Coming into 2021 we just didn’t know what would be in store for the housing market with the end of stamp duty looming and all areas of the industry running at full capacity due to an influx of home movers at the end of 2020.

Hook Line Sinker Hook Line Sinker is a seafood cookbook from Michelin-starred chef Galton Blackiston featuring recipes created through his lifelong love affair with fish and shellfish.

Galton Blackiston has been chef patron at the Michelin­starred Morston Hall in North Norfolk for 25 years. In 1999, the restaurant was awarded a Michelin star, an accolade it has retained ever since. His beloved restaurant and hotel on the North Norfolk coast is a stone’s throw from the water. Seafood has always been a part of Galton’s story and the opening of No1 Cromer, a modern take on the traditional fish and chip restaurant, has established him as one of the UK's leading seafood chefs. When he was just 17, Galton ran a food stall on Rye Market selling a range of homemade cakes, biscuits and preserves, known as ‘Galton’s Goodies’, that proved such a success that he would frequently sell out by lunchtime. Realising that his talents lay firmly in cooking, he decided to focus on a career as a chef. Galton’s seafood dishes have always turned heads. He has a knack of taking simple ingredients and pairing them with techniques and flavours that allow the flavours to remain pure whilst bringing a sense of fun to the occasion. Cooking seafood is an art and in this book, Galton shows you how to master it. Hook Line Sinker isn't a huge how­to reference guide, or a seafood bible to teach you everything about each fish in the sea. Squid in black bean sauce with deep-fried shallots

SERVES 4 for the shallots: 75g seasoned plain flour 1 egg, whisked with 4 tbsp milk 150g Panko breadcrumbs 2 shallots, peeled, sliced into rings 1 litre vegetable oil, for frying

for the squid: 350g baby squid 1 tbsp cornflour 1 tbsp sesame oil rapeseed oil 1 tbsp rice wine 1 tbsp soy sauce 2 shallots, peeled, finely sliced 2 garlic cloves, peeled, grated 6 tbsp cooked black beans, rinsed 1 lobe of ginger, peeled, grated 1 tbsp soy sauce 1 tbsp sesame oil 250ml chicken stock 1 good pinch of sugar

To prepare the shallots, place the seasoned flour onto a plate, put the egg and milk into a shallow bowl and the Panko breadcrumbs onto another plate. Dust the shallot rings with the seasoned flour, dip into the beaten egg, shaking off any excess as you lift them out, and then coat with the Panko breadcrumbs. Set aside on kitchen paper. To cook the squid, wash the squid, separating the tubes from the tentacles and set aside. Mix the cornflour, sesame oil, 2 tablespoons of rapeseed oil, rice wine and soy sauce together in a bowl, add the squid and coat well. Cover and refrigerate for up to 3 hours. Heat a frying pan or wok over a high heat and add a good splash of rapeseed oil. Remove the squid from the marinade and add to the pan and stir­fry for a couple of minutes. Using a slotted spoon remove the squid from the pan and set aside on kitchen paper. Add another splash of rapeseed oil to the same pan, turn the heat down, add the shallots and garlic and sauté until softened but not coloured. Next add the black beans and ginger with the soy sauce, sesame oil, chicken stock and a good pinch of sugar. Turn up the heat a little and bring the mixture up to simmering point. Return the squid to the pan and cook for a further 5 minutes or so, tasting and seasoning with salt and freshly ground black pepper as you do so. To fry the shallots, as the squid is returned to the pan heat the oil in a deep fat fryer to 180°C. Carefully lower the shallots into the oil and fry until crisp and golden brown. Remove from the fryer and drain on kitchen paper. Serve the squid in the black bean sauce topped with chopped mint, chilli and spring onion, drizzle over a little lime juice and top with the fried shallots and coriander.

Tiger prawn & potato fritters with Vietnamese dipping sauce

SERVES 4 for the dipping sauce: 250ml water 2 tbsp white wine vinegar 4 tbsp lime juice 1 chilli, deseeded, finely sliced 3 garlic cloves, peeled, grated 1 small lobe of ginger, peeled, grated 8 tbsp nam pla fish sauce 4 tbsp caster sugar

To make the dipping sauce, whisk all the ingredients together in a bow. Set aside until needed. To make the fritters, in a bowl mix together the flour, sparkling water, salt, sugar and turmeric and set aside to rest for 10 minutes. Peel the potatoes and cut into julienne strips. Peel and devein the tiger prawns and cut in half lengthways. Set aside. Heat the oil in a deep fat fryer to 180°C. Fold the potatoes, prawns, spring onions and coriander through the batter mix. Using your hands, shape them into fritters, making sure you have an even distribution of prawns in each fritter. Lower them into the hot oil and fry until crisp and golden brown. Remove from the fryer and drain well on kitchen paper. Serve immediately with the dipping sauce.

ston Martin has unveiled its first SUV and a model that will propel the brand to new heights worldwide. That model, is DBX. The culmination of an extensive development programme that began with physical testing in Wales last year and virtual development stretching back to 2015, DBX signals a new era in Aston Martin’s pursuit to deliver exceptional performance, style and usability in a segment previously unexplored by the world­famous manufacturer. Bringing both the versatility and indulgence expected of a luxury SUV with sports car levels of dynamic performance, DBX sets a bold new standard in this sector. Set to be built in Aston Martin’s purpose­built manufacturing facility in St Athan, Wales, the foundation of DBX is a new dedicated SUV platform, something rarely seen across the sector. More than ever before, this clean sheet of paper has allowed all departments within Aston Martin to innovate and push the boundaries of what British design and engineering can create, resulting in a truly remarkable product.

Powered by a new version of the characterful 4­litre, twin­turbocharged V8 engine found in DB11 and Vantage, DBX features an impressive output of 550PS and 700NM of torque, carefully tuned to meet the specific needs of this model. With a sound character that is unquestionably Aston Martin, the active exhaust system ensures this is a luxury SUV that can sound refined one moment and exhilarating the next. The engine’s versatility isn’t restricted to its vocals either; the turbocharged V8 has cylinder deactivation to enhance fuel economy, yet it can also propel DBX from 0 to 62mph in 4.5 seconds and on to a top speed of 181mph. Transmitting this power and torque to the ground is a nine­speed torque convertor automatic gearbox, allied to an all­wheel drive system with active differentials featuring an active central differential and an electronic rear limited slip differential (eDiff). This allows the torque to be moved precisely both fore and aft in the vehicle and also across the rear axle. When combined with the bespoke steering system that has been tuned to deliver feel and sports car­like response, DBX imbues the driver with an overriding sense of control, whatever the conditions. Aston Martin’s first ever full­size 5­seat model is not only exceptionally versatile in terms of the terrain that it can tackle, it is also extremely adaptable to a wide variety of lifestyle needs and owners. Designed to accommodate the world’s 99th percentile male and 5th percentile female, DBX has been very deliberately created with instant familiarity and ease of use from the start. With 632 litres of boot space and 40:20:40 split folding rear seats DBX possesses all the flexible load capacity expected of an SUV with class­ leading interior space. The load space offers a practical and cleanly designed space. A narrow load sill and broad aperture maximises the practicality for a variety of luggage, such as suitcases, golf bags and ski equipment. The luxuriously handcrafted interior of DBX has been designed to provide equal space and comfort whether sitting in the front or rear of the car. Class­leading headroom and legroom combines with a full­length glass panoramic roof and frameless door glass to offer a fantastically light and spacious cabin environment. The use of sports car seat packaging in the front not only provides the driver with exceptional support and long­ distance driving comfort, but also provides knee and footwell clearance for those sitting behind. Small touches throughout, including separate central armrests, glovebox design and the ergonomic positioning of the car’s key control systems, have been guided carefully by the input of the brand’s Female Advisory Board, dealership feedback and a variety of private focus groups held worldwide. Not limited to this area, the guidance provided has been key to the success of DBX’s overall design. The seats are trimmed in sumptuous, full grain leather, sourced from long term partner Bridge of Weir. An industry first, both the headlining and electric roof blind are available in a luxurious Alcantara® finish, providing a harmonious design, light obscuration and solar attenuation without compromising headroom.
