Esta publicación es la tarjeta de presentación de la cadena Hoteles Andaluces con Encanto (HACE), que en esta edición os anuncia numerosas novedades.
The latest edition of our magazine Encanto Andaluz bids you a warm welcome to the hotel. This publication represents the Hoteles Andaluces con Encanto hotel chain (HACE), which in this issue has plenty of news and new features to report.
En primer lugar, de lo que nos sentimos más orgullosos, es de reabrir nuevamente las puertas del hotel Puerto Sherry, que incorporamos el pasado año a nuestra cadena y que tras varios meses de reforma, luce su mejor esplendor en esta primavera, asomándose a la Bahía de Cádiz desde la privilegiada atalaya en la que se encuentra, en la marina de Puerto Sherry, en El Puerto de Santa María. Junto a un frondoso pinar, ofrecemos unas magníficas instalaciones y un cuidado servicio, basado en nuestra apuesta por la calidad, la innovación, el medioambiente y la formación de nuestros empleados. Con ello, creemos haber sumado a nuestra cadena un establecimiento genuino, dando así razón a nuestra filosofía, como pueden comprobar en el reportaje que abre las páginas de esta nueva edición de nuestra revista.
First and foremost we are incredibly proud to reopen the doors of the Puerto Sherry hotel, which became part of our chain last year. After several months of refurbishment, this spring it shines resplendently over the Bay of Cadiz from its privileged vantage point on the Puerto Sherry marina in El Puerto de Santa María. In addition to a leafy pine grove, we also offer some wonderful facilities and a meticulous service based on our commitment to quality, innovation, the environment and staff training. We believe we have added to our chain a truly authentic establishment that lends credence to our philosophy – as you will see in our opening report.
En este número, además, desde Jerez, donde contamos con los hoteles Jerez y Villa De Jerez, de cinco estrellas, damos acogida al director del circuito de Jerez, José Ramón García, como responsable de uno de los mayores atractivos turísticos de esta provincia de Cádiz donde nos asentamos y de toda Andalucía. No en balde, nuestro hotel Jerez siempre ha estado ligado al trazado jerezano desde su nacimiento, acogiendo a equipos de motociclismo, automovilismo, autoridades y aficionados, que en sucesivas ediciones han llegado a nuestra ciudad al socaire de alguna prueba o entrenamiento convocado en el circuito.
This issue comes to you from Jerez, where we also have the five-star hotels Jerez and Villa De Jerez. In it we welcome Jerez race track director, José Ramón García, the man in charge of one of the biggest tourist attractions in the province of Cadiz, where we are based, and also in Andalusia. It is no wonder that our Jerez hotel has always been linked to the Jerez circuit since its inception, welcoming both motorcycling and motor racing teams, authorities and fans, who over the years have continued to come to our city for testing or training at the track.
Otro protagonista de éxito que viene a nuestras páginas es el tenor Ismael Jordi, un jerezano que ha sabido labrarse una carrera profesional que le está paseando por los mejores teatros españoles y europeos gracias a su talento. Jordi declara que “Jerez es una ciudad donde se entiende de arte”. No en vano Jerez es la cuna del flamenco, del vino y del caballo andaluz, que conforman un triunvirato subyugante.
Another successful figure featured on these pages is the talented tenor Ismael Jordi, a Jerez-born singer whose illustrious career has taken him to the most prestigious theatres in Spain and Europe. Jordi calls Jerez “a city that understands art”, and rightly so - not for nothing is Jerez the cradle of flamenco, wine and the Andalusian horse, a captivating trio.
Arte, cultura, parques naturales, playas de fina arena, campos de golf, Cádiz es una provincia privilegiada, donde se puede pasar de estar en un parque natural a una playa en pocos minutos.

SaludaGreetings Enrique Moresco · Alcalde de El Puerto de Santa María · Mayor of El Puerto de Santa María El Puerto de Santa María, Ciudad de los Cien Palacios, es uno de los enclaves turísticos más importantes de la Costa de Cádiz, localizada en la desembocadura del río Guadalete, en el corazón de la Bahía gaditana enclavada en las tierras del Sur de Andalucía. Con una población de casi 90.000 habitantes, esta localidad Atlántica cuenta con más de 22 kilómetros de costa, con 16 kilómetros de playas de fina arena que perfilan su silueta con largas horas de sol.
El Puerto de Santa María, known as the ‘City of the Hundred Palaces’, is one of the most important tourist spots on the Cadiz coast, located at the mouth of the Guadalete River and at the heart of the Bay of Cadiz in southern Andalusia. With a population of almost 90,000 inhabitants, this Atlantic location benefits from more than 22 kilometres of coastline and 16 kilometres of fine sand beaches that sculpt its outline with long hours of sunshine.
El Puerto de Santa María es, además, un lugar excepcional para perderse, un destino en el que abre al visitante un amplio abanico de posibilidades para disfrutar: desde cruzar a bordo de un velero y surcar las aguas de la Bahía gaditana, almorzar en un bello rincón de las callejuelas del casco histórico, pasar la tarde en uno de sus entornos naturales, visitar alguno de los muchos escondrijos que guardan años de historia o tomar el sol en una de las muchas terrazas que adornan sus calles y se dejan tostar por la salitre del agua de sus playas. Como alcalde de El Puerto, una de las prioridades marcadas para perfilar un futuro con las mejores perspectivas ha sido invertir en la promoción del sector turístico en la ciudad, uno de los sectores que a día de hoy generan mayor riqueza y empleo en El Puerto. Y, como en todo, ha habido que innovar, que cambiar, que regenerarse, que buscar nuevas técnicas y propuestas, para seguir siendo un reclamo tanto a nivel nacional como internacional.
El Puerto de Santa María is also a wonderful place in which to lose oneself; a destination that offers the visitor everything from sailing over the waters of the Bay to lunch-time delights in a beautiful corner of the historical centre; from an afternoon spent at one of its natural parks to visiting one of the many hidden spots steeped in years of history; from soaking up the sun on one of the many terraces adorning its narrow streets to letting the sunshine and salt wash over you on the beach. As mayor of El Puerto, one of my priorities for creating the best possible future has been to invest in the promotion of the city’s tourist sector, something that these days will generate greater wealth and employment in El Puerto. As with everything, one has had to innovate, to change, to regenerate and to seek out new techniques and ideas in order to continue attracting visitors from home and abroad.

Promoting the city of El Puerto is made relatively simple for a number of reasons: by having such a wonderful heritage and excellent weather, our ability to offer a flawless and traditional gastronomy, and, of course, by an excellent location on the Cadiz coast in southern Andalusia. Add to this its people, its human heritage, way of life, its joy and charms, its fulsome way of seeing things, its way of expressing emotion, of laughing, of gesturing, of speaking and expressing itself in the many different facets of life.

However, this city project - ruled by a clear urban model - could not happen if not for companies like the hotel group HACE who are prepared to invest in El Puerto. HOTEL PUERTO SHERRY: Uno de los mejores destinos frente a la Bahía de Cádiz La reapertura del Hotel Puerto Sherry esta primavera, después de una concienzuda reforma, ofrece a los visitantes a la provincia, unas soberbias instalaciones en uno de los mejores destinos frente a la Bahía de Cádiz. La panorámica que ofrece el hotel tanto desde gran parte de las habitaciones, como desde la terraza del bar es impresionante.
Reopened this spring, the fully thorough refurbished Hotel Puerto Sherry now continues to offer visitors to the province some fabulous facilities at one of the best destinations on the Bay of Cadiz. The panoramic views offered by the hotel is truly impressive, from most of its rooms to the bar terrace.
El hotel está pensado también para acoger congresos o reuniones de trabajo, para lo que cuenta con tres salones, con capacidad para 30 asistentes, así como un bussiness center y otro salón, el Goleta, con aforo para 50 personas. Igualmente, el teatro, con aforo para 150 personas, es el sitio ideal para congresos no multitudinarios, que ofrece incluso cabinas de traducción simultánea.
The hotel is also designed to host conferences and/or business meetings, hence the three rooms with capacity for 30 delegates as well as a business centre and an additional room (the Goleta), which can accommodate up to 50 persons. The theatre accommodates 150 guests and is the ideal place for smaller conferences, even including interpreting booths.
El Salón Galeón está considerado como salón multiusos, siendo habitualmente utilizado como oficina técnica de las regatas. Para grandes eventos, el hotel cuenta con el Salón Columbus, con capacidad para 300 asistentes, que a su vez puede panelarse y convertirse en otros cinco salones con capacidad para 35 personas.
The Galeón is designed as a multipurpose room, normally used as a technical office for the regattas. For big events, the hotel boasts the Columbus room with a capacity for 300 delegates, which can be partitioned and made into five smaller rooms each holding up to 35 persons.

The Puerto Sherry hotel is home to the Club de Mar (Yacht Club), which attracts more than one hundred sailing fans both from the province as well as other Andalusian cities. The hotel has designed and created for them a range of exclusive services that will allow them to enjoy their passion with some first-rate facilities.

Coincidiendo con el inicio de las obras de las suites de lujo con las que se dotará al complejo en el plazo de dos años, conversa con nuestra revista sobre este enclave que él considera “privilegiado” y referente nacional e internacional. Frente a esta marina, Bores nos explica la proyección de futuro de este puerto “con instalaciones envidiables”, cuando la primavera asoma entre jarcias y amarres en este bello rincón de El Puerto de Santa María
Pedro Bores is the president of the Puerto Sherry Marina. Coinciding with the start of work on luxury suites that will enhance the complex within two years, he talks to our magazine about the spot he considers both “privileged” and a national and international point of reference. Sitting opposite the marina, Bores explains the future plans for this port with “enviable facilities” when spring appears between the rigging and moorings in this beautiful corner of El Puerto de Santa María.

El alojamiento consta de 33 suites con servicios de máxima calidad y confort, con superficies que van desde los 150 a los 350 metros cuadrados. Juan Ligués y Antonio Ruiz Jiménez, los prestigiosos arquitectos que han realizado el proyecto, han cuidado al máximo todos los detalles para que el nuevo establecimiento sea un espacio especial, distinto y complementario a todo el complejo de Puerto Sherry. Las suites tendrán una categoría de cuatro estrellas y acceso a todos los servicios del Hotel HACE Puerto Sherry. Su inauguración está prevista para la primavera de 2013.
- The accommodation consists of 33 suites spanning 150 to 350 square metres with services of the highest quality and comfort. Juan Ligués and Antonio Ruiz Jiménez, the prestigious architects who have implemented the project, have planned everything brilliantly down to the last detail to make sure that the new establishment is a special, distinct space, yet one which complements the entire Puerto Sherry complex. The suites will be four-star and enjoy access to all HACE Puerto Sherry services. We anticipate its opening in spring 2013.

- Unas infraestructuras envidiables, en constante mejora y con servicios técnicos de última generación de los que pocos puertos deportivos andaluces disponen. Un ejemplo de esto es el Travelift 200 Tm, maquinaria para elevación de barcos de hasta 40 metros de eslora. Los múltiples atractivos de la zona y su gente, y la excelente localización, son otros factores distintivos de Puerto Sherry respecto a otros puertos andaluces.
- Some enviable infrastructure that is continually being improved, with cutting-edge technological services of the sort that few Andalusian leisure ports have. - Puerto Sherry es un puerto muy especial. Actualmente, es uno de los mayores centros de entretenimiento de la costa occidental. A la intensa actividad deportiva: regatas, campeonatos de golf, pádel y pesca, hay que añadir una dilatada agenda cultural y de ocio: conciertos, ferias, exposiciones, mercadillos, terrazas, discoteca, etc., que hacen de Puerto Sherry un lugar representativo de la diversión. El nuevo Malecón de Alegría y las pantallas de hormigón del puerto, ambas obras del pintor gaditano José Manuel Paredes, con dimensiones de récord y de gran colorido, marcan este carácter divertido y alegre que siempre ha caracterizado a Puerto Sherry. - ¿Qué actividades van a centrar el verano deportivo de Puerto Sherry en esta edición? - El calendario náutico deportivo del puerto es muy extenso ya durante todo el año. - Puerto Sherry is a very special port. It is currently one of the greatest entertainment centres on the western coast. As well as plenty of sporting activity such as regattas, golf and paddle tennis tournaments and fishing competitions, there are also a large cultural offer that includes street markets, terraces, clubs, etc. which make Puerto Sherry a great place for recreation and leisure. The colourful new “Malecón de Alegría” painting and record-size mural on the port’s concrete screens, both works by the Cadiz painter José Manuel Paredes, highlight the fun and lively character of Puerto Sherry. - What activities are going to be the focus of Puerto Sherry’s sporting summer this year? - The port’s sailing calendar is actually very extensive throughout the year. About to finalise the highly important winter league organised every year by the Puerto Sherry Club de Mar (Yacht Club), this April the second intercontinental “Puerto Sherry-Ceuta-Melilla” regatta will take place, to be followed by a number of regattas of different classes. One must also mention the Puerto Sherry Club de Mar and the Isla Ebusitana Foundation’s challenge to the Monaco Yacht Club in terms of the race between El Hispania, a sailboat that belonged to Alfonso XIII, and its twin, the Tuiga, the insignia boat of the Monaco Yacht Club. This competition will be a historic milestone in clas-

Quiero destacar que la Semana Náutica celebra este año su 40º edición, estando anunciada la eventual presencia del Príncipe Felipe.

- Is the Bay of Cadiz now one of the epicentres of national nautical tourism, in your opinion?
- Las numerosas competiciones deportivas, las embarcaciones que pasan por Puerto Sherry y el reciente acuerdo con la Fundación Isla Ebusitana, con sede en Puerto Sherry, por el que veleros de época tan emblemáticos como el Hispania, el Giraldilla, el Isla Ebusitana o la Goleta Sadko tendrán su base en Puerto Sherry, así lo confirman. Desde que comenzamos con el relanzamiento de Puerto Sherry, hace ahora dos años y medio, nuestro objetivo ha sido convertir el puerto en un centro náutico de referencia tanto a nivel nacional como internacional. Desde entonces, la actividad náutica de Puerto Sherry se ha incrementado notablemente. Contamos con varios equipos internacionales que entrenan en Puerto Sherry y estamos potenciando constantemente la actividad náutica de la zona. La Junta de Andalucía está terminando la construcción de un Centro de Alto Rendimiento de Vela para deportistas de élite, que será gestionado por la Federación Andaluza de Vela, que tiene su sede también en Puerto Sherry. El enclave estratégico del puerto es paso para todo tipo de embarcaciones que navegan entre el Mediterráneo y el Atlántico. Actualmente, Puerto Sherry es un punto importante del turismo náutico nacional y tiene el potencial para convertirse en un centro náutico de referencia para toda Europa. Queremos competir con los mejores del sector y para ello tenemos empresa, un buen equipo profesional, un estrategia y magníficos socios. The Andalusian Regional Government is about to finish construction of a High Performance Sailing Centre for elite sportsmen and women, which will be managed by the Andalusian Sailing Federation, which is also based in Puerto Sherry. The port’s strategic location is suitable for all kinds of vessels sailing between the Mediterranean and the Atlantic. At the moment, Puerto Sherry is an important point in national sailing tourism and has the potential to become a centre of reference for the whole of Europe. We want to compete with the best in the field, and to do so we count on a business project, a great professional team, a strategy and wonderful associates. The Royal School of Equestrian Art, one of the “must see” tourist attractions in Jerez de la Frontera, was founded for the purpose of conserving, selecting and improving the Andalusian horse breed. Tourists can choose from many shows to enjoy, but without a doubt the show, “How the Andalusian Horses Dance” is an authentic equestrian ballet. Its choreography is based on Classic and Vaquera Dressage reprises, with quintessentially Spanish music and outfits typical of the 18th century. Los visitantes pueden hacer el recorrido por la pista del circuito, si ese día no hay ninguna reserva, y conocer las peculiaridades del mismo con vídeos y una charla que se ofrece.

Ruinas del poblado de Doña Blanca: El yacimiento de Doña Blanca, situado en el término municipal de El Puerto de Santa María (Cádiz), presenta una importancia singular en el panorama de la colonización fenicia en el Mediterráneo occidental. Su excavación, entre 1979 y 1995, ha sacado a la luz restos de murallas, necrópolis y viviendas de entre los siglos VIII y III a. C. Con un excepcional grado de conservación, el yacimiento guarda las claves sobre el paso de los fenicios por la Bahía de Cádiz y su relación con los pueblos indígenas de la Baja Andalucía.

The ruins at Doña Blanca: The Doña Blanca site, located on the municipal boundary of El Puerto de Santa María (Cadiz), is of particular importance for our knowledge of Phoenician colonisation in the Western Mediterranean. Its excavation between 1979 and 1995 has brought to light remains of walls, a necropolis and dwellings dating back to the 8th to 3rd century B.C. Exceptionally well preserved, this site is the key to finding out more about the path of the Phoenicians through the Bay of Cadiz and their relationship to the native settlements of Lower Andalusia.

It offers an enormous variety of flora and fauna, endless spaces where nature abounds in all corners, virgin beaches, reserves, marshes, forests and dunes. A great way to visit this park is to do so through one of its Visitor Centres, of which there is one in each of the three provinces, and take a guided tour in allterrain vehicles, a trip which is mainly characterised by the chance to access areas that are inaccessible by other means (in order to protect the environment). Discover landscapes full of light, and endless white sand beaches only to be reached on foot. Observe birdlife in its natural habitat, aquatic life in the various lagoons, birds of prey up in the pines and, depending on the time of year, see the biggest stork colony in Europe.

En el Parque Natural los Alcornocales se agrupa un complejo de sierras donde se desarrolla, en excelente estado de conservación, el mayor alcornocal de la Península Ibérica y uno de los más importantes del mundo. El atractivo natural de este Parque no finaliza aquí, ya que acoge unos bosques de galerías excepcionales, capaces de transportarnos a regiones subtropicales ausentes en la actualidad del continente europeo, al estar formados por especies típicas de estos ambientes que han encontrado en este lugar un refugio adecuado para desarrollarse. Se localizan en los denominados «canutos», valles profundos y estrechos excavados por los ríos.
The municipal area of Tarifa is proud to lay claim to two natural parks, a nature reserve and a natural monument. The Los Alcornocales Natural Park comprises a cluster of sierras, or small mountain ranges, and is home to an excellently preserved cork oak forest - the largest in the Iberian Peninsula and one of the most important in the world. The Park’s attractions don’t stop there: it also has forests with wonderful canopies that transport us to subtropical regions absent from the rest of Europe (comprising as they do species typical to these environments, which have found a suitable refuge here). They are located in the so-called canutos; the deep valleys and straits dug out by the rivers.

Disfrutar del campo y del toro bravo es el espectáculo que ofrece Alvaro Domecq en su finca “Los Alburejos”, en la carretera de Medina. Una exhibición en la que no falta la doma vaquera y de alta escuela con la que tantos éxitos alcanzó el reconocido jinete jerezano, a la vez que podemos acercanos al arte de manejar las vacas y sus becerrras, con el semental, así como ver las yeguas con sus potros, en un recinto muy bien acondicionado para observarlo. El espectáculo se ofrece los miércoles, viernes y sábado a las 11,30 horas.
Beautiful countryside and fighting bulls are the sights offered by Alvaro Domecq on his farm estate Los Alburejos on the road to Medina. A wonderful display of doma vaquera (western dressage) and high school dressage with which the renowned Jerez rider triumphed so often is also provided. At the same time visitors are brought closer to the art of managing cattle and their calves, and have the chance to observe both the stud bull and the mares with their foals. The show is held on Wednesday, Friday and Saturday at 11.30 am.

Jan de Clerck, Medalla de Cádiz por su trayectoria empresarial en la provincia Jan de Clerck is awarded the Cadiz Medal for his business career in the province El fundador de la cadena de hoteles HACE, Jan de Clerck, recibió el pasado sábado 19 de marzo, la Medalla de Cádiz por su trayectoria empresarial a lo largo de medio siglo, en los que ha situado la provincia de Cádiz gracias a sus hoteles, como destino turístico reconocido internacionalmente. El empresario recibió el galardón en el acto organizado con motivo del Día de la Provincia, en la Diputación de Cádiz, junto al resto de galardonados, entre ellos, a título póstumo, el pintor jerezano Francisco Toro Iglesias. Jan de Clerck agradeció este premio que viene a reconocer el esfuerzo de un empresario que apostó por nuestra provincia cuando aún no se había producido su despegue dentro del sector turístico nacional e internacional.
The founder of the HACE hotel chain, Jan de Clerck, was awarded the Cadiz Medal on Saturday 19th March for a fifty-year career in which he has turned the province of Cadiz into an internationally renowned tourist destination thanks to its hotels. The businessman received the award in a ceremony organised as part of Province Day at the Cadiz Provincial Council together with the rest of the prizewinners, which included a posthumous award for Jerez painter Francisco Toro Iglesias. Jan de Clerck extended his thanks for this prize, which recognises his efforts for and commitment to our province at a time when it had not yet taken off within national and international tourism.

Desembarcan en Puerto Sherry un merlín azul de 270 kilos, capturado en la Bahía A 270-kilo marlin caught in the Bay is brought to shore in Puerto Sherry Un curioso desembarco tuvo lugar en fechas recientes en el varadero de Puerto Sherry, tras la captura por una embaración de recreo de un merlín azul de 270 kilos, en aguas de la Bahía de Cádiz. El ejemplar fue capturado por la embarcación “Salmedina”, con base en dicho puerto, cuyo armador es Alberto González de la Peña. Según los tripulantes, las labores de captura del pez se demoraron casi tres horas y dada su longitud, 3,35 metros, una vez en Puerto Sherry fue necesario emplear la maquinaria de varada para poder desembarcarlo en el foso del varadero ligero. Desde hace 25 años se encuentra inmerso, primero en la génesis del circuito con su labor dentro del equipo que estuvo al frente de ejecución de las obras de construcción y acondicionamiento y posteriormente en la dirección del mismo, desde donde ha sido testigo directo de los acontecimientos deportivos que se han vivido en el trazado jerezano. Por su retina han pasado grandes premios de Fórmula 1, del Mundial de Motos, cientos de entrenamientos de distintas especialidades, y es uno de los responsables de los logros alcanzados, y de que hoy por hoy, el trazado sea considerado uno de los mejores del mundo.
José Ramón García needs no presentation. For 25 years he has been immersed in the world of motor sport, firstly in the genesis of the circuit – where he played a decisive role in the team heading its construction - and later in managing it. He has been witness to the great sporting events held at the Jerez circuit; he has seen the Formula 1 grand prix, the Motorcycling World Cup, hundreds of training sessions of all varieties and, last but not least, is one of the people responsible for the circuit’s success and the fact that at this moment in time the track is considered one of the best in the world.
¿Cómo fue la génesis del circuito?
How did the track come about?
En Jerez existía un grupo de aficionados que desde hacía muchos años tenían inquietud por las carreras de motos. Entonces sólo había dos circuitos en España, el de Calafat, en Tarragona, que no tenía mucha actividad y el del Jarama. España estaba carente de circuitos y había una tradición motorista importante, con Angel Nieto como figura estelar. Esta inquietud caló en el entonces alcalde Pacheco, que decidió construir el circuito con dos finalidades. Primero, promocionar los deportes de las dos y cuatro ruedas, así como servir de motor económico de la ciudad, en el sector turístico. Ya estaba en perspectiva la celebración de la Expo ’92, y por eso se “bautizó” a la primera curva del circuito con ese nombre. Ello propició que hubiera una promoción hotelera a los que había que dar una continuidad importante en su actividad, situándose en primera línea el Hotel Jerez, emblemático, conocido en el extranjero y en España entera.
There was a group of fans in Jerez who for many years was very interested in motor racing. At that time there were only two tracks in Spain - the Calafat in Tarragona, which didn’t see much action, and Jarama. Spain lacked circuits but there was an important motoring tradition, with Angel Nieto as its star. This interest had an impression on the former mayor Pedro Pacheco, who decided to build the track with two aims. Firstly to promote sports on two and four wheels, and secondly to become the city’s economic motor in the tourist sector. Expo ’92 was in the offing and this was why the first bend on the circuit was christened by that name. This prompted more hotel accommodation to add important continuity to those that already existed. And the iconic Hotel Jerez, renowned both abroad and throughout Spain, set itself in first place.

Lo mejor, es la configuración orográfica del circuito, que es perfecta, porque cuenta con anfiteatros naturales, y luego está el gancho que tiene Andalucía, su ubicación en una zona que es la que reúne todo el carácter del andaluz auténtico, en un entorno magnífico, con los caballos y las bodegas. The best thing is the orographic configuration of the track, which is perfect because it has natural amphitheatres. Then there’s the Andalusian charm, its location in an area that brings together all the character of true Andalusia in magnificent surroundings, with the horses and bodegas. I should also mention the hospitable nature of the Jerez people, the likes of which doesn’t exist anywhere else in the world. Then, for the drivers, the location of the

What are you planning for the future? Once the renovation contract has been signed, which is currently in negotiation, we will try to keep offering new finishing touches. The track’s continuity and maintaining the calendar is important in itself. The track has a special charm. It’s situated in the wonderful triangle of Seville-Huelva-Cadiz and this isn’t going to change. It will improve when the economic situation changes. Its continuity will be assured if the relevant authorities take care of the matter. I’ll ask you what all the F1 fans have been asking us: will this great attraction ever come back to our city? At the moment it’s not viable. Last weekend the track was full of fans looking to see Fernando Alonso, to which was added a great weather and a symbolic entrance fee. Right now this is all we can offer. We could charge more and even make a profit, but that’s not our goal. We want to make the fans happy. Bringing a race here involves such high costs that at the moment there aren’t enough resources to pay for it. It’s been said that the circuit will have an exhibition for visitors. A better reception than the current one is being pre-

Una vez firmado el contrato de renovación, que se encuentra actualmente en fase de negociación y estudio, trataremos de ir ofreciendo nuevas pinceladas. La continuidad misma con el mantenimiento del calendario ya es por sí importante. El circuito tiene un encanto especial. Está ubicado en el triángulo privilegiado Sevilla-Huelva-Cádiz y se sigue manteniendo. Mejorará cuando cambie la coyuntura económica. La continuidad está asegurada si las autoridades competentes cuidan este asunto. Le traslado la pregunta que nos hacemos todos los aficionados a la F-1 ¿Volveremos a tener el gran circo en nuestra ciudad? A día de hoy es inviable. El pasado fin de semana se llenó de aficionados que buscaban ver a Fernando Alonso, a lo que se sumó el buen tiempo y un precio de entrada simbólico. Ahora mismo es lo que podemos ofrecer. Podríamos cobrar más dinero e incluso ganar, pero ese no es nuestro objetivo. Queremos contentar a la afición. Traer una prueba del gran circo supone un canon tan elevado, que ahora mismo no hay recursos para pagarlo. Se ha comentado que el circuito va a contar con una exposición para los visitantes.

¿Qué fue de aquel proyecto de albergar una colección privada de vehículos históricos?
What happened to the project to house a private collection of historic vehicles?
Pues finalmente se frustró. Se trataba de traer la colección de los hermanos Del Val a un recinto de nueva construcción dentro del circuito. Ellos exigieron la construcción de unas instalaciones adecuadas, no pidieron nada más, pero finalmente no pudo hacerse por cuestión de presupuesto.
It came to nothing in the end. We tried to bring the collection belonging to the Del Val brothers to a section in the new building within the circuit. They asked for the construction of suitable facilities; they didn’t ask for anything else, but in the end we couldn’t do it due to the budget.
Después de tantos acontecimientos vividos al frente de la dirección del circuito durante estos 25 años, ¿Qué recuerdos gratos o no tan gratos, le quedan?
After so many events experienced as head of management over these 25 years, what are the good or not-so-good memories that stick with you?
Pues me viene a la memoria el gran esfuerzo organizativo que originaron los grandes premios de F-1. En aquellos momentos no había experiencia, se partía de 0 aquí. Pero la fuimos adquiriendo y aquí están, este circuito gusta muchísimo a los pilotos. De hecho se quedarían aquí toda la pretemporada, pero las escuderías exigen tests en distintos trazados. Aquí se puede probar las 24 horas del día, no hace frío, no nieva. En motos se partía de cierta experiencia anterior y no fue tan difícil. Me quedo con la imagen del circuito rebosando de gente por todos lados. Había más alegría económica que ahora, que ha bajado, como todo. Aquello fue impresionante. En cuanto a lo negativo, fue complicado tener a todo ese público y no saber dónde aparcarlo. Hubo un año que llovió a mares, el aparcamiento de entonces no reunía buenas condiciones, y hubo que sacar a los coches con tractores. Pero después de tanto esfuerzo, hemos conseguido un circuito modélico.
Well, there springs to mind the huge organisational effort required to launch the F1 grand prix. At that time we didn’t have any experience; we started from scratch. But we built it up and here we are: the drivers really like the track. In fact, they’d like to stay here all pre-season, but the motor-racing teams demand tests at different tracks. Here you can test 24 hours a day; it’s not cold, it doesn’t snow. In motorbike racing, we had a certain amount of experience and it wasn’t so difficult. I have a very vivid memory of the track brimming with people on all sides. There was more economic good cheer back then; that’s gone down now, like everything. That was impressive. In terms of negative things, it was difficult to have all those people and not know where to put them. One year it rained buckets; the parking facilities at the time weren’t great and we had to get cars out with tractors. But after all that effort, we have achieved a model circuit.

We were awarded two IRTA prizes for Best Organisation in the championship. It’s always a massive honour. But you only understand the impact once you’ve left the issue behind. You don’t see it day to day.

How can fans visit the track?
Tienen que contactar con nuestra recepción. Lo único que exigimos es que sea en grupos. Se les lleva en un recorrido por todo el circuito y si no hay activiades, se les da una vuelta por la pista en furgoneta, y si las hay, se le enseña la pista a través de los caminos de servicio. También se les muestran vídeos.
They need to contact our reception desk. The only thing we ask is that it’s in groups. There will be a tour around the circuit and if there are no activities on that day, we’ll take them round the track in a minibus. If there are things going on, we’ll show them the track via the service paths. There will also be videos.

Mañana tiene función en Sevilla y tiene que evitar cualquier riesgo para su voz, su preciada herramienta de trabajo. A su 37 años, este jerezano se inició en el Coro del Teatro Villamarta, después vendrían sus estudios con el siempre recordado Alfredo Kraus en Madrid donde recibió de manos de la Reina Sofía el premio Al Mejor Alumno; su inicio profesional, sus triunfos en el extranjero y en los teatros de nuestro país. Lleva una agenda intensa, repleta de actuaciones, pero sin perder nunca el norte de los objetivos que tiene marcados para su carrera, sin prisa pero sin pausa; ni el sur, donde nació, tiene a su familia “y donde vuelvo cada vez que puedo, porque aquí es donde mejor se vive del mundo”. Ismael Jordi arrives at the Hotel Villa Jerez where we have arranged to meet one dreary afternoon, shielding himself from the bitter cold. He’s got a performance in Seville tomorrow and must protect his voice, his most precious tool. At 37 years old, this Jerez-born singer began his journey in the choir at the Teatro Villamarta and went on to study with the unforgettable Alfredo Kraus in Madrid where he was awarded the prize for Most Outstanding Pupil by Queen Sofía herself. From there came his professional beginnings and successes both abroad and in the theatres of Spain. He has an extremely intensive schedule, filled with performances, but has never lost track of his career goals, progressing surely and steadily; nor forgotten his southern homeland, where his family lives and “where I go back whenever I can, because it’s the best place in the world to live” Camisa blanca, corbata gris, jersey azul y abrigo, Ismael Jordi tiene la elegancia de quien está acostumbrado a meterse en la piel de los personajes a los que interpreta en las óperas a las que da vida, se emociona o ríe en papeles variopintos, dejándolos a merced de las inflexiones de su voz, considerada una de las mejores del panorama lírico español Y todo empezó en un coro, en el Teatro Villamarta. Tras la reinauguración del teatro se creó un coro. Yo era aficionado al flamenco y a la música clásica. En mi casa se escuchaba a Vicente Fernández y a Gardel. Me gustaba y entré en el coro; allí me animaron a que estudiara canto, y me matriculé en el conservatorio de Sevilla. Corría el año ’97. Entonces surgió una obra, “Los amantes de Teruel”, que producían un grupo de teatros españoles, faltaba alguien para hacer el papel de Adel y me eligieron a mí. Allí conocí a varios alumnos que estaban con Alfredo Kraus, que me animaron para que fuera a una prueba a Madrid, al Reina Sofía, donde daba clases el maestro Kraus. Fui. Éramos cincuenta de todo el mundo. Kraus era mi ídolo. ¿Con qué obra se presenta? Interpreté un aria de “La Traviata”, le dije “Maestro, con su permiso”, porque ésa era la obra emblemática de su repertorio. Antes que yo había entrado un barítono argentino que duró poquísimo. La verdad es que estaba muy nervioso. Cuando terminé me acerqué para que me dedicara un libro que llevaba. Terminé charlando con él y me dijo, “venga mañana”. Al día siguiente éramos veinte. Cuando terminamos, nos informaron

ENTREVISTA: ISMAEL JORDI OLIVA, TENOR: INTERVIEW: ISMAEL JORDI OLIVA, TENOR: que nos avisarían con una carta. Me acerqué de nuevo a él para agradecerle su gentileza y me dijo “nos veremos pronto”. A los tres meses recibí la carta de que había sido admitido. Estuvo un año formándose con el mejor. ¿Qué destacaría de su maestro? Tuve una formación muy intensa en un reducido grupo de estudiantes. Lo que en el conservatorio se da en diez años, allí se hace en cinco. Destacaría la profesionalidad, el respeto que le tuvo a esta carrera. Los que hemos estudiado con él tenemos ese deber de que no se pierda. No volverse loco con el repertorio, no abarcar demasiado trabajo. Después de once años de carrera, supongo que tendrá alguna anécdota que contarnos. Pues os cuento. Desde hace ocho años acudo a menudo a Verona, en Italia, donde estudio con el maestro Angelo Capobianco. Allí estaba cuando recibí una llamada de mi representante para contarme que el tenor que participaba, en Munich, en “Lucrecia Borgia” se encontraba enfermo y había que sustituirlo. Eran las 12 de la mañana. La obra empezaba a las 19 horas y me dijeron que buscara el primer avión y me fuera a Munich. Imposible. No daba tiempo material de desplazarme hasta el aeropuerto y esperar a que saliera el primer avión. Al rato, recibí un llamada: iban a recogerme urgentemente para trasladarme al aeropuerto. Allí me esperaba un avión privado que me llevó de inmediato a Munich. A los pies del avión me esperaba un vehículo, y media hora antes de la función, ya estaba yo en el teatro.
amargado cuando llegué al teatro, y me has hecho feliz”. El cantante de ópera no tiene el marketing de un cantante pop o un futbolista. Pero yo me río de los fans. Los nuestros en el mejor sentido de la palabra, son auténticos talibanes. Algunos me siguen todas las actuaciones por Europa, como se sigue a un torero. ¿Sigue siendo la ópera la gran desconocida? Ahora menos. Se está haciendo una buena labor. En los teatros se ve a un nuevo público, al público hay que llevarlo al teatro, porque la ópera no es elitista. En Jerez, por ejemplo, en los ensayos de “La Traviata” estuvieron como público alumnos elegidos de los institutos de la ciudad. En Ámsterdam hacen lo mismo. De todas maneras, yo recomiendo a quien vaya por vez primera que elijan obras como “La Traviata”, “El Barbero de Sevilla” o “Carmen”. ¿Qué proyectos tiene para este año? Estos días estoy en Sevilla. Después voy a Hamburgo, con “La Traviatta” y “Rigoletto”; en Bilbao llevaré “Oneguin”, con “la maravillosa Ainhoa Arteta”; en Ámsterdam iré con uno de los mejores directores del momento, sir Simon Rattle, que es el director titular de la Filarmónica de Berlín, a interpretar “Rosenkavalier”; en verano estaré en el Festival de Macerata, con “Rigoletto” y agosto y septiembre serán para descansar. En otoño tengo cita con el Villamarta, en Jerez, con “Lucia di Lammermoor” y en diciembre subo al Liceo de Barcelona, mi debut será con “Linda de Chamounix” de Donizetti. Un repertorio intenso.
Ha trabajado con los más grandes. Con Plácido Domingo compartió escenario durante un mes en Valencia. ¿Cómo fue esa experiencia? Plácido es increíble. Lleva 40 años en el top. Es alucinante. Tiene ese punto de humildad que te llega. Supongo que la primera vez que se subió a un escenario estaría nervioso. ¿Sigue sintiendo lo mismo cada vez que comienza una función? Sí, si no estoy nervioso, no estoy tranquilo. Me da seguridad sentir la intranquilidad en el estómago. Siempre pienso: Voy a pasármelo bien y soy un privilegiado porque hago lo que me gusta. ¿Le molesta la fama? No. Nuestro trabajo no termina cuando baja el telón. Es reconfortante cuando se te acerca un espectador y te dice: “Estaba

Tengo firmadas actuaciones hasta el 2015. ¿Y cuál es su sueño en la ópera, qué papel le gustaría interpretar? Mi papel sería el gran Werther. Alfredo Kraus lo fue. Pesa esa comparación. Creo que dentro de unos años estaré a punto, unos tres o cuatro años. ¿Cómo definiría su voz? En mis inicios era un tenor lírico ligero. Ahora llevo un repertorio más lírico, como “Romeo y Julieta”, y románticos líricos. Ese es mi techo. Luego la voz evoluciona. Estoy en un Verdi joven. El repertorio francés también se me da muy bien. Rossini me vuelve loco, pero sólo he podido cantar “El Barbero de Sevilla”. Soy cantante de frases largas. Un repertorio más romántico. Ahí es donde mi voz se explaya.

¿Y con qué teatros de los que conoce se queda? Ámsterdam, Viena y Berlín. Aman las voces y lo notas. ¿Es profeta en su tierra? Sí, es difícil. Tengo amigos que me dicen que tengo mucha suerte. Se lo debo a Jerez. Me siento muy querido, eternamente agradecido. Cuando camino por la calle y me reconocen. Aquí hay muchos aficionados que me siguen. Además, la experiencia de ser Rey Mago fue muy bonita. ¿Hay afición a la ópera en Jerez? Sí, bastante alta para el tiempo que llevamos. El Villamarta ha hecho un gran trabajo. Además, hay tradición en la ciudad, aquí venían en tiempos los Ases Líricos. Jerez es una ciudad con mucha sensibilidad para el arte. Se entienda o no, sabes cuando algo es bueno o malo. Tenemos nuestro flamenco, los toros, es una ciudad de arte. ¿Cómo es su vida? Es una vida muy bonita. Te enriquece mucho como persona, pero tiene su sacrificio. Y apura Ismael Jordi un refresco para encaminarnos a los vistosos jardines del hotel Villa Jerez, mientras comenta las excelencias de nuestro clima, de nuestra gastronomía y de la calidad de vida que disfrutamos en esta ciudad. Nos despedimos y se apresura para ponerse al volante camino de Sevilla, para seguir repartiendo su arte por los teatros del mundo.

With his white shirt, grey tie, blue jumper and coat, Ismael Jordi has the elegance of someone accustomed to getting under the skin of the parts he plays. In the operas to which he breathes life, he laughs or cries in roles of all kinds, leaving them to the mercy of his inflections of voice - considered one of the best in Spanish opera. And it all began in a choir at the Teatro Villamarta. A choir was created after the theatre reopened. I was a fan of flamenco and classical music; in my house we listened to Vicente Fernández and Gardel. I liked the choir so I joined it; there they encouraged me to study singing and I joined the Seville Conservatory. That was 1997. Then a production came up - Los amantes de Teruel (Teruel’s Lovers) by a group of Spanish theatres, and they needed someone for the role of Adel and picked me. It was there I got to know various pupils who were studying under Alfredo Kraus, and they encouraged me to audition in Madrid, at the Reina Sofía, where the maestro Kraus was teaching. I went. There were fifty of us in the entire world. Kraus was my idol. What piece did you do? I sang an aria from La Traviata, I said, “Maestro, with your permission” because it was the iconic piece in his repertoire. Before me, there was an Argentine baritone who didn’t take long at all. The truth is I was very nervous. When I finished, I went up to ask him to sign a book I had. I ended up chatting with him and he told me, “Come back tomorrow”. The next day there were twenty of us. When
we finished, they told us they would let us know the outcome by letter. I went up to Alfredo Kraus again to thank him for his kindness and he said, “We’ll see each other soon.” After three months I got a letter saying I’d been accepted. You trained with the best for a year. What would you say about your maestro? The training was really intensive in a smaller group of pupils. What you do at the Conservatory in ten years you do in five there. I would highlight his professionalism, the respect he had for this career. Those of us who studied with him have this sense of duty not to miss it. Not to go mad with the repertoire, not to take on too much work. After eleven years, I suppose you’ll have a few anecdotes to tell us! Yes, I’ll tell you. For eight years I’ve often gone to Verona in Italy, where I study with the maestro Angelo Capobianco. I was there when I got a call from my agent telling me that the tenor participating in Lucrecia Borgia in Munich had fallen ill and I was to replace him. It was twelve o’clock in the afternoon. The performance started at 7pm and they told me to get on the first plane to Munich. It was impossible. There wasn’t enough time to get to the airport and wait for the first flight. So after a little while, I got another call: they were going to collect me then and there to take me to the airport. A private plane was waiting for me, and immediately took me to Munich. There was a car by the plane, and half an hour before the performance I was at the theatre.

You’ve worked with the greats. You shared a stage with Plácido Domingo for a month in Valencia. What was that experience like? Plácido is incredible. He’s been at the top for forty years. He’s amazing. He has the kind of humility that moves you. I suppose you were nervous the first time you went on stage. Do you still get that feeling before every performance? Yes; it’s not exactly nervousness, but I’m not at peace. The unease in my stomach actually gives me a sense of security. I always think: ‘I’m going to have a great time and I’m privileged because I’m doing what I love.’ Does fame bother you? No. Our work doesn’t end when the curtain comes down. It’s comforting when a spectator comes up to you and says, “I was fed up when I came to the theatre, but you’ve made me happy.” The opera singer doesn’t have the kind of marketing that a pop singer or footballer does. But I laugh at the fans. Ours are real Talibans in the best sense of the word! Some follow me to all the performances around Europe, in the way that people follow a bullfighter. Is opera still the great unknown? Less so now. They’re getting there. At the theatres you can see a new kind of audience; you have to take the public to the theatre because opera isn’t elitist. In Jerez, for example, at the La Traviata rehearsals the audience was made up of pupils chosen by the city institutes. They do the same in Amsterdam. In any case, I recommend that anyone going for the first time chooses pieces like La Traviata, the Barber of Seville or Carmen. What projects have you got on for this year? At the moment I’m in Seville. Then I’m going to Hamburg with La Traviata and Rigoletto; in Bilbao I’m doing Oneguin with “the wonderful Ainhoa Arteta”; in Amsterdam I’m working with one of the best directors of the moment, Sir Simon Rattle, who is also director of the Berlin Philharmonic, playing Rosenkavalier; in the summer I’ll be at the Festival de Macerata doing Rigoletto and August and September will be for taking a break! In autumn I’ve got a date with the Villamarta in Jerez, with Lucia di Lammermoor and in December I’ll be going to the Barcelona Liceo; my debut there will be Linda de Chamounix by Donizetti.

That’s quite a repertoire. I have signed performances until 2015. And what’s your dream in opera; what role would you like to play? My ideal role would be the great Werther. Alfredo Kraus was. That comparison is quite a responsibility, but I think that within a few years I’ll be ready, about three or four years. How would you define your voice? At the start, I was a lirico-leggiero tenor. Now I have a more lyrical repertoire, like Romeo and Juliet, and romantic opera. That’s my limit. Then the voice evolves. I’m in a Young Verdi. I’m also pretty good at the French repertoire. Rossini drives me mad, but I have only been able to sing The Barber of Seville. I sing long phrases. A more romantic repertoire. That’s where my voice opens up. Which of the theatres you know do you prefer? Amsterdam, Vienna and Berlin. They love voices and you can fell it. Are you a prophet in your own land? Yes, it’s difficult. I have friends who tell me how lucky I am. I owe it to Jerez. I feel very beloved here, eternally grateful. When I walk down the street and people recognise me. There are lots of fans here who follow my progress. Plus the experience of being Rey Mago (one of the Three Wise Men) was lovely. Is there a love of opera in Jerez? Yes, quite a lot for the time we’re in. Villamarta has done a great job. Plus, there’s tradition in the city; the “Lyric Aces” came here time ago. Jerez is very sensitive towards the arts. Whether you understand it or not, you know when something is good or bad. We have our flamenco, the bulls... it’s a city of art. How’s life for you? It’s a very nice life. It really enriches you as a person, but some sacrifices have to be made. Ismael Jordi finishes off his drink to go for a stroll around the bright colourful gardens of the Villa Jerez hotel, commenting on the delights of our climate, our gastronomy and the quality of life in this city. We say goodbye and he dashes off for Seville to continue spreading his art around the theatres of the world.

We normally stay at your hotel twice a year for motorcycling and 4x4 holidays that we organise with friends in Morocco. Your communication with the Puerto de Algeciras, the plentiful parking spaces and above all the staff’s willingness to help (they even let us leave a trailer of motorbikes in the garage at no charge) are what make us come back year after year… Not forgetting, of course, the wonderful steak tartar at the restaurant and the quality of the same. I’ve just come back from my holiday and I wanted to tell you that my stay at the Hotel Playa de la Luz was fantastic. It’s a very friendly hotel and we had a great time. Hotel Villa Jerez Hotel realmente bueno muy pequeñito en el centro de Jerez. Personal encantador y muy familiar que te hará sentir como en casa. Fuimos con un bebé de 3 meses al que no le faltaron atenciones (era el único en el hotel). Clima muy tranquilo y muy buen ambiente, selecto. Calidad del sueño excelente, rodeado de jardines no se oye ni una mosca. Muchos y buenos servicios (iba de boda y me peinaron allí y todo), también canguro. El restaurante está bien y sobre todo el buffet en la piscina por las mañanas. Muy recomendable con excelente calidad precio. Volveré seguro.
A really lovely, very small hotel in the centre of Jerez. Charming, very friendly staff who will make you feel at home. We went with a threemonth-old baby and they couldn’t have been more attentive (he was the only baby at the hotel). Very temperate climate and lovely exclusive atmosphere. Excellent quality of sleep; surrounded by gardens, you can’t even hear a fly. Lots of great services (I went for my wedding, and they did my hair there and everything), including babysitter. The restaurant is good and particularly the buffet at the pool in the mornings. Highly recommended with an excellent price-quality ratio. I’ll definitely come back.

La inmensa mayoría de los hoteles y complejos turísticos cubren sus necesidades energéticas adquiriendo energía producida por combustibles fósiles (carbón, petróleo y gas natural) que contaminan el aire y favorecen el cambio climático mundial. La extracción, el refinamiento y el transporte de los combustibles fósiles pueden causar, asimismo, daños ambientales. Las mejoras en las prácticas de administración interna y las medidas para incrementar la eficiencia, así como la utilización de energías renovables pueden disminuir la dependencia de energía generada con combustibles fósiles.
Hotels use considerable amounts of energy in running their day-to-day and leisure activities. In many establishments, the cost of energy is the second-highest expense after salaries. This high demand is usually due to the use of technology that requires plenty of energy in order to provide modern amenities, such as air-conditioning, to a large number of guests. The vast majority of hotels and tourist complexes cover their energy requirements by using energy produced from fossil fuels (coal, petroleum and natural gas) that pollute the air and encourage global climate change. The extraction, refinement and transport of fossil fuels may also cause environmental damage. More energy-efficient internal administration processes and measures, as well as the use of renewable energy may reduce dependence on energy generated by fossil fuels.

· Revisamos periódicamente el consumo de energía. El control diario o semanal del consumo energético permite detectar niveles anormales y cuantificar el ahorro cuando se instalan equipos eficientes o se aplica una práctica adecuada.
- We periodically revise energy consumption. Daily or weekly checks of energy consumption allow us to detect abnormal levels and quantify potential savings from installing efficient equipment and applying more suitable working practices.

LOMO DE URTA CON ARROZ CREMOSO DE ERIZO DE MAR SEABREAM FILLET WITH CREAMY SEA URCHIN RICE INGREDIENTES: . 150 g de lomo de urta desespinado . 50 g de arroz bomba . 50 g de yema de erizos . 1 carabinero . 25 cl de fumet de urta
. 50 g de cebolla pica fina . 1 diente de ajo . Sal fina . 20 g de mantequilla . 5 cl de aceite de oliva
INGREDIENTS: . 150 g deboned sea bream fillet . 50 g bomba rice . 50 g sea urchin yolk . 1 large red prawn . 25 cl seabream fumet
. 50 g finely chopped onion . 1 garlic clove . Finely ground salt . 20 g butter . 5 cl olive oil
PREPARATION:

Creamy sea urchin rice:
En un recipiente estofamos un fondo de cebolla,ajo y aceite, agregamos el arroz bomba,seguidamente echamos el fumet y por ultimo las yemas de erizos. Coceremos el arroz durante 15 min. a fuego lento, lo rectificaremos de sal y le incorporaremos la mantequilla hasta conseguir el punto cremoso.
Stew the onion, garlic and oil in a pot and add the bomba rice. Then add the fumet and lastly the urchin yolks. Cook the rice for 15 minutes on a low heat, add the salt and butter until achieving a creamy consistency.

Salpimentaremos el lomo de urta, para marcarlo a la plancha por la piel, pondremos el lomo en una placa y lo meteremos al horno a 175 ºC durante 8 min. aproximadamente, acto seguido marcamos el carabinero en la sarten y recerbamos al montaje
Season the seabream fillet to sear on the grill, then put the fillet on a tray and place in the oven at 175 ºC for approx. 8 minutes. Then sear the prawn in a frying pan and assemble.

Tiramos una línea de reducción de vinagre de jerez, pondremos el arroz en el centro del plato y colocaremos encima el carabinero y posteriormente el lomo de urta.. lo decoraremos con un poco de aceite de perejil e hierbas frescas.
Trickle a line of sherry vinegar reduction, put the rice in the centre of the plate and place the prawn and then the seabream fillet on top. Dress with a little parsley oil and fresh herbs.
