With a robust aroma and intense, lasting flavour, the wines of the Sacristy are the maximum expression of the winemaker’s art in Jerez. Wines of an extraordinary quality based upon traditional methods and above all, a patient maturing in oak casks.

Bajo las denominaciones V.O.S. y V.O.R.S. se esconde lo más selecto de las bodegas del Marco del Jerez. Estas denominaciones responden a “Vinum optimum signatum” (vino con más de 20 años de antigüedad en bota) y “Vinum optimum rare signatum” (vino con más de 30 años de antigüedad en bota).

Under the denominations V.O.S. and V.O.R.S. are hidden the most select offerings of the bodegas of Jerez. ese denominations correspond to the Latin “Vinum optimum signatum” (wine with more than 20 years in the cask) and “Vinum optimum rare signatum” (wine with more than 30 years in the cask.)

Con el fin de diferenciarlos claramente del resto y garantizar su autenticidad, el Consejo Regulador del Vino de Jerez se encarga de categorizar la antigüedad de los mismos, tras someterlos a un riguroso examen. Antes de ser embotellado, y una vez extraído de las botas y trasladado al depósito previo al embotellado, los expertos del Consejo Regulador se desplazan a la bodega y toman unas muestras del vino, precintando a continuación el depósito. Una vez analizada la muestra y certificada su autenticidad, el bodeguero puede proceder a su embotellado y comercialización. Este proceso también es seguido y supervisado por miembros del Consejo hasta que se agota el depósito.

With the goal of clearly distinguishing these wines from the rest, and guaranteeing authenticity, the Regulatory council for the wines of Jerez (Consejo Regulador del Vino de Jerez) is charged with categorizing these wines by scientific analysis. After the wine has been extracted from the barrels and before it is bottled, the experts of the regulatory council travel to the bodega and take samples, then place the wine under seal while the samples are analyzed. Once the wine has been tested and certified, the winery may then proceed in bottling and shipping, which is also monitored by the council until the entire batch of certified wine has been sold.

Estos especiales vinos provienen de una solera –los vinos más antiguos de una bodega- y se van rociando con vinos de otra solera o vinos de añada, o sea, vinos ya viejos.

ese special wines come from the “solera” --the very oldest wines in a bodega, and these are then married to wines from another solera or wine “de añada” (very old wine.)

E

s preciso tener en cuenta que este tipo de vinos tienen unas mermas –pérdidas por volatilización- de en torno a un 5% anual. Esto se denominaba antiguamente como “sorbito de los ángeles”, puesto que se suponía que era una parte del vino que, como no se lo bebía nadie, eran los ángeles los que se encargaban de tomar su parte. De esta manera, nos encontramos con que una bodega que inicia 30 años atrás su producción de vinos de sacristía con 100 botas, tras 10 años tiene tan sólo 95 y, al término de los 30 años el vino inicial se ha visto reducido a casi la mitad. En este largo proceso se ha ido perdiendo especialmente el agua y los elementos volátiles. Curiosamente, el alcohol es de los elementos que, aún perdiéndose, lo hace en menor proporción. De ahí que un vino V.O.S. o V.O.R.S. tenga una graduación alcohólica superior a la de un vino joven en, al menos cinco o seis grados. Pero en lo que aún gana más es en olor y sabor, puesto que la concentración de los elementos no volátiles, tales como los ácidos fijos y la glicerina es muy superior. El resultado final es el de unos vinos de intenso aroma y sabor, para degustar en cualquier momento. Como afirmara don Mauricio González Gordon Díez, se trata de vinos para tomar como los pajaritos, es decir, a pequeños sorbos y saborearlos lentamente, sacando el máximo partido a su riqueza aromática y de su persistencia en el paladar.

t is interesting to note that these wines have a loss to evaporation of around 5% annually. is was known in old times as “the part for the angels”, as this wine was never drunk, it was assumed that the angels were taking their share.

Because of this phenomenon, a bodega that starts with 100 barrels of wine, after ten years will have only 95, and after thirty years, this will be reduced to only 50 barrels During this long process the wine has been losing moisture and it’s volatile elements, interestingly enough, although alcohol is also lost, it is lost in a smaller proportion. Because of this, a V.O.S. or V.O.R.S. wine tends to be quite a bit stronger than a younger wine, at least 2 to 4% more alcohol by volume. But where the wine really gains is in the nose and on the palate owing to the higher concentrations of non-volatile elements like fixed acids and glycerine. e final result is an intensely flavoured, aromatic wine to be enjoyed anytime. As recommended by Don Mauricio González Gordon Díez, this is wine to enjoy like a bird, in small quantities, and savouring the intense aroma and long lasting flavour on the palate.

AMONTILLADO: Se trata de un vino con aroma punzante y atenuado (avellanado). Es suave al paladar. Es un vino aperitivo, pero también excelente para consumir con carnes de caza. A wine with a strong nose and attenuated nutty flavour. Smooth on the palate, it is an ideal aperitif, but also excellent with game.

OLOROSO: Es un vino seco, de color ámbar caoba, con aroma muy acusado como su nombre indica. Tiene mucho cuerpo (nuez). Es un vino especialmente indicado para el aperitivo. Tanto el Oloroso como el Amontillado son vinos muy recomendados por la alta cocina para la preparación de algunos exquisitos platos.

PALO CORTADO: De color caoba brillante, es un vino de aroma avellanado y paladar seco. Conjuga las suaves, delicadas y punzantes características del Amontillado y la vinosidad y gordura del Oloroso. Es un vino para catar en grandes ocasiones y muy recomendado para los paladares más exigentes.

A dry wine with an amber mahogany colour, with a delightful nose as suggested by it’s name. Rich body with walnut overtones. Excellent as an aperitif. Oloroso as well as amontillado are both highly recommended for cooking in fine cuisine.

With a brilliant mahogany colour this wine has a nutty aroma and is dry on the palate. It combines the smoothness of Amontillado with the robustness of Oloroso. It is a wine for special occasions and is recommended for the connoisseur.

PEDRO XIMÉNEZ: Vino de color caoba oscuro, emana profundos aromas de pacificación. Suave y dulce a la boca, está elaborado a partir de uvas Pedro Ximénez expuestas al sol para su pacificación. Este vino es un excelente acompañamiento para los postres. Hay quien lo disfruta especialmente tras un copioso desayuno. Resulta sumamente agradable al paladar masculino y, sobre todo, al femenino. With a dark mahogany colour, regal nose and smooth and sweet on the palate. It is made exclusively with the Pedro Ximénez grape, which is sun dried on the vine. An excellent dessert wine, some enjoy it after a large breakfast. An enjoyable wine on any palate, but especially appreciated by the ladies.

VINO FINO: Lógicamente, ningún vino fino entra en la catalogación V.O.R.S. ó V.O.S., por su especial sistema de crianza y producción. En cualquier caso, lo añadimos a esta pequeña lista por ser, realmente, el punto de partida para todos los vinos anteriormente mencionados. El vino fino está especialmente recomendado para el aperitivo, o como perfecto acompañamiento a platos de pescado o marisco. Obviously, no fino sherry could ever be catalogued as V.O.R.S. ó V.O.S. owing to the special solera technique used in it’s making. In any case, we have added it to this small list because, it is actually the starting point for all of the other wines mentioned. Fino Sherry is highly recommended as an aperitif or as the perfect accompaniment to shellfish or seafood.

En un lugar preferencial de las vitrinas de la cafetería se exhiben las 41 botellas de vinos V.O.R.S. y las 12 botellas de vinos V.O.S., pertenecientes a 19 bodegas de Sanlúcar, El Puerto de Santa María y Jerez –ciudades que componen el marco del Vino de Jerez-. Con esta idea, el Hotel Jerez pretende ampliar la popularidad de unos vinos que, por su características exclusivas, son por ahora los grandes desconocidos, especialmente fuera del marco. Wine aficionados have a special place set aside for them in the Hotel Jerez, as our guests have at their disposal the entire range of V.O.R.S. y V.O.S. wines. is is a unique initiative, and the only place where all these special wines have been gathered in one place. ese wines, also known as Sacristy wines or “Vinos de Sacristía” may be sampled by the glass in an exclusive and relaxed environment without having to purchase the entire bottle. In a special section of the bar/coffee shop, you can see all 41 bottles of V.O.R.S. wine and the 12 of V.O.S. representing the 19 bodegas of Jerez, Sanlucar and Puerto de Santa Maria, the cities that comprise the area of Sherry production. With this concept, the Hotel Jerez hopes to promote the popularity of these very special and exclusive wines, which are virtually unknown outside the area.

Tras 27 años de historia, el clásico Hotel Jerez se había quedado obsoleto... Iniciaba su decadencia. Sólo la llegada de savia nueva le permitió recuperar su papel de protagonista de excepción en la vida de la ciudad. Para ello, se han remodelado por completo todas las habitaciones, la piscina exterior, la recepción, la entrada, la cafetería, las cocinas... Prácticamente todo es nuevo, hoy en día, en este vanguardista establecimiento. Además, el Hotel Jerez ha crecido, al incorporársele un nuevo ala donde se ubican una impresionante piscina de invierno con jacuzzi, gimnasio, sauna y baño de vapor, así como cuatro habitaciones dobles especiales, dos junior suites y dos suites de casi noventa metros cuadrados. Y el Hotel Jerez continúa transformándose, adaptándose a las necesidades de los nuevos tiempos, pero conservando siempre su principal seña de identidad: el trato personalizado ofrecido a cada uno de sus clientes. 

After 27 years, the classic Hotel Jerez had become a bit obsolete and lacked innovation. With new management, and great effort, the hotel has regained it´s position of preeminance in the city. To achieve this, the guest rooms were completely remodeled, along with indoor and outdoor pools, a new reception area, coffee shop, new kitchen installations, practically everything in the entire hotel has been renovated and brought up to the highest standards. e Hotel has also grown, with a new wing housing an indoor pool and jacuzzi, a complete gym and fitness center with sauna and steam baths along with two special category double rooms, two junior suites and two luxury suites of almost 90 square meters each. e Hotel Jerez continues to evolve, constantly adapting to the needs and desires of our exacting clients, but always conserving that special character that has always defined the Hotel Jerez experience; warm and personalized service for each and every guest. 

Accepting the invitation of the commercial director of the Bodegas Julián Chivite, The board of directors of the HACE group travelled to Navarra in northern Spain to visit the new installations of this important winery. They were met by Don Antonio Escofet, Commercial director and Don Lucien González, Sales director for the southern region.

En su constante afán por ofrecer un mejores servicios a sus clientes, el Hotel Jerez acaba de concluir unas obras de mejora que han afectado a la recepción, la cafetería y la marquesina de la entrada. Tanto la recepción como la cafetería se han transformado notablemente con el cambio de los techos y la nueva decoración, que afecta tanto a los tonos en la pintura de las paredes como al mobiliario. La entrada al Hotel ha cambiado notablemente, al construirse una gran marquesina que permitirá a los clientes abandonar el automóvil sin mojarse en los días de lluvia. Por otra parte, y gracias a su gran altura, los autocares podrán detenerse en la misma puerta del hotel bajo techado.

Con motivo de la final de la Copa de la UEFA de fútbol, el Celtic de Glasgow se concentró en el Hotel Jerez. El equipo escocés prefirió alejarse un tanto de Sevilla para buscar una mayor tranquilidad. Y es que la llegada hasta la final del equipo suscitó una auténtica locura entre sus seguidores. En torno a 50.000 aficionados escoceses se dieron cita en Sevilla para presenciar el encuentro, de los que más de 4.000 residieron en Jerez. La expectación despertada por este encuentro fue tal que la televisión escocesa se vió obligada a montar un set de televisión improvisado junto a la piscina del Hotel Jerez, desde donde ofrecer programas especiales en directo, con entrevistas al entrenador y los jugadores del equipo más emblemático del país del whisky.

The Scottish side preferred to stay outside of Seville, in the more tranquil surroundings of Jerez. With Celtic appearing in the finals, more than 50,000 supporters travelled to the area to be part of the spectacle, more than 4000 of whom stayed in Jerez. The excitement generated by the cup final was such that Scottish television found itself having to set up an impromptu studio next the pool at the Hotel Jerez to offer live commentary, and interviews with the coaching staff and players of this most famous of all Scottish football sides.

El Rey Constantino de Grecia, hermano de la Reina de España, residió el Hotel Villa Jerez, con motivo de la preparación de Mundo Vela 2003, que se celebrará en la bahía gaditana durante el mes de Septiembre. Constantino de Grecia, como miembro del Comité Organizador del evento, sigue muy de cerca todos los detalles de los preparativos de esta gran fiesta para todos los amantes del mundo de la vela.

El equipo Darkdog, que compite en la presente campaña en el Campeonato del Mundo de Motociclismo en la categoría de 250 cc, efectuó su presentación a los medios en el Hotel Villa Jerez. El principal reclamo de este equipo es la presencia en sus filas de la única fémina presente este año en el máximo certamen mundial de las dos ruedas, Katja Poensgen. Esta joven alemana, que ya tomara parte en el Campeonato 2001, en la categoría de 125 cc, intentará este año dar alguna sorpresa en la difícil categoría del cuarto de litro.

The Darkdog racing team, which participates in the 250cc Motorcycle World Championship, recently held their team launch at the hotel Villa Jerez. Darkdog racing is the only team at the top level of the sport with a female rider, Katja Poensgen. This young German girl, who also participated in the 125cc World Championships in 2001, will be aiming to give the other riders a surprising performance in the very competitive 250cc category.

This year, the Grand Trophy Hotel Jerez, for standout performance was awarded to a bull breeder, specifically Jandilla for the very interesting group of brave bulls presented at this years fair. The Champion of the Fair was awarded to Salvador Vega, a bullfighter who has confirmed his greatness by his performance in Jerez this year. Also worth a special mention is his entourage, with banderillero Juan José Trujillo being recognized for his outstanding performance throughout the fair. Continuing his string of triumphs, Pablo Hermoso de Mendoza was once again awarded the prize for best rejoneador (horseback bullfighter) during the spring fair by the Hotel Jerez judges. During three interesting sessions the sector’s future was analyzed and several working seminars were held. D. Jaime Axel Ruiz, Director of the European tourism commission spoke about the latest trends in the industry in Europe from the perspective of the European commission and Don Javier Alonso, sales director for Iberia, and don Ramón Biarnés, sales director of Spanair, gave their analysis on the future of the relationship between the airlines and the travel industry in general. As an important part of the work of the association, the convention delegates visited many of the tourist attractions of the local area, without a doubt, some of the richest offerings available to the visitor to Spain.

Como arquitecto genial, ¿para que te voy a contar?. Interviniste en todas las obras de los hoteles de nuestro grupo, bien sólo o con tu socio, o en combinación con otros colegas. Trabajar contigo era una delicia, comprendías y solucionabas con rapidez los problemas, aunando los criterios dispares con habilidad y simpatía, convenciendo a los más reacios con argumentos irrebatibles, todo lo hacías con mesura y sencillez. Tus opiniones eran consecuentes, certeras y atinadas, las exponía sin afectación, con una naturalidad, franqueza y profundidad que causaba asombro en propios y extraños. Eso sí, eras el mismo con todos, sin distinciones ni jerarquías, y a todos tratabas con el mismo respeto y humanidad. Tras un aspecto de persona relajada y tranquila se esconde una de las mentes más ágiles que trabajan por y para el deporte español. Muy pocos creían en su apuesta cuando, hace ya veinticinco años, tomó las riendas de una Vuelta Ciclista a España venida a menos. En la actualidad, la prueba goza del máximo prestigio y es seguida por tv en directo en más de 65 países. Behind the easy-going personality lurks one of the most agile and astute minds that have ever worked on behalf of the Spanish sporting world. Few people lent credence when, 25 years ago, he took over the running of the not overly successful Spanish “Vuelta Ciclista”. Today, it is one of the world’s top sporting events and is seen live in over 56 countries. Encanto Andaluz: Se deja ver mucho por Jerez. ¿Tiene esta ciudad algo especial para usted?

Encanto Andaluz: We often see you in Jerez, Does this city have any special meaning for you?

Enrique Franco: Jerez es, para mí, la segunda patria chica –compartiendo este puesto con Santiago de Compostela-.

Enrique Franco: Jerez is like a second home to me, along with Santiago de Compostela.

Mi relación con la ciudad comenzó hace treinta años. Eran otros tiempos y se podía hacer publicidad de alcohol, por lo que me desplazaba hasta aquí para firmar contratos con los bodegueros de la zona. Desde el principio me encontré muy cómodo aquí, en el Hotel Jerez –del que soy cliente desde entonces- y además, hice muchos amigos en la ciudad. Tanto es así que, cuando Unipublic, nuestra empresa, se hizo cargo de la Vuelta Ciclista a España, en 1979, la salida oficial de la carrera se hizo en Jerez. La experiencia fue muy satisfactoria para todos y la repetimos en reiteradas ocasiones. A veces, como punto de salida, otras, como final e inicio de etapa. Y lo que es más importante, Jerez, junto a Santiago de Compostela, Salamanca y Madrid, son las únicas ciudades que pueden vanagloriarse de haber sido final de carrera en la Vuelta Ciclista a España.

My relationship with this city started thirty years ago. At that time, advertisements for alcoholic beverages were permitted, and I spent quite a bit of time here in Jerez, dealing with the local Bodegas. From the start, I have always felt particularly comfortable as a guest here in the Hotel Jerez, and I have made many friends in the city. So much so, that when our company, Unipublic, took charge of the Vuelta Ciclista of Spain in 1979, we made Jerez the official starting place of the race. We had such a positive experience, that we have returned to Jerez on many occasions, as a starting point, as a host for stages, and more importantly, along with Santiago de Compostela, Salamanca and Madrid, Jerez has had the honour of being the finishing point for the Vuelta Ciclista of Spain.

Pero apartando lo profesional, es que Jerez me enamoró. Vengo siempre que puedo con toda mi familia. Me gusta especialmente venir en Semana Santa, pero cuando puedo también me escapo para la Feria del Caballo o el Mundial de motos... Y por supuesto que veraneo aquí o en el Puerto de Santa María –que en verano es como un segundo Jerez, puesto que todos los jerezanos se podría decir que están allí-. Encanto Andaluz: ¿Qué fue de aquella idea revolucionaria que usted planteó de separar la carrera en dos pelotones durante la primera parte de la carrera, de los que se seleccionaban los mejores para la última fase de la misma?

Besides the professional aspects, I really have fallen in love with Jerez. I come to visit whenever I can, and bring my family with me. We especially enjoy visiting during the Holy week celebrations, but I also make time to visit the Spring Fair and the Motorcycle World Championship. Of course, we always spend the summer vacation here, or in El Puerto de Santa Maria, which in the summer is like a second Jerez since so many people from Jerez spend time there as well.

Creo que es el titular, como el viajero romántico británico, Richard Ford, hubiera calificado a los hoteles del Grupo HACE, si los hubiera podido incluir en su obra “Manual para viajeros por Andalucía y lectores en casa”, de hacia el año 1833 y donde tan bien describe el sabor y el color de nuestra región sureña, frecuentados por el con gran satisfacción. Personalmente, he tenido la oportunidad de conocer casi todos los hoteles HACE antes de que pertenecieran al Grupo y admirarlos restaurados al visitarlos actualmente. Al Hotel Playa de la Luz fui, por primera vez, hace más de un cuarto de siglo. Entonces era blanco y verde solamente, con olor a sal marina y algas limpias, pero no puedo ocultar que estaba un poco fatigue, dicen en francés, no obstante la familia De Clerck tenía ya un estupendo departamento remozado, dentro del propio hotel, desde donde modernizarlo, y donde nos obsequiaron con unas cervezas heladas en unas copas muy grandes, como su cordialidad. Ahora, tiene repintadas sus molduras de un atractivo color ocre, como las plazas de toros de postín y los viejos cortijos, que visitó Ford. El gran hotel, el Hotel Jerez, del arquitecto Picardo, siempre tuvo una sólida hermosura, como los Paradores modernos del Estado. Pero es desde hace unos años acá, cuando forma parte de los hoteles andaluces con encanto, que adquiere “the andalusian charm”, que hubiera ponderado don Richard, los detalles artísticos y de bien hacer, la leyenda y las placas locales de bienvenida, la personalización del servicio y la buena cocina.

with andalusian charm I believe that this is the title that the romantic British traveller, Richard Ford would have given the hotels of the HACE group if they could have been included in his “Manual for travellers to Andalusia and readers at home” published in 1833 and where he described the flavour and colour of our southern region that he enjoyed so much.

Personally, I have had the opportunity to get to know almost all of the hotels in the HACE group before they became part of the group, and it pleases me to see them so well restored to their former splendour. I went to the Hotel playa de la luz for the first time over a quarter century ago. It was then all whitewash and greenery, with the scent of sea salt and clean algae. It could not hide the fact that it was a bit fatigue as they say in French. e De Clerck family had an office in the hotel where they set about renovating and modernizing the property, and where I recall being offered a cold cerveza served in a glass almost as large as their friendly cordiality. Now the mouldings are painted a pleasant ochre colour, like the bullrings of postín and the old cortijos that Ford visited. e grand hotel, the Hotel Jerez, by the architect Picardo, always possessed a solid beauty, like the modern day Paradores run by the state. It is only from a few years back when it formed a part of the HACE group, that it gained it’s “Andalusian charm” that Don Richard would have appreciated, it’s artistic details, charming manner, the legendary local flavour, the warm welcome, personalized service and fine dining.

Siempre me encantó el Hotel Guadacorte Park. Ya la anterior propiedad lo tenía con un gusto excelente. Mas es con HACE que pinta sus muros de beige, están más verdes sus jardines y parque que nunca, y su decoración, de la mano de la joven Ann De Clerck, es exquisita. Los dibujos de los cuadernos de campo del viajero y autor inglés eran a lápiz negro, pero con su pluma hubiera podido describir la belleza del paraje.

I have always liked the Hotel Guadacorte Park. e previous owners had decorated it with very good taste. It was much more than beige paint that the HACE group brought to the property, the gardens are greener and more extensive than ever, and the decoration, at the hands of a young Ann De Clerck is exquisite. e drawings in the travelling English authors book were done only in pencil, but with his pen he could have described the beautiful and idyllic scene.

Mi asombro y admiración fue mayúscula cuando visité el Hotel Duque de Nájera. ¡Qué habilidad para utilizar un viejo, pero estratégico espacio, para construir un hotel único. Solo el vecino Palacio de los Ponce de León, hoy Ayuntamiento, lo hubiera podido igualar. David Roberts, otro viajero y autor de gravados romántico, dibujó el mencionado alcázar del Duque de Arcos, pero hubiera pernoctado en el de Nájera.

I was pleasantly surprised and impressed when I visited the Hotel Duque de Nájera. What an ability to use and old yet strategic space to construct a unique hotel! Only the neighbouring palace of Ponce de León, now owned by the local government could rival it. David Roberts, another traveller and author of the romantic era would have drawn the Palace or the Duke of Arcos, but he would have spent the night in the Hotel Duque de Najéra.

El Hotel Villa Jerez lo conocí cuando era una elegante mansión privada, ahora, cuando está completo, recuerda el encanto del ir y venir de antaño. El esplendor de los barones del Sherry. Y el Hotel Cortijo Soto Real es ya un sueño casi realidad el próximo otoño. Parece el sueño de un señor andaluz o de un jeque árabe, en la mano de un gran hotelero centro-europeo nato. ¡Enhorabuena!.

I knew the Hotel Villa Jerez when it was a privately owned stately home, now, in it’s finished form, I recall the charm of its former splendour of the Sherry barons. e Hotel Cortijo Soto Real is a dream that will become reality this autumn. It appears to be the ideal of an Andalucian gentleman or an Arab sheik in the good hands of a native European hotelier. Congratulations!

Un poco de sal, pimienta A little salt, pepper and negra y orégano oregano El Sofrito: El tomate deberá estar en su punto de madurez, así como la cebolla (blanca, jugosa y dulce), y los pimientos (verdes y de buena calidad). Cortaremos el tomate como para un picadillo, eliminándoles la pulpa si son demasiado jugosos. También cortaremos la cebolla y los pimientos, pero esta vez a tiras. Cortaremos los dientes de ajo a láminas. Luego, pocharemos en aceite de oliva, la cebolla y los pimientos, y cuando estén tiernos, se le añadirán los tomates y los ajos laminados, junto con la pimienta negra. La Urta: Cuando el tomate esté casi tierno, se le añadirá el vino blanco. Y una vez listo, se le colocará, dentro del sofrito, la Urta (limpia) y una hoja de laurel. Dejaremos que se haga el pescado a fuego lento.

e Tomato Sauce: e tomatoes should be mature, the onions white, juicy and sweet. e peppers should be deep green and of good quality. Chop the tomatoes into small chunks, eliminating the pulp if they are too juicy. Slice the onions and peppers in strips; chop the garlic into thin slices. Sauté the onions and peppers in olive oil until soft; then add the tomatoes, the sliced garlic and the pepper. e Sea Bass: When the tomatoes are almost softened, add the white wine; then add the Sea Bass and the bay leaves to the tomato mixture. Slow cook the dish over a low flame.

También se puede hacer un fondo, en la cazuela de barro, de patatas a rodajas y pochadas en aceite previamente. Colocaremos la Urta en ése fondo y le echaremos por encima el sofrito anterior. En este caso, la Urta no se hace en el fuego, sino en el horno a fuego medio y le echaremos un poquito de vino blanco por encima para que no quede muy seca.

As an alternative, you can place a base layer of sliced sautéed potatoes in the bottom of a terra cotta cooking dish. In this case, the Sea bass is placed on top of the potatoes, and then covered with the tomato mixture. e Bass is then cooked in an oven at medium temperature. Add a little white wine on top to keep the fish moist.

Degustación: Vista: De color amarillo pálido con reflejos limón, pequeña burbuja y ligera corona. Olfato: Sus aromas son frutales y de crianza, que recuerdan al plátano, al hinojo, con matices de almendra, de tostado. Paladar: Redondo y muy fino en el paladar, elegante, hace paladear la lengua. Seco con buen equilibrio de acidez y muy persistente.

Tasting: Appearance: A pale yellow colour with reflections of lemon, small delicate bubbles and a light crown. Nose: Fruity and fresh aroma with hints of banana and fennel, with a touch of toasted almonds. Palate: Fine and well rounded, elegant on the palate. Dry and well balanced with a nice persistent finish.

Gastronomía: Recomendado para los buenos amantes del cava. Se puede tomar solo o como aperitivo. Acompaña también la comida de elaboración: aves y pescados. Servir entre 5ºC y 6ºC.

Gastronomy: Recommended for Cava connoisseurs. Very nice by itself or as an aperitif. Goes well with complex dishes of fowl and fish. Serve between 5 and 6ºC.
