LOCAL PEOPLE

Ali Carlyle is head chef at Carlyle’s Bar and Kitchen in Balerno. He got his start in catering at age 15, and since then has taken advantage of every opportunity to learn different methods and styles of cooking. His vision for a small, sustainable fine dining restaurant with a personal touch has come to fruition in the recently opened family business. Ali and his partner Elaine live in Balerno with their dog, Jess. He enjoys hillwalking and cooking roast dinners.

“Intentionality” is not the first word that comes to mind when I think about young people starting out in a career. But after talking with Ali Carlyle, I was struck by how intentional he has been in taking the steps that have led to his current position.

Just 24 years of age, Ali has trained as a chef by making a series of strategic decisions. Catering for Scottish Parliament as work experience led to a part-time job there. He then worked for a temp agency, giving him opportunities to cater for large events at the Highland Show grounds, as well as smaller restaurants, where there was more emphasis on finesse.

Ali enrolled in a three-year catering course at Jewel and Esk College (now part of Edinburgh College), but was able to enter at year two, because of his experience.

Although he liked being in a place where he could learn in-depth, Ali had a desire to move at a faster pace. “When I was younger I just wanted to take in everything I could, as fast as I could,” he says. “Fortunately I got a job at Hilton’s Point Hotel, and I was able to complete my college qualification in-house by working for them.”

After about a year and a half, Ali was presented with an opportunity to work at Iggs and Barioja in Edinburgh. One kitchen supplied the food for both a two-rosette Spanish restaurant and a 145-seat tapas restaurant. Honing his skills, Ali discovered he was more attracted to the fine dining side.

Because his skills were transferable, Ali decided to see what he could learn about cooking in another culture. At age 19 he travelled with a friend to Australia, where he landed a job with a fine dining restaurant in Sydney. He later worked at a seafood restaurant in Cairns, a steak house in Airlie Beach and a large hotel in Brisbane, before enjoying a campervan holiday in New Zealand.

He returned to Edinburgh in June 2014, planning to stay for a short time and then head for France. But a temporary stint helping his parents develop the Letterbox Bistro evolved into a much bigger venture.

Together with Steve and Sharon, Ali developed a business plan for Carlyle’s Bar and Kitchen. Uncertainty about whether or not the post office was going to be relocated made it difficult to plan, but eventually @KonectMagazines

a “local model” contract was signed, allowing them to move forward.

Ali’s partner, Elaine, joined the staff two years ago. “With front of house experience, Elaine has been instrumental in helping me to develop the restaurant,” he says. “Our aim was to get to 28 seats, which would allow us to retain the already-established close-knit, personal touch.”

During the refurbishment, structural walls were removed to create more internal space. But the building’s character was retained by exposing the original stone walls dating back over 100 years. Ali’s brother, a joiner, got involved as did his graphic designer sister-in-law and his painter/decorator uncle. On 15 June 2018 the new restaurant opened its doors.

“Now that things have settled, we are adding to our staff,” says Ali. “Our sous chef just started, and we are looking to hire a commis chef. A bigger team will make it possible for us to open up to seven nights a week.”

Ali describes his cooking style as “modern British, underpinned by Scottish produce”.

His menu includes options for vegetarians, vegans and gluten-free patrons. He is committed to working with local suppliers, and buying meat from high-welfare farms.

“It’s important to us to be sustainable,” Ali explains. “So we recycle, compost, and use glass instead of plastic bottles. We have an allotment up at Harmeny School, so we control the quality of the vegetables we serve.

“We don’t take shortcuts. I’ve learned how important it is to be involved in the whole process – from growing to cooking to plating. If you want to serve quality food, you have to start with quality products.”

Proprioception

– Is Yours A Problem?

How many senses do we human beings have? The obvious answer is five - we were all taught about sight, hearing, taste, smell and touch at school – but we have many more. Other senses include theromoception (hot/cold), nociception (pain) and proprioception (body position).

All our senses contribute to our health and well-being but proprioception is of particular importance to everyone who participates in sport or likes to keep active.

Good body awareness is known to reduce injury rates whether you play sport or not.

So, what is proprioception and how do we train to improve it?

The Science Bit Specialised sensory receptors are located in our joints, muscles and tendons. These organs, which can collectively be known as “proprioceptors”, send information in the form of nerve impulses to our conscious and subconscious central nervous systems.

They relay information about our limb positions, joint movement, vibration and pressure. This allows any sequence of 16 | THE DELL

movement to be continually monitored and then modified if necessary.

However, after acute injuries such as muscle pulls or joint sprains and after overuse injuries such as tendinopathy, these nerve endings and nerve pathways can be damaged. The proprioceptors become slow to respond to changing position and this resulting decrease in joint position sense causes decreased co-ordination, poor balance and can lead to falls. This means that after any limb injury, proprioception should be re-trained. However, researchers suggest that 75% of people with an ankle sprain have had previous injuries which have not been fully rehabilitated.

This is a huge statistic and represents unnecessary injuries as proprioception can be easily improved. Remember that minor injuries now long forgotten may have left you with proprioception that is less than perfect.

What do proprioceptive exercises involve?

Exercises to help may include standing still with one foot directly in front of the other as if on a tightrope. You may find it is much easier with one foot in front than the other. Exercises may involve standing still on one foot for 30 seconds, but try this safely, near a wall to hold on to if you wobble. Balance exercises can be walking on your toes or your heels, or may involve more dynamic sports related skills such as hopping, jumping or throwing and catching. Any training exercise must be safe and appropriate for you so if you have any concerns, seek advice from your Physio or Doctor before you try any of these exercises. There is no doubt that a good proprioceptive sense will reduce injury chances so it is worth a few minutes practice to make sure yours is up to scratch.

PS The answer to the very first question – the number of senses we have depends on which neurologist or psychologist you ask.

There are defensible answers for 3, 9, 21 or 33 depending on the definition of “Sense” 5 is definitely wrong!

LYNNE’S COLUMN

Remember , remember, it’s only Last month I mused over alternative ways to enjoy October so this month I was interested to know of other ways to mark November rather than the traditional but obvious Guy Fawkes night.

A quick Google search of celebrations around the world revealed an interesting one - Plan Your Epitaph Day - created by a man called Lance Hardie in 1995 to coincide with the Day of the Dead on 2nd November.

Despite being a fairly morbid prospect, this was used as an exercise in a famous self-help book, The 7 Habits of Highly Effective People, where the author, Stephen Covey, suggested that we “Begin With The End in Mind” and imagine how we’d like to be remembered by others as a way to help us work out our life’s goals and values.

It’s quite sobering to ponder for a moment how we’d like others to perceive us. Do we want to be known as a successful businessperson, a loving parent, a great cook, a fantastic singer, a friendly face or a listening ear? And if we dig a little deeper into ourselves, how @KonectMagazines

much do our daily lives actually reflect these skills or traits? Do we make time to practise our favourite pastimes, to spend quality time with family and friends and to do more than just maintain our children?

Or do we often find that time runs away with us and we’re left with the feeling of never quite getting to be where we want to be?

With still a couple of months left to the year what better time to pause awhile and allow ourselves to take a breath. Ask ourselves whether or not we’re really living up to our perceived reality of who we are or if all too often we don’t allow ourselves the time to fully be the people we want to be.

Why not spend November identifying at least one thing that you’d like to achieve before the year is out?

Whilst the nights may well be longer and darker, the days in November are often

crisp and bright. There are so many opportunities to enrich our lives on our own doorstep. Go for walks with family or friends in the Dell or along the canal, enjoy some fitness classes in the local church halls, research a new hobby or just enjoy a good read courtesy of your local library. Begin November with the end of the year in mind and take some steps to ensure that this year will be one to look back on with pride and satisfaction in achieving your goals.

CVE has had a busy year this year, with a new Tea in the Park event in May, and more recently a very successful Art in the Park’ with two additional community events to organise before the year is out!

Colinton Village Events Group has also joined forces with another local organisation, Colinton Village Ventures (formed in 2016).

Together, as Colinton Village Enterprise, we have been pursuing the acquisition of the outbuilding in Spylaw Park as an asset transfer under the Community Empowerment Act. Much fundraising and public support is required if we are to succeed in purchasing and refurbishment this asset, so that we can develop it into a community hub for widespread usage and enjoyment. Following on from the popularity of Tea in the Park earlier this year, and our most successful bookstall to date at September’s Art in the Park, CVE will be hosting a pop-up event combining the two, in the Shed in Spylaw Park on Saturday, 17th November.

A huge and varied selection of pre-loved books will be available to purchase at bargain prices. Any books you would like to donate can be left at Downes Greengrocers (Patsy’s) at Bridge Road, Colinton prior to the event, or brought down to the park on the day, ideally between 10am and 11am. We’ll also be selling our fabulous mugs to enjoy with your tea!

CVE members will be on hand to chat to about the “Shed Project” - or anything else for that matter!

Christmas on the Corner CVE’s annual winter fair, Christmas on the Corner, is scheduled to take place on the evening of Wednesday, December 12th in The Dell Room of Colinton Parish Church, Dell Road, from 6pm to 8pm.

You will have an opportunity to meet our lovely, local Alpacas and hand-feed them! So why not join us, take a selfie or two and enjoy this up-close and personal experience.

Indoors, you can expect live musical performances with mulled wine, hot cider and mince pies. CVE will also run festive tombolas and raffles.

The Stableroom Playgroup will provide hot chocolate, teas & coffees, with home baking.

Santa and his elf helpers will be on hand for the wee ones, plus a chance to avail of Santa’s special post-box for those allimportant letters.
