryce Canyon, Cedar Breaks often gets overlooked in the “Grand Circle” of parks.

However, just take a moment to gaze into the red rock amphitheater of Cedar Breaks, and with each look you’ll discover something you’ve not seen before; an arch, a trail, a funky rock formation. Cedar Breaks is a spectacular sight any time of year, but the wintertime vistas of “The Breaks” are well worth the extra effort.

Yes, Highway 148, the road that links Cedar Breaks to Brian Head, closes during the winter, but that doesn’t mean Cedar Breaks is closed. The road becomes a stunning groomed snowmobile trail that also connects with other trails along the Cedar Mountain Snowmobile Complex. (Cedar Breaks is one of only two parks in the national park system that allows snowmobiling.) Don’t have a snowmobile? Tours are available in Brian Head at Thunder Mountain MotorSports 435-677-2288.

The Winter Warming Yurt on the Brian Head side of Cedar Breaks serves as a winter ranger station and education center, and welcomes cross-country skiers, snowshoers and snowmobilers to stop in, sit by the fire, and sip a bit of hot cocoa. Every Saturday during 6 www.cedarcitymag.com

February, free winter snowshoe hikes are offered by National Park personnel to the Yurt. You’ll learn about the park’s winter ecology as you snowshoe into the park. Reservations are required so they can reserve your snowshoes, so please call 435-586-9451 extension 4425 to save your place.

You can also join rangers and volunteers from Cedar Breaks National Monument and Brian Head Town on the evenings of Feb. 14th and March 14th, for the “Cosmos on the Mountain” event where stars will be viewed at a breathtaking 10,000 feet. The Cedar Breaks/ Brian Head area was voted one of the “Top Eight Destinations in the World to See the Night Sky” by USA TODAY. The evening activities include a short presentation about Cedar Breaks, then a ranger-led constellation tour with telescope viewing of deep space objects. The fun begins at Brian Head Resort’s Navajo Lodge at 7 p.m. Participants also will enjoy free hot chocolate, and don’t forget to dress warmly!

Jane Roberts A Proud Heritage

As a young girl, Jane Esmeier Roberts knew many of the 6,000 or so inhabitants of Cedar City, and knew an overwhelming number to be — like her — descended from the town’s founders. Today, more than 30,000 people live in the city, but the genealogical threads and the spirit of the pioneers remain integrally woven into the community.

Jane’s great-great grandfather, Thomas Bladen — a skilled iron worker from Shropshire County, England — came to town with the first pioneers and soon welcomed sons Thomas Samuel Bladen and Cornelius (Neil) Cattle Bladen, who became two of the most storied figures in the founding of Southern Utah University.

The Bladen name is somewhat scarce in town these days, but the pioneer daughters married into families whose names are quite familiar, including the Adamses, the Heybornes, the Higbees, the Bullochs, and the Lambeths. Corinne Lambeth, who would be Jane’s mother, met a young serviceman with the 316th Army Air Corps Training Detachment in place at the University during World War II. Norman Esmeier, of Evansville, Indiana, was one of quite a few such servicemen who were smitten by local girls, as well as the beauty and lifestyle of the area, and settled down here after the war.

Jane graduated from Cedar High in 1966 and when high school sweetheart Dan Roberts asked Norman for permission to marry his daughter, her father presented him with two conditions: Jane’s beloved horses would have to go with her, and Dan would have to join the local National Guard unit in which Norman had served for many years.

That led to Dan’s distinguished career that culminated in his command of the 222nd Field Artillery Battalion.

It also strengthened Jane’s love of the American saga and of the military throughout the years. And while she loved horses, she embraced a new passion in the story of the Bladens, who proved so pivotal in the founding of what is today, Southern Utah University.

It was Thomas who served on the fivemember building committee to construct Old Main in order to secure the University, while Neil was the driving force of the mountain expedition to haul the lumber down in the legendarily grueling winter conditions. Their stories have become elemental in the lore of the University’s founding.

Jane graduated from SUU in 1972, with a teaching certificate and degree in English, and taught at Cedar Junior High, then accompanied Dan to Fort Sill, OK, when

he attended FA Officers Advanced Training.

Later, back in Cedar City, Jane was a telephone operator, a cable splicer for Mountain Bell, taught as an adjunct instructor in the SUU English department, and returned to Cedar Middle School, where she taught for 13 years.

Dan became the principal broker and owner of Coldwell Banker Advantage Real Estate Corp. in Cedar City. They are active across a wide range of civic causes, and have two children in town, with three grandchildren, and another on the way.

Jane, fully championing her heritage surrounding the founding of the school, remains a steadfast friend to the University.

She points to the great influence her teachers had on her life, faculty members like David Lee, Gene Woolf, Glen Dale Anderson, Jim Miller, Carmen Jones, Fred Adams, Kent Myers and Mark Webster.

She and Dan will be among those who will celebrate Founders’ Day activities on campus March 16-20. (Readers can visit suu. edu/alumni for a schedule of events.) And, Jane is sure that Thomas and Neil will be watching over the festivities from the land of their reward, undoubtedly pleased that they are still remembered and that the institution they helped build continues to thrive 118 years later.

Winter months don’t have to be dreary months. Visiting a frozen pond, reservoir or lake can brighten your day in a flash. Winter is a great time to go outside, breathe some fresh air and catch some fish. That’s right — those “crazy” people you see standing on the ice, at waters across Utah, aren’t so crazy after all. They’ve found a fun way to get outside, breathe some fresh air and catch lots of fish.

Drew Cushing, warm water sport fisheries coordinator for the Division of Wildlife Resources, says winter is one of the best times of the year to fish. “Winter provides advantages you won’t find during other times of the year,” he says. “And the fishing can be really good.”

You can stay updated on where fishing is best at wildlife.utah.gov/hotspots. Two additional websites — bigfishtackle.com and utahwildlife. net — also provide updated ice fishing information.

A cheap and fun way to fish.

Cushing says ice helps anglers several ways: • If you’re willing to walk, you can reach any part of the lake or reservoir you want to fish. Cushing calls ice “the great equalizer.”

“In the winter,” he says, “you don’t need a boat or a float tube to reach certain parts of a body of water. If you have a rod and a reel, and you’re willing to walk, you can reach any part of the water you want to fish.”

• Catching fish in the winter doesn’t require the skill needed to catch fish during other times of the year. Just drop your bait in front of the fish, and wait for the fish to take it.

• You don’t need a lot of expensive equipment. A short rod and reel, some hooks and sinkers, wax worms or meal worms, an ice auger or a digging bar, and a large spoon or something you can use to scoop ice chunks that form in the hole you’re fishing, are all you need to get started.

If you like to fish with lures, you may want to include some small jigs and ice flies in your tackle box, too. Cushing says chartreuse and red tend to be the best colors to use when fishing through the ice.

• Because you can drill two holes close together, ice fishing is a great way to double your fun by fishing with two poles.

• In addition to catching fish, you and those you’re fishing with can talk and socialize. Just drill your holes close together, and have fun. “Most ice anglers really look forward to the social side of ice fishing,” Cushing says.

for the conditions. Cushing says one piece of equipment anglers often forget is a pair of insulated, waterproof boots. As the day warms, slush can develop on top of the ice. “Having a pair of waterproof boots will keep your feet warm and dry,” he says. Also, wear your clothes in layers.

That way, if the day warms up, you can remove a layer and still stay warm and comfortable.

Sounds great. But isn’t it hard to drill a hole through the ice?

One thing that surprises many first-time ice anglers is how easy it is to drill a hole through the ice.

Cushing says if you have a hand auger, you can drill through six to eight inches of ice in about a minute. “It’ll take a little longer if you use a digging bar,” he says. “If you’re using a digging bar, try to find some holes that were recently drilled. There’s a decent chance that the ice in those holes won’t be very thick.” Digging bars cost between $5 and $10. Manual ice augers cost about $50.

Yes, there is a great one on YouTube, entitled “Ice Fishing Basics, Jan. 8, 2015,” https://www.youtube.com/watch?v=cxHlcS4hM-0 &feature=youtu.be&t=6m50s. The video shows a clinic that was held recently in Salt Lake City and is a great way to learn more about the basics of ice fishing. “After you have watched this, you’ll be ready to hit the ice and have some fun.” Cushing says.

Great! But how can I have fun if I’m cold?

Temperatures can be cold during the ice-fishing season. But that doesn’t mean you have to be cold. You can stay warm simply by dressing

Sounds good. But how do I know if the ice is safe to walk on?

Most anglers wait until the ice is at least 4 inches thick before walking on it. Ice is usually thinnest near the shore. Before you walk out, Cushing says you should drill or dig a test hole to see how thick the ice is. You may also want to drill or dig some additional holes as you walk out. If the ice in your test holes is at least four inches thick, you can be almost certain that the ice farther out is at least four inches thick, or thicker.

TOP SPOT Need I say more?

“You gotta stop!”

By Randy Lovell From its humble beginnings in 1963, the Top Spot, with a single drive up and walk up window to its current state, the Top Spot has become one of the truly unique places to eat in Cedar City.

Little did Clark Barton realize the impact “the little business” he purchased from Norv Jones in 1970 named the Top Spot, would have on his family and posterity... 45 years later and still going strong. Craig Barton started innocently enough, working for his dad in 1973, and in 1981 he decided to make it a career and purchased the “drive in/ restaurant/gas station/game room/hang out/or whatever else you would like to call it” from his father.

And that is where this story begins. The other day I said down with Craig, and we reminisced together about this icon in the community. After 42 years, Craig and his wife Ann are still involved in the operations. They have enjoyed working together in this truly mom and pop environment along with their family. In fact, all six of their kids grew up working in the restaurant, all the way through college. They are all gone now, but grandkids are starting to work, four generations and counting.

Back in the day, life was a little different. When Craig first started, there was a full service gas station and where they pumped the gas, cleaned the windows, checked the oil, tires etc. Or there was a drive-in restaurant that just served food. There was no such thing as a “convenience store or self-service gas stations.” From the beginning, they found out they could sell gas for a few pennies less per gallon if they didn’t have to hire all the extra help to clean your windows etc., and they became the first self-service gas station in Southern Utah, BUT they also sold food. Customers were heard to say, “Wow that is crazy, you sell food and gas … that is weird.” They

were well ahead of their time.

They even had a counter full of candy and treats and all kinds of ice cream for the kids. You could then, and still can get gas, order a delicious burger or sandwich, get some candy, an ice cream cone and play a video game or two, all in the same place. Through the years they have tried to keep the old flavor, reminiscent of the 80’s. “I haven’t changed it much, it is getting a little older but I still like the consistency, you can kind of go back in time,” says Craig.

Craig and Ann have always been people that cared about people.

They have loved working together, working with the public and with their employees, and it shows. It is the employees that makes the Top Spot special.

You can visually see that the staff truly enjoy their jobs. In fact, more than half of the current day shift are employees that have come back to work again. It may be surprising to some why so many would want to come back to work at the Top Spot after they have grown up, but it is not to me. It’s the culture that Craig and Ann have developed over the years, one in which employees are treated like family.

Currently they have about 25 employees, but over the years more than 1,000 have been part of the Top Spot family. Chris Cooley, a former employee and manager says, “Once you are part of the family, it doesn’t matter what you go on to do in your life, you will always have the memories and friendships that you made at the Top Spot. It doesn’t matter where or when you meet up again, it is always fun to reminisce about the times at the Top Spot.” Like Chris, this was and has been the first job for many of the employees. She said, “She couldn’t have asked for a better start in life. It was there that she learned the value of hard work in a fun environment. We had a lot of fun, but at the same

Community time we were expected to work hard and to take care of the customers.”

Craig is proud of his employees. “We still have car hops,” he says. Very few places actually have people come out and take your order anymore. This face-to-face contact allows the customer to feel important, knowing that they are more than a just voice in a box.”

This personal service is one of the reasons Craig is still working. He truly likes his customers, and over the years he has developed a friendship with many of them. Many of their customers have always been students. Craig would watch the kids come up from the high school (Cedar High - yes, there was only one at that time and it only had 300 students), and stand outside and shiver in the winter time. In the summer, it was either too hot or too windy for them, so he added the inside dining room and a game room to make it more comfortable for them.

The menu has evolved and continues to change as customers wants change. Along with the standard fare of excellent burgers and fries, their specialty sandwiches are the best in town.

The Club, Craig’s Favorite (beef ), pepper steak, or fish and chips, and don’t forget the “to die for” onion rings. Whatever your taste, you can find it at the Top Spot.

In the early 1970’s, the slogan “quality you can taste” was added. You don’t see it anymore, because apparently In and Out Burgers had a patent on the phrase in the 1950’s. Craig said, “He had never even heard of them until a few

My husband loved his “Craig’s Favorite” sandwich, a roast beef sandwich on sourdough bread with green chiles. I opted for the “Club Special,” a roasted turkey on sourdough with swiss cheese, bacon, etc. Both sandwiches were excellent and the young ladies at the counter provided excellent customer service. The 70’s wood paneling and mini-arcade only added to the retro charm of the meal. This is a great place to grab some quality fast food, for a reasonable price.

But even though they can’t use the slogan anymore, the quality is still there.

The “Cow” on the roof has become as much a part of the Cedar City landscape as the red rocks on the mountains. It has been the subject of many pranks over the years, from becoming a bull, to appearing in a wedding ceremony, and posing for a picture at a family reunion. It even changed places with the famous “horse” at Dicks Café in St. George during the old Cedar-Dixie rivalry days. Yes, they were caught, and it made the perpetrators famous. It landed them on the front page of the local newspaper (but not in jail). I am sure there are many more stories about the “Cow,” but they will have to wait for another day.

Friday nights are as busy as ever as the crowds after ball games continue to come, and they are now joined by people from Las Vegas on their way to enjoy their summer homes on the mountain. Sunday afternoon the parking lot looks more like an ATV/RV convention as those “weekenders” go back to Las Vegas.

As Cedar continues to grow, the Top Spot continues to grow with it. Most of their business is from locals and their extremely loyal following continues to pass along the secrets of this great place.

There truly is only one “Top Spot,” a mom and pop shop with a difference. It makes a difference when your heart is there, and Craig and Ann’s hearts have been there for over 42 years!

Top spot is your classic drive inn, with all the good ol’ fashion comfort food.... but by far my favorite is the hot dogs! Less than a buck. The pin­ball machines are a blast!

Turning Wood Into

Art

For decades, Southern Utah has been renowned for its diverse and plentiful contributions to the arts and art appreciation. Whether it be theatre, music, fine arts or crafts, the area has much to offer its community members and those visiting. One area of artistry that has been around for centuries but has seen a recent boost in interest and growth is that of woodturning.

Woodturning is a form of woodworking that differs from other types, in that the wood is rotating on a lathe as a stationary tool is used to carve and shape it. Beautiful and intricate designs can be formed by skilled hands using the turning tools. The art form originated around 1300 BC by the Egyptians, and was later modified and improved upon by the Romans. It then spread across Germany, France, and Britain. During the industrial revolution, the lathe was

motorized, making it quicker and easier to produce high quality work. It has become a hobby for many people, and Southern Utah has claim to some highly skilled craftsmen, two of which founded the Southern Utah Woodturners Chapter.

The Chapter was formed in 2009 under the direction of Will Arcularius and Jerry Keller. “We thought that we might attract another half-dozen interested turners if a poster was placed out and about announcing the club’s first meeting,” recalls Arcularius. “Well we were wrong,” he continues, “twenty-five turners showed up at our first meeting! They came from as far away as Fillmore, Utah, and Mesquite, Nevada. At last count we are at 82 members and are continuing to grow.”

The club met at members’ homes when it was first organized, but grew so quickly they decided they would need more space. Thanks to Todd Thorley, Career and Technical Engineering instructor for Cedar High School, they were able to utilize Cedar City High School’s wood shop as a meeting place, and in turn agreed to help mentor young woodturners to carry on the tradition of the craft.

They went above and beyond merely mentoring the students. They secured a grant from the American Woodturners Association and contributed the entire amount to the purchase of updated equipment and turning tools for the high school shop. But they didn’t stop there. They agreed to sponsor memberships into the club for each high school student with no membership fees, do demonstrations in the shop for students during classes, and sponsored a high school turning challenge between Cedar High and Canyon View. “We feel that by doing these competitions, we can increase the number of student woodturners, and their skills, and the recognition of the significance of giving back to the community,” says Arcularius. As an added benefit, their turnings have raised awareness of woodturning in general for Southern Utah.

For the last four years, the Southern Utah Woodturners have turned and contributed over 400 Christmas ornaments, bowls, pens, bottle stoppers and more to the Jubilee of Trees, benefiting the Dixie Regional Medical Center in St. George, Utah, and the Hospital Foundation of the Valley View Medical Center in Cedar City, Utah.

The custom hand turned Christmas ornaments are being sold at the Cedar City/Brian Head Visitors Center throughout the year. The other items are being sold at the Gift Shop at Valley View Medical Center. These donations have been determined by the charitable organizations to have a fair market value of $6,700 with no expense to the organizations. The club has also involved Scott Andersen’s Graphic Arts class in producing the ad for this magazine. The top three finishers in the competition will be represented, and the students will actually get to see their work published!

The club is open to all levels of turners from beginners to advanced. Free classes are offered to each member in addition to the monthly demonstrations at club meetings. Each member has access to the club library which has approximately 50 training DVDs to help the beginner improve his craftsmanship.

SUU’S Department of Theatre Arts & Dance Presents A 50th Anniversary Production of the Tony Award-Winning Musical “Fiddler on the Roof” February 23, 24, 25, 26, 27, 28 & March 2 Southern Utah University, Cedar City, Utah: A half a century ago, a story of family facing the challenges of a hostile and changing Russia would go on to become a classic of the American musical theatre. This February, SUU’s Departments of Music and Theatre Arts & Dance, celebrate the 50th anniversary of the Tony Awardwinning musical Fiddler on the Roof. This beloved musical will be performed on February 23, 24, 25, 26, 27, 28 and March 2 at 7:30 pm, with a matinee performance on Saturday, February 28 at 2:00 pm, in the Randall L. Jones Theatre on the SUU campus in Cedar City.

The production features Peter Sham as Tevye and Utah Shakespeare Festival’s Melinda Pfundstein as Golde.

Opening originally on Broadway in 1964, Fiddler on the Roof became the first musical in history to run over 3,000 performances.

The production was extraordinarily profitable and highly acclaimed – nine Tony Awards including Best Musical, score, book, direction and choreography. It has had four Broadway revivals and was transformed into a highly successful film adaptation in 1971. The show has enjoyed enduring international popularity and remains a very popular choice for school and community productions.

The History of Nutrition:

By Emily Fonnesbeck RD, CD, CLT Nutrition dates back to the beginning of time. In 400 BC, Hippocrates said “Let thy food be thy medicine and thy medicine be thy food.”

My favorite early account of nutrition is found in the Bible.

Daniel Chapter 1 tells of Daniel and his friends choosing not to eat the king’s meat and alcohol. Instead they ate grains, vegetables and water for ten days. At the end of the ten days, Daniel and his friends appeared healthier than all the king’s men.

Unfortunately, food as medicine is not used today as it should be. Our society runs on trends and fads rather than sound nutrition recommendations. This is unfortunate given the large amount of evidence based research on what constitutes a healthy diet. No matter how many fads come and go, there are basic principles that have stood the test of time.

1. Plants are best. Research shows that it is impossible to overeat on four basic food groups: fruits, vegetables, complex carbohydrates (starchy vegetables and whole intact grains – no flours) and beans/ legumes. The amount of fiber and volume prevents overeating.

When you chew your food, it goes to your stomach where stretch receptors send hormones to your brain signaling fullness. Without volume, you don’t feel full. Research shows that most people eat the same volume of food everyday – roughly 4 lbs in weight, give or take 18 www.cedarcitymag.com

your size. Most Americans power pack by eating the most amount of calories in the smallest volume possible (fast food, packaged foods, animal products, oils, nuts, etc). We want to do the opposite; high volume but calorie dilute. The added benefit to this is that calorie dilute usually means nutrient dense, which is really what we are after. Lots of nutrition in little calories! The best part? No need to count calories. Focus on quality rather than quantity.

2. Healthy Fats. Potato chips have 10 grams of fat per serving. Peanut butter has 15 grams per serving. If you only care about quantity, you might choose the potato chips.

But fats, and calories for that matter, are not created equal. Quality fats include avocado, nuts, seeds, olives and (small amounts of ) fatty fish. And oils? Don’t believe the hype.

There is a romanticism of oils currently that is dangerous and unwarranted. Oils are liquid fat with no nutritional value. If you use oils for cooking or baking, that’s one thing. But using them, ANY of them, because you think they are healthy isn’t wise. In addition, even healthy fats should be limited for weight control. Sugar, salt and fat (even healthy fats) are addicting. They activate reward centers in our brain that push us to continue eating. This is how the food industry keeps us coming back for more.

3. Starch Madness. When people quit eating “carbs”, they lose weight. But let’s take a look at what they give up: deep dish pizza, cookies, breads, cake… and we wonder why they lose weight? It’s not a matter of carbs, they just quit eating junk. Potatoes are not a problem, it’s what you put ON the potato that’s the problem. At the end of the day, your health problems did not come from eating too many plain potatoes or too many bananas or too much quinoa. So if it comes from the ground, it’s free game.

Lastly, use common sense when sorting through nutrition misinformation. Here are a few red flags: •P romise miracles •R equire large investments of money • Do not require exercise or changes in eating habits • Recommendations based on a single study or studies funded by the company selling the product •P ersonal testimonials • Require fasting, cleansing or other possibly harmful self-treatment options What’s right isn’t always popular, and what is popular isn’t always right. Let’s get back to basics! A healthy lifestyle needs to be a priority and will take effort. But it shouldn’t be expensive, confusing or unattainable.

Armed with common sense and principles that last, you will get there!

Steak and Gorgonzola Toast with Herb-Garlic Cream Sauce “This appetizer works for so many occasions because the steak and herb cream can be prepared ahead and refrigerated�

1. Pre-heat oven to 475 degrees 2. Place tenderloin on a broiler pan coated with cooking spray.

Sprinkle with kosher salt and cracked pepper. Bake at 475 degrees for10 minutes. Reduce temperature to 425 and cook an additional 20 minutes. Cover tenderloin with foil and let rest for 10 minutes. Cut tenderloin cross grain into very thin slices.

3. Spread each baguette slice with one tsp of the herb garlic cream. Top with one spinach leaf, sliced tenderloin and 1/2 tsp crumbled Gorgonzola cheese. Kick it up if you would like with a drizzle of balsamic reduction.

Maintaining Financial Health with Mortgages

Financial health is important to overall wellness. Just like we consult a doctor or other health care provider to help maintain our physical well-being, it is imperative to our financial health to consult a licensed financial planner (or registered investment advisor) along with a certified mortgage planner to get a wide angle on how you are approaching your next home purchase. This is especially important during your retirement years. It always amazes me the mistakes that are made when buying a home, retiring, or moving 401 K’s and/or IRA’s that could have been prevented.

Here are some of the most common mistakes clients make when purchasing a home: 1. Withdrawing funds from a 401 K or IRA retirement plan for a down payment on a home. This could cause a sizable taxable event, and can be strategized in several ways to minimize the down payment and spread the funds across multiple tax years to reduce your penalties. Another strategy is to simply borrow funds from your 401 K (instead of withdrawing them) and pay taxes in the year you withdraw. If you borrow against your account, there may be some significant advantages in doing so versus a straight withdrawal.

2. Building wealth long term with today’s interest rates. If you are paying mortgage insurance in any fashion, you should get a second opinion on your specific situation. There are a lot of options to bypass mortgage insurance and eliminate a waste of payments that do not benefit your plan of growing equity and overall wealth.

3. Taking out a 15 year loan and paying a home off early. There are more benefits to taking out a 30 year fixed and building wealth outside of the mortgage than trying to do a 15 year loan and paying a home off early. Let’s say you are borrowing at 4.0% and writing your interest deduction off, net borrowing at 3.0% for example (depending upon your tax bracket). My thoughts are, if you have anything better than 3.0% to invest in, why would you put your money toward a mortgage instead of a mutual fund with a 20 year plan? 4. Paying cash and/or taking out a conventional loan versus the HECM loan. If you are retiring in a home that you will be in long term, you need to look at all of your options with the HECM loan versus paying cash and or taking out a conventional 22 www.cedarcitymag.com

loan. There is a reason that 60% of our clients over 62 are using the HECM loan versus other options where you are making payments for the rest of your life.

Today, my plea to each of you is to take a look at your next mortgage purchase very carefully. As a registered investment advisor representative and senior mortgage planner, I have seen too many mistakes made by clients and mortgage brokers who do not consider all of the pros and cons in all areas to be considered when purchasing a home.

A Last Will and Testament (“Will”) is a basic and simple estate plan that can ensure your assets are distributed the way you want.

Perhaps the biggest “pros” to having a Will is that it is simple, straight forward and very affordable. Another benefit of a Will is the ability to list a guardian over minor children in the event the parents pass away.

This is a tremendous benefit for younger families that gives them the peace of mind of knowing that upon their passing, their children will go to families they select, rather than leaving such an important decision up to the courts. Perhaps the biggest “con” to having a Will as an estate plan is the likelihood that your estate must be probated as discussed below.

Contrary to common belief, you do not have to be a Kennedy to have a trust. Indeed, under Utah’s current laws, many non-millionaires will find great benefits in creating a trust. Perhaps the greatest “pro” in creating a trust is the ability to avoid probate courts. For example, if you do not have a trust set up and your estate is valued in excess of $100K, OR if you own real estate, Utah’s laws require that your estate be submitted to the probate court prior to your executor making any distributions from your estate. That means that if you own your house at the time of your death and do not have a trust set up, your loved ones will be required to submit your estate to the probate court. Additional “pros” to having a Trust as an estate plan include: tax savings; privacy; and the ability to protect children or loved ones with special needs.

Every family is different and has different needs; as such, there is no “one-size-fits-all” approach to estate planning. Prior to creating any estate plan, it is best to consult with a licensed estate planning attorney. Many attorneys offer a free consult to discuss your individual needs and answer any questions or concerns you may have.

Unfortunately, numerous studies show that over 50% of Americans do not have even the most basic estate planning tools in place.

Hopefully, with a little bit of research and education, you will make 2015 the year you decide to get out of that 50% and create a solid estate plan to protect your family.

Quick work calculation – if you work full time, and spend 40 hours per week at work, you spend approximately 2080 hours in a year at your place of employment. Did you giggle out loud when you read “40 hours per week?” That giggle gave you away my workaholic friends.

Now, add 520 for the 10 hours overtime you confessed, via giggle, to working. Fact: the average person works 2600 hours per year.

Next, let’s assume you are lucky enough to sleep 8 hours per night.

You would net approximately 2920 hours of slumber in one year.

Given the 8760 hours that make up one year, 34% of the year is spent sleeping and 67% spent awake. Over half of your hours spent awake are – at work. LUCKY! According to Psychology Today, the average person spends 90,000 hours over a lifetime – at work. When we take the details into consideration, the case for being mindful of the way we spend our time is made for us. Doing what we love and doing it within a healthy environment is crucial for all of us. In addition, it is up to us take responsibility to recognize, request, create, and support. Read on.

Involve your employees, in meaningful ways, and your organization will see benefits – increased job satisfaction and productivity, reduction in turnover and absenteeism, and higher quality production. Think back to a time you needed a task completed in your home and you doled out the directions while the family was in formation, you yelled HIKE and everyone slowly strolled away and the task never came to fruition. Now recall the time you pulled the family into formation, put Amy in charge of production, David over quality checks, Adam wrangling maintenance, the team agreed on the completion date and OFF THEY WENT, and the project was a sparkling success. Felt different, yes? That’s power of involvement.

We all need balance and most of us really stink at it. We like hard work, power teams and winning extremes. Consider this fact from the BLS survey, “On the days they worked, 83 percent of employed persons did some or all of their work at their workplace, and 23 percent did some or all of their work at home.” Not to mention the fact that when we leave work, we don’t REALLY leave work. A CNN Money survey revealed that 25% of people check work hourly while on vacation, and 59% of us allow ourselves to check-in during holidays. Add in the well-known fact that workers in the U.S. forfeit over 50% of the time

off we are allowed, and you have a furious recipe for stress.

Efforts to help employees improve work-life balance can improve morale, increase job satisfaction and strengthen employees’ commitment to the organization. Workers have lives outside of work, and employers that recognize, plan and support programs that assist their employees in striking this balance create the infamous win-win.

Examples include flexible work arrangements, benefits for children, elders and other, and financial management resources are becoming more norm versus unique. If we can start with the TAKE YOUR VACATION part – I say it’s a good start.

A friend recently went on an interview and was sharing his excitement with me post event. “They asked if I would mind learning new things,” he exclaimed, “Imagine that someone would say no?” It is true, folks do say no to that interview question and as the interviewer, I have experienced the sadness inside when they do. Bishop T.D. Jakes said, “The world is a university and everyone in it is a teacher. Make sure when you wake up in the morning you go to school.”

The majority of us know the glory of learning, growth, and mastery – why don’t we bring it to the workplace? Coaching, mentoring and leadership, continuing education, career development and counselling, and opportunities for internal advancement are perfect examples of investing in the skills and strengths of people within an organization.

The return on these investments can net motivation, satisfaction, stress-management, quality and effectiveness.

Health and Safety - over above wet floor signs and flu-shots, is another element. Envision prevention, assessment and treatment of health risks and problems, and by encouraging and supporting lifestyles and choices that benefit employees. The ideas alone should speak to you on the benefits, but let me spell it out just a bit… encourage employees to live better, teach them how to find balance, keep your work environment safe and be conscientious and watch what happens. A few buzz words to consider on this topic, reductions in healthcare costs, absenteeism, and accident/injury rates.

Now, the last of the five items – Employee Recognition. Recognition is not only going to produce engagement and increased productivity, it will also net your organization the ability to realize lower turnover and attract quality workers. Recognition can be individual or in groups, formal or informal, and it does not have to include money. Ideas include recognition and celebration of milestones, performance-based incentives, and equitable compensation and benefits. Get creative – this is a knock-it-out-of-the-park opportunity every company can achieve.

Every organization is unique. Use these ideas as the framework for what will ignite, fan, and quench the fire within your employees, and if you are still unclear what a psychologically healthy organization looks like – consider this: create an environment that makes it impossible for your employees to call in sick for work.

The Secret to Marital Success

Olson, MS, LMFT When a client comes in for their first session, I always ask them what goals they have for therapy or what they would like to accomplish as a result of coming to counseling. Clients will often say, “I just want to be successful.” That success could be accomplished through their job, projects, hobbies, relationships or any other activity they may be involved in. There is something deeply satisfying that enhances our self-worth when we feel successful.

While success is a fine goal, I have pondered why some people seem unable to find success in various areas of their life, while others seem to be successful in almost everything they do. I came across a quote from Confucius that I believe has the answer: “Success depends upon previous preparation, and without such preparation there is sure to be failure.” As a marriage and family therapist, I have studied what it takes to have success in a marital relationship. I believe that couples who diligently prepare will naturally experience success.

If a teenager wants to get their driver’s license, they can’t just show up at the DMV and expect to obtain a license. In fact, a new driver must complete a driver’s education course, a medical/vision test, drive forty hours with an adult, and pass a written and skills test. The only way a driver’s license is issued is if the candidate has

prepared sufficiently to be a successful driver. However, when that same driver wants to get married a few years later, they can fill out a short application online, pay $45.00 and a marriage license is issued. I think there is something wrong with this picture! I believe that the success of our community and nation stems from the success of our families; yet, our society does very little to prepare couples for marriage!

When I was completing my master’s degree at BYU, I decided to run a premarital class. It was one of the most enjoyable parts of my graduate school experience. We discussed a variety of topics including finances, sex, inlaws, communication, gender differences and expectations.

We talked about real life issues that allowed the couple to take off the rose-colored glasses and really plan their future life together. Cassandra Kirkland, a family life specialist at Mississippi State University, stated, “Research shows that couples who participate in premarital counseling tend to have higher levels of satisfaction in marriage. These couples also tend to experience lower levels of conflict in marriage and decrease odds of divorce.”

Unfortunately, too many couples spend hours and hours planning a wedding, but don’t give that same investment of time to planning their marriage.

The Herbal Medicine Chest:

Ginger

What kind of herbal allies do you have in your herbal medicine chest? Many families have traditional herbal remedies passed down from generation to generation. Sometimes it is lemon and honey for a sore throat or horehound cough drops. If you have ever wanted to put together an herbal medicine chest, start with ginger. It is an herb that is GRAS (generally regarded as safe).

Ginger is a warming herb that is used in gingerbread and ginger ale. It is frequently used in cooking Indian and Chinese food. It has several medicinal purposes, and is one of the few herbs that has been studied and approved by the FDA. Ginger is the winter herb for our home. It increases circulation and warms the bodies of those adventurers coming in from the cold. It also speeds up the circulation of those curled up in the corner of the house with a book. A cup of ginger tea, hot or cold, with a touch of lemon and honey in it is delicious. It is easy to drink because it tastes so good! Because it warms the body, I love to drink a cup of ginger tea on cold mornings. To prepare the tea, grate a half inch piece of fresh ginger root, place in a mug and pour boiling water over the herb in the mug. Let the herb steep (in other words, let it sit) for 5 minutes. Strain the root pieces out and add honey to taste. Sometimes I add a little fresh lemon juice for a bit of vitamin C in my tea. Yummy!

Ginger is commonly used as a digestive aid for nausea and vomiting. Often a cup of ginger tea will soothe the nausea away.

Several years ago my husband and I went on a cruise in the Pacific Ocean. A storm caused the ship to “rock and roll”. Most of the ship passengers experienced severe motion sickness. Because we had brought our ginger capsules just for preventing the motion sickness, we were prepared. Taking one capsule every four hours settled our stomachs and stimulated healthy digestion, and it’s a lot cheaper than the over the counter medications.

Ginger also helps with muscles aches, cramping and pain. If

you have over exerted yourself and are experiencing sore muscles, you can use ginger for that. Just draw a warm bath and put 2 tablespoons of powdered ginger into the warm water. Ginger can be purchased in bulk at most health food stores. Get in and soak your aches and pains away. Use less ginger in a half bath and don’t use ginger if you have broken skin, rashes or wounds (because it burns).

As you soak, expect your skin to turn pink all over as circulation improves. Ginger also relaxes the muscles so expect to be able to rest and sleep better after taking a ginger bath.

Here is a delightful, fun recipe to make your own ginger ale. Make a strong tea from fresh ginger root with two cups of boiling water poured over one half cup of grated ginger root. Steep for ten minutes, strain and sweeten with honey. Cool this tea in the refrigerator. Just before you are ready to serve it, pour in 1 cup of sparkling mineral water. Enjoy!

So during the winter months, get your ginger out to help digestion, warm your body and help with aches and pains from all that snowboarding!

Chronic Disease

By David Haacke, DO More than one-third of the American population is chronically ill. That doesn’t factor in the idea that you can be eighty percent unwell before the first symptoms of disease manifest. Even if you have no outward signs of disease, you may still be heading into a downward spiral that will cause chronic disease later in life. It may take twenty years for enough tumor cells to show up on an x-ray or mammogram. At the time of the diagnosis, you’re at the end stage of a healing crisis, not the beginning. Your arteries could be ninety percent occluded (blocked) before you experience the first symptoms of angina (chest pain) or some other condition. It might take forty years for an occlusion to get that bad. You’re told it was caught early, when, in actuality, you got it at the end. So, we’ve got possibly another hundred million people walking around who are processing disease that is not yet diagnosed. Then we have another fifty million people who have the early stages of disease. These are our youth.

Most of what we call aging is simply the presence of disease – chronic, seemingly ubiquitous disease that makes us age with such apparent time-dependent consistency that we accept it universally as “simply getting older.” Estimates suggest that up to ninety percent of adult illness is due to the degenerative processes of aging. Despite commonly held beliefs that aging is mostly out of your control, inherited genetics accounts for less than thirty percent of all aging effects, and the importance of genetic inheritance matters less and less the older your calendar age. By the age eighty, behavioral choices account almost entirely for a person’s overall health and longevity.

More than sixty-five percent of annual American deaths are attributable to heart disease, cancer, and stroke. These three diseases, degenerative diseases of aging, consume more than fifty percent of the U.S. health-care budget. Moreover, health care costs are increasing at double-digit rates each year. Trouble is we have little to show for it. Any improvements in the incidence of heart disease have been because of lifestyle improvements, not medical ones. Same for cancer.

Prevention is the only vehicle that will account for change. If we really want to make an impact on health care in this country and throughout the world, the focus must be on preventing the degenerative diseases of aging. Instead of micromanaging disease, we should focus on macromanaging wellness. Ninety percent of first heart attacks result from preventable lifestyle choices.

The same is true of Type 2 Diabetes. The overwhelming majority of cancers are avoidable. These diseases along with many others, such as Alzheimer’s disease, are not a component of natural aging. Rather, they are a form of pathological aging that results from a lifetime of unhealthy choices. If we can slow the physiologic processes of aging we can alleviate more than fifty percent of all disease overnight. We can alter this dreadful course by preventing, delaying, or reversing the diseases associated with aging.

Only a small percentage of the American population is truly healthy. It is no accident that they are healthy. They work at it. So when will you change? You are most likely to change when you lose it all, when you realize one day that you’ve made the wrong choices.

Think of how many times you changed because you lost everything.

Breaking old habits takes courage. It begins with mindfulness – attention and intention. You can make the mindful decisions to make the changes in your life to grow younger, not older, with each passing day.

My Aching Bones and Joints: Minimally and Non-Invasive Treatment Options

by Dr. Michael Green, MD Many people develop pain due to overuse or injury (bursitis, tendonitis, sprains and strains). Fortunately, in modern medicine, there are many ways to diagnosis and treat most of these painful bone and joint issues. Appropriate treatment starts with the appropriate diagnosis. This includes obtaining a history (or description of the symptoms from the patient), a physical examination and x-rays. Occasionally other studies such as an MRI or CT scan are useful.

Others develop pain from “worn out joints.� In fact, 21 million Americans develop osteoarthritis. It is the most common disability in people over the age of 55. Symptoms include pain, stiffness, weakness, and difficulty using the affected limb or extremity.

Health & Wellness For example, regular low impact exercise is good for maintaining not only cardiovascular health, but also bone and joint health. When pain arises apply “RICE” principles: rest, ice, compression, and elevation. Temporary use of over-the-counter, non-steroidal antiinflammatories (NSAIDS) like Aleve or Ibuprofen can help. If you have a medical condition such as heart disease, acid reflux or an ulcer, or if you are taking blood thinners like Coumadin or Plavix, or have any bleeding disorders, ASK your doctor before taking an NSAIDS. For unresponsive pain, a cortisone injection may help. Often a single injection is enough, but sometimes a series of injections is required.

Newer cartilage enhancing injections also are available which can relieve the pain of arthritic joints. Although these do not provide a permanent cure, they are much less invasive than a joint replacement. These injections are made from hyaluronic acid, which is the major component in cartilage.

Studies have shown that these cushion the joint, relieve pain, and protect or even stimulate cartilage healing.

Arthroscopic surgery is a minimally invasive procedure that can be used when conservative measures have failed. These can be performed on the shoulder, elbow, wrist, knee, and ankle. Arthroscopy is done on a same day basis either under a general anesthetic or a regional block. Most patients recover and return to their normal function very rapidly.

All of these problems, including foot problems can be treated successfully by an orthopedic surgeon. Orthopedic surgeons are specialists in diagnosing and treating each of these conditions. Accidents Don’t Come with Doctor Appointments The Direct Approach to Orthopaedic Injuries

By Cathy Wentz Accidents don’t come with doctor appointments, and often waiting in an emergency room can be a long, time consuming and expensive process.

Quick and integrated care is the best solution for any injury, including those to the bones, muscles, ligaments or any other part of the musculoskeletal system, as well as cuts requiring stitches. In fact, bypassing the emergency room or standard urgent care center for many injuries, which often result in a referral to an orthopaedic physician anyway, can speedily move the injured person into recovery mode.

In 2005, facilities specializing exclusively in quick care of orthopaedic injuries started to open and have become prevalent throughout the country. In fact, Dr. Alejandro Badia, of OrthoNOW in Doral, Florida, estimates that there are now between 170 and 180 centers in existence at this time.

Southern Utah is very fortunate and proud to have one of these specialty facilities right here in Cedar City. Dr. Randy Delcore, founded the Cedar Orthopaedic Surgery Specialty Clinic nearly 20 years ago. Approximately three years ago, in an effort to better serve his customers, he proudly added Cedar Orthopaedic Direct Care to the services provided by the clinic. Delcore qualifies that while his orthopaedic direct care practice does not operate as a typical urgent care center, it does offer the same advantage of avoiding the emergency room, if preferred.

“It’s direct access to orthopaedics,” he said, noting that either he or his physician assistant, Jared Green, are available 24 hours, seven days a week. This direct access clearly saves significant time and money and leads to more efficient delivery of orthopaedic care.

Delcore said that in most cases, immediate care will be available at the office. However, in other cases, such as late at night, the situation will be assessed, and after speaking with the doctor, the decision to meet in the office directly, be sent to the emergency room or be met at the office first thing the next morning will be made.

“And most parents don’t necessarily want to be seen the minute they’re calling unless it is a true emergency,” he said. “Otherwise they just want to know that everything will be okay and that they can be seen first thing in the morning.”

He gave the example of a child who fell during the night and is holding his arm. He said the direct care model helps parents to decide what they should do next – provide comfort measures until their child 34 www.cedarcitymag.com

can get medical attention first thing in the morning or take the child to the emergency room.
