Cake and Bake Raspberry & Vanilla Panna Cotta These delightful creamy desserts make the perfect Valentine treat!

Ingredients:

To make the raspberry jelly hearts, line a small 6cm square dish with cling film. Soak the gelatine in a shallow dish of cold water for 2-3 minutes. Heat the raspberry puree in a small pan with 1 tbsp water. Remove the gelatine leaf from the water and stir into the hot puree until dissolved. Pour into the lined dish and leave to cool, then chill in the fridge until set.

When the jelly is set, use a small heart-shaped cookie cutter to stamp out 4 heart shapes and place each one in the base of a small heart shaped ramekin dish (each about 150ml capacity).

To make the panna cotta, place the cream, vanilla extract, lemon rind and caster sugar in a pan and bring slowly to the boil. Remove from the heat.

Meanwhile, soak the gelatine leaves as in step 1. Remove from the water and stir into the hot cream until completely dissolved. Leave to cool for 30 minutes. Remove the strips of lemon rind and divide the mixture between two bowls. Stir a few drops of pink food colouring into one bowl. Spoon the two mixtures into the ramekins, to give two with colouring and two without. Chill for 6 hours or overnight until set.

Tips and tricks to make your life easier, from washable nail polish to a booster seat that can fit in a school bag. Monday morning panics 8-8.30am is often a rather stressful period in my house. Arguments over brushing teeth (my son) compete with tears over forgotten homework (my daughter). One thing I do have sorted is making it easy for them to find their uniform so they can get dressed. I use a rubber band to attach two clothes hangers together, one of which is the type with clips. Pants get hung from one clip, tights or socks from the other, and the rest of the uniform goes on the other hanger. Simple. My next mission is to teach them to put their PJs under their pillow, rather than dumping them on the floor. We’ve been working on that one for a while now, with no luck. Hobbies A Resoundingly Successful Hobby By Kate McLelland Sunday mornings just wouldn’t be the same without them. Weddings would feel less joyous, funerals less solemn. Bell-ringing is a tradition that has lasted for at least two thousand years, so it hardly seems possible that one day local community groups might stop coming together to ring out those powerful messages of joy, sadness and celebration. Unfortunately that day could be closer than you might imagine. A survey recently carried out by BBC local radio shows that bell-ringers across the country are finding it harder and harder to recruit new volunteers. Almost 75% of the bell-ringers questioned said that over the past ten years they have found it harder to find new recruits, particularly young people under the age of 21. There have even been calls to reclassify bell-ringing as a sport in order to gain access to funding, raise its profile and make it appear ‘cooler’ to a younger generation.

Eating Disorders Awareness Week - 27th February to 5th March

Eating disorders affect over 725,000 men and women in the UK and claim more lives than any other mental illness. A shocking one in five of those most seriously affected die prematurely, either from the physical consequences of their disorder or suicide. That’s why Eating Disorders Awareness Week, which runs from 27th February to 5th march, is so vital. It’s essential we are all aware of the dangers of eating disorders and realise that we are all susceptible to them. That means we need to know the facts – not just the stereotypes. challenging the stereotype: who suFFers From eating DisorDers? The stereotype is a teenage girl obsessed with becoming thinner, either starving herself or alternately binge eating and vomiting. However, in reality there are several different eating disorders and while young women are more prone to them, they can affect people of any age, gender or ethnicity.

Around 1 in 250 women and 1 in 2,000 men will experience anorexia nervosa at some point. Although people usually develop the condition at around 16 or 17, it can occur as early as 7 years old. In younger children, it’s more prevalent in boys.

and minimises the impact on the patient’s body, life, relationships, job or education. However, finding the right treatment can take some time. They may be suffering from more than one eating disorder, and symptoms may change while they’re recovering. A desire to overcome the condition and the support of those around them are vital. Their physical health will be monitored while the underlying causes of their disorder are treated. This may involve: • Using self-help manuals and books, possibly under the guidance of a healthcare professional. • Cognitive behavioural therapy (CBT), aiming to change their thinking and in turn, their behaviour. • Interpersonal psychotherapy: a talking therapy that focuses on relationship issues.

• Dietary counselling. • Psychodynamic therapy or cognitive analytic therapy (CAT), focusing on how their personality and life experiences influence their thoughts, relationships and behaviour. • Family therapy, focusing on how the eating disorder has affected them and their family. • Medication: often, antidepressants known as selective serotonin reuptake inhibitors (SSRIs) are used to treat bulimia or binge eating. There’s no escaping the fact that the winter months can be a little lacklustre in the garden, sometimes even a bit gloomy. However carefully you plant your flowerbeds and borders, the number of brightly coloured plants for winter performance is rather limited. But don’t forget that one of the most important ingredients in a winter garden is perfume – it’s certainly something which can transform my mood in an instant, especially when I’m out in the garden. So at this time of year, think scent, as there are a few really brilliant winter perfume plants and there’s a good chance that they’ll be readily available in garden centres and nurseries right now, often in pride of place.

Winter Perfume Plants

The Witch Hazels or Hamamelis are one of my favourite winter flowerers. With their unusual oriental-looking yellow, orange or bronzy-red spidery flowers on bare branches they look stunning and provided they are kept adequately moist during drier weather they should thrive, especially if you have an acidic soil. If not, they also look good in large tubs such as half-barrels. But of course looks are not everything and the perfume of the witch hazels is what really makes them such an asset - sweet, spicy and wonderfully good at wafting around the garden. For best results, ensure the roots are just moist at all times and position the shrub somewhere that you can see as well as smell it. Various colours are available, in shades of brightest orange through to rich burgundy.

If you like a bit of variegated foliage then try the Daphne odora ‘Aureo-marginata’, which has classic purple-pink clusters of flowers, a very strong perfume and leaves which are typically green and leathery but with a bright yellow leaf margin. It can be a little temperamental, but after its first year a Daphne generally settles in well and you won’t regret buying it. Again, it can do well in a really large tub or half barrel - for this I would suggest a loam-based John Innes type compost mixed with about 30% loam-free multi-purpose compost to ensure that drainage remains good.

The Viburnums may be a shrub you think of as a summer flowering plant, but go for Wintersweet or Chimonanthus is another varieties such as Viburnum x bodnantense great shrub for winter. Mahonias with their holly-like leaves can be a trifle spiky but when they are in flower their brightest yellow spikes are really eye-catching and Mahonia japonica produces one of the sweetest perfumes you could wish for right through from the middle of winter to early spring. If you prefer one with more upright flowers, go for Mahonia x media ‘Charity’. Mahonias are good in part shade or full sun. Their only downside is their leaves which can be a real hazard if the mahonia has been planted in the wrong place - once it grows the stems protrude in to nearby paths, seating areas or thoroughfares. Another favourite of mine is the winter flowering honeysuckles. They are not as showy as their summer flowering relations, but definitely a plant I’d hate to be without. The bare stems are covered with small white-cream flowers which produce a tremendously sweet, spicy aroma both night and day. Unlike the summer flowering species those that have winter appeal are not climbers, but informal shrubs.

And finally, don’t forget the Sarcococcas or winter box. With their small, pretty but inconspicuous flowers they may not instantly leap out and draw attention to themselves, but the perfume of those tiny flowers is tremendous and really strong, making them a great winter flowering shrub that I’d recommend you try.

Onion & Goats’ Cheese Pizza Serves 4

Ready in 1 hour

This is a tasty alternative to the classic cheese and tomato pizza. Serve with a simple mixed green salad dressed with balsamic vinegar and olive oil. Ingredients: • 3 tbsp olive oil, plus extra to drizzle • 2 large onions, peeled and thinly sliced • 2 tsp brown sugar • 2 x 145g packets pizza base mix • 2 tsp fresh chopped rosemary leaves, plus 1 tbsp small sprigs • 2 x 100g round goats’ cheeses, sliced • 5 cherry tomatoes, halved

Heat the olive oil in a large frying pan and add the onions. Fry over a gentle heat for 15 minutes, stirring occasionally, until softened. Add the sugar and fry for a further 10 minutes until golden brown. Leave to cool. Preheat the oven to 220C, Fan 200C, Gas Mark 7. Empty both sachets of the pizza base mix into a large bowl and stir in a large pinch of salt and the chopped rosemary leaves. Stir in 200ml hand-hot water and mix to a soft dough. Knead the dough on a lightly floured surface for 5 minutes until smooth and elastic. Roll the dough out to a 30 x 45cm oblong. Place on a greased baking sheet and turn up the edges of the base. Spread the caramelised onions over the base, then top with the sliced goats’ cheese, cherry tomatoes and rosemary sprigs. Leave in a warm place for 10 minutes.

Instead of the caramelised onions spread, the pizza base with sun-dried tomato paste then top with some cooked and drained spinach. Frodsham Natural History Society At the Frodsham Natural History Society’s monthly meeting on Wednesday 8th Feb at 7.45pm at Frodsham Community Centre, naturalist and expert photographer Mike Roberts will be giving an illustrated presentation “Wildlife on the Isle of Avalon”. As well as landscapes of the Somerset Levels, he will focus on some of the key wildlife sites and their new species which have started to breed there, such as Bitterns and Great White Egrets. He will also show some of the area’s dragonflies, flora and other conservation successes such as the Large Blue Butterfly. If you have an interest in wildlife in general or the Somerset Levels, or both, you are most welcome to come along and join us. Helsby Community Centre is managed, on behalf of the Parish Council, by Helsby Community Association, a Committee made up of representatives from organisations that are members of the Association, and volunteers. Sutton Hall Golf Club 2016 Captains Mal Russell & Jean France present a cheque for £5,700 to James Robinson, the area manager of charity, MacMillan Cancer Support.

Both Captains thanked the ongoing support they have received over the year from Sutton Hall Golf Club, the members and businesses. The money was raised through a wide range of initiatives including a charity golf day at Sutton Hall Golf Club, raffles, social events and collections at nearby stores.

Fracking is a bad thing for the area – say 77.7% of survey respondents Throughout September a survey of residents’ attitudes towards Shale Gas Fracking was conducted in the Frodsham and Helsby areas. The survey was conducted by local residents group ‘Frack Free Frodsham and Helsby’, and supported by Frodsham Town Council. Guiding the process was an internationally renowned data analyst who ensured that the survey was undertaken in a fair and transparent way according to best practice guidelines. Results for the Frodsham area have been analysed and published in a comprehensive report. 77.7% of respondents believed fracking would be a bad thing for the area, 9.1% believed fracking would be a good thing for the area, and 13.2% did not know or had no opinion. Results have been announced to Frodsham Town Council, who will make the report accessible on their website. Helsby residents and councillors will be notified of Helsby survey results in the next couple of weeks. Fracking surveys in neighbouring areas show similar results – 76% against fracking in Guilden Sutton, 81.7% against fracking in Mickle Trafford, 86% against fracking in Upton, Chester. The Frodsham survey highlights the growing concern of many residents regarding the threat of Unconventional Gas Extraction – ‘fracking’, in their area. The survey follows seismic testing, which was undertaken in Helsby and parts of Frodsham by TESLA, acting on behalf of IGas to determine the viability of ‘fracking’. In March 2016, IGas signed a £30 million deal with INEOS, in a tie-up designed to expand IGas’s exploration efforts. INEOS have also launched a series of private meetings with parish and town councils, to promote its interest in shale gas fracking.

Helsby High Student Shortlisted for Miss England Katy Case, a Year 13 student at Helsby High School, is hoping to compete in the semi-finals of Miss England in June at Kelham Hall, Nottinghamshire. Katy, 17, plans to study Drama and English at Loughborough University. Katy has co-written several plays, has performed at Chester’s Open Air Theatre and works as a TV extra. Katy feels it’s important that people understand that Miss England is about helping and inspiring young women. Katy is going to run the Chester half marathon in order to raise money for the pageant’s charity ‘Beauty with a Purpose’ and will hold other local fundraising events. The semi-finals consists of four categories; the Evening Gown, Eco Fashion, Sports and Talent rounds. If crowned Miss England, Katy would have the opportunity to support charities and community groups around the country. Voting for the girls begins at the start of February. Helsby Pre-school still going strong Helsby Pre-school has relocated to The Boshaw centre Dunham Hill, due to the Methodist Church Hall requiring urgent repairs. I would like to thank Claire and Andy from the Boshaw Centre for coming to our rescue and offering Pre-school the use of two large rooms. Frodsham & Helsby Golf Society managed to raise enough funds in one season to fund two powered wheelchairs for two deserving youngsters from the North West. Captain Phil Davies chose the Peter Alliss Masters as his Captain’s Charity in the hope of raising funds that would go some way towards the £3,000 needed to buy a powered wheelchair. However, such was the generosity and resourcefulness of the society’s members, a magnificent £5,300 was raised. With a top-up from the Peter Alliss Masters central funds to take the figure up to £6,000, the Society was able to present the chairs at its final event of the year at Helsby Golf Club. The children receiving the chairs were Alainah Hussain, aged 16 from Nelson in Lancashire and Dylan Kelsall, aged 14 from Stoke-on-Trent. As Phil explains: “The way our members took on this challenge was amazing. They came up with all sorts of ideas for raising funds as part of our monthly golfing get togethers. Ideas included auctions of complimentary rounds of golf, sweeps and individual donations. I’m really proud of what everyone’s achieved and it made it all worthwhile when we saw those two youngsters receiving their new chairs just before Christmas.” You can find out more about the charity at www.peterallissmasters.org

The Marshes Community Benefit Fund (MCBF) launched on 22nd November 2016. Community projects near the Frodsham Wind Farm could share benefits of up to £120,000 a year. Governed by an independent panel made up of local individuals, the Fund will distribute a grant from Frodsham Wind Farm Limited of up to £120,000 a year across approved projects in Frodsham, Helsby, Elton and surrounding areas. The MCBF coverage area is identified by the map on the website www.marshescbf.uk. Community groups, charities, schools, businesses and clubs may apply to the MCBF governing Panel for funding towards not-for-profit projects which are designed to benefit the local communities. Guidelines for applications and details of the award process are available on the MCBF website. The deadline for the first round of applications will be 28th February 2017, all applications for grants will be assessed by the Panel.
