i. Campus Dining Marketing Manager Lexis Meehan and Campus Dietitian Simone Gmuca
1. Lexis: Today we will talk about dining on campus. We just updated our team posters and they will be going up where you can see all of our names, titles, and emails. We just got Fernando back, our new director of operations. He has been doing a lot of great things.
2. Simone: I am the campus dietitian. I deal with healthy eating, dietary restrictions, and allergies. You are always free to schedule an appointment with me. We have “ask an ingredient expert” signs up and we started pushing this in the fall to highlight transparency regarding what’s in our food. You can ask me or the chef at that location. They will give you labels, packaging, and so on if you have any sort of accommodations that you will need. We do monthly newsletters regarding dining events and healthy recipes. Around campus, I also host events along with Lexis like teaching
kitchens, which are healthy cooking demos. We do these for clubs, teams, and so on. It is a healthy way for students to learn how to cook. I have gone to dorms and the rec center to host demos to show face and bring awareness to nutrition on campus. We do collaborations with campus rec and others to bring awareness to healthy eating and to get students to learn how to cook and get meal recipes.
3. Lexis: 5 years ago, we had 3 boost locations, now we have 17 and counting. We also have boost interns and we have yearly winners. Anytime you have boost questions, you can ask our intern. In February, we have the 20% off after every 3rd order promo and Hofstra is the first school doing this. We want this feature to be full-time. Hopefully with your feedback we can make this happen once collecting all the responses and data. It seems like it has been working really well. We also implemented a supper club this year. It is a new upscale event at the University Club. We did an Italian themed, Thanksgiving, and Valentine’s for 35-40 dining dollars per person. It was great seeing a lot of first-year students meet friends. People painted figures and there were games. Our caterer and chef are absolutely amazing. We have had great success in terms of this being a national program. We had 45 students for Valentine’s event and close to 50 for Thanksgiving. We are coming back for Eats Around the World with SGA and finalizigng the details, with marketing going out soon, we are up to 8 clubs. We love seeing all the foods offered and all the students come. We have sweet treat Wednesdays for March including sundaes and fruit cups. We have our TikTok and Instagram @eatingathofstra. They ran out of jalapeno poppers due to the storm but I was able to make sure that they are back. You can text me anytime and I will answer as quickly as possible. I have been able to change out Celsius flavors upon request. Our campus dining website was refreshed this past summer and you can find our hours and menu. I put full plate at the top of the menu bar and you can find nutritional information. Everything is always fully updated and you can go to any location to see what is happening at rotating stations. There are many great resources to look at and you can send us feedback on the website. We have our Karaoke Night coming up on 4/15 and our Late Night Breakfast on May 11th.
4. Senator Pierre: The biggest question is that on boost you cannot put in notes to specify how you want an item?
a. Lexis: I am meeting with the boost developers on this matter and it is a common issue that they say they have been working on. We have been adding details for allergens.
5. Chair Peri: About hours during break, I was concerned about everything that was closed like Dutch Treats, HOFUSA, and in the Stu. Some people cannot leave for home. How can hours be increased? Usually on finals week nothing is open on south campus.
a. Lexis: Our higher-ups work with Hofstra, I can bring this up. It is dependent on budget and trends from previous years.
6. Senator Smook: During the snowstorm, many places were not open from what I heard. If this happens again, is there a workaround for students stuck on campus?
a. Lexis: We worked hard to make sure we had certain locations open like the Stu and Nethies. We had chefs stay in their office and we are working as hard as possible. Managers picked up local associates in trucks and the older generation is determined to keep business open. It can be tricky but we always try to make sure everything is open and it can get out of our hands.
7. Chair Iacobovici: About Paper Lantern, it is now kiosk ordering and I know why but I feel like it is really not working as well because I am getting less than I did before. The sweet and sour chicken is gone.
a. Lexis: I wanted to create a value meal there. We saw theft and students not going there because of the convenience of the kiosk ordering, which is why we switched to kiosk ordering. We are looking at adding a value meal and I have tested mystery shoppers to see how things are weighed by the ounce.
8. Chair Dzaveluri: I know you meet with students, what is the pattern of issues you have noticed and what is campus dining doing to fix these issues?
a. Simone: It is a case-by-case basis. Many new students ask about eating healthy away from home or about allergy concerns. I lead all of our staff throughout allergen training, so I would say allergies is the biggest concern.
9. Senator Mansour: Why is halal shack closed on the weekends? Many Muslim students struggle with this
a. Lexis: We usually have grab and go for these locations, I can bring this up.
10. Senator Pierre: Why in certain areas do portion sizes not reflect price? It can be $8.50 for tenders or wings and it comes with nothing else on the side and you get a relatively small portion.
a. Simone: With costs it can be frustrating, but we have to base prices off what is realistic based off what we buy supplies for. That is not what we do but our team is in charge with fair prices to accommodate food portions. Everything is going up price-wise. We have to ensure a balance.
11. Senator Smook: The fries at Bits are different from other places. Is there a way to make it consistent?
a. Lexis: I would say Bits fries are better. We try to keep places different to ensure you will get to different places to ensure not everything is the same. We have brought it up to the team switching it up.
12. Chair Ahmad: During orientation there was an issue with halal meat and how it was labeled? Have specifications been made and changes made to the labels to ensure staff knows about the differences?
a. Simone: I am not too sure about that but our culinary team took a deep dive into the menu to ensure labelings are correct. Some things get lost in translation but we went through everything really thoroughly. We are introducing the ingredient expert program and I will be there at orientation. Ingredient experts are trained in the area of knowledge they have.
13. Senator Araba: As a commuter, you have a plan for around $630/semester. I run out and have to add halfway through the semester. Is it possible to increase the value of the commuter plan so we can know at the beginning of the semester?
a. Lexis: As a commuter you can pick any dining plan. ResLife makes the dining plans. I can bring this up to our higher-ups who can talk with Hofstra who sells the plans. You can keep adding more to your balance, which is your workaround for now. Most commuters actually think there should be a cheaper plan.
14. Chair Malhotra: How do you make sure healthy and unhealthy options are balanced? With the addition of Yellas, there will be a lot of fast food.
a. Simone: A lot of times we will hear students want healthy food and no one buys it. We also get complaints sometimes when something fried gets taken away. We make sure at each dining area there is always a healthy option. You can ask for items grilled instead of fried or for whole wheat bread. You can easily miss the healthy things. I am always finding healthy things here and I review on a semesterly basis based on government recommendations.
15. Senator Mansour: There are many incidents of food poisoning? What can be done on food safety requirements?
a. Simone: We have procedural requirements like temperature logs and thermometers in the chicken. Anytime we get reports we take it seriously but it can get tricky as it would be the entire student population getting really sick. If it is an isolated situation it can be an intolerance or bacteria from another area. You can email me and I can see if anyone else is having similar issues. We are feeding hundreds of people everyday and we are taking precautions.
16. Senator Pierre: You said we switched to kiosks to avoid poisoning and I wanted to know how you guys handle cross-contamination? I wanted to bring attention to full-plate and how quality control is handled? How do you guys prevent death and do you know statistics?
a. Simone: On cross-contamination, it is hard to control at full-plate and the salad bar. Cross-contact is much more likely to happen there. If you are extra careful, a manager will get you what you want from the back where items are stored separately. We follow all government regulated standards on temperature and timing. We log things every 30 minutes and if cross-contact is a concern, ask for food from the back.
b. Lexis: There is one section that is all vegan at the salad bar. It is on the opposite side of the meat.
17. Senator Pierre: A lot of times for boost it will say stages of the order. A lot of times it will say the order is ready earlier than it is?
a. Lexis: You can send me the place and the day and time. It could be something on the back end and I know Dunkin’ has issues with being backed up.
18. Chair Chauhan: Can we get ranch at HOFUSA? You have to ask for it on items.
a. Lexis: Yes, we can order a pump.
19. VP Young: We have some suggestions for Compass. You had coconut cake and I would like it back. Empanadas chicken and cheese, tater tots at HOFUSA, broccoli and cheddar soup at ABP everywhere, and buttered chicken mac and cheese at full plate.
a. Lexis: ABP is a dying franchise, so this would be beyond our control. Soup will be at bits. ABP will at least be here through at least next Fall.
20. Chair Orellana: Mashed potatoes everywhere
21. Senator Chacon: More sauces in the Nethies. There is only one ketchup pump. Can we bring back pupusa night in the Nethies?
22. Chair Chauhan: Can full plate be diverse and more international?
23. Senator Smook: The empanadas should be on the Copperhead Jacks menu.
24. Chair Denson: Cookie Sundae at HOFUSA and buffalo chicken pizza at Brooklyn Slice.

27. Senator Vazquez: There should be a chipotle sauce pump at HOFUSA and can the chefs be diversified? I really like the ones at the Nethies and I feel like they should ask about experiences everywhere.
28. Senator Ehrlich: You had fried popcorn shrimp. Also, I wish the fountain drink machines had more of a variety.
a. Lexis: There is a fried shrimp basket on Fridays at True Burger for Lent.
29. Senator Mansour: The lids on the drink cups are loose.
a. Lexis: We’ll look into that.
30. Senator Pierre: How do you promote the healthier options? Is there a way to put Delicious Without on the app? Everytime I wanted to find it, it took me a lot of scrolling. How do you decide on the rotations at full plate? Do the chefs come together and decide? It feels as if the food here is trying to fill me up rather than being nutritious?
a. Simone: You could be missing some nutrients and we could meet on this. On the decisions regarding what is served, the chefs discuss based on what students like and what is in season. Also, pricing is a factor and they like to get creative with what they have. Delicious Without should be up on Dine on Campus everyday. On boost, I am not sure.
b. Lexis: Delicious Without, entrees and side rotate everyday and we do not have control over this on the boost app. Boost was here yesterday and they are working hard to get systems integrated. There are two different numbers to program things on boost and the kiosk. With a campus that has over 2000 items and 10000 modifiers, things fall through the hoops and we can miss a few things. I know the hot chicken was missing from boost but it was on the kiosk and I had to get in contact with the managers. We are hoping by this summer we have a centric OS where everything is operating on one platform as we would have full control on turning them on and off.
31. Senator Subramanian: Can you make a meal plan for students? I ate the same protein bowl at Freshens as I did not know of much else. Could students come to you and give you what they eat and help them customize it?
a. Simone: Yes, I work with students on goals and we can meet.
32. Senator Chacon: The roasted asparagus is the best thing at the salad bar and it should come back.
a. Simone: Asparagus is in season in the spring, so I will make sure of this.

1. Chair Peri: These are our Spring policy revisions. We switched to an online platform for budget weekend and weekly meetings. In section A3, we are clarifying forms are required and that it is by the appropriations chair. We are cutting section B. We are removing “committee” from A6. We are clarifying that we use budget submissions rather than cover sheets. We are fully cutting B2 based for exceptions based on club categories and clarifying
that you need to complete treasurer training to get a budget. We moved a section about partial funding and edited wording about budget appeals being at the first meeting of the following semester. For retreats, we are changing wording regarding food allocations. We moved the clause about conferences up to put them below retreats as they are similar.
a. Chair Dzaveluri: For budgets, do we specify how late is too late? Why do we not start at 25% and instead have no budget for pride clubs?
i. Comptroller Skeldon: It is set by the appropriations chair and this is in another section. For pride clubs, they do not get priority anyway and it makes sense for them to come for a weekly allocations meeting.
b. Senator Pierre: For blue clubs, do they get 50% automatically? Do you plan to tell treasurers about these changes?
i. Chair Peri: If a blue club wants 1000, the maximum they can get is 500 and this is not a guarantee. I will send out an email and transparency should be a thing.
c. Senator Vira: What is this semester’s deadline?
i. Chair Peri: end of day 4/3
d. Chair Peri: We had to overturn policy for coach buses and the way we interpreted this is wrong. We thought we could not fund a coach bus at all, but you can get tickets.

Added in senator liaison program to increase senate participation and also associate liaison. Discusses the position and helping newly-recognized clubs transition.
