Shapes, like materials, are also motivated by nature, taking on organic, seemingly haphazard and flowing forms. Like furnishing fabrics, wallpapers, too, are taking their cue from nature. Textile companies are adopting giant leaf motifs or giving fabrics the texture of wood, or even of animal skins such as snakeskin and elephant hide.

TEMPTATION – AN INTIMATE ESCAPE The textile industry is increasingly using computer technologies to rework classic patterns. Damasks are going digital, jacquards stretched and altered. The contemporary and the classic are intermingling. Viewing the home as a sanctuary, consumers are looking for a more intimate experience when it comes to home textiles. Textures and colours this year reflect this sense of intimacy, as well as a certain sensuality. Materials are opulent and high end, ranging from thick velvets to weaves and Shantung silks. Outdoor kitchens are the newest trend in alfresco living. A patio or poolside food prep area — complete with grill, pizza oven, refrigerator, sink and bar — empowers family and friends to spend more time under the sun and stars. Geared-up grilling islands offer all the features of a fullfledged kitchen and new home builders are actually adding them to their plans.

BUDGET Have a certain sum in mind by deciding what's most important. Do you want the bulk of your money to go into the setting — patio, pavilion, deck — or into equipment? If you're planning to stay in your house for a long time, put your money into the setting and start with modest equipment that can be upgraded over time. If you think you may move, buy the equipment of your dreams in portable form so you can take it with you. Build it in or buy versions on wheels. These days you can even get a portable pizza oven.

RECOGNISING A GOOD LOCATION The outdoor kitchen design should compliment the architecture of the home and the landscape. Use compatible materials and incorporate subtle architectural details. Consider choosing a spot that's neglected and needs the most work — areas that need a lot of attention frequently turn out to be the best location. Of course, it should also be on level ground, not too far from existing utilities, big enough for entertaining, offer privacy and a good exposure. Rather than the center of the garden, go off to one side or pick an area that's tucked away, because

if the kitchen becomes the focal point, you won't have something to look at when you're there. Building onto an existing deck or terrace is an easy way to tie your kitchen into the rest of your home. Just be sure to keep the grill far enough away from the home to avoid smoke or heat damage. Consider the relationship between the indoor kitchen and outdoor kitchen. How self-sufficient do you want the outdoor kitchen to be? How could they be used together when cooking or entertaining? What is the traffic pattern between them?

ORGANISE THE SPACE Outdoor kitchens are all about entertaining, so bear that in mind when designing the space. Also be sure the spot you choose will accommodate everything you want the kitchen to hold. Apply good kitchen design principles for functional zones of the kitchen. If you are not a kitchen design professional, be sure you partner with one or at least understand good kitchen design principles. Cold areas (refrigeration), hot areas (grills and cooktops), wet areas (sinks) and dry areas (prep counters and storage) must all work together effectively in proper proximity, with each allocated enough space. Because the grill is the heart of any cookout, build your outdoor kitchen around it. Then arrange the items in the kitchen so they're easy to reach when you're cooking. Don't forget hooks for hanging tongs, spatulas, forks and other grilling utensils. If you include a sink, refrigerator and storage cabinet, they should all be close to each other. But they don't have to be arranged in the indoor-kitchen work triangle that ties the stove, refrigerator and sink together. One functional layout to consider is to place a counter opposite the grill, creating a mini-galley or U-shaped kitchen. This setup is not only efficient, but it also

keeps kids and other traffic out of the work area. Barriers that keep children away from the grill are a plus. Plan the entire outdoor entertaining space as part of a single functional plan. Dining areas, lounging areas, cooking areas and pool areas often coexist. Think of these as outdoor rooms and consider the flow of traffic between them as part of the design. Try not to isolate the outdoor cook from the rest of the party. Create opportunities for interaction and conversation within the outdoor kitchen and between the outdoor kitchen and other areas. Even if budget doesn't allow for these features now, proper planning can make them easier to add later.

MATERIALS Select low-maintenance materials designed to withstand the rigours of an outdoor kitchen. High-quality stainless steel provides a sanitary surface, easily cleaned and corrosion-resistant in harsh environments. Natural stone counters work well, but some require sealing on a regular basis. The densest granites, such as “absolute black� are among the least porous stones but may not be ideal for your design aesthetic. Solid surface or acrylic-based materials are both durable and easy to wipe down. Consider how hot counter materials may get under constant sunlight. Some materials stay naturally cooler than others, and it isn't always a light-versus-dark colour issue. The best way to test is to leave a sample in the sun.

ELEMENTS TO CONSIDER Although it's tempting to compare outdoor kitchens to the one indoors, there are some key differences. For example, while a grill and counter space for preparing food are essential, a refrigerator and sink aren't. But including them can boost the value of your home by helping your outdoor kitchen qualify as a second kitchen. GRILLS. Grills are common element in an outdoor kitchen, and are an important part of any design. Stainless-steel-clad professional-grade grills stand up to weather and can stand alone or be built into an island. Powered by liquid propane, some models offer a grill range that measures from 80 to 150 cm — that’s a lot of red-hot real estate. Outdoor grills also pack fun features you may not have in your own kitchen, such as multiple burners for side-dish preparation and rotisserie units for slow-cooking meats. PIZZA OVENS. Wood fired pizza ovens are one of the hottest new (old!) trends in outdoor kitchens. Not only can wood-fired ovens be used for pizza, but they can cook anything from magnificent artisan breads to roast chicken, crispy crackling and pork chops, seared scallops, and even an overnight melt-in-the-mouth stew. Manufactured ovens are available from manufacturers like Forno Bravo and Fogazzo. The ovens can also be built in the traditional manner, out of bricks; this is a project suitable for a mason or even an ambitious do-it-yourselfer. SMOKERS. Get serious about authentic barbecue with a built-in smoker. Elegant smoked salmon and homey beef brisket turn out equally well in this low-temperature device.

SINKS. Consider adding a sink to the outdoor kitchen. It involves bringing plumbing to the area, but it helps with prep and cleanup, and allows all of the action to happen outside. A sand-toned sink blends in better with the outdoors than stark white. But again, the most important thing is to match your fixtures with your existing home décor. When it comes to the faucet, matte finishes like brushed nickel or oil-rubbed bronze can help hide the natural collection of dust and debris that gathers in the outdoors.

At its most basic level, an outdoor kitchen is a place to cook and eat outdoors. It can be located on a screened porch, on a patio or it can be set in a courtyard or out in the garden. If you have not yet considered an outdoor kitchen here are 6 reasons why should consider one right away.

REFRIGERATORS. An outdoor refrigerator allows you to keep beverages for the pool area. Plus, there’s room to cool marinating meat and veggies, keeping them in launch position until the grill is sizzling. Undercounter units are popular for outdoor kitchens. They're out of sight and protected by the counter.

• Cooking indoors in the summer can be a nightmare. Cooking outdoors can save you from the heat and at the same time keep your air conditioning bill down.

PREP SURFACE. Be sure to include enough prep surface in the outdoor kitchen design. What's the fun of an outdoor kitchen if all the work has to be done inside, in the regular kitchen?

• All the mess and garbage is kept outside. Just make sure to have a garbage bin nearby.

Don't forget to include other elements in the overall outdoor space plan. A raised herb garden is a natural compliment to an outdoor kitchen, for example.

• You can enjoy cooking with a grill. Cook barbecue, steaks or other grilled dishes without fear of smoke filling your house. • While having food outdoors you don't have to run indoors to get supplies. Install an outdoor refrigerator and sip chilled beverages! • An outdoor kitchen serves as a great place to entertain guests and hold dinners and luncheons. Install a small fireplace and see how it adds to the magic. • Once installed, an outdoor kitchen will last you a long time. Since the materials used are weather resistant it generally withstands the test of time. You might just have to change the grill occasionally. • An outdoor kitchen can add to the real estate value of your house as well. If you plan to move out in a few years, consider an outdoor kitchen as an investment, not as a cost.

PLAN FOR UTILITIES The location of the outdoor kitchen and the equipment within the kitchen can greatly affect the installation or placement of the necessary water and electrical supply.

EXTEND THE OUTDOOR ENTERTAINING SEASON WITH HEATERS, SHADE AND RAIN SHELTER Shade from pergolas and vergolas in both the cooking and dining areas can make a big difference to the homeowner’s enjoyment of the space. Appropriate rain shelter for the outdoor kitchen can help keep the cook dry and comfortable even if the guests migrate indoors. The Finishing Touch ADD DAZZLE TO YOUR POOL INTERIOR WITH PEBBLETEC For the last quarter century, builders and industry suppliers have been working to strengthen and beautify pool plaster by adding aggregates like rock, quartz and graded marble to the matrix that’s applied to cement pools. Plain plaster, once the only choice for homeowners, has been losing share to these products, which manufacturers say are sturdier and stand up to homeowner neglect better than plain plaster. One such product is PebbleTec. PebbleTec offers the all natural pebble rock pool finish, and is ideal for the interior of pools, spas and water features.

THE BASICS Technically, all pool plaster contains aggregates. Plain white plaster, for example, is made by adding crushed marble, commonly known as pool sand or marcite, to Portland cement. Although this aggregate has served pool builders and homeowners pretty well, it doesn’t necessarily stand up to harsh chemical environments like the newer ones do. But how do these alternative aggregates, like PebbleTec work? It’s pretty simple, really. In your newer, modern-day finishes, to achieve a particular look, the ‘cream’ on the top of the surface is removed after it’s been trowelled. This gives you the exposed aggregate. The exposed aggregate in effect hides the cement, which is by far the weakest part of the surface matrix.

WHY PEBBLETEC® The difference between PebbleTec and traditional glass mosaic tile is plain to see but several other systems exist which emulate the opposed aggregate look. The important point though is that none of these use quartz stone as the base material — PebbleTec does. Quartz stone is hard (geologically speaking it is 97% of the way towards being a diamond). This rock, once exposed, offers homeowners a couple of appealing benefits. “People buy PebbleTec for two reasons,” Udo from Atlas Pools explains. “One is the aesthetic value and the other is the longevity and durability. It's virtually bulletproof.”

THE PRODUCT Natural pebble is a pure product, which provides a natural and practical way to produce beautiful swimming pools with economic use of the earth’s natural resources. The mining and extraction methods are licensed and controlled by environmental agencies and the pebble is used in its natural state and only graded and rinsed. There are no manufacturing processes involved in its production and therefore no pollutant by-products or harmful emissions are produced. Originally developed in Australia over 25 years ago, the pebbles are chosen for their natural colour and smoothness. Finely screened and naturally tumbled, these pebbles are mixed with special formulated cement and additives, such as ceramic chip or coloured glass, to create a beautiful finish that is resilient, nonporous, and easily cleaned. Despite numerous studies, no definitive link between stress and breast cancer has been found. • Breast cancer is mainly a hereditary disease. Breast cancer can run in families, but fewer than 10% of cases are as a result of an inherited faulty gene.

Autumn Gardens

Practical gardeners, authors and speakers living in Spain for 25 years. With the temperatures dropping and the chance of Autumn rains to re-green parched areas of gardens it’s a delight to again have friends around for an alfresco lunch and work in the garden at normal hours. Our Summer routine of sunrise until 10.30 to get things done before it’s unbearably hot can now be dropped until next June. Thinking of alfresco eating this summer we have made much use of a solar cooker we constructed from an Alsol kit. It’s been especially useful for casserole dishes that can simmer slowly for two or three hours while one gets on with gardening and will continue to work throughout the Autumn and even on sunny Winter days beyond. For Autumn there are plenty of things to get on with between September to November, which are outlined below. (Fuller lists can be found in the calendar chapters of each of our books.)

THE FLOWER GARDEN Autumn gardens can be a delight. Some plants such as gazanias that shut up shop during the hottest weeks come back into flower and Autumn flowering plants come into all their glory. Also trees such as bird of paradise, orchid tree, cotton rose in full flower are not to be missed, and of course by the end of Autumn one will have enjoyed the Autumn colours of drying deciduous leaves. Plant tables in Your Garden in Spain – From planning to planting includes English, Spanish and Botanical names and indicate flowering times, etc. If you don’t have spring and summer bulb displays, now is the time to plant for next year. Our favourites for Spanish gardens are clivias, freesias, Dutch and Spanish irises and anemones for the Spring and lilies, tulbagia (normally purchased as a plant), cannas, mirabiles San Diego de noche and montbretias for the Summer. Your Apartment terraces and balconies may have been scorching during July and August even with blinds and awnings down but now is the time to plant up for Autumn and Winter colours. For Apartment terraces , balconies and windowsills: Collect suitable containers that can range from plastic containers, window boxes and wooden or aluminium growing tables – see ‘Apartment Gardening Mediterranean Style’. The three square metre balcony below grew over twenty varieties of vegetables last autumn and winter and was then planted up all summer. • Mix a bag of worm compost into a soil/peat based compost and add a little TeraCottem soil improving/water retaining gel for a productive growing medium for containers.

FRUIT AND NUT GROWING ALSO NEEDS ATTENTION

A KEY TIME FOR VEGETABLE GROWING The autumn is a key time for vegetable growing whether you have been growing them for some years or are about to start. If you have been growing vegetables for some time the essential tasks are threefold.

Keeping summer plants growing by careful watering and feeding to extend their harvests as long as possible especially tomatoes, peppers, aubergines and beans.

Processing Autumn gluts by drying tomatoes and making chutneys or jams. If you have never made tomato jam have a go this year it is delicious.

Enriching the soil having cleared finished summer crops and then making sowings and plantings of vegetables for eating during the upcoming months. • Autumn — lettuces, swiss chard and carrots. • Christmas — new potatoes, brussels sprouts, red lettuces and rocket. • Winter — beetroot, carots, parsnips and cabbages. • Early Spring — onions, garlic, peas and broad beans. If you grew pumpkins during the summer they will probably be harvested in September just in time for Halloween. There are many uses for pumpkins at this time. Our uses for a Halloween dinner with friends • Pumpkin lanterns of various sizes and designs. • Pumpkin soup. • Pumpkin bread. • Roast pumpkin as one of the vegetables. • Vegetables served in a hollowed out pumpkin basket. • Pumpkin flans If you have never grown vegetables in Spain before invest in a copy of Growing Healthy Vegetables in Spain if living in a villa or Apartment Gardening Mediterranean Style which covers vegetable growing in containers for apartment owners. Autumn is the easiest time to start and the first tasks are as follows. For gardens: Decide whether to grow in a raised bed because of shallow soil or in a veggie bed or rows between fruit trees if having good soil. Improve the soil. It’s best to add

Harvests can include grapes, persimmons, apples, walnuts, late raspberries, early mandarins, satsumas, mangos, chirimoyas and pomegranates. As the heat goes out of the sun an electric dryer is useful as it can operate all night in a bathroom or utility room with an open window. It’s an Autumn delight to shower in the morning to the smell of drying mandarins or raspberries. Now is also a good time to plant up some extra deciduous fruit trees. We would delay the planting of new citrus and other evergreen trees until the spring especially in frosty areas. Scan through our book Growing Healthy Fruit in Spain before making your final choices. KEEPING ON TOP OF COMMON PROBLEMS With gardens now enjoyable to relax in don’t forget that cooler and damper weather brings snails and mildew spores out so start again to use an eco friendly snail bait such as Neudorff’s Ferramol and dust plants that show signs of mildew with yellow sulphur powder.

TIDYING THE GARDEN Last but by no means the least important tidy up the garden cutting back flowered growth to stimulate a Christmas flowering but remember that the big annual cutback is best done in Spain in January rather than October/November in the UK.

Pumpkin Delight Packed with vitamins and minerals, pumpkins add more than taste and colour to your cuisine. Pumpkins are a sure thing when it comes to Halloween décor, but the vibrant orange shells also house tasty fare on the inside. Fat free, 49 calories per cup, and loaded with vitamins and minerals — what’s not to love? Pumpkins are packed with beta carotene, an important antioxidant. Researchers say a diet rich in beta carotene foods may reduce the risk of developing certain types of cancer and protect against heart disease. But the benefits go beyond health. Pumpkins are versatile, and they blend well with many different herbs and spices for both sweet and savoury dishes.

Forgo cooking with the jumbo pumpkins you carve with the kids. Larger pumpkins are stringier and less tasty. Opt for the smaller pumpkins for a smoother texture and sweeter taste.

CHOP The skin comes off easily if you cook the pumpkin instead of chopping it up when it is fresh. You can pop a small, whole pumpkin into the microwave — just poke it with many holes and cook it on high for a total of 15 minutes, checking it every 5 minutes.

This chunky soup is made even more interesting with the addition of diced pears and a classic Catalan picada thickener of garlic, almonds and bread. In Morocco, lentils might be used instead of chickpeas or white beans, and sometimes rice or braised greens are added to the mix.

INGREDIENTS 1 cup dried chickpeas (garbanzo) 1 cup small dried white beans (Fabes, Judion, Fava, etc.) 2 quarts plus 3 cups water 1/2 cup olive oil 1 large yellow onion, chopped 1/4 cup diced ham 1 tbs. sweet paprika 2 tomatoes, peeled, seeded and diced Pinch of saffron, steeped in 1/4 cup hot chicken stock or water 12 almonds 1 slice bread, cut in half 2 garlic cloves 2 tbs. sherry vinegar 1 + 1/2 cups peeled and coarsely chopped pumpkin or butternut squash 3 pears, peeled, halved, cored and cut into chunks 1/2 lb. green beans, trimmed and cut into 5 cm lengths Salt and freshly ground pepper, to taste >>


< HOME ENTERTAINING DIRECTIONS Pick over the chickpeas and white beans, and discard any misshapen beans and stones. Rinse the chickpeas and beans and drain. Place in a bowl, add water to cover generously and let soak overnight, then drain. In a saucepan over high heat, bring the water to a boil. Add the chickpeas and beans and return to a boil. Reduce the heat to low and simmer until the chickpeas and beans are tender, about 1 hour. Meanwhile, in a sauté pan over medium heat, warm 2 tbs. of the olive oil. Add the onion and sauté, stirring occasionally, until tender and translucent, about 10 minutes. Stir in the ham and paprika, mixing well, and then mix in the tomatoes. Cook for 10 minutes to blend the flavors. Add the saffron and stock to the pan, mix well and set aside. In another sauté pan over medium heat, warm the remaining 6 tbs. olive oil. Add the almonds, bread and garlic and cook, stirring occasionally, until golden, about 5 minutes. Using a slotted spoon, transfer the almonds, bread and garlic to a mortar or a small food processor. Grind with a pestle or process to a paste. Add the vinegar, mixing well. Set aside. After the chickpeas and white beans have cooked for 1 hour, add the pumpkin and pears and simmer for 10 minutes. Finally, stir in the tomato-onion mixture, the green beans and the bread mixture, and simmer until the green beans and pumpkin are tender and the flavours are blended, 10 to 15 minutes. Season with salt and pepper. Ladle into warmed bowls and serve immediately. Serves 6 to 8.

While Halloween is typically thought of as primarily orange and black holiday, there are a few other colours that also work well for spooky signature drinks, including dark purple, "hazardous material" neon green, and – of course – blood red. Here’s a recipes for a delicious blood-red cocktail that is sure to please your favourite (friends dressed up as) vampires … and other “unusual” guests! INGREDIENTS

• Pumpkins grow nearly all over the world. • Pumpkins range in colour from white to sage green, to deep green and dark orange. • Pumpkins are a member of the squash family. • Pumpkins are a fruit. • Pumpkins are 90 percent water. • The Spanish used pumpkin seeds for food. • Spain is one of the main producers in Europe of the gourd and pumpkin species.

1 1/2 oz Finlandia Vodka 1 1/2 oz Korbel Champagne 3/4 oz Chambord Red sugar for rimming PREPARATION Rim the glass with red sugar (use food colouring). Pour vodka and half of the Chambord in a martini glass. Top with Champagne. Pour the remaining Chambord over the back of a spoon to make it float.

1 cup Sugar 1/2 cup Light corn syrup 1/2 cup Water Red Food Colouring

Combine sugar, syrup and water. Cook without stirring to hard crack stage – which is 300 degrees F. Add food colouring. Turn off heat. While the mixture is still hot, dunk the top of the cocktail glass into the mixture to create the red rim. If you need to do several glasses, keep the mixture hot so it lasts longer (instead of turning heat off, just reduce slightly). You can go anywhere from just along the very tip of the rim to part way down the glass – whichever you prefer. Flip the glass right side up to cool (make sure your hands are protected, hot candy mixture can burn if it drips). The thick consistency of the mixture will cause “drips” as it hardens on the glass! Rims about 8 glasses.

How to Choose a Cool Collar for your Dog PLAIN LEATHER OR NYLON USED TO BE THE ONLY CHOICES, BUT NOW THERE ARE LITERALLY SCORES OF DIFFERENT STYLES TO CHOOSE FROM. HERE'S HOW THE PICK THE PERFECT ONE FOR YOUR POOCH.

Using a tape measure, determine your dog's neck size, then add 5 to 8 cm. You don't want the collar to be loose enough to come off over her head and you definitely don't want it to be too tight, which can cause choking and skin irritation. Different manufacturers label their small, mediums and large differently, but the neck measurement should be on the product tag. If your dog is a puppy and still growing, an adjustable collar is a must, and you should check the fit often. There are collars for every conceivable size of dog from teacup to super gigantor. You'll need a smaller lightweight collar for a little guy and a heavy-duty wide one for the big lugs. Most pet stores are more than happy to see nonhuman shoppers, so if at all possible, take your dog with you to the store to try the collar on. You should be able to fit two fingers flat between the collar and her neck for the best fit. For training, it is recommended to us a "Martingale" collar. They're nylon collars with a loop that basically acts as a choke chain. They're much gentler on the dog's neck when you correct them. Pinch collars with the sharp metal prongs? pass …

RETIREMENT HOME WANTED URGENTLY Denzil is a German Shepherd mix about 12+ years old, found tied up in an abandoned Cortijo on the Costa del Sol, unable to walk and was dragging himself across the floor. His Spanish owners had left him there to die as they did not want to take him to the vets. After a difficult rescue and three days at the vets he can now get up and walk again. He has a condition called 'Hip Dysplasia' which is common in German Shepherds, and will need to be on joint supplements for the rest of his life, such as Cod Liver Oil Tablets. He desperately needs a loving home to spend his twilight years. He does not need much walking, is good with other dogs, not food aggressive, loves cuddles, is good in a car and is happy to live outside.

Ella is between one and two years of age. This lovely little female dog was found cowering underneath a car by a woman who brought her to the shelter. We discovered she was pregnant and was very close to having her pups. She is an adorable little dog who is being fostered during the birth and for some weeks with the pups. She would fit in with any kind caring situation — very affectionate but is afraid of walking on the lead— loves being carried. Like all our rescue dogs she's a star and looking for a permanent home.

Georgous is a four year old female Siamese. She is sterilized, and is a very loving and affectionate cat. She has already lived with us for a year. She was left at the shelter because her family had to go back to their home country and they couldn’t take her with them. She urgently needs a family that will love her. She spends all her time in an enclosed space and she badly needs to run, be happy and have space.

BY DAVID JEFFERS MAIRS You may recall my mentioning in previous editions, that On Sunday the 16th of May I had leaped from an airplane, in aid of Alzheimers Research, on my first ever sponsored sky dive — the final sum raised was a fabulous total of 2,800 euros. My daughter Samantha presented the cheque, on my behalf, to the Alzheimer Association. The jump was filmed and has been uploaded to youtube. Many thanks once again to all involved in the fund raising with a special thank you to Roger and Rosemary for the biggest single donation.

Positively Pink Positively Pink is an organisation established here on the coast dedicated to raising money in order to fund the improvement and enhancement of early diagnosis of breast cancer and to fund a support group for Breast Cancer patients in the Malaga Province and in particular the Marbella area. The charity was founded by John and Lorraine Palmer, the owners of the beautiful Oceano Hotel, and Lorraine knows all too well the anguish and worry of breast cancer. My wife Linda, who has been diagnosed with cancer, has had first hand experience of the help and genuine concern shown by this remarkable lady. Both Linda and I can’t thank her enough for all that has been done to help through this very difficult period. The Positively Pink charity has produced a DVD, available free, which is uplifting and features local woman who have been treated for breast cancer. They tell there individual stories, including their dark days, but through positive thinking they offer encouragement and support. Their courage and strength of character is an inspiration to us all. Breast cancer has no respect for age and young woman can develop this condition as well as older woman, so it’s highly recommended that all women should have a regular scan, regardless of age. Positively Pink provides an invaluable service and needs your help to keep this service in place. The prognosis is good though folks and if all goes to plan I should be back to my fighting weight in a few months.
