Can you believe we are already in the month of July? This is one of my favorite months! Summer is in full swing and the community is bustling with activities. I hope you will check out our articles, community calendar events and Bill’s Best Bites this month. We strive to keep you “in the loop” each issue with local stories and happenings. Our goal is to give you a publication with a positive outlook that will lift your spirits and introduce you to some of our area’s favorite “hot spots”, as well as give you some educational stories to learn from and think about.

I know you are thrilled to celebrate our nation’s independence and birthday this month! I LOVE the smells of watermelon, fireworks, cool whip, and barbecues that will fill the air as we all gather together with our friends and family for this very special day. May we never forget the sacrifices, bravery, and chivalry that went into our nation’s independence. We must continue to fight for freedom and the principles that made this country so great. Our Founding Fathers have given us a legacy that we cannot afford to shirk. Let us hold tight to our God, our Faith, our Families, and our Constitution.

NEW Solution to Lift Sagging Skin: ULTRASOUND The beauty about getting older is you finally start to loosen up. You tend to worry a little less, laugh a little more and melt into who you’ve become and the life you’ve created.

But, unfortunately, your skin also seems to take on a lax attitude. You - and your skin - are not alone. In fact, 3 of 5 people are bothered by sagging skin, and, according to a consumer survey by the American Society for Dermatologic Surgery, nearly 75 percent have considered a cosmetic procedure to tighten up or smooth things out. What’s more, statistics from the American Society for Aesthetic Plastic Surgery show that face-lifts seem to be making a comeback.

While surgery tends to be a last resort, many mistakenly believe it’s the only solution available for lifting, especially for stubborn areas such as the gobbler under the chin or the loose rings on the neck. Thankfully, science has decided to challenge that belief and serve up the skin its overdue non-surgical lift by way of sound. Yes, S-O-U-N-D. SOUND SKIN To be clear, this is sound that can’t be heard by the human ear. This is ultrasound; sound that occurs at frequencies only dolphins and bats can detect. In fact, this is the same ultrasound used to produce baby sonograms. In sonogram imaging, the sound wave energy is low with shortened pulses. To show a sharp picture, these pulsed waves create a tight web of visual details as they bounce off the body’s internal structures. To actually treat and stimulate a natural lift in the skin, however, the sound wave juice gets bumped up and the pulses are prolonged and converged for deeper, more precise penetration. This allows the energy to narrow in on the skin’s core fabric, including the same collagen-rich fibrous layer typically treated during a face-lift.

THE ULTRASOUND LIFT The process in which ultrasound makes the lifting magic happen is nice to know, but what really matters is the validated science behind it. For the first time, the Food and Drug Administration (FDA) has cleared a face-and-neck ultrasound procedure that is clinically proven to non-invasively lift skin on the neck, under the chin and above the brow. The procedure, Ultherapy, not only measurably lifts skin, it does so without any chemical or foreign substances. Instead, it relies on the body’s own healing process to gradually lift the skin over the course of three to six months. What’s unique about Ultherapy ultrasound is it relies on both the shorter and longer ultrasound pulses to first image and then treat the skin. Imaging, of course, allows practitioners to broadly see the different layers of the skin to be treated. For the treatment itself, the concentrated sound wave energy encourages select cells in the skin’s foundation to initiate the production of new collagen and elastin. In turn, the skin lifts and tightens over time. And, because the ultrasound energy funnels-in to focus on deeper face and neck tissue - it’s diluted at more superficial layers - the skin’s surface isn’t affected and, after 60 minutes, most patients are able to walk away ready to go about their day*.

HAPPY INDEPENDENCE DAY! THE GOOD ‘OL USA IS 238 YEARS OLD!

WOW... Let’s celebrate by going out for dinner!

The Bigfork Inn at 604 Electric Ave. in downtown Bigfork was the first fine dining restaurant I visited after arriving in the Flathead from Dallas, TX in April 1992. I was very impressed! After dining there over 100 times in the last 22 years, I can truly say I’m STILL impressed! The tradition of quality food, excellent service and value in a unique atmosphere has remained consistent every time!

The Swiss-Chalet type building was built in 1937/38 as “Bigfork Hotel” and has a rich local history. The hotel name changed to “The Bigfork Inn” in 1972. Bob & Susie Keenan, owners since 1982, have over the years added the Library, the Red Room, and built the front deck dramatically increasing the seating. Last year the new ‘Keenan’s Pub and Game Room’ with a “Pub Menu” was added to rave reviews. The Bigfork Inn is still the “centerpiece of the town” and remains one of the most popular dining places in the Flathead Valley.

My pretty blonde & I recently met 3 other local couples for dinner at the Inn. For an Appetizer, my 2 favorites are the Chinese Tootsie Rolls, “Four large egg rolls, stuffed with bay shrimp, fresh chives and cream cheese with sweet and sour sauce” ($9.00); or try the Bacon Wrapped Shrimp, “Mexican White Shrimp (6 large) charbroiled with Applewood bacon with a Chipotle lime sauce” ($11.50).

My entree’ choice was long-time favorite, Cajun Shrimp Pasta, “Shrimp, sweet red pepper, garlic and a blend of cheeses, sauteed with Cajun spices and angel hair pasta” ($19.50). My pretty blonde chose the classic Haus Schnitzel, “Tenderloin of pork, breaded and sauced with bacon, onions, brandy and mushrooms in our demi-glace’ ($18.00). Both delicious and satisfying with ample portions!

The wide variety of menu entree’ choices is superb such as Salmon en Papier, Petrale Sole, Prime Rib, Ribeye Steak, Chicken Cordon Bleu, Crispy Country Inn Duck, even Chicken Fried Steak and Lobster. All meals are served with a fresh green salad, vegetable of the day, sourdough bread and your choice of baked potato, rice pilaf or home fries. All our friends were happy with their delicious meal choices also!

Known also for their scrumptious desserts, try my favorite Mud Pie, “Oreo cookie crust and coffee ice cream with a fudge topping” ($6.00). I always ask for “your biggest piece” and it usually works! (Grin, wink!)

Study Explores Hen Housing, ANIMAL CARE From children’s books to advertising, consumers often see idyllic images of hens scratching in the dirt and pecking around the barnyard. However, these pictures can distort how most eggs are produced today.

DIFFERENCES IN HOUSING SYSTEMS Though eggs were once gathered from flocks that lived outdoors, by the early 1950s, egg farmers began seeing benefits to raising hens indoors. Today, the majority of hens are raised in one of three types of housing: conventional cages, cage-free housing and enriched cages.

Each housing system has advantages and disadvantages in terms of animal well-being, according to Dr. Joy Mench, animal science professor at University of California-Davis and a researcher leading hen well-being research with the Coalition for Sustainable Egg Supply (CSES).

CONVENTIONAL SYSTEMS “In conventional cages, the behavior of hens is very restricted - they have little freedom of movement and are unable to perch, nest or forage,” Mench said.

Conventional cage systems account for approximately 95 percent of all eggs produced in the United States.

CAGE-FREE SYSTEMS “Cage-free systems permit much more freedom of movement and also allow the hens to perform the behaviors that they cannot perform in conventional cages, but hens in cage-free systems also tend to have more health problems and higher mortality than hens in conventional cages,” Mench added.

ENRICHED COLONY SYSTEMS A third type of housing has recently been introduced in the U.S., which is essentially a hybrid of the other two housing systems.

“The new enriched colony systems were designed to be intermediate between conventional cages and cage-free systems,” Mench explained. “They are larger than conventional cages and contain perches, a nesting area and a foraging area. They still do not allow the hens as much freedom of movement as a cage-free system, but they preserve many of the hen health advantages that are associated with conventional cages.”

ANIMAL WELL-BEING AND BEYOND CSES researchers are working to better understand how each of these hen housing systems affect various issues, including animal well-being. “This research will offer additional insights into other aspects of each system, as well, including food safety, environmental impact, worker health and safety and food affordability,” Mench said.

“Ultimately, this will allow researchers and others to understand the potential impacts, advantages and disadvantages of each housing system as they work to better understand a sustainable egg supply.”

It’s easy to throw a 4th of July party that looks like you worked on it for weeks, even if you just started the planning process. With the right recipes, such as the one below, your sweets will be as captivating as the colorful spectacle of fireworks above.

Hot Cinnamon Fireworks Cake Yield: 12 servings 2 3⁄4 cups all-purpose flour

box (1.5 ounces) Blue Colorburst Batter Bits cup sifted confectioners’ sugar

teaspoons baking powder teaspoon salt

cups (4 sticks) butter, softened

3 to 4 tablespoons milk

cups granulated sugar

eggs

bottle (6 ounces) Cinnamon Drops, crushed

1 1⁄2 teaspoon vanilla extract

Red, white and Royal Blue Candy Melts candy, melted Red, white and blue colored sugars

Preheat oven to 350°F. Spray Dimensions Cascade Pan with vegetable pan spray.

In large bowl, combine flour, baking powder and salt. In second large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, scraping bottom and sides of bowl often. Add vanilla; beat until well combined. Add flour mixture and beat at low speed until just combined. Fold in Cinnamon Drops and blue Batter Bits.

Pour into prepared pan; smooth out top. Bake 60 to 65 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes on cooling grid. Remove from pan and cool completely. In large bowl, whisk together confectioners’ sugar and milk. Drizzle melted candy onto cake to look like fireworks. Sprinkle sugars onto melted candy.

Grandparents College

By Jill Seigmund Calling all “grandparents”! Did you know that Flathead Valley Community College (FVCC) has a program designed for you to enjoy the special children in your life in a fun, educational setting? Grandparents College is the perfect opportunity to spend time with your grandchild, niece or nephew, or even the child who lives next door. Imagine how Grandparents College might have changed the dynamic between Dennis the Menace and Mr. Wilson had cartoonist Hank Ketcham conceived of such a thing!

On Wednesday, July 16 FVCC will offer two different Grandparents College classes: “What Floats Your Boat” and “Exploring Mexico.” If science, technology, engineering and math are your thing, then “What Floats Your Boat” might just float your boat. Designed for seniors of any age and children in grades 3 through 6, this class explores 3D printing technology and the scientific method. Students will create their own model boat using materials printed on the 3D printer, and then will experiment with different methods to float and propel the vessel. Cost of the class is $39 per person (or $78 per grandparent/ child team.)

“Exploring Mexico” promises to do just that! This class is designed for seniors of any age and children in grades 1 through 4. Students will learn about the animals, ancient culture, and modern-day festivities of Mexico, as well as create an Aztec calendar, make a piñata, and create yummy Mexican cuisine.

The class will culminate in a Mexican fiesta. Instructor Kate Hunter has been teaching Spanish for over 10 years and enjoys sharing her passion for the language and for Hispanic culture with people of all ages. Cost of the class of class is $39 per person (or $78 per grandparent/child team.)

Both classes run from 9 a.m. to 3 p.m. on the FVCC campus and include a 45-minute lunch break. Students can bring their own lunch, purchase food in the Eagle’s Nest at FVCC, or dine out at one of the many nearby local restaurants.

If Grandparents College doesn’t sound like your thing, there are many other educational options for seniors at FVCC. There are classes on everything from preserving tomatoes to working with digital cameras to sea kayaking. “Savvy Senior Computer Skills” is a beginning computer class designed for people 65 and up. It is scheduled for Tuesdays from 1 to 4 p.m. June 17 - July 22, and the cost is $129 per person.

New Spin on a Classic Sandwich

The classic grilled cheese sandwich has been an American favorite for generations. It’s hard to resist toasted, buttery bread and melted cheese. The best way to upgrade a grilled cheese and prevent flavor fatigue is to experiment with new cheeses, spreads and sandwich fillers. This recipe for Turkey & Brie Grilled Cheese is perfect for an al fresco lunch or a light and healthy dinner. Serve with locally-sourced vegetables, hummus and a glass of freshly squeezed lemonade.

Turkey & Brie Grilled Cheese Prep Time: 5 Minutes • Servings: 2 • Ready In: 12 Minutes

slices Roman Meal bread Nonstick cooking spray ounces Brie cheese, thinly sliced small green pear, cored, halved and thinly sliced ounces roasted turkey breast, thinly sliced

Spray medium pan with nonstick spray. Preheat over medium heat. Layer cheese, pear and turkey between slices of bread, creating 2 sandwiches.

Cook sandwiches 3-4 minutes, or until bottom slices of bread are golden brown. Flip sandwiches over and cook an additional 2-3 minutes until golden brown and cheese is melted.
