Upon entering The Ugly Duckling we were quickly warmed up, from the cold damp weather outside, by the welcoming setting of this cosy candle-lit restaurant. We were greeted by our host Ryan, who swiftly seated us at our comfy table, and introduced to our waiter for the evening.

Whilst we awaited the arrival of our drinks we relaxed whilst we pondered over the various dishes offered on the menu. My partner Mitchell quickly opted for the Pan Roasted Scallop starter, whilst there was no doubt for me that I would be ordering the Japanese Fried Chicken dish, which sounded mouth-watering. Our starters arrived and it was clear to see that the chefs at The Ugly Duckling pride themselves on presentation, and it was also apparent

once we had made a start that The Ugly Duckling ensure the dishes they produce are fresh, high quality and full of flavor! Mitchell’s trio of scallops put together with a pancetta crisp, accompanied with a caramelized cauliflower puree and chive oil delivered tenderness with a crunch, the flavour of the scallops together with the crispy pancetta complimented each other so well, leaving him fully satisfied. My Japanese fried chicken was a delight, a trio of lightly battered succulent chicken, topped with sliced Szechuan pepper and lay on a bed of yuzu mayonnaise, it was a masterpiece. The peppers gave a good kick while the mayonnaise threw in a smooth cool texture, with a slight spiciness for good measure! Our starters really had whetted our appetite, ready for our mains. For the main dish I was drawn to the Rack of Lamb, Dauphinoise Potatoes (my favorite!), Garlic & Thyme Roasted Carrots with a Herb Puree whilst Mitchell would not dream of turning

down a 10oz Rib-eye Steak served with Triple Cooked Chips, Beef Tomato & Flat Mushroom. My Lamb was succulent and juicy, with a good texture, it arrived rested on top of the creamy mouthwatering dauphinoise potatoes, the herb puree was a real pleasure and such a clever element to this dish; if we were rating out of 10 it would be a 10! Mitchell’s had opted for a medium Rib eye Steak which was cooked exactly to his request. It was rich in flavor and with a tender texture just what you want from a rib-eye cut. Steak wouldn’t be steak without crisp and fluffy chips and that’s what was delivered. Accompanied by a beef tomato and flat mushroom this dish was heaven for any steak lover. Overall our mains delivered presentation, flavor and 100% food satisfaction and with that we decided to take a 15 minute break before ordering our desserts, in other words I had spotted the cocktails menu.

Before I knew it I was sipping a Long Island Iced Tea, a concoct of grey goose vodka, Tanqueray gin, patron gold tequila, Bacardi, triple sec, lemon juice and coca cola – perfect! We had the tough decision of choosing a dessert, after deliberating over a few options I opted for Salted Caramel Brownie and Milk Sorbet and the Duckling Sundae had caught Mitchell’s eye - it looked amazing; vanilla ice cream sundae hidden within was shortbread biscuit and brownie with a toffee sauce, the perfect dessert for anyone with a sweet tooth. I devoured my salted caramel brownie, the warm brownie was soft and satisfying, definitely one for chocolate lovers such as myself; the milk sorbet was refreshing and a real palate cleanser.

(£6.95) washed down with a shot of prosecco. They were just what the doctor ordered – really tasty and the hibiscus is now my new favourite flavour.

Cocina is the newest addition to Southwater, Telford. This hip Mexican eatery offers a fun twist on dining, with an extensive bar with colourful lights, and ‘day of the dead’ inspired skull glasses – including an extra-large sharing version. The restaurant has brightly coloured seating, with an industrial edge giving a rustic feel and there is a warm, friendly atmosphere which is very inviting. We were greeted at the bar and shown to our table by the friendly staff who also gave us some menus to browse through, and took our drinks order. I decided to try a Virgin Mojito (£3.75) -All the refreshing flavours of a mojito with no guilt! You can choose from classic, hibiscus or strawberry - I went for the hibiscus. Stef decided to let his hair down and had a Pornstar Martini Finlandia vodka, chambord, vanilla, Tahitian lime and passion fruit purée

One of the waitresses came to take our order, she was really helpful – guiding us through the menu, which is packed full of classic Mexican dishes, which have been given a modern twist. She suggested some Mexican Tapas for starters. We opted for 4 to share: TOSTADAS – A traditional Mexican dish of toasted tortillas served up with pink pickled onions and Monterey Jack cheese, plus your choice of tasty topping, we went for Chicken Tinga- Slowcooked pulled chicken marinated in a chipotle salsa and topped with salsa pico. MEATBALLS in Cocina’s hot sauce Beef and chorizo meatballs served in Mexican hot sauce with roasted peppers & onions. FRIJOLES AND CHORIZO - A mixture of black beans and chorizo, with an added twist of sweetcorn and creamy feta cheese and finally KING PRAWN + CHERRY TOMATO SKEWERS - Served with chili seasoning and a sweet mango dipping sauce.

Review The dishes began to arrive in quick succession, a feast for your eyes as well as your belly – they looked amazing. We tucked in enthusiastically – Stef’s favourite was the meatballs which were really tasty, the tangy sauce had just the right amount of ‘hotness’ and was really flavoursome. The Tostada was my top pick, the pink pickled onions mixed with the chicken and Monterey Jack cheese was a winning combination; a real taste sensation. The Frijoles were an unusually dish but one that worked very well – the generous sprinkling of chorizo really brought the whole dish together brilliantly. The tapas are priced from £3.99-£5.99 each which is reasonable and the portions are good.

For our main course I decided to try the MEXICAN SPICY SNAPPER - Red snapper marinated in achiote with a lemon & caper sauce, mango chunks, lime rice and mixed peppers (£14.95) and for Stef CHICKEN BROCHETAS; Two skewers of seasoned chicken, accompanied by chargrilled cactus, peppers & onions and served on a bed of Mexican rice, with slaw and chipotle crema on the side (£10.95). The dishes arrived and again we couldn’t wait to sample them. I love fish but had not had Snapper before so I was interested to see what it was like – it was lean and moist, with a firm texture and has a sweet, delicate flavour which I really enjoyed, the lime rice and lemon and caper sauce really complimented each other well. Stef was really impressed with his Brochetas, the portion size was huge, and the chicken was cooked perfectly – chargrilled on the outside and juicy and tender on the inside.

We were pretty stuffed at this point but there is always room for dessert! We decided to share some Mexican Churros, dusted with cinnamon sugar and a generous helping of dulce de leche (caramel) and chocolate sauce for dipping,

which were simply divine and go down as one of my all-time favourites – EVER!

Cocina Southwater is a must visit. The staff are great – nothing is too much trouble. The vibe is fun and inviting yet intimate enough to enjoy a romantic meal for two. The drinks are phenomenal; and I don’t say that often at all, but the food is the real attraction – fantastic dishes; delicately spiced meaning they are accessible to everyone but with the option to ‘fire it up’ with Cocina’s condiments, fresh ingredients and flavour galore. Reserve a table and secure a night of delicious, modern Mexican classics. What are you waiting for?

The Wellington Festival is a celebration of arts and culture which aims to showcase artistes of local, national and international renown. The Festival, which takes place in the vibrant market town of Wellington in Shropshire, has a broad appeal that embraces diverse performing arts whilst engaging the wider community and our valued visitors. Now in its twenty-third year, the Festival is the UK’s largest free access festival and takes place in May and October each year. Leading musicians, poets, performers and artistes perform alongside gifted new talent to deliver a fantastic line up of music, comedy, film, dance and all aspects of literature including poetry and performance. The Festival encourages the audience to try something new and to discover all that Wellington has to offer. By informing individuals and encouraging them to take personal responsibility for the plastic pollution that they generate and asking them to choose to reduce, refuse, reuse, recycle and remove plastics. As well as the individual education of people, it is important to work with universities and schools to educate students about plastic pollution and to work with other organizations and networks to build an effective platform to end plastic pollution by developing resources that others can use.

It is essential to promote the work that cities and local governments are doing to tackle plastic pollution, as it helps spread the word about some of the ways we can reduce the amount of plastic pollution we produce. One of the best ways to do this is to empower journalists across the globe to report on the problem and its emerging solutions.

The Earth Day Network is leveraging the platform of their 50th anniversary in 2020 by working with key constituencies and influencers in building a world of educated consumers of all ages, who understand the environmental, climate and health consequences of using plastics by engaging and activating their global network of NGO’s and grassroots organizations, campus youth, mayors and other local elected leaders, faith leaders, artists and athletes, and primary and secondary students and teachers. They are also supporting events in every continent of the world, to build a global following and activating individuals to join their ‘End Plastic Pollution’ campaigns. GIVE BIRDS A HELPING HAND...

This Nesting Season After spending the last few months focusing their efforts on making it through the winter, birds now begin to turn their attention to starting a family. Across the country, birds are searching for a mate and beginning to prepare the nests in which they will raise their young. With natural habitats such as trees and hedgerows being lost to development every year and the increase in urban housing, nest boxes are massively becoming more important to many species’ survival. You can help this circle of life by installing a nest box in your garden, providing them with a place to lay their eggs and raise their chicks, as well as allowing you to witness birds raising a family on your doorstep.

So why not give them a helping hand and provide a home for garden birds over the coming months? Even if your garden is small and you only really have space for one box, it all helps! The first thing to consider is the kind of birds you’re hoping to attract. However, having two or three general boxes with different hole sizes to allow for different species can increase your success. Blue, Great and Coal Tits, along with Tree Sparrows and Pied Flycatchers, prefer a 28mm entrance hole, while the larger Nuthatch and House Sparrow need at least 32mm. Robins, Wrens and Blackbirds like the open style nest box. Or you may want to concentrate on specialist species that are in decline, such as House Sparrows and Starlings. There are lots of nest box styles around, but look for those that have drainage holes, natural-looking designs and insulating materials treated with safe preservatives. The entrance holes should also be at a height that doesn’t allow predators to reach in and scoop chicks out. CJ Wildlife nest boxes meet the birds’ key requirements, and they are available in an array of designs and finishes to ensure they look great in your garden. Birds need nests where they feel safe and sheltered, so place yours away from sites such as the top of fences that make life easy

for predators, such as cats and squirrels. Secure it facing north through east to south-east in order to keep out prevailing winds and strong sunlight. As a bonus the early morning sun will gently warm the box after a cold night. Walls tend to be a better choice than trees since cats find it more difficult to scale them, but you can plant dense and prickly bushes around trees to deter them if you haven’t got suitable walls. The ideal height for a nest box is generally accepted as between 1.5 and 5.5 metres, but preferably higher than 3 metres if your garden is frequented by cats. If possible, place a nest box close to vegetation, such as climbing plants, as this provides both cover and makes things easier for young birds when they leave the nest for the first time. Another good point is to avoid putting your boxes too close to feeding stations as the regular presence of other birds of the same species in their territory will make the parent birds focus on driving out competitors rather than feeding their young.

It’s tempting to want to stuff your new nest boxes with potential nest material, but birds prefer to find their own. You can give them a subtle helping hand though, by putting things like dog hair and hay around the garden for them to find. You can also buy special organic nesting wool, which you can offer from a Fiesta or Apple Nester so the birds can help themselves. Once your box is installed, you may need to be patient. Birds can’t afford to be laid back about where they raise their young and it may take a little while before they accept your box as a suitable site. It is unusual for a wellpositioned, properly designed nest box to go unused for long, and the boxes are also a valuable roosting site at other times of year. If you’re lucky, you might even attract some birds to raise more than one brood in your box, as House Sparrows, Robins and many more will nest more than once during each year’s breeding season. Remember, you can give birds a massive helping hand during nesting season by providing them with a regular supply of food. Not only do adult birds have to find food for themselves, but exert more energy doing the food run for their chicks too as well as finding the right food for them. Garden feeders can make a real difference at this time of year filled with high energy foods. Live food such as mealworm is particularly important, as it provides the vital proteins young chicks need to grow.

Last year the cameras drummed up a lot of interest on social media from people who are new to bird watching as well as the dedicated ornithologists. They were also a big hit with parents and children, and this year we hope they will be just as popular. f you’d like a beautiful garden without the maintenance that comes with it, artificial grass is a great option. With that real-grass look it's an excellent grass alternative for low maintenance gardeners. Ideal for small/medium gardens, there's no need to water it in dry weather and the artificial turf is porous so won't have puddles in the rain. It also offers greater wear and weather resistance than normal grass. I had been struggling with my garden for some time, as with both my husband and I working, there just wasn’t enough hours in the day – plus we both hate gardening, which is a definite problem. In spite of this we both actually love to sit outdoors when the weather allows, so we had to opt for a low maintenance garden. I decided to remove some old decking and replace it with a limestone patio but it was the remaining area that needed sorting out desperately. Josh Cartwright from JC Garden Services specialises in laying artificial grass, so I gave him a call to see if he could come and take a look for me. He

measured up and explained what he would need to do to get everything ready to install the lawn, plus he also brought along a sample of the artificial grass to show me. ere are hundreds of different grasses available in many different shades and lengths, some of which are excellent and some which are not so good. Once work commenced it was an extremely quick process. e area was dug out and levelled off. A wood work frame is measured and fitted and once this was done, barrow after barrow of MOT stone is laid and compacted using a wacker plate. is creates a good solid base on which to lay the grass, but it also provides good drainage to the area. A layer of sand was then laid to create a bed for the grass to sit on and on top of this a heavy duty weed control was added to prevent weeds growing through the artificial grass. e grass was then rolled out into place, and fixed into place with special grass nails. e whole thing took two and a half days from start to finish. I am so pleased with the finished result, I finally have the garden I have always wanted and it is ready to go whenever I am – Roll on summer!!

Ingredients

2 tablespoons reduced-salt soy sauce 2 tablespoons toasted sesame seed oil 2 cloves garlic, finely chopped 4 spring onions, chopped Sesame seeds to sprinkle over 4 x 125g fresh salmon fillets

Method 1. Combine the soy sauce, sesame oil, garlic and onions, and pour over the salmon fillets, ensuring it is covered. 2. Chill in the fridge for half an hour. 3. Preheat the oven to Gas mark 6/200 C/400 F. 4. Transfer the salmon, skin side down into a shallow ovenproof dish and bake in the oven for 20 minutes until the fish is cooked throughout. Serve with stir-fried vegetables and boiled rice or asparagus and spinach.

Book Worms... A black country girl who loves to read. I recieved this ARC in exchange for an honest review. When this book popped up on NetGalley, I knew I had to request it. I read the first one a while back and fell in love with the writing and author. e story is all about second chances and what will happen if you allow yourself to follow your heart. Ophelia and Kyle have both been hiding a huge secret, and when Kyle comes back to town, they both must decide if what they once had is worth fighting for. What I really enjoyed about Jennifer Probst is how she is able to create extremely likeable characters. I found myself being able to relate to Ophelia and her struggles and concerns, but also to Kyle and what he was going through. She has a great writing style and it’s a real credit how she is able to keep the reader entertained. I certainly couldn’t put the book down and devoured it in one go. Ophelia was the perfect lead character. What I like most about her is how strong and independent she is, and she clearly knows what she wants and will stand her ground. My heart broke for her when she realised that maybe love isn’t enough, and although she loved Kyle, she wasn’t happy so needed to leave and start her own life. I think her greatest weakness is how kind and caring she is. Some may see this as a positive and yes, whilst it’s grea that she will always

go the extra mile to help someone, she sometimes forgets about herself. I didn’t particularly warm to Kyle in the beginning. He was arrogant, selfish and only thought of himself, his own dreams and ambitions. Not only did he allow his relationship to fall apart, he couldn’t see that he was partly to blame. I literally cheered when he finally realised that did play a part in the breakdown of the relationship. I did end up liking Kyle. I loved his character development and you could see how much he loves Ophelia. I really enjoyed them both as romantic leads. I really liked the secondary characters in this book. It was great to reconnect with Mia and Ethan to see how their relationship had flourished. I enjoyed their story, so it was nice to revisit them. Not only is this book about second chances for love and following your heart, it also touches upon family, friendships and finding yourself. I rate this book five out of five stars and urge everyone to go and purchase a copy now. I can’t wait for the third instalment.

CHRISTINE’S STORY Christines journey is from March 2017, she first started her sessions with us in Aug 2017 shy, apprehensive and always hiding at the back of the room, normally finding exercise classes boring. She started attending our Tuesday Clubbercise sessions & quickly fell in love with how fun fitness can be. 1 session a week eventually turned into 6 sessions Total Body Tone, Legs Bums & Tums and of course dance fitness with Clubbercise! Yep! She attends every single session now and has made many new friends! And it’s evident that determination, dedication, hard work & enthusiasm always pays off IF and only IF you are consistent, she’s achieved a number of goals and continues to set new ones along the way! “I started going to classes in Aug 2017. I never expected to return as the classes I tried over the years were just so boring! “e thrill of speed - one of the twentieth century inventions that shines out like a beacon of progress - appears at present to be under threat from many directions...” Getting around our crowded island has never been so frustrating. Decades of under investment in infrastructure has resulted in near gridlock. Some say it's scandalous while others would have us dress like colourful insects in helmet and lycra and pedal our way through puddles, oblivious to the queues of cars behind. What is certain is that as cars have got better, the same cannot be said for carriageways. These reflections were prompted at the wheel of the new 3 Door (You can have 5 doors) Fiesta ST-3 If ever a car deserved to be allowed its proper use, unfettered by speed bumps, speed cameras, 'smart' lane allocation, congestion, potholes and all the rest, it's this fabulous Ford. Give it a decent road and it will turn every journey into a delight. If it proves one thing it's this: that when it comes to motoring machinery the modern driver has never had it so good. So it is that the Fiesta ST reaffirms a policy of sporting intent long associated

with Ford, representing the latest incarnation of that sporting philosophy. It's a hot Fiesta that is significantly better than the previous version. No wonder it has been voted 'New Car of the Year 2019' in some surveys. The technology has taken a quantum leap. Nowhere moreso than under the bonnet. Gone is the old four cylinder engine and in its place a cutting-edge 200 PS 1.5 three cylinder unit that is quite magic in its capability. You would never know it unless you were told but at less than half throttle and between 1200 and 4500 revs one cylinder shuts down and takes a break. But select sport or even track mode, drop down a gear and floor the throttle and...kaboom! You are on the way to nearly 145 mph. 'Gas guzzler is it?' I hear you ask. Well frankly it's not. Ford claim over 47mpg overall - but to drive for economy in one of these is to completely miss the point. Believe me: it is the dusty cobwebs deadliest enemy. It's a live galvanisation of inanimate metal, a quicksilver twinkling of dashing performance. But at the

same time, oh so civilised. As safe as houses but as dynamic as a supple heptathlete, capable of coping with every challenge.

Technical types look away now. Yes, there's a superabundance of cuttingedge engineering parcelled in this rapid package. But frankly my dears, I don't give a monkey-wrench. For me the proof of the pudding is in the eating - or in this case the treating of the driver to an invigorating dose of motoring ozone. This sharp-looking road rocket makes the years fall away. It's a recipe for rejuvenation if ever there was one. Batman never hopped into the Batmobile with anything like the enthusiasm I felt. Neighbours had never seen me so animated - not even when beating off the bailiffs.

fired up that splendid engine and the reverberation of its potency set up an expectant tingle of anticipatory pleasure. A lovely quick throw 6 speed gear change, a well-weighted clutch and we're away. All that was needed was an empty open road - so it was a dawn start.

The difference between old-style and modern performance cars is this: modern cars feel docile and tractable but give them their head and they'll knock the old sort into a cocked hat. (An E Type would be left in this Fiestas dust!). Every now and then there came subtle indications that I was driving something special. Yes it's firmly sprung but with a more compliant ride than the previous model, yes, it takes bends as if on rails. But only when conditions permitted me the licence to thrill myself

did I induce an involuntary gasp of astonishment as that wonderful new engine catapulted the ST forward. Oh yes. This is one seriously quick fun car.

At the same time you feel confident that Ford have got it right, for the car always feels glued to the road, subservient to your every need. Soon the straight road ended in a sharp turn. I zipped round the bend, impressed with my own artistry; that is before I realised the car, not the driver, deserved the credit. With a car like this, compromises are inevitable. Yes, it's a firm ride and no, it won't win acclaim for economy. But it is very civilised, with all the extras todays drivers demand. And for the money you really won't find a better class of performance motoring. All we need now is a better class of highway. The better

to ensure that in tomorrows world we aren't robbed of these motoring thrills, courtesy of far-seeing Ford and the Fiesta ST.

As I bobbed along, enraptured by the carefree felicity of the Fiestas road dynamism, I thought 'This is one of the finest handling superminis available today?' And no. I'm not in pay of the manufacturers: just in the service of fine motoring.
