andalusian thoroughbreds : cartuja stables En los terrenos que ocupa la finca “Fuente del Suero”, adyacentes a La Cartuja de Jerez de la Frontera (Cádiz), se contempla hoy – igual que a finales del siglo XV – la estampa de los legendarios caballos de pura raza española. Es la misma imagen, espontánea y majestuosa, que desde siglos atrás enamoró a reyes, pintores, investigadores, criadores y poetas. Allí pastan y crecen ejemplares de gran pureza : los que conforman la estirpe de la Yeguada de La Cartuja- Hierro del Bocado. Las actividades de ésta yeguada mítica se desarrollan en el marco geográfico del valle del Guadalete, el mismo espacio natural que, por sus condiciones especiales de clima y fertilidad, gesta los universales vinos de Jerez. El prestigio ganadero de estas tierras se remonta a la antigüedad clásica. Virgilio describió con fascinación el perfi l armónico de los caballos del sur peninsular, y Publio Cornelio Escisión atesoró en su mansión romana équidos de la Baja Andalucía. Con los siglos Jerez, cuna del caballo, siguió siendo crisol de ejemplares universalmente apreciados. Merced al Descubrimiento de América, por citar un ejemplo, el caballo andaluz llega al Nuevo Mundo para ser la base de toda su población equina. También nutrirá a algunos de los centros hípicos más importantes de Europa: Los orígenes genéticos de la yeguada de Lipizza, en Austria, LA DE Kladrub en Bohemia, o la de Fredericksborg en Dinamarca hay que buscarlos en el caballo del sur español. Hoy, en la misma línea de admiración, ganaderías privilegiadas de los cinco continentes se precian de que en sus ejemplares corra sangre de la estirpe cartujana.

Over the centuries, Jerez, as the home of the Spanish

horse continues to be the source for the very finest examples worldwide. anks to Spanish exploration in North

America, the Spanish horse served as a base for all the horses in the new world. e Spanish thoroughbred is

also the breeding stock for many famous European stables like the Lipizzaner in Austria, Kladrub in Bohemia

or Fredericksborg in Denmark. Today, famous breeders on five continents proudly breed examples of the Spanish horse with bloodlines going back to the Cartuja Stables.

LA YEGUADA DE LA CARTUJA / ANDALUSIAN THOROUGHBREDS tivamente la responsabilidad de mantener y mejorar este tesoro genético, trasladando sus ejemplares a la finca “Fuente del Suero”. De nuevo la cercana Cartuja es referente histórico y geográfico, pues la finca había pertenecido a los cenobitas, que en 1484 la compraron por 140.000 maravedíes. Hoy la empresa pública EXPASA, responde de la gestión de la Yeguada , ha construido unas funcionales instalaciones dedicadas a la crianza, estudio y mejora de la estirpe cartujana, teniendo como objetivos fundamentales la salvaguarda y mantenimiento de su riqueza genética. En Fuente del Suero los programas de trabajo e investigación y el respeto de las tradiciones, se combinan armoniosamente para hacer posible la proyección de este patrimonio único y exclusivo. Nada se improvisa; todas las tareas cotidianas, hasta la más humilde y sencilla, obedecen a una rigurosa programación acorde con los objetivos marcados.

Desde que fue fundado a finales del siglo XV, en el monasterio de Santa María de la Defensión se convirtió en piedra angular de la crianza del caballo jerezano. La orden religiosa de los cartujos, rectora del cenobio, contaba ya con una importante experiencia ganadera en otros monasterios. Aunque el origen se oculta tras numerosas historias y anécdotas, parece claro que desde el primer momento los monjes del cenobio jerezano, sabedores de la importancia del caballo de la tierra, constituyeron una yeguada que con el tiempo se convertiría en una de las más célebres y apreciadas del mundo.

En torno al espléndido edificio renacentista de la Cartuja, erigido a escasos kilómetros de la localidad, llevaron a cabo durante cuatro siglos una esmerada labor ganadera que se prolongó hasta comienzos del siglo XIX. La Guerra de la Independencia originó el expolio del monasterio jerezano, y la yeguada abandonó para siempre el amparo de estos religiosos. Afortunadamente, en 1810 el presbítero Pedro Jose Zapata salva a esta ganadería de su dispersión adquiriendo sus mejores ejemplares. Para marcarlos Zapata emplea un nuevo hierro con un bocado, dando así a su yeguada el nombre por el que aún es admirada en todo el mundo. Años después Don Vicente Romero, al comprar parte de la ganadería, añade una “C” al Hierro del Bocado. La pureza de la estirpe cartujana estará a salvo con las sucesivas titularidades : Don Vicente Romero García, Don Desgracias Blasco de Balbuena, Doña Rosario Romero viuda de Domínguez, Don Francisco Chica Navarro, el Vizconde de Montesina, Don Roberto Osborne, Don Juan Pedro Domecq y Núñez de Villavicencio, Don Fernando C. De Ferry y del Cuvillo y Doña Isabel Merello, viuda de Ferry, son personajes que, gracias a su lealtad y su esfuerzo, han hecho posible que la pureza del Hierro del Bocado haya llegado incólume hasta nuestros días. En 1983, la ganadería pasa a formar parte del Patrimonio del Estado, que siete años más tarde asume defini-

Since it’s founding at the end of the XV century, the Santa María de la Defensión monastery has been the cornerstone of the Jerezano breed. e Cartujan monastic order had vast experience in breeding horses at other monasteries. Although the origins are shrouded in mystery and anecdote, it is clear from the start, the monks realized the importance of horses to the land and started a breeding stable that has grow to be one of the most famous and respected in the world. On the grounds of this splendid renaissance building, just outside Jerez, is where the monks bred horses for four centuries. e war of independence brought trouble to the monastery and the stables were to be dispersed and never returned to the religious order.

Con la aplicación de los programas de perfeccionamiento y doma se van desarrollando habilidades, orientándose el futuro de los ejemplares hacia el enganche, la montura vaquera, la doma clásica o las pruebas deportivas. Así se potencia la energía, espectacularidad, variedad y riqueza de las propiedades funcionales propias de esta raza. Desde que cumplen un año, los ejemplares del Hierro del Bocado son sometidos a valoración morfológica, y a partir de los tres años se inician en la fecundación de un elevado número de yeguas previamente seleccionadas. Éstas, predestinadas para la procreación de animales de privilegio, son ejemplares preferentes; en cuanto a los caballos adultos, sólo aquellos cuyas características fisiológicas y señas genealógicas excepcionales guardan exacta correspondencia con las líneas maestras de la estirpe son admitidos como sementales.

Today, the government owned company EXPASA, has the responsibility for the management for the stud. ey have built breeding stables and laboratories dedicated to the study and breeding of the Cartujan horse, with the stated purpose of preserving and maintaining the genetic purity of the race.

Fortunately, in 1810, Pedro Jose Zapata saved the stud, purchasing the finest examples.

At Fuente del Suero the research and breeding programs harmoniously blend with the old traditions and guarantee this exclusive and unique patrimony. Nothing is left to chance; even the most mundane of daily tasks follow a rigorous protocol to ensure this goal is met.

To mark his breed, Zapata used a new brand, with a bit, giving the stud its name and a brand renowned throughout the world. Years later, Don Vicente Romero purchased a portion of the stud and added a “C” above the bit on the brand

With the training programs in place, the breed is being given new abilities including more emphasis on carriage work, fieldwork, classic dressage and sporting events. is will improve the energy, variety and depth of the abilities of the breed.

e purity of the race was maintained by a series of owners: Don Vicente Romero Garcia, Don Desgracias Blasco de Balbuena, Doña Rosario Romero widow of Domínguez, Don Francisco Chica Navarro, the Vicount of Montesina, Don Roberto Osborne, Don Juan Pedro Domecq y Núñez de Villavicencio, Don Fernando C. De Ferry y del Cuvillo and Doña Isabel Merello, Ferry’s widow, they are personalities that because of their collective loyalty and effort, have ensured that purebred Jerezano horse is with us today.

From the age of one year, the horses are carefully evaluated and from the third year are ready for stud. ese select breeding mares are the finest available. As for adult horses, only those with the finest physical proportions and exceptional genetic backgrounds that conform completely to the race are allowed to stud.

In 1983, the stables became part of the national patrimony, with the government taking over complete responsibility for the maintenance and health of this genetic treasure seven years later, and supplying horses to the “Fuente del Suero” Finca. Once again, the nearby monastery is a historic and geographical landmark, after having been purchased in 1484 by the order for 140.000 maravedíes.

Las nuevas generaciones de la Yeguada de La Cartuja-Hierro del Bocado están mejorando su alzada y logrando un equilibrado desarrollo tanto óseo como muscular. Los programas de reproducción siguen los sistemas tradicionales utilizados durante siglos, beneficiándose lógicamente de la incorporación de mejoras tecnológicas y medidas sanitarias preventivas que garantizan una mayor calidad en el control y evolución del proceso de gestación. Así, se siguen diversos programas de investigación con el objetivo de perpetuar la singularidad del caballo cartujano : sus resultados constituyen una aportación científica de singular importancia para el mundo del caballo en nuestro país. Como tesoro étnico esta ganadería es insustituible. Es factor determinante para mantener el prestigio del caballo español en el exterior y para dotar de garantía de pureza a las ganaderías nacionales. Todo está calculado en la Fuente del Suero para que estos caballos y yeguas sigan siendo animales de prestigio, característicos en su equilibrio formal y en la elegancia de sus movimientos, en el carácter noble y dócil, en las reacciones justas, resistencia, suavidad y energía que le son propias. Y como antaño estos ejemplares modélicos, mimados y meticulosamente custodiados en la Yeguada La Cartuja-Hierro del Bocado, son contemplados con admiración por aficionados y ganaderos de todo el mundo. 

noticias / news Certificados de Calidad y Medio Ambiente Quality and Environmental Certifications Los Establecimientos de la Cadena Hoteles Andaluces con Encanto, Obtienen Los Certificados ISO 9001:2000 e ISO 14001:1996 La fuerte apuesta llevada por el Grupo HOTELES ANDALUCES CON ENCANTO por mejorar la calidad de su oferta y, al tiempo, preservar el Medio Ambiente, la han llevado a conseguir el certificado de calidad ISO 9001:2000, así como el certificado de Medio Ambiente, ISO 14001: 1996. Estos certificados son otorgados por AENOR, tras efectuar un largo seguimiento a los establecimientos que los solicitan. Sumamente exigentes a la hora de entregarlos, AENOR obliga a realizar manuales para recoger el funcionamiento de todos los departamentos de la empresa. Los Hoteles del Grupo HACE son los primeros en contar con estos certificados en los municipios en los que se encuentran: Hotel Jerez y Villa Jerez en Jerez de la Frontera; Guadacorte en Los Barrios y Playa de la Luz y Duque de Nájera en Rota. The Hoteles Andaluces con Encanto group of hotels has been named winners of the Argantonio & Hércules prize, awarded by the Marketing Club of Cádiz to those companies and institutions that have excelled over the previous five years.

The prize recognizes the efforts of the HACE group to constantly improve service quality and by these efforts, provide a strong impulse to the economy in the province. Recently, the first annual Hoteles Andaluces Con Encanto Indoor Football tournament was held in the Ruiz-Mateo pavilion in Jerez. The hotels Duque de Nájera, Guadacorte Park, Villa Jerez y Hotel Jerez each fielded excellent teams. The competitors were all staff members from the respective hotels and showed off their physical prowess on the indoor pitch. The victory belongs to the team from the Hotel Duque de Nájera, who won convincingly in the final against the Hotel Villa Jerez by a score of 6-0.

Marca will also be offering free stays to winning club members so they can enjoy specific sporting events taking place in or around the bay of Cádiz. The first draw coincided with the Spanish national motorcycle championships held at the Jerez racing circuit, and two lucky club members from Madrid enjoyed the hospitality at the Hotel Jerez as well as a special weekend of racing action. The winners also were able to visit the pits and got to meet all the top Spanish racers as international stars like José Luis Cardoso.

The Hotel Duque de Nájera, which since its inauguration in 1998 has won this award annually, once again was awarded 5th place, making it three years running in the top ten hotels in the world. All these hotels will appear in this summer’s vacation brochures proudly displaying the symbol of the TUI-Holly as a mark of excellence and distinction. client’s corner : dreams When I was young, I always dreamed of spending my vacations at a luxury hotel, right on the ocean. I imagined great chandeliers at the entrance and the bustle of people passing by the pool, the restaurant on the beach. At that time, I was not capable of understanding the importance of the little details. My imagination took me to far away exotic places where important things were happening. When I came back down to earth, I helped my parents put the baggage in the little SEAT 600, and I went with the rest of the family to my Grandparent’s house, they having moved to Barcelona many years before.

Cuando era pequeña, siempre soñaba con pasar las vacaciones en un hotel lujoso, a orillas del mar. Imaginaba una gran lámpara de cristales brillantes en la entrada y el ir y venir constante de gente entre la piscina, el restaurante y la playa. En aquella época, no era capaz de comprender el significado de las pequeñas cosas. Mi mente me transportaba a lugares exóticos y lejanos en los que sucedían hechos importantes. De vuelta a la realidad, ayudaba a mis padres a colocar el equipaje en el Seiscientos, y me trasladaba con toda la familia a casa de los abuelos, que años atrás habían emigrado a Barcelona. Con el paso del tiempo, he tenido la oportunidad de alojarme en hoteles, incluso fuera de España unas veces por motivos de trabajo y otras por vacaciones. Para mi sorpresa, mis sueños se han ido desvaneciendo. No me han impresionado las lámparas, ni el lujo, ni el glamour. Lo verdaderamente importante son las sensaciones que quedan en el recuerdo y que te hacen pensar en volver algún día. santiago lópez de valdivieso entrevista / interview : Encanto Andaluz: ¿Se definiría como un amante del deporte? ¿Cómo consigue sacar tiempo para desarrollar sus actividades deportivas?

Encanto Andaluz: Would you describe yourself as a sportsman? How do you find time for your sporting endeavours?

Santiago López de Valdivieso: Quizás, más que como amante me definiría como “aficionado practicante”. Sin duda, me atraen como espectador todos los grandes acontecimientos deportivos, sean de la especialidad que sean.

Santiago López de Valdivieso: Perhaps, better than sportsman, you could say I am a “practicing amateur”. Without a doubt I am an avid fan no matter what the sport.

No soy, por poner un ejemplo, aficionado al baloncesto o al waterpolo, pero si un día el equipo español o la selección se juega un título importante lo veo por televisión. Si lo que hablamos es de motores, en ese caso me gusta todo. En cuanto al tiempo, que duda cabe que tengo que organizarme, pero como todo en la vida querer es poder, intento compatibilizar mis ocupaciones con la práctica del automovilismo y sacar tiempo para ir dos o tres veces por semana al gimnasio.

I am not, for example, a big fan of basketball or water polo, but if a Spanish national team is playing an important match, I will watch it on Television. If you are asking about motor sports, then I enjoy them all. As far as my time goes, there is no doubt that I have to manage it very carefully, but like everything in life, it is a compromise, a case of making time for both my professional responsibilities as well as racing, and still getting to the gym two or three times a week.

Encanto Andaluz: Jerez ha sido remodelado recientemente. ¿Cuál es su opinión sobre el circuito jerezano?

Encanto Andaluz: e Jerez circuit has been recently remodeled, what is your opinion of the circuit?

S. López de Valdivieso: Jerez es, sin duda, mi circuito preferido. Es rápido, con zonas muy técnicas y además muy divertido.

S. López de Valdivieso: Jerez is, without a doubt my favourite circuit. It is fast, with good technical sections and quite a bit of fun.

Si al trazado, unimos las magníficas instalaciones y todos los elementos que se han añadido últimamente y el entorno tan agradable que se ha creado con árboles, estanques, palmeras, etc, la verdad es que me resulta muy atractivo. Encanto Andaluz: Como Director Genera l de la Guardia Civ il y como piloto, ¿qué les diría a los jóvenes para que se redujera el número de accidentes que provocan cada f in de semana?

When you add in the excellent facilities with the new track elements and such a lovely surrounding area with trees, ponds and palms etc. I believe you have a very attractive combination. Encanto Andaluz: As the Director General of the Guardia Civil, and as a driver, what would you say to young people to help reduce the number of traffic accidents suffered every weekend?

Santiago López de Valdivieso: Lo primero, rescatar aquel viejo slogan, si bebes no conduzcas. Eso es fundamental, pues un número muy importante de los accidentes tienen que ver, sobre todo entre los jóvenes, con el consumo de alcohol. En términos generales, no distraerse. No bajar nunca la guardia cuando se conduce, pues casi todos los accidentes son por fallos en la atención que se debe tener cuando se está detrás de un volante. Encanto Andaluz: ¿Es más problemática la juventud actual o piensa que los problemas de los jóvenes han sido siempre parecidos? Santiago López de Valdivieso: Yo creo que han sido siempre parecidos. Lo que pasa, es que con el tiempo la forma de manifestarse, sus causas o sus consecuencias han ido evolucionando. Hoy los jóvenes tienen muchas más oportunidades de las que han tenido otras generaciones para aprender, para formarse, para trabajar. Quizás, también pueden tener, diríamos, más motivos de distracción... Las sociedades son, hoy, afortunadamente cada vez más libres. Más permisivas en el mejor sentido de la expresión, pero eso lleva consigo, y es bueno, la exigencia de que los jóvenes sean cada vez más responsables de sus actos y más dueños de sus destinos y de sus futuros.

Santiago López de Valdivieso: First of all, I would dust off the old saying if you drink, don’t drive. is is fundamental, as a large number of traffic accidents; particularly involving young people are alcohol related. In general terms, don’t let your attention wander. Don’t lower your guard for an instant while behind the wheel; most accidents can be attributed to being distracted while driving. Encanto Andaluz: Are young people today more troublesome or is this the same problems we see generation after generation? Santiago López de Valdivieso: I think the problems are the same, what is different is that today we see them manifesting in a different way, the root causes have evolved over the years. Young people today have greater opportunities to learn than previous generations, to avail themselves of training, to work, possibly you could say they have more to distract them... Society today is fortunately very open and free. More permissive, in the good sense of the word, but along with that freedom goes greater responsibility for our young people. Encanto Andaluz: Jerez es uno de los lugares que frecuenta. ¿Qué es lo que más le atrae de nuestra ciudad?

Encanto Andaluz: You spend quite a bit of time in Jerez. What is it that you like about the city?

Santiago López de Valdivieso: La respuesta sería más fácil si la pregunta hubiese sido qué es lo que no me atrae. Sinceramente me gusta todo. Cuando cada temporada llega el calendario de las carreras, lo primero que miro es cuándo es Jerez, porque siempre, además de correr en el circuito, aprovechamos el fin de semana para otras cosas y disfrutar de Jerez.

Santiago López de Valdivieso: e answer would be much simpler if you asked what it is I do not like about the area. Honestly, I like everything about it. When racing season comes along, the first thing I do is check when Jerez is on the schedule, besides the racing, we try and take advantage of the weekend and just enjoy Jerez.

Encanto Andaluz: Las carreras son su principal afición, pero cuando está alejado de los circuitos ¿en qué prefiere invertir su tiempo libre?

Encanto Andaluz: Racing is your major hobby, but when you are away from the track, what do you like to do with your free time?

Santiago López de Valdivieso: Bueno, no me queda mucho, pero me gusta dar largos paseos. Intento ir al cine dos veces al mes. Leo. Oigo música,,, cualquier cosa menos perder el tiempo pues ya que escaso hay que apovecharlo y vivir la vida, que sin duda es lo más importante. Más que cualquier trabajo y no digamos nada, que cualquier ambición material. 

Santiago López de Valdivieso: Well, I don’t have much free time, but I do enjoy taking long walks. I try and go to the cinema twice a month, I read, listen to music... anything really, anything but waste time. Time, like life is precious and I want to make good use of it. at is the most important thing, more important than any job or any material ambitions. 

Los aficionados al motociclismo tienen una cita obligada, cada primavera, con el circuito de Jerez. El trazado andaluz se ha convertido en auténtica capital para los amantes de las dos ruedas y año tras años, decenas de miles de aficionados invaden la Bahía de Cádiz, llenando de color y de un especial ambiente el fin se semana del Gran Premio de España. Más de sesenta mil motos llegan desde todos los puntos de Europa y se calcula que la población de la bahía se aumenta hasta en 250.000 personas durante esos días. A la fiesta en el circuito se añade la que se celebra espontáneamente en cualquier rincón de Jerez, El Puerto de Santa María, Rota o cualquiera de las poblaciones en sesenta kilómetros a la redonda. El olor a gasolina y a neumático quemado predomina entonces, superando a los aromas típicos de la zona. La especial manera de atender a sus visitantes ha hecho de Jerez y su entorno el lugar preferido para los seguidores del Mundial de Motociclismo, atrayendo incluso a un gran número de curiosos, de gente deseosa de vivir en directo tan espectacular concentración. Al final, tan sólo la mitad de todos los llegados presenciarán en directo las carreras del domingo. El resto intentarán despertarse a lo justo para acercarse a un bar y presenciarlas por televisión. Y es que las noches gaditanas tienen tanto embrujo... 

A Required Pilgrimage

The Spanish Motorcycle Grand Prix True motorcycle aficionados have one pilgrimage they must make. Every spring, to the Jerez racing circuit. is Andalusian circuit has become the unofficial Mecca for motorcyclist year after year. Tens of thousands invade the bay of Cádiz, bringing colour, thrills and excitement, and a very special atmosphere to the Spanish GP in Jerez. More than 60,000 motorcycles descend from every part of Europe and it is calculated that the population of the bay area increases by more than 250,000 people during the GP weekend. Besides the action at the track, impromptu parties and get-togethers take place at any street corner in Jerez, El Puerto de Santa María, Rota or any other place within 60 kilometres. e smell of petrol and burning rubber dominate, overtaking even the fragrant bodegas and orange trees. e special way these visitors are greeted in Jerez and the surrounding area make it the place to be during race weekend, bringing out even many curious spectators lining the streets and highways to greet and be a part of this largest of all motorcycle rallies. At the end of the day, only about half the riders ever get to the track to see the races live on Sunday. e rest are content to rise in time to catch the races on the TV at the local bar. e problem is that these late nights on the town in Cádiz are just so tempting... 

“Como decíamos ayer”..., en mi pasado artículo publicado en Encanto Andaluz, dejaba los temas epigrafiados ligeramente tocados y lo cerraba con el ruego de que fuera interpretado como un aperitivo o invitación a otro más profundo o extenso sobre los mismos. Como sé que no dispongo de mucho espacio, me limito a no pasar por alto algo observado desde mi atalaya o rincón del Bar de este encantador Hotel Jerez, del que en otra ocasión comentaré sus innumerables y excelentes detalles. Por el momento, retomo lo visto desde mi rincón. “Las buenas maneras”.- Una mañana cualquiera, pues no recuerdo el día, llega una señora empresaria muy conocida y toma asiento en una de las mesas. Mira su reloj con cierta frecuencia, síntoma de que alguien está faltando a una de las Reglas de Oro de las BB.MM., la puntualidad. Al cabo, entra un señor, al que ella pregunta si es la persona esperada. La contestación es negativa y se vuelve al potro de la espera. Pasado un buen rato, hace acto de presencia un joven con todo el aspecto de un “neo-ejecutivo”. La señora no corre el riesgo de ser de nuevo rechazada y queda a la expectativa. El joven se le acerca y se establece un intercambio de nombres, empresas y una sonora excusa por la tardanza, cuyos motivos no percibo claramente. Lo que sí me va a dejar perplejo es que, el tan esperado personaje, apenas se ha sentado frente a la señora, recibe una llamada en su móvil y aún pidiendo perdón a grandes voces, ríe, bromea, nos enteramos de varias cosillas, e incluso se concierta algún divertido fin de semana. La señora espera sin querer enterarse y, cuando la llamada acaba, él se dirige a ella y le dice algo así como ... “Bueno, tú qué es lo que quieres”... Por lo que intuyo en ese momento, hubo poco tiempo para hablar de lo que tenían entre manos y mucho para el móvil, pues rápidamente se imparten saludos/besos de despedida y así queda todo. Bien sabe Dios que no prestaba atención, pero era todo tan patente que mi deformación profesional me hace valorar las BB.MM. del personal del hotel en contraposición con las de algunos visitantes. MORALEJA.- Decía Boileau: “No quiero hacerme aguardar jamás, porque he notado que, mientras uno aguarda, comienza a descubrir los defectos de aquél que no acaba de llegar”. Un no rotundo a la impuntualidad. En unas presentaciones, nuestro nombre ha de pronunciarse primero; por ejemplo, me llamo tal, ¿Es Vd. La Sra...? El móvil es el invento más útil del pasado siglo, pudiéramos decir, pero no lo suficientemente importante como para perder las elementales normas de educación ante una persona recién conocida. ¡... Estoy ocupado, le llamaré enseguida, perdóneme!. Algo así es lo mejor, y jamás hablar a gritos. Es horrible la manera que tenemos en este país de hacernos oír. Dejo para otra ocasión hablar de esta “modalidad” de saludos/besos entre personas que apenas se conocen, cuando esa costumbre adorable de besar la mano a una señora nos hizo famosos en muchos países del mundo. Me olvidaba decir que, para tutear, hay que esperar a que nos lo permitan. ¡Hasta el próximo! 

protocol : good manners (II) “As we were saying earlier”... in my last article published in Encanto Andaluz, we touched on a few basics and laid out the framework of protocol and I closed with the suggestion that this was just a starting point for further study and practice.

Since we have limited space, I will limit myself to a comment about something I saw from my perch, my little corner of the charming Hotel Jerez´s bar, which under other circumstances would be the subject of an extensive commentary about its many pleasures and charms. For the moment, let us return to my vantage point at the bar. “Good manners”. - One morning, I don’t recall the day; a well-known businesswoman arrived and took a seat at one of the tables. She glanced frequently at her watch, a symptom that someone was breaking one of the golden rules of good manners, punctuality. After a while, a gentleman entered, and she approached him to see if he was the one she was waiting for. He answered in the negative and the lady returned to her seat, to continue waiting. After quite a while, a young man arrived, with the typical “neo-executive” look about him. e lady decided not to run the risk of another case of mistaken identity, and kept her seat. e young man approached, and they introduced themselves, their company ties and a loud and long excuse for being late, none of which I could hear clearly. What did leave me perplexed was that the young man, just after sitting down took a call on his mobile phone, and while continuing to apologize loudly, he then proceeded to laugh, exchange pleasantries and joke with the party on the phone. We learned no end of little details; he even managed to arrange some pleasant weekend activities. e lady sat there, trying not to eavesdrop, and when he finished his call, he turned to her and said something like… “Well, what do you want?”... From what I could see from my vantage, he had little time for the matter at hand, but plenty of time for the phone. ey rapidly concluded their business and parted with the traditional kisses and best wishes, and that was it. Goodness knows I was not paying attention but it was clear to me in my professional judgement that I should be grateful for the good manners of the hotel staff in contrast to some of the guests. e moral. – Boileau said: “I don’t want to wait any more, for I have noticed that while waiting, I discover fault with the person who has not yet arrived.” A resounding rebuke to unpunctuality. In this case, our man should have spoken fi rst. For example “Hello, my name is… are you Mrs…? e mobile phone may be the greatest invention of this century, but it is not important enough to cause one to ignore basic manners in front of a recent acquaintance. “I’m sorry, I am busy at the moment, I will call you right back” Something like that is much better, and never in a loud tone of voice, it is lamentable how we choose to make ourselves heard here in this country. I will leave for another time a lecture about the casual manner of address that has become fashionable of late, and the kisses between people who have just met, when this custom has always been reserved for close friends and relatives. It is a shame to see this practice, the kissing of the hand, that made us world famous for grace and charm end up this way. Until next time! 

Su cocina se basa en el empleo de los productos autóctonos, con el lógico predominio de los pescados de la bahía. En su preparación se da rienda suelta a la creatividad, siempre tomando como partida las recetas más antiguas de nuestra tierra. En cualquier caso, siempre es una cocina viva, en constante mutación, aunque evitando los cambios drásticos. Son sutiles retoques que van enriqueciendo el sabor de sus platos. Como es natural, el vino de Jerez tiene una marcada presencia a la hora de la elaboración. Toques de los ricos amontillados y olorosos en pescados, carnes o guisos, y la inevitable presencia del Pedro Ximénez en los postres, armonizan los sabores y potencian la peculiaridad de sus platos. La carta, muy extensa y variada, evoluciona constantemente, evitando así la monotonía. En cualquier caso, y como aclara el Jefe de Cocina, José Queijo, quien lleva 31 años en la casa: En realidad, deberíamos hablar de cocina personalizada, puesto que nuestros clientes son asiduos desde hace muchos años. Y del mismo modo, los que se van incorporando se van sumando a esta tendencia. Sabemos los gustos particulares de casi todos ellos –y a los que llegan procuramos conocerles lo antes posibles-. De esta manera, sabemos lo que ofrecerles para que se sientan como en casa, sin dejar por ello de introducir pequeños cambios en sus platos para enriquecerlos y darles mayor sabor. En esta labor es fundamental la colaboración con el maitre, que es quien me transmite la información necesaria en cada caso al ser el que mantiene un trato directo con los clientes. 

The menus at the Cartujano are based on fresh local products, which logically features seafood from the bay. In the kitchen, we let our creativity soar always starting with classic traditional local recipes. In any case, it is a “ living” style of cooking, constantly evolving but avoiding drastic changes to classic dishes. Subtle enhancements are the order of the day, enriching the f lavour without changing the character of the dish. Naturally, sherry from Jerez plays an important part in our dishes. A touch of rich amontillado or oloroso to seafood, meats and stews and the ever present Pedro Ximénez with desserts, harmonizing the f lavours and making each dish unique. The wide and varied menu is constantly evolving, in this way avoiding monotony and offering the client a fresh culinary experience every time. In summary, Head Chef José Queijo said… “In reality we should be talking about personalized cooking, as our guests are quite loyal and have been coming back for years, and we have been acquainting ourselves with their tastes since the very beginning. We know the individual likes

and dislikes of almost all of our clients, and we strive to get to know our newest clients straight away. In this way, we can really make them feel at home, and at the same time introduce small changes and enhancements to each dish and improve the dining experience.
