LOCAL PEOPLE

Ali Carlyle is head chef at Carlyle’s Bar and Kitchen in Balerno. He got his start in catering at age 15, and since then has taken advantage of every opportunity to learn different methods and styles of cooking. His vision for a small, sustainable fine dining restaurant with a personal touch has come to fruition in the recently opened family business. Ali and his partner Elaine live in Balerno with their dog, Jess. He enjoys hillwalking and cooking roast dinners.

“Intentionality” is not the first word that comes to mind when I think about young people starting out in a career. But after talking with Ali Carlyle, I was struck by how intentional he has been in taking the steps that have led to his current position.

Just 24 years of age, Ali has trained as a chef by making a series of strategic decisions. Catering for Scottish Parliament as work experience led to a part-time job there. He then worked for a temp agency, giving him opportunities to cater for large events at the Highland Show grounds, as well as smaller restaurants, where there was more emphasis on finesse.

Ali enrolled in a three-year catering course at Jewel and Esk College (now part of Edinburgh College), but was able to enter at year two, because of his experience.

Although he liked being in a place where he could learn in-depth, Ali had a desire to move at a faster pace. “When I was younger I just wanted to take in everything I could, as fast as I could,” he says. “Fortunately I got a job at Hilton’s Point Hotel, and I was able to complete my college qualification in-house by working for them.”

After about a year and a half, Ali was presented with an opportunity to work at Iggs and Barioja in Edinburgh. One kitchen supplied the food for both a two-rosette Spanish restaurant and a 145-seat tapas restaurant. Honing his skills, Ali discovered he was more attracted to the fine dining side.

Because his skills were transferable, Ali decided to see what he could learn about cooking in another culture. At age 19 he travelled with a friend to Australia, where he landed a job with a fine dining restaurant in Sydney. He later worked at a seafood restaurant in Cairns, a steak house in Airlie Beach and a large hotel in Brisbane, before enjoying a campervan holiday in New Zealand.

He returned to Edinburgh in June 2014, planning to stay for a short time and then head for France. But a temporary stint helping his parents develop the Letterbox Bistro evolved into a much bigger venture.

Together with Steve and Sharon, Ali developed a business plan for Carlyle’s Bar and Kitchen. Uncertainty about whether or not the post office was going to be relocated made it difficult to plan, but eventually @KonectMagazines

a “local model” contract was signed, allowing them to move forward.

Ali’s partner, Elaine, joined the staff two years ago. “With front of house experience, Elaine has been instrumental in helping me to develop the restaurant,” he says. “Our aim was to get to 28 seats, which would allow us to retain the already-established close-knit, personal touch.”

During the refurbishment, structural walls were removed to create more internal space. But the building’s character was retained by exposing the original stone walls dating back over 100 years. Ali’s brother, a joiner, got involved as did his graphic designer sister-in-law and his painter/decorator uncle. On 15 June 2018 the new restaurant opened its doors.

“Now that things have settled, we are adding to our staff,” says Ali. “Our sous chef just started, and we are looking to hire a commis chef. A bigger team will make it possible for us to open up to seven nights a week.”

Ali describes his cooking style as “modern British, underpinned by Scottish produce”.

His menu includes options for vegetarians, vegans and gluten-free patrons. He is committed to working with local suppliers, and buying meat from high-welfare farms.

“It’s important to us to be sustainable,” Ali explains. “So we recycle, compost, and use glass instead of plastic bottles. We have an allotment up at Harmeny School, so we control the quality of the vegetables we serve.

“We don’t take shortcuts. I’ve learned how important it is to be involved in the whole process – from growing to cooking to plating. If you want to serve quality food, you have to start with quality products.”

Benefit 1: Shutters keep the warm air in If you want energy efficient windows, one of the best things you can do is to install shutters.

Around 25% to 50% of the heat our radiators output is lost through windows, but with shutters closed at night, you can insulate your windows really well. In fact, a study by Edinburgh World Heritage discovered that you could almost completely stop heat leaking through large Victorian, Edwardian and Georgian windows just by closing shutters. They used a thermal imaging camera to show where heat was escaping from a house. BBC News also covered the story, reporting that closed wooden shutters ‘act like double glazing’.

Benefit 2: Shutters keep the cold air out Forget about heat escaping for a moment – what about cold air getting in through tiny gaps in frames? Shutters are a great way at cutting down on draughts – simply close them up at night for a wonderfully insulated home.

Benefit 3: Shutters save money on your heating bills With less cold air coming in and virtually no heat escaping, you can turn your thermostat right down, reducing your heating bills. It’s a win-win.

Benefit 4: Shutters keep your rooms private When it gets dark early, your neighbours have the perfect opportunity for a good nose into your well-lit living spaces, right? Wrong. With shutters, you can tilt – or completely shut – the louvres so that your rooms remain obscured or unseen.

Benefit 5: Shutters let the light in Woken up to a bright winter morning? Or perhaps it’s a crisp winter evening? Tilting your shutters will allow you to control and maximise the light that’s coming in – letting in the last of the evening’s rays and making the most of those rare sunny days. @KonectMagazines

Benefit 6: Shutters reflect light - Wonder what we mean about maximising the light? Shutter louvres have a reflective surface and, if you tilt them to just the right angle, you’ll reflect more light into the room. When they’re shut, they reflect artificial light, too.

Benefit 7: Shutters don’t suffer from condensation like curtains do - If your home’s not well-ventilated, condensation might be a problem in winter. Shutters don’t suffer from mould-growth like curtains do, and are easy to wipe down and maintain. What’s more, you’re more likely to open your windows in winter if you have shutters to let in just a trickle of fresh air.

Benefit 8: Shutters are low maintenance Talking of wiping down your shutters… you’ll find after months of everyone being indoors all the time during the cold snap, your shutters need little more than a wipe over with a damp cloth or duster to get them looking as good as new. Trips to dry cleaners with bulky curtains – and a week without window dressings as a result? With shutters, those days are over.

BREXIT AND GLOBAL UNCERTAINTY: NOW WHAT FOR PENSIONS AND INVESTMENTS At present, the UK and indeed the world is full of uncertainty for the global economic future. As such, there has never been a more important time to make sure your pensions and investments are in good order.

The movement of the markets since the Brexit vote are a good indicator of things to come over the next few years. As I write this, the FTSE has just dropped 6% in the last week having been close to the all time high 1 month ago.

There as some basic things you can do to ensure your investments make it through and benefit as much as possible.

1. Diversification is the name of the game.

Your money should be spread across all the major developed economies and in all major asset classes. All your eggs in one basket will lead to disaster.

2. What level of risk are you invested at? Make sure it is right for your needs, your aims and your tolerance.

3. How much are your investments costing you? Check to see the overall cost of ownership and assess against other peer groups.

4. Performance: this goes hand in hand with cost of investment. Some funds are worth the cost, others are not. Make sure the performance delivered justifies the cost.

5. Don’t panic, this is just another hiccup in the long journey of economics and investment. When considered in the 30 year picture, it will not even register.

CHARITY OF THE MONTH

Having been a breast cancer patient at St John’s in Livingston, and supported by a local charity to help her through it, West Lothian resident Hazel Orr was saddened to learn that the charity was closing.

“I didn’t want women, and men, going through what I did without the help I had benefited from,” says Hazel. So along with her sister Mandy, mother Sylvia and daughter Holly, in April this year she set up “Breast Friends and Family,” a charity to help support patients and their families facing breast cancer diagnosis and treatment at St John’s.

Breast Friends and Family support the 150 or so patients (mostly women) who go through treatment for breast cancer at St Johns every year.

“We want to provide patients with the little things that the NHS are not in a position to, things that make a difference to each individual and to how they feel about themselves,” explains Hazel. “We also want to be in a position to do something for the families of those diagnosed with breast cancer, to help the children and husbands or wives deal with what their family is going through.”

“I was diagnosed in June 2015 and spent the next year going through surgery, chemotherapy, radiotherapy and then surgery again just before Christmas 2016.

Throughout my treatment and recovery I was lucky enough to have the support of Bosom Buds, a local charity - support that I didn’t even know I needed! Sadly this charity has now closed, hence we have started Breast Friends and Family.”

Working closely with the oncology nurses, they have developed a “goody bag” to supply to every patient. It includes mastectomy bras for those facing breast surgery, headscarfs for those losing their hair due to chemotherapy, cooling towels and creams, a support cushion (“this @KonectMagazines

was a huge emotional as well as practical support to me, as when I saw the cushions on other women’s beds I knew they were going through exactly the same thing”) and plan to include other items as and when funding allows.

“We would love to be able eventually to offer the services that the other charity provided, including eyebrow tattoos for women who lose all their hair, special exercise classes and so on. But we’re starting from scratch with the funding, and are focussing on the goody bags for now.”

Constantly raising funds is hard work, and they will need ongoing support. So far, Breast Friends and Family have benefited from friends and family raising funds through antique fairs, exercise classes and selling donated wigs, and they have organised a number of events coming up in the next few months.

WHAT’S ON

Remembrance 2018 – Centenary of the Armistice Balerno Parish Church will commemorate the Centenary of the ending of the First World War with a series of events culminating in the Service of Remembrance on Sunday 11th November, exactly 100 years after the coming into effect of the Armistice at the 11th hour of the 11th day of the 11th month of 1918.

Our commemorations will include talks, exhibitions, concerts and films, all directed at remembering and retelling.

By remembering and honouring the memory of those involved and those to whom memories were passed on, we hope to enable a better understanding of past times so that we may have a firmer commitment in future to ensuring that war may be avoided.

The Exhibition will include articles, medals, photographs and books, along with story boards drawn up from the memories of local people drawing on their own personal experiences as well as the stories passed on to them by parents and grandparents, relatives and friends. Some of the material will be on display in St Joseph’s Hall after the close of the Exhibition, on Saturday and Sunday 10 and 11 November.

It is a sobering thought that the ‘war to end all wars’ did not achieve that promise and that within 21 years the Second World War had erupted and would continue for six years until 1945. We not only owe a continuing debt to honour those who served in those wars, and in the other conflicts which have marked the last hundred years, but we also have a duty to ensure that their stories are remembered and that we learn from them.

With Halloween now been and gone the next big thing on everyone’s calendar is of course... Christmas! There are a variety of festive (and non-festive) events coming up for all tastes this month.

For the adults, a night of wine tasting takes place at Linlithgow Burgh Halls on November 9th.

Now into its fifth year, the Five Sisters Zoo illuminations also take place this month. The official switch on is Saturday 10th, with displays on a variety of evenings during November and December (see our website for full details). This is a great opportunity to see the zoo in a whole light!

Over at Blackness Castle, you can go join them for a “Winter Warmer” on the 11th – The rangers will lead a guided walk which will provide an opportunity to learn about the castle, birds and wildlife in the area.

Towards the end of the month, in Linlithgow’s ever-popular advent fayre takes place on Saturday 24th. The annual event is a great day of festive fun, with a craft fair with the day ending at 5pm for the Grand Torchlight Procession. The procession finishes in time for the Christmas tree lights switch on outside Burgh Halls.

If you’re thinking of getting some Christmas shopping done, Hopetoun House’s Christmas Fair takes place on Friday 30th to Sunday 2nd December. Avoid the hustle and bustle of the high street with a trip to Hopetoun House, with glorious surroundings and a wide selection of gifts for all tastes!

Mincemeat Sponge Puddings

Rich and fruity

With Christmas just around the corner there will be plenty of jars of rich and fruity mincemeat in the shops – perfect for adding to mini sponge puddings.

Ingredients:

• 115g unsalted butter, softened, plus extra for greasing • 6 tbsp good quality mincemeat • 115g caster sugar • Zest of ½ orange or lemon • 2 medium eggs, beaten • 125g self-raising flour, sifted • 1 tbsp milk

Tip:

Spice up the sponge mixture by adding 2 tsp ground cinnamon and ½ tsp ground nutmeg instead of the orange or lemon zest and replace the caster sugar with light soft brown sugar, if liked.

Serves 4 Ready in 1hour 10 minutes

Method: 1. Thoroughly grease 4 x 175ml pudding basins with butter. Divide the mincemeat between the basins.

Preheat the oven to 190C/fan 170C/gas mark 5.

2. Place the butter and sugar in a bowl and beat together until pale and creamy. Beat in the orange or lemon zest then gradually beat in the eggs, adding 1tbsp of the flour if the mixture starts to curdle. Fold in the rest of the flour with the milk to give a soft dropping consistency.

3. Divide the mixture between the pudding basins and cover each with a square of pleated buttered foil, scrunching it tightly around the sides of each basin.

Transfer to a large roasting tin and pour in enough boiling water to come halfway up the sides of the basins.

4. Bake for 45-50 minutes or until risen and firm to the touch. Leave in the basins for 5 minutes then turn out onto serving plates. Serve with cream or custard, if liked.

You will be serenaded by Currie High School’s very own choir and acapella group. You could visit Santa’s Grotto and tell him what you would like for Christmas. You can have your face painted, win a treat in the raffle and rest and relax in the café with a refreshment.
