Nowhere else can you find pasture raised heritage breed hogget and mutton raised in the United States!

A sheep in its first year is classified as lamb and its meat is also called lamb. In its second year the meat is called hogget, and when the sheep is older than two years, the meat is called mutton. Access to hogget and mutton hardly ever happens!

Our mutton, lamb, and hogget all come from ancient breeds, the Tunis and Dorset Horn, and are raised in Vermont at Tamarack Farm exclusively for Heritage Foods.

By aging our lamb on the hoof, the meat becomes more marbled, mellow, and subdued, yet succulent with a full, round finish. The fat is absolutely edible, like a great lardo from Italy, and mutton meat reminds us of a great marbled steak.

Heritage Breed Pork Heritage pork has become a household term and it started on our 100% heritage breed partner farms raising Berkshire, Red Wattle, Tamworth, Old Spot, and Duroc breeds humanely, outdoors, on pasture, and never with antibiotics. Only a few farms have held onto the genetics that their families raised before the 1950s.

Therefore, they have some of the only living examples of livestock from a time before factory farms, and they raise livestock not unlike the animals on the very first farms 10,000 years ago.

All our pork is raised in Missouri and Kansas by these same farms and processed at Paradise Locker Meats, a family run operation just outside of Kansas City! We purchase whole animals nose-to-tail and offer all the parts, plus custom blended sausages, bacon, and salami from the most famous curemasters and artisans in the United States!

These heritage breeds create the most delicious, supremely marbled, juiciest meat in the world!
