HI! IT'S MAY! It seems that every year I forget how busy we get in the month of May! Between the winding down of sports, end of school year parties and celebrations, the weeks FLY BY! This month we wanted to spotlight an UNHINGED

amazing local, Chloe Golmon, with Sow Texas and bring back New Beginnings for some helpful mental health insight.

PRO TIP- FUNCTIONALITY OF A KITCHEN

Jordon is the owner and founder of Holmes Cabinet Specialties and has been in the construction field most of his life. He has been specializing in cabinets for the last five years.

Jordon: When designing your kitchen, I like things to flow. I am big about designing a kitchen based on functionality. It is important that everything works properly and fits where it needs to be most useful.

One of the concepts I use and incorporate into my designs is the "working triangle". The triangle is a concept based on the three main areas of your kitchen, the wash area, the cooking area, and the refrigerator. We want to make sure these three areas are placed in a way that your kitchen flows.

The most popular pullouts we incorporate are trash can pull outs and spice racks.

We are also asked quite often to add roll out trays to cabinets.

These help prevent having to get on your hands and knees to get to the back of the cabinets.

The kitchen should be designed in a way that you can move from area to area easily.

Once these areas are determined, we build around them. Lately, customers have been loving big drawers for pots and pans, custom pullouts, and even roll- out trays in cabinets. The placement of these will be more evident once main areas are set.

These pull outs can really help your kitchen work for you!

MENTAL HEALTH MOMENT- STRESS RESPONSES

BY NEW BEGINNINGS COUNSELING TEAM

New Beginnings Counseling Team is a team of therapists serving our local communities out of their offices in Port Neches, Beaumont & Stafford. They see clients of all ages and use a variety of treatment modalities to help clients reach their goals! We, at HCS, understand the importance of taking care of your mental health and hope to diminish the stigma around seeking therapy.

NBCT: Let's talk about stress responses!

Most of the people who call NBCT are calling with an anxiety or stress related disorder.

Today we will address the acute stress response and how this response plays a role in how we deal with stress and danger in our environment. It is important to note that this response can be triggered by both real and imaginary threats.

UNHINGED

NBCT: Our bodies are designed to protect ourselves! Individually we are wired to typically respond in a fight, flight or freeze response. When we perceive a threat, we will respond in one of these three ways.

FIGHT response: We tend to want to protect ourselves in possibly an aggressive way against a threat.

FLIGHT response: We feel intimidated and want to run away or avoid the threat.

FREEZE response: We are not sure exactly what to do. Our mind and body is trying to decide how to respond to the threat.

NBCT: Everyone typically has an innate response to threats. If this is something you feel you need help with, give us a call. We can help you understand how you are wired. We can also help you unravel your typical response and make some changes in your life to address stress and anxiety in a way that will help you feel more calm.

HCS: Chloe! Thank you so much for joining us! I love your story and just had to share it with SETX! Please tell us all about you!

Chloe: HI!! I am a homeschooling mom of 5 and I have a homestead in midcounty. I have always loved to grow things and was introduced to gardening through my Grandma Ruthie's tomatoes, when I was little.

HCS: Thank you so much for sharing that. What a powerful message behind the name! How did the pandemic affect you?

HCS: When did you start your garden and how did you create a homestead?

Chloe: I started our home garden in 2015 as a hobby. When Hurricane Harvey hit, I became completely overwhelmed with the feeling of food insecurity. I had 4 little mouths to feed at the time and I knew that if I wanted any kind of peace in my soul about my role as a provider I had to get serious about utilizing the garden as a regular food source for our family. At that point, we added rabbits and chickens as a protein source and we officially became a homestead!

HCS: I know you've mentioned you are passionate about mental health, do you mind sharing about your journey?

Chloe: I am a huge mental health advocate. After my 5th little babe was born, I went through a very dark period of depression. The garden honestly and truly pulled me out of it. Knowing I had to get out of bed everyday to tend to the animals and get into the sunshine made all the difference in my recovery. That's really when Sow Texas was born. I knew I wanted to sow the confidence into people that they could raise their own food and take control of their own health. Mentally and physically.

Chloe: When the pandemic came, I saw there was an actual need for what I wanted to do, a silver lining. Ever since, I have shared my bunnies, my garden, and my seeds with anyone who wants to visit our homestead. My true goal is to be an example that anyone and everyone can homestead, we can all Sow Texas! I make breads and pastas that I sell exclusively at the Riverfront Farmer's Market in Port Neches. I see these homemade goodies as an extension of that mission. I want to have a part in changing the food narrative that says we need to depend on super chain stores for delicious, ready-made foods. I say we can depend on each other and our community to sustain our families.

VEGETABLE PASTA

Homemade pasta can be intimidating, but a fresh, rustic noodle recipe like this one is incredibly forgiving! I love this recipe because it colors the noodles without artificial food dyes and adds an extra punch of nutrients to your pasta dish! These noodles are delicious when dressed with a simple mix of butter, parmesan cheese and coarse salt. You can also add crispy chunks of bacon and sautéed spinach leaves when using it as a main course.

Ingredients 2 Fresh egg yolks 1 TSP salt 1cup + of All Purpose Flour 1cup + of Bread Flour 1 TBS + of Olive Oil Thawed and drained chopped spinach OR boiled and drained fresh spinach

1. Squeeze as much water out of your spinach as possible. Puree your spinach until it is a paste, the smoother the better.

2. Pile flour onto a large cutting board or in a large bowl, then create a well in the center (think volcano).

3. Add yolks, salt, olive oil, and ½ cup of the spinach paste to the well, start whisking the center of the well until the sides of the well start gradually pulling in. Continue mixing until your dough will hold shape. **If you have a mixer with a dough hook, you can complete this step in the mixer!

1. Knead your dough until it is the consistency of playdoh and smooth. If your dough is too crumbly add more olive oil or spinach paste, if its too wet add more flour. The key is to add small amounts of moisture at a time (about 1 TBS) then thoroughly kneading before adding more.

2. When your ball of dough is tight and smooth (10-15 minutes of hand kneading), coat it with olive oil and wrap in a SLIGHTLY damp towel. Let rest on the counter for 30 minutes.

3. Unwrap dough, cut the dough in half and rewrap one half. Lightly sprinkle your work surface with flour and roll out the other half of dough with a rolling pin until your pasta sheet is about 1/16 to 1/8” thick. Your dough will expand when it cooks, so thinner noodles when raw is better. Oiling your rolling pin before hand will prevent sticking.

4. Gently fold up your pasta sheet (accordian style) and slice into ¼” wide strips with a sharp knife.

Sprinkle noodles with flour and toss. Repeat on second half of dough.

5. Bring salted water to a boil and add a few handfuls of pasta. Boil for 3-5 minutes. Your pasta is cooked through when the center of the noodle is no longer white when cut. Drain and serve.
