Every year the “Hoteles Andaluces con Encanto” Group publishes its magazine in an effort to allow its readers to participate in our hotel project which is targeted at letting our clients know how important they are to us, to make known our internationally recognized hotels, and the team of professionals that endorse us and our future projects.
The future strategy of the HACE Group is founded in specialization, clearly oriented towards the type of charming hotels we provide. Typical Andalusian architecture and interior design, cared for facilities, the best locations, and quality service. Although to talk about the future, we must first have a look back to the past and analyze the path the “Hoteles Andaluces con Encanto” Group has made with more than 40 years of experience in the field, and five five-star and four-star hotels which can be classified into four groups:
City Hotels: Hotel Jerez in Jerez de la Frontera and Hotel Guadacorte Park in Los Barrios. Beachfront Vacation Hotels: Hotel Playa de la Luz and Hotel Duque de Nájera, both located in the town of Rota. Boutique Hotels: Hotel Villa Jerez also located in Jerez de la Frontera. Rural Hotels: Hotel Aguas de Algar our current Project in the town of Algar.
The HACE Group is currently developing its sixth project, Hotel Aguas de Algar which is located at the Tajo del Aguila Tourism Complex in the town of Algar of the province of Cádiz. Its unique setting nestled between the national wildlife parks of Grazalema and Los Alcornocales, will round out the groups rural tourism offer. The hotel will consist of 73 rooms and 30 cottages along with a carefully selected gastronomical experience, health spa, and a wide variety of touristic activities. Along with the Hotel Aguas de Algar project, we are also contemplating the creation of the Valley of Cádiz Hotel School.
We have also created a managing agency to incorporate the management of other hotels which of course, follow our philosophy and group identity. This group will include centers for purchases, reservations, marketing and a management team. The way we travel has dramatically changed in the past few years. The average tourist is much more informed than in the past. Anyone of us from our own homes can not only plan and organize a complete holiday, but also express our opinions and experiences on travel blogs and portals where other travelers can keep these remarks in mind when they are planning their own business or holiday trip. This form of “Social Marketing” places hotel owners with a crucial goal since the only way of controlling these commentaries is by offering high quality facilities and services. It’s no longer acceptable to simply post the best looking photo of the hotel on the internet or simply remark that it is located on the beachfront. If the expectations of the client have been met, they will surely recommend the hotel to others.
Due to all the changes that have occurred in the tourism industry and in an effort to satisfy our client’s expectations, we are reinforcing our presence through internet channels (Internet Distribution Services), realizing the potential of our website (www.hace.es) and optimizing our websites’ “findability” in the most popular search engines (Search Engine Optimization). We of course must still keep in mind the more traditional channels of distribution (Tour Operators, Computer Reservation Systems, Global Distribution Systems, etc…). We are also doubling our efforts in the corporate conventions and incentives market but above all, strengthening our leadership with international tour operators primarily in central Europe.
To sum up, Hoteles Andaluces con Encanto, wishes to achieve sustainable growth by incorporating new management projects and by evolving in the different distribution channels based on client reservation tendencies, both in the anticipation of the reservation, and the medium selected as well.
I am convinced that the future of the HACE Group is a promising one, primarily because with each new project we undertake, we still feel the same excitement as when we began back in 1966 with the Hotel Playa de la Luz. We are developing ambitious projects which rely on the latest in technological advances and human resources, with the final objective of offering our clients the most satisfaction and commodities possible. To achieve this, we have invested in the latest software and have created a winning team of professionals of the hotel industry.

The Royal Andalusian Equestrian Arts Foundation in Jerez de la Frontera, is world famous for its exhibitions such as the “Dancing Andalusian Horses”. It is a unique showcase that exhibits the effort that the foundation has placed in this institution which has been praised by the Council of Toursim, Commerce and Sports departments of the Regional Government of Andalusia.
From the outside, the “Dancing Andalusian Horses” exhibition constitutes the maximum degree of effort which occurs within the foundation whose prestige and fame, acquired though many years, is associated to the image of this institution. Although the reason for its existence and the involvement of this institution goes far beyond.
The Royal Andalusian School of Equestrian Arts, as a cultural and social vehicle of the Andalusian equestrian heritage, assumes and develops multiple and varied authorities such as the advanced schooling of riders, the training of technical experts of the equestrian world, or the selection of Spanish thoroughbreds for mating among other things.
The “Recreo de las Cadenas” Palace, dates back to the 19th century and was designed by Garnier, the same architect who created the Paris Opera House. Its design is inspired by renaissance forms with discreet hints of the baroque, and is surrounded by magnificent gardens. The building serves multiple purposes as a center for conventions.
The “Dancing Andalusian Horses” exhibition is an authentic equestrian ballet with genuine Spanish music and wardrobe dating back to the 18th century. Its choreography reprises many riding styles including classical, cattle equitation, and many other areas of traditional riding. In each showing there are 6 to 8 choreographies enacted. All of them maintain the same spectacular level throughout the show and are programmed by the institute to include the following styles: cattle riding, classical style, carriages, dressage and jumping, and carousel.

Museo del Arte Ecuestre
Museum of Equestrian Arts
The Museum of Equestrian Arts allows you to travel on a distinct journey through the equestrian world from its beginnings, to the Olympic Games of Athens where riders and horses of the Royal School obtained the silver medal in dressage.
The museum plans to create a unique, live and interactive experience soon. In the near future it will be offering an unforgettable experience: live examples of the Przewalski horse, the only species of wild horse which arrived here over 12,000 years ago and comprises the first link of the equestrian evolution. Other horses that have been deemed wild are actually descendents of domestic horses which have grown up in the wild.
Visitors will also bear witness to the dangerous jousting games that the knights of Jerez used in the medieval age to prepare for war. We will then see how these games evolved into the harmless exhibitions of the equestrian arts. These same exhibitions have been carried down through the ages and have found their way into the “Dancing Andalusian Horses” show performed by the royal school. Horses can talk, and at the museum you can learn to hear them, how to easily distinguish the different equestrian sounds. An interactive virtual horsewoman will answer all of the questions you may have regarding the world of the horse, many of which are known by very few people. The final rooms contain an interactive system which invites guests to compete among themselves regarding the knowledge they have gleaned from their visit.
Museo del Enganche
Hitching Museum
A hitching consists of a carriage, the horses that pull it, and the harnesses that bind the carriage to the horses. The Royal Andalusian School of Equestrian Arts Foundation has created the Hitching Museum to empower, popularize and keep alive the hitching tradition. It serves the public as a reminder of the cultural heritage they possess.

There are many carriage museums, but none of them integrate the carriages, harnesses and horses into one package. The Hitching Museum of the Royal Andalusian School of Equestrian Arts Foundation invites you to take part in this passionate world with all of your senses, as it is the only true Hitching Museum.
The first thing that visitors will find is a large patio which comprises a riding school where the Royal School trains its horses exclusively for hitches. Further on we arrive at an area which houses the carriage and harness exhibits which come to life thanks to virtual reality and interactive systems. Our journey continues through the stables where we will feel the pulse of the horses and then return to the main patio where we will observe the grooming of the horses, how they are fed, the hay loft, and how the carriages are maintained. The tour through the Hitching Museum is a very live experience, interactive, and quite unique. Life merges with art and art merges with life. The carriages on their own are works of art, and when they are joined by horses they evoke the splendors and emotions of art in motion.
Computerized technology allows for every visitor to create their own hitching, selecting the carriages, harnesses and different number of horses they desire, and allows them to submerge themselves in their history and usage. For example, to understand why one of the more sporting carriages in the collection has such a unique shape, it is explained that this was due to the obesity that had befallen its owner, King George IV. This special carriage was created to allow him to guide the carriage even though he was quite large and heavy.
Many of the carriages have born witness to important historical and social events. The museum allows you to relive these moments. When viewing the open carriage you can see how it is prepared for special events, an example of one of the most important: the wedding of Princess Elena.
The Royal Andalusian School of Equestrian Arts Foundation is becoming a unique world renowned center for schooling, interpretation, and the divulgence and presentation of the equestrian arts. In the museum we come in contact with this world through history, and the “Dancing Andalusian Horses” exhibition gives us a chance to view it before our very own eyes.
Along with the museum, the doors to the palace, designed by Garnier – author of the Paris Opera House, are open to visitors. Guests can also enter the Harnessing Room where they can see how the harnesses that the Royal School uses are created and restored and how the master harnesser transmits the art or shaping leather to his apprentices.
The rest of the facilities such as the riding school, galloping track and stables are also included in the visit to the museum as they are all fundamental parts of the conservation, teachings and spreading of this very noble art. J

Its location has served through the centuries as a lookout throughout the history of this town. The port of Rota has opened its doors to different cultures and civilizations: the Phoenicians, the Tartessus, the Romans and the Moors, after which it was recuperated by the Christians.
Adjacent to the wall that served as the fortification of the town, was the Bastion of “La Culebrina” which received its name from a large bronze artefact in the days of Felipe II which was plundered in 1702 by the Dutch-Anglo invasion of our coasts, during the War of Succession. In 1898 during the Hispanic-American Wars the military governor of Cádiz, the Duke of “Nájera” – D. Juan de Zavala y Guzmán, built the fortification which was named after him, using the foundations of the old bastion and houses which were located on Carmen Street.

With the signing of the agreement written in 1989 by the Town Hall of Rota and the Department of Defense, the Minister of Defense
presented the Town Hall of Rota various military installations. In 1996 the Mayor of Rota - D. Felipe Benítez Ruiz-Mateos, began
the process of transferring the ownership of the “Duque de Nájera” fortification where a hotel would be built under the same name. In
September of that same year, a model of the project was presented in the Hotel Playa de la Luz.
Exhibited in the central patio of the hotel is one of the iron artillery cannons used during the 18th century which was found during the
excavation and demolition of the old military fortification. A partial area of the old stone wall of the fortress has also been preserved and is located in the solarium of the hotel.
Finally the inauguration of the hotel took place on June 24th 1998
and since then 10 years have passed. Even though the building is still very young, its foundations are steeped in the past. The history of the area gives it prestige and its name, the Hotel Duque de Nájera.

“ Like a ship anchored in the port of Rota a peaceful corner in the Bay of Cádiz it gazes out at the Atlantic Ocean, captivating surrounded by the sun’s rays and ocean breeze with the smell of the sea that invades everything.”
The result: an elegant hotel with a total of 92 spacious and comfortable rooms, most of which look out over the ocean, are air conditioned, include terraces and excellent bathrooms - many of which include spacious showers.
The hotel also includes; buffet and ‘A La Carte’ restaurants, café, bars, gardens, and 5 versatile meeting rooms for conventions with the latest in audio-visual technology. Complementary to these highlights we offer our guests everything they need to make their stay a gratifying one such as; a swimming pool, deck chairs, bicycles, parking garage, a sauna and gymnasium with an open view to the ocean and the Rota port, a panoramic solarium, public internet access, and various leisure activities.
But by far the most remarkable asset of this hotel is the friendliness of its staff who dedicates their best smile and friendliest gesture to the attentions of our guests. This is what brings our guests back to us, and in turn demonstrates to us they feel right at home in our hotel. Their Royal Majesties, the King and Queen of Spain confirmed this on their visit in September of 2002.

HOTEL DUQUE DE NÁJERA
Nuestros clientes nos confirman año tras año que nuestros esfuerzos tienen la recompensa de su agradecimiento, y qué mejor reconocimiento para un hotel: Our clients confirm to us year after year, that our efforts are rewarded by thier gratitude, the best aknowledgement for any hotel: From our usual residence in the Eastern Piranese on a lovely winter day on which 8 hours ago it started to snow creating a winter wonderland, I remember the wonderful contrast with the Cádiz area. That first sensation we felt in autumn ten years ago, when we were looking for a change of scenery for our little Mariona, we found our way to the HACE Hotels. Upon crossing the entire peninsula, we arrived in Rota through its narrow streets of the old quarter and passing the “Castillo de Luna” castle on the left, we found the doors open to the majestic Hotel Duque de Nájera.

The good climate of the season allowed us to partake in the local tourism of the area, enjoy long bicycle rides, play on the beaches, and enjoy the tranquility that is characteristic of the hotel. Upon our leaving we expressed our gratitude for the way we had been treated, but it was not usual for us to repeat our holiday destinations at the time. Then the summer arrived, along with the curiosity to experience Rota during this season, and we returned once again. The kindness of the locals - especially the hotel staff, the long conversations with other families while the Activities Staff entertained our children and the excitement of meeting new found friends again is the reason we have selected the Hotel Duque de Nájera as our holiday destination for the past 10 years. Many thanks to all for making each one of these years a special summer! Congratulations, we hope to share with you this celebration of your ten year anniversary. Gastó-Jiménez Family

noticias / news Jan DeClerck, Premio Andalucía de Turismo 2007 Jan DeClerck Wins the 2007 Andalusian Tourism Award
J We would like to bring to a close this small homage that commemorates the tenth anniversary of the Hotel Duque de Nájera with a poem by D. Enrique Carmona dedicated to D. Félix Morión - the director of the hotel during these past ten years - whose professionalism and hard work have elevated the hotel to the position it now holds:
“ My friend Félix Morión you ask me if there are any faults in this hotel ‘your bastion’, but I find it perfect. Restaurants, café, rooms, reception, everything breaths happiness and you can feel the attention. ” Thank you, a warm hug, Enrique Carmona – October 2001

This group of travel agents and journalists were able to experience first-hand, the offerings of one of the most solicited tourism destinations in the province of Cádiz by German tourists who are planning their holiday vacations. After visiting the historical quarter, they visited the Hotel Duque de Nájera where they were treated to lunch and sampled some of the local cuisine. Afterwards, they enjoyed a ride on the beach, in wagons typically used during pilgrimages, to the Municipal Horse Riding Pavilion where they were treated to a show which unites both flamenco and horses, and were able to sample some of the local wines. To finish off the day, they were then brought to the Hotel Playa de la Luz where they paid a visit to its many facilities. We are sure that this tour will leave these visitors with a special memory of Rota once they have returned to Germany. viajar en moto : una experiencia sin igual motorcycle travels : an experience like no other Por / By : Juan Carlos Carmona Desde su creación en 1.867, la moto ha supuesto, para todos aquellos que desean recorrer el mundo de un modo diferente, una mezcla de romanticismo y espíritu aventurero.

Since its creation in 1867, the motorcycle has become a different way to travel for people wishing to see the world, a mixture of both romanticism and the spirit of adventure. The Wilhelm Maybach & Gottlieb Daimler Company created their first motorcycle with a four-stroke internal combustion engine in 1885, which included two main wheels and two support wheels similar to the training wheels used to teach children how to ride a bicycle. Its 0.5 horsepower engine could reach a maximum speed of 18 kilometers an hour. Shortly thereafter began the commercial production of motorcycles and as of 2007, there are more than 2.5 million motorcycles registered in our country. In no other vehicle on our roads today can you feel the companionship and solidarity that you feel when riding a motorcycle. First off, the solidarity and principal rule of the road for any motorcycle rider is to help any other rider that may be in trouble, and I don’t mean just accidents. It is obligatory to stop and offer your help to any rider whom may have had a breakdown, run out of gas, or is simply lost. Being as such, many times I have stopped my bike simply to enjoy the view and in less than 15min. various riders stopped to see if I had a problem or vice-versa. The fascinating thing about this pastime is that you can stop at a roadside restaurant or bar where another bike is parked and without knowing the rider, begin a conversation about the bikes, the route, and even plan to share the day riding together.

Another of the basic rules is the ‘road salute’ which is done by flashing your high-beams when crossing another comrade on the road, or displaying a victory ‘V’ with your middle and index finger. If instead of crossing you are passing, the salute is made by hanging your leg off of the foot peg on the right side.
But the solidarity of this collective goes much further. You only have to look at the latest demonstrations against the dangers of roadside guardrails which have taken place in many cities throughout Spain and realize the power it has. Thousands of aficionados demand more security measures such as; non-skid paint on the roads, substitution of the current roadside guardrails which have cut so many lives short or have provoked chronicle physical harm, or to elevate the consciousness of drivers as unbeknown to most - 70% of all accidents involving motorcycles are provoked by drivers of four wheel vehicles, as documented in a study by a prestigious international insurance company.
Since the beginning of my involvement with this marvelous pastime, there have been many countries I have travelled through, each being different. It is the best way to enjoy the landscape as your field of vision is much wider. You enjoy and suffer the road, provoking many adrenaline surges when leaning the bike in a turn. Even though you may suffer roads in bad condition, you also perceive all of the smells, especially in spring. And you may also ‘suffer’ the climate, forgetting about the luxury of air conditioning in your car, but none of that matters compared to the satisfaction you get when riding on a two wheel vehicle. The biggest adventure, and longest trip I have made by bike, took place in 2003. After my travels through the lands of Scotland in 2002 and accompanied by my two good friends, Juan Luis Moreno and Ginés Pozuelo (National Moto-Tourism Rider Champion of 2004), we travelled more than 8,000 km. in 11 days, our destination being Transylvania - Romania, the land of Dracula. The rhythm of kilometers everyday was crazy, averaging about 800 km. per day, there were however days that we travelled 1,100 km. so we could take more time during our stay in the mountain region of Transylvania. It was during this road-trip we visited such emblematic cities such as Vienna, Prague, Budapest, Geneva, the Principality of Monaco, and experienced such varied climates from the warm Mediterranean, to the cold Carpathian Mountains. But for those that enjoy the freedom of the open road enjoying the climate, as I explained earlier, is secondary and we had to bear infernal heat, rain, wind and even snow.
After that trip, the next year our decision was unanimous. Out of all the countries we visited, the spectacular landscapes, monuments, cultures… we would never find another country that entailed such a rich gastronomy and culture, diverse roads, landscapes and people as those found in our own country, Spain. It is like traveling across a mini-continent. So for 14 days we travelled through our country, passing through the sierras of Huelva, following the “Silver Route” to Salamanca, arriving at the Peaks of Europe in the Cantabrian Mountains, and riding along the Cantabrian Coast to Pamplona. From there we traveled to the Mediterranean and rode through the provinces of Valencia, Alicante, Murcia and Almeria until we arrived at the point from which we started from, Algeciras. Even though the ride was as fascinating as it was, in each region, province, and small town where we stayed, we found ourselves wishing we could stay longer, to ‘soak’ ourselves into the richness of these places, but this job would take years to complete…
Finally, and hopefully I am not being to long-winded, another road-trip that truly stunned me occurred in April of 2007. During this time a group organized by Iberian Moto Tours (a business that specializes in motorcycle road-trips with your own, or a rented bike), announced in our hotel an 11 day trip through Morocco which they have been organizing every

year. The Hotel Guadacorte Park is an ideal meeting point for anyone preparing to cross the Straits of Gibraltar for either a touristic visit, or an adventure in the Sahara Desert by way of 4x4, motorcycle, etc… For this occasion, and to break with the tradition of only riding with my traveling comrades, Juan Luis Moreno and I joined this group captained by the Iberian tour guides - Martin Cebrian and Roger Falgás, and alongside their clients who hailed from different points from around the globe: 4 North Americans, 1 Englishman and 2 Spaniards. Martin, a professional test rider who collaborates with many magazines and also acts as a tour guide, took the lead position at all times and put to use his extensive knowledge of the roads and customs of this marvelous country. Roger took up the rear alongside the support truck which they use to take care of any breakdowns or carry any extra luggage we may have had. The route made its way through Chauen, a small town very similar to the white villages in the sierra of Cádiz, and later on to Fez, one of the main imperial cities in Morocco. We visited the impressive labyrinth that is the ‘Zoco’ (Arabic market), the main artisan centers (leather goods, wood-works, bronzeworks…), and finally passed through the Roman ruins of Volúbilis which are located in a beautiful valley just 50km. outside of Fez. From Fez we took the route to Erfoud where we enjoyed an experience like no other: Riding motocross bikes on an 8 hour excursion through the desert, and especially the Dunes of Erg Chebbi. From Erfoud we travelled to Zagora passing through the impressive Valley of Draa, until we arrived at this mythical town at the foot of the desert.
The next stop was Ouarzazate, known as the ‘Hollywood’ of Morocco, where such movies as ‘Laurence of Arabia’, ‘Gladiator’, and ‘Babel’ were filmed. After traveling through the Tizi-n-Tichka mountain pass we arrived at the mythical imperial city of Marrakech – as fascinating as one would expect. We visited the famous Djemaa El Fna Plaza to see snake charmers, musicians, wrestlers, acrobats and even dentists. The trip came to its end when we visited the city of Rabat, the capitol of Morroco and we continued on to the Spanish city of Ceuta, where we took the return trip back to the peninsula by boat and then said our goodbyes to this wonderful group of motorcycle enthusiasts after sharing the unforgettable experience of traveling this magnificent country on two wheels.
For the end of this article, I only ask of you two things: First, show respect for the two-wheeled vehicles on the road, their riders and passengers. Remember, their ‘bumpers’ in the case of an accident, are their own bodies. And finally I wish to recommend, if you have not yet had the opportunity, to enjoy a journey or road-trip on a bike, find the opportunity to do so. You will surely be enchanted by the experience… J

He has also cultivated the opinion article, regularly participating in different cultural mediums. His books have been distinguished by numerous awards: Luis Cernuda Award, ‘Ojo Critico’ Award, Loewe Critics Award, National Literature Award, and the Nadal Award among others. Both novels and poems he has written have been translated to diverse languages and he himself has translated the poems of T.S. Elliot and Navokov. He was director of the magazines ‘Renacimiento’ and ‘Fin de Siglo’. He is a writer that is comfortable with both novels and poetry. He upholds the idea that reality does not exist, only interpretations of that reality, which is the substance of which literary material is made of.
His most recent awarded work was at the 63rd edition of the Nadal Awards, his first great award in the narrative style, where he tells the story of how two art thieves are contracted to presumably steal relics from the Three Kings which are kept in the Cathedral of Cologne. Felipe Benitez uses this story to create a parody of the thriller novel.

This author from Rota assures us that his novel is a parody of other novels like those of Dan Brown, and reminds them that their great master was Cervantes, whom through parodies created characters... not puppets, and emphasized that under the parody, there exists a human story.
“irony and humor are the best perservatives of literature, which has been demonstrated by Homer, Cervantes, and Dickens…”
Encanto Andaluz: With this book were you looking to expand your audience and recognition beyond what you already have as a poet?
Felipe Benítez Reyes: The market today is relentless, and an award is the best thing an author can give his novel to help it succeed in its life. Furthermore, it is the ‘Nadal’, which in the past 10 years has taken a very pure literary path, which is vital for an author who wishes to situate themselves in the literary world. Also, the book is about ‘Reyes Magos’ (the three kings), my second family name is ‘Reyes’ so it is perfect for Three Kings Day. Why not?
EA: ¿Cómo ha de ser una novela?
EA: How does a novel have to be written?
FBR: The novel can be about anything but it must be able to entertain. Solemn literature ages very quick and badly, while irony and humor are the best preservatives of literature which has been demonstrated by Homer, Cervantes, and Dickens…
EA: What did the Nadal Award mean to you?
FBR: Above all things, to add myself to an illustrious path. It is an award with much history behind it. On the other hand, it is also a responsibility; you are obligated to not disappoint readers who may be contemplating your book.
EA: ¿Cómo resumiría su novela premiada?
EA: How would you sum up your award winning novel?
FBR: Novels are difficult to give a summary of… we will say however that it starts when a pair of art heist organizers receive an order. Two individuals who consider themselves retired, however they have been contracted to steal the relics of the three kings which are venerated in the Cathedral of Cologne. And this is the catalyst of everything.
EA: There is talk of a paradoxical purpose…
FBR: Yes in a very large way, there is the paradoxical intention regarding the thriller, esoteric and mystery-history novels that are so popular today. But I did not wish to simply create a parody and I made sure that the novel did not wade in the realm of falsehood, but in actual reality.

“La escritura de una novela es agotadora. Necesitas un tiempo para recobrar el aliento...” “The writting of a novel is exhausting. You need time to catch your breath...”
EA: To what type of readers would you recommend your novel?
FBR: Recommending a book is a very large responsibility… I don’t know. In ‘Mercado de Espejismos’ I have tried to establish a game with the reader; the reader should have fun, they should be taken away by the fabrications that I propose in this story. The successfulness of this formula will be determined if the reader accepts this game.
EA: ¿Cuáles son sus proyectos inmediatos?
EA: What are your immediate projects?
FBR: De momento ninguno; descansar.
FBR: At the moment, nothing; to rest. The writing of a novel is exhausting. You need time to catch your breath. But the problem is that no one is the ruler of their own thoughts, or even their imaginations, and I have already come up with a few new ideas…
Felipe Benítez Reyes, an author who sees in his work a way of understanding life, trying to interpret reality in a coherent manner. We did not wish to close this article without leaving in it a snippet of his work ‘Los vanos mundos’, in which we will highlight the beautiful poem ‘Advertencia’ which has captivated us.
If you ever suffer - and you will for someone you have loved and has abandoned you, do not hold a grudge against them or forgive them: resentfulness distorts the memories and in love, forgiveness is only a word which never reconciles with the sentiment. Bear your pain in loneliness, because deservingness among great adversity is justified if you have been disloyal with your conscience, not only relying on the love that was given to you its innocent splendor, its untouched worlds.
And so when you suffer - and you will for someone who once loved you, always blame yourself for their oversight because you were cowardice and maybe ungrateful. And learn that life has a price that you cannot continually pay. And learn dignity in your failures, thanking the one who gave you the fleeting gift of their beauty.

Mª Carmen Medina Hotel Playa de la Luz
Mª Paz González Hotel Duque de Nájera
Antonia Gavira Manzano Hotel Guadacorte Park
Carmen started out working at the Hotel Playa de la Luz as a telephone operator back in 1986. A position where the charm and natural friendliness she posses were not being utilized to their full potential. For this reason she soon began to work as a receptionist. Carmen enjoys the esteem her coworkers have given her, as she always has a kind word and a smile, the same treatment that she gives our guests, whom will find her always available, and eager to start a pleasant conversation. For these reasons when our guests return they not only expect to see a receptionist, but also a good friend.
Mª Paz has traveled throughout Spain for more than 13 years and has sampled the culinary delights of all the regions of our country. She has worked in small family restaurants as a kitchen assistant, cook and head chef. Upon arriving in Rota in 2002 she began working as a cook in the Hotel Duque de Nájera. After 2 years in this position she was promoted to Station Chef. In 2006 she was promoted to Assistant Head Chef and now she is currently working as the Head Chef where she enjoys the work and responsibilities of this position.
Since 2003 Carlos Hidalgo has radiated friendliness on a daily basis in our reception. Aside from his professionalism we should also single out his kindness with both guests and co-workers. We cannot forget the great effort he places every day in his work and his peculiar ‘art’.

Álvaro Pérez, the night receptionist who has been with us since 2002 – the same year in which we inaugurated the hotel, started out as a bellhop and now works as the night receptionist. He is a person that strives to better his work every day. He is a friendly and charming person to his coworkers and to the clients, for whom he is always available for anything they may need during the night.
“Antoñita”, as we like to call her, worked in the former Hotel Guadacorte for twenty years and since its re-opening in 1999, has worked with professionalism and care in the cleaning department. To be more exact along with her co-workers, she takes care of the public areas making sure the installations are impeccable. Even though she is small in stature, a mother of four and recently has become a grandmother, she possesses enviable physical strength and her friendliness has given her the respect of all of her co-workers.

I was born in Jerez de la Frontera on the 7th of March in 1944. Like many of the post-civil war children from humble homes of the time, I could only afford basic studies such as reading, writing and the ‘four rules’, which they were called back then. When I turned 14 I began a carpentry / cabinet maker apprenticeship in my father’s shop where I learned the basic skills of the artisan craft but I never became a professional because my eyesight was not very good and cabinet making requires good vision. Soon after my 18th birthday I went to Barcelona where I stayed for 3 months and worked as an assistant building worker. After that short voyage in the Catalonian capitol I returned to Jerez and started to work as a cooper in the barrel factory of D. José Paz Varela, which no longer exists. In the barrel factory I was temporarily employed until I was called into the service. After I completed my military service I returned to barrel making, but only for a few months because in July of that year, 1968, I began my 40 year career in the hotel business. I was hired as a bellhop at the legendary Hotel Los Cisnes. After 4 years I was offered an assistant concierge position, which I accepted graciously, and after 2 years on the 1st of
December in 1974, I began my long career at this hotel which I love, the Hotel Jerez. I began as a night concierge and 2 years later, when the hotel expanded - going from 64 rooms to 120, I began to work the day shift as 2nd concierge. Everything must come to an end. I leave with a bit of sadness because I truly love my profession and above all this hotel, the Hotel Jerez. I am sure it will take some time to get used to no longer being employed. 33 years and 4 months is a long time for you not to feel like you’ve left something of yourself within these walls. But this is the way of life, and even though I feel perfect, both mentally and physically, I understand that my cycle has come to an end, and the young must be given a chance.

medioambiente :
environment : the use of chemical products Por / By : Mª José Merino Rodríguez - Responsable de Calidad y Medio Ambiente
¿Cuál es el problema?
What is the problem?
The inadequate or excessive use, inappropriate storage, or incorrect disposal of chemical substances or other dangerous waste materials used in everyday activities can contaminate the local environmental resources. The use of pesticides, fertilizers and herbicides in gardens to eradicate insects can cause toxic spills in rivers, coastal waters and groundwater.
The use of chemicals used during the cleaning of guest’s rooms or in leisure areas such as swimming pools can contaminate the ground and local water resources, which in turn can create a health hazard for humans. CFC and HCFC leaks from refrigerators, air conditioners, and other ventilation apparatus, as well as the chemical substances used in dry cleaning, aerosols, or fire extinguishers, all contribute to the depletion of the earth’s ozone layer.
Why should it interest us? If you reduce the use of chemical products and toxic waste, and they are used and handled in a responsible manner, you can maintain the quality of the touristic area’s natural resources by reducing the amount of atmospheric, water, and ground contamination. • The incorrect or excessive use of chemical products can create a very real health hazard for guests and the hotel staff. • The optimal management of chemical products and disposal of hazardous waste can contribute to lowering the costs of water treatment services and the amount of chemical products that need to be purchased by the hotel. • If chemical products and hazardous waste is stored and eliminated in the proper manner, you are abiding the law and reducing the risk of fines and cleanup fees.
How do we manage toxic waste at the Hotels of the HACE Group? We limit the number of chemical products that are used in the hotel. • We use automatic dispensers for cleaning agents used in the rooms in order to make sure that the correct amount of chemical product is being used for the job at hand. • We train our staff on the usage and disposal of chemical products and dangerous substances in a responsible and safe fashion. Disposal of dangerous materials in a responsible manner : At the Hotel Playa de la Luz and the Hotel Duque de Nájera we are exchanging the aerosol cans we use to shine the floors of rooms and common areas, with soaked towels which do the same job and considerably reduce the amount of empty aerosol bottles. • We have exchanged the large majority of cleaning product we use for more ecologically sound products. The containers are managed as urban waste and their volume is reduced thanks to their dispensers which create an internal vacuum as the product is being used. • We periodically inspect air conditioning units, refrigerators, freezers and the ventilation systems in the kitchens in an effort to detect any CFC leaks which are harmful to the ozone layer. • When we are acquiring new equipment, we select only ones that use harmless substances in regards to the ozone layer. • Our gardens are full of indigenous plants that require less water, pesticides, fertilizers and herbicides. • We always use organic fertilizers or equivalent products whenever possible, instead of chemical based ones.

diovascular problems, postoperative care, rehabilitation programs, respiratory problems, and intestinal problems. Aesthetic treatments such as slimming and facial rejuvenation sessions are also complemented by this treatment. But the big question that most of our clients that come to visit us have is… What does an Oxygen Therapy session really consist of? Well first, after talking with our therapist, he will perform a skin and artery test which allows him to gauge the correct mixture of oxygen to be inhaled and the temperature, all of which is based on the client’s blood pressure. He will then show you to the treatment booth which creates steam consisting of carbonic gases, ozone and ionized oxygen. The clients head remains uncovered for the session which can last from 30 to 60 minutes, during which toxins are eliminated, lung capacity is expanded, and after a few sessions – you will feel a little bit younger.

Hello Sophie, I would like to tell you how satisfied both of us were with the facilities, the room, the food, and most of all the staff, when we celebrated our wedding on the 27th of October. - S.D.S. (Bilbao)
Dear Felix, First class, first class, first class! Definitely the words and phrases that come to mind to describe the Hotel Playa de la Luz! Every detail is professional from the reception, to the rooms, grounds and restaurant. Everywhere one looks, one sees attention to detail. Las Dunas has been a highlight of my stay at the Hotel Playa de la Luz. The “presentation” is outstanding! Meticulous displays and a wide variety of culinary favorites. Three outstanding Las Dunas’ staff – Pilar on the floor; Esther at the grill; and Carmen the most gracious caring hostess, have all made my stay memorable. You know Felix, I may not remember what I’ve eaten, I may not remember what I’ve seen and done, but I’ll always remember how I was treated. At the Hotel Playa de la Luz, I was treated royally, I so appreciate it! Keep up the great work! - Jam Richter Dear Pilar, Just a few lines to congratulate you once again, on the quality of your hotel where I have recently spent 12 wonderful days, and above all where once again, we have felt right at home. The reception… The description of your hotel is correct: an enchanting hotel… Anyways, we had an unforgettable time and we hope to celebrate with you many more anniversaries from now on. Thank you for everything. - Manuela & Juan
Atentamente. - Phillip Weale
Dear Sophie, Just a short note to thank both you and your excellent staff for making our second stay at the Hotel Vila Jerez so very comfortable and enjoyable. I am fortunate, through both business and pleasure, in having stayed in hotels around the world. However there are few which can compare in my opinion with the high standards of service which you provide. In addition, a special note of thanks to you Sophie for taking the time out of a busy working day to transport me to the clinic. Your help and swift response was very much appreciated. Best regards. - Phillip Weale

“Enchanting”, this is the best word to describe the Heron family. If we ask any of the hotel staff that have had the pleasure to meet them, the answer will always be the same: “very courteous and extremely kind”. In this small space of our magazine, we would like to show them our gratitude for the particular gift they presented us with on the 40th anniversary of our hotel; a Swarovski Crystal decanter engraved with their initials and those of the Hotel Playa de la Luz.

A few days ago D. Enrique Franco Álvarez, long-time client of the Hotel Jerez, left us forever. Enrique was a good man, unpretentious, polite and kind to all of our staff, especially those who have been working at the hotel for a long time since we met him many years ago when his daughter María, whom was baptized in Jerez, was so young. D. Enrique was always an excellent guest of the Hotel Jerez, which he was very fond of and always felt at home in. He was always in love with our city and the Bay of Cádiz, of our customs, of our gastronomy, and of our flamenco which he admired immensely. Even though he owned a house in Puerto de Santa María, a city which he also held great affection for, he would still stay in our hotel even during the summer, to spend a few days in the hotel he loved surrounded by the warmth of the staff and always happy with his regular room, number 129. D. Enrique, as we all know, was a very important man in the sports world - most specifically cycling. For many years, he was the director of the Spanish Cycling Tour. His love for Jerez played a part in the 1986 Spanish Cycling Tour which finished in our city and was won by – if I remember correctly – the great cyclist Álvaro Pino. A few years later, specifically in 1992, he made sure the Spanish Cycling Tour started in Jerez with the first stage being Jerez-Jerez which was 11 kilometers. These two important sporting events showcased our city to the whole world back in the day when our area was trying to move forward in promoting its self as a tourist destination. D. Enrique Franco Álvarez has left an incredible footprint in the memories of the Hotel Jerez, and all of those who had the good fortune of meeting him in this emblematic establishment. - José Mª Galera Martínez

First create the sauce in a saucepan with a little bit of olive oil and by dicing all the vegetables which we will add. Once the vegetables have been cooked, add the wine to the saucepan, and once the sauce has begun to condense, add in a touch of salt and the spices.

With the fish cleaned and filleted, marinate it with brandy in a pan and after turning it over a few times, cook it ‘flambé’ style. Once the brandy has evaporated, cover the fish with the sauce we created earlier and let it simmer a little bit. The potatoes should be cut in slices and fried and used to garnish the dish.
