RASPBERRY GIN CHAMPAGNE COCKTAIL INGREDIENTS * 6 Raspberries * 50ml Gin * 22ml Lemon juice *15 ml simple syrup * 90ml Champagne or Prosecco GARNISH * Fresh mint leaves * Lemon or Lime slices

METHOD 1. Add fresh raspberries, gin, lemon juice and simple syrup to cocktail shaker and fill with ice.

2. Cover and shake vigoroulsy for 30 seconds.

3. Pour contents into a glass and top with champagne then gently stir to combine.

4. Garnish with fresh mint leaves and lemon slices.

Simple syrup is made by simmering equal parts water and sugar until sugar is dissolved. Let mixture cool completely before adding to cocktail.
