Howe's Finest Christmas Recipe's G T "Mack" McDonough's Famous Two Forty Sweet Potato Pie

2 c cooked sweet potatoes, 1/4 cup heavy cream, 1/4 tsp nutmeg, 1/2 tsp vanilla, 1 large egg, slightly beaten, 1/2 tsp cinnamon, 3/4 cup light brown sugar

Cook sweet potatoes until tender, mash Stir in egg, spices, sugar, cream, and vanilla Stir until well blended Pour into baked pie crust and bake at 350 degrees for 35 to 40 minutes or until set. Cool and top with whipped cream. *NOTE: Be sure and use only sweet potatoes that have been rolled This will ensure that the partaker of this pie will not experience flatulence (gas) However, I have eaten several pies from this recipe and evidently, some of the potatoes missed the rollers - Mack
