Growing up, my father had a HUGE garden. We spent hours picking rocks each spring as he tilled the soil. I always wondered why we planted so many rocks! But, it was from that garden that we ate fresh vegetables nearly all summer. And, we canned and froze as much as we could to eat during the winter. Gardening was an all-hands-on deck activity for us. I considered myself fortunate as a parent that my kiddo was not a picky eater. Sure he had his preferences. We all do. But, he would devour a pile of broccoli or asparagus, and it wasn’t unusual for him to eat the vegetables on his plate before anything else. So, parents of picky eaters, I feel for you. I know it can be a struggle. In this issue, you’ll find a list of local farmers’ markets and some great tips on healthy snacking. Involve your kids in picking out fresh farm-to-table food options and making healthy snacks. As always, you’ll find two jam-packed pages of kid events and listings for summer movies in the parks. Never a dull moment around the greater Springfield area. So, get out and pick up some seeds and containers. Start small and see where your home garden leads. |

Healthy Snacking Tips for Kids A better practice is to snack from portion-controlled baggies or bowls. Children do well with a routine meal and snack pattern and offering snacks at regular times each day will allow your child to decide if a snack is desired. It’s important to discuss good nutrition and the benefits of healthy snacking with children. Consuming too many snacks with high amounts of fat and sugar may lead to health concerns. Developing a healthy snack list together will increase your child’s acceptance and willingness to snack on healthy snacks. Snacking on the right foods at the right times can play an important role in improving your child’s nutritional well-being.

Snacks can play an important role in meeting kids’ nutrient needs. Choices of snacks and timing are important. A well-timed snack at least one or two hours before meals can boost energy and provide additional nutrition for children with smaller appetites. For children with normal or larger appetites, a small snack between meals may prevent overeating at meals. Portion control is also important when snacking. Snacking from a large bag or a box of treats is not recommended. A grazing-style of snacking makes it difficult for children to determine when they are truly hungry, and this may contribute to weight control problems later.

Help Kids Create Healthy Snacks Parfait: Layer vanilla or plain low-fat yogurt with fruit and dried cereal. Toasted Whole-grain Waffle: and top with low-fat yogurt and sliced

fruit or nut butter.

Strawberry & Banana Smoothie: Blend low-fat milk, frozen strawberries,

and a banana for 30 seconds for a delicious smoothie. Sandwich Cut-outs: Make a sandwich on whole grain bread. Cut out your favorite shape using a big cookie cutter. Eat the fun shape and the edges. Mini Pizza: Toast a whole wheat English muffin, drizzle with pizza sauce, and sprinkle with low-fat mozzarella cheese Frozen Treats: Mix equal amounts of fat-free plain or flavored yogurt with 100-percent fruit juice. Pour into paper cups and freeze for a tasty treat. Quesadilla: Sprinkle shredded cheese over a corn or whole-wheat tortilla. Fold in half and microwave for 20 seconds. Top with salsa. Tortilla Roll-up: Spread hummus on a tortilla; top with a slice of turkey or ham, low-fat cheese, and lettuce. Whole-grain Pita Pocket: Stuff a pita pocket with ricotta cheese and Granny Smith apple slices. Add a dash of cinnamon. “Ants on a Log”: Spread celery sticks with smooth nut butter or low-fat cream cheese. Top with raisins. Yogurt Dippers: Dip sliced fruit or whole-grain graham crackers into low-fat pudding or yogurt. Inside-out Sandwich: Spread mustard on a slice of deli turkey. Wrap around a breadstick. Rocky Road: Smear low-fat chocolate pudding on a whole-grain graham cracker. Top with a marshmallow. Graham Cracker Apple Pie Bites: Dip whole-grain graham crackers into unsweetened applesauce sprinkled with cinnamon for a taste similar to apple pie.
