Some of her favourite products, past and present, have been the statement canvases by Mineheart. These come in three sizes and really have the wow factor. The company supplied a couple of these in giant size to the Royal Hotel in Southend for their ballroom and they really do look spectacular. More recently items like the bamboo wall fans have become


extremely popular as they act as a great alternative to art and add texture to a room. The battery LED lights have also been a popular addition to a room due to their versatility and potential use all around the house. “A big part of my job is styling my own home with the pieces that I source”, adds Trudy, “and the images of these I regularly post on Instagram. This has been a great tool for Tin Design”. Those people following the company’s social feed who are on the hunt for ideas and inspiration will see that Trudy has a particular passion for all things Oriental which has come through in the products she buys. As Tin Design is just a small shop among an abundance of other independent retailers it’s their website which has proven a real success. And what’s this about sourdough pizza nights?

Home: Tell us about the business. How did you get started?

I

created my first artisan bread about 9 years ago in the small kitchen of my flat in the Royal Docks. It was here I read about, practiced, learned and honed the fine art of baking. In April 2015 I opened my first pop up bakery at Old Street station (thanks to TFL) which led to my first stand at the BBC Good Food Show a month later. I loved the personal interaction with visitors at the show and was delighted by the level of interest. In December 2018 Flour and Spoon opened its doors in Leigh-OnSea for the very first time and what an incredible journey it has been so far. Since our opening we’re proud to have won some amazing awards including the Best Bakery in Essex and The Best Bakery in South East. The awards not only commemorate our breads but also acknowledge Flour and Spoon values and mission.

I hear you’ve taken ‘organic’ to a whole level? Since the start of our journey in 2018, environment played an important role in our business. When we are not in the bakery, we are continuing to grow our own fruit and veg used for our homemade jams, chutneys used in our bakery. In 2019 we rescued few more chickens straight from the truck before their slaughter and gave

We are happy to bring back our very popular Saturday Sourdough Pizza nights. They are the 1st Saturday of each month between midday and 6pm. You can pre-order and collect, enjoy in or cosy café or take with you and enjoy in the park or on the beach. And we are dog friendly so feel free to bring your four-legged friend along too!

What is happening with your Baking School? Is it again running? Yes, we are back in the business with our baking school too. Our Sourdough Baking Classes runs every other week on Sunday and any person with a passion for real bread making can book themselves in. It is also a great idea as present for your loved ones. Each baking class runs from 11am and we aim to finish by 5pm – lunch is included and each student leaves with a beautiful loaf of real sourdough and sourdough bagels, plus the knowledges and skills how to make real sourdough in the comfort of their homes.

What is the future of Flour and Spoon? We have been overwhelemed by loyalty of all of our customers since we opened and particualry during the dramatic last year. Each returning customer is proof that Leigh needed a bakery who creaates real bread, sourdough, traditional cakes and offers great variety of local products. We are very excited about the future of Flour and Spoon and we exctied to be part of the new Indoor Farmers Market opening later this year at Leigh Road.
