There are no better reasons for outdoor entertaining than Bring friends together around the table good friends, good food and good weather. “I’ve made a lot of friends around the table in my life,” said Rebecca Lang, food writer, television personality and author of such cookbooks as “Around the Southern Table.”

Summer Soirees

Lang’s favorite dishes are those that are easy on the cook and incorporate Southern specialties, such as Vidalia onions. Whether you’re planning for several dozen guests or inviting over a few close friends, impress them with delicious dishes in a comfortable setting.

“Tacos loaded with color and flavor spice up a summertime cookout like nothing else,” Lang said.

“Arrange all the ingredients on a platter for tacos that are pretty and easy for guests to put together.”

Tacos with Lime Marinated Vidalia Onions and Grilled Italian Sausages Servings: 4 to 6

1 yellow bell pepper, cut into 1/3-inch strips 1 red bell pepper, cut into 1/3-inch strips 1 orange bell pepper, cut into 1/3-inch strips 2 Vidalia onions, sliced into half-moons 3 jalapeño peppers, sliced into very thin strips ¼ cup freshly squeezed lime juice 3 tablespoons olive oil 1 tablespoon Gourmet Garden Cilantro

2 teaspoons Gourmet Garden Chunky Garlic ½ teaspoon salt ¼ teaspoon freshly ground pepper 1 (19-ounce) package Johnsonville Italian Mild Sausage Links 10 (6-inch) corn tortillas 2 Avocados sliced 5 ounces goat cheese, crumbled 2 cups grape tomatoes, sliced in half 1 lime, cut into 6 wedges

Combine bell peppers, onions and jalapeño peppers in large bowl. In small bowl, whisk together lime juice, olive oil, cilantro, garlic, salt and pepper. Pour over bell pepper mixture. Marinate for 45 minutes.

Preheat grill to medium heat (about 350°F). Add sausages and grill, covered, 15 to 20 minutes, turning often, until browned and cooked through. Cool slightly and cut in half lengthwise.

Use slotted spoon to transfer bell pepper mixture to a grill basket. Grill over medium heat for about 10 minutes, until slightly charred. Discard marinade.

Grill tortillas until warm, about 1 minute per side.

Arrange a large platter with bell pepper mixture, sausages, avocados, goat cheese, tomatoes and tortillas. Serve with lime wedges.

Nutritious Meals in Minutes

After a chaotic day of shuttling kids around from school to appointments to sports practices, finding time to prepare a delicious meal that the whole family will enjoy can be challenging. Getting everyone around the dinner table for a meal provides the perfect opportunity to encourage children to explore new foods and build healthy eating habits for life, but with busy schedules it’s often easier said than done.

Food Network star and father of two, Jamie Deen, has partnered with the makers of Hidden Valley® products to offer some tips that help his family cut through the kitchen chaos and join together to enjoy nutritious and hearty family meals.

Don’t give up: This is important to remember as your children grow. Don’t think that you’ve hit a wall when they say they don’t like something and that your recipe catalog is now reduced to only things they like. Give the “rejected” ingredients another try later on. Both you and your kids may be surprised at the results! For a new take on a veggie side that the whole family will love, try this recipe for Roasted Cauliflower with Creamy Ranch Sauce.

Peruse the prepared: Most grocery stores offer prepared veggies. Chopping, slicing and julienning can be very time consuming.

If you don’t have the luxury of time, veggies in bags are just as nutritious and can be huge time savers.

Celebrate seasonings: Cooking with spices makes all the difference, but finding that perfect combination takes additional time. Don’t be afraid to explore ready-made seasonings and rubs, they’ll save you time and create flavors your family will love.

Plan ahead: Menu-planning can also be a huge time saver. It requires more thinking at the start of the week, but will help you see what dishes can be remixed for later on in the week. Turkey and baked potatoes on Monday can be turned into turkey sliders and ranch mashed potatoes on Thursday!

Roasted Cauliflower with Creamy Ranch Sauce

Prep: 10 minutes Cook:30 minutes Serves: 4 1 head cauliflower, cut into small florets 2 tablespoons canola oil ½ teaspoon salt 1 Vidalia onion, finely chopped 2 garlic cloves, minced ½ cup Hidden Valley® Original Ranch® Light dressing 2 tablespoons chicken broth 1 tablespoon chopped fresh parsley 6 Stay in the Loop with Seniors’ Scoop!

Preheat the oven to 450°F. Spray a small rimmed baking sheet with cooking spray.

Combine the cauliflower, 1 tablespoon of oil, and salt in a large bowl; toss to coat well. Spread the cauliflower in a single layer on the baking sheet. Roast, stirring once or twice, until the cauliflower is just tender, about 20 minutes. Meanwhile, heat the remaining 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring occasionally, until tender, about 8 minutes.

Add the garlic and cook, stirring until fragrant, about 1 minute. Stir in the Ranch dressing and broth; bring to a simmer. Add the cauliflower, tossing gently to coat well. Transfer to a serving bowl and sprinkle with parsley.

Sweet Summertime Snack Ideas

In the warm summer months, nothing beats spending time together creating fun snacks that promote healthy eating and a little creativity.

The summer boasts a wealth of fresh fruit to draw inspiration from — especially everyone’s favorite — watermelon. Its cool, juicy flavor speaks to your senses. Plus, it’s packed with key vitamins and minerals, so it’s a snack you can feel good about serving to your family.

Kick off this fun-in-the-sun season and make memories with fresh ideas that get the whole family involved. Create a splash at your next barbeque or summer party with this adorable Mermaid Tail. Fashioned from watermelon rinds, your family will love to help you create this masterpiece as well as devour it.

Mermaid Tail Cutting board 1 large oblong seeded or seedless watermelon Kitchen knife and paring knife Large bowl and spoon or scoop Green dry erase marker Channel knife Dowels and toothpicks Optional decorations (found at any craft store): Edible turquoise shimmer powder/disco dust, mermaid cookie cutters, light blue or turquoise fabric or mermaid decorations.

1. Wash watermelon under cool running water and pat dry.

2. On cutting board, place watermelon on its side and cut off 4 inches from one end of watermelon to provide a sturdy base. Cut remaining watermelon in half lengthwise.

3. Hollow out both halves of the watermelon with spoon or scoop, reserving watermelon pieces to dice up for serving or cutting out mermaid shapes.

4. Use dry erase marker to trace mermaid tail freehand lengthwise across one entire half. With knife of your choice, carefully trim away to form the outline of mermaid tail. Use the channel knife to form scales and details.

5. For added detail, brush on edible turquoise shimmer powder/disco dust (purchased at cake decorating store or craft store).

6. Use pencil-sized dowels to secure the mermaid tail to top of base. Decorate with watermelon cubes or mermaid watermelon cutouts and serve.

If using the mermaid watermelon cutouts as topper for cupcakes, as shown, add watermelon cutout with toothpick or small dowel first and then ice around it.

Like Beauty at Home

Feeling like you’ve booked a weekend at a luxurious spa resort doesn’t have to cost a fortune, nor does it require an appointment.

You can create that magically refreshed feeling at home with a few simple pantry staples and a quick visit to your local drug store. Here are some ideas for pampering yourself without breaking your budget.

Skin Rejuvenation For smooth, radiant skin that feels nourished and refreshed, give yourself a gentle scrub.

Make a paste of 2 cups ground coffee, 1/2 cup raw sugar and 3 tablespoons olive oil. Rub in a gentle circular motion to exfoliate skin and remove dead skin cells. Rinse clean with warm water.

Follow your scrub with a rich cleansing gel to rejuvenate and add moisture to your skin.

Capture the illusion of a spa getaway with tropical-scented cleansers such as Softsoap Coconut Island Quench Body Wash, which is enriched with coconut oil extract to leave skin feeling soft and supple, or Softsoap Acai Berry and Tropical Water Body Wash, infused with antioxidant-rich acai berry extract and moisturizing beads to invigorate both body and mind.

Banishing Bags For tired, puffy eyes, brew a large mug of tea using two tea bags. Let them cool to a comfortable temperature, then place one bag over each eye. To reduce an extreme case of puffiness, cool bags completely in the refrigerator and apply as cold compresses. Turn on some soft music and lay back to relax.

Hair Care Help Baking soda helps remove the residue that styling products leave behind. To get rid of product buildup and leave your hair cleaner and more manageable, sprinkle a quarter-

size amount of baking soda into your palm along with your favorite shampoo.

Shampoo as usual and rinse thoroughly.

Dogs and cats provide “parents” so much love and affection. So, it’s only natural that pet parents want to return that love by taking care of all their pet’s health and wellness needs. Even before becoming a “Senior”, dining out with great food at a reasonable price was important to me... but now more than ever. I’m not “cheap” but these days it pays to be “thrifty”.

We recently stopped in to a small, unobtrusive, family-owned café, Cislos, just up the street from K-Mart at 2046 Highway 2, Kalispell.

It’s not “fancy” but neat, friendly & clean. Their special was Fried or Scampi-style shrimp dinner. We each ordered the 7-pc meal at $10.99 each which included soup or salad & choice of potato. WOW! The fried tiger shrimp were so HUGE that I could only eat 5 and my twicebaked potato was so big that half of it also went home with me for lunch the next day! My friend said it was the BEST shrimp she had ever eaten!! To top it off, Cislos is on Trippon, so one meal was halfprice! The delicious homemade pies available would tempt anybody.

The restaurant has various dinner specials each week-night. We also stopped in for the All-U-Can-Eat Spaghetti with meatballs on Monday nights for $9.99 including salad. It’s delicious, but would you believe it was also Buy-One, Get-One FREE (BOGO)!!

If you are looking for some good down-home food just like Mama & Grandma used to make with large portions, great service, and superb value, then you need to stop in to Cislos soon and tell them you saw it in Seniors’ Scoop.

Wedding Reception to Remember

Throw the Best Party on the Block Nothing brings people together quite like a neighborhood picnic or family celebration. So, gather up neighbors, friends and family for a celebration of great food and fun.

Keep the food simple. Ask everyone to bring a favorite side dish so you only need to grill up the hamburgers and hot dogs. Of course, you’ll also want to whip up a few special treats. What could be better than a popcorn bar? Popcorn is both good and good for you.

It’s a whole grain food that is not only low in calories but also makes a great addition to many recipes. Because, sometimes, a sweet indulgence is just what you need.

Set out large bowls of popcorn along with shakers of garlic salt, cumin, lemon pepper, dry taco seasoning mix and Parmesan cheese for extra flavor. Add dried fruit, nuts, pretzel sticks, grated cheese and chocolate chips for a make-your-own trail mix option. Complete the popcorn bar with a few sweet surprises like delicious desserts made with freshly popped corn.

Double Chocolate Popcorn Balls ½ cup sugar ½ cup corn syrup ¼ cup butter or margarine 2 tablespoons cocoa powder 8 cups freshly popped popcorn 1 cup milk chocolate candies

Yield: 18 balls

Combine sugar, corn syrup, butter and cocoa in medium saucepan; bring to a boil. Add popcorn, stirring until evenly coated. Remove from heat. Stir in milk chocolate candies.

Cool slightly. Shape into 2-inch balls.

Coconut Monkey Mix Yield: 7 cups 1 cup flaked coconut (unsweetened or sweetened) 6 cups popped popcorn 1 tablespoon butter or margarine, melted 1 teaspoon sugar 1/8 teaspoon salt Dash of nutmeg 1 cup dried banana chips

Preheat oven to 325°F. Spread coconut in a 9 x 13-inch baking pan, breaking up any clumps as needed. Bake 10 minutes or until edges of coconut begin to brown.

Spread popcorn over coconut and sprinkle with melted butter; toss. Sprinkle popcorn mixture with sugar, salt and nutmeg; toss. Bake 5 minutes longer and toss with banana chips. Serve immediately or cool and store in an airtight container.
