Hello, and Goodbye!
elcome to t he si x t h insta lment of Hello Taitung! The global Covid pandemic changed life for people all over the world. For us it meant no international travel business which led to us opening a bakery in Chenggong, and to me taking on the role of Managing Editor at Hello Taitung. Both of these new occupations have been enjoyable, and I have met many amazing people I otherwise wouldn’t have, but now that the world is starting to work out a new normal and international travel is back on the agenda, it is sadly time for me to say that this will be my final edition as Managing Editor. It has been a pleasure to work w ith the editorial team at Co-Create over the past couple of years: Chien, Laurence and Chloe have been my primary contacts, but I would also like to thank all of the other staff members who have contributed … I also want to thank all of the authors for sharing their stories and photos, and w ithout whom the magazine wouldn’t exist. And last, but definitely not least I’d like to thank my family – my wife Tot for always having fresh new ideas about potential writers, and my kids for coming along to the sharing sessions, speaking on stage and helping me with Chinese and my mum for casting her detailed eye over all of the articles and spotting little mistakes that most people would miss ….

patterns. Floods, freak snowstorms in the middle of summer, blistering heatwaves and the resulting forest f ires are all nature’s not so subtle way of telling us that as the only species that has the power to alter our planet, we need to look after it, and be aware of the consequences of our actions. Yet even here in Taiwan’s most beautiful and least populated region, human activity damages the environment, from the small thoughtless actions of an individual, through to large scale destr uction and damage caused by industrial and property development. The other day workmen laying new concrete on the road outside our house took their lunch on the edge of our garden and then threw their trash straight into the beautif ul pristine gorge on the edge of our property. We moved to this area to enjoy the beauty and tranquility of nature, but day by day new developments are built on “far mland” and ugly, environmentally suspect hotels and other new buildings appear.
we now live in a global communit y, and so it is fitting that some of the stimulus to better protect beautiful Taitung also comes from outsiders like Josh at Taiwander f ul (a prev ious Hello Taitung contributor), an incredible organization trying to educate and then actually physically do something about the plastic pollution problems that confront the county and further afield. Fortunately, many others in the younger generation recognize the gravity of the situation and not only take personal re spon sibi l it y for t hei r ow n c a rbon foot pr i nt, but also actively encourage others to do so. The problems may seem too big to tack le, but ever y ac t ion counts a nd when we work toget her as a community, almost anything is possible.
So, as with elsewhere, Taiwan and Taitung needs a change of attitude vis-à-vis the environment, to protect it for ourselves, for the f lora and fauna, and for the benefit of generations to come. The Amis, the traditional custodians of this land have spent millenia not only surviving, but thriving on this bountiful land, understanding the importance of balance and only taking that which we need. he theme for this edition is “Eco Taitung”, with the aim of giving an idea of both the issues that face us here in Taitung, but also what we can do to minimize our impact on the environment. In this edition we meet four fascinating residents of Taitung each of whom has a unique perspective on the environment: Tamara is a free-spirited vegan chef who seeks out the best and freshest ingredients Taitung has to offer; Peter tries work with nature to grow pineapples and other tropical fruit at his gorgeous farm near Duli; Faith established the wonderful Dulan Flea Market; and Harry farms bananas and produces a range of sustainable products out in Chenggong, when he’s not playing music!

y name is Tamara, but I’m known as Manran 曼然 here in Taiwan. I first came to Taiwan in 2014 because of my studies in Modern Sinology and Chinese as a Second Language. Besides researching the Chinese language, the center of my daily life is cooking plant-based whole food dishes with local and seasonal Taiwanese ingredients and sharing my creations with the wonderful people that I have met here, so far away from where I grew up. To me, cooking vegan food is not only about protecting and sustaining our environment, it is also about expressing the feelings and love deep in my heart, and telling a story about my second home country, Taiwan, and her people and produce. In writing this article my aim isn’t to attract more and more people to move here and start a new life, but to protect this natural and special place on earth, that stands for the real “Ilha Formosa” the beautiful island of Taiwan.

In my eyes Taitung is the real, untouched and original Taiwan, which can only be found here in the remote eastern part of the island. When Europeans or Americans think of living in Asia they might have a picture of bustling metropolises, but here in Taitung we still don’t really have any skyscrapers, high-speed rail or freeways, and outside of the city, red lights and traffic jams are rare. Of course, Taitung is def initely get ting more developed, but traditional customs in harmony with nature continue, and there are also great innovations in environmental living. For example, local organizations like the Southern-Link Ecotourism Union promote environmentally friendly thermos mugs and lunch boxes to fight against disposable dishes and rubbish along the beautiful east coast. I had been coming to Taitung for years, and fell in love with the natural landscape, blue ocean, fruits, vegetables and people here, so I decided to settle down on the east coast and carry forward my mission of slow food and a vegan diet. Slow food doesn’t just mean eating “from farm to table” with a focus on fresh, local, seasonal and chemical-free ingredients, it also teaches us to eat slowly and enjoy not only the food that nourishes our body, but also the time with all these beloved people around the table, like friends and family. Part of my family is from southern Italy, and so I have a background in Mediterranean culture and food. The Mediterranean diet features good quality olive oil, balsamic vinegar and herbs like oregano, basil, parsley and thyme. I like to combine foreign flavors with all the treasures I can find along Taitung’s coast and mountainsides: bitter gourds, chayote, ginger, indigenous wild herbs and leaf vegetables, millet, orange day lilies, pandan leaves, peanuts, pigeon peas, purple taro, quinoa, sesame paste, squash, sugar cane, sweet potatoes, Taiwanese miso, turmeric, waxy corn, and, of course, the fragrant rice from the untouched and healthy fields of Taitung. And that’s before I start on the incredible tropical fruit …. Bananas, dragon fruits, jackfruits, kakis, mangos, 7

papayas, pineapples, plums, roselle f lowers, and sugar apples to name but a few. Moreover, due to its geography and tropical climate, Taitung has unique vegetation and seemingly almost everything can be grown here! So we can find both European a nd exot ic t ropic a l ing red ient s li ke va ni l la, avocado, asparagus, round eggplants, lemongrass, Mediterranean herbs, lettuce and rocket, yellow potatoes, small carrots, zucchinis and so on. With all these natural and unprocessed ingredients I create totally new fusion dishes like colorful salads, gr illed and ba ked vegetables, t ur mer ic r isot to, assorted vegetable pasta with tofu and ginger, sweet dragon fruit or sugar apple desserts and fresh vegan fruit ice-cream. I present my dishes in a simple “ Ta it ung Plat ter” or w it h a t wo to t hree hours private vegan dining menu featuring six different
courses. Visiting Manran Vegan Kitchen is not only about eating healthy and energy food, it is also about understanding farmers’ stories and their products all around Taitung, learning about our environment and what we can do to protect both nature and our body at the same time. Taitung’s life is very slow compared to other parts of Taiwan, it is like a totally different country, in my words “Taitung Country”. People often say the scenery of the mountains and the ocean is the most beautiful and we have the cleanest air and highest quality water here. It’s the best place to calm down and experience every day of life, which means living in the here and now. Taitung is a great source of inspiration, spirituality and creativity, and therefore the best choice for any kind of artist, like writers, painters, photographers, and for me as a vegan chef. Staying here everyday is new and exciting, the scener y of the mountains and the endless ocean changes all the time and constantly gives me new and creative input that I need for my work in the kitchen.

S o f o r m e t h e l i f e i n Ta i t u n g o f f e r s a g r e a t connect ion w it h nat ure, people and Taiwanese culture. I really appreciate living with my indigenous friends from the Bunun, Amis and Paiwan tribes and learning about Taiwanese customs, traditions and ingredients from them. I feel totally immersed in the culture and life here, not making a difference between them and me, although our differences are so deep. Using their ingredients, farm products and every thing the wild nature of Taitung offers to me and creating beautiful new dishes feels like giving something back to the nature and the people around me. Cook ing is not just standing in the kitchen and using a lot of spices, cooking begins with the farmers in the fields, and the stallholders in the markets. Talking to people and exchanging information with them is important and a big part of my vegan cuisine. A healthy dish is full of fresh ingredients and full of love.

row ing up in Dulan, I spent my childhood exploring the beach, the jungle, and learning about the culture of Taiwan. I watched hermit crabs, built tree houses, wore wild-f lower headbands, and recited ancient poems. Dulan used to be a place of simplicity and nature. The roads were unpaved, the gardens were lush, and the animals were free. There were not many shops or businesses back then. The locals relied on their own farming and fishing and exchanged their products with each other. We knew each other well, and we knew where to find the best homemade delicacies. Life was easy and convenient. But I also had a curiosity for the w ider world. I loved reading books that took me to different places and times, where I could imagine different cultures and histories. I also enjoyed learning languages that opened up new dimensions of communication and understanding. I appreciated the diversity and the commonality of all living beings on our planet, not just humans but also the beautiful creatures that share our home.
I n my t went ie s , I move d to S out h A f r ic a a nd discovered a new world of stunning nature and diverse people. I lived in thatch houses, learned click ing lang uages, obser ved w ild life, and befriended Hadidas Ibis and monkeys. Far away f rom my bir t hplace, I la nded on t he cont inent where humanity began. I was amazed by the beauty a nd d iver sit y of nat u r e , u ntouc he d by hu m a n interference. I was also touched by the kindness and generosity of all living beings, who welcomed me as one of their own. I felt like Alice in Safariland, exploring a wonderful world of animals and plants. I became so small and humble, that I could sense the heartbeat and the vibration of Africa. Africa became my second home.

My life in South Africa was full of ups and downs. I ex per ienc e d robb er y, bu r g la r y, a nd pover t y, but a lso resilience, recover y, and prosper it y. I was bitten by a venomous spider, but instead of becoming a superhero, I had to endure a painful healing process. I lost my job in Kwazula Natal, but found a new opportunity in the Western Cape. I ran

Special Feature a successful venue in a heritage site in Cape Town, where I befriended homeless people and learned their stories and struggles. I faced health challenges that required different treatments, from traditional healers to modern medicine. I received love and support from my family and friends, who helped me through the difficult times. I also went through marriage and divorce, loss and discovery, but the true love in my heart never faded away.

Africa is a land of abundance and beauty, where the rich soil nourishes all living beings. My mind expanded and learned a lot, but I had to leave after opening many doors. The good people across the rainbow suffer from the corruption that threatens this wonderful place. I bid farewell and followed the yellow brick road again, with Africa in my heart as my companion. I returned to my homeland, Taiwan. My travels across the world have taught me many things, but the most impor tant one is the value of community. I want to create a community that respects and cooperates with Mother Nature, not exploits or destroys her. I want to live in harmony with the environment and the people around me, to help each other grow and f lourish. This is my vision and my passion. "Let's work together to live a sustainable life!" We may have dif ferent languages, cultures, and worldviews, but we also have something undeniable in common: we live on the same planet we call Earth. We share the same space and time together, and we depend on each other for our survival and well-being. I believe in our potential and future, and I want to contribute to making this world a better place. That’s why I brought back a precious souvenir from the Cape of Good Hope when I returned to Taiwan. It is a symbol of hope and courage that motivates me every day. I hope to share this spirit with you and work together to achieve our dreams.

Taitung is a place where the ancient and the modern coexist. The Amis people, who have lived here since before recorded histor y, share their traditional wisdom and sustainable lifestyle with us. We don’t need the noise and lights of the city, we have our own fun with Amis moonshine and house parties. We don’t need tall buildings, we have the stars and the Milky Way. We don’t need cars, we have our own ways of exploring the nature around us. We walk, bike, skate, swim, surf, paraglide, kayak, dive, and f ly with the fish and the jets like Maverick in Top Gun. We enjoy the beauty and adventure of this slim county in the south, where we welcome you to join our community.

My Story Begins
Discovering Permaculture & Cultivating Sustainability
r i g i n a l l y f r o m b u s t l i n g Mo nt r e a l , I w a s familiar w ith the rhy thm of urban life. In the busy city, I built a comfortable life as an entrepreneur, valuing my freedom and avoiding the restrictions of having a boss. But amidst the hustle and bustle of the city, some people seek solace in nature, aiming for a self-sustaining way of life that nurtures a deep connection with the Earth. One such person is me, Harry Schnur. I embarked on an amazing journey from Montreal, Canada, to the calm landscapes of Taitung, Taiwan.
Ta i t u n g 's g r e e n l a n d s c a p e s a n d p e a c e f u l atmosphere struck a chord with me from my first visit. This tranquil haven became my canvas for creating a self-sufficient life. I became interested in permaculture, which essentially means systems for growing crops that cause little damage to the environment and can therefore continue sustainably for a long time. Guided by permaculture principles, I began a journey of learning and transformation. I worked a nd lived on a fa r m in New Sout h Wales, Australia, and my studies led me to earn a Permaculture Design and Consulting Certificate. Armed with knowledge and passion, I returned to Taitung, ready to work the land in harmony with nature. With a piece of Taitung farmland, I started apply i ng p er mac u lt u re pr i nc iple s i n pr ac t ic e. This marked the beginning of my commitment to sustainable living. I delved into various practical e nde avor s , a l l r o ot e d i n t he de s i r e to l i ve i n harmony with nature.
My travels took me to var ious cities across the globe, where I pursued a dynamic music career, which included being a professiona l musicia n, music producer, session player, and radio host. In Taipei, I was a prominent voice on ICRT, an English radio station, and I hosted the "Bel Canto" show on China A irlines' in-f light radio. A mong these wonderful experiences, a growing desire for new horizons started to stir within me. Longing for a life away from city chaos, combined with my innate love for nature, led me to search for a place to realize this dream. The search brought me to the serene beauty of Taitung, Taiwan. After years of moving between cities all over the world, Taitung became my sanctuary, where the dream of sustainable living took root and gave rise to eco-friendly projects. Transitioning to a rural lifestyle came with many ideas and plans. But tur ning this dream into a workable and comfor table realit y posed its ow n challenges.

Special Feature Embracing Self-Reliance
A Diverse Approach to Eco-Living
Navigating life in this rural setting requires selfreliance, a cha llenge I embrace. Yet, resources here are limited, so I have had to become skilled in repair and construction. My inclination towards manual work and my desire for ongoing learning led me to embrace the DIY world. Supported by a helpful community of local residents and expats, I've gained a lot of practical knowledge. Maintaining vehicles, handling household wiring, understanding plumbing intricacies, troubleshooting water pump issues, building houses, welding, providing first aid, and car ing for animals – these sk ills keep e volv i ng. T he work i s ne ver - end i ng, e ac h d ay bringing new obstacles. But these challenges help me grow and boost my confidence. Looking at the lives of our ancestors, who faced hardships without modern technology, humbles me. Today's world, marked by planned obsolescence, allows for a more carefree approach to repairs and restorations. This realization makes me think about my abilities and determination. It's a powerful stance that not only helps me rely on myself but also positions me to help others – an extraordinary feeling. The essence of re si l ienc e shape s my at t it ude; when a need arises, solutions appear, sparking creativity when resources are scarce.
The opportunities available in cities were missing i n t h i s pe ac ef u l c ou nt r y side. Hav i ng a ste ady income, not necessarily a big one, but one that came in regularly each month, became really important. During this time, a friend suggested online English teaching to me. Looking back, it was one of the smartest decisions I've made. The advantages have been great: now I work comfortably at home with my partner Wei Lin and beloved pets. My schedule is based on my preferences, giv ing me plenty of time to nurture the various projects I've started. Fa s t for w a r d to to d ay, a nd my w ork i nvol ve s teaching English online and creating and managing a range of eco-friendly products that align w ith sustainable living values. From innovative methods of growing fruits and vegetables using permaculture techniques to creating my own eco-friendly brand "Wild Banana," where each creation ref lects my deep respect for the environment. I developed an Organic Mosquito Repellent, Iron Bamboo Walking Sticks and Driftwood Art pieces to showcase my ability to turn natural materials into functional art, reminding us of the beauty of nature. The Rocket Oven demonstrates my dedication to blending human ingenuity with nature's offerings. A turning point came when my par tner Wei Lin and I acquired a banana farm, opening a new chapter in our sustainability story. Growing organic bananas, Wei Lin's culinary skills transformed them into delightful treats like Banana Cake and Banana Smoothies. These treats are sold in local markets and even online, using technology to share our sustainable creations far and wide.

Through hard work, innovation, we're not only living our dream but also tr ying to inspire others to do the same. From busy city streets to Taitung's peaceful landscapes, our journey captures the pursuit of a somewhat self-sufficient life that aligns human existence with the natural world. With a dedication to sustainable innovation, we're planting the seeds for a g re ener, more e c o - c on sc iou s f ut u re t hat generations can appreciate. am typical of many foreigners in Taitung, in that I am here because fate determined that I was to be beguiled by the beauty of my partner and the East Coast. Having lived and worked all over the world, it was time to settle down, and the Sunkissed Farm, once just a plot of outrageously tall elephant grass overlook ing t he ocean, is our lifeline for continuing to stay in Taiwan.

I have tried all manner of replacements, sheet metal, wood shav ing, sawdust, rice husks, but unfortunately black plastic sheet is ubiquitous because it is cheap and so well suited to the task. One day innovation may change this …. If you harvest and move a crop away from the land on which it was grown you remove the minerals and elements that went into making the crop. Some of these like carbon, hydrogen, oxygen and water are derived from the atmosphere and are readily replaceable. Ot hers (phosphor us, nitrogen and elements of low solubility) are limiting, often being slowly replaced by the process of soil formation f rom u nderly i ng stone s by t he i nter ac t ion s of physical chemistr y and fungus and bacteria. To speed up this replacement, fertilizers may be added to the soil. One environmentally friendly option to decrease the amount of fertilizers requires the need for extra acreage for crop rotation. After harvest a field is sown for a year or two with a fast-growing
Routinely I rise a little after dawn to let out the chickens. Not at dawn when eagles, mongoose and the neighborhood dogs are out and about looking for chicken breakfast! I attempt to return to bed but invariably I see something that needs doing and the day starts. But you don’t want to read about my daily chores, far better that I give you an abridged version of some of the highs and lows of life in Taiwan as a small-scale farmer attempting to grow and, as importantly, sell pineapples, mulberries, roselle, mangos, guava, chilies, basil and produce we make from our crops.

It is a truly wonderful feeling of satisfaction and pride to stand and view 20 neat rows of 1600 green baby pineapple suckers standing regular and ver tical in neatly spaced rows of black plastic sheet laid on f resh ly plowed ea r t h. But t hat one moment hides the preceding weeks collecting, trimming and drying the suckers on top of the mother plant, carrying the suckers from the old paddock to the freshly plowed paddock, laying out the plastic sheet as the wind whips about and the back breaking job of hand planting. From the above paragraph your eye might linger on black plastic sheets, the notion of plastic pollution possibly giv ing you an involuntar y shudder. But it shouldn’t. Plastic sheets stop weeds and keep moisture in the soil and give a 50% increase in crop yield. In my opinion farming has two strategies, scale a nd i nt i m ac y. S c a le i s t he s t a nd a r d pr ac t ic e , particularly in areas where environmental factors conspire to make the soils not particularly fecund. Sc a le require s mecha ni zat ion a nd dependenc e on borrowed money to buy the mechanical tools. Scale has the advantage of more to sell, if all goes well, but it determines that ever y treatment and process applied to the crop is performed for the average condition. We grow the fruit but the most dif f icult par t of farming is selling. Avoiding the middle-man seems to be the only way to ensure an equitable return on ou r t i me. We sel l d i re c t ly to ou r Fac ebook customers a nd have our f r uit c our iered to t he buyer’s door the day after it is picked. To make us less dependent on the race to sell ripe fruit before it rots, we also make jams, roselle tea and brandy. We are luckier than most but still struggle financially. Farming is a great lifestyle, but it is not a great way to make money. Small wonder that farming in Taitung is a dying art. The younger generation have no intention of taking over the family farm, they know firsthand that the hard work and long hours required will be rewarded with low pay. So whilst dy nast ies of doctors, polit icians and l aw y e r s t h r i v e , f a r me r s r e m a i n a t h r e at e ne d species - a paradox since we all need healthy food to be produced locally. So we will continue to try and grow the best, healthiest and tastiest fruit we can in the beautiful env ironment we call home, but we would also want to challenge consumers to accept that sustainably farmed food doesn’t always look perfect (and will cost more), and would also encourage the government to take into account the perspectives of real farmers before forming policy ….. They visited nearly a hundred indigenous tribes in Taitung within just a few years and became acquainted with various unique and distinctive wild vegetables from different ethnic groups. Sunrise Driftwood Workshop 向陽薪傳木工坊 Sunrise Driftwood Workshop is a treasure trove nestled in the eastern part of Taiwan. Ni Camak's Kitchen 達興山號 Operated by a young couple who have returned to their hometown, this travel experience is inspired by the heartwarming folk songs sung by the children of the tribe. Paiwan history and stories have been passed on via singing and storytelling for generations, and the elderly residents of the community were deeply moved by the children’s songs which highlighted the importance of keeping the language alive. During this trip, you’ll walk in the Lu Jiakasi community, visit the church, and learn about indigenous herbs and vegetables. Traditional Paiwan children's songs are presented and taught and then to round it off you’ll get to sample some delicious Paiwan cuisine, singing or storytelling.
