I

n the 1930’s, Ernest Henderson and Robert Moore acquired several hotels in the American state of Massachusetts with the intent of developing a hotel chain. One of the hotels they bought had its name on a giant electric sign on its roof. Realizing how expensive it would be to take the sign down, they took the path of least resistance and decided to brand all their hotels by that name. That name was Sheraton. In the 1940’s the men expanded their Sheraton chain greatly and even listed the company on the New York Stock Exchange, the first hotel chain to do so.

Sheraton was also the first Western company to operate a hotel in the People’s Republic of China, assuming management of the state-built Great Wall Hotel in Beijing, which became the Great Wall Sheraton. As of last year, the Sheraton operated 437 hotels around the world with 153,242 rooms and over 140,000 employees.

Hybrid automobiles have been gaining in popularity since the moment they were introduced. Combining the cleaner energy of an electric motor with the lengthy driving distance of a gasoline engine, hybrid cars and trucks are able to travel great distances at much lower fuel costs.

What is your full name and Job Position?

My name is Thierry Berno but you might also call me T-Bone, Tight T or Tigrou depending on how and where we met. I am the new Branch Manager for Italasia Hua Hin. How long have you been with the company?

The team of Italasia welcomed me a couple of months ago. After a short training in BKK I moved to Hua Hin. What do you like most about your job?

I love people and I love wine. I get to hang out with both in this job. Of course there is a reasonable amount of pressure associated to the position but for the most part it suits my personality very well.

Who or what led you to the wine industry?

I started in this industry in South Korea with my mentor Kwak Dong Young. She is an incredible woman, she’s the first Korean recipient of the French BP sommelier, and she still leads her company to success. I helped her build the first Korean importing company of Organic, Biodynamic and Natural wines, and as a result I was exposed to this style of wines early on and developed a fondness for them.

However I appreciate traditional wines as well and I am willing to taste anything.

Another person that mattered to me was the legendary chef Pierre Gagnaire whose passion transpired into me when we worked together on some projects in Korea. He is a force of nature in the kitchen and an incredibly gentle human being.

What are the current market trends in wine?

The market is just recovering from a devastating blow in the past 2 years so it is still hard to decipher the general trends. We continue to see a push towards more premium products and we are slightly moving back from Offtrade to On-trade as people resume going out. It also seems that the RTD category (Ready-To-Drink) is popular with young Thai consumers who are attracted to the sweet and fruity flavor profile and the colorful packaging.

Interestingly we have local trends as well and in Hua Hin we can see some

categories stand out. The wines from Puglia, and especially the Primitivo, are very strong and so are the bold wines from Veneto that use the appassimento method such as Amarone or Ripasso.

What advice do you have for someone who wants to increase their wine knowledge?

Finally, and probably due to the strong European community in Hua Hin, we have a lot of connoisseurs of white wines from Northern Italy and Austria.

Get yourself a crew of like-minded people to taste with. You will need to try a lot of wines on your journey to extend your palate and it is always easier to do so when you have people to share it with. Always welcome different opinions and stay open minded.

Your Hua Hin store has hundreds of different wine brands, which ones do you think are the hidden gems, not yet generally discovered?

If you feel shy at first, join an introduction class. You will naturally meet up with your classmates and grow together.

The wines of Alois Lageder are of fantastic value and it is a good example of a wine maker that can assemble traditions and modernity. We also have some 2007 San Giorgio by Lungarotti that requires a bit of decanting but is absolutely outstanding for the price.

What do you like to do in your free time and why?

Outside of wine, what will the firsttime visitor to your store be surprised to find?

We actually carry a complete solution for the Food and Beverage business.

We have Illy Coffee, Monin Syrup, San Benedetto Water, Chinaware and Stemware. I suppose a first-time visitor would be most surprised to find out that we distribute Plant-Based Milk with the brand Orasi.

How many locations does Italasia have in Thailand and do you have other locations in Hua Hin?

I play the bass with various bands.

I could find analogies between wines, music and cuisine all day. They are all a language in a way and the more you practice it, the more you become fluent in it.

By the way we have a project this year to open a place in Hua Hin that will appeal to all senses so stay tuned.

Tell us a surprising fact that the public might not know about you?

My Granduncle was a popular writer and one of his book received a cinema and a TV adaptation. First on the Rope (Premier de cordée) by Roger FrisonRoche.

We have 9 branches apart from Bangkok and we expanded the number of showrooms to 24. 13 in Bangkok and 11 upcountry. In Hua Hin we have the Showroom in Sundance and a warehouse on Phet Kasem road. We plan on having some pop-up stores around the city this year as well.

What are your favorite wines and why?

Wine has the surreal ability to bring back some memories of places and people. I remember getting emotional just by sniffing on a Leon Barral Valinières. I hadn’t been home for a long time and the notes of Thyme, Rosemary, Lavender, Earth and Pine sap reminded me vividly of my beloved hills in Provence. More recently the Champagne Delamotte Blanc de Blancs and the Alois Lageder “AM Sand” Gewürztraminer blew me away.

And by the way, both can make an interesting pairing with Thai Food’s bold flavours.

angkok, Thailand’s City of Angels, is bustling, boisterous, balmy, bewildering, baffling, beguiling, brilliant and perhaps even bodacious. It also boasts a bountiful choice of must-sees and must-dos for residents and visitors alike. For those who love Thai cuisine, especially Royal Thai Cuisine, the Blue Elephant Restaurant and Cooking School is at the top of the must-do list and has been since opening in 2002.

Brussels, where Thai national and now Master Chef Nooror Somany Steppe with her Belgian art dealer husband, Karl Steppe, opened the first Blue Elephant. Recognition and acclaim followed as European diners were introduced to the joyful delights of Royal Thai cuisine. Blue Elephant London, Paris and Copenhagen happened in the 1990s and were followed by Malta, Lyon, plus restaurants in the Middle East and Asia.

Though a Bangkok institution, the Blue Elephant story started in 1980 in

which opened in 2010, followed. Chef Nooror also created a retail business for those who need to keep their Thai pantry stocked. All produced in Thailand from organic ingredients, her authentic ready-mixed Thai sauces, curry pastes and powders now ship to over 30 countries. Unfortunately, the global pandemic saw several restaurants close, with Blue Elephant Copenhagen, Malta, Phuket and Bangkok still shining bright, as are the cooking schools and packaged food sides of this continuing family business.

Everything about Blue Elephant Bangkok exudes a sense of place and connection to its Thai roots. The threestory neo-classic mansion on South Sathorn Road first opened in 1903 as a department store serving the exclusive riverside residential neighbourhood.

The Thai Chinese Chamber of Commerce took ownership and occupied it for some 70 years saving the building from demolition after the war and registering it as a historical heritage site.

After building a new tower to house the expanding Thai Chinese Chamber’s

operations, careful restoration saw the now cream-yellow mansion return to its colonial-era splendour.

Inside, the restaurant flows through several rooms decorated with crystal chandeliers, Thai art and handicrafts, teak floors and louvred wood shutters.

Tables are dressed with signature white table cloths, Blue Elephant placemats, polished bronze cutlery, gleaming glassware and fresh flowers. Restaurant staff in traditional attire complete the elegant picture.

Blue Elephant’s menu is in three sections: starters, soups, and mains - made in the tradition of “Royal Thai cuisine“.

Therefore each dish is prepared as if it were for the King and Queen’s dinner table using only the best available ingredients. Careful attention to balancing the spicy, salty, sweet and sour flavours is essential, and dish presentation must also be suitable for such a distinguished table.

Our Blue Elephant food journey started with a starter sampler platter of four dishes titled Pearl Blue Elephant. A Pomelo Salad with Prawn Cakes featuring organic pomelo from Nakhonchaisri and a fried patty of fresh prawn meat, Thai garlic, and sweet corn. Betel Leaves Cananpe features a succulent grilled Banana Prawn, organic lemongrass and ginger, a tangerine chilli dressing, and a crunchy floss of rice field catfish accompanying tempura fried Betel Leaves. Rose Spring Roll - rosebud shaped and filled with free-range chicken, glass noodles and shitake mushroom with its own house sweet & sour dipping sauce.

Our final sample starter was turmericinfused Chicken Satay, homemade peanut sauce and pickled vegetables.

No Thai menu is complete without a selection of soups, and the Maprao Oon caught our eye. A creamy soup of coconut milk flavoured with the gentle heat and aroma of galangal, straw mushrooms and the succulent sweet meat of Blue Swimmer crab. Grandly served at the table with a fresh young coconut as the bowl, meaning you have the bonus of scraping the tender coconut flesh from the shells as you go.

A section of the menu titled “Thai Kitchen of Tomorrow” feature dishes where Chef Nooror and her team have let their culinary creativity go, fusing Thai flavours with European influences. We sampled two of these dishes, and both were outstanding.

Tamarind Foie Gras Des Landes was created by Chef Nooror at Blue Elephant Paris and had buttery rich, grilled Foie Gras coupled with a sauce heroing the sweet variety of tamarind the central Thailand province of Phetchabun is famous for. It was accompanied by a Thai basil-coloured sweet potato mash and the Kingdom’s most cherished “Nam Dok Mai” Mango. The other dish from this section of the menu is Black Diamond Scallops. Fresh scallops marinated in southern Thai spices, skewered on fresh lemongrass stalks, grilled and served with a black garlic sauce and avocado Salsa Dip. Our three main dishes took us from southern Thailand to a Chef Nooror signature and a dish from their Thai Kitchen of Tomorrow. Starting with the Hot Phuketian Crab Curry, rich and spicy coconut and southern spiced curry sauce, organic betel leaves, and an abundance of Blue Swimmer Crab served with rice noodles. On the menu, the disk is marked with three red elephant symbols to denote the level of spicy heat, with three being the hottest, and the curry lived up to this rating.

The signature Massaman Lamb Curry brings together free-range, grass-fed Thai Lamb from the Buriram province, sweet potatoes, and Chef’s own curry paste simmered in coconut milk and tamarind juice balanced with palm sugar. All topped with roasted nuts and served to the table in a clay pot atop a small burner with Roti and a pickled vegetable sauce. The melt-in-your-mouth lamb and rich, creamy sauce with gentle heat came together exceptionally and is understandably a signature.

The final main dish fuses the classic French Confit of Duck cooked long and slow in Graisse de Canard (duck fat) topped with caramelized tamarind sitting on a salad of Thai herb and accompanied by a spicy Issanstyle Laab sauce. The spice and heat of the bright Laab sauce pairs surprisingly well with the rich duck meat and is a triumph in ThaiFrench fusion. An added connection with this dish is the farmed ducks come from Chef Nooror’s home province of Chachoengsao, immediately west of Bangkok.

Blue Elephant’s menu proclaims that the desserts listed have been signatures since 1980, which is a testament to their appeal and continued ability to please. There is a dessert sampler platter, Star Of Siam, with a taste of the five on offer, plus house-made coconut ice cream. All delectable, though two standouts had us going back for more.

dark Belgium Chocolate and the Forgotten Husband Sticky Rice Pudding - so named because of the impact it is said to have on some diners. A coloured with Butterfly Pea flowers rice pudding, taro, longan fruit, fresh coconut juice, coconut cream and coconut ice cream.

If feeling particularly inspired to delve further into Thai cuisine, having experienced Blue Elephant, their Cooking School is on the second floor of the building. Morning and afternoon classes happen daily with a regularly changing menu. Private lessons for groups up to 12 can also be arranged, perhaps for that special occasion or celebration. Professional Chefs or those wanting to take a serious deep dive can book week long intensive programs.

hanks to the renewed confidence of their exhibitors, the 2022 edition of the Cannes Yachting Festival is shaping up to be exceptional with projections for 550 exhibitors and more than 640 boats in and out of the water.

“Visitors will enjoy discovering some real gems in-water and on land, boats of all types, equipped with traditional engines or anticipating the future with the first on-board electric, hybrid or hydrogen power systems” explains Sylvie Ernoult, Director of the Yachting Festival, adding that “We are delighted to support our exhibitors in their eco-friendly development by enabling them to showcase their innovations, in particular through our “Green Route” and “Innovation Village”. Little by little, the nautical industry is improving its environmental footprint and we too are following suit by developing our own eco-responsible commitments within the framework of the organisation of this exhibition (for example: less paper, better waste management, etc.)”.

From 6 to 11 September, Europe’s largest in-water show will be the first major international event of the season. For 6 days, under the sun of the French Riviera, the finest gems of the seas, the latest nautical equipment, exclusive high-end services and numerous innovations will all be on display for everyone to enjoy.

The Vieux Port, one of the oldest on the Côte d’Azur, plays host each year to the most prestigious boats presented by the world’s leading shipyards.

Dedicated exclusively to the motor nautical industry, some 490 boats from 5 to 45 metres are expected to be on display, of which 80 (less than 10 metres long) will be exhibited on land.

Built for the festival, this seaward extension will feature some thirty of the largest motor super yachts, all 24 metres or larger.

The Palais des Festivals has a large area devoted to luxury yachting players. Here you’ll find shipyards, architects and designers. Also displaying are ready-to-wear boating fashions, accessories, tourism institutions, marinas, and service companies, such as banks, insurance, etcetera. You’ll also find the Tender and Toys areas presenting the latest innovations. The Luxury Gallery, located in the heart of the Palais, is dedicated to the art of living. Each year it brings together an exclusive selection of famous luxury brands presenting their latest products.

The sea trial area (located outside the visitor itinerary and accessible only when accompanied by an exhibitor) has been enlarged to make sea trials easier and ensure the Festival is safe by reducing maritime traffic within the port. On the other side of the traversante, continuing on from the SYE, the Quai Max Laubeuf will present a number of large yachts. A marina will showcase twenty or so motor catamarans including some very impressive vessels up to 24 metres long and 12 metres wide. Also exhibited on this quay will be some 40 small single hull boats in-water and nearly 60 small hard and semi-rigid motor boats (5-10 metres) on land.

An area reserved for outboard and in-board engines will ensure better visibility and ease of exhibition for the leading engine manufacturers presenting products for small and mediumsized boats.

The Quai Saint-Pierre will exhibit boats ranging from 10 to 20 metres.
