Omar Hileh, the owner of Brooklyn Craft Gourmet Burgers, in Shrewsbury, moved to the UK last year from New York City. Omar previously worked for a company in New York for 8 years, during his time at university and although the pay was good and he was well compensated for his hard work he realised he was never going to be happy until he fulfilled his dream of opening his own business.

After speaking with his brother in law, who lives in Craven Arms, he decided to move to the UK along with his wife and child, to pursue his ambitions. They discovered the lovely town of Shrewsbury and its reputation for being a town that loves good food. Omar spotted a void which he knew could be filled with a great American style burger and Brooklyn Craft was born. My partner and I decided to visit the River Thai in my home town of Shrewsbury, after rave reviews. The outside has an instant appeal to it, and it is ideally located in the centre of Shrewsbury, very close to the Theatre Severn and the local bus and train station. As we walked in we were warmly welcomed

by Tony and our waitress for the evening. The inside is wonderful, decorated and furnished in authentic style, in such a way you could almost imagine you were in Thailand. We were shown to our table which was by the window which offered fantastic views of the outside area and great views of the River Severn.

We were handed the drinks and food menus which offered a wide range of choices on both, making it even harder to decide what to choose, as all the dishes sounded wonderful. We placed our drinks orders; coke and lemonade served with ice, which did the trick nicely. Our helpful waitress gave us some recommendations for our starters and main course which helped us narrow down the options.

For starters I decided to go for POH PIA GAI; Chicken Spring Rolls and my partner decided to go for the GAI – Chicken Satay. The food arrived very quickly and was presented beautifully, plus the portion sizes were very generous. The

chicken satay starter was full of flavours; the chicken was cooked perfectly and had a tasty coating on it which made the flavours really pop, served with homemade peanut sauce, toast and vegetable relish. My chicken spring rolls turned out to be the perfect choice, fantastically crunchy but at the same time the inside was wonderfully moist. One thing it didn’t lack was flavour and it was clear to say that fresh ingredients were used throughout -Two fantastic starters!

For the main course my partner decided to go for the GAENG MASSAMAN GAE – MASSAMAN LAMB CURRY and I decided to try the GAENG KHIEW WAAN GAI – THAI GREEN CHICKEN CURRY. We both decided to have some rice to go with our main dishes, egg fried rice for me and sticky rice for Ashleigh.

When the food arrived the first nice touch was the hot plates that arrived before our main course, a fantastic idea. Once again the portions were very generous and nicely presented in a ceramic bowl which gave you the choice of how much you wanted to put on your plate. Ashleigh was really impressed with Lamb curry and how flavoursome it was, not overly spicy but still giving it plenty of taste, with potatoes mixed in the curry and the other ingredients it was a perfect dish. My Thai green curry defiantly had the wow factor, my previous experiences of Thai curry have been very different and this was a wonderful surprise. A nice kick to the dish but not spicy at all and it was bursting with flavour, and the texture was delightful. It went perfectly with the egg fried rice and I could see why this was one of their most popular dishes.

After all that food we were too full for a pudding but once again plenty of choices are on offer. River Thai has a warm and welcoming feel, but is still very authentic at the same time. The restaurant is open from Tuesday till Sunday offering both a lunch time service and evening menu. This will continue to be a big hit in the town and with the reasonable prices and the quality food you will not struggle to see why.

All in all a great evening to suit all needs from a family meal to a date night.

Harvester - Good times are made better with great food!

My colleague Andrew and I went along to Harvester Beaten Track in Shrewsbury on a busy Friday evening. This family friendly Harvester restaurant was completely refurbished back in April, when Manager, Terri and her husband took over the reins .

The large restaurant has been transformed into a light and comfortable eatery, with stylish features and exposed brick fireplaces. On offer you will find their famous grills, breakfast, lunch and dinner and of course a fabulous salad bar; which has great fresh food that is fun and tasty, along with a well-stocked bar and ample free parking. They even offer a take-away service and free Wi-Fi throughout.

Our server for the evening was Janice and she was just brilliant, settling us down at a comfy table and running through the menus with us, before taking our drinks orders. I had driven so decided the unlimited Pepsi (lime flavoured) was for me and Andrew decided to let his hair down, metaphorically speaking of course, and have a San Miguel Lager, after a hard week in the office it was just the ticket.

The new menu was launched at the beginning of October. It has some old

favourites available but some interesting new dishes also. The starters are ‘Tapas Style’, 1 for £4.50, 2 for £8.50, 3 for £12 or 4 for £15. We opted for Portobello Mushrooms; strips of Portobello mushroom in a salt and pepper beer

after the year Harvester opened, with half a rotisserie chicken and a juicy half rack of ribs glazed in BBQ sauce. I decided to try a new dish which had taken my fancy, Spicy Chicken Breast & King Prawns (£13.49); Ancho-chilli-seasoned chicken breast topped with garlic king prawns and served with sweet potato fries, grilled corn and Kapia pepper.

While we waited we helped ourselves to the unlimited salad bar, which had loads on offer; fresh salad, pickles, pastas and all the bacon bits, croutons and sauces you can imagine. These were great for whetting our appetite and keeping us going till the starters arrived, which wasn’t long at all. We both sampled the mushrooms, which literally burst with flavour when you bite into them, and the prawns were juicy and plump; oozing in garlic butter and the garlic bread was the perfect thing for mopping up afterwards – fantastic. batter and served with blue cheese dip and King Prawns; in Garlic butter with a slice of garlic bread. For our main dishes Andrew went with a classic dish; The Harvester ’83 Combo (£12.99) – named

were packed with meat and dripping in BBQ sauce; a heavenly combination. My chicken and prawns were simply delightful, the garlic had soaked into them making them extra tasty and the sweet potato fries were some of the best I have tried. The portion sizes are huge; I can say without doubt that you would never leave this Harvester feeling hungry.

That said we always manage a dessert!

Andrew opted for Lemon Tart (£4.59) which comes served with raspberries in sauce and fluffy ice cream while I went for the Berry Mess (£4.59) with summer pudding pieces, raspberries in sauce and crisp meringue. These delectable desserts are a real treat, Andrew said that his lemon tart was excellent, bursting with flavour and polished it off in no time. My dessert was HUGE, the crispy chunks of meringue and raspberries mixed with the cream giving it a real twist of flavours. I was completely stuffed and was defeated, which does not happen often!

Harvester Beaten Track offers great food at reasonable prices, the service is excellent. Janice made our visit especially enjoyable and is a real credit to them.

My colleague, Andrew and I took a leisurely drive over from Telford to The Station Grill, situated in the beautiful village of Llansantffraid, Powys, close to Oswestry and the Shropshire border.

Paul and Julie recently refurbished the bar and restaurant, creating a light and airy eating area which is the perfect place to relax, and added a lovely outside patio area, overlooking the stunning Powys countryside. The Station Grill is open 7 days a week, from 12 noon serving fresh, homemade dishes, Sunday roast, lighter Lunches and children’s dishes.

As we entered we were warmly welcomed by Julie and the team, we took a seat in the snug section of the front entrance and were presented with the new food menus, which had just been launched, and promptly after that the drinks menu which offered a varied choice, including some of the best locally brewed ales around. We were taken to our table shortly after that and what a wonderful surprise it turned out to be; the views were spectacular and the restaurant had a warm but sophisticated feel to it.

The menu had a wide variety of choices which clearly showed that local produce was at the heart of the menu, Julie was very helpful and offered some personal recommendations and we also got to speak the chef who offered some insight on where the locally produced food comes from. To start I decided to go for the homemade Bacon, Brie And Cranberry Tartlet and Andrew went for Belly Pork on top of a Black Pudding Crumb. My tartlet was fantastically presented and was bursting with flavour, the ingredients worked brilliantly together and made a fantastic dish. Andrew said his pork was very tasty and the crackling was sensational which was made even better with the mustard sauce that accompanied it.

For the main courses, Andrew decided he would try the Pan Fried Loin Of Lamb and I went for the Venison with Mustard Mash and Vegetables. Once again the presentation of the dishes was superb. Andrew thoroughly enjoyed his main course which came with sautéed potatoes and seasonal vegetables. My venison was perfectly cooked and full of flavour, which combined very well with the mustard mash and the vegetables, overall two fantastic dishes which wouldn't be out of place in a Michelin star restaurant.

After much discussion, Andrew and I decided we would look at the dessert menu even though we were feeling full. After experiencing the quality of the previous courses it was an easy decision to say yes to a dessert but with so much choice it was hard to choose just one! I went for the Raspberry Bakewell Tart and Andrew decided to go for the Chocolate And Orange Cheesecake, which he really fell in love with. The ingredients went really well together and it was full of flavour, the fresh produce clearly making all the difference. Mine was equally as good, soft and not to heavy, a pudding which is a family favourite but with a quality edge to it, with lots of flavours that finished the meal off perfectly.

Overall we had a great evening at The Station Grill. The restaurant is family friendly and caters for everyone, the food is truly wonderful and priced very sensibly and the quality is of the highest standard. Julie and all of the staff did a great job of making us feel very welcome and this combination, along with the warm welcoming atmosphere will ensure that The Station Grill will go from strength to strength.

Cross Guns Inn A Marston’s Local...

I took a ride over to Pant with my daughter-in-law Kayleigh, to visit Cross Guns Inn and try out the new menu that has recently been launched. Set in the lovely village of Pant, which is just a few miles outside of Oswestry, just off the main road the Cross Guns is a welcoming stop, not only for the locals but for people passing through on the main route to North Wales.

Gary and Charlotte Hanmer took over the reins at the Cross Guns in Pant back in August and introduced a new chef, Richard, who has 17 years’ experience.

They have already achieved a 5 star hygiene rating.

The pub is well laid out, and has a warm and comfortable atmosphere. There is a good selection of Marston’s beers and ales as well as wines, sprits and soft drinks. We were welcomed, very warmly by one of the members of staff, who took our drinks order and showed us to a table. We were given a range of menus to take a look through, a Daytime Menu (Mon-Fri: 12-5pm) with classics like Gammon Steak and Lasagne, Chef’s Specials with a good variety of Steaks and the Main Menu. There is a good selection of dishes, I spotted an interesting option of Grazing Dishes, 3 for £10, which I thought would be

perfect for Lunch, I picked Mediterranean Wedges, Pork & Chorizo Skewers and Marinated Olives. Kayleigh decided to try Halloumi, Red Pepper and Pomegranate Tart (£9.25), from the main menu, a rich red and yellow pepper sauce with pomegranate in a shortcrust pastry infused with pumpkin and sesame seeds, topped with grilled slices of halloumi cheese and served with crushed garlic new potatoes and dressed salad garnish.

The dishes arrived really quickly and looked terrific, and the portions were on the generous side. My Pork & Chorizo skewers were really tasty and cooked to perfection and the Mediterranean Wedges were the perfect thing to accompany them, they were light a fluffy with just the right amount of seasoning, and the Olives were plump and juicy. Kayleigh was very impressed with the Halloumi Tart, the pastry was light and flaky and the delicate sweetness of the pomegranate worked wonderfully with the creamy halloumi and the garlic new potatoes rounded it off perfectly.

The puddings were too tempting to resist, with Salted Caramel Pecan Brownie at £4.95 and Strawberry Pannacotta at £4.85. I love Pecans, which is the reason I chose mine, but the brownie was a real surprise. It was firm but gooey and the Welsh cream fudge and whole pecans a match made in heaven. Kayleigh loved her Pannacotta, which was rich and creamy, with crisp shortbread and juicy glazed strawberries.

The chef explained that most of the puddings are gluten free.

There are a number of events held at Cross Guns Inn, including a free firework display on 12th November. Bookings are also now being taken for the Christmas period, call for more details or to book your table. We thoroughly enjoyed our visit, the food was great and the service was excellent.

Leaton Forest on The Leaton Knolls Estate

Leaton Forest is one of the largest privately owned and run retailer of Christmas trees in Shropshire and over a normal Christmas sees over 4000 visitors. The Christmas tree enterprise has grown considerably over the past few years selling a large amount of trees, Christmas wreaths, log baskets and other baskets, cones, Christmas greenery, water holding tree stands, mistletoe and Swedish Logs to the general public.

Leaton Forest supplies a number of very tall trees to schools and churches and local authorities such as Shrewsbury and Church Stretton. The National Trust at Attingham Park and Sunnycroft and also LichďŹ eld Cathedral have purchased their showcase trees from Leaton. Though our main aim is to carry on the tradition of growing trees for retailing to the general public. We regularly see families kitted out with wellies and warm clothing who have been returning for over 20 years creating their own family tradition of going into the forest to choose and cut or dig their special Christmas tree.

We have recently purchased our own ock of Shropshire sheep, known as the Leaton Flock to graze under the trees to help keep the undergrowth in check during the months leading up to the Christmas season. It is one of the very few species that can be used for this purpose as most sheep will help themselves to the bark of the trees but Shropshire sheep do not.

The care of the Christmas trees is still a traditional approach as the majority of the work is undertaken by hand, eg pruning, shaping, weeding, thinning and felling.

The Visage Hair and Beauty complex has its own separate reception area, and is equipped with two hairdressing salons with a total of 26 individual hair-styling bays, including adjustable chairs, overhead driers, and storage cupboards.

Both salons are contemporary and modern in design, and include full interactive learning whiteboards that help demonstrate theory in practice through the use of video. Full barbering facilities are also available. In addition, Visage has two fully-equipped beauty salons with 16 individual beds that make use of the latest techniques and treatments, including holistics. Steam and sauna facilities are available in one of the beauty salons for students wanting to develop skills in spa treatments. Visage also has nail bar salon facilities to help support and maximise the growing number of students pursuing nails as a career.

Students participate in additional curriculum activities, for example hairdressing workshops in extensions and colouring, whilst Beauty offers courses in Hopi ear candles, body wrap, roller waxing, and ear piercing.

Full-time students will be able to study for these additional qualifications to enhance their CVs. In-house competitions take place where independent judges select winners. Students also participate in international hair and beauty competitions.

Students work in a real life commercial environment, carrying out a wide range of treatments on clients under full supervision. The salons use a top range of hair and beauty products, including Dermologica and Matrix.

She contacted TCAT after being recommended by a friend, and the college helped her to juggle her studies with the pressures of bringing up her young children – one of which was just eight weeks old when she enrolled.

Clair said: “It can be daunting, as you are studying in a smaller environment. But these group sizes allow you to learn in a fantastic way – lessons are taught in a classroom, not a theatre!”

Her TCAT tutor Stuart Taylor said: “She came to the Foundation Degree Health and Social Care with a level three NVQ. “Under normal circumstances, I would have advised her to study on the Access to Higher Education Diploma, which would have given her the necessary academic skills to study on the course.

Clair Drummond at TCAT

Mature student Clair Drummond has said a big thank-you to Telford College of Arts and Technology for helping her to graduate with a first class honours degree in Health and Social Care.

The 33-year-old, from Malinslee, completed a two-year Foundation Degree at TCAT, before topping it up with a further year at the University of Wolverhampton.

And she said she was grateful to TCAT for giving her a ‘great step onto the higher education ladder’, and supporting her with her dyslexia.

Clair is now working towards a master’s degree, and can register as an approved social worker. This means she can expect to earn up to £25,000 in her first year, rising to around £40,000 if she becomes a social work manager.

Mother-of-three Clair’s previous jobs range from co-ordinating training at fast food chain McDonalds, to giving scuba diving tuition in Malta. It was when she started looking for jobs in the care sector that she realised she needed to develop her CV and get a professional university-level qualification.

“However, during interview, Clair convinced me that she was a suitable candidate to start on the course, and from the beginning she displayed an ability to learn very quickly.”

By the end of her two-year TCAT course, Clair had earned a Merit grade and was praised for her very good essay writing and exam skills and ability to contribute meaningfully to class discussions.

Clair’s story shows that you don’t need A Levels to go to university . . . and you don’t need to spend all your time at university to get a degree!

TCAT offers a wide range of HE courses, including Foundation Degrees in topics such as Early Years, Supporting Children in Primary Education, Health and Social Care, Computing, Sports Performance and Coaching, and Art, Design and Media.

On top of this, there are HNC programmes in areas such as Business, Engineering, Computing and Systems Development, and Digital Media Production – all capable of being topped up into a full honours degree with a further year of study.

SLOW COOKED LAMB SHANKS

Caramel

CHEESECAKE & Chocolate Ingredients

Biscuit Base 150g Digestives, 150g Oreos, 125g butter (melted) Cheesecake Filling 500g Mascarpone cheese, 1 tsp vanilla extract, 100g icing sugar, 150g Carnation caramel, 300ml Double cream & 175g Milk Chocolate chopped up Decorations Caramel drizzle – I use Tescos own brand, Chocolate drizzle & Whipped cream.

Method

1 | Crush the biscuits in a food processor (or break up by placing in a zip bag and smash with a rolling pin 2 | Melt the butter and mix in the biscuit crumbs.

3 | Spread on the bottom of an 20cm Deep Tin and press down firmly, then place in the fridge to cool.

4 | Place the cream in a large mixing bowl and whisk until thick, then add the cream cheese, vanilla, icing sugar and caramel and whisk again until smooth.

5 | Chop the milk chocolate into small chunks and fold through the cheesecake mixture, then spread over the biscuit base and leave to set in the fridge for 4 hours, or overnight.

6 | Decorate by drizzling with caramel and chocolate and maybe some chocolate buttons!.

in Red Wine Sauce Ingredients

4 lamb shanks, 2 carrots, chopped, 1 onion, chopped, 3 garlic cloves, finely chopped, 2 bay leaves & 2 sprigs rosemary, 1 bottle of full-bodied red wine, 480ml beef stock, 1 tbls soft brown sugar, 1 -2 teaspoon cornflour, olive oil & salt & pepper

Method

1 | Preheat oven to 325F degrees.

2 | Season the lamb shanks with salt and pepper.

3 | In a large frying pan brown the lamb shanks on all sides in the olive oil then transfer to a large casserole dish and keep warm. In the same frying pan put in the carrots, onions, garlic, bay leaves and rosemary and cook slowly for 3-4 minutes. Pour in the red wine, beef stock, and brown sugar into the frying pan and stir gently bringing it to a low boil.

Pour the wine mixture over the lamb shanks; top up with water if needed.

4 | Cover and place in the oven and cook for 2 1/2 – 3 hours until tender.

5 | Remove the lamb shanks and keep warm and skim the fat off the top of the red wine juices.

6 | Mix together the cornflour with just a bit of cold water and whisk the cornflour mixture into the red wine juices until desired consistency. Serve up on individual plates and enjoy.

Mexican Hot Chocolate Ingredients

Hot chocolate mix as per package directions 2 pinches ground chipotle chilli pepper 2 pinches ground cinnamon 2 tablespoons whipped cream

Method

1 | Prepare the hot chocolate mix according to the package directions.

2 | Mix with half the chipotle and half the cinnamon.

3 | Top with the whipped cream and sprinkle with the remaining chipotle and cinnamon.

Australia is a country for all seasons...

Summer in Australia, is from December to February, and it is a great time to visit and get outdoors. Swim Sydney’s beaches or hike the overland tracks, or you could take in one of the most famous NYE fireworks displays in the world. Winter, from June to August, offers snow skiing in the Australian Alps to snorkeling in the temperate Great Barrier Reef! It is this diversity that makes Australia so unique, it literally has it all.

Australia is a BIG country, but it is isn’t hard to get around. Flying is the most popular due to the vast distances and fares are reasonable. Coach and bus travel is comfortable and reasonably priced. You generally have air conditioning, adjustable seats and free wifi. Greyhound offer hop on hop off passes for popular routes, short trip passes and flexible passes based on the distance you wish to travel. Road trips offer some of the most beautiful scenery in the world, and the roads are well-maintained or you could use the trains, some of which offer spectacular journeys, sweeping across the continent. The legendary Ghan travels between Adelade and Darwin, passing through Australia’s Red Centre, as well as the tropical top end.

greatest natural harbours is also a gateway to other parts of Sydney. One of the best ways to explore its beauty is to catch an iconic Sydney ferry. Passing some of the harbour’s famed landmarks, including the Sydney Opera House and the Sydney Harbour Bridge, the city’s waterways offer many scenic vantage points.

3. Wildlife - Australia has a vast array of wildlife, from the Kangeroo to Dingos. One of Australia's best-known marsupials is the koala, which feeds on the leaves of various species of eucalyptus. Australia is home to numerous venomous species, which include the platypus, spiders, scorpions, octopus, jellyfish, and stingrays. They also have two species of Crocodile, Saltwater (the largest living Croc species) which can reach up to 7m in length and Freshwater Crocodiles which are found in the Northern Territory. The Coast is visited by six species of Sea Turtles, which are all protected in Australian waters.

Comedy superstar John Bishop is set to return to Birmingham in autumn 2017, as he announces his long awaited return to stand-up comedy, with a brand new live show, WINGING IT. Tickets will go on general sale on Thursday 6 October at 10am.

One of UK's biggest stars, John will be bringing this huge 35 date tour to the Barclaycard Arena for two nights, on 10th and 11th November 2017.

On announcing Winging It, John said: "When I start this new tour, it will be three years since my last live show Supersonic, which is the longest break I've ever had. I'm very much looking forward to getting back on the road - there really is nothing like performing stand-up in front of a live audience. The new show is called Winging It, and in some respects having come to comedy relatively late, it sometimes feels like that’s what I'm doing in life! But I'm enjoying every minute of it."

Winging It will see John back on stage for his fifth UK tour, performing in his own inimitable style. His last tour ‘Supersonic’ was watched by more than 500,000 people and received huge critical acclaim.

‘Rollercoaster’ in 2012 was another sell out, and followed the successes of his ‘Sunshine’ tour in 2011 and the ‘Elvis Has Left The Building’ show in 2010, for which he was nominated for an Edinburgh Comedy Award.

John Bishop has had an incredible career. Within three years of his first ever comedy gig, John was playing to sold out arena audiences across the country and released the fastest selling stand-up DVD in UK history.

He has achieved huge success with a number of his own comedy, entertainment and documentary shows including ‘John Bishop’s Australia’ (BBC1), ‘John Bishop’s Britain’ (BBC1), ‘John Bishop’s Only Joking’ (Sky1), ‘The John Bishop Show’ (BBC1), ‘The John Bishop Christmas Show’ (BBC1) and ‘John Bishop’s Gorilla Adventure’ (ITV1).

Earlier this month John turned his hand to something completely different – interviewing. Winter is coming along with the unavoidable cold and flu bugs that start doing their rounds around now. But it doesn’t need to be the unhealthiest time of year for you and your family. Here are some top tips to ensure that you can keep healthy and fit, regardless of what the weather is like!

1. Make Sure That You Are Getting The Right Amount Of Sleep

It is recommended that we have seven to nine hours sleep however, a recent study found that most people are only getting six and a half hours each night! Its normal to adopt hibernating habits in the cold so use this time to catch up.

2. Drink More Milk

You are more likely to get a cold in the winter, so making sure your immune system is in the best possible condition is important. Milk and dairy products such as cheese, yoghurt and fromage frais are good sources of protein and vitamins A and B12. They're also an important source of calcium, which helps keep our bones strong. Try to go for semiskimmed or skimmed milk – rather than full-fat – and low-fat yoghurts.

3. Eat More Fruit And Veg

When it's cold and dark outside, it can be tempting to fill up on unhealthy comfort food, but it's important to ensure you still have a healthy diet and include five portions of fruit and veg a day. If you find yourself craving a sugary treat, try a juicy clementine or satsuma instead as these are readily available at this time of year, or sweet dried fruits such as dates or raisins.

Winter vegetables such as carrots, parsnips, swede and turnips can be roasted, mashed or made into soup for a comforting winter meal for the whole family.

4. Try New Activities For The Whole Family

Don't use the cold winter months as an excuse to stay in and lounge around. Instead, get out with the whole family to try out

a new activity – maybe ice skating, or taking a winter walk up the Wrekin or through a local park.

5. Have A Hearty Breakfast

Porridge is the perfect way to fuel yourself on winter mornings .

Eating a warm bowlful helps boost your intake of starchy foods and fibre. These give you energy and help you feel fuller for longer, stopping the temptation to snack mid-morning. Oats also contain lots of vital vitamins and minerals.

Make your porridge with semi-skimmed or skimmed milk or water, and try not to add sugar or salt. Add a few dried apricots, some raisins, a sliced banana or other fruit to help you reach your 5 a day target and to also make it even tastier!

Shrewsbury foot, laser & chiropractic clinic was founded by Kelly Phelan now Leonard in 2006. The Clinic started out on Coton Hill in Shrewsbury where Kelly rented a small premises which incorporated a small reception and a large clinic area. The business has grown over the past 10years and this year Kelly decided to expand and buy a premises the other side of town on Monkmoor road. It provides a much better location being on a regular bus route & having a large car park around the back meaning great disabled access.

Shrewsbury Foot Clinic now offers a variety of treatments. They combine a friendly, relaxed atmosphere with a high level of professionalism and knowledge that is second to none.
