020 welcome to It’s hard to understand what a garden means to many. Those who are in love with their gardens and have the time, visit and revisit them a dozen times a day, standing in deep contemplation over plants and flowers with a love that anyone who hadn’t taken part in the process of the creation could possibly conceive.

It doesn’t have to be a huge garden – a little patch will create the same effect on the gardener. It is a space that is ever moving, with a variety of different subjects, one failing or dying, while another comes to perfection. The process is a joy to he who has began it and one of the most bewitching ways to relax is to sit quietly observing a garden, watching and hearing the sights and sounds of all that is happening. To bring this into the home is sublime and this is precisely what the homes we’ve featured this issue have in common.

Architect Martin Xuereb took the Zen route and combined the best of both the indoors and outdoors in a stunning home on the edge of Burmarrad valley on page 20.

Approaching this enchanting property at the edge of the Burmarrad valley, the beauty of this old farmhouse is captivating. Through a delicate ironwork gate, two welcoming patio chairs can be seen, set against a creamy stonewall. The courtyard contains tall trees as well as lowlying greenery and soft, green grass surrounds each stepping stone leading to the house. What was once a neglected old building, this quarter hectare site now holds a four bedroom house complete with swimming pool, fish pond and patio with a barbeque area.

The loggia connects the bedrooms to the central heart of the house and the three arched windows in the loggia look out over the long rectangular fishpond and tall trees. The architect, Martin Xuereb, was just as interested in the inside of the house as with the outside. A fireplace sits between two large arched doors in the living room, linking the inside of the house to the garden. From here, the lovely weathered stone terrace and a belvedere can be seen.

This division was taken a step further by dividing the space into three different floor levels. The living room and hall are on ground level, the kitchen is raised by three steps and the dining room has been lowered by two steps. To add contrast, the living room has a wooden parquet floor while the dining room’s focal point is the intricate wooden coffered ceiling.”

The elegant and spacious kitchen, designed in detail by the Xuereb, features a mixture of traditional and modern with cool beige ceramic tiles and a gypsum ceiling with spotlights and a chandelier.

The homeowners are particularly pleased with the unique “L� shaped swimming pool and its surroundings. Great sensitivity has been given to the texture and design of each of its sides. On one side of the pool, a wide band of rounded sandycoloured pebbles gives way to a flat smooth stone surface beyond. To the east, the natural rocky terrain merges gracefully into the water, creating an interesting organic edge. To the north, straight, dark timber decking leads to an area of mature trees. To the west, low strips of glass lend a modern minimalist look to the hard edge along the smooth pathway. An interesting interpretation of nature on all sides has been taken into account.

Nestled in the rocks of the gorgeously vast Gharghur valley is this expansive farmhouse, which has successfully bridged the gap between indoors and out. It’s a loved home with a persona, very special to homeowners Nikki and Chris.

Nikki: “This was my family home growing up so it’s always been very special to me. The opportunity to buy it, redesign and redecorate it was a dream come true for me as I’d often envisaged what I would do differently given the chance.”

The homeowners took over the three-bedroom house in 2001 and have spent the last seven years redesigning every aspect of it, successfully transforming it from a typical sixties style build to one that epitomises modern design and twenty-first century style.

Chris: “We gutted it out completely. Back then, the house consisted of bedrooms downstairs while the living quarters were upstairs – we immediately opted to change things. Priorities were different in the sixties and security concerns meant that there was a big divide between the house and the garden – heading down to the pool area felt as though you were off on a day trip away! We wanted to bring the outdoors in, making the whole space more accessible and easy to live in.”

“The rooms were also quite small and what is our living area now was once four separate rooms. Thick walls and small windows also meant that there was little natural light. We knocked down all the downstairs dividing walls to create one large open-plan living room; we did keep some of the original walls though and made them a central feature of the new space. Part of the house – the office and corridor for instance, were built around 350 years ago, then made over in the sixties and now have been given another new look – it was important to us that we kept as many traditional features as possible.”

The couple opted to keep the fundamentals the same; the house has kept its original shape and still revolves around a central courtyard. They both took a very hands-on approach to the transformation, with Chris handling many of the building and utility jobs while Nikki dealt with design.

Chris: “We wanted to ensure that the house fit our lifestyle and so the outdoors were just as important as in. Inside we tried to emphasise space and light while outside we wanted to make best use of the two-tumuli land surrounding the house. The kitchen has large glass doors that let in a fantastic amount of light.

They lead out onto a BBQ area that overlooks the whole of the valley.”

“We also wanted the garden to slot nicely into the surrounding environment. Since its part of the valley the garden is terraced so no matter how we designed it, the pool area would have

always been below the rest of the house. In the end we rolled with that idea and decided to excavate the rock to create a separate living area poolside – it developed into a kitchenette, games room, garage, workshop, shower room and chill out area. During the summer months we find ourselves spending the majority of our time there as it’s comfortable and great for entertaining, which we do a lot.”

Nikki: “Design-wise, I was conscious of creating a seamless flow throughout the whole of the house. I wanted to enhance the natural textures and traditional feel, already present here. So I selected minimalist furniture and used earthy tones throughout. We took a gamble on merging the old with the new too, which we weren’t sure about in the beginning and was quite a challenge; the end result works nicely.”

The house and garden are situated below road level so both are surrounded by garrigue – a natural mixture of rock and soil.

Chris: “We didn’t want any part of the house to look out of place, so it was a natural choice to blend the pool in with its surroundings. Thus, we went for a lagoon-look with stone style surroundings all made from similar coloured materials as those naturally found here.

The garden is traditional too; most of it is landscaped and we even have a small farm, housing a pony, pheasants, chickens and peacocks. Living here is the perfect bridge between country living and a luxury lifestyle – we never feel far from our creature comforts, but at the same time our lives are hardly urban either. For us it’s the perfect combination.”

Sliema is great for its bustling streets and commercial contribution. It’s also frustrating for the very same reason – the constant noise and crowds are far from calming. The perfect solution would be to have a quiet space within Sliema to retreat to; a haven where all the noise stops and all you can hear are birds chirping. This is what has been successfully achieved within the walls of this house on Rudolph Street.

The home is an inherited one and was extremely “tired” when the time arrived for the couple to start thinking about moving. It was an exciting prospect - a tremendously traditional house in the hands of contemporary architect Daniel Scerri and architectural designer Maria Mercieca. The two worked on the house together, creating solutions for comfort, charm and practicality as well as aiming to expand on the entertainment opportunity as much as possible.

The aim in converting this house was to have a dream house, complete with all the modern comforts, as well as the entertaining value of a garden and pool. Initial trepidations about integrating traditional furniture and belongings within a modern structure where successfully overcome.

The architects created a large terrace on the ground floor, which serves two functions – the overhang of the terrace allows for ample shade on the sub-level and creates something of an outdoor room, protecting the outside dining area, by the garden, from the naked sky.

This large terrace extends the line of sight even further and creates a grand effect when looking through the window from the entrance. It’s also ideal for parties.

THE HOUSE HAS BEEN DESIGNED IN SUCH A WAY AS TO HAVE AMPLE SPACE FOR ENTERTAINING. THE GROUND FLOOR SITTING AND DINING ROOMS ARE IDEAL FOR USE IN WINTER. THE TERRACE, AND THE POOL AND GARDEN AREA MAKE FOR COOL AND PLEASANT ENTERTAINMENT IN SUMMER.

The outdoor frame structure above the outdoor terrace, originally planned to be clad in large limestone slabs, as a re-interpretation of the original materials the house was constructed of, creates a new façade facing the garden, without imposing too much bulk onto the original building behind it, whose back façade was previously treated as the back service zone. It also frames the garden space when viewed from the terrace, while giving the terrace area a definition of space without the feeling of closure.

The lower floor, the basement, was originally extremely dark and neglected. This was the space which presented the most potential. This space was renovated to offer the comforts and convenience of modern living. It was to become the extension to the outdoors, the summer hangout spot, a comfortable and practical living area where the family can dine and relax not only in summer, but also during the winter months.

The homeowner: “The construction of the modern part presented a big challenge initially.

So many structural changes were required that we were worried that it might lose some of its character. But in fact thanks to the ability of the architect and the designer, blending the antique with the modern, its charm and character became much more enhanced.”

“I was also worried that the location of the kitchen at garden level, and the formal dining room on the ground floor, was going to prove to be a hassle. But the installation of the lift, has made daily living so much easier.�

All white and maintenance free, with a highly modern kitchen, the basement (garden) level is connected to the rest of the house with a lift. What originally was a dark cellar, has been restructured into a big open-space living area, which has a very large glass door, lighting up the whole space, and extending to, and affording a beautiful view of the garden and pool.

Especially at night, the effect of the garden lighting scheme, the lit up pool, the hidden lights, and the different combinations of low-level lighting and tree uplighters, create different mood settings, which can be enjoyed, both on the outside, as well as from inside the living area.

The garden retains the central axis passageway as in the original garden, with one side of orchard trees retained. The other side, where no trees where present, was converted into a horizontally-placed pool to emphasize the axiality of the garden without the over-empowering symmetry. Little details, such as the concrete bench next to the pool, were added to create as much comfort as possible. The problem of highly-invasive tree roots was resolved by creating a hollow serviceable trench all around the pool. Flair is brought to the garden through different items that were picked up during travels. Masks brought down mostly from Italy, line the old stone walls, creating an Italian vibe to the garden. The original garden wall was retained.

The house has been designed in such a way as to have ample space for entertaining. The ground floor sitting and dining rooms are ideal for use in winter. The terrace, and the pool and garden area make for cool and pleasant entertainment in summer.

On the other hand, the great advantage of laminate cupboards is that they are virtually maintenance-free. Wood needs a lot of attention as it is a natural product and prone to changes in temperature and humidity, but laminate only needs the occasional wipe or two.

Whereas laminate worktops might not be the best choice in the long run, laminate cupboard doors suffer from a lot less wear and tear and will stay in good condition for a number of years.

Contrasting colours work best, as a kitchen can look really bland if units and walls are the same colour. Kitchens especially lend themselves to bold colour statements – define the atmosphere you want to achieve and use the colour on your walls as the main contributor to this. After all, it is always easier to change the wall colour than the kitchen units.

Storage is imperative in a kitchen, especially in Malta, where homes are often small. That is why it is vital to customise your kitchen to meet your needs and try to maximise the amount of storage. Customisation is important as you can make the units in any size you want and reduce the amount of spacers in the kitchen. Different shapes of kitchens automatically provide different amounts of storage space. The bigger the worktop, the more you can store below it. After the position of the sink, fridge and hob/oven has been planned, the rest of the space below the worktop is yours to play with, because cupboards are not the only option.

Storage below the worktop is especially handy for heavy items such as electrical equipment and heavy pots, pans and oven dishes. Think about how many of those items you have and how much storage space you have to give to those items – remember to leave enough room for expansion.

Buy a butcher’s block on wheels that you can easily store under your worktop for kitchens with small worktops.

Store items that you don’t use very often on the highest shelve of your cupboard. This way easy accessible space will be available for most used items.

For display and concealed storage combined in one piece of furniture, a dresser is an elegant solution.

To create more order, use little plastic boxes or special drawer organisers for items in kitchen drawers. You will find what you need much quicker.

Hang a rack from high ceilings to store pans.

Build a spice rack in front of a boiler to disguise it. This will not take a lot of space and will be an attractive display for all your spices.

Use a corner carousel for U-shaped and L-shaped kitchens to make maximum use of the corners in the cupboards.

In a small and narrow kitchen you can create more space by making the wall-cupboards taller rather than having them protruding outwards.

A cabinet that can be pulled out is a more functional option than just a plain cupboard. A pullout trolley is another idea. Vegetables must be kept in a dry place to prevent them from early decay so don’t store them too close to an oven or a hob. Wicker baskets will give a rustic accent and will keep vegetables dry and dark.

Most cutlery will be stored below the worktop as well. Try to store the cutlery close to the dishwasher or sink for quick storage after cleaning. Drawers are still the best storage option for cutlery, but it’s also handy to keep ladles and wooden spoons in a jar on the worktop. Knives can be kept on a magnetic knife holder that can be attached to the wall or in a separate knife-block on the worktop. “PRODUCTION DESIGN DOESN’T MEAN CREATING UNIQUE PIECES. IT MEANS CREATING SELLABLE PIECES.” You have designed for so many names. How does this privileged relationship between the designer and the manufacturer develop?

A special relationship with the people I work with is important. I cannot work with people that I have no feeling for because they must trust you and you must trust them. I work from a suggestion, an idea or an impression, so I have to be understood by those I’m designing for. I think that the work of a designer is to try to translate his idea, so that it can then be understood. I begin by doing something that I like and after that, I place the structure in it. The products must be sellable to a lot of people. I don’t consider my work for the artistic element, but for the production. Production design doesn’t mean creating unique pieces. It means creating sellable pieces.

Tell us what it’s like designing for clients like D&G. Do you have a free hand, or are there a lot of restrictive guidelines?

We are doing shops for D&G, the younger line of the Dolce & Gabbana Company, and have been

working with them for about fifteen years, so we now understand each other immediately. In accordance with brand image inputs given by Stefano Gabbana and Domenico Dolce we develop the concept definition until its application in every single store.

We try to turn into application their impressions, their suggestions...and we succeed.

What is your personal focus on at the moment?

I am trying to start a new project – to change the place I live; I always try to find something that moves myself from my usual life. I’m always moving myself – I am positive and always changing psychologically.

Is the design industry stuck producing the same products year after year, or is there a subtle progression right now that is not clearly visible?

I think that design in moving every year, changing, gaining something different. The soul designs – we change colours, materials and propositions. We look at the new technology and development, but the feeling of design is always the same. The design process is always the same.

I had friends in Malta that I had met in Italy. I started to come to Malta for a holiday one summer, nearly fifteen years ago. I stayed in a castle by the seafront in Senglea. It can’t get better. I was very impressed by the three cities and Valletta, as well as the port, so I started looking to buy a house. At that time, it was very cheap in the area. I sold it about three years ago.

The positive is the sense of colour. It’s abstained – it doesn’t show too much and I like the proportion. The negative is most of the new architecture.

Dordoni Architetti must be exciting. How did it come together?

It’s a very simple story. Luca Zaniboni started to work with me as a collaborator many years ago and so did Alessandro Acerbi. They grew up and showed their quality. When I decided to develop an architectural team, I opted to make them my partners because they are better at this work than me. Recently something terrible has happened and Alessandro passed away; it goes without saying that it has come as a great blow for all of us. Luca is younger than me – he can grow and improve even further.

What are the positive aspects of Malta and negative aspects in terms of architecture and design?

Portomaso Tower is currently the highest tower in Malta. It has received enormous criticism for this. Do you worry about the reaction of the public due to the fact that his project sports 2 buildings higher than that?

I cannot talk about that because we are not doing the architectural project – we are just doing the concept of the feeling, the materials and the style. I think that Malta offers a nice point of view in many senses. That should be one of them.

Have you worked on a similar project to Metropolis in the past - one in which promised innovation and style in a somewhat impoverished area?

Probably other areas of Malta were the same in the past, it’s a process of growing up in a small island.

The only thing I hope is that the attitude will not contaminate the three cities. I hope that this area retains the atmosphere and quality without new developments.

What do you do last thing in the evening?

I watch the news or read a book.

First thing in the morning?

I feed my dogs. I have two – they’re my wake up call.

With regards to the project you’re working on in Malta - Metropolis, tell us about the concepts “contemporary, metro, nature and timeless”.

I discussed with the clients and we had a workshop of ideas. They gave us some suggestions, we gave them some. In the end, the concepts of contemporary, metro, nature and timeless came about. Most of this is derived from experience on other projects – not ours, but looking at what’s happening in the world, how other architects or freelancers work on ideas similar to this one. It’s not so strange - it’s the right way to develop a project like this – it cannot be just about buildings and selling square feet. You have to sell the style of life.

Restaurateur Walter Cassar and his wife Patricia didn’t inherit their garden as is, instead they moulded it meticulously to suit their lifestyle.

Walter: “We’ve been living in our home for over thirty-one years, but the garden came much later.

Until twelve years ago the area where the garden now sits was merely a disused quarry, a vast and empty space measuring one-and-a-quarter tumuli.

It’s hard to imagine that when you look at it now.

Transforming it into what is it today was a long process and one that we planned meticulously. The

space lent itself well to a split-level garden and as we wanted different parts of it to serve different purposes we decided to enhance that aspect. We segregated it further into four distinct spaces and by doing that have created a vegetable patch, citrus grove, pool deck and flower garden. While the overall effect still feels harmonious, it means we get the most out of the spaces both individually and as a whole.”

The beauty of the Cassar’s garden is that, while complete and landscaped, it still feels natural and enjoys an almost untouched quality.

THE BEAUTY OF THE CASSAR’S GARDEN IS THAT, WHILE COMPLETE AND LANDSCAPED, IT STILL FEELS NATURAL AND ENJOYS AN ALMOST UNTOUCHED QUALITY.

Patricia: “The only feature that remains from the garden’s quarry days is the huge carob tree; it’s probably over a hundred years old. As we love to entertain we make use of as much space as possible and the garden has played host to several large events over the years. The shady spot under the carob trees is the perfect venue for family lunches and we often set up there; even though the garden has plenty of pretty nooks and crannies, that is definitely my favourite spot. The pool and deck area is also a good size and a small bar area leads off it which, again, is ideal for when we have friends over and can spend whole days out there.”

One of the most striking aspects of the garden is the abounding and flourishing selection of plants

and trees, especially considering they were only planted twelve years ago.

Walter: “Our trees have certainly grown abundantly and we now grow oranges, grapefruits, lemons, apples, tangerines and pears. Our olives, for instance, now provide us with enough fruit to make our own oil. I suppose we can put that down to the depth of the soil, as we filled the quarry quite high to allow for plenty of root growth and to encourage to soil’s fertility. We also have an extensive dripirrigation system that covers most of the garden and makes it easier to manage.”

Patricia: “I spend a lot of time in the garden and while we do have a gardener who helps us out once a week, I take care of its day-to-day running, often getting up first thing in the morning to dead-head the flowers before the sun comes up!”

“The flowerbeds are another favourite spot of mine and we have quite an array of pretty plants and flowers. It’s great that while every part of the garden stands alone, it also works in conjunction with the others; from afar you wouldn’t notice quite how sectioned it is, which achieves the overall effect that we were after.”

Another priority for the Cassars was to ensure that this was a garden for all seasons and for that purpose a small room, complete with a fireplace, leads off the back of the citrus grove creating the perfect winter hideaway for when one wants to enjoy the garden from the warmth of the indoors.

Walter: “Of course, with a garden this size, you’re never quite finished and we always have aspirations for what we’d like to add next. We’re planning to add a lawn in the coming months allowing for even more space to enjoy and entertain!”

Home Made Pasta Mille Feuille with Wild Mushrooms, Wilted Spinach Pecorino Cheese and Chive Fondue Ingredients Serves 4 Pasta 500g 4 1g

flour 00 eggs Saffron

Pasta Filling 1 onion 500g spinach 500g mushrooms 4pcs garlic 100g chives Pasta 200g 700ml 100g

pecorino cheese Fresh cream chives Salt and pepper

Method: Step 1 - Pasta First blend together the flour, saffron and eggs, kneed the dough for around 3 minutes.

Wrap with cling film and allow to rest for 20 minutes.

Step 2 – Pasta Filling Finely chop your onion and garlic and divide into two. Heat a little olive oil in a pan sweat half of the mix, add the spinach, wilt and season. Slice the mushrooms and repeat procedure. When the mix is cooked add 100ml of cream to the mushrooms and allow to thicken.

Step 3 – Sauce Place the cream in a pan, bring to the boil, add the cheese and stir. When the sauce has thickened add the chives.

Step 4 – Assembling Roll the pastry mix and cut into 5cm squares. Boil the 3 pieces of pasta (per portion) Put the first piece on the bottom and place the spinach on top.

Place another piece of pasta and add the mushrooms. Finally cover with the last piece of pasta and sauce with the cheese and chive fondue.

BEST WINE ACCOMPANIMENT: 2007 MEDINA GIRGENTINA CHARDONNAY I.G.T. MALTESE ISLANDS. COMMENDED 2008 LONDON INTERNATIONAL WINE CHALLENGE. This pasta dish incorporates ingredients like wilted spinach, wild mushrooms and Pecorino cheese, which by themselves could be accompanied by either a dry white or a lighter bodied red. However, since there is a strong element of cream and chives, which would clash with a red, I have opted for a dry, fruity crisp white, which will marry well with all the ingredients in this dish.

Pressed Pork Belly on steamed pak choy, five spiced honey jus with wholegrain mustard mash & caramelised plum Ingredients: Serves 4 1 20ml 1 tsp 1 2 2 50g 1 1tsp 500g 100ml 1 tbsp

Joint Pork belly (boned) Olive oil Chinese five spice Glass Madeira Wine Cups Chicken Stock knobs cold butter Honey head Pak choy Sesame oil peeled potatoes fresh cream Wholegrain mustard Salt & Pepper

Method: Step 1 - Pork belly Score the skin, rub with salt, pepper and olive oil, place in a tray and drizzle with white wine, cover with aluminium foil and bake for 1 ½hrs , remove foil and baste, return to the oven for a further 30min. Remove from the oven and allow to rest. Once rested change to a clean tray and place another tray on top of the joint, weigh down with some cans or a bowl of water. Chill for at least 4 hours.

Step 2 - Five spiced honey jus Add the five spice and honey to the used baking tray and cook until the honey starts to caramelise, de glaze with a glass of Madeira wine and reduce, add 2 cups of chicken stock, reduce further, strain, return to the heat and whisk in a knob of cold butter.

Step 3 - Pak choy Place the pak choy in a steam basket, drizzle with sesame oil and steam for 4-5 min.

Step 4 - Mustard mash Boil the peeled potatoes, drain, add a knob of butter, cream, salt, white pepper, wholegrain mustard and mash until smooth and silky.

Step 5 - Caramelised plum Cut the cheeks from the plum and dust with icing sugar, chill for 30 min. Place in a hot pan with butter and caramelise, de glaze with sherry vinegar.

Step 6 - Assembling Cut the pork belly into portion size squares and roast in a hot oven, skin side up until the crackling is crisp and golden. Remove from the oven and allow to rest for 5 min. Place the pak choy on the plate and top it with the pork belly. Spoon the mash, sit the plum cheeks against the belly and sauce.

BEST WINE ACCOMPANIMENT: 2006 MALTESE FALCON MERLOT, SYRAH, CABERNET SAUVIGNON. COMMENDED 2008 LONDON INTERNATIONAL WINE CHALLENGE. Due to the slight fattiness of this cut of pork, a red wine with a high fruit content and low level of tannins will be required. Tannic reds that may be astringent would overpower this recipe and the tannins would fight with the oily characteristics of the fat in this dish.

The Maltese Falcon red is soft enough and spicy enough to marry well with these flavours. Its upfront fruit will also work well with the sweetish flavours of the five spice honey jus and caramelised plum.

Strawberry Cheese Cake Ingredients: Serves 4 6 ½ pkt 100g 100g 200g 50g 500ml

Gelatine leaves Digestive biscuits melted butter strawberries cream cheese sugar cream

Almond Bretton Ingredients: 50g 30g 1 ½ tsp 80g 20g 1-2 tbsp 100ml 2

butter sugar egg vanilla essence flour ground Almonds castor sugar semi whipped cream strawberries per portion

Strawberry Shooter Step 6 - Assembling Cut the pork belly into portion size squares and roast in a hot oven, skin side up until the crackling is crisp and golden. Remove from the oven and allow to rest for 5 min. Place the pak choy on the plate and top it with the pork belly. Spoon the mash, sit the plum cheeks against the belly and sauce.

Ingredients: 30g 1g

strawberries per shooter freshly milled black pepper

Step 1 - Strawberry cheese cake Crush ½ a packet of digestive biscuits and blend with 100g melted butter. Line a dish with the mixture Cook 100g strawberries on low heat in a dry pan, add 6 pre soaked gelatine leaves. Once soft, place in a mixing bowl and fold in 200g cream cheese, 50 sugar, and 500ml cream. Spoon the mixture over the base, level with a pallet knife and chill Step 2 - Almond bretton Cream 50g butter with 30g sugar, add ½ egg, ½ tsp vanilla essence, 80g flour and 20g ground almonds.

Gently kneed and leave to rest. Roll out to 4mm thick and bake at 170 degrees. Remove from the oven and sprinkle with castor sugar whilst still hot, top with whipped cream and sliced strawberries.

BEST WINE ACCOMPANIMENT: WINE RECOMMENDATION: DELICATA GELLEWZA ROSE FRIZZANTE – DEMI SEC. BRONZE MEDAL 2008 INTERNATIONAL CHALLENGE DU VIN BORDEAUX.
