Among the industries present at the beginning of the last century, none surpassed that of tuna fishing, or almadraba that was controlled by the social entity “Viuda de Zamorano y compañía”.
The word almadraba is used to describe either the place where, or the equipment required, including nets, boats and so forth used in tuna fishing.

The almadraba of Rota, known as the Arroyo Hondo being situated in front of the stream of this name, was known as the strong closed arm that would allow nothing to pass. The origins of this method are quite obscure owing to the antiquity. The operations to catch and salt the tuna start in the first days of May in this area, all the way to the Cristina island and other towns near Portugal this fishing method was also used. The fishermen lived in huts by the area known as the corrales, surrounding the main house where the owner of the fishing rights lived. The fishermen and their families sometimes lived there year round, the plank men, sailors and others involved in the tuna business like Manuel Moreno”el Mono”, Félix Barrientos or Juan “Pescaito” to name some of the residents.. Surrounding the main patio of the big house, ringed by wrought iron fences were large areas to cure the tuna in salt water, these were called chancas and also gave the name to the entire compound. The fishing was always preceded by baptisms of the anchors, nets and other equipment that formed the almadraba. A solemn ceremony attended by dignitaries from the industry, the youth scampered about to collect the coins tossed by the gentry.
Days later, they proceeded to close the almadraba, surrounding it with launches and boats. A large net was put in the water and was called the Rabera that channelled the tuna into the trap. Once the order was given to close the trap, the surrounding boats pulled in the nets, trapping the tuna in the corrales. The captured tuna were unloaded on the beach and retrieved by the pole men and transporters who brought them to the patio of the chanca, today the centre of the Hotel Playa de la Luz. The tuna were then decapitated and bled out by hanging. The fishing was done from Saint Mark ’s day to Saint Peter’s day as this was the time when the migratory tuna from Norway would pass by the area.

Andalucía has always been a destination for people who wanted to explore beyond their own lands and has served as the image of Spain in many parts of the world. Historically, Andalucía has always placed great importance on tourism, owing to the social, economic and historic circumstances of the region. From the 60´s onwards, when new communications became available is when Andalucía brought tourism to the forefront.
You could say that the coast of Cadiz tourist industry in those days was truly in its infancy. The east coast of the province, with huge golden beaches, only interrupted by small dunes and outcroppings and bordered by nature parks, better known today as the “Costa de la Luz” (Coast of the light), is one of the most in-demand tourist destinations today simply because it was not effected by the overbuilding and over-development that plagued places like the Costa del Sol, that turned into a worldwide destination for inexpensive tourist vacations.

The Hotel Playa de la Luz first opened officially in June of 1966. 40 years, and it seems like yesterday. The “Aventura Hotelera”, that my father, Joris De Clerck , and my uncle, Roger De Clerck, started together with a third partner who soon left the venture. I arrived on the 18th of April, 1969 with my new bride. We were passing through Sevilla in an overloaded car during the height of the spring fair and we stopped for a few hours. We arrived in Rota and installed ourselves in a small house at Arroyo Hondo. On the first of May, 1969, we started work. After the April fair in Sevilla, we were confronted by the Rota fair, Puerto fair, Jerez, Sanlucar... and we just did not understand anything, how can it always be feria time? We soon learned not every day was feria and we faced the hard reality of day to day living in the tourism sector. My family began, as I mentioned before with the “aventura hotelera” with the Hotel Playa de la Luz: 300 beds and two stars. Located in Rota, on the Costa de la Luz. The official Spanish tourism office in Brussels had no idea where the Coast of the light was, no infrastructure, no airport etc. Some tourists arrived via Malaga, and had to make a 7 hour transfer by bus, with no air-conditioning, to get here. The Sevilla airport soon had basic services available for our tourists, but there was no dual carriageway, nor air-conditioned

bus service... I think we have to admire the mettle of those early tourists to the region. They were difficult times, every year we would make the trip to Belgium and Germany to try and secure some small occupation contracts, it was like begging for alms. The vast majority of tourism was headed towards the Costa del Sol, and especially Torremolinos. A place that got the lion’s share of government assistance, the injections of capital and needed infrastructure. The Costa de la Luz was like the unwanted step-child of tourism. Little by little, people began to discover our beautiful Atlantic coast Costa de la Luz, but it was slow going. Very, very slow. The opening of the Jerez airport was the beginning of a new era on our coast. The Hotel Playa de la Luz adapted little by little to the demands of the evolving

Cordiales Saludos, Stefaan De Clerck
Letter from D. Stefaan De Clerck Past Belgian Minister of Justice, and current Mayor of Kortrijk To Jan, Caroline y Familia, Hotel Playa de la Luz (Rota) It was the Christmas vacations of 1967-1968 when I made my first trip to Andalucia; a trip made by car, with my God-Father Joris De Clerck, with the Hotel Playa de la Luz in Rota as our destination. It was a true journey of adventure and my first experience of Andalucia. On Christmas day, I was swimming in the ocean... for the first time in my life, I tried the tapas and the sherry from Jerez, since then, this has become our habitual aperitif. Meanwhile, the Hotel Playa de la Luz has continued growing, the group has grown as well. What continues is the wonderful family atmosphere. Comfortable rooms, various restaurants, plenty of things for the children and of course, that magnificent beach to take long walks and an ocean where you can swim with no worries! An ideal place to enjoy your vacation, to read a book, to write a book, and above all, enjoy the fantastic light. For these reasons, the Playa de la Luz is irreplaceable to me, and our whole family as well as many Flemings. I hope with all my heart to return to enjoy my vacations in the coming years at this Spanish-Flemish hotel, the Playa de la Luz in Rota. Congratulations on your fortieth anniversary!

J - J.D. tourist trade. We went from two to three stars, improving our installations and then from three to four stars. Today, we can say that the Hotel Playa de la Luz is in its third childhood, modern, comfortable and with a unique Andalucian location. 40 years have passed. I have been living here 37 years with my family. We have struggled, worked hard, and enjoyed, and we have always been happy here in Andalucia. We owe this happiness, in large part, to the kind people who accepted us and helped us along the way. To my collaborators and friends, I owe it all to you. I would like to take this opportunity express my gratitude to everyone who has shown us so much kindness, and towards what we have been able to accomplish. J - J.D.

It was 1970 and I had just finished my tourism studies in the very first class at the official school of tourism, in Jerez. I was about twenty years old then, fresh out of school with just a little practical experience working in hotels, serving drinks and food in a family business and my English classes I was teaching the students of the bachillerato de la Salle y San José I remember that I was called by the director of the school of tourism, my colleague Salve Pomar, to tell me that some Belgian gentleman was looking for a director of the Hotel Playa de la Luz, who had the official degree required, but no experience was needed, and he thought that this fit my profile well. This gentleman interviewed me the next day, and our agreement came so fast that I cannot recall any of the details of the interview except explaining my desire to learn and willingness to work. We met the next week to begin my training as a night desk clerk. I was aware what an opportunity I was being given. The Belgian gentleman was of course, Jan De Clerck and thus began my professional career, and a long lasting, sincere relationship of friendship and respect. So, from my job as a night clerk, I began to learn the job, from my colleagues from that era, particularly Carmelo (Chief of administration, a professional, and with experience) and the De Clerck family. Soon I began working the day shift, became the reception manager, then the new director. I recall those days of work with great sentiment and satisfaction for the good work we did together. Vacation tourism in Cadiz then was nothing more than Cadiz itself, El Puerto and little else. The hotel Fuentebravía was the flagship of all the hotels in the area along with the Hotel Flamenco in Conil. They were for us, something to be strived for, looked up to, and to try and emulate what those establishments had achieved. Besides the mentioned hotels, there was also the Hotel Caribe in Rota, in el Puerto the Hotel Puertobahía and the hotel Caballo Blanco, in Chipiona the Hotel Currican and the Hotel del Sur, in Sanlúcar the Hotel Guadalquivir and finally, in Cádiz, Sercotel; to top it off, we had the airport in Sevilla, and no dual carriageway.

This was the solid base of continuous learning that has stood me in good stead throughout my later career. Always a positive outlook, with a large dose of humility. These lessons were not part of any school curriculum, but they were key in my personal and professional development. As time passed, I was able to validate the importance of these principles, the fruit of professional management can show you so much more, and are part of the school of life..

The Hotel Playa de la Luz then was just a central patio, surrounded by the four buildings. Our clients were from large international tour operators like Holland International, Hetzel -Reisen, Sunair Bélgica y Tiempo Libre. During the whole year, those were our first negotiated contracts, our first transfers (first with the Costa de la Luz Sunair agency and later with Eurosur) our meetings with city hall in Rota, the authorities in Cadiz, the inspection by the tourism authority... We were pioneers in negotiating contracts with the tour operators, how could I forget negotiating with Hetzel in the person of Ursula Reinert, today, a good friend… interminable and hard negotiations, but we always managed to finish with an agreement and a fine meal and a couple celebratory drinks. We were also pioneers in organizing excursions for our guests, in employee training... and we all learned and grew together. We gave the clients our best and we formed a team that I remember as happy, satisfied and proud of our hotel. Mr. De Clerck took care of the business end, and I watched his back for exploitation. In reality seen with the perspective of the years, we learned much through hard work and making mistakes and above all, learning how to work with optimism, with the strength that the younger years give you, and ambition to situate the hotel at the top of the list. In our daily work in that big house that was then the hotel, we cannot forget for an instance Carolina, who was always the lady who never mettles in the work being done and dedicated herself to being polite, attentive, correct and friendly with all of the employees.
I left the Hotel Playa to continue my career in 1976, when the works to expand the patio de los Quintero was recently completed. Over the years, I have come back to visit the hotel, and I still do so occasionally now. I have always found the same warmth, the same welcome, the same f lavour. You can feel it in every aspect of the professional management, the honest and honourable dealings with the staff. These things do not happen by chance, and good luck will not be with you forever. This is the fruit of doing the right thing. These characteristics that define the human qualities of Jan De Clerck and his family. These are the values that have placed the hotel where it is today, where it deserves to be. The awards and prizes are only a confirmation of all this. I am proud as if the awards were my own. In these times of the 40th anniversary of the Hotel Playa de la Luz, I want to express my emotive memories to all those who shared that early time with me (many of whom continue at the hotel) and especially to my friend Félix Morión, who succeeded me as director and interestingly enough continues to this day. Above all, I would like to express my best wishes for good health, and continued success and offer my warmest sincere affection for the De Clerck family, who gave me my first opportunity, showed me principles that I have held close during my entire career and who today continue to honour me with their friendship, respect and affection.

I started here in March of 1974 as reception manager at the Hotel Playa de la Luz. I was hired by the then director, Sebastián González, a friend of mine since school days, with the acquiescence of Sr. De Clerck. Trying to put thirty two years on one sheet of paper is not going to be easy. At the time, the hotel had an import group of Spanish clients and Germans from the tour operator Hetzel-Reisen . In summer, the Spanish clients would flock back to the same exact rooms every year, some continue to come to this day. Charming people, kind, and with a great sense of humour. Out of all of them, I will mention one very special man, who always made us feel better, D. Joaquín Arrabal, who sadly passed away two years ago. The German giant TUI, who in those days was not so large, included our hotel in its contract bookings seeing that Hetzel was doing a good business here. They were at that time, the kings of this new destination, For a German, it was cheaper to come to Spain at that time than it was to stay home. At the beginning of the 80´s, the then president of Andalucia, D. Rafael Escuredo appeared at our door with his little daughter in tow. He initially chose the hotel because it was one of the only places where the other politicians could not find him, so he could relax for a weekend. A more talented man has never passed these doors, he could be catching crabs out on the beach, or playing magic tricks, or soundly beating you at poker, with a personality that was prototypical Andaluz, with a clear political vision for the region.

In the end, the politicians found where he was hiding and some of them started coming here as well, and became valued clients of the hotel. I must mention Braulio Medel (vice-counsellor for the Economy), Juan Manuel Castillo (Tourism), Manuel Gracia (Government) y Eduardo Rejón (Health). At this time, we understood that the hotel would not have a good future with only two stars, because the market was clearly moving towards three star properties. Mr. De Clerck convinced the stockholders to make the needed investments to modernize the hotel and allow us to, in 1984 be given our third star. The then mayor of Rota, Fernando Tejedor, did important, and then unrecognized work in Rota and for the future of Rota. He created the largest tourist complex plan (non-residential) in Spain, “Costa Ballena” which has very little or nothing to do with what Costa Ballena has become today, but he placed the foundation that allowed the project to move forward. There were changes in the government and the new president was D. José Rodríguez de la Borbolla, who also visited us often, not to stay overnight, but to play table football in front of the hotel. He played hard as steel and it still hurts to recall how badly he beat me in one game. Different than the outgoing president, but also very kind, though somewhat more disciplined than Rafael Escuredo. Now comes 1992 with the Expo in Sevilla, and we took advantage of the opportunity to introduce tour operator Neckermann(NUR), something unthinkable only one year earlier as TUI had an exclusive contract and did not want to share with its greatest competitor in Germany. Having the two largest tour operators assured the long term health of the business, as was demonstrated in the following years. In the year 2000, we were given our fourth star, as the market had evolved in this direction, and we had to adapt or be left behind, by this I mean left out of the game. The company then rebuilt its strength to meet the challenge of tough competition to come. Soon we had a new challenge. the hotel required some technological updates, and we needed to modernize our own management and operating systems. In 2003, we were awarded our AENOR ISO 9001 certification, with all the effort that requires, bringing a hotel started in 1966 fully up to date. Once we passed that hurdle, we noticed strong competition from Egypt and Turkey, with lovely hotels at less than half our prices, we would have to do something significant to ensure client satisfaction, to ensure repeat business, and make them into our best salesmen.
There were also new hotels popping up in the area, all of which forced the issue of customer satisfaction as being the deciding factor if a guest returns or goes somewhere else next time.
The results of this work were not long in coming, in 2002, 2003 and 2005, the Hotel Playa de la Luz, was consider one of the top 100 hotels in the world by the clients of TUI (12.000 vacation hotels, and 4.5 million clients.) The loss of a client base over the last two years as important as the Americans from the Naval base have forced us to redouble our efforts, and improve our client satisfaction levels even more, and hopefully be able to conclude our project of opening a Thalassic therapy centre with an eye to bringing in new clients during the winter months, and break out of our traditional seasonal economics. Because our clients keep coming back again and again, we decided to ask them why during interviews recorded for a local television program last summer.
“We have been coming here since the beginning, 40 years now. We have wonderful, fun, joyful memories of our summers spent at this hotel, full of anecdotes about the big family we have become. Since that time we have returned every year because we love the hotel, and the friendliness of the staff, from the director to the gardener, we never even considered changing hotels. Even though we have owned an apartment in Rota for 4 years now, we always stay a few days in August, we are simply in love with this hotel. The truth is, there have been great improvements as well, more modern, but it maintains the same style it always had from the very beginning”.
“We have been coming here for 34 years now, when my youngest daughter was only three years old. Now we return not just with the children, but with grandchildren. The truth is, we love this hotel, for its installations, the beauty of the surrounding area and the opportunity to truly relax. When I step out and see that fantastic beach, I really enjoy taking long walks with the occasional dip in the ocean, and I feel happy here in the hotel, beyond the excellent service, we are made to feel at home. I will say it again, we love it”.
“I have been coming to the Hotel Playa de la Luz for thirty years, almost since my children were infants, and now they are all married and I come with my grand daughter. I will keep coming back because I know of no other place where I feel so good, with such personal service, I really do not feel like I am coming to a hotel because I feel at home here”.
“I remember perfectly coming here for the first time 30 years ago with my parents, when the hotel was only two stars. Since then I have been coming to spend at least two months every summer. I love the improvements and modernization that has been done over the years but what I like most is the feeling of freedom and relaxation when I come here, and I enjoy the friendly service from the staff”.

Sophie De Clerck:
We were always splashing about in the pool, even when we should not have been, like a certain time when we went swimming while they were treating the water and we came out with our hair dyed green from the chemicals. Well, one after another, we were kids and stories like this, with the passages of time become your best memories of childhood. For us, or at least for me, I have very special memories of the Hotel Playa de la Luz”.
Ann De Clerck:

It is true that this land was capable of seducing the De Clercks and they established themselves and set out on their adventure in the hospitality business. Children were born, first Sophie, later Ann and finally Stefaan. Their memories of childhood are centred principally around life in the hotel.
It was enjoyable to remember waiting for the children of the guests to arrive every summer to enjoy their vacations, many came back year after year creating strong bonds of friendship. They tell how the hotel became their playground and the employees, who were much more than employees, became part of the family.

Sophie De Clerck:

“I have enjoyable memories… this was our home. Even today, now that I no longer live here, I still consider it home, and I refer to the entire hotel, not just our apartment. We have always felt very protected and loved by the staff. For us, all the employees over the years are like an extended family and we miss them when they are no longer here, above all, Antonio Simeón (bar manager), Juan Aguilar (maitre) and Rafael Arévalo (2nd maitre), although we see them less often, they are always with us. I also remember how Luis Cabello (reception manager) used to scold us because we were always jumping over the counter at reception in front of the guests... I could go on and on with names and anecdotes but they all know they are in our memories.
Ann De Clerck:
“My sentiments are the same as my brother and sister because we were lucky enough to feel very loved by everyone in the hotel. The most beautiful thing about the Hotel Playa de la Luz is that feeling of “ family and welcome”, of course, the clients who came back every year also became part of the hotel family. From the receptionists who welcome and bid farewell to the guests, the friendly waiters, the maids, the staff in general that treat our clients in a special way.. We have lived here since infancy. I remember that we used to like participating in everything, although the activity leaders would not let us compete in the pool games because we would always win and it was not fair to the other children, the prizes should be for the guests they would say... My sister Sophie and I loved to play housekeeping, and we would make up maps of all the rooms and room numbers and pretend we were supervising the running of the hotel. I remember one of the most fun things was to try to go from one extreme of the hotel to the other, without walking across the patios, the truth is, we gave our parents more than one headache with our antics. The opportunities for play were unlimited, the dream of any child, live in a hotel, like you were always on vacation... It really was special, and today when I come with my daughters and walk through the gardens, I feel like I am recapturing a part of my childhood.
Stefaan De Clerck:
“It is true, there are not words to describe our appreciation for what we have received from our family, the hotel staff and our clients and friends. In this place , we spent our childhood. but we also learned many things and obviously our path was marked out early, it could not have come out any other way, we have taken much sustenance from this hotel... and so many great experiences, even today we are linked to this place in every way possible. After finishing our studies, the HACE group became our launching pad: Sophie is now the director of the Hotel Villa Jerez, one of the five star hotels of the group. Ann coordinates the decoration and image of the five hotels and I am pleased to be able to work with my father and his directors as a HACE group board member. We continue, little by little, innovating and renovating continuously, improving the hotels and bringing them up to date with the latest technology as well as offer our guests in-room internet access as well as wireless (wi-fi) as well. We have begun the first steps in incorporating services like the spa and a wellness centre depending upon the possibilities in each hotel. As for possibilities, the Hotel Playa de la Luz, has a sadly unfinished project to offer more and better services to our clients, bringing as well, a new type of client, and a new kind of tourist, concerned with well being and health. A type of tourism that would break the static model of tourism in Rota, that of sun and sand and residence. In any case, we have not given up hope that our dream will one day be realized, because we believe in this land, here we have laid roots, and we will continue working to improve tourism in the province of Cadiz. We would like the public to know just how symbolic the Hotel Playa de la Luz is on the coast of Cadiz. Our clients have spoken, and continue to repeat it, every year, every time they come back. 40 years ago, someone wanted this place to become the hotel it is today, but I think we have even gone even further, it is charming, a family place and has a staff that radiates hospitality and friendliness towards our clients.”
In the name of the De Clerck family, you have our thanks and affection for these 40 years at the Hotel Playa de la Luz. 35 | edición especial 2006 | encanto andaluz

We could continue filling page after page with testimonials and stories about this hotel, and we would still not have space for it all.
After 40 years, we are still laying bricks true and straight like we have done from the beginning, never losing our unique style, without losing that Andalucian character, keeping the whitewash, the red roof tiles and the classical arches.
Every day, our gardeners practice their art, making our gardens flower, allowing a pleasant stroll past the patios, named for Andalucian poets, Hermanos Quintero and García Lorca. The central patio could be called the sundial patio, a benevolent sun for a peaceful and tolerant land like Andalucia, and in the future will mark the hours our guest spend enjoying the hotel, built exclusively for rest and memories.
We would like to remember a passage from the “Guide to the good life” from 1993 in El País, where we find the following definition:
“Gently rocked by the waves of the ocean and the undulations of the fine sand beach 16 kilometres long. Everything there has been designed in accordance with classical Andalucian architecture, that is to say, horizontal and low, using tiles and railings making the water murmur through the orange trees, palms and flowers of the garden. Being like that, it makes one want to break out the suitcases and take the whole family there for a few days...”

Encanto Prize - January 2006 Even though he has been with the company only a short while, Alberto has earned this prize thanks to his friendly personality and sincere smile. It is nice to arrive at the hotel and the first person that welcomes us embodies that friendliness and “encanto” (charm.).

Best Idea Prize - 2005 Jesús works in reception at the Hotel Duque de Nájera in Rota almost since opening in 1998. With great enthusiasm and business sense, this young man has won the “Best Idea” prize for 2005 with his initiative to wish every client a good night’s rest, leaving them a personal card, with poetry in their language, on the pillow during turn down service every evening. A small romantic detail that we are sure is appreciated by our guests.

francisco benítez jurado barman del hotel jerez desde 1973 bartender at the hotel jerez since 1973 Siempre he sido aficionado a la música.
The guitar, for me, although I have always been a music lover, has always been the essential instrument. I was always captivated whenever I had the chance to see and hear it played., particularly in the musical style I had most close at hand, flamenco, as well as classical guitar. I began playing and learning, little by little, among friends and other music lovers but never taking it too seriously. As someone who was discovering the guitar, and though I played at the odd party, I never seriously considered making music my profession. One must also consider the great influence of this instrument upon the music of Andalucia and particular, in our little corner of

the province, which has given birth to probably the finest musicians of our generation. As my knowledge and skills grew, I was able to assist in the recording by a group called Fotosíntesis of an instrumental album that allowed us to express ourselves musically through our own compositions. Besides being a enjoyable and relaxing hobby, the guitar also requires a lot of hard work to get the best out of the instrument. I will always consider the guitar as the most complete instrument, perfect for a singer-songwriter, accompanying a chorus, a single singer or flamenco dancing or as a solo instrument. As the great masters say, you are always learning, discovering new sounds, it is difficult to extract all the guitar has to offer. It is an instrument that expresses the personality of both the musical style, and the musician, as an example, the more serious classical music with moments of sweetness and melancholy or flamenco with deep soul and happiness. The guitar, as an instrument, is in fine shape although it is not playing a large role in today’s musical scene, possibly owing to commercial aspects in modern music moving in a different direction.

what is the problem?
Hotels tend to use quite a bit of energy in their everyday activities. In many cases, the energy bill is second only to salaries in the budget. This relatively high consumption of energy is generally ascribed to providing all the modern conveniences that a guest expects in a hotel, like air conditioning for example. The vast majority of hotels get their energy from conventional sources, fossil fuels like coal, oil and gas that have an impact on the environment and climate change. The extraction, refining and transport of fossil fuels can also cause, in their own right, damage to the environment. Good internal management and administration, using more efficient practices and use of renewable energy sources can all contribute to reducing our dependence upon fossil fuels.
why is the HACE Group concerned?
The investments made in efficiency and management can significantly reduce operating costs within a reasonably short amortization period. As an example, a hotel with 220 rooms spends approximately €112,000 per year on energy alone. By using renewable resources we can help mitigate the impact of air pollution, help maintain the natural environment and improve the overall experience for our guests. Energy efficiency and good conservation practices also contributes to our image as good corporate citizens, concerned with global energy issues and climate change.
what does the HACE group do?
• Evaluate how energy is consumed to see where we can make improvements and increase efficiency. • Review our energy consumption figures. By doing daily or weekly consumption checks allows us to pinpoint any excess consumption or malfunction of equipment. This also allows us to quantify how much savings have been achieved by our improved practices and new energy efficient installations. • We perform regular preventive maintenance on all of equipment to ensure they are functioning at maximum efficiency and improve or replace older, less efficient systems. • We use low consumption light bulbs in all public areas, and where possible, inside the guest rooms. • We utilize sensors and timers that automatically turn off unneeded lights in low transit areas like hallways, exterior lights, public facilities and staff areas. • The rooms are fitted with a master switch that turns off all the power (except the minibar) when the guest is not present. • We use solar energy to provide hot water in the Hotel Playa de la Luz, Hotel Duque de Najera and Hotel Guadacorte Park. • We engage the staff in finding the best ways to save energy and make the most efficient use of energy while performing their duties. For example, turning off the air conditioning or heating when the rooms are being cleaned, and only using the dryers and dishwashing machines when they are full etc. • We request the collaboration of our guests through an informative pamphlet, published in five languages, on how they can assist in energy conservation.

ecos del rocío entrevista / interview :
Encanto Andaluz: ¿Cómo se formó el grupo?
Encanto Andaluz: How did the group form?
Ecos del Rocío: It started as a group of friends in the early eighties who were passionate about Sevillana music, we did not plan on being professional musicians but the audiences motivated us to continue singing.
After more than 25 years in existence, 13 gold and 2 platinum recordings, Ecos del Rocío have been able transmit via their stage performances the humility, sensitivity, talent and solidarity throughout Spain. Born in Rota, Juan Manuel, Paco, Jesús and Miguel have formed a group that can sing like angels and tell tales with their music that strike a chord with the audience, touching them in a very personal manner. encanto andaluz | edición especial 2006 | 54
Encanto Andaluz: What memories do you have of that first performance? Ecos del Rocío: It was in rota, at a charity benefit event at the old Atlantic cinema, and we were surprised to see such a crowd from on stage. Encanto Andaluz: 25 years is quite a long time in this business. Ecos del Rocío: It has been 25 years of intense work, recording an album every year, many hours of rehearsal, promotion, recording, concerts... but it is true that time f lies and even more so when you have the support of a loyal audience. It has been 25 years of satisfaction and we have created our own style, like it or not, but we think we have made our mark on the history of Sevillana music.

INTERVIEW : ECOS DEL ROCIO
Encanto Andaluz: ¿Ediciones Senador?
Encanto Andaluz: What is Ediciones Senador?
Ecos del Rocío: That is our record company, for more than 15 years now we have had much more than just a professional relationship, it is more like a big family.
Encanto Andaluz: 2 platinum and 13 gold records… Ecos del Rocío: More important than the awards is what they represent, they are not given by any jury, the gold and platinum came directly from our fans. Encanto Andaluz: What does it feel like, up on stage? Ecos del Rocío: Nerves at the beginning, but as the concert goes on, you begin to connect with the audience and you get a great feeling of satisfaction, a difficult feeling to describe.
Encanto Andaluz: What does it mean to you to be from Rota?
Ecos del Rocío: We live in the finest little corner of the world, and we can prove it, we have travelled all over Spain and people always comment on what a wonderful little town we come from.
Encanto Andaluz: How is the world of sevillana music?
Ecos del Rocío: It would be unjust on our part to say that it is not in a great state right now, but what we all must do, groups and soloists alike, is work hard and make great music, our fans expect and deserve no less every spring.
Encanto Andaluz: Más de sesenta galas veraniegas, ¿demanda?
Encanto Andaluz: More than 60 summer shows, how is the demand?
Ecos del Rocío: We are a group that lives on stage, 25 years on stage, live experience that allows us to resonate with the audience and maintain that connection for the full 90 minutes. Our live performances, our solid fan base and the reputation of our past triumphs are probably what keeps us in demand.
Encanto Andaluz: ¿Letra y música de Miguel Moyares?
Ecos del Rocío: For every musician, the most important thing is to create your own musical personality and for Ecos del Rocio, Miguel Moyares is an important part of that, his style has made the style of the group.

Ecos del Rocío: These are some titles of past albums, it is the history of Ecos del Rocío.
Encanto Andaluz: Awards, Cultural citizens of the year, the Calabaza de oro prize, Urta de oro, Astaroth prize, etc. Does this reflect a job well done?
Ecos del Rocío: There is a saying, “nobody is a prophet in their own land “ a saying we feel that does not apply to Ecos del Rocío.
Encanto Andaluz: In one song: ...there are four grains of wheat, four strikes from the sea, two brothers and four friends who were born to sing to a local audience, truth by the sea. What is the sentiment behind these lyrics?
Ecos del Rocío: That is easy, it is a reflection of 25 years together, without friendship and warm feelings we could never have stayed together as Ecos del Rocio. Encanto Andaluz: What is the title of the new album? Ecos del Rocío: Windows to the sea. Encanto Andaluz: At the Hotel Playa de la Luz we enjoyed hosting your 20th anniversary concert before 500 people, how was that moment for you? client letters : to a friend and client of the Hotel Jerez that will no longer return Querido Juan,
Dear Juan,
We already miss you Juan de la Lastra and Terry! Your friends and staff of this hotel, from the front desk to the directors office, and especially in the bar and restaurant where we have enjoyed so many good times together.
You left in silence, without saying a word, very discrete, as if to say that everything you wanted to say had already been written. From what we were able to find out, it was a case of falling asleep in front of the television at your house near San Pedro, either because of the program, or because you programmed it that way, you came to the conclusion that you had lived long enough. The truth is, sadly for all of us, you did not wake up.
We already knew you from the history of Jerez you wrote with Hipólito Sancho de Sapranis, who is having a difficult time right now, since volume III was not yet complete. Now we recall your innumerable articles that are now appearing, like the book you had nearly finished about the horses of Jerez, or something like that, that you wanted to dedicate to the Hoteles Andaluces con Encanto or to Jan Declerck in particular, I don´t recall. Your writing in the Encanto Andaluz magazine, and including your bit about Portugal that was printed on the menu for the gastronomy week. Your prodigious memory made us feel like we always had an encyclopaedia or internet in our midst, sadly now gone.
We can almost see your writers hands, with a few stained fingers from the cigarette you were always holding. It was a good thing you never had to see the no smoking sign go up in our little corner of the bar, full of so many happy memories. The pastry chef still looks over there when he drops off the letters. The long talks, with your erudite commentary, even the smallest anecdote or tale, your powerful imagination converted these to legend. I still remember all those years you would write a Christmas tale for your niece, and the one you created last year for Manme, my wife.
It would be impossible to repeat here your incredible résumé , your works, known in Europe, but without a doubt, comments would continue from heaven, or mount Olympus, I don’t know where artists go, you continue to inspire us and we can gather what we can of your works. Hopefully someone in your family will start this effort. You spoke often of your son Ciro... perhaps he will take up the task.
Your discrete and simple way of living have left many friends missing you, your friends from the residence, the girl from the pastry shop, and the staff at the bar San Pedro de la calle Bizcocheros, the Casino, the Pina dry-cleaners, all of them were a part of your organized world. You have not gone unnoticed. In general, everyone who has known you is a witness to your good way of being.
I think I can speak for everyone at this hotel, and your friends, one of whom is writing this, we have only one thing more to ask of you Juan de la Lastra y Terry, wherever you may be, pray for us.

Preparation: 1. First we cook the bacalao, skin side up and cover with oil and sliced garlic and the cayenne pepper, 15 minutes in the oven at 150º. 2. Remove the bacalao and reserve the garlic and any drippings. In another pan, prepare the vizcaina sauce with the listed ingredients. Nb. The choricero peppers must be soaked for several hours, changing the water frequently. 3. Make the ali-oli using the oil from the bacalao, mayonnaise and a little chopped garlic. 4. Sauté the onion over low heat with the sugar and butter, at the last moment, when the onion is well caramelized, add the finely minced jabugo. (the onion should not be overbrowned, only lightly sautéed.) 5. Now surround the bacalao with ali-oli and broil, prepare the serving plate and garnish to taste.
