They blend the comfortable, carefree lifestyle of the gypsy with the refinement of the jet set. A life-affirming style.

Gypset style means an unconventional lifestyle, ranging from wanderlust enthusiasts to bohemians. For them, it's all about the true luxury that cannot be purchased with money: time.

Which is why, these cultural nomads also explore their counter-culture ancestors such as the Victorian explorers, the lost generation, the beatniks and the hippies.

Vestidos de colores, se pasean de playa en playa, desde Montauk, Nueva York y Punta del Este, Uruguay, hasta Ibiza. Combinan el estilo de vida cómodo y despreocupado gitano con el refinamiento de la jet set. Un estilo que da valor a la vida.

oto Raymar is the only place in Ibiza where you can still get analogue film developed nowadays. Even though its owner Rafa Domínguez describes it as a mere “corner shop”, it is one of the island’s most venerable photographic studios, a charming, family-run place that is full of history, as is evident from the beautiful pictures of Ibiza in the 60s and 70s and the various old photographic materials that decorate the venue.

In Raymar, they used to develop films twice a day in the 1970s, one at six in the morning and another at 2:30 PM in order that they could open at 5 PM with the material ready. At that time, Foto Raymar was a meeting place for photography fanatics much frequented by reporters from local, national and international publications from Diario de Ibiza to Interview and EFE. Toni, Rafa’s father, started out in this exciting world at the tender age of 12, working as an apprentice with his uncle in Foto Cine, a little shop located in La Marina very close to Foto Santiago, another traditional studio in Ibiza.

When he was 15, he tried to join a military photography school in Madrid. On his journey there from the island, he had who knows how many adventures. In the end, he was not admitted and had to return. When he came back, he worked with one of those curious Polaroid-like cameras with which they used to take photos in the street that were developed in minutes.

oto Raymar es el único lugar de Ibiza donde aún hoy puedes hacer revelados analógicos.

Aunque su propietario Rafa Domínguez lo describe como una mera “corner shop”, es uno de los estudios fotográficos con más solera de la isla, un lugar entrañable, familiar y lleno de historia, como se desprende de las hermosas imágenes de la Ibiza de los 60 y 70 y los variopintos materiales fotográficos antiguos que decoran el local.

En Raymar llegaban a hacer dos revelados diarios en los 70, uno a las 6 de la mañana y otro a las 14:30h para poder abrir a las 17h con el material listo. En esa época Foto Raymar era un punto de encuentro para los amantes de la imagen por donde pululaban reporteros de publicaciones locales, nacionales e internacionales, desde Diario de Ibiza a Interview o EFE. Toni, el padre de Rafa, empezó en este mundo apasionante con tan sólo 12 años, trabajando de aprendiz con su tío en Foto Cine, una tiendecita ubicada en La Marina, muy cerca de Foto Santiago, otro estudio tradicional ibicenco. A los 15 años intentó entrar en una escuela de fotografía militar en Madrid, a donde tuvo que desplazarse desde la isla pasando no se sabe muy bien cuántas peripecias.

El caso es que no consiguió plaza y tuvo que regresar, ocupándose a su vuelta de una de esas curiosas minuteras con la que se tomaban fotos en la calle que se revelaban en minutos.

Auch wenn Rafa Domínguez sein Geschäft selbst bescheiden als „Eckladen“ bezeichnet, ist es doch eines der ehrwürdigsten Fotostudios der Insel, ein bezaubernder, familiengeführter Ort, in dem Geschichte lebt: Mit seinen wunderschönen Insel-Fotos der 60er und 70er Jahre und den fotografischen Utensilien, die es zieren.

Zwei Entwicklungszeiten gab es im Raymar der 70er Jahre: Um 6 h in der Früh und um 14.30 h noch einmal, um dann um 17 h mit den fertigen Fotos zu öffnen. Foto Raymar wurde hiernach zum Treffpunkt von Fotografen und Journalisten lokaler, nationaler und internationaler Medien, von Diario de Ibiza zu Interview und EFE: Alle waren sie vertreten!

Toni, Rafas Vater, startete im zarten Alter von 12 Jahren seine fotografische Karriere, als er im Fotostudio seines Onkels, dem Foto Cine an der Marina, in der Nähe von Foto Santiago (einem ebenfalls sehr renommierten Fotostudio) als Lehrling anfing. Im Alter von 15 Jahren versuchte er sich, an einer militärischen Hochschule für Fotografie in Madrid einzuschreiben, doch auf dem Weg dorthin wurde er in einige Abenteuer verwickelt und letzten Endes nicht aufgenommen. Er kehrte zurück und arbeitete im Studio schwerpunktmäßig mit dem Vorgängermodell einer Polaroid Kamera, deren Bilder sehr schnell entwickelt werden konnten. Nach

After four years of military service as well as working in the shop, Foto Ibiza, Rafa’s maternal uncle, who possessed some capital, opened Foto Raymar in Vara de Rey in 1963, giving the shop that name in honour of his parents, Rafael and María.

Rafa grew up in Raymar. From the age of 10 onwards, he used to help his father cutting the negatives and drying the photos… He never doubted his vocation: he wanted to study photography but, in those days, studying abroad, not to mention in a private academy, was an absolute luxury that very few people could afford. His father urged him to study a trade and

Desde los 10 años ayudaba a su padre cortando negativos, secando fotos…Siempre tuvo clara su vocación, quería estudiar fotografía, pero en aquellos tiempos estudiar fuera, y más en una academia privada, era un auténtico lujo que no muchos se podían permitir. Su padre le instó a estudiar un oficio y eligió Electricidad. Sin embargo, nada más terminar, Toni Pomar, jefe de

Niemals zweifelte er an seiner Berufung und sein größter Wunsch wäre es gewesen, Fotografie zu studieren, doch zu dieser Zeit war ein Studium im Ausland oder gar an einer Privatschule ein finanziell unerfüllbarer Traum. Sein Vater drängte ihn, dennoch eine Ausbildung zu absolvieren

he chose to be an electrician. Nevertheless, no sooner had he finished than Toni Pomar, head of photography at Diario de Ibiza, asked him to work there and he spent five years at the newspaper until his two daughters were born and he decided to return to the family business. “It was a baptism by fire, my true apprenticeship in the trade”. Years spent taking photos under any conditions whatsoever served him to complete his apprenticeship and learn techniques that he has continued to apply throughout his life.

Años haciendo fotos bajo cualquier condición le sirvieron para completar su aprendizaje y aprender técnicas que ha seguido aplicando toda la vida.

En el estudio se dedicaban a los reportajes de bodas, comuniones, cumpleaños, retratos… eso que ahora se conoce como fotografía social.

Quizás pronto podamos disfrutar de esas increíbles imágenes,

Toni fotografierte häufig nebenbei, wenn er mit seiner Familie Ausflüge unternahm, heute sind es seltene, spektakuläre Bilder. „Es muss jemand von außen kommen, um dir die Schönheit deiner Welt zu zeigen. Ich war immer sehr beeindruckt

vision the German photographers had of Ibiza, that marvellous perspective.” With a certain remorse, he adds: “I don’t have any photos of Es Vedrà or Vara de Rey”. Perhaps we will soon be able to enjoy those incredible photos because Rafa has spent years playing with the idea of bringing together the best materials in order to organise an exhibition that captures the history of this family devoted to photography. A saga that includes a grandfather who was a projectionist and that, at its peak, had three businesses in Ibiza at the same time. n

Ich bereue zutiefst, dass ich keine Bilder von der alten Vara de Rey oder von Es Vedrá habe…“ Vielleicht werden wir bald in den Genuss von Rafas wunderbaren Fotos kommen, denn seit langem bemüht er sich, die Sammlung zu vervollständigen und zu einer Ausstellung zusammenzutragen, die die Familiensaga dokumentiert, angefangen mit dem Großvater, der ein Projektionist war und es zu seiner geschäftlichen Blütezeit auf 3 große Studios auf Ibiza brachte. n

he London-based photographer Uli Weber is world-famous for his celebrity portraits as well as his unique fashion shoots. Among others, he has taken photographs for Vogue, Elle, Marie Claire and Mix Mag. His love for photography started when he got his first camera at the age of 12. After leaving school, he went to Rome and started studying at the Istituto Europeo di Design.

In 1986, he moved to London, where he soon began working as a freelance photographer. He quickly made a name for himself thanks to his sophisticated, distinguished portraits of stars such as Sting, Robbie Williams and Placido Domingo. In the world of fashion photography, he became known for outstanding pictures and successful campaigns.

In the meantime, he has published several books of photographs with successful exhibitions in London, Milan and New York.

His work has led him to a parachute jump over the North Pole, to the Avenue of the Baobabs in Madagascar and to New York to an interview with Oprah Winfrey.

What connects him with Ibiza? His longstanding friendship with Robert Miles, who lived in Ibiza for many years. n

arlie Carpenter is a truly enchanting woman. Strikingly beautiful, intelligent and a bringing with her a kaleidoscope of colour, her natural aura emanates passion and promise. Based in a breathing apartment in the mountains of San Antonio, her home encapsulates tropical prints, disco, sparkling lights and a riot of colour, something of a cosmic jungle, expressing Carlie herself completely. She also has a great affinity with cats who represent love and protection to her, which is why they are always reflected in her logos.

We meet to talk about her fashion label Respect the Effect, just one of her many projects. Launched this winter with her long time friend and business partner Sofian, another talented designer who has been her closest friend for ten years, so the idea to join forces creativity, trust and their mutual respect, belief in unity, was a natural one.

The concept behind the label is philosophic fashion, to give people something to focus on in these troubled times we live in, bringing a message that everything happens for a reason, and if we choose to ask ourselves why, and turn the bad experiences into good, this is essentially, Respecting the Effect.

Her creations are colourful, unusual and daringly different, and each piece is completely unique, one size, its either made for you or it isn’t Carlie explains, if it doesn’t suit you then she will find something which does.

El concepto detrás de la marca es la moda filosófica, dar a la gente algo en lo que concentrarse en estos tiempos difíciles en que vivimos, trayendo un mensaje de que todo pasa por una razón, y si decidimos preguntarnos por qué y convertir las malas experiencias en buenas, estamos ante Respect the Effect.

Das Konzept des Labels hat einen philosophischen Hintergrund: In bewegten Zeiten soll es einen Fokus bieten, daran erinnern, dass alles aus einem bestimmten Grund passiert und wir durch Besinnung und Hinterfragen in der Lage sind, die Dinge zum Besseren zu wenden.

Ihre Kreationen sind farbenprächtig, ungewöhnlich, auf mutige Art anders. Jedes Stück ist unique und nur in einer Größe verfügbar.

private events, this is her focus for the summer ahead, and she truly puts her heart and soul into these exclusive parties, creating every single detail herself, it is her baby, her passion. Held in a private villa in Cala Carbo, which boasts its own nightclub, the events are inspired by her Parisian roots, she dreams of bringing g a touch of the Moulin Rouge to the island, hence the name of her next party Space Can Can, but with a modern edge. Every party has a different theme, with different costumes and decorations.

She can also add to her repertoire her musical talents, she has been a DJ since the age of 16, being the first underage DJ in Paris, having to be accompanied by her mother into the nightclubs as she was so young! Playing only vinyl, she learned her trade the old school way.

She describes her musical style as always having a little touch of disco mixed with some deep house and classic old school tracks. In her words, bringing futuristic rehab back to the basics.

Having always mixed with an older crowd, she desires to bring back the old school to the new generation of Ibiza, bringing back originality by creating a new concept of private parties,

También puede añadir a su repertorio sus talentos musicales: ha sido DJ desde los 16 años, fue la primera DJ menor de edad en París, donde tenía que acompañarla su madre a los clubs nocturnos porque ella era muy joven. Al pinchar sólo con vinilos, aprendió el oficio a la manera tradicional.

Carlie describe su estilo musical como algo que siempre incluye ese pequeño toque de disco mezclado con algo de deep house y temas clásicos de la vieja escuela. Como ella dice, trayendo la rehabilitación futurista de vuelta a lo básico.

Al haberse relacionado siempre con un público más mayor que ella, desea traer de vuelta

Inspirieren lässt Carlie sich von ihren Pariser Wurzeln, ein moderner Touch Moulin Rouge soll die Gäste verzaubern, daher auch der Name Space Can Can. Jede Party hat ein eigenes Thema, mit verschiedenen Kostümen und wechselnder Deko.

Auch ihr musikalisches Talent gehört zum Repertoire. Mit 16 Jahren hat sie bereits als DJ begonnen, als erste Minderjährige überhaupt in Paris, dabei immer in Begleitung ihrer Frau Mama. Das Format ihrer Wahl: Vinyl. Absolut Oldschool. Ihr Stil: Ein Touch Disco, versetzt mit Deep House und Classic Tracks alter Schule, oder wie sie es nennt: „Futuristic Rehab back to the basics“.

Invited by friends in 2011 to the island, she was intrigued and followed the music, throwing herself fully into the party scene, she was instantly entranced, particularly by the Circoloco parties at DC10, where the music captured her heart so intensely that she was drawn back to the closing party the same year.

After that event, she made the decision to move here permanently.

She is eternally grateful to both Tony Pike and Sunny Ramzan who gave her a fabulous introductiuon into the Ibiza party scene with Ibiza Rocks at Pikes, hosting their legendary parties, and from there more doors opened, she made a lot of fabulous contacts and she still parties there regularly, saying it’s something of a second home to her.

We are sure we will be seeing more and more of Carlie Carpenter this year, and, to quote Carlie, “Too much is NEVER enough when you know exactly where you are going”, a fabulous mantra we could all do well to live by. n

Después de ese evento, tomó la decisión de mudarse aquí permanentemente.

Five great Spanish fashion companies who presented their cruise wear collections for 2018 amid the luxurious surroundings of Ushuaïa Tower, under a scorching sun that the hotel’s pool, with its impressive sea views in the background, could barely alleviate.

It could be that the high temperatures and the fact that the event was early were the reasons for a number of notable absences at this fashion show, which is on its way to becoming one of the great annual events in Spanish fashion. Nonetheless, among the crowd could be seen well-known faces including Carlos Martorell, Macarena Gómez, Raica Oliveira, Rosa Clará, Aldo Comas and Cathy Guetta, who hosted it.

Puede que las elevadas temperaturas y lo temprano de la convocatoria fueran la causa de algunas llamativas ausencias en esta pasarela llamada a convertirse en una de las grandes citas anuales de la moda en España, aunque sí se vieron entre el público rostros conocidos como los de Carlos Martorell, Macarena Gómez, Raica Oliveira, Rosa Clará, Aldo Comas o Cathy Guetta, que ejerció de anfitriona.

t was the focus of passion and admiration on behalf of the inhabitants of kingdoms, both nearby and also very far away. In it, there lived many beautiful princes and brave princesses as well as friendly, busy villagers. However, it was also surrounded by villains and pirates who never ceased attacking them.

But this tale does not tell the story of any of them. Pero este cuento no narra la historia de ninguno de ellos. Este cuento sólo trata del propio reino, también conocido por los nombres Ebusus, Yebisah, Eivissa o ‘Aibifa’, como dicen algunos modernos(…) Si, este cuento habla de Ibiza, de ese lugar único, tan alegre, tan libre.

Cero convencional pero siempre dulce, rebelde y a la vez relajado.

Cuando algo lo tiene todo, se merece acuñar un término propio. Gypset es un estilo de vida bohemio pero exquisito, es perfectamente desenfadado, es exótico y a la vez muy real.

Y así, como no podría ser de otra manera, ME Ibiza se erigió como el lugar definitivamente Gypset; Jet setter con alma y duende gipsy. ie Bewohner des Königreiches standen für Leidenschaft und Bewunderung, beides eng verwoben und manchmal doch weit auseinander. Hier lebten viele Prinzen und mutige Prinzessinnen Seite an Seite mit freundlichen, fleißigen Dorfbewohnern, allerdings gab es auch Schurken und Piraten, die ihr Unwesen trieben.

Aber in diesem Märchen geht es um keinen von ihnen. In unserer Saga geht es um das Königreich selbst, besser bekannt auch unter den Namen Ebusus, Yebisah, Eivissa oder „Aibifa“, oder wie es manche Menschen heute nennen (...). Ja, unsere Legende behandelt Ibiza, einen einzigartigen Platz, der voller Freude und Freiheit ist. Ohne Konventionen, aber immer voller Süße, rebellisch und entspannt zugleich.

Jemand mit so vielen Begabungen verdient einen eigenen Kosenamen: Gipsyland! Ein Bohemian, aber exquisit, perfekt lässig, exotisch und doch bodenständig.

Aus diesen Gründen hat sich das ME Ibiza nun endgültig zu einer Gipsyikone erhoben: ein Jetsetter mit Seele und freiem Geist. Ein bisschen Hippie-Luxus, schlicht dekoriert und klar, umgeben vom Wind der Balearen. Truth be told, the Paradise faithful would probably turn out in force weekly to catch Jamie play but when you consider the years of experience and talent on a bill that includes Dubfire and Tenaglia, this is worth an extra special mention. Danny Tenaglia is one of the main reasons many of the underground DJs that you love were first inspired to take up making and playing music, and Dubfire has consistently challenged musical parameters in a bid to drive the scene forward.

he fact that Ibiza is no longer the creative Mecca to which artists from all over the world used to come in search of inspiration is no secret; however, in the midst of the prevailing banality of our times, every summer we are lucky to find initiatives that breathe a little culture into the everlasting calendar of parties.

The art collector and patron, New Yorker Lio Malca, has managed-after considerable effortsto bestow on those of us here in the island the opportunity to enjoy the work of one of the 20th century’s great artistic icons. Here, in La Nave Salinas-the special venue he has been running for the past three years that is located right in the natural park-up until September 30, we will be able to enjoy four monumental works

Deceased at the age of only 31, Keith Haring managed to become-with that deceptively simple style with which he approached such profound subjects as love, death, war, sex or social harmony- one of the greatest exponents of pop culture. An exemplary artist and great social activist who advocated the democratisation of art and who raised graffiti up to the status of an art form, nowadays he continues to be a source of inspiration to thousands of creative artists.

When the visitor steps inside this former salt warehouse that has been converted into an avant-garde artistic space, they are stunned by the explosion of power and colour produced by the immense mural comprising five walls and measuring 13 metres wide called “Untitled (DV8)”, a work that plays with the similarity of its English name to the word “deviated”. What is more, there are the two containers painted

by Haring that seek to create an immersive experience. The first, “Channel Surf Club –

El coleccionista y mecenas neoyorkino Lio Malca ha conseguido con no pocos esfuerzos regalarnos la oportunidad de disfrutar en la isla de la obra de uno de los grandes iconos del arte del siglo XX. En ese espacio tan especial que regenta hace tres años, La Nave Salinas, en pleno parque natural, podremos disfrutar hasta el 30 de septiembre de cuatro obras monumentales de Keith Haring: “Untitled (DV8)”, “Channel Surf Club - Knokke”, “Untitled (Headstand)” y “Pop Shop Tokyo”.

Fallecido con tan solo 31 años, Keith Haring consiguió convertirse con ese estilo engañosamente simple con el que abordaba temas tan profundos como el amor, la muerte, la guerra, el sexo o la armonía social, en uno de los mayores exponentes de la cultura pop. Un artista de referencia y gran activista social que propugnó la democratización del arte, que elevó el graffitti a la categoría de bella arte y que hoy día sigue siendo fuente de inspiración para miles de creadores.

Cuando el visitante entra a este antiguo almacén de sal convertido en espacio artístico de vanguardia, queda abrumado por esa explosión de fuerza y color que constituye el inmenso mural de cinco paredes y 13 metros de ancho titulado “Untitled (DV8)”, una pieza que juega con el parecido de su título en inglés a la palabra “deviated” (desviación). Además, están los dos contenedores pintados por Haring que buscan crear una experiencia inmersiva: “Channel Surf Club - Knokke”, pintado en un contenedor encontrado por Haring en una playa belga y

In seiner außergewöhnlichen Galerie Nave Salinas, inmitten des Naturschutzgebietes, werden bis zum 30. September vier monumentale Werke des Ausnahmekünstlers Keith Haring zu sehen sein: „Untitled (DV8)”, „Channel Surf Club – Knokke”, „Untitled (Headstand)” und „Pop Shop Tokyo”.

Der im Alter von 31 Jahren verstorbene Keith Haring schaffte es, mit seinem trügerisch einfachen, plakativen Stil, tiefgehende Themen wie Liebe, Tod, Krieg, Sex oder soziale Gerechtigkeit zu bearbeiten. Er gehörte zu den größten Vertretern der Popkultur. Ein Ausnahmekünstler und gesellschaftlicher Aktivist, der die Demokratisierung der Kunst befürwortete und Graffiti zur Kunstform erhob. Seine Arbeit diente als Inspirationsquelle für tausende von Künstlern.

Sobald die Besucher das ehemalige Salzlager betreten, das sich in einen avantgardistischen Raum verwandelt hat, werden sie durch die Macht und Farbintensität des riesigen Wandgemäldes „Untitled (DV8)”, das über fünf Wände und insgesamt 13 Meter reicht, in einen Sog gezogen. Raffiniert spielt es mit der Ähnlichkeit zu dem englischen Wort „deviated“ – abweichend. Nicht weniger monumental: Die beiden Containerwerke, die Haring schuf. Das erste „Channel Surf Club – Knokke“ malte er auf einen Container, den er an einem Strand von

Knokke”, was painted on a container that Haring found on a beach in Belgium. It went on to become a symbol of “surfer culture”. The second is “Pop Shop Tokyo”, a work that was created in Japan that, after tracking it down from its unknown whereabouts, came to form part of Lio Malca’s collection in 2004. About the exhibition, Malca explains: “We wanted to create an experience, a radical transformation of the space.

When people step inside La Nave, I don’t want them to feel that they are always in the same place, but rather that they are inside the artist’s world. I don’t want the exhibition space itself to be the important thing, but rather the moment”. The exhibition is completed with the impressive 7m high sculpture “Untitled (Headstand)”, that can be seen in Paseo de Juan Carlos I in Ibiza, opposite Heart.

For the island’s residents and visitors, it’s quite a treat: “Over the last decade, I have visited Ibiza on many occasions. One question that I was constantly asking myself was how I could express my thanks to the island that has given me so much. After 10 years, I visited La Nave and my reaction was instantaneous. I realised that La Nave was the right place to share with the island my biggest passion and try to make the collection accessible to the public.”

It’s a unique exhibition that you can visit for free from Tuesday to Sunday from 11 AM to 1 PM and from 5 PM to 10 PM. Because the fact is, as Haring himself said: “The public has the right to art; art is for everyone”. n­

Das zweite Containerwerk, „Pop Shop Tokyo“, stammt aus der Schaffenszeit in Japan und ging, nachdem es ein paar Jahre vom Markt „verschwunden“ war, 2004 in den Besitz von Lio Malca über. Malca selbst sagt über die Ausstellung: „Wir wollten ein völlig neues Erlebnis schaffen, eine radikale Umwandlung des bestehenden Raums. Wenn die Menschen La Nave betreten, möchte ich, dass sie sich von der Stelle fortbewegen und Teil der Welt des Künstlers werden, ein neues Universum betreten.

Nicht die Ausstellung ist das wichtigste Element, sondern das damit verbundene Gefühl, dieser einzigartige Moment. Die Ausstellung kommt mit der beeindruckenden 7 Meter hohen Skulptur „Untitled (Headstand)“, die auf dem Paseo de Juan Carlos I in Ibiza gegenüber vom Heart zu sehen ist, zur Vollendung.

Es ist ein Geschenk an die Bewohner und Besucher Ibizas: „In den letzten Jahrzehnten war ich so oft auf Ibiza und ich habe angefangen mich zu fragen, wie ich der Insel etwas schenken kann, nachdem sie mir so viel gegeben hat.

They are the small white and golden dunes created by the sand close to the beach, with the seabed’s reflections shining in the form of diamonds. They say that, in its first year, Heart “came a cropper”. How did the second go, and how is the third looking?

El primer año dicen que “se pegaron la gorda” con el Heart. ¿Cómo fue el segundo y cómo se presenta el tercero?

I don’t see it like that. Otherwise, we would not have reopened. The truth is that we opened late on in the summer season and we did not have time to react in order to change the things that didn’t convince us. With everything we learned in the first year, last year we redirected it with a completely different overall experience. The results were incredible and the feedback we got from our clients (and those who came back again) was very positive.

This year, in 2017, we have worked all winter to design the 2.0 version of last year’s experience. We are confident in saying that we already have the definitive concept and people’s response is euphoric.

Now it’s about putting the finishing touches, continuing to improve and enjoying the journey.

Yo no lo considero así, si no no habríamos vuelto a abrir. La realidad fue que llegamos tarde con la apertura en la temporada de verano y no tuvimos tiempo de reacción para cambiar las cosas que no nos convencían. Con toda la información del primer año, el año pasado lo reconducimos con una experiencia totalmente diferente y global, los resultados fueron increíbles y los feedbacks de nuestros clientes (y repetidores) muy positivos.

Este año 2017 hemos trabajado todo el invierno para diseñar una experiencia 2.0 del año pasado. Podemos decir con confianza que ya tenemos el concepto definido y la respuesta de la gente está siendo eufórica.

Ahora se trata de pulir detalles, seguir mejorando y disfrutar del camino.

What are the main changes you have introduced this season?

Mainly consolidating last year’s model where the customers are on the terrace drinking and eating for between 40 minutes and one hour 15 minutes, then almost all of them go down to see the show at the same time. We have also

Principalmente afianzar el modelo del año pasado, en el que los clientes están en la terraza entre 45 y 1´15 horas bebiendo y comiendo, luego bajan casi todos a la vez para ver el show, el momento dulce lo hemos también mejorado y es espectacular dando paso a la transición

Im ersten Jahr der Eröffnung sprach die Öffentlichkeit über das HEART als Reinfall. Doch wie ist die zweite Saison gelaufen und wie ist der Stand in diesem Jahr?

Ich sehe das ganz anders. Sonst hätten wir übrigens auch gar nicht erst wiedereröffnet. Ungünstig war vielleicht die späte Eröffnung mitten in der Saison, so dass wir keine Möglichkeit mehr hatten, Korrekturen oder Kursänderungen vorzunehmen. Wir haben aus den Erfahrungen des Premierenjahres gelernt und die Segel im zweiten Jahr neu gesetzt. Die Resonanz war daraufhin überwältigend und das Feedback der Kunden enorm positiv.

In 2017 haben wir den ganzen Winter über hart gearbeitet und eine 2.0 Version des HEART designt. Wir sind sehr zuversichtlich, damit das endgültige Konzept gefunden zu haben, denn die Reaktion der Gäste ist geradezu euphorisch.

Nun verleihen wir ihm den letzten Schliff, werden weiterhin kleine Veränderungen vornehmen und unser Abenteuer einfach genießen.

Welche großen Veränderungen haben Sie vorgenommen?

Wir haben den Ablauf geändert. Unsere Gäste werden jetzt zunächst auf unserer großen

In the end, it comes down to supply and demand. I can assure you that creating something like Heart Ibiza is not at all easy, which is why it is difficult to find anything similar in the world. There are, undoubtedly, better shows of course as well as better restaurants but few examples that combine the two things at this level.

Are you having difficulty in signing talent for the island because of the problem of the lack of accommodation?

Without a doubt, it is a common problem and one that I believe the local government is sensitive about. I hope that a solution can be found; Ibiza cannot turn into an island of extremes.

Qué hay que hacer para que un espectáculo ‘maride’ con una comida y no sea solo una distracción?

Al final se trata de que cada uno tenga su lugar, este año estamos haciendo unas paradas musicales para que la gente pueda centrarse en comer, sin duda no es el mejor escenario gastronómicamente hablando, pero en Heart todo suma, la comida además ha mejorado sustancialmente del año pasado porque hemos sabido adaptarnos al 100% a lo que el público le gusta y le apetece comer en un ambiente así. ¿No cree que hay muchos restaurantes en los que ya se está mezclando la comida con demasiadas cosas? Djs para cada plato, gafas 3D. ¿Es que ya no se puede comer tranquilo?

Al final es una cuestión de oferta y demanda, le aseguro que crear algo como Heart Ibiza no es nada fácil, por algo en el mundo es dificil encontrar algo parecido, seguramente habrá mejores shows por supuesto mejores restaurantes pero pocos ejemplos que combinen los 2 a este nivel. ¿Están teniendo dificultades para fichar talento para la isla por el problema de la falta de vivienda?

Sin duda es un problema común y me consta sensible por parte de la administración, espero que se encuentre una solución, Ibiza no se puede convertir en una isla de extremos.

Am Ende hat alles seinen Platz. In diesem Jahr machen wir mehr musikalische Pausen, so dass die Gäste sich mehr auf ihr Essen konzentrieren können. Ohne Zweifel: Aus gastronomischer oder kulinarischer Sicht ist es nicht die beste Lösung, aber im HEART fügt sich das alles ganz selbstverständlich. Auch die Kulinarik wurde verbessert, indem wir noch feinfühliger auf das geschaut haben, was der Gast sich wünscht.

Meinen Sie nicht, dass es bereits zu viele Restaurants gibt, die ihrem Essen noch eine besondere Zutat beimischen? DJs zu jedem Gang, 3D Spektakel zum Dessert und und und. Können wir nicht einfach nur in Ruhe speisen?

Nun, „Angebot und Nachfrage” lauten hier die Spielregeln. Und ich glaube nicht, dass Sie so schnell etwas Vergleichbares wie das HEART finden. Natürlich gibt es irgendwo eine bessere Show oder irgendwo besseres Essen, aber Sie werden lange brauchen, um etwas zu finden, an dem beides auf so hohem Niveau matcht.

It is said that you have learnt a great deal from Guy Laliberté. I would like to know what the founder of Cirque du Soleil has contributed to you creatively and personally.

I don’t think that it is difficult to understand that working alongside his team with José Corraliza, Director General, at its head is a veritable luxury that is within the grasp of few people. Guy is excited about the way that we have known how to develop the project and this year he will be in Ibiza and in Heart Ibiza more than ever.

One thing I’m curious about: the chefs make ozone and spherifications, but then, when they are at home, surely they eat like normal people, right?

You eat a fried egg and that’s it? Do you yourselves cook what you eat, or do you consider eating to be downtime and get someone else to do it?

Ha, ha. It is one thing to eat, which is what we all do, and quite another to eat with the intention of satisfying something other than the stomach. Personally, on the few days I have off I let others cook for me; that is to say, I go to restaurants. In addition, it never stops being a learning experience for us.

Where can you eat well and why here in Ibiza?

You can eat much better on the island than people say and, what is more, the range just gets better and better. Competition is good so that the range develops. The chiringuito sector at midday is more than covered and now dozens of good restaurants are adding to the nighttime choice.

Do you think that there is a “bubble” of chefs? Will it burst?

There is no doubt that it is difficult to believe the change that has occurred in the way that

Una curiosidad, los chefs hacen ozono y esferificaciones pero luego seguro que en casa comen como las personas ¿no? ¿Ustedes se comen un huevo frito y punto? ¿Suelen cocinarse ustedes mismos lo que se comen o su comida la consideran tiempo de descanso y que lo haga otro?

Ja,ja, una cosa es alimentarse que lo hacemos todos y la otra comer con la intención de llenar algo más que el estómago, personalmente en mis pocos días libres dejo que sean otros los que cocinen, es decir que voy a restaurantes, además no deja de ser aprendizaje para nosotros. ¿Dónde se come bien y el qué por aquí por Ibiza?

En la isla se come mucho mejor de lo que se dice y además no para de mejorar la oferta, la competitividad es buena para que la oferta evolucione, la parte chiringuito a mediodía está más que cubierta y ahora se está complementando la oferta nocturna con decenas de buenas propuestas. ¿Cree que hay una burbuja de chefs? ¿Se apagará?

Sin duda cuesta de creer el cambio que ha existido en la percepción de este oficio en los 30 años que llevo trabajando, falta saber si este interés será pasajero o no.

Es heißt, dass Sie sehr viel von Guy Laliberté gelernt haben. Inwieweit hat der Gründer von Cirque du Soleil zu Ihrem persönlichen und kreativen Wachstum beigetragen?

Es ist nicht schwer zu verstehen, dass es eine Ehre ist, in so einem Team zu arbeiten, Seite an Seite mit José Corraliza, dem Generaldirektor des HEART. Mit der nächsten Frage muss ich eine persönliche Neugier befriedigen: Chefköche Ihres Niveaus nutzen flüssigen Stickstoff und Sphärisierung, um Mahlzeiten zu kreieren, aber was essen Sie zu Hause – tatsächlich ein schlichtes Spiegelei? Bekochen Sie sich selbst oder gehen Sie essen?

Haha. Es ist eine Sache, zu essen, um den Hunger zu stillen und eine andere Sache, etwas zu essen mit der Absicht, ein Abenteuer zu erleben. Ich persönlich gehe gerne an meinen freien Tagen essen und lasse mich bekochen, aber auch das ist immer eine Lernerfahrung.

How to digest the fact that the cooking boom in Spain arrived with the financial crisis?

Coincidence?

Kein Zweifel, die Entwicklung die unser Berufsstand gemacht hat, die wachsende Popularität in den letzten 30 Jahren, in denen ich ihn ausübe, ist kaum zu glauben. Man muss schauen, ob das Interesse bestehen bleibt oder wieder abflachen wird.

The movement was born before the crisis; I suppose that it is a coincidence. Eating in a restaurant in Spain costs half what it does to eat in one with the same characteristics in the North of Europe.

I imagine that it is the first thing you ask yourself every morning and me too. What will cuisine look like in five or 10 years time?

I never ask myself that; I do as life does. I live for today’s cooking without concerning myself with the future because I cannot do anything about it. Nonetheless, it is one of the questions that I am most often asked.

People pay a fortune for masters’ degrees to learn theory but now it appears that not charging for learning in a kitchen is looked down upon. What you think about this controversy?

It has been taken out of context on account of several statements that were not really qualified in the right way. I’m certain that, if we look at any professions, we will find parallels. The issue about the hours also has to be understood in a professional context of the maximum requirements; in itself, cooking demands many hours of work and we are talking about the very highest level.

What could you cook for me in the time this interview has taken?

In 30 minutes… I would try to cook something good without worrying about the style. n

Gibt es eine „Blase“ an Chefköchen, die irgendwann platzen wird?

Wie ist es einzuordnen, dass der Koch-Boom in Spanien zeitgleich mit der Finanzkrise ausgelöst wurde. Ein Zufall?

¿Cómo se come que el boom de la cocina en España llegara con la crisis económica? ¿Casualidad?

El movimiento se gestó antes de la crisis, supongo que si es casualidad, en España comer en un restaurante cuesta la mitad de uno de las mismas características que en el norte de Europa.

Supongo que es lo primero que se pregunta cada mañana y yo me uno. ¿Cómo será la cocina dentro de cinco o diez años?

yo no me lo pregunto nunca, hago como la vida, vivo la cocina de hoy sin importarme el futuro porqué no puedo hacer nada, pero es una de las preguntas que más me hacen La gente paga un dineral en masters por aprender teoría pero ahora parece que está mal visto no cobrar por aprender en una cocina. ¿Cómo han vivido esa polémica?

Das frage ich mich nie. Ich lebe heute und ich koche heute. Was in der Zukunft liegt, kann ich nicht bestimmen und nicht beeinflussen.

Nichtsdestotrotz ist das eine Frage, die mir am häufigsten gestellt wird.

Viele Menschen zahlen ein Vermögen dafür, um Kochkunst in Theorie zu erlernen, aber jetzt scheint es, dass es nichts bringt, sich in einem MasterKurs fortzubilden. Was denken Sie über diese Kontroverse?

se ha sacado de contexto por algunas declaraciones no del todo bien matizadas, estoy seguro que si miramos en todos los oficios nos encontraremos con paralelismos, lo del tema de las horas también se ha de entender en un contexto profesional de máxima exigencia, la cocina de por sí demanda muchas horas de trabajo y hablamos del más alto nivel.

Diese Ansicht wurde etwas aus dem Kontext mehrerer Aussagen gerissen, die nicht wirklich qualifiziert waren. Ich bin mir sicher, dass auch in anderen Berufen diese Aussage zutreffend ist. Die Frage nach der Dauer eines Lernprozesses muss ebenso in einem professionellen Kontext gesehen werden. Kochen kostet viel, viel Zeit und wir sprechen hier von einem sehr hohen Niveau.

Los hoteles y casas cercanas se esconden detrás de los pinos, y sus aguas turquesas y cristalinas y su playa de arena fina invitan a darse un chapuzón. Naturally, there are also plenty of light dishes such as salads or grilled vegetables. There is a special evening menu, on which grilled meat dishes take centre stage.

Non-vegetarians can choose among dry-aged prime rib, steaks, lamb cutlets, chicken or simply a burger with homemade chips.

The chiringuito is open from 11 a.m. until midnight while the kitchen opens at midday from 13:00 until 17:30 and from 19:00 to 23:00 in the evening. The way there is well signposted and free parking is available for customers. n

Spezialitäten sind die Reisgerichte, frischer lokaler Fisch oder Pulpo vom Holzkohlegrill oder die schon berühmten Miesmuscheln in einem speziellen Sud mit Kokosmilch und Ingwer. Natürlich fehlen aber auch nicht leichte Gerichte wie Salate oder gegrilltes Gemüse. Es gibt eine spezielle Abendkarte, auf der Fleischgerichte vom Grill dominieren. t is proving to be one of the outstanding novelties of the season. The legendary El Clodenis, the emblematic venue of the 90s that characterised an entire era in end-of-the-century cooking in Ibiza, has reopened completely refurbished with a new atmosphere, new decoration and a new concept: a gastronomic pop up that is going to be operational for only 100 days.

Ever since it opened on June 16 with a lively party attended by friends, customers and VIPs from the island’s social and cultural life, the traditional Ibicencan house dating back to 1825 has turned into a meeting place that is not only gastronomic, but also artistic. There is no question that these two aspects have led it to become one of the most singular venues in the Pitiusas Islands.

The historic island building with its colonial patios (the result of the involvement of its previous owner, a Cuban architect who arrived here fleeing Castro’s revolution), the beautiful garden with centuries-old olive trees, the sandstone walls and the relaxing pool are the backdrop against which every night a culinary, artistic and musical performance takes place.

Desde que se inauguró el pasado 16 de junio con una animada fiesta a la que no faltaron amigos, clientes y Vip’s de la vida social y cultural de la isla, la tradicional casa ibicenca de 1825 se ha convertido en un lugar de encuentro no sólo gastronómico, sino también artístico.

Sin duda estas dos facetas le convierten en uno de los espacios más singulares de las Pitiusas.

La histórica edificación isleña de patios coloniales (fruto de la intervención de su anterior dueño, un arquitecto cubano que llegó hasta aquí huyendo de la Revolución Castrista), el precioso jardín de olivos centenarios, los muros de marés o la relajante piscina son el marco en el que cada noche se desarrolla una representación culinaria, artística y musical.

Das historische Gebäude mit seinem Portal im Kolonialstil (geschuldet einem seiner Vorbesitzer, einem kubanischen Architekten, der auf der Flucht vor Castro hier siedelte), der wunderschöne Garten mit jahrhundertealten Olivenbäumen, alten Sandsteinmauern und Pool, waren von jeher perfekte Kulisse für kulinarische, künstlerische und musikalische Performances. A young team is in charge of preparing a cosmopolitan, itinerant menu that journeys through flavours and techniques from all over the world, designed for a national and international public. Dishes with fresh and authentic flavours that are interpreted with innovative concepts and techniques that will not leave anyone indifferent.

That avant-garde spirit is also applied to another aspect without which this reborn Clodenis could not be imagined: that of art and music. As a platform of radical experimentation it serves as the setting for a group of artists, authentic researchers who are updating

It features a menu of combined dishes that use the best premium brands and products to offer you an authentic journey with cocktails made with herbs from the island from the charming kitchen garden of Ca Na Xica such as rosemary, sage or basil. Not to mention those classic Caribbean or South American cocktails made from rum or pisco that are so inviting in the summer. n Ibiza town on a terrace overlooking the Dalt Vila Sa Cova is serving French Cuisine and a curated wine and aperitif list paying homage to both France and Spain, while offering breathtaking views of the Old Town. In addition to the intimate outdoor terrace, Sa Cova also offers bar service inside one of Ibiza’s caves, a topographical feature that the city is well known for. Both, owner and sommelier Nicolas Blasco and chef Pablo Tarno, worked in various Michelin starred restaurants before they came to Ibiza.

At Sa Cova they try to take the best this island has to offer, combined with specific ingredients from around the world, to create exquisite, French cuisine. Pablos love for French, Mediterranean, as well as Peruvian and Nikkei cuisine is showcased in the menu.

One of the typical dishes at Sa Cova is the delicious sea bream filet with Mallorcan calamari stew. Today the chef reveals us the recipe.

Además de la íntima terraza exterior, Sa Cova también ofrece servicio de bar dentro de una de las cuevas de Ibiza, una característica topográfica por la que es bien conocida la ciudad. Tanto el propietario y somellier Nicolas Blasco como el chef Pablo Tarno, trabajaron en varios restaurantes con estrellas Michelin antes de llegar a Ibiza.

En Sa Cova tratan de unir lo mejor que ofrece esta isla, combinado con ingredientes específicos de todo el mundo, para crear una exquisita cocina francesa. En el menú se puede observar el amor de Pablo por la cocina francesa, mediterránea, peruana y Nikkei.

FILETE DE DORADA CON GUISO DE CALAMARES MALLORQUINES (PARA 4 PERSONAS)

DORADEN FILET MIT MALLORQUINISCHEN CALAMARI STEW (4 PORTIONEN)

4 small to medium sized sea Bream, scaled and gutted 1kg calamari, cleaned and cut into chunks 2 large onions (cut in brunoise) 2 spanish spring onions (adjust quantities if buying smaller spring onions) 4 garlic cloves Tomato (canned or ripe) handful of pine nuts handful of raisins Pimentón de la vera Pepper salt Extra virgin olive oil glass of white wine

4 doradas pequeñas o medianas, escamadas y destripadas 1kg de calamares, limpios y cortados en trozos 2 cebollas grandes (cortadas en brunoise) 2 cebolletas (ajustar las cantidades si se compran cebolletas más pequeñas) 4 dientes de ajo Tomate (enlatado o maduro) 1 puñado de piñones 1 puñado de pasas Pimentón de la vera Pimienta sal Aceite de oliva virgen extra 1 vaso de vino blanco

4 kleine bis mittelgroße seebrassen, ausgenommen und geschuppt 1kg calamari, gereinigt und in stücke geschnitten 2 große Zwiebeln, sehr klein geschnitten (Brunoise) 2 spanische frühlingszwiebeln (einfach die Menge anpassen, beim Kauf von kleineren) 4 Knoblauchzehen 1 Tomate (sehr reif oder aus der Dose) Eine handvoll Pinienkerne Eine handvoll Rosinen Pimentón de la vera Pfeffer salz olivenöl, extra virgin Ein glas Weißwein

Fillet the sea bream into 8 boneless fillets. Reserve in the fridge until the calamari stew is ready. In a saucepan, lightly sauté the calamari in a generous amount of extra virgin olive oil until soft (about 5 minutes). Reserve. In the same saucepan, add the chopped onion and sauté them for about 10 minutes until soft, tender and a little caramelised. Add the chopped garlic and let simmer for another 3 mintues.

Follow up by adding the chopped spring onion and repeat the same process as with the onion.

Im gleichen Topf dann die Zwiebeln in 10 Minuten weich dünsten, bis sie zart, fast karamellisiert sind. Den Knoblauch hinzufügen und 3 Minuten mitziehen lassen. Jetzt folgt die Frühlingszwiebel, die ebenso lang wie die Zwiebeln köcheln sollte. Wird das Ganze zu trocken, etwas Olivenöl oder Wasser angießen. Dann fügen

just by adding a dash of olive oil, or a little water if preferred. Now add your tomato and your white wine and let it cook on a low heat until the wine has evaporated. Add the pine nuts and raisins and let it simmer on gentle heat for another 15-20 minutes. The longer you leave, it the better your “sofrito” will be. Finally, add your reserved calamari and cook until the calamari are soft and tender, but not soggy.

Add salt, pepper and pimentón to taste.

Once your calamari are cooked, you can prepare the fish. Salt your fillets of sea bream on both sides and sear them skin-side first on high heat in a pan with a little extra virgin olive oil. Depending on the size of your sea bream fillets, this can range anywhere between 1 and 3 minutes. It is very important not overcooking your fish. The high heat will ensure the skin is crisp and delicious. Once finished with the skin side, carefully turn the fillet over with the help of a spatula, turn off the heat, and let rest for approx. 1 minute. Use this time to add the calamari stew on 4 shallow dishes and serving the fillets of sea bream skin-side up. Add a little olive oil to taste and finish off with any greens or fresh herbs that you might have in your kitchen. n

Cuanto más tiempo se deje, mejor será el “sofrito”. Finalmente, añadir los calamares reservados y cocinar hasta que los calamares se queden suaves y tiernos, pero no empapados. Una vez que se han cocinado los calamares, se puede preparar el pescado. Salar los filetes de dorada por ambos lados y cocinarlos primero por la parte de la piel a fuego alto en una sartén con un poco de aceite de oliva virgen extra. Dependiendo del tamaño de los filetes de dorada, esto puede tardar entre 1 y 3 minutos. Es muy importante no cocinar demasiado el pescado, el calor alto garantizará que la piel quede crujiente y deliciosa. Una vez terminado con el lado de la piel, girar cuidadosamente el filete con la ayuda de una espátula, apagar el fuego y dejar reposar durante aproximadamente 1 minuto. Utilizar este tiempo para servir el guiso de calamares en 4 platos poco profundos y poner encima los filetes de dorada con la parte de la piel hacia arriba. Añadir un poco de aceite de oliva al gusto y terminar con cualquier hierba fresca que pueda tener en su cocina. n

Die große Hitze sorgt dafür, dass die Haut knusprig und schmackhaft wird. Dann das Kochfeld ausschalten und die Filets vorsichtig wenden und noch eine Minute in der heißen Pfanne gar ziehen lassen. In dieser Zeit richten Sie Ihren Calamari Stew auf vier Teller an und legen die Seebrassen Filets mit der Hautseite nach oben auf. Noch ein paar Tropfen feines Olivenöl drüber tröpfeln und ein paar Kräuter nach Geschmack, fertig. n

biza ist „the place to be”, das strahlende Licht der Hippieszene in Europa und dem Rest der Welt. Den besten DJs ist es eine Ehre hier in den (Beach-)Clubs aufzulegen und die Massen mit den neuesten Sounds zu verwöhnen.

Aber Ibiza besteht nicht nur aus Stränden und Musik, denn wir alle möchten auch gut speisen. Es ist wirklich witzig, dass gerade der gastronomische Bereich im Vergleich zu großen europäischen Städten hinterherhinkt. Hier zeigt sich längst der neueste Trend: Kochen mit lokalen und saisonalen Produkten, eine ehrliche Küche, mit einfachen Lebensmitteln und viel Liebe. Kein Schäumchen, keine Perlen oder gar Balsamico Sirup aus der Flasche. Eines der besten Restaurants auf Ibiza, dass das längst erkannt hat, ist das Sa Cova, direkt neben dem Mercado Viejo, hinter der Croissant Show. Geführt wird es von Nico, Cyril und ihrem Küchenchef Pablo.

Einfach und ehrlich, jeden Tag frisch zubereitet, von der Vorspeise bis zum Dessert, ohne viel Tamtam, in zwei Worten: GUTES ESSEN! Nach einer kleinen Vorspeise, begleitet von einem Glas Prickel (Veuve Doussot Tradition), freuen wir uns auf den Hauptgang: Seebrassen Filet mit Calamari Stew.

Der Fisch verlangt nach Weißwein, die Calamari auch – und ich eigentlich auch immer. Da die Tomate nach etwas Säure und Mineralität verlangt, übrigens eine tolle Kombination mit den Nüssen und den Rosinen, entscheide ich mich für einen Chablis.

Natürlich nicht irgendeinen, sondern einen Chablis von Patrick Piuze, dem Gott des modernen Chablis. Er besitzt mehr Mineralität und Frische als seine klassischen Vorgänger, somit ist der Wein die perfekte Wahl, um das wunderbare Gericht noch mehr zur Geltung zu bringen.

Patrick Piuze didn’t just fall out of the sky.

This Canadian ski instructor with a passion for wine got his experience from working at the most famous Burgundy wineries and his wines are now highly desired and very hard to get.

It doesn’t help either that the Chablis region has been plagued in the last year by bad weather and a lot of the harvest was lost.

So a rare Nectar of the Gods, but it’s not that straight forward. Bistro Sa Cova lies in Sa Penya, just outside of the Old City walls with views to Dalt Vila, and you have to ascend a good few steps in order to get to the restaurant.

A bit of a climb, but a Stairway to Heaven.

Going down will be a lot easier but you can of course also take a detour. n

o humo, o peor aún, jarabe balsámico de un tubo. Uno de los restaurantes de Ibiza que está pendiente de esto es Bistro Sa Cova, ubicado justo después del Mercado Viejo, detrás del Croissant Show, y dirigido por Nico y Cyril, y su chef Pablo.

Simple y honesto, fresco del día, desde entrantes a postres, sin demasiado alboroto, en dos palabras: ¡BUENA COMIDA! Después de un simple aperitivo acompañado de una copa de burbujas (Veuve Doussot Tradition), llegamos a nuestro principal, que consiste en filetes de dorada con guiso de calamares.

El pescado exige vino blanco y también lo hacen los calamares. El guiso de tomate necesita una cierta acidez y mineralidad, y en combinación con las nueces y las pasas de este asombroso plato... ¡Chablis! Y no cualquiera, sino un Chablis de Patrick Piuze, el Dios de la creación moderna de Chablis.

Más mineral y fresco que sus predecesores clásicos, este vino es El Elegido para honrar los productos utilizados y dejar que este plato brille.

Patrick Piuze no sólo cayó del cielo. Este instructor de esquí canadiense con una pasión por el vino obtuvo su experiencia de trabajar en las más famosas bodegas de Borgoña y sus vinos son ahora tan deseados como difíciles de conseguir.

Tampoco ayuda que la región de Chablis haya sido plagada en el último año por el mal tiempo y una gran parte de la cosecha se haya perdido. Así que se trata de un raro néctar de los dioses, pero no es tan sencillo. Bistro Sa Cova se encuentra en Sa Penya, justo fuera de las murallas de la ciudad vieja, con vistas a Dalt Vila, y hay que ascender unos pocos pasos para llegar al restaurante. Un poco de escalada, pero con una escalera al cielo. Bajar será mucho más fácil, pero por supuesto también puede coger un desvío. n

Es ist ein himmlischer Nektar, aber dazu müssen wir auch den Himmel erklimmen, denn das Bistro Sa Cova liegt in Sa Penya, etwas außerhalb der Stadtmauern mit einem Blick auf die Altstadt. Zunächst also heißt es hinaufsteigen, die Stufen zum Himmel. Eines sei verraten: Nach unten geht es wesentlich schneller, gerade nach dem Genuss des wunderbaren Chablis. n

CHARRUAS DE IBIZA The Charruas was a tribe of natives who lived mainly in the area of what is today Uruguay.

Los Charrúas eran una tribu de nativos que vivían principalmente en la zona de lo que hoy es Uruguay.

Als Charruas wurde ein Volksstamm Eingeborener bezeichnet, die hauptsächlich im Gebiet des heutigen Uruguay lebten.

hese nomads went from being hunters and gatherers to feared mounted warriors who fought the Spanish conquistadors and missionaries.

A group of motorcycle enthusiasts in Ibiza liked the Charruas’ culture so much that they named themselves after them. As free nomads, they enjoy riding through their territory (on their bikes) and grilling the hunted (bought at the butcher’s) meat together. They love looking after their horses together (tightening the bolts on their motorcycles) and oiling their throats.

The photographer, Holger Altgeld, was able to spend a day together with them. Here is his photo story. n

A un grupo de entusiastas de la motocicleta en Ibiza les gustaba tanto la cultura de Charrúas que decidieron llamarse igual por ellos. Como nómadas libres, disfrutan montando juntos por todo su territorio (en sus motos) y asando a la parrilla la carne que cazan (¡comprada en la carnicería!). Les encanta cuidar de sus caballos juntos (apretar los tornillos de sus motocicletas) y engrasar sus gargantas.

Die Kultur der Charruas gefiel einer Gruppe von Motorradenthusiasten auf Ibiza so gut, dass sie sich nach ihnen benannten. Sie genießen es wie freie Nomaden durch ihr Territorium zu reiten (auf ihren Bikes) und gemeinsam das erjagte (beim Schlachter gekaufte) Fleisch zu grillen. Sie lieben es, gemeinsam ihre Pferde zu pflegen (an ihren Motorrädern zu schrauben) und dabei ihre Kehlen zu ölen.

JOSCH He is an old hand among the “smaller” club owners on the island, unaffected, always plain spoken – a “personaje” as they say here in Ibiza.

Se trata de un veterano entre los propietarios de los clubs de la isla “más pequeños” que no se ha visto afectados, un “personaje” como dicen aquí en Ibiza.

he first time he came to the island was in 1975. A friend’s parents had a house in Ibiza and one on Formentera, so he quickly got to know and love both islands. His own parents owned houses on the coast of mainland Spain.

After finishing school, he broke off his business studies and subsequently teaching, before commuting back and forth between Cologne, Amsterdam and Ibiza in the ‘80s. “Whenever I just have parties at home, the money runs out”, he told himself. “So, I’d rather open a shop and make a business of it.” “But it wasn’t as easy as that. He did not know Spanish law, and he was ripped off by the previous owners of the venue, which then became Km5. At first, he had a bad image because of the mini-pouffes that were there before. In the early days of Km5, everyone pitched in. The furniture itself was cobbled together (in a not entirely legal manner) from GESA’s large cable drums, which were turned into tables for the outdoor area, and were simply painted white or black. An eventful time ensued with many ups and downs and participants who came and went. At one point in this period, he was about to sell Km5 because he wanted to buy what is now Blue Marlin.

Since 1988, he has been living on the island and has experienced many changes. “Although

Los padres de un amigo tenían una casa en Ibiza y otra en Formentera, así que rápidamente llegó a conocer y amar las dos islas. Sus propios padres poseían casas en la costa peninsular de España.

Después de terminar el colegio, terminó sus estudios de empresariales y posteriormente de enseñanza, antes de viajar por Colonia, Ámsterdam e Ibiza en los años 80. “Siempre que hago fiestas en casa, se agota el dinero. Así que prefiero abrir una tienda y hacer negocio con ella”.

Pero no fue tan fácil como eso. No conocía las leyes españolas, y sufrió un timo de los anteriores propietarios del lugar, que más tarde se convirtió en Km5. Al principio, la imagen que dio no era por los mini-puffs que estaban allí antes. En los primeros días del Km5, todo el mundo ayudó, y es que el mobiliario estaba agrupado (de una manera no totalmente legal) con grandes tambores de cable de GESA, que se convirtieron en mesas para el área exterior y que simplemente se pintaron de blanco o negro. Fueron momentos intensos y con muchos altibajos, con muchos participantes que venían y se iban. En un momento de ese período, estuvo a punto de vender Km5 porque quería comprar lo que es ahora Blue Marlin.

as erste mal kam er 1975 auf die Insel. Die Eltern eines Freundes hatten ein Haus auf Ibiza und eins auf Formentera, so lernte er schnell beide Inseln kennen und lieben. Die eigenen Eltern besaßen Häuser an der spanischen Festlandsküste.

Nach Abitur, abgebrochenem BWL-Studium, abgebrochener anschließender Lehre pendelte er in den 80ern zwischen Köln, Amsterdam und Ibiza hin und her. „Irgendwann geht mir die Kohle aus, wenn ich Partys immer nur zu Hause schmeiße“ sagte er sich, „da mache ich doch lieber einen Laden auf und betreibe das businessmäßig.“ Doch so einfach war das nicht. Er kannte die spanischen Gesetze nicht, wurde übers Ohr gehauen von den Vorbesitzern des Etablissements das später zum km5 wurde. Anfangs schadete ihm das Image des ehemaligen Mini-Bordells.

In den Anfangszeiten des km5 legten alle Hand an. Die Möbel wurden selbst zusammengeschustert. Aus auf nicht ganz legalem Wege organisierten großen Kabeltrommeln der GESA entstanden die Tische für den Außenbereich, die einfach weiß oder schwarz angestrichen wurden. Es begann eine bewegte Zeit mit vielen Aufs und Abs mit wechselnden Teilhabern. Fast hätte er in dieser Periode einmal das km5 verkauft,

it has all become more modern, it is still beautiful here, and there are still unspoiled spots and beaches on the island. “However, all the fancy schmancy luxury nowadays disturbs me.

On the beach, you can’t get paella anymore; there’s only foie gras, lobster and caviar. But these are passing developments, which somehow return to normal again by themselves”, he hopes. “It’s like with the mafias that come and also go again here on the island. These are all waves. It’s like on the beach; the waves wash everything clean again.”

It is not easy to survive in Ibiza, he says. “You have to know your limits and be constant. In the end, the day here also has only 24 hours, just like in London, Paris or New York. But if you are at a party here and it really gets going – then you forget about the time. All of a sudden, it’s 6 a.m. You have to go to work and take the kids to school. You have to get everything together. For many people, that’s really difficult. I have already seen people with a lot of money – with tons of money – lose the plot here.”

In the past, only the five big discos had music. In all other venues, bars and small clubs it wasn’t allowed. In them, the only thing that

Dice que no es fácil sobrevivir en Ibiza. “Tienes que conocer tus límites y ser constante. Al final, el día aquí también tiene sólo 24 horas, al igual que en Londres, París o Nueva York. Pero si estás en una fiesta y lo estás pasando muy bien, olvídate del tiempo. De repente serán las 6 de la mañana, tienes que ir a trabajar y llevar a los niños a la escuela. Tienes que hacer todo, pero para mucha gente eso es muy difícil. He visto a gente con mucho, mucho dinero, con toneladas de dinero, que pierde el norte”.

Aber das sind momentane Entwicklungen, die sich irgendwann wieder von alleine normalisieren“ hofft er. „Es ist wie mit den Mafias hier auf der Insel, die kommen und gehen auch wieder. Das sind alles Wellen. Es ist wie am Strand. Die Wellen spülen alles wieder sauber.“ Einfach ist es nicht auf Ibiza zu überleben meint er. „Du musst Dein Limit kennen und konstant sein. Letztendlich hat der Tag hier auch nur 24 Stunden, genau wie in London, Paris oder New York. Aber wenn Du hier auf einer Party bist und es geht so richtig ab – dann vergisst Du die Zeit. Plötzlich ist es 6Uhr morgens. Du musst ins Geschäft und die Kinder zur Schule bringen. Das musst Du alles auf die Reihe kriegen. Für viele ist das ganz schwierig.

There weren’t DJs back then either. Parties on the beach, in villas or small clubs were immediately strangled by the big clubs. All that has changed a great deal, and he played no small part in it. Together with others, for a long time he battled against the monopoly of the “Salas de Fiestas” association which allegedly had legal backing, so that there could be other music venues and DJs. “People wanted to go out and party with good music without having to go to a discotheque.”

He admits that Km5 has also become a bit more modern in recent years. “But we are still a touchstone for Ibiza the way it used to be!”

He is proud of his employees, most of whom have been working in Km5 for many years, and all of whom identify 100% with the “shop”.

They are always friendly, and they even chat with the guests. “We are the most cosmopolitan place in the world: here, people from all nations and from all social strata meet.”

He is also proud of his good relationship with the neighbours, none of whom has ever reported him. That is totally unheard of in Ibiza; there is scarcely another party venue that can boast that.

Todo eso ha cambiado mucho, y él tuvo un importante papel, junto con otras personas, luchó durante mucho tiempo contra el monopolio de la asociación de “Salas de Fiestas”, que supuestamente tenía respaldo legal, para que pudiera haber otros lugares de música y DJs. “La gente quería salir de fiesta y pasarlo bien con buena música sin tener que ir a una discoteca”.

Admite que Km5 también se ha vuelto un poco más moderno en los últimos años. “¡Pero seguimos siendo un referente para Ibiza, como solía ser!” Él está orgulloso de sus empleados, la mayoría de los cuales han estado trabajando en Km5 durante muchos años, y todos se identifican al 100% con la “tienda”, son amables, e incluso charlan con los invitados. “Somos el lugar más cosmopolita del mundo: aquí se reúnen personas de todas las naciones y de todas las clases sociales”.

También está orgulloso de su buena relación con los vecinos, ninguno de los cuales lo ha denunciado nunca. Es totalmente inaudito en

Früher hatten nur die fünf großen Diskotheken Musik. In allen anderen Etablissements, Bars und kleinen Klubs war das verboten. In denen war nur sogenannte „Ambiente-Musik“ erlaubt. DJs gab es damals nicht. Partys am Beach, in Villen oder kleinen Clubs wurden sofort von den großen Clubs abgewürgt. Das hat sich sehr geändert, und daran war er nicht ganz unbeteiligt. Zusammen mit anderen hat er lange gekämpft gegen das angeblich gesetzlich verbriefte Monopol der „Salas de Fiestas“, dass auch andere Musikanlagen und DJs haben dürfen. „Die Leute wollen ja auch mal ausgehen und bei guter Musik feiern ohne dazu in eine Diskothek gehen zu müssen.“ Er gibt zu, dass auch das km5 in den letzten Jahren etwas moderner geworden ist. „Aber wir sind immer noch ein Urgestein des ursprünglichen Ibiza!“ Er ist stolz auf seine Mitarbeiter, von denen die meisten schon viele Jahre im km5 arbeiten und sich alle mit dem „Laden“ hundertprozentig identifizieren. Die immer freundlich sind, mit den Gästen auch mal ein Wort wechseln. „Wir sind die kosmopolitischste Location der Welt. Hier treffen sich

He is grateful to his employees and to everybody who has supported him. This includes, in particular, friends from nursery school or school days with whom he is still associated today, and who regularly come to the opening or closing parties at Km5. Some of them have become great entrepreneurs in the USA, while another one became a surgeon who recently operated on his meniscus. They have always been by his side through all the ups and downs.

At the end of our conversation, one thing is particularly important to him, and that is clearing up a rumour: “Km5 is neither sold nor is it for sale! Quite the opposite, we have just invested a lot of money to make it even more beautiful. And, like before, Josch is still the frontman, there at Km5 six days a week. These rumours are only spread by people who want to harm Km5”, he says before dashing off to the bar to give a warm welcome to some regular guests. n

Ibiza; apenas hay otro lugar de fiesta que pueda presumir de eso.

Está muy agradecido a sus empleados y a todos los que lo han apoyado. Esto incluye, en particular, a amigos de la guardería o del colegio con los que todavía se asocia y que vienen regularmente a las fiestas de apertura o cierre en el Km5. Algunos de ellos se han convertido en grandes empresarios en los EE.UU., mientras que otro se convirtió en un cirujano que recientemente le operó su menisco. Siempre han estado a su lado, en todos sus altibajos.

Al final de nuestra conversación, hay una cosa particularmente importante para él, quiere aclarar un rumor: “Km5 no se ha vendido ni está a la venta. Todo lo contrario, hemos invertido un montón de dinero para que sea incluso más bonito. Y como antes, Josch sigue siendo el líder en Km5 seis días a la semana. Estos rumores sólo los transmiten personas que quieren dañar Km5”, dice antes de ir corriendo hacia el bar para dar una cálida bienvenida a algunos de sus invitados habituales. n

Dankbar ist er seinen Mitarbeitern und allen die ihn unterstützen. Dazu zählen vor allem auch Freunde, mit denen er bis heute aus Kindergarten- oder Schulzeiten verbunden ist, die regelmäßig zu den Opening- oder Closing Partys des km5 kommen. Einige von ihnen wurden große Unternehmer in den USA, ein anderer Chirurg, der ihn erst vor kurzem am Meniskus operiert hat. Sie haben ihn immer durch alle Höhen und Tiefen begleitet.

Eines liegt ihm zum Schluss unseres Gesprächs noch besonders am Herzen – ein Gerücht klar zu stellen: „Das km5 ist weder verkauft noch steht es zum Verkauf! Im Gegenteil – wir haben gerade erst wieder viel Geld investiert um es noch schöner zu machen. Und Josch ist hier nach wie vor der Frontmann, sechs Tage die Woche präsent im km5. Diese Gerüchte verbreiten nur Leute, die dem km5 schaden wollen.“ Sagt es und stürzt sich ins Getümmel an der Bar um ein paar Stammgäste herzlich zu begrüßen. n

epe Rosello and Carl Cox inaugurated the new Space Warehouse, a multipurpose space and open to the public. Space Warehouse becomes a museum, where the visitor can admire historical pieces of the club, buy official merchandising of Space and of course, to remember the history of the most awarded club in the world. A perfect space to bet on culture and leisure, but always with music as a common thread.

“This new space reminds the history of Space with photos, personal memories, collective, artistic, lights and sound stuff, chairs, tables ... and of course keeps Space alive” Pepe Roselló.

As Carl Cox is on the island, Pepe Roselló wanted to have his presence and to pay tribute to one of the most significant DJs for the Space family. “Carl never left and I do not think he will ever leave” Roselló said. For his part, Carl Cox has highlighted how happy he feels to be back on the island, because he loves Ibiza, its people and its spirit and above all, has made him really happy to come today with Pepe and know that the Spirit of Space will continue alive. n

Space Warehouse se convierte en un museo, donde el visitante podrá admirar piezas históricas del club, comprar merchandising oficial de Space y por supuesto, rememorar la historia del club más galardonado del mundo. Un espacio perfecto para apostar por la cultura y el ocio, pero siempre con la música como hilo conductor.

“Este nuevo espacio recuerda la historia de Space con fotos, recuerdos personales, colectivos, artísticos, aparatos de luces, de sonido, sillas, mesas…en definitiva mantiene a Space vivo” Pepe Roselló. Aprovechando que Carl Cox se encuentra en la isla, Pepe Roselló ha querido contar con su presencia y rendir –una vez más– homenaje a uno de los DJs más significativos para la familia de Space. “Carl nunca se fue y no creo que se vaya nunca”, ha afirmado Roselló durante la rueda de prensa. Por su parte, Carl Cox ha destacado lo feliz que se siente de estar de nuevo en la isla, porque ama a Ibiza, su gente y su espíritu, pero sobre todo, le ha hecho realmente feliz acudir a esta cita junto a Pepe y saber que el espíritu de Space continuará vivo. n

epe Rosello und Carl Cox haben das neue Space Warehouse eingeweiht, eine Mehrzweck-Venue für jedermann. Space Warehouse wird zu einem Museum, das seinen Besuchern historische Stücke zugänglich macht, offizielles Space-Merchandise anbietet und an die Geschichte des preisgekrönten Clubs erinnert.

Der perfekte Ort, der Kultur und Vergnügen kombiniert, dabei aber immer eines als gemeinsamen Nenner im Fokus hat: die Musik. „Dieser neue Ort erinnert an die Geschichte des Space, mit Fotos, persönlichen Erinnerungen, Sammlungen, Künstlerisches, Lampen und Sound-Inventar, Stühle, Tische – das hält das Space lebendig“ so Pepe Roselló.

Da Carl Cox auf der Insel ist, war es Pepe Roselló wichtig, ihn dabei zu haben, um so einen der signifikanten DJs der Space-Familie zu ehren. „Carl war nie weg und ich denke nicht, dass er es jemals sein wird“, so Roselló.

ne of the most important keynote talks at this year’s International Music Summit (IMS), which took place at the Hard Rock Hotel, featured Art Department’s Jonny White, who announced the launch of his new charity initiative, Music Against Animal Cruelty (MAAC), a non-profit organisation designed to support wildlife conservation projects.

“The response was really good,” Jonny nods after coming off stage. “Unless you’re a sociopath, you tend to have a soft spot for animals! The greatest response came when I mentioned the fact that one elephant is lost every 15 minutes. Somebody did the math and over the course of the IMS, we’re going to lose 300 elephants, mostly due to poaching. The numbers are really staggering and clearly something needs to be done. Obviously there are already huge organisations out there doing great work, but I wanted to tap into what we have here; I feel there are a lot of compassionate, intelligent people working within the dance music industry and for that reason I see MAAC being quite successful.”

Within the framework of the charity, Jonny and his associates, Pulse Radio’s Wade Cawood and Jack Baucher from Tears For Tigers, have also set up a subsidiary called Gorilla Tactics, which allows them to focus on pressing concerns outside of Africa. “Let’s say we need to pay for the medical treatment of an animal,” Jonny explains, “or someone is rescuing a dog from a puppy mill, we can help with that. If an organisation is going to a dog meat festival in China and they have an opportunity to rescue 200 dogs and need $5,000 to go out and do it, I want to be able to support that as well.”

Ich weiß, dass viele intelligente, einfühlsame Menschen in der Musikindustrie arbeiten und daher glaube ich fest an den Erfolg von MAAC.“ Im Rahmen der Charity haben Josh und seine Kompagnons, Wade Cawood von Pulse Radio und Jack Baucher (Tears for Tigers), eine Arbeitsgruppe namens „Gorilla Tactics“ gegründet, die sich um Probleme außerhalb von Afrika kümmert. „Nehmen wir an, es gilt die Kosten für die medizinische Behandlung eines Tieres zu bezahlen“, erklärt Jonny, „oder jemand befreit einen Hund aus der Gefangenschaft, dann sind wir am Start um zu helfen.

Jonny participated in his first African safari two years ago. “That visit to Botswana really changed things for me,” Jonny continues. “You only ever see these kinds of wild animals in books, movies or in the zoo, which creates a false impression of who they really are. Being there and seeing those animals in their natural habitat was completely jarring, jaw-dropping even. Seeing first hand how they live and how they should be living really warps your sense of perception of how animals are treated in general.”

Eventually Jonny wants to fund school trips to Africa so that children will know from an early age where wild animals really come from.

“Schools should not be taking kids to the zoo,” Jonny says. “Seeing animals in captivity creates a false awareness of how these animals really exist. I know how I felt when I was there, face to face with lions in their own habitat. I realised pretty quickly that I was a guest. I think if children were able to experience that reality early on in life then it would really change the way the future generations think about treating animals.” n

Jonny también quiere financiar viajes escolares a África para que los niños sepan desde una edad temprana de donde realmente vienen los animales salvajes. “Las escuelas no deben llevar a los niños al zoológico”, dice Jonny. “Ver animales en cautiverio crea una falsa conciencia de cómo viven los animales.

Ich werde das Gefühl nie vergessen, wie es ist, einen Löwen von Angesicht zu Angesicht in seinem Reich zu sehen. Mir wurde schnell klar, dass ich nur Gast bin. Ich bin ganz sicher: Wenn Kinder diese Erfahrung möglichst früh machen, wird es die Art und Weise verändern, wie zukünftige Generationen Tiere behandeln.“ n

hiladelphia-born, acid techno legend Josh Wink has been making the pilgrimage to Ibiza since 1993. Back in the day, the Ovum label boss wore long blonde dreadlocks. More importantly, perhaps, he was just a year away from releasing ‘Higher State Of Consciousness’, the era-defining record that broke him to an international audience.

“I come here to Ibiza for two reasons,” Josh explains. “Firstly to work; the island can still be an influential place to play music. But I also come here to spend quality time with my family. It’s a balance. We live in the countryside overlooking the sea near Es Vedra. Walking to the beach everyday, diving in the ocean, looking at the sea life, being part of the local community – there is something to be said for the feeling we get as a family when we come to stay in this certain area of Ibiza that we call home.”

Josh is a vegan, his son a vegetarian. “We do most of our shopping at a place called S’Hortet Verd in Sant Jordi,” says Josh. “It’s an ecological store. I don’t do eggs or milk, but my son eats eggs and sometimes unpasteurised cows milk on special occasions. We prefer to shop at organic stores and pick your own farms. Some of these places don’t have a name; you kind of need to know where they are. We’re always stumbling upon little shops in cool places that become our favourites for a while. We’re here on the island now for a couple of months.

Being that we’re here for so long, we try to make the commitment to transport our typical lifestyle here to Ibiza.”

One aspect of US life that Josh is happy to leave at home is the current political climate.

“There’s a definite feeling of oppressiveness in America right now,” Josh explains. “It’s a weird, dirty feeling that a lot of people are sensitive to and concerned about. It seems to be becoming

“Vengo a Ibiza por dos razones”, explica Josh.

“Primero para trabajar. La isla todavía es un lugar influyente para pinchar música. Pero también vengo aquí para pasar la temporada y disfrutar con mi familia. Es un equilibrio. Vivimos en el campo, cerca de Es Vedrà, en una casa con vistas al mar. Camino por la playa todos los días, buceo en el océano, contemplo la vida marina, y me siento parte de la comunidad local. Siempre que venimos aquí reforzamos nuestros vínculos familiares y consideramos Ibiza como nuestro segundo hogar”.

Josh es vegano y su hijo es vegetariano. “Hacemos la mayoría de nuestras compras en un lugar llamado S’Hortet Verd, en Sant Jordi”, dice Josh. “Es una tienda ecológica. Yo no como huevos ni leche, pero mi hijo sí lo hace en ocasiones especiales… Preferimos comprar en tiendas orgánicas y adquirir nuestros alimentos en granjas. Algunos de estos lugares no tienen ni siquiera nombre y necesitas saber dónde están exactamente. Siempre estamos en búsqueda continua de pequeñas tiendas en lugares recónditos que se convierten en nuestras favoritas por un tiempo. Solemos pasar dos meses en la isla e intentamos amoldar nuestro estilo de vida al de Ibiza”.

Un aspecto de la vida estadounidense que Josh está feliz de dejar atrás es el clima político actual. “La verdad es que hay un sentimiento de opresión en Estados Unidos en estos momentos”, asegura. “Es una sensación extraña, casi sucia, de la que mucha gente está preocupada.

Jeden Tag geht es an den Strand, im Ozean tauchen, das Meeresleben beobachten, Teil der örtlichen Community sein - da gibt es ein ganz besonderes Gefühl für uns als Familie, wenn wir zusammen hierherkommen, in unser zweites Zuhause.“ Josh ist Veganer, sein Sohn Vegetarier. „Unsere Einkäufe erledigen wir meist bei S’Hortet Verd in San Jordi“, so Josh. „Es ist ein ökologischer Store. Ich esse weder Eier noch Milch, aber mein Sohn mag Eier und trinkt zuweilen nicht pasteurisierte Kuhmilch. Wir bevorzugen Shops mit Organic Food, dazu auch Farmen, einige haben nicht einmal einen Namen. Du musst halt wissen, wo sie zu finden sind. Wir stolpern immer wieder zufällig über kleine Shops an coolen Orten, die dann eine Zeitlang zu unseren Favoriten zählen. Wir sind jetzt für einige Monate auf der Insel. Da das schon eine längere Zeit ist, wollen wir natürlich auch hier dann nach unseren Vorstellungen leben.“ Ein Aspekt seiner Heimat USA, den Josh nur allzugern hinter sich lässt, ist die aktuelle Politik. „Es gibt da definitiv eine Atmosphäre der Unterdrückung in Amerika,“ erklärt Josh. „Es ist ein verrücktes, mieses Gefühl. Viele machen sich Sorgen, auch über die Tatsache, dass es ein

a global scene right now unfortunately.”

After releasing a slew of big hits on labels like Intec, R&S and Boysnoize, Josh returned to action on Ovum earlier this year, dropping ‘Resist’, a quintessential acid-laced techno track buoyed by a critical message. “That track paid homage to a movement that has been around since the beginning of civilisation,” Josh continues, “whereby people can utilise their ability to protest peacefully against the political system. Globally, this is a trying time.

But it’s nice to know that there is still hope throughout the world, even on little Ibiza.

Complacency is the easy way but not the best way. Socrates used to say he discovered through reason and logic in discussion, but I don’t know how much reason and logic are being used these days. It’s more spin. Spinning the truth. Or as the Trump cabinet calls it, the alternative truth! Even so, it’s still important for me to do what I believe in, because spreading a positive vibe through educated entertainment can be contagious.” n

Oder wie die Trump-Administration es nennt: Alternative Fakten. Umso wichtiger ist es mir, das zu tun, woran ich glaube. Ein positiver Vibe, basierend auf Entertainment und Bildung, kann sehr ansteckend sein.“ n

hen a nightclub is still pounding out the tunes after three turbulent decades, you just know it’s doing something right. Next year, the Rex Club in Paris celebrates its 30th birthday. Julien Veniel, better known to the world as D’Julz, is one of the central reasons why the venue has been so successful. D’Julz is the longest serving resident at the Rex Club and this summer his Bass Culture party marks its 20th anniversary. During their time together, Bass Culture and the Rex Club have become integral parts of the Paris nightlife scene, flying the flag for acid house and techno when the rest of the city was being dumbed down by commercial beats.

“Bass Culture started in 1997,” D’Julz recalls.

“At that time, I was one of the only artists playing underground music in Paris. Back then, we had a small budget, but musically I could do what I wanted to do. To this day, the formula has never really changed.”

The formula at Bass Culture has always been perfectly simple: D’Julz and another top DJ broadcasting the darker, dubbier side of house and techno inside a small, intimate room. “The Rex is in the basement of a cinema,” says D’Julz. “It has a low ceiling and you’re always in close proximity with the crowd; in fact, they can almost reach out and touch you. It’s one of the things I’ve always loved about the venue.

The staff are also really passionate about dance music. They don’t work there randomly.

D’Julz es el residente más veterano de Rex Club y este verano su fiesta Bass Culture celebra su 20 aniversario. Durante todo este tiempo, Bass Culture y el Rex Club se han convertido en partes integrantes de la vida nocturna de París, enarbolando la bandera del acid house y el techno cuando el resto de la ciudad se entregaba a los beats comerciales.

“Bass Culture comenzó en 1997”, recuerda D’Julz. “En ese momento, yo era uno de los únicos artistas que pinchaban música underground en París. Por entonces teníamos un presupuesto pequeño, pero musicalmente podía hacer lo que quería. La fórmula nunca ha cambiado hasta el día de hoy”.

Einer der Hauptgründe, warum der Club so erfolgreich ist, hört auf den Namen Julien Venel, besser bekannt als D’Julz, dienstältester Resident im Rex Club, dessen Bass CultureParty diesen Sommer ihren 20. Geburtstag feiert. In ihrer gemeinsamen Zeit haben sich Bass Culture und Rex Club zu prägenden Parts der Pariser Nightlife-Szene entwickelt. Während der Rest der Stadt sich schlichteren kommerziellen Beats hingab, regierten hier Acid House und Techno. „Bass Culture startete 1997“, erinnert sich D’Julz. „Zu jener Zeit war ich der einzige Künstler, der in Paris Underground Music spielte. Wir hatten damals nur ein kleines Budget, aber in Sachen Musik konnte ich machen, was ich wollte. Bis heute habe ich diese Formel nicht verändert.“ Die Formel beim Bass Culture war von je her denkbar einfach: D`Julz und ein weiterer Top-DJ präsentieren die dunklere, dubbige Seite von House und Techno in einem kleinen Raum. „Das Rex ist der Keller eines Kinos“, erzählt D`Julz. „Die Decke ist niedrig und du bist immer mit der Crowd in Kontakt. Sie müssen nur den Arm ausstrecken und können dich berühren. Das habe ich an dieser Venue immer geliebt. Auch der Staff lebt für die Musik, die

For many years, the Rex was the only true underground club in Paris. “Between 2003 and 2010 there was almost nothing else,” D’Julz continues. “Thankfully the scene is much healthier now. New venues like Concrete are symbolic of a scene reborn. There’s also a rave revival in the suburbs, lots of new collectives doing their thing. It’s the most creative time for Paris since the early ‘90s. When you look at some of the line-ups it’s comparable to what you’d expect to find in London or Berlin.”

Here in Ibiza, D’Julz remains a Circo Loco regular. He adores the party and the infamous DC10 vibe so much that launching a Balearic Bass Culture residency has never appealed to him. “I wouldn’t change being a Circo Loco resident for anything,” he says. “Even though Circo Loco has become this amazing brand, they’ve managed to maintain the original spirit. Not to mention the fact that Ibiza is so competitive.

There are so many parties and I’m not a promoter. At the Rex, I only take care of the programming and the artistic side of things. I don’t want to be involved with the money or the promotion, it’s not who I am. It’s very hard to DJ when you’re thinking about filling the club. Whether I’m playing in Ibiza, Paris or Berlin, I only want to concentrate on the music.” n

Aquí en Ibiza, D’Julz sigue siendo un habitual de Circo Loco. Adora tanto la fiesta y el ambiente de DC10 que la posibilidad de una residencia de Bass Culture en Ibiza nunca le ha atraído. “No cambiaría mi residencia de Circo Loco por nada”, dice. “A pesar de que Circo Loco se ha convertido en una marca global, han logrado mantener el espíritu original. Por no mencionar lo competitiva que es Ibiza. Hay muchas fiestas… y yo no soy promotor. En el Rex sólo me encargo de la programación y el lado artístico del proyecto. No quiero estar involucrado en temas de dinero o promoción, es algo que no va conmigo. Es muy difícil pinchar cuando estás pensando en llenar el club. Si estoy actuando en Ibiza, París o Berlín, sólo quiero concentrarme en la música”. n

Neue Venues wie das Concrete sind Beleg dafür. Es gibt ein Rave Revival in den Vorstädten, viele neue Kollektive machen ihr Ding. Es ist die wohl kreativste Zeit in Paris seit den frühen 90ern. Wenn du dir einige der Lineups anschaust, dann könnten die genau so in London oder Berlin stattfinden.

Hier in Ibiza zählt D’Julz zu den Regulars im Circo Loco. Er liebt die Party und den einzigartigen DC10-Vibe so sehr, dass er nie auf die Idee einer Balearic Bass Culture Residency kommen würde. „Ich würde als Circo-Loco-Resident nie auch nur das Geringste verändern“, sagt er. „Obwohl Circo Loco diese grandiose Marke geworden ist, haben sie dennoch den ursprünglichen Spirit bewahrt. Nicht zu vergessen, dass die Konkurrenz in Ibiza riesig ist, es gibt so viele Partys und ich bin kein Promoter. Im Rex kümmere ich mich nur um das Programm und den künstlerischen Aspekt. Ich will mit Geldangelegenheiten oder Promotion nichts zu tun haben, das bin ich einfach nicht. Es ist ziemlich hart zu DJen, wenn du dich gleichzeitig darum kümmern musst, wie du den Club voll bekommst. Ob ich in Ibiza, Paris oder Berlin spiele – ich will mich nur auf die Musik konzentrieren.“ n

Too Slow to Disco is the best example of this and Ibiza Style can quite proudly claim to have featured this compilation from the first note onwards. After the ladies of Too Slow to Disco stood in the spotlight last time, now comes the regular third part with its easy soul, yacht pop and West coast sounds, brought together once more by DJ Supermarkt. This time, the TSTD mastermind has also struck it rich when it comes to more exotic styles. The number in the album title says it all: Km5 has been bringing out compilations for a barely cred-ible 17 years. And this year too, the classic label is easily able to maintain its customary high level. Comprising two CDs, the collection of songs includes 12 tracks on each one of the silver discs, selected and mixed by Sergi Ribas, resident DJ for one and a half decades, and Josch Genske, owner of the label and the founder of Km5. CD 1 captivates you with great vocal tracks and remix-es by artists such as Eli Escobar or Yann Gordo, while, on CD 2, deeptech tracks like "Lost in a Moment" by Samuel Fach draw listeners in the direction of the dance floor. Ribas on the philoso-phy of the series: "We want to drive Km5's classic style further and further forward" - doing so with classic sounds including disco, funk and soul. The compilation would not be complete without the artwork of Frann Morán, whose flowers, characters and optical arrangements embody the typical spirit of the island, its sky, sea and vegetation. And the most important thing for Sergi Ribas? "That people can enjoy these wonderful songs anytime and anywhere!"

Esta nueva entrega la conforman dos CD’s con 12 temas en cada uno de ellos, seleccionados y mezclados por Sergi Ribas, DJ residente durante una década y media, y Josch Genske, fundador de Km5. El CD 1 te cautiva con grandes temas vocales y remixes de artistas como Eli Escobar o Yann Gordo, mientras que en el CD 2, pistas deep-tech como “Lost in a Moment” de Samuel Fach llevan a los oyentes hacia la pista de baile.

Quantum Collage is the brainchild of Olaf Gutbrod from southern Germany and the beginning of his passion for music can be pinpointed fairly closely. He first took up the guitar at the age of nine; an encounter that was to become the starting point for a long, musical journey. Gutbrod travelled through Africa, India and right across the South American continent.

As Ohm-G, in 2002 he finally moved to Ibiza, where he quickly made a name for himself in the emerging chill-out scene. His tracks adorned the legendary "Café del Mar" and "Hotel Costes" compilations. He created a thoroughly trademark sound that made him unmistakable. Nonetheless, Gutbrod (alias Ohm-G alias Quantum Collage) was always on the lookout for new sounds, new inspirations and new ways to combine classic sounds with newly discovered spheres and melodies. His new E.P. Lucid Dream-ing is the best example thereof; his very own cosmos combining the best of different worlds. It's novel and yet somehow familiar, inspiring and passionate.

"Inspiring music lovers, dancers and dreamers alike" - that is the mission statement of this musical all-rounder, and his new tracks work it out in an inspirational way.

Como Ohm-G, en 2002 finalmente se instaló en Ibiza, donde rápidamente se hizo un nombre en la emergente escena chill-out. The London band, namely J. Willgoose Esq., Wrigglesworth and J.F. Abraham, is something like the brainy working group of modern pop music. Just writing good songs is not enough for the trio; as the historical underpinning for their concept albums, there is always a historical reference that is set to music. Recently, PSB devoted themselves to the 'Race for Space' contest between Rus-sians and Americans towards the end of the 1960s. Tracks like the incredible "Go!" hardwired orig-inal dialogues from the Nasa control room and the Apollo with postmodern synthpop halfway be-tween Kraftwerk and Stereolab. Now, on Every Valley, it is a bit more down to earth. The theme this time is coal mining in Wales, its old history and its present significance. With their magical hands, PSB transform something that sounds like the complete opposite of pop into something deeply original, a mix of educational TV and "Top of the Pops", news feature and dance floor filler. Groovy, intelligent and, in the best sense, peculiar. In the search for superlatives, one likes to touch upon the band's formulation: how there is no-one else quite like them. And that certainly applies to very few acts as much as it does to Public Service Broadcasting. Pop for explorers who are hungry for knowledge.

Escribir buenas canciones no es suficiente para el trío. Siempre hay algo que destaca en sus álbumes conceptuales: una referencia histórica que sirve de hilo argumental para su música. Recientemente, uno de sus discos, “The Race for Space”, lo dedicaron a la competencia espacial entre rusos y estadounidenses de finales de los años sesenta. Temas como la increíble “Go!” incluso contenían diálogos originales de la sala de control de la Nasa y la nave Apolo. Todo ello en medio de su vendaval synthpop post-moderno a medio camino entre Kraftwerk y Stereolab. Ahora, en “Every Valley”, la banda baja a la tierra. El tema de su nuevo disco gira en torno a la minería de carbón en Gales, su historia y su importancia actual. Con sus mágicas manos, los PSB transforman los códigos del pop en algo profundamente original, algo así como una mezcla de televisión educativa y “Top of the Pops”. Se trata de un disco groovy, inteligente y peculiar, en el mejor de los sentidos. Adjetivos a parte, hay una realidad inapelable: no hay nadie más como ellos. Y eso es algo que podemos decir de muy pocas bandas. Lo suyo es música pop para exploradores hambrientos de conocimiento.

Tracks wie das unglaubliche „Go!“ verdrahteten dabei Original-Dialoge aus dem Nasa-Kontrollraum und der Apollo mit postmodernem SynthPop zwi-schen Kraftwerk und Stereolab. Auf „Every Valley“ nun geht es etwas bodenständiger zu, Thema ist diesmal der walisische Kohlebergbau, seine alte Historie, seine heutige Bedeutung. Was wie das komplette Gegenteil von Pop klingt, das verwandeln PSB mit ihren magischen Händen in et-was zutiefst Originäres, zu einem Mix aus Bildungsfernsehen und „Top of the Pops“, News Feature und Dancefloor-Filler. Groovy, intelligent, im besten Sinne eigenartig. Auf der Suche nach Superla-tive landet man gern mal bei der Formulierung von der Band, wie es sie kein zweites Mal gibt. Auf wenige Acts trifft das wohl so sehr zu wie auf Public Service Broadcasting. Pop für wissensdurstige Entdecker.

BENJAMIN BIOLAY - „VOLVER“

That very special arrogance, how he places his cigarettes in the corner of his mouth, pushes his hat to the back of his head, fixating on his counterpart - all this makes the Frenchman like almost no-one else. Gainsbourg was one of those, Belmondo's magic still works and, over the years, the younger generation has propelled the highly talented Benjamin Biolay to the front row of French national heroes as far as pop art is concerned. With his latest album, "Volver", he is likely to ce-ment that status as casually as he does indispensably, and that just one year after its predecessor, Palermo Hollywood. On the new work, Catherine Deneuve's ex son-in-law once again appears to be both eclectic and self-confident. Defining the chanson all over again, he breathes new life into it between two deep drags; the whole thing in the form of duets with mostly female counterparts, including his ex-wife, Chiara Mastroian-ni. Among the highlights of the records are Frank Sinatra's "It Was a Very Good Year" and the reg-gae-rooted "Pardonnez-Moi".

There is most definitely nothing to apologise for; on the contrary, here, one of the French superstars of the modern era remains on course in an utterly self-confident and thoroughly listenable way.

Gainsbourg fue también uno de esos… No hay duda de que la magia de Belmondo (el mítico actor francés de la Nouvelle Vague) todavía funciona y, a través de los años, la generación más joven ha impulsado al talentoso Benjamin Biolay a la primera fila de héroes franceses en lo que respecta a arte pop. Biolay edita nuevo álbum, “Volver”, tan sólo un año después de su predecesor: “Palermo Hollywood”. En este nuevo trabajo, el yerno de Catherine Deneuve, se muestra ecléctico y seguro de sí mismo. Y sigue re-definiendo la chanson a su manera. En este disco lo hace en forma de duetos, mayoritariamente femeninos, incluyendo a su ex esposa, Chiara Mastroianni. Entre los momentos más destacados del disco está la versión de “It was a very good year” de Frank Sinatra y el reggae “Pardonnez-Moi”. Definitivamente, no hay nada por lo que pedir disculpas… Todo lo contrario, Biolay es una de las súper estrellas francesas actuales y sigue edificando su carrera con una seguridad encomiable.

Mit seinem neuesten Album „Volver“ dürfte er diesen Status ebenso lässig wie unabdingbar untermauern, und das nur ein Jahr nach dem Vorgänger „Palermo Hollywood“. Auch auf dem neuen Oeuvre geht der Ex-Schwiegersohn von Catherine Deneuve wieder ebenso eklektizistisch wie selbstbewusst vor. Definiert den Chanson ein weiteres Mal neu, haucht ihm zwischen zwei Lungenzügen neues Leben ein, das Ganze in Form von Duetten mit zumeist weiblichen Counterparts, darunter Ex-Gattin Chiara Mastroianni. Zu den Highlights der Platten zählen Frank Sinatras „It Was a Very Good Year“ und das reggae-grundierte „Par-donnez-Moi“. Zu entschuldigen gibt es dabei ganz sicher nichts, im Gegenteil – hier bleibt einer der französischen Superstars der Moderne ganz selbstbewusst und durchweg hörenswert auf seinem Kurs.
