EASY HOMEMADE CARAMEL CORN
Ingredients
2 cups brown sugar
2 sticks of butter
½ cup of clear corn syrup
1 tsp. salt
½ tsp. baking soda
8 qt popped popcorn (kernels sorted out)
Preparation
Combine brown sugar, syrup, butter, and salt. Bring to boil over medium heat and boil for 5 minutes. Stir in baking soda. Pour immediately over popcorn. Stir until coated well. Bake for an hour at 250 degrees. Stir every 15 minutes. (I bake in a large turkey roaster pan.) When done, remove from pan onto parchment paper. Break into bite-size pieces. Cool. Store in airtight containers. Keeps well if you can resist eating it.
