EDITORIAL s the new summer season gets underway, the situation in Ibiza could best be summed up under the heading ‘Winds of Change’. Intent on retaining their share of the tourism cake, many of the established players on the Island have revised their offerings in the face of stiff competition from some dynamic new providers. These range from legendary institutions such as Cipriani in the Ibiza Gran Hotel to individualists such as the modest Sushiyaan on Plaza Sa Drassaneta.

Most of the newcomers have succeeded in surmounting the planning approval process and tough conditions imposed by the authorities to be ready in time for the grand opening weekend. You can read more about this in the pages of this magazine.

The fact that the various club openings coincide with the International Music Summit has tripled the population of the Island at a stroke – and the noise level in commensurate measure. But luckily, there are still many places in the north and east of Ibiza which are free from all the hustle and bustle. Because Ibiza is more than just a party island. Even though some wonder whether Ibiza’s fun society might be dancing on a volcano, we can still find plenty of evidence to the contrary: honest, down-toearth payeses and payesas who shrug their shoulders and just get on with their lives. We also report on this aspect of the Island. Ibiza really does offer something for everyone.

inds of Change» puede ser el título que mejor defina la situación de Ibiza a comienzos de esta temporada de verano. Muchos establecimientos han revisado su concepto con la esperanza de llevarse un buen pedazo de un pastel cada vez más reñido, ya que a los «jerifaltes» más asentados se han unido algunos nuevos competidores de gran atractivo. Entre ellos se cuentan instituciones legendarias como el Cipriani del Ibiza Gran Hotel o individualistas como el pequeño Sushiya de la Plaza Sa Drassaneta. La mayoría de ellos todavía tienen que lograr estar listos a tiempo para el gran fin de semana de apertura, a pesar de las frecuentes discusiones sobre autorizaciones y de las exigencias de las autoridades. Podrán leer más al respecto en las próximas páginas.

Con las aperturas y el IMS, que se celebrará al mismo tiempo, se triplicará de un día a otro la población de la isla, y también el nivel de ruidos. Pero por fortuna existen todavía muchos rincones hermosos sin ruidos ni barullo en el norte y el este de la isla. Porque Ibiza es mucho más que una isla para ir de fiesta, aun cuando algunos se preguntan si la «sociedad de la diversión» ibicenca no estará ya jugando con juego. Aun cuando se puedan ver las cosas así, encontramos siempre un programa alternativo en numerosos emplazamientos, modestos payeses y payesas que se toman todo esto con una serenidad admirable. También hablaremos más de ello en esta edición. ¡Disfruten de las numerosas facetas de la isla!

inds of Change“ könnte man die Lage zu Beginn dieser Sommersaison auf Ibiza titeln. Viele Etablissements haben ihr Konzept überarbeitet in der Hoffnung, dadurch vom immer härter umkämpften Kuchen noch ein gutes Stück abzubekommen. Denn zu den eingesessenen ‚Platzhirschen’ haben sich einige neue attraktive Mitbewerber gesellt. Das reicht von so legendären Institutionen wie dem Cipriani im Ibiza Gran Hotel bis hin zu Individualisten wie dem kleinen Sushiya an der Plaza Sa Drassaneta. Die meisten von ihnen haben es – trotz häufigen Streits um Genehmigungen oder Auflagen der Behörden – noch rechtzeitig zum großen Opening-Weekend geschafft fertig zu werden. Darüber lesen Sie mehr auf den nächsten Seiten.

Mit den Openings und dem gleichzeitig stattfindenden IMS verdreifachte sich von einem auf den anderen Tag die Bewohnerzahl der Insel – und der Lärmpegel ebenfalls. Aber es gibt zum Glück im Norden und Osten der Insel immer noch viele schöne Ecken ohne Lärm und Trubel. Denn Ibiza ist mehr als nur eine Party-Insel. Auch wenn einige sich fragen, ob Ibizas ‚Spaßgesellschaft’ bereits einen Tanz auf dem Vulkan vollführt. Selbst wenn dem so seien sollte, so finden wir doch immer noch an vielen Orten ein Kontrastprogramm. Bodenständige, bescheidene Payeses und Payesas, die all dieses mit bewundernswerter Gelassenheit hinnehmen. Auch darüber mehr in dieser Ausgabe. Genießen sie die vielen Facetten der Insel!

aute couture seems to have lost none of its allure now that the boom years are over; if anything, the global downturn seems to make us appreciate luxury even more. Top fashion may be expensive, but as an expression of pure design and creativity, it is unsurpassed.

Ibiza’s Dalt Vila – that divine theme park – has inspired many artists. Solis Lucrum have celebrated the return of haute couture with an imaginative photo shoot at multiple locations in Dalt Vila, drawing on the help of various creative minds from all over the world.

White ethereal creatures, colourful flowers, luxury jewellery, expensive fabrics and feathers galore were in abundance on the set. Pure innocence mixed with extravagance, a creative Alice in Wonderland at its finest. Once again, you can feel the sheer magic of Dalt Vila in this beautiful fairytale shoot.

The outfits were draped over the models on the set, with up to 20 different garments being used to generate a uniquely beautiful scene.

White wigs adorned with jewels and flowers, beautiful silk dresses floating through the streets of Dalt Vila – they all tell a story from another world and carry us off into another era.

The shoot was a joint project between Solis Lucrum, the famous British photographer Tracey Taylor – wife of Duran Duran guitarist Andy Taylor – and the Louise Maxwell Agency.

We all have our dreams, and Solis Lucrum have shown that these can be realised. n

a alta costura parece hoy más importante de lo que lo era en los años del boom; la recesión global despierta una nueva conciencia del valor. La alta costura puede parecer cara, pero como expresión artística de diseño y creatividad en estado puro de la moda resulta insuperable.

La ibicenca Dalt Vila, una tierra de fantasía celestial, ha inspirado desde siempre a muchos artistas. Solis Lucrum celebró la vuelta de la haute couture con una sesión fotográfica llena de fantasía realizada en diferentes enclaves de Dalt Vila con la ayuda de varios artistas creativos que acudieron a la isla provenientes de todo el mundo.

Criaturas blancas y etéreas, flores de todos los colores, lujosas joyas, tejidos caros y todo tipo de plumas fueron los principales protagonistas en el set. Pura inocencia mezclada con extravagancia, una Alicia creativa en un exquisito País de las Maravillas. En esta maravillosa sesión de fábula se pudo sentir una vez más la magia en estado puro que exhala Dalt Vila.

Los atuendos de las modelos se drapearon en el set; en algunos casos se utilizaron hasta veinte vestidos diferentes, a fin de conseguir una atmósfera de haute couture tan bonita como excepcional.

Pelucas blancas decoradas con joyas y flores y bonitos vestidos de seda flotando por las callejuelas de Dalt Vila escribieron su propia historia de otro mundo y transportaron a otras épocas.

Para crear tales sueños de moda, Solis Lucrum contó en esta sesión con la participación de la conocida fotógrafa británica Tracey Taylor –esposa de Andy Taylor, guitarrista de Duran Duran– y de la Louise Maxwell Agency.

Porque existen los sueños, y Solis Lucrum los puede hacer realidad. n

Ibizas Dalt Vila – ein himmlisches Phantasialand – hat seit jeher viele Künstler inspiriert.

Solis Lucrum feiert die Rückkehr der Haute Couture mit einem phantasievollen Fotoshoot an mehreren Locations in Dalt Vila mit Hilfe mehrerer kreativer Künstlers, die dazu aus der ganzen Welt auf die Insel kamen.

Weiße ätherische Wesen, bunte Blumen, luxuriöser Schmuck, teure Stoffe und jede Menge Federn waren die Hauptprotagonisten am Set. Reine Unschuld gemixt mit Extravaganz, eine kreative Alice im Wunderland vom Feinsten.

Einmal mehr konnte man die pure Magie Dalt Vilas in diesem wunderschönen Märchen Shooting spüren.

Die Outfits wurden am Set an den Models drapiert, wobei manchmal bis zu 20 verschiedene Kleider verwendet wurden, um eine einzigartige und schöne Haute Couture Atmosphäre zu schaffen.

Weiße Perücken mit Juwelen und Blumen ausgeschmückt, schöne seidene Kleider durch die Gassen von Dalt Vila schwebend schrieben eine eigene Geschichte aus einer anderen Welt und entführten in andere Zeiten.

Solis Lucrum verabredete sich zu diesem Soot mit der bekannten britischen Fotografin Tracey Taylor – Frau von Duran Duran’s Gitarrist Andy Taylor – und der Louise Maxwell Agency, um diese modischen Träume zu kreieren. Denn Träume gibt es – Solis Lucrum kann sie Wirklichkeit werden lassen. n

VALENTINA RICARDI was born into a Belgian-Italian family in Brussels in 1987. I spent many years living in Spain before moving to New York to study at the International Center of Photography.

I began to photograph what was around me, to work with images in familiar situations and to document daily life.

Now I am based in Ibiza where I intend to keep going with this photography project. Because it is my first long-term project I intend to devote myself fully to this passion, to create images. I believe that it is an amazing journey and I know there will be more because life is perpetual motion.

ací en Bruselas de una familia belgoitaliana en 1987. He vivido en España durante varios años antes de mudarme a Nueva York para estudiar en el International Center of Photography.

Comencé a fotografiar lo que me rodeaba, trabajar con imágenes en situaciones familiares y documentar la vida cotidiana.

Estoy basada en Ibiza ahora, donde tengo la intención de perseguir este proyecto fotográfico. Al ser mi primer proyecto a largo plazo tengo la intención de dedicarme plenamente en esta pasión, crear imágenes. Considero que este un viaje increíble y sé que habrá más, porque la vida es un movimiento perpetuo.

Bevor ich nach New York zog, um im International Center of Photography zu studieren, lebte ich einige Jahre in Spanien.

Mit der Fotografie begann ich, als ich irgendwann alles um mich herum ablichtete. Ich arbeitete mit Bildern vertrauter Situationen und dokumentierte das tägliche Leben.

Im Moment halte ich mich in Ibiza auf und habe vor, dieses Fotoprojekt weiterzuverfolgen.

Da es sich um mein erstes langfristiges Projekt handelt, werde ich mich voll und ganz der Bildkreation widmen. Ich betrachte das Ganze als eine unglaubliche Reise und weiß, dass da noch viel mehr zu entdecken ist, denn das Leben ist eine ständige Bewegung.

AND SUDDENLY THEY BECAME FAMILY he images in this series are an attempt to capture human stories in day to day life, “the ones” that exist on the border between strange and commonplace. My photos are almost always of people and they take the shape of portraits. It’s hard to explain it because it is guided by a flow of impulses. Most of the people that I photograph have something in common, one day, they became a family. I always try to capture an intimate, out of place or banal moment. It’s a reflection of my stories in the form of a diary that allows me to remember.

The thing that interests me most is the threshold between reality and fantasy. I consider this project as the creation of a deconstructed film that will never reach the screen.

They are attempts at a storyboard, unreasoned and impulsive, that make me arrive at this conclusion; they are stories that do not have a start or a finish but speak of the same thing, memory. n

as imágenes en esta serie son un intento de fotografíar historias humanas en el día a día, “estas” que existen entre lo raro y lo ordinario. Mis imágenes son casi siempre de gente y toman forma de retratos. Difícil razonarlo ya que está guiado por un fluir de impulsos. La mayoría de la gente que fotografío tienen algo en común, un día, se volvieron Familia. Intento siempre coger un momento íntimo, dislocado o banal. Es un reflejo de mis historias en forma de diario, el cual me permite recordar.

Lo que más me interesa es el amanecer entre la realidad y la fantasía. Considero este proyecto como la creación de una película desconstruida, que nunca llegará a salir en las pantallas.

Son intentos de storyboard, no razonados e impulsivos que me hacen llegar a esta conclusión; son historias que no tienen ni pie ni cabeza, pero hablan de lo mismo, el recuerdo. n

ie Bilder dieser Serie sind ein Versuch, menschliche Geschichten des täglichen Lebens fotografisch darzustellen. Geschichten, die manchmal gewöhnlich, aber ab und zu auch merkwürdig sind. Meine Bilder sind Porträts, auf denen fast immer Leute zu sehen sind. Der innere Impuls, sie zu fotografieren, ist schwer zu erklären. Die meisten der Leute werden eines Tages etwas gemeinsam haben - sie werden zu einer Familie gehören. Ich versuche immer einen vertrauten, außergewöhnlichen oder auch ganz banalen Moment zu erwischen. Dadurch entstehen Geschichten in Form eines Tagebuchs, an die man sich zurückerinnern kann.

Impulsive und unüberlegte Drehversuche lassen mich zu dieser Schlussfolgerung gelangen; die Geschichten haben weder Hand noch Fuß, aber sie erzählen alle von einem – der Erinnerung. n

he Iranian entrepreneur Behdad Hadi Therani has created a new concept that is very contemporary and in the very purest New York style: B12 The Gallery, a multipurpose venue located in the industrial zone near the Gesa power station, two minutes away from the centre of Ibiza, and the port and with direct access to the motorway.B12’s main activity is holding exhibitions but given its characteristics and by popular acclaim it is holding more and more events and it is becoming a meeting point for lovers of art and culture. It is a versatile space with the ability to transform itself from an art gallery to a fashion show, showroom or artistic stage. The people in charge of running it are Manuela Romero and Francesco Sgaravatti, the director and director of communications, respectively.

This industrial warehouse has been adapted and is divided into two spaces: “La Galería” and “El Loft”. La Galería is a see-through functional space measuring 450 m2, with white walls and floor, with never-ending 8m ceilings, and huge windows that takes up the entire front wall and is equipped with the very latest technology. La actividad principal de B12 es la exposición de arte, pero dadas sus características y por petición popular, cada vez se celebran más eventos y se está convirtiendo en un punto de encuentro para los aficionados al arte y la cultura. Un espacio versátil con la capacidad de transformarse de galería de arte a pasarela de moda, showroom o escenario artístico. Al frente de su gestión están Manuela Romero y Francesco Sgaravatti, Directora y Director de Comunicación, respectivamente.

Esta nave industrial adaptada está divida en dos espacios: “La Galería” y “El Loft”. La Galería es un espacio funcional diáfano de 450 m2, de paredes y suelo blanco, con techos interminables de 8m, un ventanal que ocupa toda la pared frontal y equipado con tecnología de última generación. B12 ist hauptsächlich für Kunstausstellungen gedacht, aber aufgrund seiner Eigenschaften und der häufigen Nachfrage finden dort immer mehr Veranstaltungen statt, die diesen Ort zu einem Treffpunkt für Kunst- und Kulturliebhaber machen. Der vielseitige Raum kann in eine Kunstgalerie, einen Laufsteg, einen Showroom oder eine Kunstszenerie verwandelt werden.

Für den Betrieb sind die Direktorin Manuela Romero und Kommunikationsdirektor Francesco Sgaravatti verantwortlich.

Die umgebaute Industriehalle ist in zwei Räume aufgeteilt: "La Galería" und "El Loft".

Die Galerie ist ein funktionaler, durchscheinender Raum von 450 m² mit Wänden und weißem Boden, unendlich hohen Decken von 8 m, einer Fensterfront über die komplette Fassade und mit der Technologie der jüngsten Generation ausgestattet. available as accommodation, it is ideal for events and celebrations.

You can go and see the exhibition, which changes every 15 days and includes sculptures, paintings, photography, multimedia and audiovisual installations, from Monday to Saturday.

In June they are exhibiting the work of Max Francos and in July that of Eric Ceccarini and Marco Cecioni. B12 does not have a permanent exhibition but the design furniture company Fanstudio (www.fanstudio.es) has its exclusive showroom here for the entire island. They have still not confirmed the date but there will be an official presentation in June at which the tattoo artist Leo Millares will tattoo various pieces of the Fanstudio collection live.

Ibiza’s cultural scene is on the rise and places like B12 The Gallery prove it.

B12 THE GALLERY IS MORE THAN AN ART GALLERY, IT IS A NEW CONCEPT IN IBIZA. HOW DID THE IDEA ARISE?

In the beginning B12 was created as an art gallery but the characteristics of the warehouse brought many people who have been coming with their ideas and little by little the Gallery has been adapted to the point that it has turned into this multidisciplinary venue.

AND NOW THAT IT IS ESTABLISHED AS A MULTIDISCIPLINARY VENUE. WHAT DO YOU WANT TO ACHIEVE WITH B12?

We want it to become a platform to launch artists and creators and – by means of the activities that we are carrying out – to make it possible for culture to form part of Ibiza’s daytime leisure offer.

WHO CHOOSES THE WORKS THAT ARE EXHIBITED AND WHAT CRITERIA DO THEY FOLLOW?

The art director, Stephanie Mareli, is the one who chooses the exhibitions which are always modern art. At the moment the selection is made among local artists who have a defined style and who bring something different to it, it doesn’t matter whether they are known on the international stage or not.

Now we are looking at artists who do mapping and holograms. We want B12 to be a place where new artistic and technological forms are exhibited, to go a bit further and offer different experiences related to art.

IS IT BEING WELL RECEIVED BY THE ARTISTS ON THE ISLAND?

It’s incredible. Every day various local artists come who want to exhibit here. Those big windows, the lighting, the location, the easy parking… all of it makes the Gallery a very appealing place to exhibit.

HAVE ARTISTS FROM OUTSIDE SHOWN INTEREST?

Yes; Gus Gracey, for example. Lots of people are calling us from Madrid and also masses of Dutch, German and Italian artists…

FASHION PARADES, SHOWROOM, VARIOUS EVENTS… HOW DO YOU SEE THE FUTURE OF B12, MORE AS AN ART GALLERY OR AS A MULTIFUNCTIONAL VENUE?

The idea of fashion parades came from a designer who suggested doing a parade to us and it worked very well. Seeing the success that the events have and the amount of people who are interested in La Galería to hold their exhibitions, presentations, etc. the logical evolution of B12 is as a multifunctional venue but people continue to do exhibitions.

En principio B12 se creó como galería de arte, pero las características de la nave han atraído a muchas personas, que han ido viniendo con sus propuestas y poco a poco, se ha ido moldeando la galería hasta llegar a convertirse en este espacio multidisciplinar.

Y YA ESTABLECIDOS COMO ESPACIO MULTIDISCIPLINAR ¿QUÉ QUERÉIS LOGRAR CON B12?

Queremos que se convierta en una plataforma de lanzamiento para artistas y creadores y fomentar, a través de las actividades que llevamos a cabo, que la oferta cultural forme parte del ocio diurno de Ibiza. ¿QUIÉN SELECCIONA LA OBRA EXPUESTA Y QUÉ CRITERIO SIGUE?

La directora de arte, Stephanie Mareli, es la que elige las exposiciones, siempre de arte contemporáneo. De momento la selección se hace entre artistas locales con un estilo definido y que aporte algo diferente, da igual que tengan proyección internacional o no.

Ahora estamos mirando artistas que hacen mapping y hologramas. Queremos que B12 sea un espacio donde exponer las nuevas formas artísticas-tecnológicas, ir un poco más allá y ofrecer diferentes experiencias relacionadas con el arte.

Anfangs wurde B12 als Kunstgalerie geplant.

Doch der Lagerhallencharakter veranlasste viele Besucher zu Vorschlägen, die in das Projekt einflossen. So ist es schließlich zu diesem multifunktionellen Raum gekommen.

Wir wollen, dass B12 zu einem Sprungbrett für Künstler und Kunstschaffende wird. Wir wollen durch unser Aktivitäten das kulturelle Angebot auf Ibiza fördern damit es ein selbstverständliches Teil des Lifestyles der Insel wird.

WER SUCHT DIE AUSGESTELLTEN WERKE AUS UND NACH WELCHEN KRITERIEN WIRD DABEI VERFAHREN?

Die Kunstdirektorin Stephanie Mareli entscheidet, was ausgestellt wird. Es handelt sich immer um zeitgenössische Kunst. Im Augenblick suchen wir hier ansässige Künstlern mit

einem definierbaren Stil, egal, ob sie international bekannt sind oder nicht.

Zurzeit sehen wir uns Künstler an, die Mapping und Hologramme erstellen. Wir wollen, dass B12 auch ein Ausstellungsraum für neue kunsttechnologische Formen ist, wir wollen ein bisschen weiter hinausgehen und unterschiedliche Erfahrungen bezüglich der Kunst anbieten.

Es increíble. Todos los días vienen varios artistas locales que quieren exponer aquí. Estos ventanales, la iluminación, el espacio, la localización, el fácil aparcamiento… todo ello hace de la galería un sitio muy apetecible para exponer. ¿HAN MOSTRADO INTERÉS ARTISTAS DE FUERA?

Ja, Gus Gracey, zum Beispiel. Wir werden viel aus Madrid angerufen, aber auch von holländischen, deutschen und vielen italienischen Künstlern.

MODENSCHAUEN, SHOWROOM, VERSCHIEDENE VERANSTALTUNGEN – WIE SEHT IHR DIE ZUKUNFT VON B12?

Lo de los desfiles de moda surgió a raíz de una diseñadora que nos propuso hacer su desfile y funcionó muy bien. Viendo el éxito que tienen los eventos y la cantidad de personas que siguen interesadas en La Galería para realizar sus exposiciones, presentaciones, etc. la evolución lógica de B12 es como espacio multifuncional, pero seguiremos exponiendo.

Wenn man den Erfolg der Veranstaltungen und die vielen Personen sieht, die an der Galerie für Ausstellungen und Vorführungen interessiert sind, ist die logische Entwicklung von B12 ein multifunktionaler Raum, aber wir werden auch weiterhin ausstellen.

orn and raised in Münster, Ines Schramm decided to spend some time on Ibiza in the early 80s whilst training to be a photographer and study under well-known professional photographer Hans Eick. On returning to Germany, she began a long and very successful career in magazines and then in advertising with studios first in Hamburg and then later in Munich.

The ZEIT, the WIENER and the SÜDDEUTSCHE magazine are some of the titles that helped shape her. Since her return to Ibiza a few years ago, Ines Schramm has focused increasingly on artistic photography and currently has a book about the Island in progress, from a photographic perspective. n

acida y criada en Münster, durante sus estudios de fotografía con el conocido fotógrafo industrial Hans Eick, Ines Schramm decidió pasar un tiempo en Ibiza a principios de los años 80. Tras su regreso a Alemania comienza para ella una carrera comercial dilatada y exitosa en revistas y publicidad, con estudios primero en Hamburgo y posteriormente en Munich. La revista ZEIT, WIENER, el SÜDDEUTSCHE MAGAZIN, etc. fueron etapas que la marcaron. Desde su regreso a Ibiza hace unos años, puede prestar una mayor atención a la fotografía artística. En la actualidad, Ines Schramm trabaja en un proyecto de libro sobre la isla, al que va a prestar su punto de vista fotográfico. n

n Münster geboren und aufgewachsen, entschloss sich Ines Schramm während ihrer Ausbildung zur Fotografin bei dem bekannten Industriefotografen Hans Eick, zu Anfang der 80er Jahre einige Zeit in Ibiza zu verbringen.

Nach ihrer Rückkehr nach Deutschland begann für sie eine lange kommerziell erfolgreiche Karriere bei Magazinen und in der Werbung mit ihren Studios zunächst in Hamburg und später in München. Das ZEIT-Magazin, WIENER, das SÜDDEUTSCHE MAGAZIN etc. waren Stationen, die sie geprägt haben. Seit ihrer Rückkehr nach Ibiza vor einigen Jahren, kann sie Ihren Fokus stärker auf die künstlerische Fotografie richten.

Gegenwärtig arbeitet Ines Schramm an einem Buchprojekt über die Insel, in das ihre fotografische Sichtweise einfliessen. n

he 40th edition of Pasarela Moda Adlib has just been held. From the Latin Ad libitum (free will, with freedom), this concept is already linked to the name of Ibiza for life. And to one colour: white. And to a style: that of the payesas (farmers’ wives) of the Pitiusas Islands.

Really, because even though its creator was a foreign princess, it was the common people of the islands who used to wear the cotton and lace edging that made up part of the clothing that later on, in the 1970s, the first hippies would make their own. So in fact they were the true inspiration and influence for the present fashion known internationally. What was an underskirt yesterday is a skirt or dress today.

Ibiza was their fashion parade whether it meant the church on Sundays or in the field every day. There are not many of them left today. Fewer and fewer…

They are the faces of the slower-paced Ibiza.

They are eyes that have seen the start of three centuries. They are smiles that are amazed at current fashions. They are the last farmers’ wives, the last ones in a long tradition. They represent a culture and an era that they have never wanted to deny. Some of them gave up their classical clothes to dress as “ladies”, as it was said at the time. Others never gave up.

Full skirts, long braids, headscarves such as the “gambuix” or alpargatas (espadrilles) made of spartum grass are some of the typical features found in the clothes worn by farmers’ wives. The garments that give form to and cover their figures are the simple faldellí

e acaba de celebrar la 40 edición de la Pasarela Moda Adlib. Del latín Ad libitum (libre albredío, con libertad), este concepto ya va de por vida ligado al nombre de Ibiza. Y a un color, el blanco. Y a un estilo: el de las payesas pitiusas. Pues sí, porque aunque la impulsora fuera una princesa extranjera, eran las plebeyas isleñas las que lucían el algodón, los encajes y las puntillas que formaban parte del vestuario que más adelante, en los años ’70, harían suyo los primeros hippies.

Fueron, pues, la verdadera inspiración e influencia de la actual moda conocida internacionalmente. Lo que ayer era un “rifajo” o un “faldellí” hoy es una falda o un vestido. En la iglesia los domingos o en el campo a diario, Ibiza era su pasarela. Hoy quedan pocas.

Cada vez menos…

Son las caras de la Ibiza más pausada. Son ojos que han visto el inicio de tres siglos. Son sonrisas que se quedan boquiabiertas con las modas actuales. Son las últimas payesas. Las últimas de una larga tradición. Representan una cultura y una época de la que nunca han querido renegar. Algunas, abandonaron la vestimenta clásica para pasar a vestirse “de señora”, como se decía en la época. Otras, nunca abandonaron.

Faldas al vuelo, largas trenzas, pañuelos como el „gambuix” o alpargatas de esparto son algunas de las características de la vestimenta de la mujer payesa. Las piezas que dan forma y visten su figura son la camisa, un faldellí (enagua) sencillo superpuesto a

Auch wenn die Impulsgeberin eine ausländische Prinzessin war, so wurden Baumwolle, Spitzen und Bordüren von den Inselbewohnerinnen schon immer getragen. Sie gehörten zur damaligen Kleidung und wurden später in den 70er Jahren von den ersten Hippies übernommen. Daher kamen der eigentliche Einfluss und die Inspiration für die gegenwärtige, international bekannte Mode. Was früher ein “Rifajo” oder ein “Faldellí” war, ist heute ein Rock (falda) oder ein Kleid (vestido). Sonntags in der Kirche oder täglich auf dem Feld, Ibiza war ihr Laufsteg. Heute gibt es nur noch wenige. Und es werden immer weniger ...

Ihre Gesichter gehören zu dem gemächlicheren Ibiza. Ihre Augen haben drei Jahrhunderte kommen sehen. Ihr Lächeln erstarrt angesichts der aktuellen Mode. Sie sind die letzten Bäuerinnen. Die Letzten einer langen Tradition. Sie vertreten eine Kultur und Epoche, die sie nie aufgeben wollten. Einige legten die klassische Kleidung ab, um sich wie eine “Señora” zu kleiden, wie man damals sagte. Andere blieben ihr stets treu.

Weite Röcke, lange Zöpfe, Tücher wie das “Gambuix” oder Leinenschuhe aus Espartogras sind charakteristisch für die Kleidung der

(petticoat) worn over so many other ones like it both in the winter and summer, the gipó, the dress with many pleats, the shawl and the headscarf. Nor should we forget the apron. In the hair, the braid, and on the feet a good pair of espardenyes (espadrilles) with a sole made of tar. Then just as now, each woman had her secrets. The butifarra was one of the best kept tricks (a sort of corset to gather skirts up). The farmers’ wives knitted their own dresses whether it was a work dress or a formal dress.

The braid was always one of the symbols of beauty. If you were going to church it was an “honest” colour whereas when it came to daily activities the braid could be in a more festive colour such as pink. When it came to working they used to wear a hat to harvest almonds but not for cutting the hay. This was for purely practical and logical reasons: the first activity is carried out standing up straight, the second while bent over double meaning that the hat would fall off onto the ground. The farmer’s wife worked, looked after the family and took care of the domestic economy. In actual fact, she was responsible for many different things, since we are talking about a matriarchal society… perhaps that was why the farmer’s wife was always sure of herself and never lost her composure. It is an impression that little by little is becoming a distant recollection in our memory.

En el pelo, una trenza, y a los pies unas buenas espardenyes (alpargatas) con suela de alquitrán. Entonces, como en la actualidad, cada mujer tenía sus secretos. La butifarra era uno de los trucos mejor guardados. (una especie de corsé para abullonar las faldas) La mujer payesa se cosía sus propios vestidos, ya fuera el vestido de trabajo o el de festejo.

La trenza siempre fue uno de los símbolos de belleza. Para ir a la iglesia era de color azul, un color “honest”, mientras que para las actividades profanas el lazo podía ser de colores más festivos, como el rosa. A la hora de trabajar el sombrero se usaba para la recolección de almendras, pero no para segar, por una cuestión puramente práctica y lógica: la primera actividad se hacía erguida, en la segunda al agacharse el sombrero caía al suelo.

La mujer payesa trabajaba, cuidaba de la familia, manejaba la economía familiar. Era, en definitiva, responsable de muchos asuntos, tratándose como se trataba de una sociedad matriarcal… quizás por ello, la mujer payesa siempre fue presumida y nunca perdía su estampa. Una estampa que poco a poco va quedando como un recuerdo difuso en nuestra memoria.

Die Bäuerin nähte sich ihre eigenen Kleider, egal ob Arbeitskleidung oder Festgewand.

Der Zopf war schon immer ein Symbol für Schönheit. Für die Kirche wurde die Farbe Blau, eine “ehrliche” Farbe gewählt, während die Schleifen bei weltlichen Tätigkeiten festlichere Farben wie Rosa haben konnten. Was die Arbeit betrifft, so wurde bei der Mandelernte ein Hut benutzt, aber nicht beim Mähen und zwar aus praktischen und logischen Gründen: erstere Tätigkeit wurde aufrecht ausgeübt, bei der zweiten würde der Hut beim Bücken zu Boden fallen. Die Bauersfrau arbeitete, kümmerte sich um die Familie und führte den privaten Haushalt. Sie war definitiv für Vieles verantwortlich, da es sich um eine matriarchalische Gesellschaft handelte. Vielleicht war eine Bäuerin daher schon immer eitel und vernachlässigte nie ihr Aussehen. Ein Aussehen, das in unserer Erinnerung nach und nach verblasst.

rancisca Ferrer, or Francisca de Cas Saliner, 88 years old and whose health, appearance and memory inspire envy has not told us what the secret is…although after spending a morning with her we believe that the good sense of humour she exhibits has got a great deal to do with it.

Francisca is one of the few Ibizan women that still dresses traditionally because she never wanted to dress up as a “lady”. Perhaps out of modesty since with her long dresses, shawl and a headscarf on her head she does not let you see much of her skin. Or perhaps it’s due to aesthetics because if there is one thing that characterises these women it is nothing other than their fine skin, a symbol of beauty.

She is highly aware that she has become the focal point of tourists’ cameras. “In the past I used to speed up to avoid them. Now I know they walk faster than I do”, she states resignedly.

She has a definite opinion about fashion and beauty: everything natural, no adornments or artifices. Perhaps that is why she never wanted to wear the butifarra beneath her skirts to gather them up and give her outfit a more “proud” appearance.

About Adlib fashion, a name she does not know, she says with a smile that although the underskirts that she wears beneath (the faldellins), have now been turned into simple skirts, both before and nowadays “we all walked with our legs down, right?” demonstrating once again one of the most well established Ibizan attitudes: that of laissez-faire, live and let live.

Francisca es una de las escasas mujeres ibicencas que todavía visten de payesa, ya que nunca quiso pasarse al traje de “señora”. Tal vez por pudor ya que con sus largas faldas, mantón y pañuelo a la cabeza poca piel se permite enseñar. O tal vez por estética, ya que si algo caracteriza a estas mujeres es precisamente la claridad de su piel, símbolo de belleza.

Es muy consciente de que se ha convertido en objeto de deseo de las cámaras fotográficas de los turistas. “Antes aceleraba el paso para evitarlos, ahora ya sé que corren más que yo”, asegura resignada.

Sobre moda y belleza tiene su opinión firme: todo natural, nada de aderezos ni artificios. Tal vez por ello, nunca quiso usar la butifarra bajo las faldas para abullonarlas y darle un aspecto más “ufanós” al conjunto.

Sobre la moda Adlib, nombre que desconoce, afirma sonriente que aunque las faldas que ella lleva por debajo (los faldellins), ahora se hayan convertido en las faldas sin más, tanto antes como ahora “todas caminamos con las piernas para abajo, o no?”. Demostrando una vez más una de las más firmes actitudes ibicencas, la del laissez-faire sin molestarse unos a otros.

Nunca tuvo oportunidad de aprender a leer y escribir, pero sí a bordar su nombre en su gipó.

En definitiva, Francisca considera que la vejez es un estado tan “bonito como triste”. Y ella, lo luce con orgullo. n

Sie ist sich sehr bewusst, dass sie zum Wunschobjekt für Touristenkameras geworden ist. “Früher ging ich schneller, um ihnen auszuweichen, heute weiß ich aber, dass sie schneller sind als ich”, stellt sie resigniert fest. Über Mode und Schönheit hat sie ihre feste Meinung: alles muss natürlich sein, nicht künstlich oder unecht. Vielleicht wollte sie auch deshalb nie eine “Butifarra” unter den Röcken haben, um diese aufzuplustern und dem Ganzen ein “stolzeres” Aussehen zu verleihen. Über die Moda Adlib, die sie vom Namen her nicht kennt, äußert sie lächelnd, dass ihre Unterröcke (die “Faldellíns) zwar heute wie normale Röcke getragen werden, doch “gehen wir nicht früher wie heute alle mit den Beinen nach unten?” Damit zeigt sie einmal mehr die unbeirrbare, ibizenkische Einstellung des Laissez-faire, dass man den anderen gewähren lässt, ohne sich gestört zu fühlen.

Obwohl sie nie die Gelegenheit hatte Lesen und Schreiben zu lernen, kann sie ihren Namen auf ihr Wams sticken. Francisca betrachtet das Alter definitiv als einen “schönen, aber auch traurigen” Zustand. Und sie selbst ist stolz darauf. n

Ha cambiado personalmente y necesitaba evolucionar profesionalmente, asegura. Cuando ha conseguido hacer lo que ha querido y no lo que se esperaba de él, el proceso creativo, dice, ha recuperado mucho sentido.

Pow shop, the collection… When the summer finished I went to Madrid to work on the new collection. I was expected to produce magic but for a time I had nothing left up my sleeve. Harder. The colours are white, black, denim blue and tile. I used more colour before, was more idealistic.

Es imposible crear y estar al margen de lo que está pasando. Trabajo como me siento, aunque realmente pienso que es ahora cuando hay que reaccionar con más creatividad y convicción. Mi crítica en todo caso ha sido ilusionarme más que nunca y trabajar más que nunca.

Mit weniger Elementen eine größere Wirkung zu erreichen, nüchterner vorzugehen und die Botschaft in den Mittelpunkt zu stellen. Meine Linie ist jetzt etwas härter und ich benütze hauptsächlich die Farben Weiß, Schwarz, Jeansblau und Ziegel. Vorher war alles viel bunter.

ino Sagliocco, one of the main producers on the international music circuit is the current chairman of the Spanish division of the American multinational LIVE NATION. Diese von Sagliocco erwähnte erste Begegnung mit dem Fernsehen und einer Einschaltquote von 500 Millionen hatte ihren Ursprung im internationalen Popfestival Ibiza '92, das in der Diskothek Ku gefeiert wurde. Zusammen mit dem Besitzer des Ku, seinem Freund Gori, veranstaltete er dort Konzerte in der Größenordnung von Talk Talk, James Brown oder Spandau Ballet.

WIE ERINNERT SICH SAGLIOCCO HEUTE AN DIESE ZEIT? SOLLTE ETWAS VON DIESEM DAMALIGEN SPIRIT ZURÜCKGEWONNEN WERDEN?

Ibiza was the island where everything came together and was mixed. The good vibes you gave off were more important than who you were. Before that Ibiza was cosmopolitan but cool and relaxed. Nowadays everything has become adulterated. I left the program ‘Ibiza 92’ because Ku closed and there wasn’t any point in carrying on even as a show of loyalty to my companions there. After that I decided to hold an annual party in Ibiza (which is attended by international celebrities from the world of music, cinema, fashion, art…) both in homage to my mother, Doña. Carmela, and to recover the spirit of that time: that of an island where nobody was different and where nobody wore a double or triple VIP wristband. I maintain that spirit up until today even though it is very difficult. The discos and the world of nightlife have turned into a huge industry, into a city of labyrinths with VIP wristbands in 1000 colours and grades. You have got to relax all of this a bit. This is an island that has always been hospitable and open where you feel it and experience it but in a cool way.

ISN’T THE IBIZA 123 ROCKTRONIC FESTIVAL GOING TO HAVE A VIP AREA?

I hope that the spirit of the festival will be one of celebration. That does not mean that there is not going to be a VIP area, but that it will not be too much in your face. What does VIP mean? Being crammed into a room where you cannot move around or paying to have more space and to be more comfortable? What I have seen is that the VIP areas in Ibiza are

Más adelante decidí celebrar una fiesta anual en Ibiza (a la que acuden celebridades internacionales de la música, el cine, la moda, el arte, …) como homenaje a mi madre, Dña. Carmela, pero también para recuperar el espíritu de antaño, el de una isla donde nadie era diferente y donde no había doble o triple pulsera VIP. Mantengo este espíritu hasta hoy día, aunque es muy difícil. Las discotecas y el mundo de la noche se han convertido en una gran industria, en una ciudad de laberintos con pulseras VIP de mil colores y niveles. Hay que relajar un poquito todo esto.

Es una isla que siempre ha sido hospitalaria y abierta, para sentirla y vivirla, pero cool.” ¿EL FESTIVAL IBIZA 123 ROCKTRONIC NO VA A CONTAR CON ZONA VIP?

El espíritu del festival espero que sea de celebración. Eso no quiere decir que no vaya a haber zona VIP, pero que no sea con agresividad. ¿qué quiere decir vip? ¿estar agobiado en una sala que no te puedes mover o pagar para tener más espacio y estar mas cómodo? Lo que yo he visto es que los vip de Ibiza, de cómodo poquísimo!!. No se trata de minimizar el espacio para sacarle máximo rendimiento.

traf und sich alles miteinander vermischte. Es war nicht wichtig, wer du warst, sondern welche Geschichte du im Gepäck hattest. Früher war Ibiza kosmopolitisch, aber dennoch cool und entspannt. Heute ist das anders. Ich hörte mit der Sendung 'Ibiza 92' auf, weil der KuClub schloss und es keinen Sinn mehr hatte, weiterzumachen, auch nicht aus Loyalität zu meinen Kameraden dort. Später entschloss ich mich zu Ehren meiner Mutter, Doña Carmela, eine jährliche Party auf Ibiza zu feiern (zu der internationale Musikgrößen, Kinostars sowie Berühmtheiten aus der Mode- und Kunstszene kamen). Außerdem wollte ich den einstigen Spirit wiederbeleben, den Spirit einer Insel, auf der niemand anders war und wo es keine doppelten oder dreifachen VIP-Bändchen gab. Ich versuche diesen Spirit bis heute aufrechtzuerhalten, obwohl das sehr schwierig ist. Diskotheken und Nachtleben haben sich in eine Großindustrie verwandelt, in eine Labyrinthstadt mit VIP-Armbändern in Tausenden von Farben und Kategorien. Das Ganze muss sich wieder etwas entspannen. Die Insel war schon immer gastfreundlich und offen, um sie zu spüren und zu erleben, aber sie war trotzdem cool.

WIRD DAS FESTIVAL IBIZA 123 ROCKTRONIC NICHT MIT EINER VIP-ZONE AUSGESTATTET SEIN?

Ich hoffe, dass bei dem Festival das Feiern im Mittelpunkt stehen wird. Das bedeutet nicht, dass es keine VIP-Zone geben wird, sondern diesbezüglich keine Aggressivität. Was bedeu-

tet VIP? In einem Raum so zusammengedrängt zu sein, dass man sich nicht bewegen kann oder dafür zu bezahlen, dass man mehr Platz und Bequemlichkeit hat? Ich habe gesehen, dass es die VIPs in Ibiza nicht besonders bequem haben. Es geht doch nicht darum, den Platz zu minimieren, um so viel Rendite wie möglich herauszuholen.

De hecho, Elton John no viene a Ibiza a hacer un experimento, sino que ha hecho un LP completo de Rocktronic y viene a Ibiza a presentarlo en primicia unto al dj Pnau. Los 1000m2 que ocupa la finca donde se emplazará el club están ubicados en el Pla de Sant Joan, un antiguo huerto de la emblemática zona del puerto de Ciutadella. El club quedará totalmente integrado en el espacio que lo rodea puesto que no se modifica la estética de la construcción externa de la finca, sino que ésta se ha restaurado respetando la ambientación antigua de la torre, los arcos y los espacios abovedados. También se conservarán los jardines y los canales de regadío originales. Aquí radica el encanto del proyecto: en la combinación de la estética rústica menorquina exterior con una sala minimalista pero mediterránea que tendrá mucho en común con las conocidas salas El Salón y la Terraza de Space Ibiza. Un ejemplo más del respeto por la estética local es el uso de la pared seca menorquina y las sillas típicas de Menorca llamadas “Cocarrossas”. Das 1000 m² große Anwesen, in dem der Club entsteht, befindet sich in Pla de Sant Joan, einem ehemaligen Gemüsegarten in der Vorzeigegegend am Hafen von Ciutadella. Der Club wird nach der Fertigstellung vollständig in seine Umgebung integriert sein, da die Ästhetik der Außenkonstruktion des Anwesens nicht verändert wird, sondern durch Restaurierung an das ehemalige Aussehen des Turms, der Bögen und Gewölbe angepasst wird. Die Gärten und Originalbewässerungskanäle bleiben ebenfalls erhalten. Der Reiz des Projekts liegt in der Kombination einer rustikalen menorquinischen Ästhetik im Außenbereich mit einem minimalistischen, aber mediterranen Innenraum, der vieles mit den bekannten Räumen im Space Ibiza, dem Salon und der Terraza, gemeinsam hat. When you’re dealing with someone who is as much of an icon as Josh Wink, it is not easy to sum up their career in just a few words. This fourth-generation family-run company with headquarters in Venice and New York has restaurants and bars in many cities around the world: Hong Kong, Los Angeles, Miami, Porto Cervo, Abu Dhabi, Istanbul and Monte Carlo.

For a long time, Cipriani fans had been hoping that the family’s unique hospitality would finally come to the glamorous setting of Ibiza, because Cipriani’s is not simply a restaurant, it is an experience, an attitude towards life and the very name epitomises sheer style, refined living plus exquisite cuisine.

WHAT LED YOU TO OPEN A CIPRIANI DOWNTOWN IN IBIZA? WAS IT THE ISLAND’S FRENETIC MAGIC, OR RATHER THE MAGICAL ATTRACTION OF BUSINESS EXPANSION?

Both. Ibiza is such a beautiful place, a wonderful island. The more time you spend here, the more you begin to understand the Island. I first visited Ibiza in 1984 and have returned almost every summer since. I have spent a great deal of time here these last two years, including during the winter. What’s so special about what is happening now on Ibiza is that many people are rediscovering it and the clientele has become much more international, exactly the kind of guests that our restaurants attract worldwide, and that was one of the reasons for opening here.

Ambas cosas. Ibiza es un lugar hermoso, una isla maravillosa. Cuanto más tiempo está uno aquí, mejor comprende la isla. Ya estuve aquí por primera vez en 1984 y casi cada verano desde entonces. En los últimos dos años he pasado aquí mucho más tiempo, también en invierno. Lo especial que ocurre hoy en Ibiza es que es descubierta por mucha gente. En la actualidad es un público mucho más internacional, justo la clientela que nos caracteriza a nosotros. Ese es uno de los motivos por los que hemos venido aquí.

tzaró’s management says that it has not simply taken over a local beach but has developed a new beach concept, called ‘Atzaró Beach’, the mainstays of which are: the beach, a kiosk and a restaurant. Just as the Atzaró Agroturismo hotel has become well-known and successful in its own right, the intention is now to do the same for the new offshoot on the beach.

The Atzaró Beach Chiringuito has a huge range to suit everyone and yet remains very affordable: fresh fruit juices, milk shakes and mojitos, a breakfast menu, sandwiches, burgers, pizza and pasta, salads and freshly barbecued fish and meat.

The more refined Atzaró Beach restaurant with fantastic views of the Island’s northeast coast is a little more upmarket. Here, diners can find fine Mediterranean cuisine with a subtle Asian influence. Friendly, attentive service is a matter of course. There’s an excellent range of wine and champagne and prices are surprisingly inexpensive for a beach restaurant.

To complete the concept, sun-beds are available on the beach plus, of course, a beach service for drinks and snacks.

So it is now possible to find an upmarket beach concept on the northeast of the Island just like in the south, but happily at a more affordable price. n

Y dicho concepto se llama Atzaró Beach. Todo se apoya en tres pilares: la playa, un chiringuito y un restaurante. En vista de que el Hotel Agroturismo Atzaró se ha convertido ya en un exitoso modelo bien conocido por todos, se desea hacer lo mismo con la nueva sucursal playera.

El Atzaró Beach Chiringuito presenta una oferta asequible para todos los bolsillos que incluye zumos de fruta recién exprimida, batidos y mojitos, una carta de desayuno, sándwiches, hamburguesas, pizza y pasta, ensaladas y una barbacoa con pescado fresco y carne.

Algo más arriba se encuentra el restaurante Atzaró Beach, un poco más refinado y con unas fantásticas vistas a la costa noreste de la isla.

De este modo, ahora también existe en el noreste de la isla una exclusiva oferta playera similar a la del sur y, por fortuna, a un precio más humano. n

Abgerundet wird das Konzept mit dem Angebot am Strand, dort stehen Liegen zur Verfügung und es gibt natürlich eine Beach-Service für Snacks und Getränke.

Damit findet man nun auch im Nordosten der Insel ein gehobenes Beach-Angebot ähnlich wie im Süden – erfreulicherweise zu einem humaneren Preisniveau. n

lthough it may not be the only one it’s probably the most authentic. From the concept to the chef, Sushiya Aoyama develops its savoire-faire of catering Japanesestyle in Ibiza from start to finish.

It’s not a typical restaurant. Hideki Aoyama’s brand-new business is the sushibar, which gets its name from ‘sushiya’; tapas-bar to share, ‘izakaya’ as they call it, and the oh-so western after-work, or ‘tachinomiya’ in Japanese, which turns out to mean informal eating at the bar and standing up. All of it washed down with a superb sake and the option of a good white or red wine if you’re not a fan of the fermented rice drink or don’t feel like it.

Hinzu kommt das modern gewordene, westliche Afterwork-Essen, auf Japanisch “Tachinomiya” genannt, das von einem formlosen Essen im Stehen an der Theke herrührt. Zum Trinken wird ein exzellenter Sake gereicht, aber auch ein guter Weiß- oder Rotwein steht für diejenigen zur Auswahl, die das aus vergorenem Reis hergestellte Getränk nicht mögen oder keine Lust darauf haben.

hen breakfasting at El Chiringuito, Es Cavallet, you do not have to come dressed as party girl Holly Golightly in Breakfast at Tiffany’s, looking a million dollars in an elegant evening dress but you can if you like.

Well, you might just be returning from a long night spent partying, and this beach gets the morning sun, bathing the sea and the passing ships in a soft light. Formentera across the water glistens in the early morn, and a tasty, healthy breakfast is just what’s needed to set you up for the day.

El Chiringuito proprietors Jonathan Thorogood and wife Olivia told us about their latest development down on the beach: “Olivia and I really enjoy having breakfast out somewhere, but we have yet to find anywhere that totally suits us, and so we set about creating our own special breakfast spot here on this beautiful beach where you can watch the sunrise. We have worked with our new chef Jérome to devise a breakfast menu that is both healthy and delicious, whilst not forgetting the tastes of different nationalities, and so there are specialities to cater for Spaniards, French and English. Juices that arrive freshly squeezed at your table and smoothies form the basis of a good breakfast, but we also have a large range of speciality coffees and teas, fruit salads with yoghurt, mueslis and homemade pancakes with blueberries and maple syrup. Our chef is French, so home-made patisserie is a definite must, and the croissants and delicious pastries are all fresh from our oven. The farmhouse bread is simply delicious, whether with tomatoes and olive oil or with Manchego. It’s very good too with the sweet Italian ham, you should try it some time. Or maybe you prefer the classic ‘ham and eggs’ or Eggs Benedict, poached eggs on toast with freshly made Hollandaise sauce. So as you see, we can certainly offer something for everyone. And finally, we must not forget to mention, we have an amazing selection of ice creams. n

ara desayunar en El Chiringuito de Es Cavallet, uno no debe presentarse ataviado con un elegante vestido de noche, como hacía la partygirl Holly Golightly en «Desayuno con diamantes», pero no pasa nada si lo hace. Esto es algo que puede ocurrir, por ejemplo, si se viene de pasar toda la noche de fiesta. En esta playa, el sol que sale por la mañana baña de una suave luz el mar y los barcos que lo surcan y la vecina Formentera. Y tras un desayuno saludable y delicioso se recuperan todos los ánimos.

Jonathan Thorogood, propietario de El Chiringuito junto con su mujer Olivia, nos explica por qué han ampliado su concepto playero: «A Olivia y a mí nos gusta ir a desayunar casi siempre a algún sitio, pero todavía no hemos encontrado ninguno en el que nos hayamos sentido satisfechos al cien por cien. Por tanto, hemos creado nuestro propio lugar para desayunar en un emplazamiento desde el que se puede contemplar la salida del sol, aquí en esta maravillosa playa. Junto con nuestro nuevo jefe de cocina Jérome, hemos creado un menú de desayuno que es a la vez sano y delicioso. Además, hemos pensado en todas las nacionalidades. Así, existen especialidades típicas españolas, francesas e inglesas. La base de un buen desayuno son los zumos, que aquí llevamos a la mesa recién exprimidos, o los batidos de fruta. Poseemos una gran selección de cafés y tés especiales, sales de frutas con yogur, muesli y tortitas caseras con arándanos o sirope de arce. Dado que nuestro jefe de cocina es francés, también apuesta por la patisserie casera. Así, también salen de nuestro horno croissants y pastas recién hechos. También ofrecemos un delicioso pan de pueblo, que se puede acompañar de tomate y aceite de oliva o de queso manchego. Algo que todo el mundo debería probar es nuestro jamón italiano dulce.

Naturalmente, también contamos con una gran selección de especialidades de huevo.

Junto con los clásicos huevos con jamón, ofrecemos también huevos Benedicte o una tosta de huevos escalfados con una cucharada de salsa holandesa recién preparada, por solo nombrar algunas. De este modo, seguro que hay para todos los gustos. n

um Frühstück im El Chiringuito Es Cavallet muss man nicht in eleganter Abendrobe erscheinen wie das Partygirl Holly Golightly in Frühstück bei Tiffany – kann man aber auch.

Zum Beispiel wenn man von einer langen Partynacht kommt. Denn an diesem Strand geht morgens die Sonne auf und taucht das Meer mit den vorbeiziehenden Schiffen und das gegenüberliegende Formentera in ein mildes Licht. Und nach einem gesunden und leckeren Frühstück kehren die Lebensgeister zurück.

Jonathan Thorogood, zusammen mit seiner Frau Olivia Inhaber des El Chiringuito, erklärte uns, warum sie ihr Beach-Konzept erweitert haben: „Olivia und ich gehen gerne und fast immer irgendwohin zum Frühstücken. Aber wir haben noch nichts gefunden, wo wir uns so hundertprozentig wohl fühlten. Deswegen haben wir uns jetzt unseren eigen Frühstücksplatz geschaffen an einem Ort, wo man den Sonnenaufgang beobachten kann, hier an diesem wunderschönen Strand. Zusammen mit unserem neuen Küchenchef Jérome haben wir ein Frühstücksmenü kreiert, das beides ist: gesund und lecker. Wir haben dabei auch an alle Nationalitäten gedacht. Da gibt es landestypische Spezialitäten für die Spanier, die Franzosen oder die Engländer. Basis eines guten Frühstücks sind Säfte, die hier gerade frisch gepresst auf den Tisch kommen oder Smoothies.

Wir haben eine große Auswahl spezieller Kaffees und Tees, Obstsalte mit Joghurt, Müslis und hausgemachte Pfannkuchen mit Blaubeeren oder Ahornsirup. Da unser Küchenchef Franzose ist, bestand er auch auf hausgemachter Patisserie. Also kommen auch die Croissants und leckeres Gebäck frisch aus unserem Ofen. Sehr lecker ist auch unser Bauernbrot, wahlweise mit Tomate und Olivenöl oder Manchego. Unbedingt sollte man es auch einmal mit unserem süßem italienischen Schinken probieren. Natürlich gibt es auch eine exquisite Auswahl an Eispezialitäten. Neben dem Klassiker Ham & Eggs beispielsweise Eggs Benedicte, pochierte Eier auf Toast mit einem Klacks frisch zubereiteter Sauce Hollandaise – um nur eines zu nennen. So gibt es sicherlich für jeden Geschmack etwas. n

ew staff at Cafe Sydney brings fresh flair to the menu. Now at Cafe Sydney, chef Hernan del Diestro has worked at such prestigious restaurants as Amalur and Lio and just loves Asian cuisine. His style is a fusion of Mediterranean and Asian cuisine – fresh and healthy.

He is aided by sushi expert Pedro Rodriguez, who learned his craft during a six-year stay in Tokyo. Pedro subsequently worked at Atzaró and Bambuddha but has been in charge of Cafe Sydney’s extremely popular Asian buffet for some time now.

Recibe el apoyo de Pedro Rodríguez, que se familiarizó con el arte de preparar sushi durante una estancia de seis años en Tokio. Más adelante, trabajó en Atzaró y Bambuddha. Últimamente llevaba ya algún tiempo preparando el apreciado buffet asiático del Café Sidney.

ambién el restaurante marc’s, entre Jesús y Can Furnet, ha renovado su concepto de menú y ha sabido adaptarse a la evolución de los gustos de sus clientes, ya que en este local con el encanto de una pequeña y elegante fonda rural no todo el mundo desea siempre comer a lo grande. De hecho, cada vez sucede más a menudo que la gente pasa simplemente para tomar algo y acompaña la consumición con alguna comida no excesivamente copiosa.

Por tanto, se han incluido ahora en el menú más tapas y nuevos entrantes exquisitos. hen Miguel Costa set up Kumharas it wasn’t because he expected it to do well economically, he states, but because he wanted to create a place where he could be comfortable and happy on returning from his journeys abroad. “I came back from India one February and until April I was picking up everything that could be reused from the garbage and painting it fluorescent. Keep in mind, it was a handful of wooden pallets… that’s how we started and look now!” Now, 15 years later, we find ourselves in a place that has already become no less than a reference point in Ibiza. Costa is an Ibicencan in his thirties, a traveller and admirer of the island, cosmopolitan and local, family member and businessman who has known how to combine all these ingredients in a perfect balance. He is a restless character: the venues he owns are oriented towards the population of the island are not just the hordes of tourists in the summer. And that is what he is also aiming to do in his new venture with Mumak, the Asian fusion restaurant that – together with his partner Mo – he has been running for the last year and that is open all year.

He does not consider himself an atypical businessman although we could define Kumharas and Mumak offer as two oases. The first in Cala de Bou and the second in Platja d’en Bossa, both places stay on the periphery of the discos’ pre-parties to create their own environment at the very heart of club culture. “I find it difficult to define what Kumharas is, but I believe that it is genuine, many people tell me that it reminds them of Ibiza as it was 30 years

uando Miguel Costa montó el Kumharas sus expectativas no eran económicas, asegura, sino que quería crear un espacio donde encontrarse cómodo y feliz a la vuelta de sus viajes. “Volví de India un febrero y hasta abril estuve recogiendo de las basuras todo lo reutilizable y lo pinté de fluorescente. Acuérdate, eran cuatro palets… así empezamos, y mira ahora!!!” Ahora, 15 años más tarde nos encontramos con un espacio que ya es un referente en Ibiza. Costa es un ibicenco treintañero, viajero y enamorado de su isla, cosmopolita y payés, familiar y empresario, que ha sabido maridar con admirable equilibrio todos estos ingredientes. Le caracteriza una inquietud: sus locales están enfocados a la población isleña, no sólo a las hordas veraniegas de turistas. Y así lo pretende también en su nueva andadura con Mumak, el restaurante de fusión asiática que desde hace un año gestiona junto a su socio Mo, y que abre durante todo el año.

No se considera un empresario atípico, aunque podríamos definir la oferta lúdica del Kumharas y del Mumak como dos oasis. El primero en Cala de Bou y el segundo en Platja d’en Bossa, ambos espacios se mantienen al margen de las preparties de las discotecas, para crear su propio ambiente en el epicentro de la cultura clubber. “Me resulta difícil definir lo que es el Kumharas, pero creo que es auténtico, mucha gente me asegura que le recuerda a la Ibiza de hace 30 años. La magia, el aire libre, la playa, el rollo hippy… refleja una de las Ibizas que coexisten en la isla”, asegura Miguel Costa.

ls Miguel Costa das Kumharas gründete stand wirtschaftlicher Erfolg nicht an erster Stelle. Er wollte nach der Rückkehr von einer seiner Reisen einfach nur einen Ort schaffen, an dem man sich wohlfühlen und glücklich sein konnte. "Ich kam in einem Februar aus Indien zurück und sammelte bis April alles aus dem Sperrmüll, was wiederverwendbar war und strich es in Neonfarben an. Stell Dir mal vor, mit vier Paletten haben wir angefangen und schau mal, wie es jetzt aussieht!“ Heute – 15 Jahre später – ist es eine der TopAdressen auf Ibiza. Costa ist ein Ibizenker in den Dreißigern, reiselustig und verliebt in seine Insel, ein Kosmopolit und Payes, ein Familienmensch und Unternehmer, der es schafft, all diese Eigenschaften in einem bewundernswerten Gleichgewicht zu halten. Er ist geprägt von einer inneren Unruhe: seine Lokale sind auf die Inselbewohner zugeschnitten und nicht auf die in Massen anreisender Sommertouristen. So hält er es auch mit seinem neuen Projekt, dem Mumak. Das Restaurant, das er seit einem Jahr zusammen mit seinem asiatischen Partner Mo betreibt, hat das ganze Jahr über geöffnet.

Obwohl weder das Kumharas noch das Mumak sehr kommerziell ausgerichtet sind hält er sich durchaus für einen Unternehmer.

Ersteres befindet sich in Cala de Bou und das zweite in Platja d'en Bossa, beide beteiligen sich nicht an den Prepartys der Diskotheken sondern schaffen sich ihre eigene Atmosphäre in diesen Epizentren der Clubkultur. "Es fällt mir schwer, das Kumharas zu definieren, aber

Mumak beach bar does not try to be an extension of Kumharas, although it does follow the recipe of authenticity. Nevertheless, Costa admits that, outside high season, it is difficult to get people on the island to go out. “It was a sore point because nobody could imagine how much we have put into it. Last winter in Mumak we organised concerts, culinary events, etc. and there is no way to get people to come out at night. At Christmas we decided that it wasn’t worthwhile to keep trying with the nights. But throw in the towel, never.”

Costa räumt allerdings ein, dass es schwierig ist, die Inselbewohner außerhalb der Hochsaison vom Sofa zu locken. "Das tut manchmal weh, denn niemand kann sich vorstellen, wie viel Herzblut wir hier reinstecken. Diesen Winter hatten wir im Mumak Konzerte und gastronomische Nächte organisiert. Aber scheinbar gab es nichts, was die Leute spät abends angezogen hätte. An Weihnachten haben wir daher beschlossen, dass es sich nicht lohnt, etwas für

what they offer during the day such as yoga sessions on the beach and activities for children. “In the end we realised that when it comes to going out people want good weather, sunshine and the open air. They don’t want to know about being indoors and it’s the same at night time”. This summer Mumak opens all day long with a fusion menu combining Asian and Mediterranean cuisine, curries and woks, with the dish of the day costing €12.50 and all of it to the strains of chill out music which does not try to outdo that of its neighbours (Ushuaïa, Bora Bora). “Actually, it is live ambient music that is a free accompaniment to the dinner, not a big concert”, points out Costa.

Das Mumak hat diesen Sommer den ganzen Tag über geöffnet und bietet eine gemischte asiatische, mediterrane Karte, Curry- und Wokgerichte sowie ein Tagesmenü für 12,50 Euro.

Das alles mit angenehmer Chillout-Musik, die dezenter ist als die der Nachbarn (Ushuaïa, Bora Bora). "Bei uns gibt es statt eigener Konzerte Livemusik von den Nachbarn als kostenlose Zugabe zum Abendessens", erklärt Costa grinsend.

Die Kumaras waren im hinduistischen Glauben Menschen, die göttliche Fähigkeiten hatten, auch wenn sie sich davon lossagten. Ein Mumak ist der imaginäre große Kriegselefant von Harad aus Tolkiens "Der Herr der Ringe".

Auf ibizenkisch bedeutet "anar de cumares" ein Haus zu besuchen, in dem jemand geboren wurde. In Nepal sind die Kumari die Reinkarnation der Göttin Taleju. n

he curiosity of these recognised Ibizan vintners has led to them extending the number of drinks they offer with their first incursion into sparkling drinks. In the house in Buscastell against a background of the landscape of Ibiza and the ecologically grown varieties of grapes a sampling and mixing of the new drinks was carried out.

Those who attended were able to discover that Can Rich Espumoso Blanco de Malvasía (it is the result of recovering the Ibizan variety of grape – known as Grec – based on their own grafts) concentrates an intense floral profile with Mediterranean fruit. It is a fresh, citric sparkling drink that combines with seafood, oysters, shrimps, grilled or oven-cooked fish... the best time to enjoy it, at midday.

Los asistentes pudieron descubrir que el Can Rich Espumoso Blanco de Malvasía (es el resultado de recuperar la cepa ibicenca –conocida como Grec– a base de injertos propios) y concentra un perfil floral intenso con las frutas mediterráneas. Un espumoso cítrico y fresco que marida con frutos del mar, ostras, gambas, pescados a la plancha o al horno... su mejor momento de degustación, el mediodía.

hre Ruhelosigkeit hat die berühmten ibizenkischen Kellermeister dazu geführt, ihr Weinangebot um Schaumweine zu erweitern. Im Weingut in Buscastell wurde eine Weinprobe mit Kombinationsvorschlägen für die neuen Weine aus komplett ökologischem Anbau durchgeführt.

Die Anwesenden konnten feststellen, dass der Can Rich Espumoso Blanco (Sekt Brut Nature) aus der Rebsorte Malvasía (Ergebnis der Wiedergewinnung des als Grec bekannten ibizenkischen Weinstocks auf Grundlage eigener Kreuzungen) durch die mediterranen Früchte einen intensiven blumigen Charakter aufweist. Ein frischer Sekt mit Zitrusaroma, der gut mit Meeresfrüchten, Austern, Krabben und gegrilltem oder gebratenem Fisch kombiniert werden kann. Die beste Zeit ihn zu kosten, ist die Mittagszeit.

It is a very young, expressive wine that recalls its fermentation. With a strong personality, like the playful Egyptian god Bes, it leaves an impact on the mouth due to its level of acidity, something that means it either wins big fans or detractors. It combines well with white meats such as duck. It is fermented in barrels with a touch of vanilla. Intense but light in the mouth, it’s a revolutionary wine. n

XICU LLUY he journalist, writer and researcher Xicu Lluy, was awarded posthumously in Ibiza the Onda Cero award for communication 2012. Lluy, who also actively worked on many different editions of Ibiza Style, received a heartfelt homage from the Can Ventosa auditorium. “Xicu would have been incredibly excited about this prize and to those of us who loved him, it is a consolation”. These were the words of his wife, Elena González, accompanied by the mother of Xicu, María Torres, who accepted the award. From Ibiza Style we join in the ovation and the commemoration and wish to thank our friend and companion Xicu for his work. n
