Chaos at the airports, every year the same game. Sometimes it is the security staff, sometimes the air traffic controllers, sometimes the ground personnel or the cleaning staff at the airport. With the first wave of strikes from the end of July right through to the first week of August, we have some of these behind us. I'll bet that the pilots' or the cabin crew's unions can still come up with something else.

Only Stoics regard it as an opportunity getting to know airports inside-out.

They do not mind hanging out in overcrowded airport restaurants instead of at the beach The frequent flyers among them know where hidden sockets are located to charge up mobile phones or laptops. The main thing is, they are connected online to the beautiful world outside.

The ordinary traveller, on the other hand, is furious. He regards these strikes as a quarrel between third parties whose burden he has to bear. After all, he has paid for his booked flight and thus indirectly also those who are now preventing him from travelling or are even spoiling his holiday.

In such a situation, those who have access to the VIP lounges can consider themselves particularly lucky. There, in Madrid and Barcelona, they can also find our magazine, among others, and spend their time browsing Ibiza Style magazine.

Last but not least, something curious about a special airline. Mr. Trump wants to change the colour of the new Air Force One. He does not like the presidential plane's white and blue colour scheme. No doubt, he would like it to be covered in gold leaf. Anything else would certainly not satisfy his ego.

I wish you dear readers stress-free holidays on our beautiful island – as well as on the way to Ibiza or on departure. And great pleasure while reading our magazine.

erano, vacaciones, huelgas: caos en los aeropuertos, todos los años la misma historia. A veces es el personal de seguridad, otras los controladores de tráfico aéreo, otras el personal de tierra o el personal de limpieza en el aeropuerto. Ya empezamos con la primera ola de huelgas, desde finales de julio hasta la primera semana de agosto. Apuesto a que se les ocurrirá otra cosa a los sindicatos de los pilotos o de la tripulación de cabina.

Solo los estoicos lo ven como una oportunidad para conocer los aeropuertos a la perfección.

No les importa pasar el rato en sus restaurantes atestados en lugar de en la playa. Los viajeros frecuentes saben dónde se encuentran los enchufes ocultos para cargar teléfonos móviles o los portátiles. Lo principal es estar conectados online al hermoso mundo exterior.

Los viajeros ordinarios, por otro lado, están furioso. Consideran estas huelgas como una disputa entre terceros cuya carga tienen que soportar. Y es que, después de todo, han pagado su vuelo reservado y, por lo tanto, indirectamente también a aquellos que ahora les están impidiendo viajar o incluso están arruinando sus vacaciones.

En tal situación, aquellos que tienen acceso a las salas VIP pueden considerarse particularmente afortunados. Allí, en Madrid y Barcelona, también pueden encontrar nuestra revista Ibiza Style, entre otros, y dedicar su tiempo a leerla.

Por último, algo curioso sobre una aerolínea especial. El Sr. Trump quiere cambiar el color del nuevo Air Force One. No le gusta el esquema de color blanco y azul del avión presidencial. Seguro que le gustaría que estuviera cubierto de pan de oro, yes que cualquier otra cosa no satisfaría su ego.

Os deseo, queridos lectores, unas vacaciones sin estrés en nuestra hermosa isla, así como en el camino hacia Ibiza o en la despedida. Y que disfrutéis mientras leéis nuestra revista.

ommerzeit – Urlaubszeit – Streikzeit. Chaos an den Flughäfen, jedes Jahr das gleiche Spiel. Mal ist es das Security-Personal, mal die Fluglotsen, mal das Bodenpersonal oder die Reinigungskräfte am Airport. Einiges davon haben wir mit der ersten Streikwelle von Ende Juli bis hinein in die erste Augustwoche hinter uns. Ich möchte wetten, dass den Gewerkschaften der Piloten oder des Kabinenpersonals dazu auch noch was einfällt.

Nur Stoiker betrachten es als eine Gelegenheit, Flughäfen intensiv kennen zu lernen.

Ihnen macht es nichts aus, die Zeit statt am Beach in überfüllten Flughafenrestaurants abzuhängen. Die Vielflieger unter ihnen wissen, wo sich versteckte Steckdosen befinden, um Handy oder Laptop zu laden. Hauptsache, sie sind mit der schönen Welt draußen online verbunden.

Der normale Reisende hingegen ist wütend.

Er betrachtet diese Streiks als einen Streit zwischen Dritten, der auf seinem Rücken ausgetragen wird. Schließlich hat er für seinen gebuchten Flug bezahlt und somit indirekt auch diejenigen, die ihm jetzt seine Reise verhindern oder gar seinen Urlaub verderben.

Glücklich schätzen können sich besonders in solcher Situation diejenigen, die Zugang zu den VIP-Lounges haben. Dort finden Sie in Madrid und Barcelona unter anderem auch unser Magazin und können sich die Zeit mit Schmökern im Ibiza Style Magazin vertreiben.

Zu guter Letzt noch etwas kurioses von einer speziellen Fluggesellschaft. Mr. Trump will die neue Air Force One farblich umgestalten. Ihm gefällt das weiß-blaue Farbschema der Präsidentenmaschine nicht. Sicherlich möchte er sie mit Blattgold belegen lassen. Alles andere würde seinem Ego sicherlich nicht genügen.

biza and Mallorca are closer than ever this season. The two main shipping companies that operate in our island, Baleària and Transmediterránea, are opening two new fast lines this summer that are going to join Palma and Ibiza at a really affordable price. It is a piece of news that has delighted residents in as much as it makes those often essential journeys to the capital of the Balearic Islands easier.

Trasmediterránea was the first one to announce the opening of a new daily high-speed line between the ports of Sant Antonio and Palma, as an extension of its already existing line between Gandía and Sant Antonio, which was inaugurated last year. The “Almudaina Dos” will link Gandía and Ibiza in just two hours and the latter and Palma in 2½ hours from June 8th until September 9th. The price per person per route for residents is just €8.

Baleària is also going to operate another fast line starting on June 1st. It will depart from Palma at 8 AM and return from the port of Ibiza at 8 PM. Similarly, this will be an extension of its already existing Ibiza-Denia route.

This option will be even faster, covering the journey in just two hours. The return journey in a seat on the fast ferry “Cecilia Payne” will cost €15,50.

It’s fantastic news, as is any improvement in our transportation. However, you get the feeling that these new lines has been conceived basically with our Mallorcan neighbours in mind since it is they who will be able to do the return journey Palma-Ibiza-Palma the same day. This will not be the case for people in Ibiza, who will continue having to spend two days to do so. Even so, the journey will be much cheaper for us than it has been up to now… n

Las dos principales navieras que operan en nuestras islas, Baleària y Transmediterránea, abren dos nuevas líneas rápidas este verano que conectarán Palma e Ibiza por un un precio realmente económico. Una noticia que los residentes hemos acogido con alborozo por cuanto nos facilita los a menudo imprescindibles desplazamientos a la capital balear.

Trasmediterránea fue la primera en anunciar la apertura de una nueva línea de alta velocidad que unirá cada día los puertos de Sant Antoni y Palma, como una extensión de su ya existente línea entre Gandía y Sant Antoni, inaugurada el año pasado. El “Almudaina Dos” unirá Gandía e Ibiza en tan sólo 2 horas y ésta y Palma en 2 horas y media desde el 8 de junio hasta el 9 de septiembre. El precio por persona y trayecto para los residentes es de tan sólo 8 euros.

Baleària también pone en marcha otra línea rápida a partir del 1 de junio, con salida desde Palma a las 8 y vuelta desde el Puerto de Ibiza a las 20 horas, también como una extensión de su ya existente ruta Ibiza-Denia. Ésta opción será aún más veloz, con un trayecto de sólo 2 horas, y el viaje de ida y vuelta en butaca en el fast ferry “Cecilia Payne” costará 15,50 euros.

Una excelente noticia, como lo es cualquier mejora en nuestras comunicaciones. No obstante, queda la sensación de que estas nuevas líneas han sido concebidas pensando esencialmente en nuestros vecinos mallorquines, que podrán hacer el trayecto Palma-Ibiza e IbizaPalma en una misma jornada. No así los ibicencos, que seguiremos necesitando gastar dos días para ello. Eso sí, el viaje nos saldrá mucho más barato que hasta ahora… n

Die beiden bedeutendsten Reedereien Ibizas, Baleària und Transmediterránea, eröffnen zwei neue Verbindungen zwischen Palma und Ibiza: schneller als zuvor und zu einem fairen Preis. Eine positive Neuigkeit für die Inselbewohner, deren - zumeist notwendigen – Wege in die Hauptstadt der Balearen erleichtert werden.

Transmediterránea gab als erste die Eröffnung der täglichen Hochgeschwindigkeitsstrecke zwischen San Antonio und Palma bekannt.

Sie erweitert damit ihre bereits bestehende Strecke zwischen Gandía und San Antonio, die bereits letztes Jahr eingeweiht wurde. Die Almudaina Dos verbindet zwischen dem 8. Juni und dem 9. September in nur zwei Stunden Gandía und Ibiza, von Palma nach Ibiza Stadt werden es zweieinhalb Stunden sein. Einheimische zahlen nur 8 Euro pro Strecke.

Baleària startet ab dem 1. Juni eine weitere schnelle Linie, die morgens um 8 h in Palma starten und abends um 20 h von Ibiza Hafen zurückkehren wird. Eine ähnliche Verbindung existiert bereits zwischen Ibiza und Denia. In nur zwei Stunden wird die Cecilia Payne von Palma nach Ibiza düsen, der Preis für diese rasante Fahrt: 15,50 Euro, inklusive Sitzplatz.

Für die Ibizenker sind das wirklich fantastische Nachrichten, das Verkehrsnetz verbessert sich zunehmend. Kleiner Wehmutstropfen: Die neuen Verbindungen scheinen mehr für die Mallorquiner konzipiert, da diese innerhalb von 12 Stunden pendeln können, die Ibizenker müssen leider weiterhin zwei Tage für ihre Reise einplanen. Dennoch mehr als erfreulich: die gesunkenen Fahrpreise. n

here is a place you can only arrive by using your sense of smell. We are talking about the Familia Marí Mayans’ factory, a building located in the Polígono de Montecristo, in Ibiza, from where the entire essence of the island can be captured. The magic of the famous distillery of Familia Marí Mayans has been passed down from generation to generation all the way back to 1880. A family of “alchemists” that has managed to bring together all the flavours of nature in Ibiza in a liquor with its own name and a way of producing it that is 100% handcrafted, that is created, manufactured, designed and drunk in Ibiza. An alcoholic drinks brand that is known throughout the world for its strength, for its tradition and for its quality.

A label of Ibicencan identity very different from the rest of European liquors that keeps a number of secrets: its original recipe—identical to the one that was conceived almost 140 years ago—and its collection, selection and manufacture that takes place entirely in their factory.

The fact that the entire process of production and manufacture of all the products of Familia Marí Mayans takes place completely in Ibiza means that it has retained its essence and that its flavour is as pure as it was when they started out. When it comes to Familia MarÍ Mayans Hierbas Ibicencas, they are produced following the written recipes of Juan Marí Mayans, the creator and founder of the first industrial distillery in the Balearic Islands.

At the present, this unique, unmistakable liquor is well guarded in the hands of the fifth generation of the Marí Mayans family, Carlos y Bartolomé, who explained that “absolutely the entire process from harvesting the plants and

In Sachen Familia MarÍ Mayans Hierbas Ibicencas wird streng nach den Originalrezepten von Juan Marí Mayans vorgegangen, dem geistigen Vater und Gründer der ersten industriellen Distillerie der Balearen. Heute befindet sich dieser einzigartige, absolut unverwechselbare Likör in den sorgsamen Händen der fünften Generation der Familie Marí Mayans, von Carlos und Bartolomé, die es noch einmal betonen: Beim gesamten Prozess, „von der Pflanzenernte und ihrer Verarbeitung bis zum Moment der Flaschen-

extracting their properties to the moment they are bottled is carried out in our distillery, faithfully following the steps as written in the original notebooks”. “The only thing that we could do better than our great-great-grandfather is the checks that assure us that all the quality standards are complied with and, in our factory, they are cutting edge”, they add. “We like people to think of our hierbas as a unique drink that really represents Ibiza, and the memory of it they take with them when they go home, or the glass of it they ask for in order to sense the island anywhere in the world”, the Marí Mayans brothers point out.

In this respect, the recipe for Familia Marí Mayans Hierbas Ibicencas is as natural as their own history: verbena, orange, lemon, star anise, aniseed, rosemary and the flowers of ‘frígola’ or thyme. The latter is a species of thyme that is native to the Pitiusas Islands and was used in the first drink created by this company “Frígola”.

With the other plants (always based on the original recipe), at the present, Familia Mari Mayans has other drinks that are made in its distillery such as the aperitif par excellence of the Pitiusas, Palo; Absenta (absinthe) Art Collection; and IBZ Premium Gin. Just as its creators explain, “all these plants are picked manually by the same farmers who bring them to the factory where we select them, weigh them and incorporate them in the processes of distillation, boiling, infusion and maceration”. A process that concludes with the confession of the secret of its quality, flavour and aroma: “how we treat the product—given that each fruit has its special properties and its specific method when it comes to working with it is, precisely, the key to the final result”. n

“Nos gusta que la gente piense en nuestras hierbas como las únicas, las que representan realmente a Ibiza, y el recuerdo que se llevan cuando vuelven a sus casas, o la copa que piden para sentir la isla en cualquier rincón del mundo”, apuntan los hermanos Marí Mayans.

En esta línea, la receta de Hierbas Ibicencas Familia Marí Mayans es tan natural como su propia historia: hierba luisa, naranja, limón, anís estrellado, matalahuga, romero o la flor de la ‘frígola’. Esta última, se trata de una especie de tomillo autóctono de las Pitiusas, con la que se creó la primera bebida de esta firma la “Frígola”. Con el resto de plantas, y basándose siempre en la receta original, en la actualidad, Familia Mari Mayans cuenta con otras bebidas que nacen en su destilería como el aperitivo por excelencia de las Pitiusas Palo, la Absenta Art Collection o la IBZ Premium Gin. Tal y como explican sus artífices “todas estas plantas, son recogidas de forma manual en la isla por los mismos payeses que las traen a la fábrica, donde las seleccionamos, las pesamos y las incorporamos a los procesos de destilación, ebullición, infusión y maceración”. Un proceso que concluye con la confesión del secreto de su calidad, sabor y aroma: “cómo tratamos el producto, ya que cada fruto tiene sus propiedades especiales, su método específico a la hora de trabajarlas y esa es, precisamente, la clave del resultado final”. n

Diesem Anspruch folgend ist das Rezept der Familia Marí Mayans Hierbas Ibicencas historisch und bis ins Letzte naturbelassen: Eisenkraut, Orange, Zitrone, Stern-Anis, Anis-Saat, Rosmarin und die Blüten der Frigola, dabei handelt es sich um eine Thymian-Art, die von den Pitiusas stammt und im ersten Getränk der Firma „Frígola“ Verwendung fand. Aus den anderen Pflanzen (immer basierend auf dem Originalrezept) stellt die Familie Marí Mayans weitere Drinks in ihrer Destillerie her, wie etwa den excellenten Apéritif Palo, Absenta Art Collection und IBZ Premium Gin. Noch einmal die Schöpfer selbst: „Alle Pflanzen werden von den Bauern geerntet, die sie im Anschluss auch in die Fabrik verbringen, wo sie sorgsam gewogen und behutsam weiterverarbeitet werden, destilliert, weich gekocht und originalgetreu aufeinander abgestimmt werden.“ Ein Prozess, der sich ganz der Qualität, dem Geschmack und dem Aroma unterwirft: „Jede Frucht hat ihre Besonderheiten, ihren eigenen Charakter. Dass wir in der Produktion genau darauf eingehen, ist der Schlüssel zur letztendlichen Ergebnis.“ n

hat could be finer than playing with your feet in the sand on one of Ibiza's beaches while enjoying a paella or fresh fish accompanied by a glass of chilled wine? Or having a cocktail before dinner on the restaurant terrace and watching as the sun slowly sinks into the sea? On the other hand, the hustle and bustle in the island’s ports provides good entertainment.

There are more than 70 different beaches and coves around Ibiza's coastline. In the south, there are the very busy, louder beaches of Playa d'en Bossa, Salinas, Es Cavallet and Cala Jondal with their beach clubs. In the north and east, on the other hand, it is usually quieter and more relaxed.

Thus, there is something for every taste, from the rustic Ibicencan fish restaurant to the luxury restaurant with international cuisine, from the beach restaurant with its continuous background of music to the chiringuito, where the soothing sound of the waves and the cries of the seagulls make for a pleasant acoustic accompaniment.

There are countless gastronomic establishments around the shores of the island and listing them all would go beyond the scope of this edition of our gastronomy guide. Therefore, in the following pages, we are reporting on some of the less well-established restaurants and their specialties. n

uch less well-known than the famous “Bullit de peix”, but still nonetheless a faithful reflection of the most authentic Ibicencan cuisine, “salmorreta” is an exquisite dish whose basic secret lies in the fact that it must be made from the freshest fish, always of the day.

At Es Xarcu restaurant, they know this delicious fishermens’ dish very well since—as its owner Mariano Torres explains to us—there was a very famous Ibicencan chef named Juan Nadal who was the one who, having learnt it from the fishermen, popularised the recipe and introduced it in restaurants. Ramon Vidal, Es Xarcu’s chief chef, learnt it from one of Nadal’s students and that is why they can claim to make what is probably the best “salmorreta” on the island. For “salmorreta” you can use any kind of fish, from John Dory to “rotja” (red scorpionfish) although originally the fishermen mainly used to use the discarded fish that they were not going to be able to sell.

To make it, first you have to boil the completely white, unadulterated fish without adding salt, another of the keys to its preparation. Then you have to add brine (which is where the dish’s name comes from) with salt, a little saffron to give it colour and boiled fish stock. Dip the fish three times in this fish stock and then throw it away. Separately, in a mortar,

En el restaurante Es Xarcu conocen bien este delicioso plato de pescadores pues, tal como nos cuenta su dueño Mariano Torres, hubo un chef ibicenco muy famoso llamado Juan Nadal que fue quien, tras aprenderla de los pescadores, popularizó la receta y la introdujo en los restaurantes. Ramon Vidal, jefe de cocina de Es Xarcu, la aprendió de uno de los alumnos de Nadal, por eso pueden presumir de hacer probablemente la mejor “salmorreta” de la isla. En la “salmorreta” se puede usar todo tipo de pescado, desde gallo de San Pedro hasta “rotja” (cabracho) aunque originalmente los pescadores usaban sobre todo el pescado de descarte que no iban a poder vender.

Para elaborarla, primero hay que hervir el pescado completamente blanco y natural, sin añadirle sal, otra de las claves de esta preparación. Luego, hay que elaborar una salmuera (de donde viene el nombre del plato) con sal, un poco de azafrán para dar color, y el fumet del pescado hervido. Se pasa tres veces esta salmuera por el pescado y luego se tira. Aparte, en un mortero, hay que preparar una picada con

Im Restaurant Es Xarcu gehört Salmorreta zu den beliebtesten Gerichten und, wie uns der Besitzer des Lokals Mariano Torres erklärt, hat ein ibizenkischer Chefkoch namens Juan Nadal das Rezept von den alten Fischern der Insel erlernt und es in die Restaurants eingeführt.

Vidal, Chefkoch im Es Xarcu, hat das Rezept von einem Studenten Nadals erlernt und behauptet daher, vielleicht nicht ganz zu Unrecht, das beste Salmorreta der Insel zu kochen. Für das Gericht kann man alle Arten von Fisch verwenden, von John Dory bis hin zum Rotja, obgleich die Fischer früher einfach nur den übriggebliebenen Fisch verwendeten, den sie nicht verkaufen konnten.

Für die Zubereitung kochen Sie zunächst nur den Fisch und dabei dürfen Sie keinesfalls Salz hinzufügen, das ist ein weiterer wichtiger Schlüssel für das Gelingen des Gerichts. Erst dann kommt die Salzbrühe (daher auch der Name) zum Einsatz, die etwas Safran enthält, der dem Fisch eine satte Farbe verleiht. Auch der Fisch wird dreimal in die Brühe getaucht.

und Olivenöl fein, die Soße wird dann damit gebunden und mit Petersilie und viel Zitronensaft verfeinert, darauf wird der Fisch angerichtet. Früher kochten die Fischer auch Reis in dem Sud und (falls vorhanden) kleine Tintenfische.

Indonesia, Cathy Guetta has thought about every last detail.

Inspired by her childhood dreams, Cathy Guetta has designed a walkway lined with hundreds of oversized flamingos leading to the beach. As for the outdoor area, it will be a perfect place for relaxation and for admiring the famous pictures by American artist Slim Aarons.

A small intimate and cosy indoor room, decorated with customised 60s sewing machines, will be perfect for enjoying the multitude of pastries created by the chef and will pay tribute to the icons from the 50s, a nod to Brigitte Bardot who had the audacity to wear the first bikini in 60 years ago.

From 8 am to 11:00 am, BIKINI BY CATHY GUETTA will offer healthy breakfast buffet options which will delight both early risers and night owls. At 12 pm, the lunch menu will be offered with a non-stop service until 8 pm. As soon as the clock hits 8:00 pm, the restaurant will transform itself to make way for a romantic atmosphere with special illumination effects.

Headed up by Executive Chef Carlos Herrero, Chambao specialises in freshly caught seafood, grilled fish and healthy salads, but also hearty cuts of meat such as Galician beef steak and lamb. With Herrero hailing from Valencia, considered by many the ‘home of paella’, of course the restaurant has its own signature version of the famous dish – made with fresh lobster – and hosts ‘Paella Sundays’ every week. Manager Miguel Galdón explains, “The idea behind Chambao is to offer chiringuito style dining.

We serve breakfast from 8am until 11am, and then lunch from 1pm to 7pm. It’s a relaxed and chilled vibe, you can eat outside and you can bring the kids. Our three best selling dishes are the paella, the fresh fish and, our recommendation, the lobster spaghetti.”

With so much temptation on offer, we put our rumbling stomachs into Herrero’s hands and let the man himself choose a selection of dishes for us to try. A zesty white fish ceviche juxtaposed the exotic fruitiness of fresh mango chunks against salty bursts of tobiko roe, while a steaming bowl of plump mussels offered a novel take on the classic marinara sauce with the addition of lime and lemon slices. A highlight from the starter section, for something a little different we recommend you try Carlos’ speciality, moist and tender chunks of cod battered in a squid ink tempura shell and topped with black alioli and freshly grated ginger, a real feast of textures with an addictive combination of flavours. Unter der Leitung des Chefkochs Carlos Herrero hat sich das Chambao auf Meeresfrüchte, Fisch und gesunde Salate spezialisiert, aber auch Lamm oder Rindersteak aus Galizien stehen auf der Karte. Da Herrero aus Valencia stammt, der heimlichen Paella-Heimat, ist es nur selbstverständlich, dass auch das Chambao über eine eigene Variante (mit frischem Hummer) des berühmten Gerichtes verfügt.

Zudem wird es spezielle Paella-Sonntage geben. „Die Idee des Chambao ist es, einen lässigen Chiringuito-Stil zu zelebrieren. Frühstück von 8 h bis 11 h, dann Mittagessen von 13 h bis 19 h und das alles in einer entspannten Atmosphäre. Kinder sind gern gesehene Gäste bei uns“, erklärt Manager Miguel Galdón, der die Top-3-Gerichte nennt: „Paella, fangfrischer Fisch und die Hummer-Spagetti“.

seafood treats - and the sweltering summer heat – the elegant and clean notes of Whispering Angel rosé went down a treat with this selection of treats.

While it may be tempting to go wild on the starters, we have to urge you to leave enough room for the main courses, which, in our experience, are not only very generous in size, but also spectacular in flavour. As moreish and addictive as they come, the homemade lobster spaghetti wowed us with the perfect ‘al dente’ bite, a well-balanced sauce and the indulgent amounts of tender lobster meat and king prawn chunks. It was only the sight of a huge pan filled with lamb chops and roasted vegetables that stopped us from polishing it clean off.

The rosemary lamb, meanwhile, is a feast for all senses from the moment the lid is lifted to unleash a cloud of earthy herb fragrances until the last bite of soft, aromatic meat.

Effortlessly fusing modern seaside chic with a laid-back vibe and tasty treats from both water and land, served up in a welcoming, unpretentious and family-friendly atmosphere, we have no doubt that Chambao has all the key ingredients to establish itself as a foodie destination in its own right. n

Los apetitosos y adictivos espaguetis de langosta caseros nos cautivaron con la mordida perfecta 'al dente', una salsa bien equilibrada y unas cantidades indulgentes de carne tierna de langosta y trozos de langostinos. Pero la llegada de una enorme bandeja llena de chuletas de cordero y verduras asadas nos impidió terminar el plato y limpiarlo. Mientras tanto, el cordero de romero es una fiesta para todos los sentidos, desde el momento en que se levanta la tapa, pasando por una nube de fragancias terrosas de hierbas hasta el último bocado de carne suave y aromática.

Wir hätten ohne weiteres bei den Hors d'oeuvre bleiben können, aber die Aussicht auf zwei Hauptattraktionen aus der Küche hält uns zurück. Die hausgemachten Hummer-Spaghetti sind überwältigend: Die Nudeln „al dente“, die Hummerstücke und die Garnelen groß und saftig, die Soße perfekt ausbalanciert, nicht zu schwer, aber voll der Aromen. Der Anblick der riesigen Pfanne mit Lammkoteletts und gebratenem Gemüse hält uns davon ab, auch noch den letzten Rest Soße vom Teller zu wischen. Voller Hingabe widmen wir uns nun dem köstlichen Rosmarin-Lamm, dessen erdige Kräuterdüfte geradezu betörend wirken, und dessen weiches, aromatisches Fleisch im Mund zerfällt.

he level of elegance at 7Pines Ibiza quite simply has to be seen to be believed, and once you view it with your own eyes, it’s a sight which will stay with you for a lifetime.

Of course the views over the bay of Cala Codolar reaching across to Es Vedra are unrivalled anywhere else on the island, however, it’s the attention to detail, throughout every inch of the resort which sets it apart from any other 5-star hotel in Ibiza.

We enjoyed an afternoon at 7Pines, where we learnt more about their dedication not only to fine dining which we have previously written about, but also their mission to ensure that the resort offers a wine and cocktail list which lives up to the supremely high standards set everywhere else in the hotel.

And of course, we were not disappointed.

Where better to begin than the elegant cocktail bar in the Cone Club, beautifully crafted from bamboo and natural woods, with mirrored walls reflecting the light of the dazzling turquoise waters it overlooks. This resplendent bar is overseen by the charming and ebullient head bartender Rafael V. Arvin, whose passion for what he does is evident as we talk about his groundbreaking cocktails.

Nearly all of the cocktails here at the Cone Club are devised by Rafael, and what a talent he has for formulating the most outstanding combinations. Take the Viktini, a vodka sour with added passion fruit, cointreau, lemon and orange juices and St Germain flower liqueur, topped with egg white to complement this delicious drink.

Wir von Ibiza Style hatten das Vergnügen und die Ehre, einen Nachmittag im 7Pines verbringen zu dürfen und erfuhren dort alles über die Arbeit und das Engagement, das allein das Team „Wein & Cocktail“ vollbringt. Nicht nur, um den Ansprüchen der Gäste, sondern auch den eigenen (sehr) hohen Zielen, gerecht zu werden.

Natürlich wurden wir nicht enttäuscht. Allein der Anblick der wunderschönen und eleganten Cocktailbar im Cone Club, in der wir zusammenkamen, lässt das Herz höher schlagen.

Die Materialien Bambus und Naturholz dominieren, während die verspiegelten Wände türkisfarbenes Wasser reflektieren. Chefbarkeeper ist der charmante und vor Herzlichkeit überschäumende Rafael V. Arvin, dessen Leidenschaft für seine Arbeit man in jedem seiner Worte verspürt.

Fast alle Cocktails des Cone Clubs wurden von Rafael selbst kreiert. Sein Talent, aufregende neue Cocktails zu entwerfen, ist unbeschreiblich. Aus seinem Shaker ergießen sich Kunstwerke, wie der Viktini, ein Wodka Sour mit Passionsfrucht, Cointreau, Zitronen- und Orangensaft und St Germain HolunderblütenLikör, getoppt von einem Eiweißschaum.

My personal favourite was the Mojito 7Pines, which is nothing like any other other mojito I have tried, made with Gin Mare, cherry tomato, basil, rosemary, lime, with chili and cinnamon mix, topped with tonic water, a mind blowing combination.

"No name" is the moniker of the signature cocktail featured in in this article, using Es Broll, a local product, carob liqueur. This exquisite blend of Es Broll, Drambuie, Fever Tree ginger ale is perfectly flavoured with a slice of fresh ginger with caramelised brown sugar.

Rafael has also carefully selected the expansive range of spirits on offer, mixing classics with new age, for example, you can take your choice of 14 different gins mixed with three different tonics, each one topped with various natural garnishes, from juniper sprigs, cucumber, grapefruit, coriander, lime and orange, each is paired perfectly to the specific gin.

and of course, some very fine cognacs, including the most famous brands.

The shining star of the Cone Club drinks selection is the cava sangria, which has been credited as the very best on the island, using only red fruit fresh purée, Saint Germain gin and exceptional quality cava.

Moving onto wine, we spoke to the Head Sommelier, Javier Perez Caballero, who having been raised in Spain and gained a law degree, felt that life in the courts was not for him, and followed his calling to the hospitality industry, a calling which took him from Marbella to Dubai, and finally Miami, where he took his first Master Sommelier course, developing a true devotion to the finest of wines, before returning to his home country where he spent two years at Mugaritz, ranked 9th in the 50 best restaurants of the world, a true powerhouse of creativity hidden in the green hinterlands of the Basque country. Here he trained with one of the most respected sommeliers in the world, Guillermo Cruz, and gained a wealth of knowledge, as well as, he laughs, having the absolute pleasure of opening some of the very best wines in the world each and every day.

He tells us that many places in Spain lean towards only Spanish wines, however, he understands that the wine world is universal, and so has made it his mission to select the most exceptional wines from around the world, creating, he says, something akin to taking guests on a trip around the globe with his wines, surprising and delighting them with each choice. One of his favourite combinations is pairing a sumptuously rich cheese with wine from Madeira, Portugal, a match made in heaven.

ed wine is generally drunk with a nice piece of red meet, white wine with anything fishy, and rosé is best enjoyed with some rays of sun. It is by far the summer wine, so versatile it suits a wide arrange of dishes and a friend to everyone.

The ultimate enjoyment we get from having our toes in the sand and a glass of ice cold rosé in the hand.

The best and most famous rosé’s come from South of France. The Provence region is the area close by the Mediterranean, where on beaches and terraces the glasses are generously filled wth this light alcoholic grape juice.

Ibiza isn’t much different when it comes to hot beach days and long summer nights and of course rosé get to quench your thirst, after all we’re also surrounded by the Mediterranean sea.

Because rosé is so versatile when it comes to meals, this time we didn’t pick a meat or fish dish, but we decided to highlight one of our veggie options.

Humus, healthy, wholesome, not too heavy on the stomach in this heat and a great dish to share.

At Vino&Co we make it a little different than the usual crudités of carrot and cucumber, but we serve our Humus Bowl with baked beetroot and sweet potato, hazelnuts and homemade flatbread.

l vino tinto generalmente se toma con un buen trozo de carne roja, el vino blanco con pescado, y el rosado se disfruta mejor con los rayos de sol. Éste es sin duda el vino del verano, tan versátil que se adapta a una amplia variedad de platos y es un fiel amigo de todos.

Uno de los mayores placeres que existen es el meter los dedos de los pies en la arena con una copa de rosado bien frío en la mano.

Los mejores y más famosos rosados provienen del sur de Francia. La región de Provenza es la zona cercana al Mediterráneo en cuyas playas y terrazas las copas se llenan generosamente con este ligero zumo de uva con alcohol.

Ibiza no difiere mucho cuando se trata de días calurosos en la playa y largas noches de verano y, por supuesto que el rosado puede saciar tu sed, después de todo, también estamos rodeados por el mar Mediterráneo.

Debido a que el rosado es tan versátil en lo que respecta a las comidas, esta vez no escogimos un plato de carne o pescado, sino que decidimos destacar una de nuestras opciones vegetarianas; un humus rico y saludable, no muy pesado en el estómago para este calor, y que es además un gran plato para compartir.

En Vino&Co hacemos un poco diferentes lo de los crudités habituales de zanahoria y pepino, nosotros servimos nuestro Humus Bowl con remolacha al horno y boniato, avellanas y pan plano hecho en casa.

Die besten Roséweine kommen aus dem Süden Frankreichs. Das Gebiet der Provence gehört zur Mittelmeerregion und hier sind die Gläser der Gäste am Strand oder auf den einladenden Terrassen mit einem herrlich leichten Roséwein gefüllt.

Aber auch Ibiza stellt da keine Ausnahme dar: Heiße Sommernächte und lange Strandtage laden gerade dazu ein, einen schönen Rosé zu genießen – der Blick aufs blaue Meer macht durstig…

Da Rosé so vielseitig ist, haben wir uns diesmal auch nicht für ein Fleisch- oder Fischgericht entschieden, sondern decken den Tisch heute mit einer vegetarischen Köstlichkeit.

The rosé that springs to our mind is the one that comes from nearby the capital of this region and carries it’s name with pride: AIX from Aix-en-Provence. Of course this is a light coloured rosé with a few golden hints, nicely balanced red fruits meet a hint of herbs and the finish presents a pleasantly refreshing acidity. A top range rosé, great with lots of different foods, but to be enjoyed best with sunshine and sandy toes. We can’t get enough, it’s AIX on the beach!! n

he video art pioneer, Bill Viola (New York, 1951), is behind the two large-scale installations that we are able to enjoy this summer in La Nave Salinas, the space managed by the art collector Lio Malca, for whom this exhibition is “a dream come true”.

Located on the seafront in a former salt warehouse, this singular 700-m² exhibition space is home – on a screen that is more than 7 m high and that has 4.1 sound – to two of the most famous, highly acclaimed works by the artist: Fire Woman and Tristan’s Ascension (The Sound of a Mountain Under a Waterfall).

Both of them were created as part of a Peter Sellars production of Wagner’s opera “Tristan and Isolde”. In Fire Woman (11:12 minutes) we contemplate the vision of an agonising man while Tristan’s Ascension (The Sound of a Mountain Under a Waterfall) (10:16 minutes) narrates the soul’s ascension after death. According to Viola, art is none other than the process of trying to awaken the soul in an accelerated modern world that makes it lethargic.

That is why his entire oeuvre finds inspiration in such universal, transcendental themes as life, death and transformation.

Este singular espacio expositivo de 700 m2 ubicado frente al mar en un antiguo almacén de sal, acoge en una pantalla de más de 7 metros de altura y con sonido 4.1 dos de las obras más famosas y aclamadas del artista: Fire Woman y Tristan’s Ascension (The Sound of a Mountain Under a Waterfall), creadas ambas como parte de una producción de Peter Sellars de la ópera de Wagner “Tristán e Isolda”. he won the first gold medal in women’s boxing in Spain and the first international medal, has taken part in seven Spanish championships – achieving various silvers and bronzes – and has been proclaimed Balearic champion a number of times. Susana Torres is a total pioneer in a traditionally male sport. Despite the fact that boxing is going through a moment of spectacular growth and that, just in the last year, the number of federated female boxers in Spain has gone from 445 to 2,059, when this Ibicencan started out there were practically no women competing. “Boxing is like life: we have made progress on very many levels”.

We arrange to meet for breakfast but she leaves half of the toasted sandwich because she is already on a diet: “I have not trained for three days and I do not want to eat too much”.

Susana Torres es toda una pionera en un deporte tradicionalmente masculino. Aunque el boxeo está en un momento de auge espectacular y sólo en el último año el número de boxeadoras federadas en España ha pasado de 445 a 2.059, cuando esta ibicenca empezó casi no había mujeres compitiendo. “El boxeo es como la vida: hemos evolucionado a muchísimos niveles”.

Quedamos a desayunar pero se deja la mitad de la tostada porque ya está a dieta: “he estado tres días sin entrenar y no quiero abusar”. Nos cuenta que el boxeador suele pasar mucha hambre, porque compiten en categorías inferiores a su peso para tener más opciones de

Zur Zeit verzeichnet der Boxsport spektakuläre Zuwachszahlen, im letzten Jahr stieg die Zahl weiblicher Boxer in Spanien von 445 auf 2059 – als die Ibizenkerin begann, gab es keinerlei weiblichen Wettkampf. Boxen ist wie das Leben: "Wir Frauen haben uns auf sehr vielen Ebenen weiter entwickelt.“ Wir verabreden uns zum Frühstück, ihr ToastSandwich isst sie nicht auf, die Hälfte lässt sie auf dem Teller zurück. I have always fought at my weight, except when I was in the national team and I lost weight in a natural way while fighting in a lower division for a year.” Moreover, she adds, “I believe that if I had gone down a division, I could have been Spanish champion many more times. However, I regard sport as a way of life; I know my limits and I do not want to abuse my body”.

An innate sportswoman with a fighting nature, Susana used to do athletics and play basketball before devoting herself to fighting, something that she has now spent 19 years doing. It was all fairly coincidental. She was looking for a taekwondo gym because contact sports drew her attention and all she could find was kickboxing. She thought it was fun and after six months of practising it at the simple level of yellow belt, she won the first championship she entered in Ibiza. Then she won the Spanish Championship, followed by the Spanish-Portuguese one…and so on until reaching fourth place in the world. Nonetheless, her frequent ankle injuries and the realisation that she was better with her fists meant that she moved on to boxing, where her career has also been dazzling. “Boxing has given me a great deal of physical and emotional stability, it has given me tranquillity and it has been an escape route”. She points out that boxing is a very complete sport that anyone can practice although she admits that not everyone has got what it takes to be a boxer because it demands a great deal of sacrifice: “I have been more headstrong than others”.

Deportista nata y de naturaleza guerrera, Susana practicó atletismo o baloncesto antes de dedicarse a combatir, algo en lo que lleva ya 19 años. Todo fue bastante casual. Estaba buscando un gimnasio de taekwondo porque le llamaban la atención los deportes de contacto y sólo encontró kickboxing. Le pareció divertido y a los 6 meses de practicarlo, con un simple cinturón amarillo, ganó el primer campeonato al que se presentó en Ibiza. Luego ganó el Campeonato de España, otro España-Portugal… así hasta coronarse 4ª del mundo. Sin embargo, sus habituales lesiones de tobillo y constatar que se le daban mejor los puños, hicieron que se pasara al boxeo, donde su carrera también ha sido fulgurante. “El boxeo me ha estabilizado mucho a nivel físico y emocional, me ha dado tranquilidad, ha sido una vía de escape”.

Defiende que el boxeo es un deporte muy completo que puede practicar cualquiera, pero reconoce que no todo el mundo vale para ser boxeador, pues exige mucho sacrificio: “Yo he sido más cabezona que otras”.

Susana nos habla de lo crucial de contar con un buen entrenador. Ella entrena una hora y media diaria en mantenimiento, pero cuando compite, como ahora, dobla el entreno. La parte física con Rubén, de Capitán Emo, además, va a correr y por las tardes practica en el

Sie war auf der Suche nach einem Taekwondo Gym, da Kontaktsport sie neugierig gemacht hatte. Alles, was sie fand, war Kickboxen. Ihr gefiel es und nach sechs Monaten Kampf auf der Basis des Gelben Gurts, gewann sie auf Ibiza ihre erste Meisterschaft. Anschließend holte sie die Spanische Meisterschaft, gefolgt von der Spanisch-Portugiesischen … und so weiter und so fort, bis sie schließlich die Nummer 4 der Welt wurde. Mit Blick auf zeitweilige Knöchelverletzungen und der Erkenntnis, dass sie mit den Fäusten besser war, wechselte sie zum Boxen, wo ihre Karriere im Anschluss ebenfalls Fahrt aufnahm. „Boxen hat mir viel an physischer und emotionaler Stabilität gegeben, es bedeutet für mich innere Ruhe und ist ein Zufluchtsort“. Sie betont, wie komplex der Boxsport ist, den zwar jeder trainieren kann, aber längst nicht jeder zu jenen Opfern bereit ist, derer es bedarf, um den Sport richtig zu betreiben. „Ich bin im Kopf stärker als viele andere.“ Susana erzählt mir, wie wichtig ein guter

Susana tells us how crucial it is to have a good trainer. She does maintenance training for an hour and a half every day, but when she competes, as she is now, she doubles the training. On top of the physical part with Rubén, from Capitán Emo, she also goes running and spends the evenings practising in Blanca Dona’s Ibiza Boxing Club with Bartolo Bonet, where “she’s just one more”, tending to box against men. “Along with my family, my trainers are my mainstays, the ones that have meant that I have managed to get where I am.”

Because the fact is that although her family, who run Es Xarcu restaurant where Susana works during the season, did not really approve of her fighting in the ring, they have always supported her unconditionally. “My father has found it more difficult, but my mother was always there in the front row to cheer me on”.

Now she is getting ready for what will be her last Spanish Championship, which will be held this July in Cordoba. At the age of 39, she has almost no options left since, on the amateur circuit where she fights, the national limit for competing is at the age of 40. What is more, she confesses to being a bit tired since the physical, mental, personal and even work-related effort that it requires is harder and harder for her. “It has been really hard to get this far”. In spite of everything, her ambition remains intact. It is one that she now describes as more mature, “I want to go to this championship because I deserve to win”. It would be a beautiful way of bringing the circle to a close and finishing off this great sporting career. And by way of conclusion she states, “I have been my own worst rival, and I had not realised until now. I think that I have won that battle at last and I have discovered that it is what I want in my life.” n

Ibiza Boxing Club de Blanca Dona con Bartolo Bonet, donde “es uno más” y suele boxear contra hombres. “Mis entrenadores junto a mi familia son mis pilares, los que han hecho que haya conseguido llegar hasta aquí.” Y es que aunque su familia, que gestiona el restaurante Es Xarcu donde Susana trabaja durante la temporada, no veía con muy buenos ojos que se pegara en el ring, siempre la han apoyado incondicionalmente. “A mi padre le ha costado más, pero mi madre estaba siempre en primera fila para animarme”.

Ahora se está preparando para el que será su último Campeonato de España, que se disputa este mes de julio en Córdoba. A sus 39 años casi ha agotado sus opciones, pues en el circuito Amateur, donde ella pelea, el límite nacional para competir está en 40 años. Además, confiesa estar un poco cansada, pues el esfuerzo físico, mental, personal y hasta laboral que implica le pesa cada vez más: “Me ha costado mucho llegar hasta aquí”. A pesar de todo, mantiene intacta una ambición que ahora califica como más madura: “Quiero ir a este campeonato porque me merezco ganar”.

Sería una hermosa forma de cerrar el círculo, de rematar esta gran carrera deportiva. Y a modo de conclusión, comenta: “Mi peor rival he sido yo misma, y no me había dado cuenta hasta ahora. Creo que por fin he ganado esa lucha y he descubierto qué es lo que quiero en mi vida.” n

Zusätzlich zum physischen Part mit Rubèn von Capitán Emo, läuft Susana noch und trainiert am Abend mit Bartolo Bonet in Blanca Dona’s Ibiza Boxing Club, wo sie „eine von vielen ist“ und zuweilen gegen Männer boxt. „Neben meiner Familie sind meine Trainer die größten Stützen. Sie haben mir geholfen, dorthin zu kommen, wo ich jetzt bin.“ Denn auch wenn ihre Familie, die das Es Xarcu Restaurant betreibt, in dem Susana während der Saison arbeitet, nicht vollends von ihrer Liebe zum Kampf überzeugt war, so haben sie sie doch immer vollends unterstützt. „Für meinen Vater war es schwierig, aber meine Mutter war immer in der ersten Reihe, um mich anzufeuern.“ Aktuell bereitet sie sich für ihre letzte Spanische Meisterschaft vor, die im Juli in Cordoba stattfindet. Mit 39 Jahren schwinden die Optionen langsam, aber sicher. Im Amateur Circuit, in dem Susana unterwegs ist, liegt das Alterslimit für Kämpfe bei 40 Jahren. Zudem, so gesteht sie ein, ist sie ein wenig erschöpft, da es immer schwerer wird, die physischen, mentalen, die persönlichen und sogar die arbeitsbezogenen Voraussetzungen zu schaffen. „Es war hart, bis hierher zu kommen.“ Dennoch – ihre Ambition ist ungebrochen, sie ist heute angetrieben von Reife und von Erfahrung. „Ich will zu dieser Meisterschaft, weil ich es verdiene zu gewinnen.“ Es ist die großartige Chance für Susana, den Kreis zu schließen und eine tolle Sportler-Karriere auf diese Weise adäquat zu beenden. „Ich selbst war mein größter Rivale“, resümiert Susana, „und ich habe das jetzt erst erkannt. Ich glaube, dass ich diesen Kampf nun gewonnen habe, ihn als Teil meines Lebens begreife und annehme.“ n

hen we caught up with Spain’s most revered underground DJ at the International Music Festival (IMS), Paco Osuna had just finished addressing a packed auditorium on the subject of creating his own weekly party residency in Ibiza.

“Every man has his priorities in life and my priority is to raise my son,” Paco says candidly.

“To have my own night in Ibiza would take up too much of my time - time I don’t want to share with anyone but my son. Another reason I don’t want to start my own night is because it would mean going up against my friends who are already promoting their own parties.

Friends like Marco Carola, who is more like my brother. We’ve been really good friends for 20 years and Music On have been supporting me as a resident since the beginning – I have to respect that.”

The fact that Ibiza’s superclubs demand an immediate return from their superstar headliners is another factor influencing Paco’s decision. “The promoters here don’t have any patience,” he explains. “They want immediate results. If you curate a night you have to fill the venue with VIPs and make tons of money right away. This prevents artists growing something organic, something interesting.”

Before Paco opened Club4, the 500-capacity venue he co-owned in Barcelona, he ran a regular Sunday night party in the city. “And back then I never once announced who the DJ was going to be. The important thing was to show the people that it didn’t matter who was play-

“Cada hombre tiene sus prioridades en la vida y la mía es criar a mi hijo”, dice Paco con sinceridad. “Tener mi propia noche en Ibiza me llevaría demasiado tiempo. Tiempo que no quiero compartir con nadie más que con mi hijo. Otra razón por la que no quiero dirigir mi propia noche es porque significaría competir contra mis amigos que ya están promocionando sus fiestas. Amigos como Marco Carola, a quién considero mi hermano. Somos compañeros desde hace más de 20 años y Music On me ha apoyado como residente desde el principio. Tengo que respetar eso”.

El hecho de que los súper clubs de Ibiza exijan un retorno inmediato de sus cabezas de cartel es otro factor que influye en la decisión de Paco. “Los promotores aquí no tienen paciencia”, asegura. “Quieren resultados a la primera de cambio. Si gestionas una noche, tienes que llenar el club con gente importante y generar ingresos desde el primer momento. Esto evita que los artistas desarrollen algo orgánico, algo interesante”.

Ein weiterer Grund ist, dass ich damit wiederum gegen meine Freunde agieren würde, die ihre Partys promoten. Freunde wie Marco Carola, der für mich wie ein Bruder ist. Seit 20 Jahren schon sind wir gute Freunde, Music On hat mich als Resident von Beginn an unterstützt – das respektiere ich.“ Die Tatsache, dass Ibizas Superclubs sofortigen Erfolg von den Superstars erwarten, war ein weiterer Faktor, der Pacos Entscheidung beeinflusste. „Sie wollen umgehend Resultate.

Wenn du eine Nacht kuratierst, musst du VIPs in die Location locken und sofort Tonnen von Geld einfahren. Das verhindert, dass sich bei Künstlern etwas Organisches, etwas Interessantes entwickelt.“ Bevor Paco den Club4 eröffnete, die 500erVenue in Barcelona, deren Teilhaber er ist, hatte er in der Stadt eine regelmäßige Party am Sonntagabend. „Ich habe den DJ damals nie angekündigt. ing, the music was going to be good. Back then our philosophy was clear: don’t follow the names, follow the music. But today this business is all about the names and not necessarily the quality. A lot of the big headline DJ/producers you see all over Ibiza on the billboards aren’t even making their own music. They’re using sample packs and making bootlegs.

Match a percussion sample with a bassline sample, add an acapella, put it all together and you’re a top tech-house producer. This is what happens when you follow the hype and don’t pay attention to the music.”

One party that has stayed true to the age-old ethos of the dance scene, however, is Music On. “It’s become a cliché,” Paco says, “but it’s true: Music On is all about the music. Marco has a specific vision of how a nightclub should be. Over the wintertime he looked at so many big-name DJs to play at Amnesia, but instead he decided to invest his money in young upand-coming talent, not only to help them grow, but also to keep those artists closer to us as a group. If you book the big names, maybe they will sell more tickets, but if the quality of the music is not what Marco wants for his party he is prepared to take the harder route. It’s a brave move to trust in a whole new generation of DJs, but I absolutely believe it’s the right decision.” n

Sin embargo, una de las fiestas que se ha mantenido fiel al antiguo espíritu de la escena de baile en Ibiza es Music On. “Se ha convertido en un cliché”, dice Paco, “pero es verdad: Music On se basa exclusivamente en la música.

Marco tiene una visión muy clara de cómo debe ser un club. Durante el invierno investigó a muchos DJs de renombre para que tocaran en Amnesia, pero al final decidió invertir su dinero en jóvenes talentos. Das passiert, wenn du dem Hype folgst und nicht auf die Musik achtest.“ Eine Party, die bis heute dem alten Ethos der Dance Scene folgt, ist Music On. „Es mag ein Klischee sein“, sagt Paco, „aber es ist wahr: Bei Music On dreht sich alles um die Musik. Marco hat eine genaue Vorstellung davon, wie ein Nightclub sein sollte. Über den Winter hat er sich viele Big-Name-DJs, die im Amnesia auflegen angeschaut, entschied sich dann aber doch dafür, das Geld in vielversprechende Talente zu investieren, nicht nur um sie zu unterstützen, sondern auch um sie uns als Gruppe nahezubringen. Bucht man die großen Namen, verkauft man vielleicht mehr Tickets, aber wenn Marco etwas anderes als jene Qualität der Musik für seine Party sucht, dann ist er auch bereit, dafür einiges auf sich zu nehmen. Es gehört Mut dazu, einer neuen Generation von DJs zu vertrauen, aber ich glaube absolut daran, dass es die richtige Entscheidung ist.“ n

espite spending 70% of his life on the road, globetrotting dance music icon Sasha has a great appreciation for home comforts. “I’ve still got a base in New York and London,” the Last Night On Earth star tells us, “but I’ve been spending a lot of time in Ibiza over the winter and the move has most definitely changed the way I eat.”

Having cut-out a permanent foothold on the island last year, Sasha quickly started exploring Ibiza’s numerous farmers markets. “It’s actually one of my favourite things to do,” Sasha explains. “Working out what I’m going to cook the following week, spending an entire day in the kitchen. To have the time to make big pots of food for my family to eat while I am away, to me that’s the ultimate luxury.”

Sasha’s interest in good food is inspired by a lifetime touring the world. “As a DJ, you get taken out for lots of dinners,” he continues.

“But it was only when I started reading books

by Anthony Bourdain that I became more adventurous. Bourdain’s book, The Cook’s Tour, covers his trip to Vietnam. I read that book 15 years ago and decided right there and then to go to Vietnam and explore the markets he mentioned.”

When it comes to buying raw ingredients in Ibiza, Sasha likes to head to the fabulous Mercat Nou market in Ibiza Town. “There are at least 10 fish counters, 10 meat counters, lots of vegetable stalls and a few guys selling organic stuff from their own farms. The island is also

El interés de Sasha por la buena comida es fruto de haber pasado casi toda la vida recorriendo el mundo. “Como DJ, te llevan a muchas cenas...”, continúa. “Pero cuando comencé a leer libros de Anthony Bourdain me volví más aventurero. En su libro The Cook’s Tour, narra su viaje a Vietnam. Lo leí hace 15 años y me inspiró tanto que decidí viajar allí y explorar los mercados que mencionaba”.

Cuando se trata de comprar materias primas en Ibiza, a Sasha le gusta ir al fabuloso mercado de Mercat Nou en la ciudad de Ibiza. “Hay al menos 10 paradas de pescado, otras 10 de carne, muchos puestos de verduras y algunos

rotzdem er Dreiviertel seines Lebens auf Tour verbringt, hat Sasha, Globetrotter und Dance Music-Ikone, eine große Schwäche für heimischen Komfort. „Ich habe in London und New York immer noch eine Basis“, verrät uns der „Last Night On Earth“-Star, „über den Winter habe ich jedoch viel Zeit in Ibiza verbracht und das hat ganz sicher meine Ernährungsweise verändert.“ Da er sich im letzten Jahr dauerhaft auf der Insel eingerichtet hat, hat er die zahlreichen Bauernmärkte Ibizas schnell erkundet. „Eine meiner Lieblingsbeschäftigungen,“ erklärt Sasha. „Mir zu überlegen, was ich die folgende Woche kochen möchte, den ganzen Tag in der Küche verbringen. Mir die Zeit zu nehmen, große Töpfe mit Leckereien für die ganze Familie zuzubereiten, für die Zeit meiner Abwesenheit - das ist für mich der ultimative Luxus.“ Sashas Interesse an gutem Essen ist vom Leben auf Tour rund um die Welt inspiriert. „Als DJ wirst du oft zum Dinner eingeladen,“ fährt er fort. „Als ich begann, Bücher von Anthony Bourdain zu lesen, wurde ich neugieriger. Bourdains ‚The Cook’s Tour“, erzählt von seinem Trip nach Vietnam. Ich habe das Buch vor 15 Jahren gelesen und mich sofort dazu entschlossen, auch nach Vietnam zu reisen und seinen Spuren zu folgen.“ Geht es um frische Zutaten, dann ist der berühmte Mercat Nou Sashas erste Adresse in Ibiza. „Es gibt mindestens zehn Fisch-Stände, 10 Fleisch-Stände, viele mit Gemüse, dazu ei-

phenomenal for citrus fruits and the red soil here is amazing for potatoes. And the tomatoes here are truly something else – I’ve never tasted anything quite so intense – you can make a really simple salad with just a little salt, vinegar and oil. But my favourite thing to buy and cook are courgette flowers, which I stuff with ricotta, thyme and pine nuts and drizzle with honey and hibiscus salt. The traders take so much pride in their produce, you can really taste it. Looking back I do kick myself, because I spent years shopping at Eroski when the local markets were right next door.”

And when it comes to eating out on the other side of the planet? “Tokyo is top of my list,” Sasha says. “The chefs focus on one or two dishes and nail it to perfection every time.

My second favourite is Lima. Whenever I get the chance to stay in Peru I absolutely stuff my face! The produce is so different to what we see in the western world – different kinds of corn, potatoes and fish. The way they put things together is extraordinary. Eating out in New York is also a world class experience and the city inspires culinary trends. A good example is the luxury burger fad which has filtered out across the world. But when it comes to eating in, Ibiza leads the way.” n

Mi segundo lugar favorito es Lima. Cada vez que tengo la oportunidad de quedarme en el Perú, me pongo las botas. El producto es muy diferente del que vemos en Europa, tienen diferentes tipos de maíz, patatas y pescado, y la forma en la que fusionan los ingredientes es extraordinaria. Comer en Nueva York también es una gran experiencia y la ciudad inspira muchas de las nuevas tendencias culinarias. Un buen ejemplo es la moda de las hamburguesas de lujo que se ha extendido por todo el mundo.

Pero cuando se trata de comer bien, para mí Ibiza lidera el camino”. n

Die Händler sind stolz auf ihre Ware und das schmeckst du einfach. Wenn ich zurückschaue, ärgere ich mich schon ein wenig, immer nur zu Eroski gegangen zu sein, wo doch die Händler gleich nebenan sind.“ Und seine Food-Favoriten auf der anderen Seite des Planeten? „Tokio ist bei mir ganz oben“, sagt Sasha. „Die Köche konzentrieren sich auf ihre ein, zwei Speisen und die beherrschen sie perfekt. Gleich danach kommt Lima.

Wann immer ich in Peru bin, gibt es für mich kein Halten. Dort ist alles so anders als in der westlichen Welt – der Mais, die Kartoffeln, der Fisch. Wie sie das miteinander verarbeiten, ist einzigartig. In New York essen gehen ist ebenfalls Weltklasse, die Stadt inspiriert alle kulinarischen Trends. Ein gutes Beispiel ist der weltweite Siegeszug des Luxus-Burgers. Aber wenn es ums Essen geht, dann führt an Ibiza kein Weg vorbei.“ n

FLORENCE & THE MACHINE – „HIGH AS HOPE“

(Republic)

Nowadays, even Rolling Stone, which favours male cover models, has no alternative but to hoist her onto the cover. In other words, in her early thirties, Florence Leontine Mary Welch has made it to where Bob Dylan, Mick Jagger and Neil Young hang out – the top shelf of the great music rack. It has not, by any means, been a blitz career: her début album Lungs has got nine years on the clock and the new work, with its hopeful title, is already her fourth LP. So, at least the musical evolution stagnated at a high level. With its slow build-up, Florence’s idiosyncratic vocal range going from tantalizing to soul-reaching, dramatic swelling and catharsis, the way the songs are constructed is known and still works – to the extent that one can defend oneself as a listener – very well.

With respect to the generation of Ed Sheeran, Adele and even Florence, the Guardian newspaper spoke of the ‘new boring’ trend. Needless to add, that is as typically cynical as it is, in parts, fitting. Nonetheless, Florence has now found her style, updating it only in the details and yet you cannot help getting the impression that there is a big makeover lurking sometime in the next few years. Until then we’ll enjoy her songs in the classic Florence style.

En otras palabras, a sus 30 años, Florence Leontine Mary Welch ha llegado donde lo hicieron Bob Dylan, Mick Jagger y Neil Young: a lo más alto de la esfera musical.

La suya no ha sido una carrera relámpago. Su álbum de debut, “Lungs”, tiene ya nueve años de antigüedad, y el nuevo trabajo, de tan prometedor título, es ya su cuarto LP. Su evolución musical ha ido subiendo el listón a lo largo de los años. El registro vocal de Florence se ha construido poco a poco y va desde el cariz soul hasta el drama y la catarsis. Su forma de construir las canciones se ha convertido en una de sus señas de identidad y atrapa a todo tipo de oyentes. Con respecto a la generación de Ed Sheeran, Adele e incluso Florence, el periódico The Guardian habló de la tendencia ‘new boring’. Algo tan cínico como apropiado, la verdad. Sin embargo, Florence ha encontrado su estilo, un estilo que ha ido actualizando en detalles y que da la impresión de que en los próximos años, ofrecerá un nuevo cambio de imagen. Anders gesagt: Mit Anfang 30 hat Florence Leontine Mary Welch es dorthin geschafft, wo sich sonst Bob Dylan, Mick Jagger und Neil Young tummeln – ins oberste Bord des ganz großen Musikregals.

Eine Blitzkarriere ist das mit-nichten, ihre Debütalbum „Lungs“ hat neun Jahre auf der Uhr, das neue Werk mit dem hoffnungsvollen Titel ist bereits ihr vierter Longplayer. Die musikalische Entwicklung stagniert dabei auf zumindest hohem Niveau. Langsamer Aufbau, Florences eigenwillige, von betörend bis beseelt reichende Stimm-Bandbreite, dramatische Steigerung und Katharsis, das Song-Konstrukt ist bekannt und funktioniert, da kann man sich als Hörer noch so sehr wehren, immer noch bestens. Der englische „Guardian“ schrieb angesichts der Generation von Ed Sheeran, Adele und eben Florence vom Trend des „New Boring“. Das ist natürlich ebenso zynisch wie in Teilen zutreffend. Und doch: Florence hat nun mal ihren Stil gefunden, renoviert den nur im Detail und doch kann man sich des Eindrucks nicht erwehren, dass da in den nächsten Jahren nochmal ein großer Makeover lauert. Bis dahin genießen wir ihre Lieder im Classic-Florence-Stil.

DRAKE – „SCORPION“

Over the past weeks, even more than his music itself, it has been to some extent, about the decades-old records that Drake has just pulverised with his new, now fifth one. There are, for example, the seven songs in the top 10 of the US charts, meaning precisely two more than those five with which the Beatles dominated Billboard’s charts in April 1964 (!). A total of 31 top 10 songs are also more than the previous record holder, Michael Jackson, in total and his new work “Scorpion” has now been accessed a billion times on streaming platforms, believe it or not. The reason for it: his music, of course. Image wise, Drake comes across as the scandal-free guy next door and though his songs may be a bit streamlined, they are extremely groovy and inspired. This time, the Canadian-born artist goes for a pared-down approach with tracks like “I’m Upset”, the opener “Survival” or the shimmering “Can’t Take a Joke” based on very economically used grooves that couple old-school flair with hypnotic repetition. The “8 out of 10“ track sounds almost like the counterpart to the Arctic Monkeys’ “Four Stars out of Five”. Drake’s success story goes on with no end in sight.

En las últimas semanas se ha hablado, más que de su propia música, sobre los récords que Drake ha pulverizado con su nuevo trabajo, el quinto de su carrera. Drake ha conseguido colocar siete de sus canciones en el top 10 de las listas de Estados Unidos, dos más que las cinco con las que The Beatles dominaron las listas de Billboard en abril de 1964 (¡!). Un total de 31 canciones de las 10 mejores son también obra de Drake, otro récord que supera ni más ni menos que el de Michael Jackson. Por otro lado, su nuevo trabajo, “Scorpion”, supera ya las mil millones de reproducciones en plataformas de streaming, lo creas o no. ¿El motivo? Su música, por supuesto. En cuanto a la imagen, Drake se muestra como un artista libre de escándalos, y aunque sus canciones puedan parecer simples, son extremadamente groovy e inspiradas. Esta vez, el artista nacido en Canadá apuesta por un enfoque reducido con temas como “I’m Upset”, la apertura que deviene “Survival” o el reluciente “Can not Take a Joke”, basado en ritmos muy minimalistas, pero que consiguen una repetición hipnótica, mientras que la canción “8 out of 10” suena casi como la contraparte de “Four Stars of Five” de Artic Monkeys. Una cosa está clara: la historia de éxito de Drake continúa sin final a la vista.

Der Grund dafür: Natürlich seine Musik. Imagetechnisch gilt Drake als skandalfreier Typ von nebenan, seine Songs mögen etwas stromlinienförmig sein, dabei aber durchweg äußerst groovy und inspiriert. Diesmal setzt der gebürtige Kanadier diesmal auf Reduktion, Tracks wie „I’m Upset“, der Opener „Survival“ oder das flirrende „Can’t Take a Joke“ basieren auf sehr ökonomisch eingesetzten Grooves, die Old-School-Flair mit hypnotischer Wiederholungs-Frequenz koppeln. Dabei klingt „8 out of 10“ vom Titel her fast wie eine Replik auf das „Four Stars out of Five“ der Arctic Monkeys. Drakes Erfolgsstory geht weiter, kein Ende in Sicht.

How do you keep going after the one big hit that outshines everything? In 2011, the Swede pushed to the top of the charts worldwide with a remix of her song “I Follow Rivers”. Subsequent records such as “Get Some” also continued the success story of the daughter of a family of artists. As so often happens in life, there are two main options in the aftermath of a hit: somehow trying to repeat it all over again, reworking it a little and applying the successembracing elements of style. Or simply take a detour off the usual track and just try it with a different sound. Lykke Li has decided to do the latter although, naturally, she does not leave the progress of her career to chance. You can see that straight away by a look at her team, which includes greats such as Frank Ocean/Lorde producer, Malay and songwriter Jonny Coffer, as well as her husband, the allrounder pop-mogul, Jeff Bhasker, who has already worked with just about every megastar.

The formula seems to work. “Jaguars in the Air” sounds like a summer picnic in the backyard of Go! Team, “Better Alone” channels the spirit of Kate Bush and the smooth “Two Nights” – reinforced by Aminé – like an inspired, boiled-down version of Adele. A successful summer album for the blue hour of a hot day.

Lanzamientos posteriores como “Get Some” también continuaron la historia de éxito de esta hija de familia de artistas. Como sucede tan a menudo en la vida, hay dos opciones principales después de dar un gran golpe: tratar de repetir todo de nuevo, re-elaborando un poco tu propuesta; o desviarte del camino habitual e intentarlo de nuevo con un sonido diferente. Lykke Li ha decidido hacer lo último aunque, naturalmente, no deja el progreso de su carrera al azar. Se nota al echar un vistazo a los colaboradores del álbum, en el que aparecen grandes figuras como el productor de Frank Ocean y Lorde, el compositor Jonny Coffer, así como su marido, el magnate del pop Jeff Bhasker, que ya ha trabajado con casi todas las megaestrellas.

La fórmula parece funcionar. “Jaguars in the Air” suena como un picnic de verano en el patio trasero de The Go! Team, “Better Alone” canaliza el espíritu de Kate Bush y el suave “Two Nights” -reforzado por Aminé- suena como una versión inspirada y reducida de Adele. Un álbum de verano exitoso, perfecto para refrescar un día de calor.

Anno 2011 stieß die Schwedin mit einem Remix ihres Songs „I Follow Rivers“ weltweit in obere Chartsregionen vor, auch Nachfolger wie „Get Some“ schrieben die Erfolgsstory der Tochter einer Künstlerfamilie fort. Wie so oft gibt es im Leben nach dem Hit zwei maßgebliche Optionen: Irgendwie zu versuchen, das ganze noch einmal zu wiederholen, minimal überarbeitet und unter Einsatz der erfolgsumarmendeen Stilmittel. Oder eben einen Abbieger von der gewohnten Spur zu nehmen und es einfach mal mit einem anderen Sound zu versuchen.

Lykke Li entscheidet sich nun für letzteres, dem Zufall überlässt sie den Fortgang ihrer Karriere natürlich dennoch nicht, das sieht man schon beim Blick auf ihr Team, in dem Größen wie Frank Ocean/Lorde-Produzent Malay und Songwriter Jonny Coffer sitzen, ebenso wie ihr Gatte, der Allround-Popmogul Jeff Bhasker sitzen, der mit so ziemlich jedem Megastar bereits zusammengearbeitet hat. Die Formel scheint aufzu-gehen. „Jaguars in the Air“ klingt wie ein Sommer-Picknick im Hinterhof des Go! Teams, „Better Alone“ durchzieht der Geist von Kate Bush, das smoothe, von Aminé verstärkte „Two Nights“ wie eine beseelte Adele-Reduktion. Ein gelungenes Sommer-Album für die blaue Stunde eines heißen Tages.

GORILLAZ – „THE NOW NOW“

At one time, Gorillaz only gallivanted around on stages and screens as animated cartoon characters; with the switch to a real band, they have had to deal directly with the mantraps of human life. At the Roskilde festival in Denmark, Del Tha Funky fell off the stage and suffered severe rib injuries and fractures. That should hold up the success of Damon Blur’s long-term project only briefly, so entertaining, multilayered and entertaining is the new work.

“Humility” is casual Philly soul on which George Benson is the highlight and “Kansas” wafts out of the rehearsal room of Albarn’s house band, Blur, interweaving reduced beats with Beatles undertones. Halfway between animated anthem and urban melancholy, “Magic” covers a lot of ground while, on the casually groovy “Hollywood”, Snoop Dogg and Jamie Principle shake hands. Fascinating how calmly one hit segues into the next one, doing so without opening the whole big barrel, but rather performing with a healthy dose of British understatement. However, in terms of projects, it is not the last word for Albarn since new material by his supergroup, The Good, The Bad & The Queen is to be announced later this year.

Hubo un tiempo en que Gorillaz sólo aparecían en escenarios y pantallas como personajes de dibujos animados. Con el cambio a una banda real, han tenido que lidiar directamente con las trampas de la vida humana. En el festival de Roskilde en Dinamarca, Del Tha Funky se cayó del escenario y sufrió lesiones severas en las costillas, además de varias fracturas. Un contratiempo que seguro que no retrasa el éxito del ya longevo proyecto de Damond Albarn, cuyo nuevo álbum resulta muy chispeante y entretenido. Hablemos de sus temas: “Humility” es como una pieza casual de sonido Filadelia en la que colabora George Benson, mientras que “Kansas”, parece salida de un ensayo de Blur, con ritmos contenidos y ecos a los Beatles. A medio camino entre el himno animado y la melancolía urbana tenemos “Magic”, mientras que en el informal “Hollywood”, se dan la mano dos colaboradores de lujo como Snoop Dogg y Jamie Principle. Fascinante es la rapidez con la que un hit avanza al siguiente, todo ello con una dosis saludable de euforia británica. Este no será el último proyecto de Damon Albarn en 2018, ya que ha anunciado que el nuevo material de su súper grupo The Good, The Bad & The Queen verá la luz a finales de año.

Faszinierend, wie unaufgeregt sich hier ein Hit an den nächsten reiht und das ohne jedes Mal das ganze große Fass aufzumachen, sondern vielmehr mit britischem Understatement wohldosiert zu agieren. Das letzte Wort in Sachen Projekte ist das bei Albarn dennoch nicht, für Ende des Jahres ist neues Material seiner Supergroup The Good, The Bad & The Queen angekündigt.

GIZMO VARILLAS – „DREAMING OF BETTER DAYS“

Gizmo first saw the light of day as Guillermo Varillas Kortabarria, on January 9, 1990 in Santander and he has come to music somewhat incidentally. He was a diligent student of media science at Cardiff, Wales when, while on a holiday in France, he ended up stretching out his travel budget as a street musician. What began as a spontaneous action became a lifechanging decision. In 2016, he released his first EP, “Give a Little Love”. His first LP followed in the shape of “El Dorado” and English broadcasters like BBC 6 Music became aware of the young man and his summery grooves. On “Dreaming of Better Days”, the 28-year-old now takes the development of his sound further.

Airy guitar playing and subtle keyboard grooves determine the picture from the beginning, but in the meanwhile, he is wrapping modern beats and pointed keyboard arrangements around this traditional foundation. It is reminiscent of Beck’s Mediterranean phase, or then again, the French-pop experts, Phoenix.

He pulls off quite a feat with songs like “Feeling Alright”, “One People” or “Love Heals with Time” and it’s thoroughly compatible with a sandy beach while also being formulated down to the smallest detail and highly tastefully constructed.

Fue un buen estudiante de ciencia de los medios en Cardiff (Gales), y mientras estaba de vacaciones en Francia, extendió su presupuesto de viajes como músico callejero. Lo que comenzó como una acción espontánea se convirtió en una decisión que le cambió la vida. En 2016 lanzó su primer EP, “Give a Little Love”. Fue con su primer álbum, “El Dorado”, cuando varias radios inglesas como la BBC 6 Music se dieron cuenta de su gran potencial para crear ritmos veraniegos. En “Dreaming of Better Days”, el joven de 28 años sigue desarrollando su sonido. Las guitarra suaves y los sutiles arreglos de teclado determinan la imagen desde el principio, siempre basculando sus canciones entre ritmos modernos y arreglos tradicionales del pop. A veces recuerda a la fase mediterránea de Beck y también a los magos del pop francés: Phoenix. Sea como sea, canciones como “Feeling Alright”, “One People” o “Love Heals with Time” son muy notables, y perfectamente compatibles para ser escuchadas en la playa este verano. Un disco, además, cuidado hasta el más mínimo detalle y construido con muy buen gusto.

Als Student der Medienwissenschaften lernt er fleißig im walisischen Cardiff, bei einem Urlaub in Frankreich schließlich bessert er als Strassenmusiker seine Reisekasse auf. Was als spontane Aktion beginnt, wird zur lebensverändernden Entscheidung. Anno 2016 veröffentlicht er seine erste E.P. „Give a Little Love“, mit „El Dorado“ folgt der erste Longplayer, englische Sender wie BBC 6 Music werden auf den jungen Mann und seine sommerlichen Grooves aufmerksam. Auf „Dreaming of Better Days“ nun arbeitet der 28-Jährige seinen Sound weiter aus. Luftiges Gitarrenspiel, dezente Keyboard-Grooves bestimmen wie von Anfang an das Bild, mittlerweile aber umschmiegt er diese traditionelle Grundierung mit modernen Beats und pointierten KeyboardArrangements, die mal an Becks mediterrane Phase denken lassen, dann wieder an die frankophonen Popper von Phoenix. Damit gelingt ihm durchaus ein Kunststück, sind Songs wie „Feeling Alright“, „One People“ oder „Love Heals with Time“ doch durchweg Sandstrand-kompatibel, dabei aber bis ins Detail ausformuliert und äu-ßerst geschmackvoll konstruiert.

With the current album, “Jericho Sirens” I became a late-discoverer: the American band has already been around for two decades. The good thing is that I managed to get hold of another three albums by them in one fell swoop. A superb, versatile grunge update.

Con su actual álbum, “Jericho Sirens”, me convertí en un descubridor tardío, y es que la banda estadounidense lleva en activo más dos décadas. Lo bueno es que me hice con otros tres de sus álbumes de una sola vez. Una actualización del grunge excelente y versátil.

Mit dem aktuellen Album „Jericho Sirens“ wurde ich Spät-Entdecker, die US-Band gibt es bereits seit zwei Dekaden. Das Gute ist, dass ich mir so direkt weitere drei Alben von ihnen auf einen Schlag zulegen könnte. Ein superbes, vielseitiges Grunge-Update.
