museo ruiz-mateos una joya por descubrir

ruiz-mateos museum : a treasure to be discovered

The very special climate we enjoy in the province of Cadiz invites us to enjoy an open-air lifestyle. In the HACE group, we have kept this in mind from the very start, that is why in each of our establishments, you will find large open spaces, including of course, special places to enjoy alfresco dining. These are our summer terraces, of course, in our hotels we can make good use of them almost year-round, and they all have that little something extra, the HACE touch. Enjoying a fine meal alfresco is one of life’s great pleasures, particularly during the warm summer evenings. We at HACE appreciate this fact, and have carefully designed our terraces for maximum comfort and elegance like any fine restaurant, but with the added charm of open-air dining. Unlike typical summer dining establishments, the alfresco dining menus at HACE hotels are extensive and varied and will delight the most demanding gourmet. A common denominator is the cuisine. Of course we have the very finest in local cuisine, but with our own special evolutionary touches, flavours that bring out something special in classic dishes, and make the very best of the finest fresh ingredients from this rich land. To complement the pleasure of a fine meal, we offer one of the most complete wine lists, both Spanish and International, available anywhere. All of this in a relaxed and distinguished atmosphere where our personal service and attention makes the final difference.

Being conscious of the importance of careful management, not only fiscal but environmental, of the hotels of the HACE group, the President and directors have created a quality and environmental conservation department, charged with managing these important issues on a daily basis.

From this office, we carefully manage any possible impact the hotels may have on our environment on a day to day basis.

Recently, our efforts in water conservation have become an important issue owing to very light rainfall over the last few years. The availability of clean potable water effects all of us, and we have taken important steps to reduce our consumption of this increasingly scarce resource.

CARING FOR THE ENVIRONMENT

CUIDANDO EL MEDIOAMBIENTE

/

CARING FOR THE ENVIRONMENT

Everyone understands that a hotel is a large consumer of fresh water, and we have taken many steps to help reduce both consumption and demand for potable water. Among the many actions taken so far include:

For this reason, and as an example, the Hotel Jerez has taken on the challenge of reducing consumption of fresh water to 2002 levels. Various steps have been taken so far, and milestones established to measure our progress.

y All new bathroom fixtures installed are of the low-flow variety, with partial flush.

Careful monitoring of consumption levels and program milestones show that in 2004 we have actually surpassed our goal and have achieved a 10% reduction in the consumption of potable water compared with 2002.

y Actual water consumption statistics are compiled for every room, and compared against historical and industry norms to help identify any excess consumption or waste. y Constant training in environmental issues and conservation are stressed to our staff. The reduction of consumption is not the only goal of this program, while certainly an important part, the HACE group, and each of the individual hotels that form the group have made a commitment to a process of continuous improvement in our quality and environmental practices.

Our environmental goals are generally based upon annual results, striving to better our results from the previous year, as in the example above. We also address any issues that come to our attention either from staff, or from comment forms and surveys taken throughout the year.. We are always open to suggestions as to how we can improve our environmental friendliness. Rocío de la Calle Quality and the Environment Manager - Hotel Jerez

During Lent this year, a member of staff, Leopoldo Almisas was awarded first prize in the photography competition held by the Rota association of religious brotherhoods.

With 50 years behind him, and on staff here since 1978, we have enjoyed 27 years working with Leopoldo Almisas. A person who has explored poetry, painting and of course photography, the latter being a passion since childhood.

To get an idea of his commitment to his art, he has shot upwards of 1700 rolls of film, not counting digital photographs nor the collection he inherited from his grandfather (some dating to 1914.) The photograph of which he is most proud is one he took when he was only 14. A candid shot of children running before a breaking wave on the beach. This same photograph also won a prize in Cadiz a few years ago.

If there is one thing that Leopoldo Almisas is particularly proud of, it would be the plaque the local government has dedicated at his birthplace in recognition of his accomplishments as an artist. J

Domingo Sánchez Rizo, of the Andalusia Tourism and sports board opens the doors to his office on this sunny morning in April to give us some insight into the realities of tourism in the province. A reality that includes some well known facets, and some others not yet fully explored. A passionate reality, that, like fine wine, over time, improves its quality. Domingo Sánchez is a Pharmacist by profession and a politician by his beliefs., He sees his role as a public servant as being a point of contact for any issues that may come up, and a conviction that the most important thing is the presence of others.

Encanto Andaluz: What are your views on how tourism has evolved in Cadiz over the last few years?

Domingo Sánchez Rizo: The trend has been towards ordered and sustainable growth in all sectors. I think it is critical that the public perceives tourism as being important to the province, and the society sees it as one of the most important sources of jobs and income. In the long run, uncontrolled growth, like has happened in other areas, has its price. Our growth has been ordered and sustainable.

Encanto Andaluz: Tourism being an important part of the local economy, is there still room for more growth in the sector?

Domingo Sánchez Rizo: Tourism in Andalusia represents about 13% of the economic activity and around 200,000 jobs. In Cadiz, it represents between 13 and 15% of the economy and 8,000 jobs. This is an important part of the economy, but it should always complement the overall economic activity, not completely dominate. If we are capable of working together to develop controlled, sustainable growth in the tourism sector, we will go far. I think there is still room for growth in the sector, but we must look for quality vice quantity. Promoting tourism within the region, and strive to offer new opportunities besides the classic Golf, f lamenco, cultural, health, wine and sunny beaches.

Encanto Andaluz: A dream for the bay…

Encanto Andaluz: Una anécdota en su gestión…

Domingo Sánchez Rizo: That we break out of the local and territorial mindset, and consider ourselves citizens of the world.

Domingo Sánchez Rizo: Recorrer 60.000 kilómetros en tan solo 11 meses

Encanto Andaluz: Any interesting anecdotes during your time on the tourist board?

Domingo Sánchez Rizo: Travelling 60,000km in 11 months!

Me gustan muchas cosas. J

We have over 260km of beaches, many still in a virgin, natural state, and many “blue flag” (beaches that have been judged superior by the E.U. for quality, cleanliness, safety and services. ed.) beaches. At the tourist board, we are looking at products that break the typical tourism mould. We have much to offer the visitor, and we can and will always strive to improve. I think that the Sierra of Cadiz is probably the least well known, and in the area of “Nature tourism” we have only just begun development.

Encanto Andaluz: Is there anything special you like in particular about our hotels? Domingo Sánchez Rizo: The smile you always get at any HACE hotel. I like so many things about the group. I do remember a waitress one time, stopping to pick up a stray bit of litter, that kind of attention to detail. Encanto Andaluz: Could you give us, in closing, any advice with a tourist flavour? CORRALES DE PESQUERÍA

/

THE FISHING CORRALS

por / by: Juan Luis Naval Molero Cronista Oficial de la Villa de Chipiona Official historian for the Village of Chipiona The fishing corrals are of ancient construction and are distributed all along the coast. An interesting artefact of ancient fishing techniques that are still being used in the present day. They are artificial reefs or closed lagoons built with low walls made of porous rock, carefully fitted together so that the marine algae, molluscs and bivalves grow on the walls and act as a cement and forming a solid, durable wall 1.5 meters wide and from 50cm to 1.5 meters tall. They start at the breakwater and form a semi-circle and acting as a corral, locking the fish inside during low tide. The largest may be 30 or 40 thousand square meters in area. The level of the walls is always perfectly equal to the water level taking into consideration the rising beach. This way, the fish are taken by surprise and have no escape from the very beginning of the low tide. All along the wall, there are compartments built in with a mesh or net to allow the water to escape, but not the fish. This ancient technique has been handed down through the generations up to the present day, and can only be done in areas where there is a reasonably large tide, where the fish can be trapped. The interior of the corral is subdivided into smaller corrals where the different species are trapped according to their size.

D

THE FISHING CORRALS

/

THE FISHING CORRALS

Some claim these corrals to be of Arab construction, others date them to the Romans owing to the similarity of the tools used for fishing by the Roman empire exclusively. At all events, the Roman civilization developed where there was very little difference between low and high tide, so it is not likely that they actually developed these techniques. So the possibility exist that these were originally developed by earlier civilizations of primitive fishermen more often found on the Atlantic coast. The fishing corrals are an interesting manifestation of man’s ingenuity. The people who developed this ingenious manner of fishing, without nets, hooks or any other apparatus, without having to risk your life on the high seas, simply picking up the fish at your feet. This is recognized as one of the most comfortable and easiest of the primitive fishing methods used worldwide. Obviously the corrals work in time with the tides, and are most effective during a strong rising tide, bringing in, and trapping at low tide, a wide variety of sea creatures. In antiquity, they existed all along the Atlantic coast, but today they can be found in Chipiona, with ten, Rota, with five, and Sanlúcar de Barrameda with one, the only places in the province, and possibly the country with corrals. They should be protected as valuable historical treasures, showing the struggles of people populating the area throughout the centuries, and serving as a living monument to their efforts and industry.

The principal tool used is the “cuchillo de marea”, or tide knife. It is long, curved and quite thick and is used to stun the trapped fish. There is also a type of trident used called a “fisga” or “fija”, of about 120cm in length with a grapple at the other end to pull the fish out of holes and small caves where they may attempt to take refuge, particularly octopi. Also used is a “francajo” a wooden tool of about 150cm. with the advantage that if dropped, it will float.

In June of 2002, the Rota municipal government presented its 4th competition for good practices that improve the human condition. This program, sponsored by the United Nations and based in Dubai, United Arab Emirates, and a project titled “Reconstruction, management and promotion of the Corrals of Rota” was recognized by the committee as one of the best 100 projects worldwide among over 550 contestants. This project, since then, has been catalogued in the database of good practices to improve the human condition. This database includes 1600 projects from 140 countries who have submitted programs from 1996 to 2002. This contest attempts to make society aware of sustainable techniques that improve the human condition, following the criteria of the U.N. and the declaration of Dubai. J

gente encantadora charming people Les presentamos a las Sras. Gisela Hutchinson y Hannelore Perry. We would like to present two special ladies. Mrs. Gisela Hutchinson and Mrs. Hannelore Perry. They have been coming to the playa de la luz for the last three years running. They love to travel and they commented that they have stayed in many hotels but when they arrived here, they were surprised by the warm welcome and special attention we offer our guests. The proof is in this lovely work of art, personally hand made by these two ladies, and brought as a gift from their homeland to the staff at the Hotel Playa de la Luz. Thank you very much ladies, for being so gracious and charming.

To everyone: I have always, from a long way back, defended the theory that we are the people who through our good actions, can appreciate, ennoble and bring prosperity to business and vice versa. In your case, within the incomparable framework of the lovely city of Jerez, in such a lovely, warm place like the Hotel Jerez.

It has been twenty years, and your friendly, sincere welcome has never changed. Twenty years I have know this establishment, since the days of the Parador and up to the present day... some businessmen took on the challenge to restore and preserve such a stately Jerez landmark. After a long journey through your varied geography and thinking back on all I have seen, it is comforting for me to think that my habit of always returning here to your lovely city was not just chance, and having the opportunity to tell you that you have made me happy all these years.

Gerardo with your invaluable assistance, in a difficult situation for me, an accident, that thank goodness only resulted is a good fright, when you took the time to take me, in your personal automobile to the airport, looking for something important that in the end, was right where it should have been, in my wallet, that was safely in the hotel. With great patience, he smiled. A smile that grew into something much more than a smile. Galera, Antonio, Carlos, José, David, Triano, Paco Benítez, José Medrano, everyone, always with a friendly demeanour and an impeccable sense of service with style. To all the ladies at reception, with a champion’s smile always in place. Lidia, the assistant manager, with your finely tuned woman’s intuition and friendly discretion. Rosa, my secretary says she will never let me rest my weary bones in any other place than the Hotel Jerez. I do not know how she does it, but she always manages it. In the restaurant and breakfast service, magnificent attentive gentlemen, one of whom is a special friend from the Christmas festivities, and one big man with the smile of the good man he is. D. Antonio, the manager, pure friendliness and very thoughtful. Everyone, without exception. I almost forgot the housekeeping folks and the maids. The rooms, and everything else, always perfect! The kindness you have shown me over the years have allowed me to appreciate how good you all are, and only in the most extreme, difficult situations will I stay anywhere else. The exquisite attention and warm welcome you have always given me has left its mark. A gift you offer to people like me, who travel frequently on business. All of this wonderful attention is delivered with a magnificent spirit of excellent service (and I understand good service from my own business dealings.) Our society today needs a good dose of understanding the difference between good service and servitude. That fine line that distinguishes fine service, that which elevates us all and denigrates none.

I would like to say a few more things, face to face, but allow me to say, that the people who have there, hand on the tiller of this enterprise, the way you do business, and your honourable practices, and positive attitudes will see this group safely into port, of which you are blessed in the bay with a surfeit. As things should be. I offer you my thanks for making me feel so at home and for the warm welcome you always offer. I feel fortunate to have enjoyed your hospitality. Thank you, thank you very much, and please, don’t ever change.
