PREPARAÇÃO

PREPARATION METHOD

Com um garfo, esmague as batatas cozidas e misture-as com o bacalhau cozido desfiado. Bata os ovos, acrescente a salsa e envolva todos os ingredientes.

Com a ajuda de duas colheres, molde os pastéis em formato cilíndrico. Frite em óleo bem quente e deixe escorrer sobre papel absorvente.

Smash the boiled potatoes with a fork. Mix the potatoes with the shredded boiled codfish.

Whisk the eggs, add the parsley and stir all the ingredients.

With the help of two spoons, mould the croquettes in a cylindrical shape. Fry them in very hot oil. Let the remaining oil drain over absorbent paper.

Portugal is the westernmost country in Europe, with more than 1200 km of coast, bathed by the Atlantic Ocean. Continental Portugal and the autonomous regions of Madeira and Azores form the 93,000 km2 of the Portuguese Republic, with approximately 10.5 million inhabitants.

Portugal nasceu oficialmente em 1143, com a conquista do condado Portucalense aos mouros por D. Afonso Henriques, o primeiro rei de Portugal.

Em 1297 estabeleceram-se as fronteiras que existem atualmente - as mais antigas da Europa.

Portugal was officially born in 1143, with the conquest of the County of Portugal to the Moors,

by D. Afonso Henriques, the first king of Portugal.

In 1297, the borders that exist today were established - the oldest borders in Europe.

A época dos descobrimentos (1415-1543) expandiu o reino de Portugal por todos os continentes e tornou-o numa grande potência mundial. A crise de sucessão de 1580, que resultou na união de Portugal a Espanha até 1640, levou a que Portugal perdesse muita da sua riqueza e territórios ultramarinos. O grande terramoto de 1755 em Lisboa e as invasões espanholas e francesas deterioram ainda mais o império português.

The Age of Discovery (1415-1543) expanded the kingdom of Portugal throughout all the five continents and made it a great power in the world.

The crisis of succession of 1580 that resulted in the union of Portugal with Spain until 1640, made Portugal lose many of its riches and overseas territories. The great Lisbon earthquake of 1755 and the Spanish and French invasions deteriorated even more the Portuguese empire.

Em 1910 instaurou-se a Primeira República, após quase 100 anos da data da primeira constituição portuguesa. Até 1974 viveram-se anos tumultuosos em Portugal: uma Primeira República extremamente instável e uma ditadura que durou de 1926 a 1974.

A Revolução dos Cravos, o movimento social que depôs o regime ditatorial, foi considerada uma das mais pacíficas de sempre, pois em vez de armas disparadas, cravos foram colocados nos canos das armas.

In 1910, the First Republic was established, almost 100 years after the date of the first Portuguese constitution. Until 1974, Portugal lived troubled years: an extremely unstable First Republic and a dictatorship that lasted from 1926 to 1974.

The Carnation Revolution, a social movement that deposed the dictatorial regime, was considered the most peaceful revolution ever because, instead of guns being fired, carnations were placed in the gun barrels.

Os anos seguintes foram bem mais tranquilos para Portugal, que foi construindo a sua república semipresidencialista até aos dias de hoje.

Desde 1986 Portugal faz parte da União Europeia e a sua moeda oficial é o euro, que veio substituir o escudo português.

The following years were calmer in Portugal, where its semi-presidential republic started to be built until our days. In 1986 Portugal joined the European Union and its official currency is now the euro, which replaced the Portuguese escudo.

PREPARAÇÃO

PREPARATION METHOD

Preparação do molho: Refogue as fatias de presunto com os alhos e cebola picados, folhas de louro, sal e salsa.

Quando alourar, adicionar a cerveja, polpa de tomate, piripiri e as bebidas espirituosas. Deixe ferver cerca de 15 min, mexendo de vez em quando. Retire as folhas de louro e triture o molho com a varinha mágica. Deixe ferver mais 15 min e adicione a maizena, mexendo continuamente.

Preparing the sauce: Stew the smoked ham slices with the minced cloves of garlic and onion, bay leaves, salt and parsley. When it is brown, add the beer, tomato purée, chilli and spirits. Let it boil for around 15 minutes, stirring it once in a while. Remove the bay leaves and blend the sauce with the hand blender.

Let it boil for 15 more minutes and add the Maizena flour, stirring it continuously.

Preparação da francesinha: Grelhe as carnes e enchidos. Construa-a da seguinte forma: fatia de pão de forma, fatia de fiambre, fatia de queijo, fatia de paio, bife, salsicha fresca, linguiça, fatia de fiambre, fatia de queijo, fatia de paio, fatia de pão de forma e as 4 fatias de queijo. Verta o molho por cima da francesinha.

Preparing the francesinha: Grill the meat and the Portuguese sausages. Build the francesinha as follows: loaf of bread slice, ham slice, cheese slice, paio slice, steak, fresh sausage, linguiça, ham slice, cheese slice, paio slice, loaf of bread slice and 4 cheese slices.

Pour the sauce over the francesinha.

To be an alfacinha (small lettuce) is to never miss the popular saints! It is enjoying a drink at Cais do Sodré and knowing that in Careca you eat the best croissants in the world. It is going with your family, on Sundays, to Casa da Guia and take the first dive of the year still in the spring! It is enjoying the sun, beach and sunsets!

(Alternative) itinerary of Lisbon: Comece o dia com uma viagem de comboio até Cascais e tome o pequeno-almoço na Casa da Guia. Aproveite a luz da manhã neste sítio porque ao fim da tarde tende a ser mais ventoso.

Ainda de manhã passe na Praia da Rainha (fica num pequeno recanto na Rua Direita em Cascais).

Por ser escondida não é muito conhecida pelos habituais turistas.

Start your day by taking a train to Cascais and have breakfast at Casa da Guia. Enjoy the morning light in this place, because in the evening it tends to be windier.

Still in the morning, visit the Rainha beach (located in a small corner in Rua Direita, in Cascais). It is not very known by regular tourists because it is hidden.

Venha pela marginal em direção a Lisboa e prove os petiscos do Boteco da Linha em S. Pedro do Estoril.

Follow the coast towards Lisbon and taste the snacks of Boteco da Linha in S. Pedro do Estoril.

Aproveite para passear no paredão junto à costa que liga Oeiras a Caxias e quando já tiver fome para lanchar pare, nos que acreditamos serem os melhores croissants do mundo, no Careca, em Belém.

Use this time to take a stroll in the pier near the coast that connects Oeiras to Caxias, and, when you are hungry, stop for a snack, in the place we believe has the best croissants in the world, Careca, in Belém.

Siga para o centro de Lisboa e jante no restaurante Aromas e Temperos em Arroios. É um restaurante muito pequeno e acolhedor que é um pequeno oásis no que diz respeito à junção de sabores. À noite aproveite para beber uma bebida no Cais do Sodré. Entre em qualquer bar da zona e venha tomar a sua bebida cá para fora, convivendo com as pessoas à sua volta.

Desça em direção à Ribeira, mas faça um pequeno desvio até à Rua das Flores, onde encontra arte urbana disfarçada nas caixas de eletricidade ao longo de toda a rua. Na Ribeira conheça o mercadinho de rua com antiguidades e peças únicas de artesanato.

PREPARAÇÃO Pré-aqueça o forno a 250 °C. Unte as formas para pastel de nata com manteiga e farinha. Forre-as com a massa folhada.

PREPARATION METHOD Preheat the oven to 250 °C. Grease the small moulds for the custard tarts with butter and flour. Cover them with the puff pastry.

In a small pan, mix the cream with the milk, egg yolks, flour and sugar. Leave the mixture to cook in low fire without stopping stirring. Leave to cool and pour the cream in the moulds.

Bake in the oven.

First-person story: Portugality: between going and staying Portugal is a small country, almost "running" from Europe, with a lot of its history between this conflict of escape and appropriation. On the one hand, it runs to a loose sea, bland in rules and rich in promises. On the other hand, it holds on to the old historical continent, safe and familiar, the continent where once it was acclaimed as a conquering country.

Quando somos miúdos, aprendemos que Portugal foi uma das maiores potências do mundo.

But more than landscape and food, Portugal is made of people. Of our people.

Portuguese people tend to underestimate themselves and their country. We have all these wonders, but, many times, the foreigners are the ones that makes us appreciate them.

Os portugueses são acolhedores e prestáveis, porque a nossa humildade faz-nos ficar genuinamente felizes por recebermos quem nos quer visitar e o nosso orgulho faz-nos querer mostrar aquilo que de melhor temos.

No sul da Europa, pouco se fala inglês. Portugal é a exceção. Criamos os nossos miúdos para o mundo, por isso em Portugal não se dobram filmes nem séries. Nunca achamos que os estrangeiros têm que saber falar a nossa língua e tentamos adaptar-nos à deles. Mesmos as gerações passadas, que de línguas estrangeiras pouco sabem, tentam fazer-se compreender.

Ser português é viajar para o outro lado do mundo e fazer uma festa sempre que encontramos um dos nossos.

We are a humble people with great grandparents that were conquerors, but who had to learn to appease their ego, as they grew and understood that from conquerors, we went to the tail of Europe. In the heart of each Portuguese lives the conflict of an appeased conqueror's soul.

Portuguese are welcoming and helpful, because our modesty makes us genuinely happy for receiving those visiting us, and our pride makes us want to show the best we have here.

In the South of Europe, English is not widely spoken. Portugal is an exception. We raise our children for the world, so, in Portugal, we do not dub films or TV shows. We never thought foreigners should speak our language, so we try to adapt to theirs. Even older generations, who don't know many foreign languages, try to make themselves understood.

Being Portuguese is travelling to the other side of the world and throw a big party whenever we meet one of our own.

Mas ser português é também ter que explicar vezes sem conta nessas viagens que Portugal não é Espanha e mesmo assim, em vez de rivalidade, temos carinho pelos espanhóis, a quem ternamente apelidamos de nossos irmãos.

Faz parte de ser português não admitirmos que somos bons, mas a realidade é que somos. Somos mesmo. Temos uma capacidade de trabalho e sacrifício extraordinária. E de um país com apenas 11 milhões de pessoas, saiu um prémio Nobel da Literatura, um prémio Nobel da Medicina, dois prémios Nobel da Arquitetura (Pritzker), uma literatura riquíssima, construções de beleza requintada, vários dos melhores jogadores de futebol do mundo e o ano passado até fomos campeões europeus de futebol, o que nos levou ao delírio porque pudemos finalmente soltar a nossa alma pujante de conquistadores.

Os portugueses inventaram a palavra saudade.

Palavra sem tradução fiel noutra língua e que descreve o assalto ao coração que a falta que alguém, algum sítio ou algum tempo nos faz. É difícil saber quando foi criada a palavra, mas olhando para a história de Portugal, atrevo-me a arriscar que talvez tenham sidos as mulheres. As que olharam o mar na esperança que este lhes devolvesse o marido ou filhos idos. Ou então, talvez tenham sido os homens.

But being Portuguese is also trying to explain, time and time again, that Portugal isn't Spain and, even then, instead of rivalry, we show affection for the Spanish, who we tenderly call our brothers.

It is part of being Portuguese to not admit that we are good, but in reality we are. We truly are. We have an extraordinary ability to work and sacrifice.

From a country with only 11 million people, we have won a Nobel Prize in Literature, a Nobel Prize in Medicine, two Nobel Prizes in Architecture (Pritzker), we have a rich literature, exquisite buildings, several of the best football players in the world, and, last year, we were European football champions, which made us go crazy, because we could finally free our vibrant conquering soul.

Portuguese invented the word saudade. A word with no faithful translation and that describes the state of the heart when missing someone, a place or a time. It is hard to know how the word was created, but looking to the history of Portugal, I would risk saying that maybe women created it.

The women that looked to the sea hoping it returned the husbands or children that had departed. Or maybe the men created it.

Os que olharam o mar com a esperança que este os levasse de volta a Portugal, para junto da mulher e dos filhos.

Não é certa a origem da palavra, mas o que é certo é que depois de a terem criado, os portugueses nunca mais deixaram de a usar, e é hoje, talvez, uma das palavras que melhor nos representa.

Em Portugal o antigamente é quer era bom. O português tem saudade de tudo e o passado tem lugar de rei. Se está de férias tem saudades de casa. Se está em casa tem saudades das férias. Se vive uma democracia, acha que no tempo da ditadura é que era. Se é verão tem saudade dos dias frescos da primavera.

Numa ânsia de evitar esta saudade ou para, pelo menos, apaziguá-la, os portugueses adoram reunir-se, e reúnem-se quase sempre à volta de uma mesa. Para os portugueses a mesa não é uma peça de mobiliário. A mesa tem lugar de destaque nas nossas vidas e é rainha no convívio social.

To avoid this saudade, or at least to appease it, Portuguese people love to get together and we mostly do it around a table. For Portuguese people, the table is not a piece of furniture. The table takes a prominent place in our lives and it is queen in social contact. We love food and we love being with each other. When we join both, the result is hours and hours at the table, talking, eating and drinking. We usually say: a Portuguese table never misses food, drink and a seat for one more.

Como costumamos dizer: na mesa de um português nunca falta comida, bebida e lugar para mais um.

A mesa é um lugar para festejos e celebrações, mas também serve de confessionário e de apaziguador da alma. Vamos jantar quando a amiga fica noiva, quando arranja um novo emprego, ou é promovida. Mas também vamos jantar quando acaba com o namorado, é despedida ou está triste com a vida. Jantamos fora ou em casa, começamos tarde e acabamos ainda mais tarde.

Estes jantares servem também muitas vezes para nos queixarmos da vida e de Portugal. Falamos das maleitas do país e do bom que é lá fora, com interjeições recorrentes de: “se não fosse adorar o sol, eu ia” ou “se não fosse a minha família, eu ia”.

Mas a verdade é que não iam. A maior parte, não ia.

E Portugal deixa-se assim viver num permanente conflito entre ir e ficar. Tal como um casal que se ama, mas não quer admitir, os portugueses dizem mal de Portugal, ameaçam abandoná-lo, e enaltecem os de fora. Mas na hora da verdade, fincam o pé, porque a paixão é demasiado grande e não querem partir porque, como nos ensinaram desde criança, é possível morrer de saudade, por isso, pelo sim, pelo não, mais vale ficar.

The table is the place for feasts and celebrations, but also a confessional and an appeaser for the soul. We have dinner when a friend is engaged, when she gets a new job or is promoted. But we also have dinner when she breaks up with her boyfriend, when she is fired or sad with her life. We have dinner at home or go out to eat, we start late and finish even later.

Those dinners also serve, in many cases, to complain about life and about Portugal. We speak about the problems of the country and what is good abroad, with frequent interjections: “if it wasn't for the sun, I would go away” or “if it wasn't for my family, I would go away”. But the truth is that we wouldn't. Most of us wouldn't.

And so Portugal lives in a permanent conflict between going and staying. Like a couple that love each other, but doesn't want to admit it, Portuguese people talk badly of Portugal, threaten to leave it and praise foreigners. But, in the moment of truth, we create roots here, the passion is too big and we don't want to leave because, as we learn as a child, it is possible to die from saudade, so, to be on the safe side, we prefer to stay.

Rice pudding 60 min. | 6 doses 6 portions Arroz 220 g Leite quente 1,5 L Pau de canela 1 Limão 1 Água 2,5 L Sal 1 pitada Açúcar 150 g Ovo 4 gemas Margarina 40 g Canela em pó para polvilhar Rice 220 g Hot milk 1,5 L Cinnamon stick 1 Lemon 1 Water 2,5 L Salt 1 pinch Sugar 150 g Egg 4 egg yolks Margarine 40 g Cinnamon powder to sprinkle

PREPARAÇÃO

PREPARATION METHOD

Leve ao lume um tacho com a água, o sal, a casca de limão e o pau de canela. Deixe ferver.

Junte o arroz, mexa e deixe cozinhar até a água evaporar. Junte o leite quente aos poucos e deixe cozinhar em lume brando. Vá mexendo de vez em quando até o arroz ficar cozido.

Em seguida, junte o açúcar e a margarina, mexa e deixe cozer mais uns minutos.

Dissolva as gemas em 3 colheres de sopa de leite.

Retire o arroz do lume, junte as gemas em fio, continue a mexer e leve ao lume sem deixar ferver.

Deite para um prato e deixe arrefecer.

Sirva frio e polvilhado com canela em pó.

In a pan, heat the water, the salt, the lemon rind and the cinnamon stick. Let it boil.

Add the rice, stir and let it cook until the water evaporates. Add the hot milk little by little and let it cook in low fire. Stir it once in a while until the rice is cooked. Then, add the sugar and the margarine, stir and let it cook for a few more minutes. Dissolve the egg yolks in 3 tablespoons of milk. Remove the rice from the heat, slowly add the egg yolks, continue to stir and heat it without letting it boil.

Pour into a plate and leave it to cool.

Serve the rice pudding cold and sprinkle it with cinnamon powder.

Fado, the Portuguese pride!

It starts is Lisbon, in taverns and brothels. “A Severa”, the mythical founder of fado, was a famous prostitute from Mouraria. It is therefore easy to understand why it was considered by the church as an “immoral” art!

Fado is sadness, pride, joy, nostalgia and jealousy.

Numerous emotions that are combined in a single voice. Describing it in a word is reducing it to a dimension that simply cannot hold it. Listening to fado as a Portuguese person is feeling with the soul all the notes played, it is a great and inexplicable feeling. Amália was able to spread it throughout the world, infecting crowds with this Portuguese feeling, which is now considered as Oral and Intangible Heritage of Humanity by UNESCO. Are you curious?
