At the heart of this new chapter is Chef Clément Hernandez, who brings a blend of precision, creativity and mentorship honed in some of Europe’s most respected kitchens. A graduate of the Lycée des Métiers d'Hôtellerie et Tourisme d'Occitanie in Toulouse, he re-
fined his technique at Michelin-starred restaurants including L’Ortolan, Le Parc by Franck Putelat and Le Relais Bernard Loiseau, before making Bangkok his home. Here, he cooked at J’aime by Jean-Michel Lorain, co-founded the Yenakart Group and Coquillette French Pasta Bistro, and since 2021 has served as president of the Thailand delegation of Les Disciples d’Escoffier International. At Allium, he speaks of “building a dance between kitchen and floor,” with chefs stepping out to carve, serve and flambé tableside so that dining becomes interactive, joyful and very much alive. For him, classical mastery is the foundation that allows creativity to flourish – a philosophy that runs through every plate.

The drinks list is designed to match the restaurant’s convivial spirit. Allium’s beverage programme spans an extensive global wine selection and a lineup of Mediterranean-inspired cocktails that invite guests to stay for “just one more.” The signature Allium Sangria is a natural centrepiece for the table – a vibrant combination of rosé wine, Blind Tyger gin, elderflower, peach purée and lime juice, served either by the glass or in a sharing jug for those who prefer to toast together. With its inviting bar and easy-going energy, Allium feels as much a destination for an aperitif or a late-night drink as it does for a full evening of dining.
The dress code is smart casual, with shorts and slippers not permitted, underscoring the restaurant’s balance of comfort and polish. Some nights are meant to be remembered. Others are meant to be talked about. Chit Chaat, the new Indian restaurant on Sukhumvit Soi 24, is built firmly for the latter – a place where conversation comes spiced, cocktails come with opinions, and Punjabi warmth meets Bangkok’s appetite for drama.
Rooted in the lively, social spirit of Punjabi hospitality, the restaurant takes its name from two of India’s greatest exports: chit-chat and chaat. It brings together the art of conversation – and just a hint of gossip – with the vibrant street-side flavours of chaat, carving out a fresh space in a city where Indian dining has long been split between budget canteens and white-tablecloth formality. Chit Chaat is casual yet considered, stylish yet soulful; a social
dining concept that insists Indian food can be expressive, modern and full of heart while staying true to its roots.
The room is bold, bright and just a little dramatic, where colour, rhythm and a touch of chaos all find their place. Playful Indian iconography, witty details and nostalgic art with a modern wink set the tone, while the playlist shifts gears as the evening unfolds –easing in over chai and picking up tempo towards a late-night groove. From the first pour to the last call, every table feels like the best seat in the house.
In the kitchen, nostalgia and newness share top billing. To start, Tuna Pani Puri Chaat pops with tangy waters and spice, while Crispy Shiso Chaat gives the classic street snack a crisp, contem-
porary twist. Rajasthani Lal Maas Tacos wrap fiery mutton in soft Mughlai bread for a cross-cultural bite that feels both familiar and unexpected. Then come the Naan Rolls, Chit Chaat’s signature showstoppers: Butter Chicken tucked into fluffy naan with tomato-cashew gravy, Smoked Duck with garlic and Rajasthani spice, and the Baadshah Lamb Leg Roll with slow-braised meat and greens – bold, handheld and unapologetically messy in all the right ways.
Mains stay loyal to Indian staples without ever playing it safe. Goan Chicken Vindaloo turns up the tang with a vinegary chilli kick; Kashmiri Rogan Josh simmers gently in a chorus of 14 aromatic spices; and Paneer Makhani arrives swirled in a creamy

tomato-cashew sauce. For something heartier, Shahi Lamb Leg Musallam comes glazed in almond-cashew paste, while Mutton Nehari is slow-cooked overnight until it practically slips off the bone.
Desserts keep the drama going. Ghevar, the traditional Rajasthani honeycomb-style crisp, is paired with rich saffron cream – sweet, airy and hard to resist. Shehd-e-Jaam bathes deepfried milk dumplings in syrup, while Mango Kulfi and Dil-e-Rasmalai close the evening on a nostalgic note: creamy, indulgent and comfortingly familiar.
At the bar, the cocktail programme leans into theatre. Here, drinks arrive as much as performance as they are pour. Coolie No. 1 blends Bacardi white rum with masala chai, vanilla and lassi foam, served in a miniature attaché



case reminiscent of those carried across India’s railway platforms. Tiffin Box mixes 42 Below vodka with mango, kokum, cumin and house ginger beer, presented deconstructed in a three-tier tiffin for guests to assemble – or leave in the team’s creative hands. Chaiwala combines Bombay gin, cucumber, Midori and a hint of chilli, poured from a kettle into small glasses like a station tea seller. Ticket Master, a polished blend of Dewar’s whisky, St-Germain, spiced honey and kewra, is served with a silver tray of biscuits and an old-fashioned drink ticket that the server punches before pouring.
Steering the kitchen is Chef Narayan Bahadur Panthi, a curry and tandoor specialist with more than two decades of experience spanning India, Croatia and Bangkok. Before Chit Chaat, he
spent eight years at Charcoal, where his flame-driven cooking and depth of flavour earned a loyal following among the city’s diners. His approach here is soulful, expressive and technique-driven – the kind of cooking that makes noise without ever needing to shout.
As the night builds, the music grows bolder, the cocktails loosen collars and strangers start to feel like old friends. At Chit Chaat, silence isn’t golden; it’s just suspicious.

Villazzo | Ocean House at V Villas Hua Hin – MGallery Collection recently hosted an exceptional gastronomic event as 1-MICHELIN Star Chef Charles Coulombeau presented a limited-edition menu blending French refinement with Japanese technique. Held on 21 and 22 November 2025, the MICHELIN Takeover marked the restaurant’s first collaboration of this calibre, bringing one of France’s most exciting culinary talents to Hua Hin’s beachfront.
Chef Charles, celebrated for his expressive Franco-Asian fusion style, leads both La Maison Dans Le Parc and Yozora in France—restaurants that achieved MICHELIN-star status within a year of opening. His culinary approach unites classical French craftsmanship with Japanese precision, resulting in dishes that balance artistry,
innovation, and exceptional ingredients. His accolades include the distinguished 2020 Les Taittinger Culinary Award, widely considered one of the industry’s most demanding honours.
Guests were welcomed into the newly renovated Villazzo | Ocean House, where contemporary architecture, water-inspired design, and sweeping ocean views created an elegant stage for the two-night experience. Internationally acclaimed British pianist Richard Sully performed live, adding a musical dimension that elevated the ambience and complemented the evening’s culinary narrative.
Chef Charles crafted a bespoke menu exclusively for the event. The dining journey opened with two delicate canapés, followed by a series of four courses showcasing the hallmark elements of his Franco-Japanese sensibility. Highlights included amberjack confit and rillettes ravioli enriched with coconut
milk and pumpkin purée, and poached scallops presented with leek and shiso fondue, genmaicha sauce, bottarga and a whisper of chili oil.
Wagyu sirloin with beetroot and mango provided a rich and balanced third course, while dessert unfolded through a layered chocolate panna cotta topped with miso brownie, light chocolate mousse, and roasted buckwheat. A petit four of bitter almond marshmallow with orange gel brought the experience to a refined close.

As the island’s first and only Michelin-starred restaurant, a distinction it has held since 2018, PRU is far more than a destination for exquisite cuisine; it is a fully realized vision of sustainable luxury, where every detail is rooted in the land and sea that surround it. It is also Thailand’s first restaurant to receive the Michelin Green Star, underscoring a deep, long-term commitment to responsible gastronomy rather than a fleeting trend.
Its name carries a dual meaning. In Thai, “pru” describes the fertile place where forest meets sea, a landscape rich with life. It is also an acronym for “Plant, Raise, Understand” –a philosophy that informs everything from how ingredients are sourced to how they are served. What began as a farm-to-table approach has evolved into what Executive Chef and Co-Owner Jimmy Ophorst calls “community-to-fork,” a culinary ecosystem that honours farmers, foragers, fishermen and artisans across Thailand as much as the ingredients themselves.




At the heart of PRU is Dutch chef Jimmy Ophorst, who earned his first Michelin star at the remarkable age of 29, without ever having worked in a Michelin-starred kitchen. Raised in Honselersdijk in the Westland region of the Netherlands, in a family of greenhouse farmers, he grew up understanding seasonality, soil and the quiet discipline of growing things. That early immersion in agriculture now shapes his life in Thailand, where he has become one of the most passionate advocates for local, sustainable produce. His cooking is inspired by the precision and polish of European fine dining, yet his canvas is purely Thai – often spotlighting rare ingredients that even locals may never have encountered.
In late 2023, PRU entered a new era with the opening of its purpose-built home at the entrance to Trisara – a striking, solar-panelled structure with an architectural profile as crisp and contemporary as the plating that emerges from its kitchen. Guests begin their evening in a chic lounge, sipping cocktails and enjoying delicate canapés as the sun sinks into the Andaman. From there, they ascend to a glass-walled dining room where floor-to-ceiling windows frame views of sea and sky, while the open kitchen provides a second stage of theatre.
With just 36 seats, PRU feels intimate by design. Ten are set at a kappo-style counter that places diners shoulder-to-shoulder with the culinary team, close enough to hear the hiss of the pans and the snap of a just-cut herb. Additional tables in the main room offer a more classic setting, while The Reserve – a private dining room set inside a modern wine cellar – hosts up to ten guests amid more than 200 carefully selected labels. The absence of a solid wall between kitchen and dining room creates an atmosphere of connection and transparency: guests can see, smell and hear each step of their meal being brought to life.
Sustainability is woven into PRU at every level. The kitchen is entirely electric, avoiding fossil fuels wherever possible and drawing power from renewable sources, including rooftop solar panels. When flame-cooking is essential, wood and house-made charcoal take centre stage. Food waste is rigorously separated and composted, then transported back to Pru Jampa Farm – completing a virtuous circle in which yesterday’s peelings nurture tomorrow’s harvest.
Pru Jampa itself is central to PRU’s identity. Spanning ten hectares on the site of a reclaimed tin mine – once the backbone of Phuket’s economy – the farm has been transformed into a lush, organic landscape of vegetables, herbs, fruit trees and pasture. Created by Chef Jimmy more than a decade ago, it supplies seasonal produce and free-range eggs not only to PRU but also to sister restaurant JAMPA and select Trisara outlets. It is both pantry and playground, a living laboratory where new varieties can be tested and forgotten ingredients rediscovered.
The commitment to locality extends beyond the plate. PRU collaborates with Thai artisans for almost every tactile element of the experience: lounge chairs and tiles are crafted by local makers, artwork is sourced from Thai artists, and every dish is presented on ceramics from Chiang Mai’s InClay Studio. Even the cutlery and serving pieces are chosen to reflect the hands that created them, reinforcing the restaurant’s sense of place.

McGuire, long recognised as a pioneer of naturally luxurious furniture, invited Bangkok-based architect and designer Bill Bensley to translate the creatures and textures of the Cardamoms into functional works of art. The result is a collection that feels at once sculptural and sensual—tables, chairs, commodes and mirrors that echo antlers, feathers, scales and paws, all rendered in a rich language of stone, metal, timber and rattan.





The collection explores a tactile palette that feels grounded in the earth itself. Black and brown petrified wood, with its ancient density, becomes tabletops that feel carved from geological time. Crystal white agate, cool and luminous, recalls the flash of waterfalls cutting through dense jungle. Sandblasted oak reveals the quiet drama of grain and texture, while handwoven rattan, steam-bent by artisans, nods to McGuire’s storied heritage in natural materials.
These elements are brought together in bold silhouettes that retain McGuire’s reputation for comfort and liveability. The Wild Elephant’s Cocktail Table channels the quiet strength of the jungle’s largest resident. Four cast-resin feet anchor a smooth crystal agate top, creating a piece that can be used singly or clustered in multiples. It feels playful yet monumental, much like a small herd gathered in a clearing.
In The Clouded Leopard’s Commode, sandblasted oak becomes a canvas for a bold walnut veneer inlay that forms the abstract visage of a jungle cat across four drawers. It is a piece that rewards repeated viewing—the more one looks, the more the feline presence emerges from its subtle, geometric patterning.
The peacock appears twice in the collection as a dramatic motif for seating. The Peacock’s Throne Dining Chair and Peacock’s Throne Lounge Chair both evoke the bird in full display, their textured bronze frames and handwoven back panels fanning out like plumage. These are statement pieces designed to command attention at the head of a dining table or as sculptural anchors in a living space.
Elsewhere, The Sambar’s Lounge Chair interprets the branching antlers of the sambar deer through a sophisticated interplay of rattan and oak, offering a generous, organic form that feels both striking and inviting.
