The main distinction occurs in how you perceive your cooking projects. How Do Your View Cooking? There is something much more exciting about embarking on a new project than getting around to a loathsome chore. If you do view cooking as a chore the more important question might be why? Some common reasons that people dislike cooking include the following: lack of skill, lack of confidence, boredom, or you could simply dislike the inevitable clean up far more than you enjoy the process of cooking. For each of these, there are solutions if you are willing to make the effort. A lack of skill when it comes to cooking can be easily corrected in most cases by taking a few cooking classes. Classes are offered for varying degrees of skill sets and are meant to help you develop your cooking talents while teaching you the basics of meal planning and preparation. You can increase your skills by taking more classes down the road. While a lack of confidence is a little more difficult to address having a few ‘dinner parties’ in which your quests can compliment your culinary talents

Of course if this won’t work in your family, you could always turn over a new leaf and clean as you go whenever possible. This makes the clean up process after dinner so much simpler to handle that it is well worth a few extra minutes during meal prep. Cooking for pleasure is really the only way to cook. If you have difficulties when it comes to finding the enjoyment and entertainment value of cooking, perhaps it’s time you bring some fun back into your kitchen. If you’re barbecuing, put on some Jimmy Buffet and dance around your kitchen. If you’re cooking Italian find some nice Italian music to set the mood. Bring the fun back into your kitchen and you will find that cooking is a pleasure rather than a chore.


9 Salmon Recipes


Boiled salmon.

Salmon and caper sauce.

Ingredients:- 2 slices of salmon, 1/4 lb. batter, 1/2 teaspoonful of chopped parsley, 1 shalot; salt, pepper, and grated nutmeg to taste.

Ingredients:- 6 oz. of salt to each gallon of water, sufficient water to cover the fish. Mode:- Scale and clean the fish, and be particular that no blood is left inside; lay it in the fish-kettle with sufficient cold water to cover it, adding salt in the above proportion. Bring it quickly to a boil, take off all the scum, and let it simmer gently till the fish is done, which will be when the meat separates easily from the bone. Experience alone can teach the cook to fix the time for boiling fish; but it is especially to be remembered, that it should never be underdressed, as then nothing is more unwholesome. Neither let it remain in the kettle after it is sufficiently cooked, as that would render it insipid, watery, and colourless. Drain it, and if not wanted for a few minutes, keep it warm by means of warm cloths laid over it. Serve on a hot napkin, garnish with cut lemon and parsley, and send lobster or shrimp sauce, and plain melted butter to table with it. A dish of dressed cucumber usually accompanies this fish. Time. 8 minutes to each lb. for large thick salmon; 6 minutes for thin fish. Note. Cut lemon should be put on the table with this fish; and a little of the juice squeezed over it is considered by many persons a most agreeable addition. Boiled peas are also, by some connoisseurs, considered especially adapted to be served with salmon.

Mode:- Lay the salmon in a baking-dish, place pieces of butter over it, and add the other ingredients, rubbing a little of the seasoning into the fish; baste it frequently; when done, take it out and drain for a minute or two; lay it in a dish, pour caper sauce over it, and serve. Salmon dressed in this way, with tomato sauce, is very delicious. Time. About 3/4 hour. Collared salmon. ---------------Ingredients:- A piece of salmon, say 3 lbs., a high seasoning of salt, pounded mace, and pepper; water and vinegar, 3 bay-leaves. Mode:- Split the fish; scale, bone, and wash it thoroughly clean; wipe it, and rub in the seasoning inside and out; roll it up, and bind firmly; lay it in a kettle, cover it with vinegar and water (1/3 vinegar, in proportion to the water); add the bay-leaves and a good seasoning of salt and whole pepper, and simmer till done. Do not remove the lid. Serve with melted butter or anchovy sauce. For preserving the collared fish, boil up the liquor in which it was cooked, and add a little more vinegar. Pour over when cold. Time. 3/4 hour, or rather more.

Cut the slices 1 inch thick, and season them with pepper and salt; butter a sheet of white paper, lay each slice on a separate piece, with their ends twisted; broil gently over a clear fire, and serve with anchovy or caper sauce. When higher seasoning is required, add a few chopped herbs and a little spice.

Ingredients:- 2 slices of salmon, 2 chopped shalots, a little parsley, a small bunch of herbs, 2 bay-leaves, 2 carrots, pounded mace, pepper and salt to taste, 4 tablespoonfuls of Madeira, 1/2 pint of white stock, thickening of butter and flour, 1 teaspoonful of essence of anchovies, the juice of 1 lemon, cayenne and salt to taste.

Time. 5 to 10 minutes.

Mode:- Rub the bottom of a stewpan over with butter, and put in the shalots, herbs, bay-leaves, carrots, mace, and seasoning; stir them for 10 minutes over a clear fire, and add the Madeira or sherry; simmer gently for 1/2 hour, and strain through a sieve over the fish, which stew in this gravy. As soon as the fish is sufficiently cooked, take away all the liquor, except a little to keep the salmon moist, and put it into another stewpan; add the stock, thicken with butter and flour, and put in the anchovies, lemon-juice, cayenne, and salt; lay the salmon on a hot dish, pour over it part of the sauce, and serve the remainder in a tureen.

It should only be attempted with caution, and for the above reason only, not to simply look cool. Some liquors will ignite quite easily if their proof is high. Heating a small amount of the liquor in a spoon will cause the alcohol to collect at the top, which can then be easily lit. You can then pour this over the prepared ingredients. Don’t add alcohol to ignited drinks, don’t leave them unattended, light them where they pose no danger to anybody else, and ensure no objects can possibly come into contact with any flames from the drink. Always extinguish a flaming drink before consuming it.


BLACKBERRY MINT MARTINI RECIPE

5 blackberries 4 sprigs mint 2 oz Ten Cane Rum 1/2 oz lime juice 1/2 oz simple syrup

Muddle 4 blackberries and three, shredded, mint sprigs into shaker. Fill shaker with ice, add 2oz Ten Kane Rum, 1/2oz lime juice and 1/2 oz bar syrup. Shake vigorously, and strain, through large strainer, into cocktail glass. Garnish with 1 large blackberry skewered, top-to-bottom, with attractive sprig of fresh mint.


A FEW OF MY FAVORITE THINGS RECIPE

1/2 oz amaretto almond liqueur 1 oz Bailey’s® Irish cream 1 oz Kahlua® coffee liqueur

AFRICAN LULLABY RECIPE

1/2 oz vanilla liqueur 1/2 oz butterscotch schnapps 1 oz vodka 7 1/2 oz milk

4 cl amarula cream liqueur 1 cl coconut milk 8 cl milk 2 dashes nutmeg

Combine all ingredients in a blender with one cup crushed ice. Pour into a beer pilsner, garnish with a red cherry, and serve.

Shake ingredients in a cocktail shaker with ice. Strain into a highball glass, and serve.

2 oz tequila juice of 1/2 lemons 4 dashes grenadine syrup 1/3 egg white 1 slice lemon Shake all ingredients (except lemon slice) with ice and strain into a cocktail glass. Add the slice of

If you visit during these months, you can tour the underground cellars, sample the superb wine, and learn more than you ever thought possible about the manufacturing of Hungarian wines. All types of Hungarian wine has been perfected over the years, making it something that you really can’t go wrong with. Truth be told, there are only a lucky few who are actually able to purchase the wine. Ice wine, due to the scarce amount, can be extremely expensive and out of the price range for a majority of us. Much like the beauty of owning a diamond, ice wine is something that many of us hope and dream to experience at some point in our lives. Although the materials are rare, the weather conditions are even more crucial to producing this wine. Once the right weather conditions arrive, the wine maker prepares to produce this extremely rare and priceless wine. The basic requirements needed to produce ice wine are fully ripened grapes and a temperature of around 5 degrees C. The temperature needs to stay that way for several days, so that the wine maker can complete the process of making the wine. Grapes

that are frozen during these extremely cold temperatures are hand plucked at night by the wine maker and his assistants. To produce a bottle of ice wine, full vine grapes may be required. Once the grapes have been collected, they are gently pressed, in order to collect the running juice only. The temperature creates the frozen water crystals, which are fermented along with sugars and the particles that are found in the free running juices. Through this process, the wonderful and rare ice wine is created. If you have been looking to try ice wine, finding it may be very difficult. As you probably already know, most alcohol and wine stores don’t sell this rare wine. Finding it online is very hard to do as well, unless you catch it at the right time. Even then, if you are able to find it, it can easily cost you hundreds of thousands of dollars for a single bottle. The best way to experience ice wine is to find the right wine maker in the Pacific Northwest region. Even though bottles go extremely fast once they have been made, you may be able to catch a wine maker with some on hand. Be prepared to spend a hefty amount though. Although it can cost a lot and be extremely hard to find the taste of ice wine makes it well worth the effort.
