Three years ago, Gundeep Singh and his wife Shilpi decided to change their lives. Worried about the impact that their home and lifestyle were having on the environment, they embarked on a mission to tweak certain elements to make them more sustainable. As their environmental awareness grew, the family’s enthusiasm did too – and now, their house is a truly ‘green’ home. “Sustainability is such a complex thing,” says Gundeep with a smile, as he shows me around his house. “It takes years to understand, and I am still learning. I have read such a lot, and consulted many different people about the changes we need to make.” Those changes are numerous; as we tour the property, Gundeep reels off the

alterations he’s made. “All of our lighting is LED, and powered by solar panels on our roof. The roof is painted white to reflect the heat, and our windows have a special coating to help keep the house cool. The flooring is a special glass, which reduces the use of detergents and is much more insulated than regular flooring, so it saves electricity. The paint is non-toxic, and the furniture is by Vitra – so it uses non-toxic glue, high-quality sustainable materials, and has a lovely timeless design.” All of the kitchen appliances are by SieMatic, and everything is AAA-rated for energy efficiency. The giant fridge consumes just 60 watts of power – the same as a small light bulb. The taps are low-flow, the water pressure in the house

has been lowered, and the family use water filters instead of plastic bottles. Even the garden is sustainable: “We’ve chosen plants that need minimal water,” says Gundeep, “and we don’t have a pool.

to prove that you can be eco-friendly and still be stylish and lead a comfortable life,” says Gundeep. “We have cool, fun things in our house that really work – and the bonus is that they’re good for the environment. It’s all about investing in the right things, and leading a responsible life.” For Ishaan and Satvik, their two young sons, Gundeep and Shilpi have done lots of research into family health too. Their initial findings were alarming: “There are lots of potential dangers in the air inside houses – especially during the summer when you rely on A/C. Formaldehyde is often found in cheap furniture and materials, and is carcinogenic – it’s a real threat in Dubai. Carbon dioxide and carbon monoxide are very harmful too. We clean our A/C units regularly, use air purifiers, and test our air quality every few months to check that everything is ok.” The Singhs’ eco-friendly project has changed not just their home but their business, too: Gundeep is the CEO and founder of The Change Initiative, an interiors store which champions sustainable design. “We felt like we’d found a way to lead a responsible yet stylish life,” says Gundeep, “and we wanted to show that other people could too.” The store on Sheikh Zayed Road has gone from strength to strength, and the building itself has just been awarded the world’s highest scoring LEED Platinum certification by the US Green Building Council – making it the most sustainable building in the world. “It is a functional, useful building,” says Gundeep proudly, “and it inspires everyone who visits it. It uses solar power, solar heating, LED, a sophisticated building management system… the list goes on! It is a great feeling to set an example like that.” August 2013

All major construction work is complete, so you won't be face-to-face with a building site.

The Arabian Ranches Golf Club (arabianranchesgolfdubai. com) is right on the doorstep, and The Els Club in Sports City (elsclubdubai.com) is nearby too. If you prefer your sports more fast-paced, Dubai Polo & Equestrian Club (poloclubdubai.com) is part of the community, and also offers riding lessons, desert hacking, and a beautiful spa. Each cluster has its own swimming pool and you'll find basketball and tennis courts too. Sports City (dxbsport.com), just a quick drive away, offers plenty of activities for active kids – including the ICC Global Cricket Academy and Butch Harmon School of Golf.

The Village Community Centre is small enough to feel personal, yet large enough to offer all the daily essentials – including a supermarket, cafés and restaurants, laundry, pharmacy, and travel agency. For the weekly shop, Le Marché (Arabian Ranches), Carrefour (Mall of the Emirates) and Spinney's (MotorCity) are all within very easy reach. The takeaway and fast food options nearby are plentiful, and as the area is established you shouldn't have problems with delivery. Independent Finance’s general manager Sam Wani reveals the latest movements in mortgages

The residential market is experiencing a broad-based recovery, with prices and rental values picking up in secondary and more affordable locations, while the primary areas are now witnessing slower paces of growth. Projects in newlydeveloped areas are still lagging behind, and will need more time before they pick up. The total residential stock stood at around 360,000 units in June, with around 3,400 residential units, mostly apartments, being handed over in Q2 2013. By 2015, around 38,000 additional residential units are expected to be added to the market. Rents for apartments went up by 12% year-on-year during Q2. Asking apartment sale prices went up by 17% year-onyear. Villa rents have increased by 13% year-on-year. Asking prices for villas have increased

This reduces allergens and prevents illness, as well as minimising injury from household accidents. MAINTENANCE

Did you know that indoor air pollution can be up to 100 times worse than outdoor pollution? This sobering statistic from the US Environment Protection Agency (EPA), reminds us just how vital keeping a pristine home for your family means. More than daily chores and the occasional deep cleaning, adding routine inspections of often overlooked areas and regular maintenance to your list of tasks is the best way to prevent bigger problems later on. Start by sanitising mattresses at least twice a year – or more if you have asthma sufferers at home – to kill small parasite insects feeding exclusively on human blood that can lead to skin rashes. In addition to bed bugs that can infest even the most seemingly ‘clean’ beds, dust mites are a microscopic (~0.3mm) eight-legged spider species found in most beds and AC ducts. Invisible to the eye, these dust mites by themselves are harmless, but their excretions are responsible for producing dust mite allergens (DMA’s) that become airborne and inhaled causing allergies and asthma. An average mattress has two million dust mites, whilst an average AC duct has even more.

Also avoid overloading wiring or plugging too many appliances into a single wall socket because it can cause electrical sparks, leading to an electrical fire. Be sure to unplug appliances when they’re not being used, and cover sockets with outlet protectors. What makes Emirati art unique? Art generally, whether Emirati or nonEmirati, is a personal expression by the artist. This expression reflects that artist’s beliefs, mood, and thoughts. So, I would not say that Emirati art has a distinctive element: I would rather say that each artist is reflected through his/her work in a unique way. Are there any particular artists that readers should look out for? Being more focused on the young artists, I would definitely keep an eye out for Alia Hussain Lootah, Saeed Khalifa, Khawla Al Marri, and Zeinab Al Hashemi.

The design guru

Nadine Khoury, managing partner of interiors boutique O’de Rose Why is it so important to support Emirati designers? There is so much talent locally, and preserving Middle Eastern craft and traditions has always been a core value of O’de Rose. We aim to preserve local crafts and techniques, and provide opportunities for upcoming designers to be seen. We support artisans by offering them a platform to showcase their products and we encourage local craftspeople to use their traditional skills, thereby preserving the survival of traditional craft and Middle Eastern heritage. Is it hard to find local designers – or do they approach you? It is a bit of both, really. With our passion for art and regional talent, we’re always on the look out for new emerging artists. We are also constantly approached by artists. Of course, we welcome this – it is great to be seen as an approachable brand that is recognised for supporting local talent.

Which designers should readers look out for – are there any up-and-coming names? We recently held an event called Locals on Board, where a number of up-andcoming Emirati creatives showcased their collections, ranging from fashion to

Fatma Al Mulla is a very talented local designer: her fashion label is very tongue-in-cheek, and she addresses many social and cultural issues through humorous illustrations and designs. Another fantastic Emirati talent is Zukrf, who brings to life an innovative range of furniture and household accessories which preserve aspects of Arabic tradition.

“My passion for art is innate. I was the child who picked a crayon rather than play with a toy car. I’ve always felt like I wanted to create; it’s a feeling that never stopped for me. I originally started illustrating and painting, but couldn’t find myself in the medium. But I connected with photography: it was amazing. Everything in my work is photographed, removed, and put on another photo. Manipulated images gave me the opportunity to keep things looking real but bend and change them the way I want. My work is emotive, enigmatic, dark but beautiful. When I work, I don’t really plan. It just comes out. I am driven by emotion, and I am mostly inspired by experiences. I have sold pieces in Christie’s auctions, and so far I have only exhibited in Dubai, but I am hoping to show my work abroad. I am in love with European portraits and paintings from the 17th and 19th century. I’m a big fan of Caravaggio and Ingres. I love how strong the paintings are, even in their most subtle moments. The Emirati art scene is very young, but it’s growing faster than you imagine – and is much more dynamic than people make out. I am surrounded by artists and individuals like myself who create art for art and want the world to see it and interact with it.” August 2013

Cats can be incredibly loving and affectionate pets, and great company, but they require long-term commitment in return. The UAE is a transient place and many people living here don’t plan to stay forever. Too many of the rescue animals in Dubai have been abandoned by pet owners who left the country and either were not aware of the rules governing the exportation of pets or couldn’t afford to do it. So before you commit, if you’re not planning on being in Dubai for more than a few years then speak to a vet about the necessary vaccinations to take your new friend with you, and the cost of transporting them. It’s not as expensive or troublesome as you may imagine – but a little planning can save a whole lot of heartbreak later.

The first few days of the cat being in your home may not be the easiest: it may need a few days – sometimes even a week or two (depending on its character: if timid it could take a few months) – to get used to the smells and noises. If it is a kitten, this will normally be a quicker process. You may find that it is happier if left closed in a quiet room (a ‘safe zone’) with food, water and litter tray for a few days, with you going in and out for some fuss so that it gets used to your smell. We have had people worry that their new pet isn’t eating much or using its tray – this could be because the cat is stressed. ANTIPASTA: POLPETTINE Serves one

AN ITALIAN FEAST

From tasty antipasta to a naughty dessert, the creator of Urbano’s delectable menu shares his favourite dinner party recipes

5 beef meat balls (see recipe below) 110g tomato sauce (see recipe below) 1 plain focaccia 20g mozzarella, torn 5ml olive oil 4g parmesan cheese 5ml vegetable oil 2g rosemary

For the beef meat balls • • • • • • • • •

1kg beef mince 60g bread crumbs 300ml milk 2 eggs 50g parmesan cheese, finely grated 30g pecorino cheese, finely grated 15g parsley, finely chopped 1g black pepper 4g garlic

For the tomato sauce • • • • • • •

100ml olive oil 1.5 garlic cloves, finely chopped 100g tomato puree 2.4kg tinned tomatoes 500g local tomatoes, diced 18 basil leaves, torn 100ml extra virgin olive oil

2g white pepper 10g salt 150g multi-use flour 300ml vegetable oil 2g salt

1. In a mixer, combine the beef mince, bread crumbs, milk, egg, parmesan, pecorino, parsley, pepper, garlic, flour, vegetable oil and salt. Shape the mix into balls of 25g, and fry until cooked through. 2. For the tomato sauce, heat the olive oil over a medium flame. Add the garlic and tomato puree. Fry for 10-12 minutes. 3. Add the tomatoes to the pan. Fold the ingredients over and fry for 3 minutes, then add the water. Boil, then reduce the heat to a simmer. Leave the sauce to reduce for 90 minutes. Add the olive oil and stir well. Add the basil leaves, and season to taste. When cooked, store the sauce in the fridge. 4. Warm the sauce over a medium heat, then add the meatballs. While they are heating, toast the focaccia. Bring the meatballs to a boil and fold in the rosemary. Remove from the heat. 5. Place the meatballs into a small dish. Top with mozzarella and parmesan, and place under a grill to melt the cheese. Serve with focaccia and olive oil.

Lloyd Carter, Executive Development Chef of Jumeirah Restaurants, has been cooking Italian food since he was 14 – so it’s no wonder Urbano is considered one of Dubai’s most authentic restaurants. “My first ever paid kitchen job was in a familyowned Italian restaurant. That’s where I learned the basics of Italian cuisine and the passion that surrounds it: the owner would pick the basil from the window boxes and rub the leaves, and would know if the plants needed more sun or water just by smelling them.” After two years learning the ropes, Chef Carter travelled through Italy, experiencing the local fare and gathering inspiration. “Quality produce is the backbone of any cuisine, but with Italian cooking it is extra important as the best dishes are the simplest.” So how does Chef Carter ensure that Urbano is as authentic as possible? “We work closely with suppliers who live for Italian cooking. • 10g sea salt • 5g thyme

Serves one

1. Prepare the anchovy and caper

• 1 sea bass fillet • 30g anchovy and caper stuffing (see recipe below) • 10ml extra virgin olive oil • 1g sea salt • 3 dried cherry tomatoes (see recipe below) • 2g chives • 1 lemon wedge • 5ml olive oil

For the anchovy and caper stuffing • 5g anchovy fillets, finely chopped • 8g lemon zest • 15g parsley, finely chopped • 1g capers, washed and roughly chopped • 10ml olive oil

For the dried cherry tomatoes • 500g cherry tomatoes, halved

stuffing by mixing the ingredients in a bowl. Once combined, store in the fridge. 2. Place the cut cherry tomatoes on a tray facing upwards so the seeds are visible. Sprinkle the thyme and salt across, ensuring you get as much salt as possible on the tomatoes (not the tray). Leave in the oven on a very low heat (40-50°C) for 2 hours, until dried. Check regularly to make sure they don’t burn, and store in a warm, dry area until needed. 3. Drizzle olive oil over a baking tray, and place the sea bass fillet on top. Open the fillet and stuff it with the anchovy and caper stuffing. Close the fillet, sprinkle it with salt, and place in a pre-heated oven (180°C). Roast for 8 minutes. 4. Place the fish on a warm, large plate, and garnish with a cluster of dried cherry tomato halves, olive oil and chives. Serve with a wedge of lemon.

120g tiramisu cream (see recipe below) 3g cocoa powder 150ml coffee syrup (see recipe below) 4 Savoiardi ‘lady finger’ biscuits

For the tiramisu cream • • • •

18g cream cheese 18g icing sugar 25g mascarpone 60ml whipping cream

For the coffee syrup • 50ml sugar syrup • 100ml espresso

1. Prepare the tiramisu cream by beating the whipping cream and icing sugar in a mixer bowl. Add the mascarpone and cream cheese to the bowl and fold together the ingredients until the mixture is smooth and firm. Store chilled in a plastic container until needed. 2. Combine the espresso and sugar syrup in a bowl, and place the biscuits into the mixture to absorb it. Place 2 of the soaked biscuits into a small dish or ramekin. 3. Spoon half of the Tiramisu cream into the dish over the biscuits, and smooth over. Add the second layer of soaked biscuits on top of the cream mix. Add the second half of the cream to the dish and smooth over. Dust the top of the dessert with cocoa powder. Serve immediately. August 2013
